And then at times would look really dysfunctional. But a ton of people including myself gave Boston the benefit of the doubt during the regular season. I see something that definitely looks very familiar and might just be the basic building blocks of a million dish million things. What's your favorite thing with caramelized onions, you know, it's hard to beat a really delicious burger with caramelized onions on it. I feel like they really shine and bring out the meeting and that Patty, what are you doing there? Tom. The sweet symphony of onions, that's what I'm doing. That is a symphony right there that is fantastic. Could smell it. I know chefs got the fire up so Sarah, tell us about your quest for the for the perfect caramelized onions, and why do you feel the need? This is too fast for you. This is part of cooking. This is this is the essence. Yeah. I mean, I do feel like it's just a skill that. I don't actually see a lot like at home. Like, I I don't remember, my parents caramelized onions, I definitely don't see my friends doing it. But they're delicious, and they're amazing. And they seem like onions are such a basic food. And they're one of the first things that you learn to just throw into different tastes good. So it seems like a skill that you should have. And you should just be able to whip out and throw some caramelized onions enjoys super whatever you on one hundred percent with you. I always talk about you know, when we talk what's lifting your fridge. I was talking about that have on you put it in the fridge one day to day three day every time you open the fridge. You look at an onion. And every time you open the fridge. The onions opens up opens up come on us me. And then you finally feel like you have the right to bring the garbage. It's so simple. Just take the onion slice it three in the pan. While you're doing something else an encounter is it is it once it's caramelized. It's the sweetest most beautiful product you can use in so many different ways on sandwiches on grill bread on on so many different items. It's so crazy how people don't know how to do this. And that is such a good basics to have because you just revived and made a new life to this onion, then you'd be looking at going one more day, and I can throw it away. I feel like an caramelized onions is almost intimidating to of people because it involves leaving the onions like just leaving them on the stove repeat of time. And I at least Moi's worried that you're going to burn them. Very right. People are very nervous in front of the pan. Well, the other part of that is to is that we've all been taught from pretty much like the worst thing that you could do when making dinner particularly forgets is burning something I mean, there's so many sitcoms for someone's. Pulling something out of the oven. That's been overcooked or the steak is overcooked. And so there's something about this that I'm sure is a little bit like pushing it too. Yeah. Exactly. So the trick about that. So let's start from the beginning. Let's by good onions to start with. So chef in front of you. If you can't see this which most of you can't. On our Facebook. We're taking some some pictures as we go along here. But you want to reach for your yellow onions in the grocery store, and I don't mind just buying the cheap ole Washington yellow onion by the sweet sweet onions, all that kind of thing. That's all great. But we're going to be too. Yeah. We're going to reduce down to their sugar level anyway. And so what I have here in my hands are two yellow onions and the the audience here can see one looks in pretty bad shape. This is out of the same bag that was delivered to us this morning. Shabby one looks really shabby you can see it's a little bit translucent on the outside. It's been beaten up. It looks like it got a little wet. And then the other one is shiny yellow really firm to the touch. That's exactly what I want. Now. Let's face it. These onions to have been in cold storage. He's picked probably in September. My guess maybe even earlier than that maybe August September. So they've been in cold storage for six months now and this onion is in beautiful shape. You can see one wait, Mark. And by the weight, Mark. I mean, these things are stacked tons on top of tons of. It has a little flat. It's not it's not a bad, Mark. It's just where the wait was sitting against that. Because they're around right. They just certain spots. So this other one I would never buy matter of fact, this will just get cold out of our fifty pound sack and get thrown away. We could cut it open. And if it's even worth using for stop. All right. The other one it's nice and firm, but it's got watermarks on it. Where you can see this anion was wet before. And that's what stains that Brown skin is very much a coloring agent, right tasted exit dried, it's a very clean dry product. Yeah. But you can really tell how the onions been handled or where it's been sitting by the by the watermarks, and it looks very much like a watercolor Marei on there. So and then you just want to cut them in half take appeal off, and when I'm doing this kind of caramelized onion, I wanna take one layer down because