We like you had no idea how long the pandemic would go on. And what the health and economic impact would be in our community going into twenty twenty one. The pandemic is now killing more people shutting down more nonprofits and small businesses on with wiping out the livelihoods of families neighborhoods and communities. We will continue to shine a spotlight on the nonprofits and small businesses that make up the fabric of our community along with the founders and staff who are struggling to deal with the impact of the covid nineteen pandemic on their operations services is an ability until we can all get to the other side of the pandemic along the way we will also share with you all the amazing solutions that are nonprofits. Small businesses foundations and government leaders are working on to help us all get to the other side of the pandemic and come together to rebuild our communities with more economic social and environmental equality. I think also the restaurant industry is such a tremendous industry worldwide right like restaurants so often provide such a vital resource to communities not just in food around just the structuring of communities and making people feel seeing in heard and welcome and i know for all of my locations. We have regulars that are there every day and you get to know them and their stories and without those spaces you realize how isolated and lonely it can be for people. This is the founder and owner of all good pizza tanto and cafe oma kristen howick. Kristen is part of the baby. Women's food entrepreneurs who are change makers and community leaders providing jobs healthy food options and a hand up to their fellow community members. I'm joined remotely via zoom by kristen. Hoke the owner of august pizza tanto and cafe obama. Thanks for being here. Kristen had any. I've been a long time. Fan of yours in august pizza out in the bayview and i would love it. If you provide a little brief history of why you set up a good pizza and then now why you started to more restaurants in the bayview community. Yeah my been a longtime resident of the baby. Oh i've been here a little over twenty years. And when i first moved to the neighborhood i was really struck. By how few restaurants in food options were available in the community particularly because we exports so much food from the community we've got the produce market which has been here since the sixties that feeds the bay area and beyond really. They've you actually used to be called butcher town. A lot of the packing came from this community. And we still to this day. Have businesses like molinari's salami. They've been here for over eighty years ever good. Sausage also has been here for a very long time. All pizza really started for me as a passion project to bring another healthy option to bayview. And i really wanted to utilize the local resources of the community so it was really my goal early on to use only local businesses to source from. And i did that by using veritable vegetable which is a woman on cooperative. That was started in san francisco. Kind of a pioneer actually in organics. And like i mentioned. Ever get sausage molinari's salami chron brioche. Which is a local bakery. That's been in the community for a few decades as well. I've been in the food business for many many years prior to opening all good pizza and when i opened all good i was actually. The president and ceo of an organization called nama stay direct and we focused on predominantly women involved in food businesses in guatemala and southern mexico and and we did a business development program that focused on financial literacy training and business mentorship and also the sources of business capital. And i thought to myself like i love doing this work. But i'm traveling to them all and mexico all the time and where i really wanna be in the so. I opened all pizza. Like mentioned you know as a passion project and fortunately it was well received and i was able to focus fulltime on aug pizza after about a year so i quit working my other job and the rest is history. I've been in operation all good since the beginning of twenty twelve. So we're quickly coming up on ten years. And then you started to launch two new restaurants tattoo and kaffa elm also in the baby do community so tato my son's nickname taco and his dad is from mexico city and his dad's mom wasn't incredible chef interesting thing that i learned in guatemala and in working with the populations that i worked with. There was a really low rate of literacy and a lot of the women who were these phenomenal chefs. A lot of the more modern girls did not want to be in the kitchen. So the recipes that had existed in families for generations or no longer being created so. I set out to do a project with my mother-in-law. She was a chef in mexico. City and i set out to do a project with her to write down all her recipes because we all love her food so much and did not want to lose those recipes. After she passed she did pass two years ago. So i created a sort of homage to her and an amish to my son's latino roots and really just in celebration of the incredible food that came out of the kitchen from her and from my son's father's family

We really don't know but I thought it'd be interesting to go over this list of games to see how many years it's been since we've gotten a new installment of games. Probably. Is there a certain cadence and I haven't done this in the past to look at whether there's a certain cadence when intendo renews these Games they there is right Nintendo in order to keep keep the franchises going they. So I don't I don't know how helpful it is to to actually predict what is going to come out and what will come out because like at first I was like. The Games that sell the most are the games that Nintendo puts on a schedule to be renewed at least every four years, and then you go while hold on his animal crossing sold forty million or something at the series, and we have to wait eight years eight years animals. New Leaf right right. But they did have a mobile released. So you know they kind of unhappy designer everyone loved happy. Home Design. Side. So happy home designer. Dave count. Twenty thirteen. We're looking at kind of they are shortening the gap between with remakes and that's what happened with link's awakening obviously to right we got link's awakening to take the spot in between you know the mixed breath of the wild, the last one, and certainly that happened with metro to with Simas returns and the other game that shall not be named.

