"At you know little joints little caesars are worked at like a marks fun time pizza palace which i was actually video games tech their jobs here and there but really when i. I opened a macaroni grill at southpark mall of all places in strong. Instructional and i worked saute in wood-fired pizza. And i was younger than i was like. It'd be nineteen twenty and man. It was just really high energy a ton of ingredients and managing a fire and pies at the same time at age it was. Just you know who's corporate. But they had a program dialed and eddo program dialed in bad recipes. That were like they were thrown out some slamming pies. So yeah i have some memories about just like that imprint of the pace of it in the fluency with the moves with how to shape dough hotta ten fire in the right spots how to alternate hotspots and stay away from where the stone sucked all the energy. It was just such a cool process. I would figure nineteen years old. Managing a fire and pies would be completely overwhelming. But i guess if you have the culinary bug us you would see more of a challenge is something that you're like. Oh my god. I'm completely overwhelmed. And you're burning pies and now the chefs yelling at you and all that you're probably way mostly fear held up. So there's plenty till my Pete combs moment. That i always hearken back to and it's nothing like great but when i think about pizza or if somebody says when did you fall in love with pizza living upstate. New york for a long time sartori springs new york before we moved here to cleveland where i ended up saying it was a like a little corner store on the way back to my house from coming from downtown saratoga called a bop its pizza was the name of the place and they had like the big like czeslaw pizza drawers and i had the hood and it was you know think about it was probably a little unsavory and not overly clean and sterile ish but a classic pizza joint and that's where i go back to every single time bop its pizza in new york insert certificates brings in new york and look there's plenty of different styles that are going on right now growing up to me it was a of pan style maybe a little thinner but nothing crazy and now we have neopolitan pies that are very popular at this point whether you're in restaurants or even at home there's deep dish debatable if it's pizza or not detroit style is coming on hard there's grilled pizza that's becoming more and more popular with a does being specifically made for the grill. Do you have a favorite style of pizza. Yeah i mean well. We've been doing a lot of grilled pizza for a long time out in the field. Obviously and my partner. Steve baker and i at the spice field kitchen. We do a grilled pizza class As part of our fundraising and with kids out in the classrooms. It's a superfund summertime activity and it's a totally different doh man way way way. Low hired lower hydration almost like a tavern style chicago style cracker crust sort of audio. We're actually rolling it out and grilling it cooling it then topping it and throw it back to get that real chris crust. You know but yeah what we're doing at booms totally different totally different. So let's talk about that. How does the whole concept or genesis of booms pizza come to be. Are you having a conversation with somebody about your love of pizza. And it's kismet with whoever you're talking to or is it something a little bit more strategic away more strategic it's the realities of labor and Available ingredient is a lot of supply chain issues and food right now a lot of labor issues in food right now and we look for. What's a vessel that we could stay true to. Our local routes are sustainable ag routes. What's a vessel that we could depend on and it's pizza crust. I mean people love it. It's predictable you know. Once you get your cross dialed in in your dough program pretty much. Put anything on there as long as you're not topping at too heavy and you're good to go so yeah it. It makes sense from a business perspective. And it's where a lot of the market is going so you know kind of sell. What sells man. It's almost ten percent of all restaurant. Purchases in the country are pizza. So you want to sell some food said on a pizza crust. So is it just you or do you have some other partners or investors or somebody else involved. Yeah it's Myself and jonathan bennett. And you know the culinary team down spice headquarters hold down the catering holding down the keep the change kitchen collective or kitchen and then Really leaning into booms were working on the lease for store one right now and the dough is just taking a long time to dial in man. I mean you want to sell forty of something. You could probably make a good pizza tonight. You want to sell forty thousand of them. You'd better have your shit together. Is it hard to do anything alone anymore. I remember growing up. It was always. This is mr so-and-so's restaurant. Or this is mr mrs so-and-so's restaurant and now what i'm talking to folks rarely am. I finding somebody that is not only the owner. But they're the exact and they're kinda run day to day operations there's a class of investors or there's a bunch of partners if you will. Is it still something that you can do. These days or is it virtually impossible. I mean i think that's where you you walk the line between a lifestyle business and a scalable company you know You wanna work six and a half days a week and run a bistro in touch every plate you can do that You wanna have multiple locations as something you have. Formulas and systems and processes am and ways to measure that consistency and that quality. He's still got to sleep at night. Stand behind it you know so teaming up with like minded people that offset my neurosis in crazy ideas with some planning and execution analytics man. That's that's the tag team right. There you talked about getting this dough program together. What's that look like for you. How are you coming up with something to start with. And how many iterations are you going for or is it more of a if we're trying to execute pi. It's gotta be this though and if we're gonna try and execute this style of pie that we have to go back to the drawing board for something completely different. Yes so. I mean we started between. We're shooting for neopolitan. So you're woodfired pies. Those does are in the seventy to seventy two percent. Hydration right in new york style is going to be in the lower sixty sixty one. Sixty four were walking this sixty seven percent hydration line with about three percent oil right now. and then we to develop flavor so we start talking about pre ferments. We've been doing. But between ten percent and fifteen percent pre ferment which is like a sour biegel right And then you start talking about. How long does this dobol last. How long is it. Viable wins it. Perfect wins it okay. When's aghast out one's a blown right and that's a lifespan. because it's a ferment. Right see of peak fermentation and then it's like. Oh i'm not really that into it anymore right. So this is