the dry ish outside edge of the onion might work in some instances. But it gets kind of weird in here. Chef to me you have that panic a little hot. I just wanted to realize it with you're trying to get there, really fashion. ICS? He's rushing the process. So what are the questions you have about picking on you anything? Well, there are so many different types of onions realize for caramelized onions, you can just use a regular yellow onion. But for just a regular dish. Like say, you're making soup doesn't matter. What kind of get a sweet versus a yellow versus a white. It doesn't matter. But these are seventy nine cents a pound and a sweet onion is a dollar seventy nine a pound fair. So it's kind of up to you. What really matters is how delicious your stock is going in on top of that. Yeah. How dark you got them? Right. The longer you're going to cook something the loading is the best only because it's a waste to use the Walla Walla sweet, for example. Now, if you're going to make a salad who's raw onion, or you're just going to do a quick saute of onion with a piece of fish or something or grilled on the grill. I really wanna use a good you want use the product you can find let onions are at their base is a very good vich to us. And he's such an flavor. I think it's beautiful. We know it's food of water full of sugar. It's like how much better can I be right? And to get back to your point about walking away from yourself. If you do. Him on low. If you have an hour or hour and a half. Go ahead put him on low. Then you could walk away. You can go do laundry. You can do anything you want. While you're onions are cooking. If you're trying to rush, and you just home from work, and you really want onion soup, but you have to kind rush him. Then you have to tend them at the stove and keep going chef these are I would say the color of the skin of an onion right now. Correct. Is that where you're going to stop? I want to go a little bit further. You want to go further. We so let's turn that back on a we'll revisit those maybe in the next segment. Let's talk about cutting onions because there's a lot of ways depending on how you're going to use it like say, if you're going to do a quick stir fry maybe you would cut the slices pulled the poll in this particular case when you're making caramelized onions, what is your preferred slice, man, you're cooking all the way down. It really makes no structure is gone. Right. You're they're going to be much. And matter of fact, that you've heard me talk about my gravy a thanksgiving. Right. Yeah. This is where I want my onions even darker the this. They're sitting. Under my Turkey. They've been roasting for a couple of hours. They're soft soft sire gonna disintegrate I put my hand lender. And they're going to disintegrate into my gravy there. That's the thickener is that Ryan pace. Right. So that to me is. And also, this is when you use a bottom pan Gaston Austin is still and then the easiest way in the world to clean the tank 'cause most people are afraid of heat, and they were afraid of getting their pen duty, which is kind of amazing. But just what it is. I mean this plan if you look at it, you go my Cutty destroyed that pen in you, take the onions out of there, you keep the Panhard. You get out of there. You put some water into the pan you take his spot. You learn you dig lays the whole pen, and it's clean. And that's and that's flavor. You want to add to your soup stock right onto the pan here. That's not always the case. Right. But in the right scenario, that's the way from the butter and the sugars from the onion set of kind of burnt or caramelized themselves onto the pan. I would say. That to a certain extent in my experience. And maybe you guys feel differently about this. When you're making caramelized onions, the pan does matter to a certain extent, though, using say nonstick, for example, is not going to give you that fun from the onions that you're going to be able to degrade, right? Well, it doesn't stay on the pan. But it doesn't just stays on the onion. It doesn't change. The Brown is still the Brown. It's just that it doesn't you don't have to declare the plan. Like you do with a stainless steel pan. Like we have here. Right. Yeah. But because you also doing high heat and long heat. I would recommend staying away from a non stick, right. Yeah. That would be my although chefs I mean, the the real deal is you're not supposed to take nonstick above four hundred degrees. Right. So if you're doing a low and slow caramelized onion, it might be the perfect pan use for that other than a over easy exit me, this is why it's great to talk. I'm just saying. That's yes. You gotta you gotta. She'd you using if you using heat stay away from the nonstick. So what else would you do with that on you? So chef cherry makes the best onion soup in Seattle. What would you do with those? That's a good question. I think my first thought is actually this might not be what you'd normally do with them. I've been really wanting to make like a good baked potato. Hi, hi with all the different kinds of things you can put on top and caramelized onions on top of a good baked potato to sound.
