"Thank you. And welcome back to cinema vino for joining. Hey, I've got Travis Budd on the ones and twos, Sean Jordan on the threes and fours. And my name is Todd Lawford and I play exclusively the trash symbol. So enjoy that trash symbol that Taylor owns. Not with us this week. He was engaged in the extreme sport of where they jump out of the plane, they throw the parachute out and then the person jumps after it. But it turns out he was a seat cushion and not a parachute. So it was a hard landing in a giant landfill. But sometimes the seat cushions also inflate like a life preserver. They do become a flotation device, which is handy. He's so bulgy. He's like a moose. But some garbage broke his fall and he's doing good. No, I saw some elk the other week. Oh, no. Smokey mountains. Great pattern. Great pattern. But again, it's the Australian art form of pata. Banta. We got banta. So our summer chaos continues with black sheep. This was Taylor's pick. This is the second movie Taylor's picked out that he's left us out to dry on. Is that right? I think this is convenient that when watching black sheep that this is probably the one to bail out on. To be fair, I missed out on Clue. So we're talking about black sheep. But first, we'll talk about what we're drinking here. We are drinking the Olivares Rose, which is a rose of Garnacha from Spain. A little bit of background about this and how they make rose. So in rose... Hold on. Let me test my wine knowledge. They peel the grapes. What they do actually is they press the grapes. They press the skin off the grapes pretty early in the process of the making the bottling is derived from the skin. So it drains the color out of it. That's correct, Todd. That's exactly what I have on my three by five note card. That's handy. That beautiful cursive. Flashcards. I made them myself. They say cursive is a lot of fun. Yeah. Wow. That's amazing. Eight font. And that's my favorite size. Comic Sans. So yeah, that removes a lot of the color. Misconceptions about... I know we've talked about this before, but it never hurts if you're coming in pretty recent podcast. Talk about it. People have misconceptions that rose is sweet. By and large, roses are dry. Tarte. Or off dry, yes. People often... They're prejudicial because of white Zinfandel, white Merlot, which tend to be sweet, tend to be old lady bingo wines. So low alcohol. Old lady bingo wines would be a great band. It would be. Yeah. There's at least one mandolin in that band somewhere. Instead of firing your mom's painting. And so basically, did you say set a fire in your mom's panties? Did you not watch the movie? I did, but I deleted a lot of it from my brain. Gary Busey, man. It's the only reason Taylor picked this. That's very true. Got them teeth. Taylor has met Gary Busey. Yeah. So there's that. Sorry. Are they not pals? Are they not like... Oh, yeah. Been pals? Yeah. Gary Busey, who appears in the movie, is at least a C- celebrity. He's on the C-list somewhere. A-list in our hearts. So anyway, yeah. Berroses generally are gonna be on the drier, more refreshing sides. Sometimes they're made from single varietals like Pinot noir, Tempranillo, Syrah. A lot of times they're blended of multiple grapes like Cote du Rhone style, though you'll see multiple different grapes put together. But generally, they're gonna be drier, they'll have some fruit flavors, but they're not gonna be particularly sweet, if that makes sense. They'll have fruit, but not sweetness. A lot of floral, you'll see grassy notes, hay notes, sometimes even some earthiness. This particular one is 100% Garnacha. This hails from the Jumila region of southeastern Spain, which is one of the biggest wine regions in Spain. You'll commonly see Garnacha, Montastrell and Tempranillo made in that area. Now keep me honest, isn't Spain also, isn't Cava a rosé from Spain? Cava is gonna be a style of bubble, yeah. But that can be white or rosé. And that's gonna be a different region, that's actually gonna be closer to Barcelona, Northeast, and yeah, it's gonna be different grapes. They rattle them off. Spanish geography. Don't they get the wind off the sea, off the ocean, comes in, cools them down the grapes? You're gonna see that more in the Portuguese area. Okay, I didn't know what I was talking about, I was just gonna see if you'd go for it. Spain doesn't get wet, it's blocked by Portugal. You know what? Big old mountains, catches all the wind. I don't appreciate your tone. I don't appreciate your sarcasm, mister. You will see some of the wines over there by the Mediterranean, you'll see wines growing over there in that area that'll get a little bit more climate. You know what it is? It's the rain. It's the rain. It's the water. The rain in Spain. That falls mainly off the plain. Is that Olympia beer? It's tagline, it's the water. Mythical artesian well, whatever that is. Honestly, that's the big difference for beer is water. And love. Yeah. And love. Sixth ingredient. It's what makes a Subaru a Subaru. So anyway, so having been to Spain, it's like I can tell you that Spain is very common when you're there. They have a lot of wines, very cheap. You can go to a store and get a $3 or $4 bottle. I thought you were gonna say when you're there, your family is waiting for the Olive Garden. Spain is a lot like the Olive Garden on a big national scale. By the way, I've been to Spain. That's too familiar. Let it be known that as Todd says, I've been to Spain, he's drinking his Grenache with his pinky up the whole time. Very fancy. And he's better than you. Think of the Volturi meme from Twilight, where Michael Sheen's like looking down at you. That's Todd right now. I would never say that to your face. No, I feel it though. I never knew that screenshot was from Twilight, but that kind of makes sense. Yeah. It fits. Grenache, you say? So yeah, I mean, you'll see a lot of like good budget wines. Spain and Portugal are great places to get good, affordable wines that are not bad. They're all about the everyday, easy drinking wines. The wine that goes the most in our house is like a Vinoverde from Portugal. It's like $10. It's delicious. And yeah, I mean, we loved that when we were there of like you could just go and buy a bottle and just sit somewhere and just drink it and just enjoy the day. You know, it's just a nice world over there, you know. I've started using a milk frother on my wine to aerate my boxed wine. That's genius. Yeah. Well, I saw it on Instagram. This gal did it with her like tequila and it just makes it taste like fresher somehow. It doesn't enhance the flavor necessarily. It's just like... Was she just drinking it straight or was she... Yeah, just straight. It's like if you have like water sitting by your bed and then you wake up in the morning, you taste it and you're like, that's kind of flat. They look flat. Yeah. You can reactivate it. And it does the exact same thing with my shitty boxed wine. Sometime on this podcast, I want us to do a Pepsi challenge with a bunch of nightstand water, see which is fresh and see which has been... How do you create nightstand water? Leave it overnight. Yeah. But then once you... I am intrigued by this. I'm into it. Some of it's going to be aerated and some of it's going to be not. We're going to sip it. And if anything, we're going to drink it till it's gone. That's definitely Pepsi. I had a thousand percent like to do a boxed wine challenge and we have one that's frothed and one that's not. Well, sometimes you can tell. Eventually we're all going to be frothed. Pepsi challenge, but one is a boxed wine, one is boxed wine that's frothed, one is a nice bottled wine, one is like a medium grid. And as a palate cleanser, nightstand water. Ooh. Yeah. The staler, the better. This one's dusty. It's got a hair in it. It's like, is that a fly? This is a Southpaw hair. That's not good. Down South. Southpaw just means left. Yeah. Well, this one came. Left of what? South of the border. That's what I meant.

