What are you doing? But you're impacting a neighbourhood is what you're dealing. Yeah. And I felt sad to say goodbye to it. I really did. Because I'm miss it to you know, it is hard in our neighborhood to watch Smith street sort of just a little bit dying divine, and we talked about it. But when you care about a neighborhood, you have to support its local businesses, and you have to put your money where your value systems are. New York is so special and. Enjoy our conversation you remember where you had your very first Cup of Mata. Oh, yeah. I remember very well. I was in my home and Portland. And and I just remember I had received a gift so like a ritual set from a friend in Japan, and it just couldn't have come at a better time. I was working in the for a huge CPG food company. We looked at your Lincoln. Okay. Yeah. We fully stocked. Yeah. Here's good. And it was a little I opening. I mean, you know, you work for these big companies, and you see how decisions get made. And it's not about ingredients. It's about the bottom line. You know, and I started I was consuming so much packaged food a heavily heavily processed food. And I just started noticing my body. Sort of deteriorating. So I did you grow up that way. I did I grew up eating like terribly, but I was really active. My mom worked for Nike. My dad was my tennis coach. So I was it wasn't until in my twenties. When I kind of slowed down being active and living this like in college, I was still working out. And when I got a fulltime job, I kind of stopped and still eating growing up healthy things as well. But definitely package foods as well. But I would say when I started working for this this big company, I kind of quit the healthy any healthy eating and just was only eating chips and granola bars, and you name it. And I think in my twenties, I kind of started all the sudden, you know, our bodies go through changes, I started becoming more dairy intolerant. I started having all these digestive issues. I found out sort of. Going to a family dinner later that year with my sisters that they were also actually having similar problems. So all around the same time. We were developing these sort of intolerances that we never had in our throughout our childhood. Did you go to a doctor? I did I went to several doctors because they had a ton of hair loss that I couldn't figure out, and you know, it is a vanity thing when you have hair loss, but it's not necessarily it really is even more devastated when a guy. Yeah. It was it was really so young. Yeah. It was in my early twenty s and so I saw these doctors, and they ran all these tests, and I had some like iron deficiencies. I definitely think I was going through a period of just a lot of stress too. And I think my diet was contributing to that because I wasn't exercising. I was just wasn't as happy, and I was having more stress and hormonal issues. That maybe the doctor couldn't see from their typical blood tests reports that they were taking so in the irony being you're working for a big company. So you probably had pretty good health insurance. Yeah. Yeah. I had great health insurance. I could see any doctor. So they work you to death. But they make sure you have good health insurance work you to death. I was drinking at ton of coffee. I mean, I was on the road a lot because I was in sales. So I was traveling. And yeah, the last thing I was thinking about was what I was eating. When did you have the light bulb moment that either I want to know more about macho where I want to make macho my business every day after work. I would I would go online and just research as much as I could about clean eating diet..

