And you know, I mean southern core brace. I mean, I think there's good corn bread rest of North America. Some of its, you know, moral almost leapt more like a cake sweeter. And that's no good real. Southern corn bread is a completely different deal. And there's no sugar in it. So so those two guys together had a lot to do with the Carter family's repertoire, all that being said, the combination of the blues tones and may bell listened into the Mexican mariuchi band and figuring out you are my flower, and these different things they combined to make Appalachian music, the Carter family's music. I have to say this is a big interview for me because I'm a huge fan of the Carter family music, and I actually play some of it, and I used to play with a frail banjo player, and of course, Johnny cash. Are those songs they were all part of sort of this this repertoire of music that was common at the time. And how how do those songs relate to the old timey fiddle songs like lizard in the Springer? I would serve something simple like rice, or you might do a talion rice are results of some kind might work to where something simple tomatoes in the sauce hail little tomato reduction of the sauce. So if this is going to be an entree, I think I'd wanna Fitch 'table. I might serve it like with sauteed, spinach or broccoli, rob. Or something certainly on starch because it sounds like it was very saucy. Well, you know what I would do. Here's what I would do. I would just serve it with a bottle of wine. And then I have a beautiful salad. Great. I thought you were going to say the wine was your fruit vegetable. Yeah. I would just serve it would agree. Allen salad makes sense. "Restaurant on Staten Island that was dreamed up by an Italian American guy who was feeling really nostalgic about the food. He grew up with and had no restaurant experience. He was a career MTA employees. But this guy Jody Scarsella is kind of a magician. He couldn't find the kind of food that he grew up with in Brooklyn. So he decided to open this restaurant, and he wanted grandmothers to be the chefs I had this idea that there was a lot of Italian women out there that had all this knowledge that they could bring to the table. So I put an ad in the in the American OG, and it's a jacuzzi 'cause Olympic which another beach, which basically means we're looking for house. Lives to cook regional dishes. So the concept is these are people grandmothers Nawaz who been around know how to cook the food the way he remembered it from his Charlton. So that's how it started. But it's really entered a kind of second wave Jody realized that this model of bringing grandmothers into the restaurant to share their culture and share their cuisine could be duplicated. And so he started seeking out women from all over the world about three is into the project. I noticed that everybody was here celebrating these talion women. So it just made sense that we should celebrate every culture. So when I went to visit there were the Italian grandmothers the known as but there was also known as from Sri Lanka from Poland from Greece. And so he every night there's two kitchens, and there will be an Italian grandmother who's cooking. And there's also known it from somewhere else in the world, but these grandmothers aren't flying from SRI lock they live in Staten Island. Brooklyn, their local these are these are. Instrument locals just to clear that up, and Secondly, how long would they be in a rotations? Or is it just a one off? They are they tend to stick around. So he usually has them cook once per month because it's a long shift. I mean, these women are older and they're working fourteen sixteen hour days. So it's usually once a month and some of them have been cooking there for years. So you obviously went to the restaurants, and you talk to some of the people some of the grandmothers so who are one or two of the grandmas you talk to what are their stores. So one of the women I was able to talk to Putin staff with from Creoles Greece, and what was really special is her daughter was there too. And her daughter's the one that actually introduced her to the restaurant. So after Putin Isa's husband passed away he'd been sick for many years. She'd been taking care of him. She kind of had this void in her life. And so her daughter had heard about the NO Teco her daughter's name is Maria, and she contacted Jody and sort of plotted to just bring me to in for her birthday dinner and not tell her this. Was all setup to get her to actually cook in the restaurant. So I told my mother about the intent I just said to her on her birthday which was September fourth. I said would you like to come to the to this restaurant that has grandmother's cooking, and we came in we met Jody and his wife and Maria was here, and I'm Nina, and they will cook. And so my mother just gravitated towards them while they were in the galley kitchen, and I just saw them connected without even speaking fluent English, but somehow connected through their their food there traditions and things like that. So then my mother I saw her. She was definitely looked like interested in Joni took to the table, his wife, and my mother said to my mother, just keep it simple. Make a menu and just what you like to cook. And now she cooks there regularly, and she makes all kinds of delicious food. She makes moussaka and Bach lava, but was incredible. As she pulled out this little notebook. Maybe six inches long. It was in a plastic bag, and it was her grandmother's recipes, and so she's cooking from recipes that have been passed down for generations. So were there other known as you met when you were there? If you if you if you made a mistake, or you you had waxed dental floss, you some waxed dental floss or flavored or mint flavored or cinnamon flavored dental floss, he'll cheese. See? I love it. When my tastes like, cinnamon. Right. Hall strawberries with a straw. You. Don't need a strawberry. Holler. Take the stems off the strawberry. Cleanly by driving the strawberry right through the from the biting the straw, right through the bottom to the top. Okay.