"Me at this point to wanna turn anything over to anybody else that has to do with my brand now. I knew when we talked initially about this concept that you were definitely the guy that was it was either going to be you or nobody else. You have the voice. You have the equipment you have the know how you had hosted a podcast of your own for a while. So you had the the elements to be successful. But then i had to get out of my own way and shut up and not interject everything that i think i would do or i would want to do and let you build your brand within the umbrella of the barbecue central show brandon and you have done such a great job from listening to that very first episode one open to where we are at episode one hundred ninety nine before this the transformation. It's not been like magical or you sucked so bad at number one and you're so great at one ninety nine you a really good to start with but the nuance and just the polish. And the way that you're speaking in the intros and ouch roses so good then. Of course the editing for the meat of the segments are incredible and you are certainly a master so i am overwhelmingly appreciative that you continue to do it and not only are you not detracting from the brand you are increasing the value which to me is the most important part and i have you to thank for it and i am so appreciative that you do such a great job. Thank you very much. Thank you for the kind words and before we move on. I just want to note. I come to your brand to support your brand my tagline in my personal side business and barbecue. Uh-huh is it's about your brand. It's not about mind so as long as always keep that in focus is about the barbecue central show the barbecue. Central show is an important part of barbecue history. I've mentioned recently in an episode that barbecue historians will use your show as reference material because you have captured every single major event competition series. Winners losers manufacturers. It's the only place that exists. So i couldn't be prouder to be part of the brand and thank you again for the kind words. Absolutely i do. I would like to ask you a question about your cooking prowess and over the years. I've realized that a lot of folks don't necessarily see you as a accomplish backyard. Cook they see you as a guy well versed in the industry with a great show. But i'd like to shed some light on the fact that you sir are an accomplished backyard or a chef who shall on name once call you a pit master and it's still sticks in my head. Maybe we shouldn't bring that up. Let's kind of pick up where we left off on episode one hundred. There will be a link in the show notes today to take you back to that episode as a listener. If you haven't caught up with that yet so we can skip over some of the nitty gritty. Tell us about your cooks. And your cookers once you kinda got into having genesis and having a smokey mountain where did your stable move forward from that point and how did you accelerate into your barbecue style. The cookers came on board almost magically. I think there was a key point as often refer to on the show. Is that golden era of barbecue when you saw it on. Tv and everybody was everybody was getting into it. Whether they were deciding at that point they wanted to also jump into the competition trail or they just wanted to be better backyard. Folks that also enlisted the people that were in the business of barbecue to make different cookers better cookers than what was currently out there so we were all benefiting from it and i was benefiting from it because i was hosting a show that was covering it so i had a number of companies. That would that. I still can't name out loud that just message me. And said hey. We don't want anything to do with promotion to the show. We don't want to be mentioned none of this but we want to send you grills and all we want you to do is cook on them. All we want you to do is every week or every two weeks signed us back a list of things that you continue to like and things that you would like to change and how the cooker is weathering overtime and review the cover and all this other stuff. That's all i had to do so i didn't have to. It wasn't an in-kind thing it was really a true. Rnd type of relationship. Or i could have one of those. I models of cookers and then tell the folks that made it how it was aging and how cooking and how as a potential consumer things that i might wanna see that would bring value but also keep within the vision that they had for the cooker. So you know. I grew a couple of cookers that way. I'm some sponsors of the show. That green mountain grills You know sent me pella cookers. That was really my biggest growth. Portion was somebody who had. I don't know if i would say vehemently disliked pella cookers back in the beginning of the show. But i was certainly not a champion of them and then getting my hands on one being reluctant to wanna like it but then having it when my heart over that was the biggest growth portion and then offset cookers. I got a free close from a guy that lived twenty twenty five minutes south of me who was also a cooker accumulator as i would call them so i just waited and waited for him to just continue to get more cookers than than i was like. Okay well now. He's got two or three other cookers on top of this close. I know he's not using it. So i'm just gonna make the who i make the ask and he's like hey you come down with the trail you can take it away today. So all of a sudden. I'm in of forty two inch close offset pit. Which if you aren't familiar with klaus. He's one of the most prolific and premier offset pit manufacturers out there in texas and i learned how to use an offset and that was quite a learning curve because i didn't really know a lot of folks buy main knowledge. Base of folks was at that point on virtual weber bullet and they were running a lot of bullet style cookers. If it wasn't the weather smokey mountain. It was a bullet style cooker. So there was a lot of minion method talk and using a guru for temperature control and this was a different monster so that took a lot of trial and error and learning how to draft and learning how to build the fire and then more importantly how to keep a fire which i ended up becoming very proficient ad and i really liked it. It's still my favorite way took any kind of barbecue. If i have the time and then graduated into a competitor for a ceramic cooker was called the bubba keg. It was a steel or aluminum fixture. It looked like a keg of beer but it had all of the other. Trappings of what a ceramic cooker had except the ceramics. It wasn't ceramic but it was filled with commercial grade insulation who was dual wall. That had a great sir. had a great commercial grade gasket around the lid or the top and then we're the top and the cooking body came to meet each other. That was the biggest bitch. You'd hear from big green egg users was that felt gasket was something that would burn if it got too hot. And then you're stuck replacing. That and i was kind of a pain in the ass. Will they eliminated that by using a similar to what you would find around your oven at your home. Just one of those commercial gaskets and that worked really well I got a couple other weber weber. Smokey or a couple of the rubber kettle. Grills i think at one point i was up towards a dozen or fifteen different cookers and then i realized at one point it was just too many and then i decided to start really keeping tabs on which ones i were using and then i would start to gift some of the other ones away and you know that's what it so now. I'm an arsenal of a couple of pellet cookers a have You know the offset. And i have a gas grill and the kettle grill and at this point in my life. That's you know what i have. That's what meets my needs. And i can still have multiples to choose from. I can employ all of them at the same time with different cooking methods all happening at the same time in them if i want to and it allows me the variety that i would like to so i mean i want to have as much grills as the next guy but at some point having.

