"It's just bad news. If you think artificial sweeteners are good, well, I think again, they actually may be worse for your brain and metabolic health, aspartame is a neurotoxin. We know this. I have so many patients who have cognitive issues, and memory issues, headaches, migraines. We get them off the diet sodas and drinks. They feel how much better. They actually make you want to drink more sugar and more food. In fact, they'll eat more food if you have more artificial sweeteners, because you're hungrier because you've created this pavlov response on your body that makes you think and then what happens if there's no food so your body's going wait a minute, there was no sugar. I don't know what's going on. And it just creates this whole process of slowing your metabolism and increasing weight gain. All right, so what are the 6 things that we need to know about sugar? One, it's addictive. Despite the industry's best efforts, it's not a secret anymore that sugar is bad for you. In fact, just kind of recap on a study that was done in the 60s by the two leading harbor nutritious. At the time they were not a lot of nutritious and academia. But these were Harvard nutritionists who were the leading thinkers at the time and nutrition science. And they wrote an article in the New England Journal of Medicine. This is who our peer review, and in that article, they basically said, fat was the problem, not sugar. And it turns out that a forensic analysis essentially by researchers today found that those authors were paid off the equivalent of about $50,000 to write the article as saying it was fat and sugar, and they were paid off by the sugar lobby. Let me see the sugar association. So there's been a lot of suppression of the sugar conversation, even in our dietary guidelines. The food and lobby is so big. So I've written a lot about this in food tricks. You can read about that there, but it is very addictive. And it's why people struggle to give up their cookies cakes and ice cream. And it also alters your metabolism and bring chemistry. They didn't study, for example, on these men who are overweight. And they gave them this milkshakes, one milkshake, or their most tasted the same, and they gave the same group of men the one kind of milkshake on one day and another milkshake another day. And the one milkshake was same protein, same fat, same carbohydrate, same fiber. Everything was the same, except except the carbohydrate in one was fast acting, and then it was slow acting. So they think the snow I think carbohydrate, nothing really happened. Their blood sugars in spike, their cholesterol didn't change or insulin didn't spike. The cortisol didn't spike, they bring chemistry looked fine. When they gave them the quickly absorbing sugar, and by the way, the people they know, they were doing something different. It tasted the same. So they thought they were having the same milkshake. Their insulin went up. Their cortisol went up. Their adrenaline went up. It's like a stress. Obviously, blood sugar, and their cholesterol went up. All these things happen. And when they looked at the brain imaging and a functional MRI scan, they found that the area called the nucleus accumbens lit up like a Christmas tree, which is the addiction center that gets lit up by heroin or cocaine. So we know the biology of this is real. Next thing you should know about sugar is that stopping will quickly fix things, it's so over the place. It's so easy to access. And it's effect on our brain is so powerful that it feels like you never going to be able to quit. And I did a workshop once with this sort of on sugar detox and it was a long time ago. Anyway, this woman, they're just like, look, I'm addicted to sugar. I know it. I can't stop. There's nothing you can do. I know this isn't going to work. And but I'll do it anyway. I'm like, okay, just see what happens. So like day two, she comes up to me and she says, I can't believe it. I just can't believe it. I don't have any cravings for sugar. I feel totally different. It's amazing. And all I did was feed her in a way to bounce her blood sugar by having protein and fat in the morning. Getting rid of all the sugars and refined carbohydrates, lots of veggies, lots of fiber. It's not that hard. Your body wants to be healthy. And I wrote a book called the blood sugar solution ten day detox diet, which is about sugar addiction, and it takes you through in ten days how to reset your whole nervous system. And not only, you know, not crave sugar anymore, but you'll average person lost about 7 or 8 pounds in a week. They are ten days. Their blood sugar dropped ten 20 points. Their blood pressure dropped ten 20 points. They reduced all symptoms from all diseases by about 70%. So if you have migraines and digestive issues, sleep problems, joint pain, whatever it was, everything drops 70% by getting your system healthy. So that's important to remember. It's quick. You don't have to wait forever to see the results. So we had a woman in our Cleveland clinic program called functioning for life within three days of joining the program. This woman was on insulin for ten years. It was severely overweight. In three days, she was off her insulin by changing her diet. In three months, she reversed her diabetes completely and her heart failure and everything else. Pretty impressive. Next thing you should know about sugar is there's many ways to say sugar to quote