And the quality of wine is dependent not just on grapes, but on the interaction of grapes and a variety of microorganisms. And we'll learn all about that today. But before we get into that, we have a co host today. And our co host is Emily Hale. Hello Emily. Hi, thank you so much for having me. Yeah, this is really cool. I always like to do this. Now you're a student in my molecular biology class. Yes, I am. And you have an interest in what your long-term goal in science. Yeah, so my major is biology and my emphasis is biotechnology and I'm super into plant molecular biology and trying to get into the agricultural industry and seeing how different plant molecular biology methods can impact sustainability and efficiency and different ag fields. Yeah, cool. So we're kind of in the same area. And what was some of your interest in the idea of? So, you know, truth be told. The idea to do this about wine was really an idea that came from you. And so what is the interest in the micro molecular biology of wine? Yeah, so my parents kind of started me on the wine industry young. Of course not drinking it, but it took me to a lot of wineries when I was little and I just started to think a lot more about it and how the different disciplines like biochem, micro and molecular biology, crop production, all different things that I'm interested in, how all those kind of work together to create this super desirable product and also it has such a rich scientific history, which I'm also really interested in. So that's a good answer. And you know, the United States is the only place where it's weird about kids and wine. I mean, when I was in Italy a couple of years ago, giving is actually teaching a class there. They had a wine, not a vending machine, but like a fountain with the Diet Coke in the Pepsi, you could get a glass of red wine. So in students who are up there drinking wine at their lunch break. It's stigmatized as it is here. But that's interesting that you noted that. And of course, the history and kind of, as I mentioned before, this dependence upon multiple genomes, whether it's the grapes or the rootstock or the yeast and other critters that make it. It's a really good mixture. So how far along are you in your studies? I'm a junior right now, so I still have a little bit of time left in my undergrad. And I'm planning on going to grad school to study BioTech or play molecular biology, not super sure yet, but yeah, that's the game plan right now. We're joined by professor Seki pretorius. He's the deputy vice Chancellor for research at Macquarie university in Sydney, Australia. So welcome to the podcast professor pretorius. Thank you very much, Kevin. Yeah, I really appreciate you joining us. We're here with Emily Hale, who's a student in my molecular biology class. Emily is very interested in the molecular biology and the microbiology of wine. Let's start with the easy question. I was talking with Emily a little bit before you joined us about this kind of molecular biochemical conspiracy that's happening between grapes and microorganisms. And so when we're talking about wine, how many different organisms and how many different genomes are involved in producing this magical product? There are basically three organisms participating. The one is the gripe, the second one is, and the third one in the case of red wine, malolactic bacteria. There are hundreds if not thousands of genomes participating during the winemaking process. But those genomes basically come from those three organisms. The one from fittest venera, the gripe, and I will variety, then the rootstock, other species from fetus, and then saccharomyces cerevisiae, the main heast. But there are also non saccharomyces that contribute to the in product. And then in the case of red wine and sometimes a few sharp and nice malolactic bacteria, the main one being a caucus uni. And the mellow lactic bacteria, just for those who is that the one that converts malic acid to lactic acid so that it has a different mouthfeel. Yes. That's correct. Malolactic bacteria converts a sharper tasting malic asset to a softer tasting lactic acid. And it's not only the type that it affects. It's also stabilizing the yeast. The wine. The reason being, if you have malic acid left over in the finished wine and they are bacteria cells involved, they will eventually convert it to lactic acid produce CO2 or gas and bottles might explode. And it for that reason in red wine, it is mandatory to go through a secondary fermentation, which is called malolactic fermentation. So you mentioned the importance of the yeast that performs the fermentation, which is super important step in winemaking, but are there really differences based on the yeast that does the fermentation? Yes. That's the short answer to the question. Since 19 60s, when the first commercial yeast was used to inoculate fermentation back in California, the initial thinking was that it's just in order to catalyze the conversion of great mass into wine. But over time and especially the late 1990s and the early 2000s, it became very clear that within the species of saccharomyces cerevisiae, there are thousands of strains and each of them can either contribute to the performance of the fermentation, but also sometimes the flavor, especially releasing volatile compounds from involatile gripe derived compounds. That's really interesting. So the saccharomyces cerevisiae yeast is the as I understand the use that's added for the fermentation step, but how does naturally occurring yeast? Does that differ in different parts of the world? Or are specific wine grapes always fermented with specific traditional strains. So how.