"That we are now here at two hundred and realize that within the space. There are very few other podcasts. That are at two hundred episodes. I think i can name two or three by show which. I don't even know if it's counseling. Just one is directly related. There's the best moments of the barbecues central show and ten minutes or less now two hundred. I think man is barbecue is plus two hundred. And then kevin's barbecue. Joints is probably well into two hundred but outside of that. I don't think anybody approaches us. So between you and me. John we have two of the longest running live fire. Podcast out there today and that stellar and you know it doesn't seem like it's been a long time it seems like i just started Seems like i've just figuring this out as i go and and i do appreciate the longevity of the show because it's helped me get better. How many find a better process. Hopefully deliver a better product to your listeners. The thing that i like best is hearing the growth. I was just on an interview two nights ago. I don't know when it's going to come out with the guys at baseball and barbecue and they were asking me about the trust issues that i will casually bring up during the show and i said look this is a real thing because for as long as my show has been available it is only been me. I'm the guy that hosts it. I'm the guy the I'm the guy that runs the production in the engineering. And all this stuff that you can't see in front of me because it's behind the camera. It's all only been me so there are inherent trust issues for me at this point to wanna turn anything over to anybody else that has to do with my brand now. It was a steel or aluminum.

"You remember how many people were in the crowd. I think about one hundred or so about about one hundred. That's the thing that i've been trying to tell everyone. I'm like everyone in the business. Everyone has wrestled in duffy. Dome yeah because yeah hundred percent deficit a lot nicer than places that that you wrestling. But it really reminds me. Like i said when i worked for for smokey mountain wrestling in knoxville tennessee. You're going to morristown in hyden kentucky in batesville kentucky and barbara ville and they're just small little towns kind of in these West virginia whatever. The mountains are called there. I guess the smoky mountains and there's just a lot of families that are have promotions A lot of guys just trying to make a living and squeaking out like i love the point where as talks about getting paid fifty bucks for the match even though he's working on top and it's like yeah that's about right fifty it's fifty bucks was the kind of minimum fee in one thousand nine hundred ninety and it still kind of the minimum fee in twenty twenty. Inflation has not helped wrestling at all so from your from your perspective. We we are being accurate within your absolutely as far okay. No and that's why that's why liked it you know. And it's it's because now there's there's kind of a few wrestling shows between globe glow was a little bit like kind of glitzy and show. And i love the show but it was kind of like i didn't really relate to that. This one is something that i've been there. And like i said i know guys like as jack in the guys in the back that are the bravado like all we're going to be commissioners man we're gonna make it and you're thinking this guy this guy is he looked in the bureau like what is even thinking you know like the guy the guy with the mask that he's a mexican guy from frigging georgia. That's by buddy robbie ramos and he plays diego cottonmouth. There you go deo cotton mouth like to on a snake the snake. And it's like really so yeah. It's very accurate with that. But then also the family dynamics. Obviously gripe in calgary with the hart family and then. There's the armstrong's in pensacola and there. Was you know this. This family dynamic really existed all across the country. We're back in eighties and nineties. Still kind of does this day. So you really are kind of nailing it from my perspective. Least you know there's a lot of parallels between comic fans and wrestling fans. We'll talk about your experience with that as well but before we do a quick reminder from our friends at nitsa it can be a little frustrating. Especially if you're in a hurry or running late to find yourself at a railway crossing waiting for a train even if the signals are going in the trains not even there yet. You may feel tempted to try and sneak across the tracks. Well just remember this. Don't ever to the naked eye. Trains often appear to be further away moving slower than they are and they can't stop quickly. Even if the engineer hits the emergency brakes right away it can take over a mile for a train to stop with that over one mile for training. Stop by that time. It's too late in the result is a potentially deadly crash point is you can't know how quickly the train will arrive. The train can't stop quickly even if it sees you. It could end in disaster if the signals are on. The train is on its way and you just need to remember one thing. Stop because trains can't and also don't forget the chris jericho rocket ranger at c. triple-whammy Leaves october twenty first from miami to the grand bahama islands We had to postpone this a couple times. We are up and running. Kurt angle's going to be there. Rock and roll express hacksaw. Jim duggan brit baker orange cast the lance archer striper causey crow bought quarantine jazz. Just got announced today will osprey is going to be there So many many huge huge names. Of course it's just a blast. If you guys have been before you know much fun it is. There are still some cabins. Left at christopher cruise dot com. So come join.

"I'm not a huge fan of baby back ribs but that's just my preference I don't haven't priced them out recently to but earlier in the summer ribs were way out of control on price. Where weren't they weren't even on my mind to actually cook for a weekend. I mean they were unbelievably price. So hopefully they've come back down especially with labor day approaching. And i wanted to do rips but i have a spare rib a saint louis. Cut guy to seventy five. Like to go three hours or until i get the color of ribs that i want. And then i'll go into wrapping period and then Let them come back out in the smoke. Maybe for thirty five or forty minutes depending on how they feel and then away we go to to serve so but again that's going to change. If i do the same ribs in my lang- offset that thing moves an incredible amount of air through it so the ribs will actually get done quicker because of the volume of air that's getting pushed through that cooker than it would on. Appellate cook does not nearly moving as much air through it as my languages same thing would go for both style. Spoke like whoever smokey mountain so the times might be varying to what i'm saying here but there's some key things that you want to take into account when you're doing rips a whatever temperature you're gonna work at keep it consistent there because that's going to build a baseline of knowledge for you for the next cook. You should always be taking notes every time you cook so you can say this temperature. This was the temperature outside this with after the cooker. This is how long it took. The wind was blowing out of the east. And this is all basic stuff that you wanna do. You can help yourself become a better cook. The next time you can always refer back and go well. This is what i like. The last time is what i didn't like..