Shakespeare, you know, a roses but a rose by any other name. The other thing you should know is that we have many names for sugar. I think the Inuit from the Arctic say they have a hundred words for snow. And we have so many ways of saying sugar and often we miss it on the label because it's kind of hidden. So you know what food companies will do, it literally put four or 5 different kinds of sugar in some product because you're forced to list the ingredients in order of the amount on the label. So basically, if they put 5 different kinds of sugar, they can list like a healthier ingredient first, like flowers something and not actually put sugar as the main ingredient. So it's really, really sneaky what they do. The other thing you should be aware is there's a lot of words that you might see like agave, cane sugar, corn, anything, rice, even brown rice syrup. Any kind of evaporated cane juice, what is that? That's called sugar. Even fruit, you might see fruit concentrate or fruit juice. I mean, that's just basically like sugar, anything with oats in the end, like fructose, dextrose, maltose, tree yellow, sucrose, these are all sugar, anything with malt in it, like malt syrup, foam, maltodextrin, also sugar, anything with ISO like ISO glucose, isomaltose, basically there's a million names for sugar syrup, bright maple syrup, sorghum syrup, corn syrup. Pancake syrup, which is usually prayer fructose molasses. Anything with the word sugar in it, date sugar, coconut sugar, brown sugar, beet sugar, confectioner sugar. It's all sugar. So sugar, sugar, sugar. Now is high fructose corn syrup, a little worse. Yes. But in the end, it's all bad. Next thing you need to know is that artificial sweeteners are also not so great for you. So here's a classic example what happens when you try to outsmart mother nature? Rather than accepting that we really shouldn't be eating a lot of sugar or we shouldn't be having a lot of artificial sweeteners. And rather than accept the fact that we just should try to eat less and not have so much sugar, we kind of want the hack, right? We want the magic loophole to avoid doing what's really good for us. We tried this with fat, right? We thought, oh, you know, butter, bad, and saturated fats. So let's get margarine, margarine, and I grew up on fleischmann's margarine. But it turns out that trans fats are not only not good for you. They're very bad for you. And they've killed hundreds of thousands of people, and they cause heart disease, diabetes, and they're really unsafe. And the government finally after 50 years and they lawsuit. Finally caved and said, oh, gee, it's not safe anymore. It's called that a grass generally recognizes safely remove the grass label. The problem is, it's still in the marketplace because FDA is in cahoots with the food industry and essentially they gave them a lot of loopholes and ways to kind of leave it in there. So I go to the store regularly and I kind of hunt for products. Now, a lot of companies have taken it out, but what the replacement may not be any better, right? So I think we have to be very careful, like pom, pom, shortening, which can be from a palm trees, but they're often.

"Complement how rich the short ribs are. You can serve it with rice or a starch of your choice, and that's it. So talk to me about what informed your choice about going with the recipe and what was your experience with it. Yeah, absolutely. I love short ribs, love short ribs. That was really big. I like the sweetness that dates bring to any sauce. And when I really read through the recipe, it looked like I was really building flavor. The three and a half to four hour braise. That's just tells me that the depth of flavor in a recipe like that will be phenomenal. So that really spark joy, so to speak. And pairing that with like a really fresh salad with snow peas and some Ginger, the lime juice and it really just had a really special freshness to it. I was drawn to it immediately. I was actually really shocked though that there wasn't more pieces of dates. I didn't know that they were totally break down. They do what sugar or honey would do in another raising liquid. And you just get like a more caramely undertone, I find. It's something that I don't know is totally obvious when braising meat. And this is maybe not for all meat dishes, right? I mean, there are some Filipino adobo that might be very sharp with vinegar. You know, there's like many different styles and but in certain kind of cuisines, certain meat braises can have like a decent amount of sweetness to them and whether that's coming from white sugar, brown sugar, obviously the darker you go, the more complexity you get, the more you tease out those kind of caramelized cooked sugar molasses Y complex flavors and dates kind of just have it. Off the shelf. Totally. Yeah, they bring a lot of complexity. Remind me, what cut of short was this? Was this English cut was this flanking cut? It was a chuck short rib. Oh, it's like meat running along the bone or where the bones come across wise. Like more of a Korean. Okay, like sort of like flanking cut short rib, but with the bone in. 