Can you tell what's going on with that dude. I have no idea. It's kinda crazy. So they announced yesterday they had some investor virtual investor day. today were recording on tuesdays. This was monday suddenly like. Oh we've got this thing called plant. So this is a notable for a few reasons. One of which being mcdonald's has sort of sat out here in the us anyway on the plant based burger craze so whereas burger king introduced impossible whopper last year and white castle has it's impossible sliders and even burger king had an upper. Kfc had dipped its toes in with some pilots on plant based chicken. You hadn't heard anything from mcdonald's than they had run some tests with something. They called the plt eighties. Kid makes me think of pyti but the plt up in canada which they did in conjunction with beyond. Now here's where it gets interesting. Because in the announcement yesterday they said. Hey we're making this plant Which on its own makes you want to say macpoilin for those people who watch the it's always sunny in philadelphia the The so this mc plant burger is coming next year But they didn't say who what they said. Actually they said developed Culinary team made by mcdonald's for mcdonalds so hearing that was like okay. they're making their own. They tried beyond didn't do what they wanted to do. So they're making their own and then a lot of people reported this right so beyond stock took a tank took a dive yesterday. Because they're like. Oh you're not be doing it for mcdonald's and then mcdonald's came around and said oh actually you know actually rephrase this so mcdonald's center around a clarification and let me just because this gets crazy so their pr person sent me calms team. Sent me an email saying in the same way. Mcdonalds has not run its own farms. We are not manufacturing plant based meat for the client platform notice. It's a plant for platform about a food We will rely on our suppliers the third leg and mcdonald's three legged stool blah blah blah blah blah. Right then it says mc beyond meat was our testing partner for the plt plant based burger in canada and we have not announced which suppliers we will work with on mcclymont so clear as mud like cagey cage. Yeah well and then beyond came out yesterday and said hey actually. We co created the plant and You know they were but that was on their own call. Mcdonald's didn't say anything about it right so The but beyond said beyond meat and mcdonald's co created the plant based patty which will be available as part of mc plant platform. But they don't say going forward. That beyond meat is the supplier right. So this may sound muddled because it we're still trying to figure sort through the news it does sound like there may be implying it but there's no definitive i did I think you may be posted in the slack. I can't really feel why. I mean i think then possible walker was developed. Fairly uniquely for them. I mean it. Has that weird kind of gross x-ray on like that a grill taste or that flame royal tastes that his uniquely burger king. Impossible has Which makes me think they've spray somewhere chemical on it but But i i get it and by the way mc plant can we just discuss the name a little bit like myself walked in. He goes dead. This Burger-Flipping Robot has Workers' Unions Flipping Out
"The next time you're craving, a burger and fries a robot named flippy may be the one cooking, your order white castle. "We want to know what was your first food memory. My first food memory. One of my favorite things to eat is I just love rice and then not just rice but I love eggs in races so lake any kind of eggs generally. When I was growing up in Japanese food you can eat raw eggs but in the cat so we have to like a pan fry are boil it. But it's the idea of mixing that with the rice important slice sauce on it if there's nothing to eat eggs and rice was that you making that for yourself or is it somebody else making it for you. That was my grandma and my mom making for me and then when I got to do things at home because at cravings I got very creative creative with like found ingredients. Yes let one of my best things that I felt that I created when I was young so I was craving pizza. But we don't have pizza at home and it's not like you can make pizza. So I just got like the USA dumpling. Skin and I put regular spaghetti sauce on it. Cut The craft slices of Cheddar cheese and some ham and a toasted and I was like. Oh my God. It's pizza aided and then I gave it to my sister. She's like that's bad shirts pizza. Now you're like see it was cuisine. Yes see those creative. Your Mom's food like we ain't a lot of like Japanese style American food for example like Omelette race or rice. We eat a lot of Tom. Cut Su Eight Curry rise we just had a lot of things like that but we also eight really cleanly to eat a lot of like you know Japanese. They say oh she. It's just like boiled vegetables. Soya sauce or just very simply my parents. They started as seafood market and then they would always have fish and seafood at home and I remember growing up thinking. I hate seafood. Engages won't meet. Can we just have meat in there? Like no secret is good for you. Is that household like where you can get a lot of things. But you're like I just want something else. Yeah I definitely grew up eating all Chinese food right and then I grew up in the south and so I wanted to try crystal and white castle like what was that food that you couldn't get you wanted to get McDonald's back in the days. When I was growing up that was what was