"Which Just refused to gas grill and that was pretty much experience growing up Was all gas grill. Snow in early cooked on choco if anyone had smuggled it was pretty much exclusively to smudge fish you got on the boat in the in smart fishy about nothing. nothing so much allowance loyal So just a lot of grove road sausages grown chicken that sort of thing so when was the first time that you are exposed to what we would call traditional southern style barbecue or low and slow barbecue. would have been Cook eating at risk for restaurants in australia. Which would getting a little bit more popular. When i moved over here. So you get a lot of So ticks style barbecue brisket. That sort of thing. When did you start thinking about smoked barbecue source. What's the impetus for even going down that road. I inherited an old Kato from My father-in-law and i had didn't really have any idea what to do. Was that just been using Guest grow up until then So i started searching around on the internet. And china leading some basic techniques on how to sit up to zion system different ways of cooking on on on a chocolate grow and at the same time i i was designed wick wyking for client nine clans. Small businesses Helping us out. They would side subdued by marketing and things like that so i was looking for canada. Projects have on the side. Where i could live with web design and also something that i was interested in getting into this world of barbecue. Found everything i leading so fascinating. I sit up the side. I think in about ten minutes thinking about nine and tried to find something that was available and sit out the site and those fish few months. It was just Writing about what was learning at the time which was Sort of piecing things to give from forums and facebook groups and there was a lot less and smash Even back in twenty six day knows a lot more primitive studied. Had obviously your previous gifts meet hid has sites around for a while so his a lot of and yeah just a lot of research in forums and things together in the entire out what i was learning on the website and just hosting it and bicycling crooked in terms of engagement arenas to start with. Would you say that. That initial version of smoke. Bbq sores was more of a personal blog of experience before it grew into how you see it. Today yeah differently. I never had any idea attending it into that. Show business sore In bringing other people on bullet which since it was really just done may learning Learning barbecue but also learning a bit about how to apply to insider riding content in what kind of content to people like in had to structure recipes articles. And things like that so teaching different scales while. Oh sorry something. I enjoy doing so. It was easy to come home from where can Instead of watching tv Far up the side and crank out in the were recipe joe flemish. Join me here on the show from smoked barbecue source that smoked. Bbq source dot com. If you wanna check it out to our chatting it up here so You had mentioned you taken or you had visited amazing. Ribs dot com. Maybe some of the other barbecue and grilling websites that is. You're making your initial posts. You're not really seeing a lot of traction on of engagement from readers or anything like this. Where do you figure you need to go from here. Then was a point where you're like. Hey nobody really gives a shit. I'm gonna just gonna tank or did you decide that you need to figure out some other way to engage in order to get traff. Yeah well what happened. Was i think had worked away at for maybe six months and during that time i discovered something which is called the amazon I think it's the amazon associates program which basically mailrooms if you have a website you can and you're talking about products that sold on amazon. You can put a link to amazon product in that someone happens to click the link and by. I think it's within twenty four hours than you did A little percentage of whatever they boat and by that point. I think had i hadn't actually been working on the website for a few months. I got busy with something. And come up. And i loved into my amazon account and i saw that may two dollars two dollars terry. So let's say even more exciting And i kinda gory congressman but what someone bought but must been a special role some tall so something. Something small like that but Just kind of got me interested in excited batted again and I got i got into it especially the review side of things so i did a did a review of the smokey mountain which is what i would have the mountain which is what i'd been leaning on And that review starting to gain traction with Mitt more could save the traffic number on that going up and started generating a few silos a month. So i think the sick sick amount off to bet. The website made about twenty dollars in the by the end of the year. It was kind of making a thousand dollars a month and at that point i sort of realized this is something rehill hand i should actually put more effort into it. And let's kind of wing way. Start when i saw to take it. Seriously in start with them grinded into into what it is today. Little traction starts to happen as you said. You're starting to see some revenue growth. You're to obviously correlate the posted are doing well and and how that's trending how that's helping you gains money. So are you now. Trying to focus your efforts on content that is going to be creating interest in order to have the click throughs in order to sell like once is let me ask a better question is the mindset in the beginning at least to produce content and also if you click through and i get a percentage. Hey great but it's not really something i'm looking for or are you trying to specifically generate content that has got to interest somebody to click the link so you can maximize revenue. I think initially As when i started seeing some money come in. I kinda got quite excited and started going down that that route bought. I realize that that was the only thing i was doing. It wouldn't be in the long-term interests of the which side because everything's just sort of focused on products and click By now It's gonna pull people off. They probably not going to trust what you sigh and in the long. You're gonna hurt yourself. So i made any to have a good mix of content so lots of informational stuff where does not products mentioned and Jay mentioned products. Just keeping it natural like for example On this recipe. His rabbi used. There's a link to it if you wanna check it out He is also linked to a free recipe that you could make his. That's.

And one of the organizers of the contest happens to be a long time listener to this show and he hit me up after he heard the mentioned for malcolm. I s if you wouldn't mind coming on to talk about. The event perhaps show off of those trophies so we race over the hotline and the welcome in longtime central light. First time or to the show. Jason baumgartner pages day greg how are you i'm fine. I'm saying baumgartner correctly yes you are. Yes very good for me. It is good. Yeah so. I'm bummed. Because i wanted to win that book but i was too paranoid. Click away from the The link you sent me so guess what the good news is. I have another one to give away next week. Make sure those hot fingers are ready so you can take place in the competition. And i'm sure we'll get a winner here just a second so before we get into the event here jason. Can you give me a little background about yourself personally professionally. And of course how you ended up getting into the whole barbecue saying Certainly so professionally. I am an occupational therapist with the department of veterans affairs Been with him for going on nine years now. Serving veterans in in our neck of the woods here Personally i got involved with live fire because of when i was in my internship For occupational therapy. I had one of our clients We were just discussing barbecue. I was in north carolina at the time and she mentioned that they had done some competitions in handed me a copy of the bullshit that was sort of my first intro into it Grew up in a home. That didn't really get into lie. Fire much didn't do a whole lot of creek. Cooking just was basically used to some burnt hot dogs burgers on the grill in the fourth of july. And so then. Add i did. I did what you shouldn't do. I went out and got a sixty dollar brinkman cooker from lowe's and ruined several pieces of meat and stopped cooking for about five years and said i'm done. I'm no good at this. I'm worthless and decided to give it a try again. When i became a certified judge in in twenty thirteen went and got awebber. Smokey mountain found the bullet and had some successful cooking there. And it's been a love affair with every sense so Been started as an nba. Judge transitioned over to kcbs as well and kcbs master judge Been been doing that pretty heavy ever since competitor at all or just judging. I have never competed. I have never competed i. It's something i've i've thought about doing. I've gotta cousin that competes a little bit and wanted to date my toes in the water and be honest i just. I don't have the confidence to do. So you're kcbs judged is kcbs getting an unfair amount of flak year after year. About judging sox table a draft. Nobody talks about angel tables continuing education blah blah blah. I mean you're on the other side of what i would normally talk to. What do you think. I am on the other side of it As far as the chip thing. I actually haven't been to a contest yet where they were marquis talking about them drawing chips. I haven't been there yet. I feel like you know being on the judge aside. I feel