'cause did you call for English? Yeah. Yeah. It did say English, but I couldn't find that at the butcher shop I went to. No, I love that the recipe is flexible like that. And the chuck just looked delicious. And it's a little bit at a dinner party. I find it a little bit nicer to be able to cut off the meat off the bottom like that, whereas you give me an English phone in, like that's a hand sticky backyard bar. We're giving you a talk to me about what was the night like you had some friends over and tell me about what you did. So the night before I did prep, which is something we talked about, I believe, Chris and our very first conversation kind of getting some things together. And lo and behold, it was amazing to have a nice little mise en place and ready to go when I went to actually put all the ingredients together, which I did do actually over my lunch the next day. Working from home had his perks out of date like that because I was able to everything in the kitchen. Got all the, you know, I was able to take the meat out and let it sit at room temperature and really take my time with the recipe, which was wonderful and I wanted this to be the least stressful dinner party. I've ever had. And it definitely achieved that. By the time my friends got here around 6 30, I had planned to eat around 7 30 and everything was done. I had the salad all made except the lime juice on top. I had actually taken out the actual ribs from the braising liquid at that point, put them in the oven. They were just so tender. I kind of wanted to keep the integrity of the rib of it. And it was falling off the bone. So I'm like, I want to keep that together at least. I knew it would be delicious to see the right, but just for the aesthetic part of it. But I kept cooking down the sauce to make sure it was really thick and I loved that. And then I we served the ribs with the rice that was suggested on the recipe. So I believe it was a snow peas cut diagonally, little matchsticks of Ginger mint, a lot of mint lime juice. I added some salt, some red chili flakes. And because I had to, I made an apple crumble for dessert. Oh. I'm a baker at heart, so it was like the first dark fall night of the year. And we had this amazing meal that was full of warm flavors and so it really came together as kismet Claire, anything you would change any or any advice for other folks who are looking to, you know, spend a little bit more time with people, their hosting rather than just back in the kitchen. The prep was actually phenomenal and doing sedative forgot it situation would be my number one tip. I bet I read that recipe multiple times in preparation for like just the day of cooking because I didn't want it to have to be like, oh my gosh, a what now? Well, I love that you didn't really like miss a beat in terms of using a different cut of short rib than what was specified in the recipe. That alone, you know, honestly, like there's infinite variations and we try to account for some of them that are in mainstream usage. But that work of making the adaptations you needed. That was great instincts. Yeah. Thank you. Yeah, I appreciate that. All of these things, you know, let alone like when a recipe is crossing a border, even though Canada is literally right there. Y'all call certain things. It could be totally different. Yeah. Yeah. It's a lot of weird stuff going on, you know? The English call eggplant aubergine. Yeah, I was about to say or rock it. It was in their own, I think it was in there. Yesterday, through our sword, scones need gentle handling and should not be over mixed, Romain sees the recipe because I generally over mix everything. If the dough is too crumbly, add a little more milk. If it's too sticky, just dust with flour. It all sounds so simple, doesn't it? Some people just knock out scones like they're just like they're just brushing their teeth. Easy, done, off you go. You flip on a lightly floured chopping board. And pet not press out to about three to 5 centimeters thick. Keep the dough cool as this will help it rise. I thought making it warm would make it rise, but anyway. Refined grains and sugar. Does it say to eat donuts and pizza? Does it say to eat ice cream and cupcakes? No. It says to eat foods that Americans still don't eat very much of. 42 years later. Many people do not eat any of these foods. On the topic of sugar, do the dietary guidelines tell people to eat a bunch of sugar to replace fat as it's often claimed. No. The guidelines tell people to limit sugar, in fact, number 5 of the 7 guidelines is dedicated to this. Here is its summary statement. Avoid excessive sugars use less of all sugars, including white sugar, brown sugar, raw sugar, honey, and syrups. Eat less of foods containing these sugars such as candy soft drinks, ice cream, cakes, and cookies. Select fresh fruits or fruits canned without sugar or light syrup rather than heavy syrup. Read labels for clues on sugar content if the name sucrose glucose maltose dextrose lactose fructose or syrups appear first. Then there's a large amount of sugar. Remember, how often you eat sugar is as important as how much sugar you eat. There you have it. Don't eat so much sugar, stop eating so much sugar to paraphrase. Now, according to the USDA food availability data, Americans today eat more refined grains and sugar than they did in 1970. "Building on her filter ideas. This is a major leap forward for coffee as anyone who enjoys the poor of her cup today knows. These were gatherings for a chat with coffee and cake, and Germans were not the only Europeans drinking better coffee than Americans, couple decades later, an Italian patented something I grew up calling a caf dier, but Americans