"The spot, and I became obsessed. I like made flash cards for all of the terminology all of the recipes. Like, I used to dream about it we you could sell that. I feel like. Yeah. I feel like so many people either want to be baristas or just be better like know how to order at a coffee shop a lot of stress that people hold as like walking to a coffee shop, and like I don't know how to order and most of the time the baristas going to have an attitude about you being up at the register not knowing what it is that you want. That's not the customers fall. I should make flash. Because also it's just such a great training tool because a lot of the people who apply at my coffee shop teen, they aren't trained baristas, but they just love coffee. And so you're in this tough spot is an owner. You're like, okay, I need to find some actual baristas. But I read this kid and their energy, and I would love to bring them on board. Give me a year. Okay. Okay. Okay. But definitely, but yeah, I just became obsessed with it. And I left that job actually got fired after a couple of months, that's fine. Because then a year later, I got another barista job. And it was my first specialty coffee job, and it was through a counter culture account and from then on it was just like the rabbit hole opened up into a chasm. And I went falling. "Else? I just announced a cool project today for my coffee shop Smith canteen in Brooklyn. We are calling it the green canteen project ready, and we are going single, use plastic free by January first twenty nineteen. That means no more single. Use plastic cups, lids utensils, takeout containers, I, it's kind of crazy. I know it, but I think we can do it and we're gonna learn. A lot, and we figure January, I was reasonable time line. You know, we didn't want to come back after Labor Day and say to all our all of our guests, guess what? No more no more plastic cups. But we're also going to be doing an audit of all our front and back of house procedures to make sure we're being as green as possible, and I'm working on it with Joey polio, our director of operations and Gabby Figaro our culinary director and Baker who you've heard before on radio cherry bomb. I want us to be the greenest coffee shop in America in America. Why? Not? Right in America. Really? Brooklyn. I wanted to be the greenest coffee shop in Brooklyn, but. America. I'll take that to, you know, one of the real reasons we're doing it is I just couldn't handle the guilt over all the plastic anymore. You know, if you follow me on Instagram, you know, I do beach cleanups every now and then and my brother's a huge environmentalist but the plastic situation was really just making me super depressed. "Yeah it's hard to go backwards with those but we were talking about this yesterday i would love for vitamix to make bottom that screws off yes because it's so hard to get all that stuff out yes i experienced that today right before i came here actually when i was making peanut butter i know you make homemade peanut butter the canteen all right so so gaby is a good housekeeping and then i kinda take over ship of smith canteen and i i wanted a baker who could do more gluten free things and alternative flowers and sugars and all that and they put out a call for somebody and then i just randomly thought of cabinet and i said listen i don't know how to run a coffee shop and you don't know how to be a baker at a coffee shop so let's just not know what we're doing together let's fake it till we make it let's muddle through this hour doing and it's it's been a lot of well speaking for myself it's been a lot of fun but you've really changed things in a nice way and we've got all these incredible baked goods now i'm having i'm having the time of my life it's it's super fun and everybody's been really receptive everyone in the neighborhood and all the baristas have opinions and i love it when i'm not there i know i do too it's so funny i'm like oh i hate not being around the canteen and we should give shout out to joey our manager who's amazing pantene and then diana we've got a great the loveliest pastry assistant baking assistant baking sistan you told her not to listen to the show live so she's not listening right now and i told everybody into the show.

"Empanadas guava pastries all what else croquettes ham croquettes kiss ethos is little cream cheese pastries and i would just love to have that here so if somebody knows lemme know or you can start to make oregon start to make them with canteen it's gonna turn out into cuban acre so you went to culinary school i did and how was that experience i loved it it's what i always wanted so when i finally did it i was like i should have just done this from the beginning you said something cute to me you mentioned that it was like college i was like the college experience that i always wanted and a lot of ways because i was moving to new york and newark was just crazy coming from florida and it was actually something i was interested in and i came with my best friend and we were just having the time of our lives oh that's good so after that you worked with me really random i don't even know if i ever told you the story of how i how i came to you but probably basically and your fifth month of cool i went to the french culinary institute which was a six month long program and around the fourth or fifth month people start interning restaurants and i kind of knew that that wasn't the path that i wanted to take i didn't know what to do and i was at a party and somebody told me that there was a sign in the window of smith canteen looking for kind of like a helper real yeah and i was like oh i've never heard of that place i was in brooklyn didn't even know what brooklyn was at the time i just moved to new york and i was like i don't even know where this is compared to my apartment but okay so i emailed you back like the next day so funny so we'll skip over those early days want to so you are the first cherry bomb employees back when it was crazy you were the first and only yes back in the crazy days kind of no idea what we were doing not that we do now.

"And that's the best part you know it's like feeling familiar familiar food you don't have to have to speak a special language to read the menu you you can pick up the menu and say oh dan meatloaf okay i'm gonna order meatloaf well alternately i think at the end of the day everybody just wants their cheers yeah absolutely one hundred percent as they can walk into and i think that's why it's so important not just to have a welcoming place for your employees like you're doing but employs end your guests which are also doing you know i've i've talked to the team at smith canteen about this but they're incredible yeah and and we have so many regulars because it's a coffee shop you know people just come in every day to get their coffee but you know there are so many little kids and maybe have a little boy who's got long hair you know or you don't know how someone identifies themselves and really just trying to be mindful of those today is so important then i think absolutely you know i wouldn't say restaurants are struggling with it i think the ones who are aware of that are having an easy time having that conversation with their yes he aims and their guests and but i think there's still a lot of restaurants that have to catch up and i think it's wonderful that they have you to look to thank you as a place that's doing it well and just doing things so beautifully thank you i barely know you but i couldn't be prouder of you.