like everything is as fair as it possibly can be especially held. They do the system at the contest. At least that. I've been to where they tried to in the judges scores. That may necessarily score high or some that score lower than you got some in the middle so it kind of tries to eliminate that table of death angel table. I feel like that works out pretty well so in a way i feel like they get a fair shake but again i. I'm not a competitor so i'm sure that'd be singing. The song goes on the other side. Jason gardener join us here on the show smoke on the mountain v. a. like victor alpha smoke on the mountain dot. Com is the website if you wanna check this event while we're talking so let's talk about smoke on the mountain here for a moment jason. Give us a little history of the event itself. Okay so Pretty much smoke on the mountain. As a competition started in two thousand four it was started by a local restaurant owner and they had competed on the circuit. a little bit and said hey. Hey likes needs to have a A contest so they. They brought the idea to to gay lags and got the approval to shut down the streets. It's right there on main street and gay lax. We shut down the side streets and They they brought the life and it was nba only contest for several years. And then in a believe it was two thousand and sixteen. They made it a dual contest at went Went dual contests sixteen seventeen and eighteen and then in nineteen. There was a little snafu with with reserving our date to be a dual contest and so we sort of lost our our date with kcbs Another snagged it with that was within one hundred hundred fifty mile radius and so we went back to the nba and only The patrons and city was they were sort of wanting kcbs back. And so you know we changed. The date moved it a week and got. Kcbs back and then we're also bringing in this year sea so not only. Do we have in bien kcbs pro and backyard. "Each other is. Is there a tendency in twenty twenty one now where a team would pick the sea event over the barbecue event. I could see if it is a single. Sea yes just because you're going to say look if double you know. And you're you're looking at two or fees out. I mean it's still. Yes is going to be cheaper. But i'm going to have to lean toward the case of just because you know you're really you're spending time with your just more drawn out deal. You're cooking four. Categories is more involved which i missed that aspect of it. I mean we enjoy our. Sea's but i enjoyed managing a fire. Sitting there sticks outlaw for six hours getting everything you know really trying to nail all four categories. I'm elaine toward the case of bs but academically see the sea been. You know it's it's very appealing to people especially in started out just because you can. You can get in there for a lot cheaper and a lot easier and you're not having to buy briskets ups and it's a one day deal. So that's that's definitely a park for a lot of people mark. What's the current cooker lineup. That you have and out of them. Do you have a particular favorite right now. On the back porch we have a guerrilla girl pellet grill We have just got new slow in kettle. Which i'm excited of out of got a couple of peak as couple. Pk three sixties gateway course. We got the outlaw patio I love. I've really become passionate about using a stick. Barnard just because that still are still a craft and you know you're still managing a fire and it does take a little bit more patience. But and of course. We got a couple of copyrights. And i'm sure you've seen some mobile malcolm's the bef o and fancy and i mean we just enjoy cooking. I'm not picking. I love them all. Can you really beat the flavor that stick burner puts on food. I've long had the not argument. But conversation with folks. That if i have the time and i'm not going to be running around with the kids somewhere over the course of the weekend. I'll file a fire up the lang and burn sticks all day because it's really almost uncomparable to the traeger that a have or the gm g or the pit barrel or the other number cookers. I don't have a fleet like you have. But almost and i find that pound for pound. They all come up short on flavor because of whatever that lang or whatever that real fire is doing a similar thought on that i agree There's something about just burning fresh wood. Is you know you're not. It's it's something something different about it. The biggest thing. I noticed i mean the flavors there but on the stick barters to me the texture. So much better. It's a it sounds crazy. But always referred to it. As gentle cook the conviction the airflow the way those pits are burning. The moisture out sticks. And you know you run a different size. Splits that to me is the biggest selling point. I'll stick barnard's you really can dial that takes a lot better than i can on any other and that may be just me but to me. It's all in the texture when people ask you because i'm sure you get this question a lot especially with the rapid growth of the youtube channel. What cooker should i buy. How do you answer that. How do you take somebody through buying process. it's hard not to sell them on. Appellate grew especially if somebody's just getting started out. You don't want to say go get you. Four thousand dollar stick barner. They get tired of fighting with it. Or you know trying to learn it and they'll never cook again so my thang is get you bella grill and you know learn the recipes and kinda see how everything goes and how like meat you know meats cook and how the protein kooks and learned that aspect of it and then step up to awebber kettle. Learn a little bit of fire management weber w. Sem a gateway. You know a simple drum. Learn the fire management after you learned the recipes and then that way you know if it's either you're doing it wrong or if his recipes just not right Don't jump in head first and get a pit that you're going to have to manage a fire and you never done that before. Because you're gonna hate it you know it's going. It's going to be fun so definitely get something that you can enjoy it. First and the grow from there mark williams joining us here on the show giving us some advice on how you buy a cooker. Not to be contrarian here mark but i tell people by that offset and talk it up and learn how to build the fire and learn how to take it up from zero to two fifty or three hundred where you want to run a or better yet. Learn where the sweet spot is on that coker because especially offsets. They seem to settle into the temperature. That what they want to run best and most efficient at giving you that clean burn smoke so you know how to run it from there and then And maybe it's just because of when. I came up like malcolm and i kinda got into this whole barbecue thing around the same timeframe so you know when i was getting into it web smokey mountain was the first one and then i got close pit and you learn that whole monster. I always like. I had a really good understanding. Let me rephrase that. I always felt like i could go to anybody's house at that point after learning the weber and the clothes that i could go to anybody's house regardless of what they had and be able to cook on it immediately because i had the background and the experience of fire management which not getting when you use pella cooker so You're not you're right about that. But pella cookers are certainly the the way to go these days in a very popular. Do you think out of all these courses. We've just mentioned that ceramic cookers might be getting left in the wind at this point. They're marketing isn't up to snuff. Certainly the product is good. But i don't really hear a lot of people talking too much about. I think so i mean i love shrimp cookery. It has his place. Am i gonna smoke. A ten or twelve are bundle. No but if. I want to go out there and cook some flat iron steaks. I mean it's right up it's alley we We help judge low contest your every year and the guy that kinda runs the contest. That owns the property do that. He is a. Here's a ceramic cooker dealer. So his buddies they all cook on them. And i mean you can almost pick them out like when i turned the like can almost tell you which one come off that shaima cooker. And it's it's crazy but i'm with. You may not think ceramic cookers. Or kinda you don't hear as much out of not that they're bad pit at all. I mean i still. I still have one of my porch. And i love cooking on it. But you know. If i'm gonna go pick one out of the arsenal it's not it's not gonna be my first pick by no means mark williams joining us here on the show from swine life barbecue right so i have some questions from folks writing in or things that i'd seen on your youtube channel as well over the next couple of minutes. A fan writes in greg. Ask mark about this. Bacon wrapped donut hole. He kept me in the running for grandfather of the year they were total greatness regards don wad low so we Celebrate don for writing in thank you don. What about these macon rab donut holes mark. They are the best sweet and savory bite that i've ever had This was a deal. I'm sure somebody's done it before. I'm not saying i'm the i by no means but me and my wife or sitting there talking and we set up a demo day up here at malcolm shop. It was my saturday to do a demo. And i was like. We're going to do a bacon saturday and i love a good donut hole. So we through biking around it but it on the grill. let it go and then drizzled it with caramel. Had a little barbecue of on top of it and it is. It is excellent. I mean that that donut hole was like a sponge when it comes to that bacon rendering and you get the perfect texture of and then almost.