"Start with the Diet that consistently gets the highest marks when I say Mediterranean Diet does anything come to mind and olive oil olive oil good and more. So here's the low down Sam's GonNa read us these descriptions of these diets as described arrived by US news. And here's how they talk about the Mediterranean Diet. I will read it for you. Traditionally the Mediterranean diet is followed by some of the most long lived populations out there and these regions are called blue who's zones they're five. These are the people around the world who most routinely live to be one hundred and don't get chronic disease only five have been identified thus far and two of them are in Mediterranean countries. One in equally agrees one in Sardinia Italy and they both have the dietary pattern we just described and and both of these dietary patterns are high in fat. But it's good fat. Net would sort of be the signature feature of traditional Mediterranean diets. Wholesome foods sensible combination but because of the emphasis assist on olives and olive oil nuts and seeds and of Kado the total fat content tends to actually be higher than the typical American Diet? So who might right this diet. Be Good for him. Well if you don't want to count calories and your goal is overall good health. You may want to give the Mediterranean Diet. This this promoted by the National Heart Lung and Blood Institute to do exactly that stop or prevent high blood pressure emphasizes the food you've always been told to eat. Fruits veggies whole grains lean protein and low fat dairy which are high in blood pressure. deflating nutrients like potassium calcium protein and fiber. So what do you notice about this diet. It sounds a whole lot like the Mediterranean Diet. And that's for good reason so here is take away number. Two good diets tend to have a lot in common. People should take comfort in the fact that when we describe good diets they sound more alike than different. That's absolutely true. So the building. Blocks Dash and Mediterranean are fruits veggies whole grains they also allow for moderate amounts of eggs poultry and dairy and both recommend taking it easy the on sweets sugary drinks and red meat and one more thing following a dash type diet is linked to decrease risk of heart disease and strokes and band. I would do these now. Let's talk about a diet that everybody seems to be talking about the key to diet the Kito Dodi it emphasizes weight loss through fat burning the goal is to quickly lose weight and ultimately feel better with fewer cravings while boosting your mood mental focus and energy according to Kito proponents by slashing the carbs you consume and instead filling up on fats you safely inter state of Ketosis which sounds like hypnosis who is doing this and what does ketosis really mean. Well when your body doesn't have any carbohydrates left have to burn for fuel instead it starts to burn fat and when that happens your body is an estate of Ketosis. It sounds good right because it can lead to some really quick weight loss but US news actually ranks Kito near the bottom of its list for overall best diets. We heard from Jeff Gear. He followed Kito Diet for about nine weeks and during that time. He says he put mayonnaise on. Everything feels inappropriate to say anything with like that much mayonnaise cleanse but so you know there it was and then he hit a snag and so she's like all right. Well here's how Thanksgiving's GonNa go. I'm not going to go gigantic but like you know we'll do up some fried chicken and we'll do some hasselback potatoes `tatoes and then like the next day it was like did every single ounce of the lake eighteen pounds that I lost contact and then I was just like well damn like I if I can never deviate from really prescriptive maybe kind of scary medical diet than what does it look like going forward because I nine weeks or something is intense but like the next sixty years you can probably tell. The Jeff is not really a fan of Kito anymore. It was just too extreme for him. Him and David Katz Agrees Amen Jeff. David's first strike against Kito. He says it's too hard to stick to and strike number two. David says it just doesn't doesn't check a lot of the boxes of a healthy diet. This diet is at odds with human health that tends to be a very low fiber diet. That's bad for the guest on track. We we simply don't know that this diet is compatible with human health across the lifespan. And well you know to me that sounds like a game of Russian Roulette. It may go your way it may not researchers are looking into whether a diet like Kito might be good for some people like those at medical risk due to their weight and Kito does rank in Chi- on the US news list for best fast weight loss diets. But David says that's not necessarily a good goal. I think much of the focus. Sadly is still on losing weight and and all too often. It's on losing weight fast and one of the things that I routinely point out to anybody who's willing to listen to me. Is that a cocaine. Binge in in lieu of food will result in rapid weight. Loss About of cholera will result in rapid weight loss. So you know where we ever got the idea that losing weight fast. I meant anything about finding health. I have no idea but it's wrong and David's final. Knock on Kito has to do with the environment people. Well who are on the KETO diet tend to eat a lot of meat and red meat. Production requires a lot of land and water. And that's because you need a lot of it to grow the grains to feed the livestock and that's your takeaway number three if you want to align your eating habits with a healthy planet think about the environmental footprint of your diet. I don't think Alison we can talk about Diet and health and not factor in the health of the planet. I really don't so that's got to factor into the dietary discussion. It's hard not to bump into somebody on the Keto Diet and I. I think that's sort of double bookkeeping while I can do whatever diet I want for short term weight loss. Oh yeah I really care about climate change well then no. You've got to connect those dots and this also goes for other diets that tend to have a lot of red meat. Like the Paleo Diet. Paleo diets are based on a simple premise. If the caveman didn't eat eat it. You shouldn't either so long to refined sugar dairy legumes and grains and hello to meat fish poultry fruits and veggies. The idea is that by eliminating modern era foods like highly processed carbs dairy. You can avoid or control quote diseases of civilisation like type. Two diabetes is and heart disease and likely lose weight to Can I tell you my biggest question with this caveman diet. Why would I wanna live like a caveman? Nothing about my life is Caveman Caveman Ish. Yeah I'll pass simple premise but hard to practice because everything that caveman aid is extinct. We we saw to that so you know there there. There are no stone-age foods available. The best you can do is approximated. Two major problems here. I A lot of people wave the Palo banners and excuse to eat Bacon pepperoni Indian hamburgers. There was no Palaeolithic Pepperoni. So if you want to eat variety joints either indicated mandate exact right so variety of wild plants and game. If you want to eat not only the wild animals you catch. I think that's probably a healthy diet. Frankly but the big problem with this is you need a lot of space to raise those animals if you're gonNA eat all those animals and I did the calculation for the current population of the Earth at about seven point eight billion and it would require fifteen times the surface area of the planet. What's yeah a seriously so basically just can't be done? No dorothy were not in the stone age anymore. So who might diet such as Paleo and Kito appeal to well people who like the challenge challenge of this strict set of rules and who like a high protein diet that usually includes a lot of meat. Are Sweet Potatoes and Yams the Same or Different?