"Yes bought for two decades yeah twenty six what is wrong it's an incredible space it's not like washington avenue was nothing street there's a lot on washington avenue it makes me crazy of new york when i even in my neighborhood in brooklyn and you know i have smith canteen yes coffee shop you woke up smith street a little bit there's so many vacant storefronts that have been vacant since i've lived in the neighborhood for like eleven years i can't figure it out i when i think about our space in particular and and it's been vacant for twenty years but i do there are traces of someone trying to start a restaurant probably very legally because when we walked in there it was almost completely empty space except for the kitchen had some fake walls that a hood that was like hung by chain and it was like caddy campus it was not right there that i don't even know that we're chatty muffins oh my ohio showing it's you know kilter off kilter okay okay but we didn't say caddy growing up in staten island you probably have something much more jake yeah so the place was just raw and it looked like somebody maybe tried to start a restaurant but did not get very far well and i think about it sometimes like so was it that the people who own the building were old and they didn't know what they had because there are resonant there residential apartments above us and they've always been filled but the the commercial space not filled and i don't know why so they put it on the market are broker contacted us and we were looking at a few different spots so the way that this all kind of happened was i was i started a catering company with a friend and it it was it kind of right business wrong partnership and at that time the day before my business partner previous business partner and i were getting ready to sort all of the company.

"They feel it immediately and it just like you do your thing i'm gonna do my thing whatever field that were in you know and you know food is really big right now because i think there's so many stories that the because food is attached to our identities you know and so i think that the more that we understand what were eating and and why were cooking things a why we're excited about it and we start communicating that way the more we understand who we are you know and so that's why i think it's really important that we as black women you know kind of explore in that space because because we can learn so much so quickly you know and and and so yeah i'm i'm really excited it i'm really i i know that it's just the beginning you know will you really truly are doing your own thing and i can point to one recipe in your cookbook that illustrates that and that is the chocolate chip tofu cookies and as i was walking round whole foods last night to get all the ingredients i was like where's the silken tofu hidden because i need you it's silicon tofu for these talks have cookies and i made it last night i never blended tofu so i blended my cell can tofu and i put it in the fridge overnight and that's wave for me when i get back home on i'm going to make them and bring them to the party tonight so we are you've heard me talk about this already but we are having a really fun event tonight forge wral at smith canteen in carol gardens brooklyn it is out on smith street and she will be there from five to seven signing copies of a book we'll have fun treats from the from the cook book books are magic will be there selling copies of black girl baking thank you to books are magic and whole foods and williamson omar supporting the event so thank you to whole foods marking and thought much williamssonoma we're so excited it going to be a really fun time i'm sorry we're running at a time because you and i can obviously talk for a really long time but you'll just have to come back at some point if you are not embryo if you're in brooklyn you'd better come to the events and if you're not.

"Several beautiful shops now they do the special event called pie with authors so the invited us to combine talk about the cookbook and dr '86 this project and a lot of other things and it was a really fun night i got to have a slice of their macho custardpie which i absolutely love and some pink citre i think it was bad seed citre medium blanking on the name but it was really really good and i always love seeing those do and we got to meet lots of members of the bomb squad like my i'm maya papaya who i only knew from instagram and i finally got to meet maya thank you for coming by and then lauda from eat sheikh chocolates that's the name of the brand eat sheikh chocolates came by and she brought us some presence which we always love and she brought me these pink white chocolate not butter cups they were stuff with almond butter and cherry she a jam and i know that sounds crazy so again it was pink white chocolate stuffed with almond butter and charied shia jam and i was like it's all weird but i love peanut butter cups more than anything well there are other things they'll live more than that but that's pretty high on my list and i try these two things i drive the two peanut butter the two cups that were in there and i was like i think a lot of made these just for me they were that good so lauda thank you we really appreciate you coming by and and bringing us those goodies and dads and melissa and emily for hosting the evening so what else we have a special event tonight are one of the guests on today's show is drill guy she is the author of the new cookbook black girl baking and she will be at smith canteen tonight in carol gardens brooklyn from five to seven signing her book and we will talk to her uh in about twenty thirty minutes so um hang on if you want to hear from durrell but right now we're going to talk to our first guest so nothing in your closet what about your pantry how about a banana peel jumpsuit or frilly fennel frond frock the artist gretchen roars set the internet on fire when she started mixing her funny face era sketches with pictures of fru.