"People don't understand is when you're talking about the actual athletes unlike basketball where the top players from chicago los angeles new york. The top football players. Don't come from new york new york has they don't even. I don't never even heard of too. Many football players. Coming out of high school from new york is in rural areas. You know what i'm saying. So these kids are coming from the smokey mountains of tennessee west. Virginia they're not from miami but they're from tallahassee. Somewhere they're not from birmingham there from selma's shit. You know what i'm saying. They're not from. The major pleases. Were high school. Sports makes the the city paper. Nothing the local exactly the taxes they have in the state of texas. They have football stadiums bigger than college. Stadiums get so that's the really small towns is different. You know what. I'm saying in idaho high school. Football is big in washington not seattle. But like maybe olympia or something like that so you got these kids that are coming from these rural areas and a lot of white black whatever but they come in from these poor rural realized areas and this is their only way out is football right to watch those going back to Boxing vita said and by the way to go to the bathroom so sorry. i missed. That point took the white football player. Take the The first american Like major boxer. I think was was tom. Monterey was it was in the first year. Yes yet tom. Tom mall. No but you know it's crazy read. It was talking about how the polish and all these people were fighting but the way black people got into boxing Tom mona was a slave. And they say they actually got free because The his master to bring him to other plantations to fight the biggest. Lebron that plantation. So it's like even the history of black boxing beck american boxing slavery and one day. He was master so much so much money in bets all in one particular match. I mean he's always been his Master money but When he went him so much money in bets that he gave him gave him his freedom and they went over to england which is where like you know organiz. Boxing started that he like plied his trade trade there. But yeah so even if the first black boxer like came to the christner crispus addicts of boxing. Yeah okay can you spend christmas attics boxing. Yeah for people. Who like tom price fighting. You know what. I'm saying like there was always fighting boxing. And all that brawling. But tom ohno was the first one to make it into like prize. Fighting like this is something to be proud of. You know what i'm saying. It didn't really exist. like that. employs certain types of people were involved in boxing the dregs of society. Wasn't you know there was no some guy from wealthy family training to be a fighter. You know what i'm saying. He wanted to bet on it but he didn't wanna fight. Tom molineaux made that little bit more prestigious to do that. And you know the queensberry rules like you said. The organiz idea of boxing is from the uk. Over in england so that existed or at least it was formulating at that time..

"Hitch no injuries no reasons to worry but at some point the king gets a little cocky and of the day with adrenaline still pumping through his body. He insists on jousting against this guy. Count gabriel of montgomery. It's a bad idea. Everyone thinks so even montgomery is desperately trying to convince the king to quit while he's ahead but it doesn't work in montgomery and henry saddle up for one. Last round begin to position. And they charge montgomery's lance goes through the kings helmet a splinter of wood pierces his i and enters the kings brain. He's carried out of the arena bleeding and week. They tried to get help but there is nothing that can be done and henry dies ten days later. Now catherine is obviously distraught by her husband's unexpected death. But she's like was it actually unexpected. Because she can't get nostradamus his prediction out of her mind breaking it down line by line. It all adds up. The young lion will overcome the older one. Henry was eleven years older than count. Montgomery so check on the field of combat in a single battle check. He will pierce his is through a golden cage. I honestly don't know of. Henry's helmet was gold but still check to wounds made one. Then he dies a cruel debt one splinter through the eye and brain and ten days of suffering. Sounds pretty cruel to me. It's eerie to the point. Where katherine decides she wants nostra to stick around the royal court. Maybe she thinks that by here and more of his predictions she can somehow prevent other tragedies from happening so she puts him on payroll as sort of a physician and advisor. Nostradamus new relationship with the queen gives him even more exposure. His prophecies continue to circulate around france from high society to the outer fringes. The even start to appear in other countries with as his prophecies gain more traction throughout europe. Nostradamus health takes a turn for the worse. He develops got and becomes frail with arthritis by fifteen sixty six. He can barely leave his bed. One day nostra donnas calls upon his lawyer to draw his final will and testament shortly after that he summons his personal assistant and apparently tells him quote. You will not find me alive at sunrise. And that's it. His assistant is sort of like so. This is goodbye then like literally. Can't tell if nostradamus is making some morbid joke. Or if he's actually using his last breath to give one final prediction turns out. It's the ladder the next morning. Nostradamus is found dead on the floor of his bedroom as grim as it is nostradamus. His life ended with him doing what he was famous for predicting the future. This wasn't the first of his prophecies to come true and it wouldn't be the last coming up nostra dumbest predicts wars revolutions and terrorist attacks. High supernatural fans. Donald fame starts to decline. He maintains some lingering popularity in france but for the most part the world moves on and over the centuries people forget about nostradamus the man and he becomes sort of this mythic figure. He's remembered as an all seeing prophet. Who might have even had magical powers which is understandable because as time passes more of his predictions seemed to be springing to life in absolutely devastating. Ways take this quad train from the enslaved populace songs chance and demands while princes and lords are held captive in prisons. These will in the future by headless idiots be received as divine prayers in seventeen eighty nine more than two hundred years after nostradamus wrote this poem. France enters a period of enormous upheaval. Tired of being treated like indentured servants. French workers wanted out with the wasteful monarchy and in with democracy so they take to the streets demanding change as they do. They chant and sing like the french national anthem gets written. In this period its lyrics. Call the working class of france to rise up and water their fields with the blood of nobility joie wasi the revolutionaries