nearby. It was like I looked to the left. It's McDonald's I looked at the Rights Burger King Well I wanted to ask you basically about kiosque and your experiences going to Japan and learning to cook that as a southern California born and raised japanese-american but I How would you describe Kaseke. I have to tell people when it comes to Seki that. It's the most formal way of dining in Japanese cuisine. Because it's a very completely thought out meal. It's not just you know where you randomly pick things and put it together. It's a formalized meal where you really have to think up a thing greedy and you also have to think about the cooking methods that really highlights ingredient and it's about seasonality about representing the area that you're in what. I always say that the thing that I love most about is that it's really about showing gratitude toward nature like this feeling of really appreciating what nature has to give you and then giving back by doing the best things that you can do to ingredients to highlight them and make him shine like honoring essence. Yes I didn't realize how. How much of an outsider? I was until I actually went to live in Japan because I remember going up here and thinking. Oh you know one day when I I remember like around the age of twelve hours. I think I want to go to Japan to study. I WanNa live there and Experienced that kind of life just to what it's like so different from what would've known and I thought that would would be an amazing experience for me to do it and I always had planned it in my mind. That was going to go after high school and just sort of experience the lifestyle and there was only when I actually went there. Did I realize like Oh my gosh? I think I'm so much more American than I recognized when I lived in America. Because there's just so many things that are so different from our lifestyles and there's so many cultural nuances that if you're not familiar with you could come off as being offensive to people. I felt like I had a really good education about those nuances. But it's only when I went there that I realized oh I can't walk around and eat at the same time because that's not what you do and your pen like and then. I can't sit in the subway with my legs spread out because I'm so tired like I just have to sit there properly and behave yet and I think one of the most hardest things when it comes to trying to get into what I wanted to do with cooking was finding the right place to sort of accept what I wanted to do. Luckily I had relatives there that were willing to take me in and give me that training and things like that but I felt that there are a lot of differences but at the heart of things I always feel like I can relate so it's very difficult I think at one time I really wanted to be a part of the society but then after as I got to know it a little bit more deeply I just felt like I think the best thing is just be who you are and you came home. Yeah well what was it actually like growing up here? I think one of the things that was different growing up here is unlike how it is. Maybe now there weren't as many Asian people when I was growing up and I felt like I had one Japanese class main ahead. Maybe like three Korean classmates may be there to Chinese consummates but it just felt very on some level isolating at one point. I hadn't really thought about it. Wasn't like a big deal wasn't like. I felt the need sort of not belonging that I noticed that there are differences. Thought about being as an I guess or being seeing how different you're from everyone else. Yeah you know what I didn't really think about being Asian until I actually moved to this end. Gabriel valley and that was really an unique experience because the high school I went to had. Maybe it was probably seventy percent Asian. The thing that struck me was like this is not how imagine highschool leg where all the cheerleaders and jocks that you see going on. Tv's and my high school does not look like this and That was the thing that blew my mom. I'm from Tennessee. So that was the thing that blew my mind. The most of California's there's a majority Asian highschools I was like one of you know two or three and my high school Tennessee. You know coming out here like I'm like oh I'm Asian and then there's all these other Asian people it's like I need
The Walmart Haul Episode
"All right. We're GONNA jump right in. It's a Walmart Hall. Which means we have lots of products that are ready to be chewed and sipped and swallowed starting with the above all of the above. Not necessarily in that order. But first we have tiller and hatch pressure cooker meals chicken Tortilla Stu so basically these are frozen bags of food items that you throw a pressure cooker or these days. We know it as an instant pot and so it's already made so he just throw the what the contents of the bag into the pressure cooker and IT COOKS UP PRETTY QUICKLY. So this one says only gives you stove top directions to which is nice. I had this. Oh you add water to the pressure cooker. Then you add the sauce than the rest five minutes and then when the timer goes off wheat four minutes. This is basically a nine minute meal. But then but you do have to heat up. Depressurize your pressure cooker. So I wonder if it's really quicker than using stove-top but well I don't know but I'm interested to try it because one cup has one hundred ninety calories four grams of fat and four smartphones points. I know you've got that fast because I'm starving fun and have lunch. Mike is not eat lunch. He's about