know as a French press. The resulting coffee is a little more full bodied and oilier than the pour over melita style, but it's definitely still a good cup. And that's not the only groundbreaking and world changing coffee invention that came out of Italy. For Italians and espresso is more than just a quick caffeine hit. It's an integral part of their national identity. The chain you have a relationship with the barista. What coffee you're having, what sugar, brown or white, the cup, hot or cold, it's a whole world. Is Italy's gift to the world of coffee, I think we have to say. Espresso is the technique of brewing coffee under pressure, essentially. The sort of the first espresso machines come into being really around 1905, the first one that's commercial is the la pavoni it's called an espresso machine was meant to make an express drink just what it sounds like. The machines to make espresso are giant water boilers and the steam pushes hot water through coffee with quite a bit of pressure, Monica the coffee scientist. In this process, we get up to 10% dissolved solids in the cup, which makes this concentrated whisky with a good caffeine hit. Those very first espresso machines were room sized, so they didn't catch on super widely. But after the Second World War, an Italian called a key Lake gadget figured out how to shrink them using a piston system for even higher pressures, and the espresso finally caught on. And this entirely transformed coffee culture in Italy, buying an espresso became a bit of quick theater with baristas whipping up a fresh cup expressly for you anytime you wanted to lean on the counter and get your dark intense hit of caffeine. It's a quick ritual you order at the counter and you down it in just a few seconds. It pushes me to go to work. It makes me feel younger. Italians love their espressos, and they did basically from the very start. The technique and technology spread out from Italy around southern Europe and then with immigrants from those countries that spread around the world. But not old technological breakthroughs have been such a boon to coffee. The ark of human progress is more of a roller coaster, and there were some definite downs. The current sort of first iterations of what we now think of as instant coffee really come in the late 30s and they come from a very specific point, which is that Brazil has developed so much coffee. That during The Great Depression, essentially it was left with a lot of coffee that it couldn't shift and it was trying to find any ways of making this either very cheap or finding alternative uses for it. People had looked into the idea of instant before, but this was the real turning point for instant coffee. Brazilian authorities approached the Swiss company Nestlé to ask them if they could make basically a coffee stock cube. Remember by this point, there were already bullion cubes we talked about this in our episode the magic cube, coffee growers wanted to make the same thing, but for coffee, not soup. It took Nestlé a while to figure it out, but eventually they came up with a process that involved making a super concentrated espresso style coffee extract, and then spraying that into a tower of air he did to nearly 500°F, all the water evaporates as it falls and you're left with a dehydrated brown powder. Nowadays, to get that dehydrated brown powder, companies use a freezing technique instead of a heating technique, but the end result is the same, and it caught on really quickly. Nestlé introduced it as nescafe right before World War II, and American soldiers took it with them into Europe, particularly to Britain, as we said, last episode, even though England was the first European country to develop a real coffeehouse culture by the mid 1700s, Britain had mostly ditched coffee in favor of tea. So for hundreds of years Britain had no real coffee culture, and this instant stuff that GIs brought seemed pretty good. And then the thing that sealed the deal for coffee in England in 1955, British commercial TV launched and started airing advertisements. It's always said that in the UK instant coffee's big advantage came with the advent of commercial TV. Because you could go out and easily make yourself a coffee during the commercial break, whereas you had to brew your tea, and this is supposedly also one of the reasons why tea makers came back with fatigue as a sort of competitor against it. I would just like to take a second to be kind of shocked that the story of coffee leads to the invention of the tea bag, amazing. Instant coffee was a fixture in our house in England when I was growing up and honestly in our cultural lives too. One of the most exciting stories in the late 80s and early 90s, really second only to princess di, was the story of the nescafe gold blend couple, Tony and Sharon. Hello. Those would definitely not be what they are now. I would even be doing the work that I'm doing. I don't think, yeah. If I hadn't, you know, focused on trying to heal myself. A lot of this has been talk around changing eating habits. And I think a lot of time with folks here, these things, and hear the word diet, or hear the word detox, they think of something that's probably more like what's a trend diet. Like you know, I'm gonna do this to get ready for the summer or something like that. What's your describing? Seems to be different than what I think most folks associated with sort of short