also kidnapped nobles and officials holding them captive and of course they trade with a little device called the guillotine which is made people headless about one hundred fifty years later. Another prediction seems to come true from the depths of the west of europe. A young child will be born. Poor people he who by his tongue will seduce a great troop his fame will increase towards the realm of the east sound eerily familiar in the early nineteen hundreds. There is an austrian born german who rose to power in western europe. His father died young so he grew up pretty poor and received little formal education in the nineteen twenties. This young leader starts giving these impassioned racist speeches which are unfortunately effective seductive even so seductive that people start to wonder whether there's a supernatural quality to the words rolling off his tongue because they appear to hypnotize people. Obviously talking about hitler. And he amasses a great deal of nazi troops many of which he sent to the east famously invading poland and later attacking the soviet union after world. War two breaks out nostradamus. Books really start flying off the shelves. A bookstore in paris sells three thousand copies in a single month. Everyone's looking for clues to what might happen next and one paw train has them terrified beasts ferocious with hunger will cross the rivers the greater part of the battlefield will be against histor- into a cage of iron. Will the great one be drawn when the child of germany observes nothing at this point. The german army is heading east in tanks. Which are basically cages of to get there. They need to cross mountains. Valleys and rivers including the danube river which flows from southern germany into eastern europe. And guess what the old name of. The danube river is history and a child of germany who observes nothing sounds like a pretty good description of a ruthless ignorant dictator. That's not the last prophecy of the war as you probably know at the end of world war two. The united states drops atomic bombs onto japanese cities. Here are shema and knock sake. Nearly four hundred years earlier nostra donald wrote near the gates and with into cities there will be scourges the like of which was never seen famine within plague. People put out by steel crying to the great immortal god for relief and the eerie coincidences. Just keep rolling two decades later people start claiming that a train about a great man falling predicted john. And bobby kennedy's assassination in nineteen sixty three and sixty eight almost thirty years after that. People are wondering whether nostradamus predicted. Princess diana's debt in a quad train. That can be translated to the last son of the man with the prophets name will bring diana to her day of rest. The wonder far in frenzied grief delivering a great people from subjugation. Diana was killed in a car crash on a sunday. The day of rest alongside a man named dodie fayette dodi's father is named muhammad. Which is the name of arguably the most famous prophet of all time. Four years later after the september eleventh. Terrorist attacks nostradamus. His book starts flying off the shelves again. One barnes and noble brooklyn has twenty customers asking for the prophecies in a single day. Why are people freaking out all because of this poem at forty five degrees. The sky will burn. Fire approaches the great new city immediately. A huge scattered flame leaps up when they want to have verification from the normans new york. City's latino is forty degrees but new city is pretty darn close to new york city. So yeah there does seem to be a lot of evidence that nostradamus was this miraculous soothsayer. I don't even have time to get into the rest of his predictions. Like the great fire of london. And the rise of napoleon louis pasteur and charlotte gall before you buy his books to see what tomorrow might have in store. It might be good to ask if no one makes the connection until after the fact can it really be called the prophecy coming up all take a closer. Look at nostradamus. Potential savings will vary discounts vary and are not available in all states and situations now back to the story septemer. Eleven is said to be one of nostra thomas's most dire predictions. And yes. Obviously it was a scary tragic event where people needed answers for what was happening looking back. At the supposed prophecy there are some very apparent holes. The quad train itself is undeniably vague. On he says is that there will be a fire in the great new city since nostradamus was writing this more than four hundred years ago any city in the us could be called a new city and fires happen every day and the other lines of the quattro don't have anything to do with nine. Eleven like they want to have verification from the normans. I have no idea what the medieval norman have to do with this conspiracy theorists got around the problem by just removing the line entirely the versions of the poem that went around after nine eleven were totally different from the original. There were added lines like in the city of york there will be a great collapse and to metal. Birds will crash into too tall statues ensure a little bit of fakery doesn't mean the actual poems are fraud too but this speaks to a larger problem. The fact is nostradamus intentionally kept his quad trains. Beg he wanted to keep it general so it would appeal to everyone in wall that ambiguity since for obviously still talking about his prophecies today it also means that his predictions are meant to make. Coincidences seem like fate looking at all the times where it seems like nostradamus predicted the future. There's a common factor there almost always times of widespread public uncertainty which fits with a trend when life is unstable doomsday. Predictions tend to get more popular. It's the same reason why. Conspiracy theories tend to pop up after major tragedies. It's a way to make sense out of the senseless. I mean think about it. Isn't it hard to accept that terrible. Things just happen at random for no reason. Doesn't it feel better to believe that. There's some grand plan. Four centuries in the making that all of the suffering and destruction around you is at least leading to something and then if you dig deep enough you can figure out when and where the next tragedy will happen and how to avoid it no matter how far fetched. It's seems though even if we know in our minds that nostradamus prophecies aren't true it's really hard not to buy into them his own kind of like ink blot tests. Once you see a picture in the chaos you can't force your mind to stop seeing it. And even if nostradamus his most hop your predictions are just confirmation bias. That doesn't mean we can close the books on him entirely. In fact the best evidence for him as a seer of sorts doesn't have anything to do with his written prophecies. It's just an average story from when he was alive back. When nostradamus was a doctor in france he was invited to a dinner party. At lord's house the host new of his.

