Yeah coup glasses and it's bowel condition as well okay. So you know it's You know we'd like you have a you have a bordeaux blend symphony. "And we're each brewing it with different fruits. So they're doing there's with raspberry. I'm doing ours with Plum and release. Yeah. We're gonna release the the base version February sixteenth but half of it is going to be aged in Linford wind barrels Linford again right up the road the road again. Yep. Blooming. So they're gonna have their is very we're gonna have our Plum aged in its Chardonnay barrels from Linford that will be released, you know, probably in the fall. So are you going to put any of you'll be I'm no, no, you have growls and Crowley's, but you're gonna put any into cans bottles. You know, the special releases bottles, we might work something out to be able to do that. I like to be able to do it with this collaboration. We're doing, but as far as cannon goes right now, we're just not we're not thinking about that. Because I know we don't have the room for it to be able to do anything on her own. So what have to mobile canning, and we're just really focused on on the kegs and getting the beer out here focusing distribution soon. So we're not really looking into the bottling aspect of things yet. Just one step at a time. Like, we're just starting to think about distribution and. That's really like our goal for this next month to figure that out and actually get our stuff in some restaurants and bars around here, we've had a lot of interest, and we really wanna get that going. So that's definitely the first step. And then once we kinda get the hang of that, you know, then we'll probably move onto figuring out mobile canning. I think that's a really good business model because if you look at fly spring up in Barrington, they've moved from Lomba they stopped brand for a while. Now, they're, you know, just just doing them brew pub, but they are also putting out some limited bottles when I remember, I remember we'll said no one ever gonna do bottles just Crowson and now the doing buckles. But yet if you can keep something really specific and have something special and continue to have a thriving business. That means I think a lot more people these days. And it always turns into a big conversation at the bar, which I love just the one little last thing that we feel like is really important about our place. We try to be sustainable in a lot of different ways. You know, when we were developing the building the business, we always had that in mind everything's like LED lights, and we tried to not use a lot of paper products. And you know, we we knew people that were at the business next door before we came here. And they said the same thing that it was haunted, and they'd heard lots of stories and sure enough we get here, and it is definitely haunted. We even know the name of the ghost. It's it's quite a weird story. But we recently had it saved. And we feel like I think things are feeling a little bit better. Not that it was ever bad. We don't think the ghost was like evil, but he was not a nice ghost. That's for sure of what happened. Well, obviously, they died become a ghost. But how did that die here? Or was it just a bit? Well, there's been a lot of deaths here. But I think it's because this was built on an area where the Black Hawk war went through. And it could be something from that. We've heard a lot of different stories, but we we've heard multiple times that there's children in the cellar. There's two kids to go s- kids. "So after twenty sixteen. When did you guys get involved, and when did the restaurant for village of Bloomingdale turn into a brew up? Well, we probably were looking right around that time for a building. I don't think we were as we were serious. But I don't think we were fully vested in searching them, quite like decide exactly what we're going to do. And like what kind of building we were going to do it. And we're still open to their for was available looking at like industrial buildings kinda like what everyone else is doing and shopping malls. Yeah. You know, seem what was out there. What could be done? Yeah. So we probably ended up getting really serious about this building in. June two thousand seventeen so it's on right? And even sooner than that. But yeah, a little bit on the building. We knew it was right? We did. I mean, we walk through. And we were like, Yep. This is the place. This is what we wanna do. And we knew it was a big scary job that we had in front of us. But it kind of runs in my blood to wanna rehab places because that's what my family has always done. So I just knew it was going to be so much fun and just a crazy ride. And it definitely was crazy ride funnel. Both both. It was a lot of fun and looking back at it. I always think like it was so stressful while you're doing it, but it was so much fun. And it was so cool to be able to design it together and just have complete free rein on every little detail. And we're both we both have artists background. So it was a lot of fun for. Us to pick it out. And it was stressful in the moment. But once we did it, and it kind of came to be what it is. Now, it was just so so amazing to see it all come together, the stress stress that we felt then building it is actually a lot nicer than the stress we feel now of running it. That's true. You've got a whole different level of. Yeah. Different type of strategy. Let's go back then to when you first went to Bloomingdale village and said, hey, we've got an idea for putting taking this old house, which we'll kind of go through the rehab process a little bit because loss time, we told you had some really interesting stories. I wanna make sure we get those recorded this time. So what did how did they like entertain that idea because I don't think Bloomingdale has anybody brewers or anything the closest one is up in Roselle? Right. Well, so now the closest one is actually down the road twenty five west that strengthen I remember coach our friends down. Yeah. Time. They did not. Yeah. And we so we were looking at a few different cities. And we have a good friend named Brian gay that was director of economic development for do page at the time, and he helped us kind of get together. Bloomingdale he told us that they were looking for a burry to move in. And once we started looking at properties, and we found this one, and we saw how often the city was to work with it was an overeater, really. So they showed us this Operti, pretty. and it was one of those things where we saw it. And I mean, I think we saw the potential in it more than what it was. And we're like all right. Well, we'll we'll we'll take on this project as long as it's feasible, and I think that, you know, throughout the craft brew in community, which seems to find out things way ahead of anybody else vote in.

I I would like to see a little bit more conditioning on this bear little bit more foam on this beer. I actually I wouldn't. I think it's perfect the way it is think so because it's really drinkable. What do you reckon of this trend hopefully coming back for cost condition? Nails the New England I ta tight trend. But I really liked this. What are you drinking? I'm drinking the one from hop. Fine. The mile. Yes, it's very good. I liked it. It's room temperature. And it's Smith's good. Very easy to drink very easy to drink, and it's real low alcohol, and I have to tell you that I grew up on English mile, you know, because it's easy to drink. And you got like four or five pints an evening to go. Lots of flavor, but you don't have all that alcohol, and you know, you don't get blow bloated. Right. So is it a wonderful thing to have real empty? Yes. Now you frequent one of the Burs in Westmount whiskey hills. Hill we used to be urban legend and then missing legend. And now they were bought out months ago. And now, it's whiskey hill, and I have to tell you they're still of an legend bottles on a shelf at a does that I go to yet, which is really bad on the nets problem with. I don't want to mention the distributor that they were using. But it's a lot of the stuff is still out there. And if somebody gets an old veer, they don't yell at the distributor, they divert thing and very kanga around police all that. So, you know, so do you think this is a trend that you would hope to see expand?.

You just have to go by experience, you try to figure out how many for mental those are still in there. And what they used is gonna do. And maybe wake it up with a little bit of sugar or something like that. And then figure out what your temperature is. If you don't have a cooler, you put it in the cellar, whatever.