to chew on Jamie's hand but now we're going to try this. It looks very soupy but this is a chicken stew that was made in a pressure cooker. Or in a I'd like you pass Utensil. Thank you so much wonder. What the origins of the word like Stu like as far as you know what you're doing that's STU maybe names to studio originally it make sense doing it Well it's really good. All right that chicken. This tastes like homemade. Mom's chicken suit and there's corn in it. It's very mild but it's flavorful. This is really great. Comfort food totaling. I love that it's not too salty. Yeah what's sodium? Like on six sixty for a cup so it's not low but let's put that over cauliflower. Rice I love. It was like chicken tortilla soup but with corn beans. Yeah so it's really delicious. It's unexpectedly tasty. We're off to a good start. Okay next up. The product is called mighty spark all natural premium cuts of chicken PROSCIUTTO WITH TOMATO. Basil and garlic seasoned ground chicken so this is basically whereas the packaging of that. Is it a It looks like you buy it in. It's tomato Basil Garlic That's really I love that you don't like about it. It's a little different like sometimes we do the shortcut thing where we Italian seasoning. This doesn't hit you over the head in the same way. Like you really taste the basil or things. He's so good you're probably instead of making ground meat out of it you can do like a meatball or something or Turkey ball. Yeah yeah or like a really fun Burger. I love that. Like sometimes they'll name it something like Bouchette and then you taste it. And you're like they should've just called it tomato garlic. I like that really delivers on the shuttle flavor. Absolutely it does and four ounces. One hundred sixty calories eight grams of fat for smart points to for to that is excellent. All right next up. We have hunts chilly kit. Just add meat. Ready in twenty minutes. So it's brought to you by. Hunts the people make ketchup? You know the people who make the the other ketchup. And it's a chilly kit. So this is a little bit. It's a smart thing you it's ready in twenty minutes you everything you need. Except for the ground meat of choice we decided to make it with extra lean ground beef and as it is without the beef or any of the meat. Three quarters of a cup is one hundred calories no fat and three smart points as package so it has like the little tomato the sauce and the beans. So we're GONNA try it already semi seasoning. I think That everything I've rhythm Kinda tastes like catcher. I was GONNA say days like they're less good ketchup. I kind of was I. Wish hines me this. What did hunt do before they did? I guess and the thing is I think seek was in listened to us or took our idea and ran with it but basically we have made a Tortilla in crusted chicken. This is a Tortilla incrusted. Pollock which I didn't realize anyone ever called anything pollick. I thought pollock was just like fake crab the other white meat even the other whitefish before you tasted the story with C. Cuisine. They're the ones that made the salmon that we didn't like didn't they? Make one thing we liked and one thing we know I think this is like their redemption. I love it. You know what I like about it. It's like soap crispy and crunchy so it's Each belay has two hundred and forty calories. Six grams of fat seven smartphones. That's really tasty. "For ME GROWING UP IN CHICAGO. McDonald's was always around. We had birthday parties at McDonald's because her apartment was on on the small size I went to McDonald's after work in high school and after school. It was the go-to meal when my mom Um and I were driving far distances and we needed something to eat and so I have probably spent most of my life inside of McDonald's so the fact that I wrote a book about McDonald's. McDonald's is actually not that surprising. This is Marsha chatwin. She's a professor of history and African American studies at Georgetown University and her new book. The book about McDonalds. It's called franchise the Golden Arches in Black America and speaking of the Golden Arches. There's another new book out called drive through dreams. James A Journey through the heart of America's fast-food kingdom it's by journalist. Adam Chandler the Golden Arches are thought to be according to independent survey more recognizable as a symbol. Both then the Christian crosses around the world recognizable or no. I didn't imagine we'd ever focus an entire episode on McDonald's but here we are Dr Together. Adema Marsha Taylor story about McDonald's that is about much more than McDonald's making it perfect for gastropod and we of course our guest repod the podcast. That looks at food through the Lens of science in history. I'm Cynthia Graber and I'm Nikola twilly and this episode. We're getting to the bottom of how McDonald's took over America. The story starts with WHO invented the hamburger burkart. And how did it become so ubiquitous that it gets bigger from there this episode. We're asking his McDonald's basically America's national cuisine and if it is is what can it tell us about who we are as a country less. How did the tax payer ended up funding the spread of McDonald's in the inner cities and why we're civil rights groups on board? Well whatever idea you have of of. How huge fast food is you should double or triple in your mind because the statistics are bonkers? They're completely bananas us. Eighty percent of Americans eat fast food every month. Ninety six percent of them eat fast food every year which is more than the number of