Show from january the third two thousand and two thousand twelve greg's going gonna come clean central lights by hand something to profess to you. I feel like a dirty rat a dirty man who now must come clean to his barbecue. Brethren no relation to the website and here is what i have to say. Folks have taken another step. And i am not ashamed to say that this lover as changed my very way of life what it comes to the world of barbecue and grilling i am in love. Free food sore across the mountain streams of valleys below the peaks of fields and mountains. Free at last four. Why have taken a new lava and her name is grill. At the risk of sounding way too hypocritical you could point back at months and months. Dare i say years of argumentative speech on my part dissertations speeches and otherwise extemporaneous talk about what is barbecue and what isn't barbecue. This temperature that temperature this kind of cooker that kind of cooker one in deep dark secret that i had thought i shed never take as a cooker but i saw wind time. And time again people around me love this kind of a cooker with a pellet cocker grilling there's a company out there. That is new to the market new to the pellet cooker market. I thought i knew. About all pellet cookers that existed out there until just a few short months ago and man i'm you can see 'em gripping right now and i've had conversations private private conversation. No names please. Private conversations with other people that have this cook and i said hey i want to not like this cooker but i'll be god damned i love. Is it too easy. Can you love a cooker too much because it is within three cooks. You realize that your life as a barbecue cook potentially has changed even if it's just in the backyard alone now. I could certainly see taking this kind of cougar to competitions. It doesn't have huge. Let's call it competition capacity when you would compare it to some of the other models and if he or bigger traeger Those are the first two that come to mind. Obviously it is. I guess comparible to a certain degree when you're looking at know the way smoky mountains. Bigger than weber. Smokey mountain. I think The main cooking chamber. I could probably get three pound butts. Maybe do doom them right. I could probably get nine flips. Pardon me. I probably get four on there for me. that's plenty. I cook two full racks of untrimmed. Spare ribs they were good five pounds apiece and i was able to to get them right on there. I didn't have to cut anything in half. And i set the temperature right. It goes like smoke one. Eighty two hundred twenty five to fifty so on so for a high temperature on this thing will actually get and maintain at five hundred and fifty degrees which to me is grilling temperature. It's not like some of the other public hookers that say they're going to get somewhere but they they flounder in the four twenty five to four hundred fifty degree range biggest sticking point for the potential success of this cooker. Obviously if you're going to the web page is shipped to you. It is fifteen hundred dollars. I don't have a lot to compare it to as far as you know when we're buying cookers and all this other stuff. I understand that. There's going to be less expensive cookers. And i don't have a trigger cooker. Green mountain grill. I don't have a fast eddie cooker. I don't have a fast eddie grill. And i don't have a mac and i don't have a louisiana grill above.

Producer Shima Oliaee on Making Dolly Partons America

"Hello and welcome to inside podcasting the show in which creators discussed their craft I'm your host Sky Pillsbury today? I speak with Shima Oli. Who together with Radio Lab Founder Jad Abu Murad produced the award winning show Dolly Parton America. And when I say award-winning, it's kind of personal for me. You see Dolly Parton. America beat out the show. You're listening to right now for the title of Discover Pods Best New podcast of two thousand nineteen. I guess I should also mention that there show just won a peabody award, and sadly inside podcasting wasn't in the running for that one. Regardless the fact that podcast I produced was in the running with a show about Dolly. Parton will always put a smile on my face when I was nine I idolized. Does I spent hours staring at her glossy album covers imagining what it would be like to be glamorous singer. And while that dream come true, it was still an incredible thrill for me to talk to Shema about this show. In case you haven't listened to the series yet. I want to play you a clip. This is from an episode called dixie disappearance in which Jad and she might take a look at some of the contradictions behind Dolly's iconic, persona. The episode centers around a wildly popular tourist event called Don. DIXIE STAMPEDE! It's a Rodeo style dinner theater, in which the civil war is acted out as quote, friendly competition. The word slavery isn't mentioned at any point during the show. In this club Shema and One through the experience of attending the event. Okay so basically! Warn you walk into the, arena. It's huge I wouldn't say it's a football field I would say it's like an Olympic size pool like with arena seats all around. It's like going to the Rodeo. Basically. It's like going to the Rodeo. It's like a ton of der- in the center of this massive oval. How many seats wasn't again? It was one thousand. Dolly Parton. And the whole conceit of this situation. Besides eating a tremendous amount of food, I mean a full chicken and pork line and some soup that has a lot of cream and a biscuit. It was a lot of food decides that. Blue quickly. find out your competition a friendly competition between neighbors. Five folks. Are. For. The whole arena is split in half on one side. You've got the north wind on the other side. And, the announcer who rides in on this horse on his steed. They just. He encourages each side to jeer at the other. Side fireworks. He asked you to kind of jeer at them. And then he goes to the South side and he tells us outside. Northern. Third. Foul smelling. Slobber all gas. Good here, way out of a wet paper bag there. Before we get started. You may hear a few names that you don't recognize. There's Aisha Harris who wrote a critical profile of the stampede after which Dolly removed the word Dixie from the events name. By the way we have put a link to that story in our show notes for this episode. There is also Dolly's nephew. Brian seaver as a kid Brian was talented break dancer, who sometimes performed onstage with Dolly he gives Shima and Jad a tour of Dolly's child home. In Tennessee's smokey mountains, Sarah's marsh is list. Who wrote a book about Dolly? Parton and University of Tennessee, Professor Lynn Sakho taught a class called Dolly Parton America, which is where the series got its name. Okay, let's jump into the interview. We kick things off with Shima revealing how she and Jad prepared for an introductory conversation with Dolly Parton. He comes up to me. This is this is actually kind of fun. He comes up to me. He has a book he like goes into the cabinet behind. My desk gets out a piece of yellow paper painted around up a tape. Sit around the outside of the book and he's like this top secret, but I needed to read this and then. I, need you to prepare me for a conversation with the person now as you know, I've already been researching and doing other things for his talk and other and other ideas that we're kind of cooking up for other series, and so he tells me it's Dolly, and you know so I read. This book is covered in yellow fluorescent paper. Which I think was unnecessary I don't. Don't think anyone cares so I read it I. Write all the questions, and are you writing questions like? Are you knowing okay? We're GONNA do this. Do you have any premise for the show yet? We're like what kinds of questions are you writing down? Just questions pop into your head as you're reading it or this was a very yeah. This is a very moment so this. This is just the introductory conversation. So I also think we just needed to have an introductory conversation you know before you even touch certain things and we were both green, which is the beauty of kind of a jazz reporting is? He's okay with like not knowing anything when he begins which I think. adds to kind of the journey. You go on when you start telling. Telling the story, so the listener is going on the same ride you on which is very, I think emotionally fulfilling so we didn't really know when we started we. We knew enough basics and I brought to him everything I found really interesting. The passages I had compelled questions. We go way went over them edited and he went to interview Dolly and he comes back. I listened to the tape. And you hear this in the third episode of the series where she's like even GonNa. Get a question in because ninety minutes goes by. After his first question, and she just does the Dalai magic