like the science of four ingredients greg. I mean kind of like meat. Salt black pepper and then smoke right. It's like it's infinite. Almost are you actively just stacking balls just to see them and track their greatness to demise just to see how that works and are you. I believe that they were protecting their interests from their white constituents. I say i think some of the other mall tenants were threatening to pull out. I believe it was fear of other black businesses wanting to move in seen the success of damien inhumane at southpark mall and the white power structure. This is near new. Let's go ahead and end this before they become successful and others wanna move in ended. Now somebody say dammit ended now terminate the lease terminated. Because you know people are comparing us to the situations that have happened in northlake mall over in. Concord mills malls shootings. And they thinking that. Because you've got black businesses in south park mall it is a or they're gonna bring that over here because we got a black barber shop and southpark mall. We've never done that before somebody in a room and chiming you you. You let them have a shop here for a while. i'm going to work. I'm getting too many phone calls. In some of our anchor stores are thinking about leaving. Just got to end this this lease but they're they're they're good guys they they've done business all over the city of charlotte. Just just tell them to get out by april the first and then you seem like a dam only airport for months now a good month a good strong thirty some days plus so this was done in my opinion to block other black businesses from setting up shop as southpark mall fear of a black planet dislike public resented. Simon property's owners of southpark mall have reached out to damian and jemaine to try to resolve the situation. They've been asked to leave the mall. By april the i just set up. Their shop called knights of razor and the southpark mall in january. And now they're being asked to leave the head. A short term lease agreement hoping for a year long agreement because they have relationships with them at the other malls just in charlotte. They've been doing great business. These are two of the greatest businessman that we have in queen city and people want know. What is the reason why they're being asked to leave. So if we are standing if we are the sons in business of charlotte that they can point to say. Hey they're a beacon there. Somebody positive somebody other small businesses if we if we're going to keep calling a small businesses right so there are small business that you can look up to if they were conscious the sensitivity of small businesses especially some that set examples for other small businesses. Maybe should've just you know and pushed four. Push forward to the end of the lease. Just let them finish the integration. Because the facts that it could have won a psyche of other small businesses. Wouldn't be good right because at the end of the day no breach is going to be fine. You know we pay bills all over. It's all over the city. You're pay a whole bunch. "The razor. They've only been there for like two months. And now the company simon properties wants them to leave their terminating their lease they have to get out by april. The first so you'll only been there for how long now dame main been here too much at all costs tell me what what is going on. West transpired in the last week you know. We've just been informed by way of a letter that you know south park will be terminating our our temporary lease so just educate people on what a temporary leases sometimes mall properties will offer you a temporary lease hopefully with the intent to build a permanent relationship breath so answers that they give you an irish situation gave us a one year temporary lease and we went there. This is our first time during a temporary lease but we you know you go in there with the understanding that they could terminate that lease at any time within that within that contract but because of our relationship with simon property and our discussions with them that you know we were interested in a permanent least. We thought they they were least honor. The one year temporary sneeze. What excuse did they give you for not wanting to continue doing business with you. They said they found a permanent tenant. Both well we were requesting axing them about you know permit permanent least. They said that there was an offering a permanent lease at the time. So we took that. Okay maybe i just wanna kinda get fillers for which. I want to do or who. Y'all wanna work with so and meantime with our you know with our temporary. At least we think in we will show are worth and how we could bring value to the situation. So that's how we look at it. That was our perspective now. Okay now they don't have a permanent these and mine or a permanent ten in their minds. So and we're just gonna build it. They still with them with the hopes that we could possibly get a With them as you have a great relationship with simon properties. Because you're you're barbershops. Around several their malls right we have two locations in concord mills and then we have one in georgia sugarloaf mills. So we've been working with simon property for over ten years while. So what is the head management. Doing they know about this. This going on in charlotte. I've reached out. I haven't gotten a a you know a phone call yet. I got a response by way of email and they said that you know that they will give me a call. We just haven't we haven't spoken yet. So i don't know where they were there. Stand on all of this yet. So damn you know South park in the city of charlotte has always been to place. That's outta town. Where black people. We didn't feel so comfortable going to south part right but they put the cheesecake factory over there. we went. We went out to south park. Took that over right and you know with so many black people going to these malls in. Do you think that they got afraid that we would kind of change the culture that's the magic question mandate. They haven't really been clear on that. You know we understand and we thought they understood that. It doesn't really get any wider than south in charlotte. I it doesn't get any black. I didn't know reese in charlotte row. We thought that the the to coexist As part more. So i. I don't know we. We scratched our head on it. From a business standpoint. We understand business. We understand contracts but we also understand good business and we just know from experience that this is not good so how did the other tenants and the southpark mall treat you guys. Were they stick the nose up at you like what. Are you guys doing here or are you going to bring an element over to the mall or whatever they treat you any different not but we got we got welcomed very well with the tenets and and even the crying man i think. We exceeded anything that they could have expected. A what we were gonna present. We've we've done day well for the forty something days that we've been there.