Americans that participate participate on the Internet atom. Says there's not a single place in America that eighty percent of Americans go to at least monthly not a library or Jim or any house of worship according according to the Centers for Disease Control which is not happy about this stat. More than a third of American children eat food every day and for the population as the whole. It's roughly the same thirty six percent of us. Eat it every single day out of all the fast food available to us in the US. The biggest I the most popular chain the one that serves literally one percent of the world's population every day of course it's McDonald's which according to somewhat recent stats sells seventy five burgers every second and Serbs sixty eight million people per day. There is no real way to get your head around numbers that large. But what's weird is that's is makes McDonald's the biggest almost everything everything. It does so marshalled as the McDonald's is even the largest distributorship toys in the world just because of happy meals. At how do they get that big to answer that we we have to go back to the beginning. It all starts about one hundred years ago with the invention of the hamburger. Well there is a lot of debate as is debate about anything culinary in this world about who invented invented any particular item there are many authors but a lot of historians culinary or otherwise. We'll give credit to Walt Anderson. And he was a fry cook in Wichita who one day in one of those kind of Isaac Newton Aha moments got really frustrated when he was cooking a meatball on a griddle and smashed it flat right with the SPATULA and the result was a burger that cooked through really quickly and he put them in these specialty buns. And that's sort of the most recognizable version of of the Burger that we have well Anderson's meatball. Smashing moment was a breakthrough. He went onto lunch white castle. And that what is believed to be the very first fast food chain in the nineteen teens and twenties. There weren't fast food chains. Americans lived in a very different world less connected less cosmopolitan. I'm a politician. Even as late as nineteen twenty five only half of all the homes in the United States had `electricity even fewer had indoor plumbing. People weren't used to dining finding out regularly. Generally speaking there wasn't a unified culinary culture. There wasn't one item. We had ethnic enclaves that had their own specific blends of items that that were cherished and part of a tradition but in the nineteen twenties America was starting to change. The model t was becoming more affordable and the number of people who owned cars more than quadrupled. Adam told us that nineteen twenty was the first year that more Americans lived in cities the not the US was starting to become urban. The First World War was the first mechanized war and the nineteen twenties. He's was the machine. Age Technology promise to streamline and modernize every aspect of American life the nineteen twenties was also. The beginning of radio's Golden Age and more and more people started to tune into music and mystery and comedy shows. Radio started to create a national culture at the end of World War One reserved this unifying aspect to American elect. Technology was bringing about and the hamburger was part of that was part of finding a national diet. The hamburger did have one hurdle to overcome Americans. At the time. I'm was scared of ground meat. They were scared of it. Because they'd all read the jungle by Upton Sinclair and they were nervous about the quality of the food. The jungle was a really important book from the Early Nineteen Twenties. We talked about it in our episode. On the history of preservatives. It told the tale of a semi-fictional worker in a Chicago. Slaughterhouse and the nightmarish conditions there for both the workers and the resulting meat while Anderson than meat ball smashing genius behind the hamburger. He was fully aware that Americans thought ground meat was likely full of dirt and and dead rats and even workers fingers so what he did was he designed these stores that all look the same. They had stainless steel interiors white tiles and they look like castles and white castle was meant to kind of convey this stately safe grandeur of a place where you could go and it would be the same everywhere you went so it was meant to reassure consumers. Who didn't really know what was safe to eat? And that really set the tone for what would come in the future of these industries of franchising of seeing something wherever you are in saying. Oh I knew it. I'm going to get here. This is familiar to me. White Castle was the first to open in franchise fast food restaurants. But it isn't the biggest today as you all know. That title goes to McDonald's. McDonald's brothers were these two men from New Hampshire sure who had kind of seen the extremes of the great depression and they headed out to California to see where they could strike business. Gold Dick and Mac McDonald headed West in nineteen thirty. They were in their twenties and their thought was. Maybe they can make it big in the movies. That didn't find as much success as they'd hoped they were two sons of a shoe factory foreman and they found success more for in the business side of production the catering. They went from that into the restaurant business. They opened up a barbecue. Stand in nineteen forty and southern California and and it was one of the drivers of the era. That people are often familiar with car. hops