"This week. We're talking about sweet potatoes versus yams okay. What's the difference. Is there a difference. That's a good question. I get get this question all the time. When people <hes> typically usually like around thanksgiving <hes> when this particular vegetable is more prominent in the store so well for starters <hes> sweet potatoes are basically you know what we call a sweet potato in <music> our country in what we've sort of grown up with his we typically see two things in the star we see what's labeled a sweet potato and we see something labeled a yam and and what we see is a sweet potato. That's kind of more <hes> longer and more narrower in diameter shaped in a like a lighter colored skin skin almost like a tan colored skin and if you cut it open and you cook it cut it open it. The flesh inside is almost kind of like a a pale yellowish color and they kind of have a nice. We'd firm consistency like you can you can slice them and make them into like hash browns and you know or you can make sweet potato french fries out of them. The other thing that we see in the store with that we call a yam is usually a larger <hes> looking of type type of vegetable. It's got more of like a reddish. Maybe almost purplish skin on it. They tend to be fat in the center and kind of taper narrower to the edge edges and when you slice that open you you see a really dark orange colored and when you cook it it's more mushy inside like it doesn't necessarily have a firmness firmness to it like a <hes> what we call the lighter colored skinnier shaped sweet potato <hes> now however what we know oh is that both of these are actually technically botanically sweet potatoes. They're both a sweet potato. They're both reporte both are sweet potatoes and they they come from a what we call the morning glory family of plants so most people might be familiar with the morning glory flower. Okay <hes> so that family of plants. The sweet potatoes are part of that family. So where do we get the name yam vice my equa. Why do we call one a._m. And sweet potato would be a natural thing to get into right now yeah so actually the real yam a real. The actual yelm is also a tuber vegetable however they come from a completely different family and are actually part of the lilly family of plants. It's and they originated in africa and asia and there are about six hundred different varieties of this other type of vegetable called a yelm now it originated in africa and so what they kind of look like as they they are kind of tubular looking kind of like that yellowish sweet potato but the skins are really rough almost kind of bark lichen away so you would never really want to eat that skin and when you cut him open they we are sort of yellowish inside so <hes> they <hes> so they have like a whitish yellowish in some some defending on the variety and the soil oil. They're grown in they could even be purple <hes> but they <hes> they're kind of more dry and starchy tasting inside and they're they're really really not commonly found in the u._s. because they grow in africa and they're more of a food for the indigenous people that live in that part of the world so <hes> so here's what happened when the slaves were brought to the u._s. during the slavery time they when they got here of course they didn't have any yams that they were accustomed to eating in africa but when they saw the sweet potato here they it looked like a yam i am from what they knew and by the way the african word for it is niamey which is n y a._m. I and then in english i mean it's called gam so the slaves were really the ones that named that <hes> one particular type of sweet potato a yam okay <hes> but a real real yam is you don't even don't even eat here yeah exactly so. I just thought it was interesting so really it's just sort of a a renaming wing <hes> in it happened because to win when that happened when the when the slave started calling that particular type of a sweet potato yam the you know the american growers wanted a way to distinguish between the two types of sweet potatoes so they called one the yam and won the sweet potato and that's kind of the history of how we got that name i went in fact a real yam an actual yam. We would probably never find here unless maybe you went to a ethnic store of some kind to get that <hes> interesting now in terms of <hes> nutritional content both yams and sweet 'tatoes or what what we know of of yams and sweet potatoes. They're actually really high in beta carotene which is the <hes> antioxidant that gives it the orange color her or the yellow color and they actually are really even though they're sweet. They're <hes> starches and their fibers actually help lower blood sugar levels <hes> yeah so it's it's. They're actually known as good foods for diabetics diabetics. Yeah probably even better than regular white potato 8-o. Although i think white white potatoes have a value to they definitely have antioxidants and good nutrition in them but if someone has blood sugar the issues they might need to lower their starch intake so the sweet potato is probably a better choice for them.