term approach to diet. It's a lifestyle because you can do a diet for two weeks. But if you go back to what you were doing before, you're going to be back in the same place. You were in another two weeks. And this is a lifestyle because holistic health is a lifestyle because it's your date, like I said, your day to today habits, even with detoxing, right? I detox with the seasons. And I see that as a practice within my life. And when you do it every three months, then as soon as you've done detoxing, you still want to stay healthy, you still want to keep in that health space. And by the time the three months comes around, you might have added a little bit more chips. Add a little bit more sweets in that kind of stuff. But then it's time to detox again. And if you're not gonna get enough rest, you're gonna lower your immune system and that in itself can make you susceptible to getting sick. You have any quick tips for us to strengthen our immune systems given the current state of things. Yes. So one let's start with what you're going to take out. You had to take out sugar, like white sugar, Brown, sugar, right? Or reduce it as much as possible. And if you are going to add sweeteners, should be like a 100% maple syrup or some honey. So get rid of sugar. Alcohol, you know, and if you do drink alcohol, it should be, you know, once a week or less, no smoking. Cigarettes and if you smoke an herb, you know, make sure you're using paper or something like that and not doing that all day every day because it's still smoke and smoke is still damaging your lungs, which can make it susceptible to viruses and things like that. And as mucus to your body as well, depleted of vitamin C stuff like that. Get rid of junk food, fast food. Stuff like that. And then add in add in water and in herbal tea, add in lemon water when you wake up in the morning, adding meditation. Make sure you're getting in your green vegetables every day, add in green juices, take some stress of wheat bread, make sure you're getting your wrist, reducing your stress, stress is very harmful to the body. And that can reduce your immune system. And so managing that with, as we said earlier, meditation, nature, music, laughter, that kind of stuff. For folks listening who are trying to either make it change to their nutrition or get those around them to make changes. What are some of the ways that folks can take baby steps to make those changes or to help others make those changes? First, we have to start with self because, you know, if you're not being disciplined, anybody trying to hear what you gotta say. They're like, yeah, yeah, yeah, but you over here doing this, the same thing I'm doing, you know? So first you have to start with self. And I'm a vegan, but I don't feel like people have to be vegans to be healthy. So I would say I would start with taking out candy, soda, fast food, any junk food, you know, and not like you can't have vegan ice cream sometimes or vegan cookies sometimes, but that should not be an everyday thing. So just start with, if you just do that, you will notice a large change in your diet. And then over time you're going to besides just taking things out, add things in, so making sure you're getting in your green vegetables three times a day. You're eating fresh fruit and fresh vegetables every day. You're drinking water, you're drinking half your body weight and else, ounces of water every day. So adding those kind of things back in. So yeah, just doing basic things like that. First, we'll have a tremendous change on your diet and your life. Sometimes doing a detox detoxing is very helpful. My book the 5 season detox is a guide of how to do a healthy detox through the seasons. And I use food as healing. We use herbs as well. And then there's some self love practices in the book. And it detox is a great way to start because once you detox and cleanse and you start adding things back in, your body is going to tell you what it wants or not. So once you start saying, okay, I've detoxed. I only ate fruits and veggies are only raw or only did juice. And now I'm adding back in a burger. You're gonna be so like your body's gonna be so constipated. Your stomach's gonna be hurting, you know, all of these things are gonna start to happen and you'll start being able to being able to listen to your body, you know, once you do a detox, once you do a cleanse. So yeah, kind of starting there. And then, you know, other people, I realized that you can not change anyone else, right? You can only change yourself, and you can only be an example. You have to let go of trying to change people, right? Because people are going to be who they are and then that's going to ultimately start stressing you out.

But now you take a company say like gates, who 15 years ago. You thought Gates Water pump Gates makes Belson hoses so we can buy a gates water pump in the gates box after market. We say aftermarket that might come from Napa might come from One of our other wholesale distributors that might come from a parts authority. But that same water pump that comes in the gates boxes also made the same water pump that comes on. What Chevy M. Yeah, that Chevy truck. Warren. Paolo. Yeah, something like that. So So, you know, I always say my analogy is car manufacturers, don't they? They assemble parts and when they're done, you have a hand or when you're done, you have a BMW and I make them my analogy.