in major at boots and a young guys cruising in in cars and people hanging out and just kind of a big scene and they were successful. First restaurant was called McDonald's and it was in San Bernardino which is just east of La. It's meaningful that. McDonald's started in southern California because southern California was really where a lot of changes that overtook. America were happening kind of on on steroids by the early nineteen forties. The Great Depression was finally over. San Bernardino is shifting from being farming town to more of a manufacturing and service industries industry center people were moving their into the growing city and suburbs and increasingly. They had a little disposable income but also San Bernardino was on route sixty six and so it was a place where a lot of people were traveling throughout California as well through as the rest of the country. So Dick and Mac McDonald. Were doing pretty well for themselves. But but then after eight years in the restaurant business. They surprised everyone by deciding to close their popular successful restaurant and entirely revamp it. The re diagram to what the kitchen would look like they use this assembly line model that White Castle and kind of employed and they cut the menu items from twenty five to nine. They also fired all all of the young women who are car hops because they felt like they were flirty and they would distract from the work that was happening there. They also wanted to pivot away from being a teen hangout to family friendly place. They got rid of silverware because people would steal it or break it and they went to wrapping Burgers in paper and they wanted to create the most efficient kitchen possible in order to serve as many people as possible. And so the revision of the McDonald's drive in is what we are living with today a highly automated mechanized kitchen and that is able to produce high volumes of food and a very short period of time. What they did was they basically just souped up the kitchen and turned it into a factory? An assembly line dusted with Hollywood magic. And the result was they could serve food for cheap even cheaper than their previous menu items had been. I didn't know what to make of it but it caught on very quickly. This new McDonald's factory style restaurant didn't just catch on with eaters. It became a total phenomenon. Within the restaurant industry. Eight people were coming from all over the country to kind of hear and see what was going on because there were these whispers in the industry about this place that was so popular and and you know there were long lines and people were talking about this place. That was not just serving a lot of people but serving a lot of people quickly so eventually the founders of Burger King Taco bell a couple of other chains that didn't quite make it ultimately stopped by and they copied with McDonald brothers. Were doing as Z.. Listeners know some of those copycats are still around today. One of the businessmen who came to see it was none other than Ray KROC. He was a salesman and he sold the mixing machines machines for milkshakes and the McDonald Brothers had bought a shockingly large quantity of these machines so great thought he'd go and see what they were doing with them. Ray had been in nearly every kind end of commercial kitchen available. At the time. He'd played jazz at speakeasy. During prohibition he'd sold kitchen and restaurant supplies around the country so he came to the McDonald's restaurant in San Bernardino we know and he saw the crowds and he was completely blown away by it and so immediately said this needs to be national. This needs to be everywhere. Ray convinced the brothers. Let him start working with them before long. He bought them out. And the tool that ray us to fulfil his dream of taking this model national and then global global was the franchise so franchising is this concept that a parent company provides all of the blueprints and the instructions and the recipes for a product or service and the Franchisee pays Hayes for the right to deliver that good or service to an audience. Ray KROC didn't invent this franchise model White Castle had already been using it and in fact many experts think that at the root of the idea goes back to the Catholic Church in the Middle Ages tax collectors did the work of the church and collected tithes and the kept some of the money for themselves at the start of the twentieth century. Rick Coca Cola had used the franchise model to make their sugary drink available at drugstores across America. But it was ray KROC who really took this franchise idea and ran with it. The franchise model. I think is amazing because it allows companies to pass on all of the liability to this other party so so that was sort of the way in which McDonald's grew really quickly and also took a lot of the risk out from opening places and this is the way they maintained control over franchisees so it was consistent. You didn't have rogue franchisees trying to sell Pepsi when you had a contract to sell coke and so it was a complicated system. But it's what turned McDonald's into the the biggest in the fastest growing fast food restaurant. The

But it showed up in that kind of disc form this we watched as they took just a bowl full of this material and formed into patties and went through the entire cooking process. It was all just kind of done, you know, right on hand. So what we haven't really got. Why was it? See? Yes. Like is there any like does? It have Alexa, built in or Gogol services.