It looked like he was passed them last year in his rookie season But he needs to come out. He needs to have a good. Preseason that unit needs to get back to you. And tyron smith when they're healthy sack martin's one of if not the best offense salon football so it's really gonna come down and my opinion to connor williams tyler bodice and then we can even throw connor mcgovern in there. Because we feel like he could play a Important role in this team weather be guard or center. So i think they all three of those guys need really good pre-seasons and i think it's important for your tiniest seki's to show like they're playing better because it sounds like he's had a rough start the camps so we need to figure out who's gonna be that swing tackle whether it's tiny seki brandon knight terrence steal. It sounds like they might be trying to play brandon knight insides. That's probably gonna come down to steal in china A young guy and then a veteran. So i think those that swing tackle spots going to be huge with an aging veteran entire smith and lyle collins who's dealt with some injuries the last few years really. That's probably what. I'll be playing the most attention Attention to this. Preseason is who can earn that that That starting swing tackle at a starting but that swing tackle job to replace tyron. Smith allow collins. Someone who had been incredible story the lefty. He had the insane game winning touchdown in the national championship to georgia and just was star at alabama for three seasons. And here we are in the nfl. He had a rough rough rookie year. But the dolphins roster is really good. I mean they've spent years building up that roster with draft picks they have so many draft picks a lot of young talent and religious a complete roster. I mean one of the best top to bottom in the nfl but now third point where it all goes on the shoulders of to attack vilo and he was pretty unimpressive. last season. i mean he played in ten games. He was in and out of the lineup down the stretch of the season. He only completed sixty four percents of his passes which isn't terrible but he only averaged six point three yards per tempt so he wasn't really just driving the ball downfield eleven touchdowns five interceptions and i don't think he really developed much rapport with any of his wide receivers last year. Now there was a little bit of a depleted wide receiver group but he had a strong connection with mike seki. The tight end out of penn state. Who really had a breakout season last year. But it's got to look a lot better if the dolphins are going to invest into a. It's going to be this year. It's going to be whether or not. He looks like the guy they saw it alabama or if he's a guy that was good in college and it's just not gonna be o develop to develop into a consistent starter in this league so i'm really excited for this I think the way things ended last year it was rough. The optics were rough but he was in a tough situation and things are a lot better now. Dolphins adele law to improve since the end of last year. The got a great head coach but it really is going to fall on the shoulders of to to see whether or not this team can be a super bowl contender.

Yeah that was but that you can get adapters to connect a new system so if it's an older vehicle yes it's one hundred percent worth that especially if you're an audio file upgrading. To a better head unit better speakers assab and amplification of the music itself. I don't i'm not talking about necessarily making it. A blasting loud just fuller audio quality. It's one hundred percent worth it. It's night and day if you have more of a modern car where that kind of stuff happens. Yeah then you're looking at adapters. You're looking at a usb plugged that you can plug in and give yourself Wireless carplay yeah. I mean mine doesn't have anything looks remotely like a head unit in it and you're right you know. Everything is the street homes. Yeah the screen that comes with it. It doesn't control the The the erin cooling system. But it's all displayed on there. There's no way you could is very difficult to understand how he could replace anything like that without going into in replacing seki polls and that sort of thing so it's A pretty major job to replace all the wiring harness. That's in the vehicle you know. They got to replace. Are they gotta remove entire dashboard in the parts. Department informed me that it's a product that toyota no longer makes so they can't source an oem version of this And they couldn't find any they had found one that match because mine is a pretty unique sequoia. It's the luxury package with air ride suspension. A high end audio. Jbl system and navigation. I mean it's they don't they didn't make a whole lot of these there. It's the top end. You can't get us equate with more stuff on the mind but they had found one but the only way this person would sell. It is the entire dashboard yet and So they hit quoted me. You know the parts and labor to do it all about fifteen hundred dollars and that's with employee discount. Yeah which isn't inexpensive. But it's not five thousand dollars either So i had given him the go ahead and then that deal fell through. They they whoever they are trying to get it from. I don't know what happened. It didn't happen yeah And then they said they can't find one so then the option is i'm going to have to replace every wire in the dash by hand which isn't really an option. I mean i. I would be doing it for years. Yeah but i looked on ebay and lo and behold. I found one with a fuse. Box it's not the entire dash. That's just the wiring harness. And the fuse boxes there for eighty dollars. Hey you show. This is the right one It's exactly the same. According to the listing with the exception of it didn't have the same head unit as mine does but i looked at the wiring and it is the same. Okay just put just hold on a minute. I'm going to need to deal with some of the six ten noise. No problem so that is going to be happening This week i hope There's one guy at work who i i don't want to say. He's a better mechanic than everybody else. That's probably not true but he does The hard cases the ones that take a creative streak to come up with solutions. That aren't necessarily the ones that you're going to find Emmanuel or the official way of doing this or hey this is this is the problem and if i go online i'm going to find you know five hundred other people that found the same problem and i'm just going to basically mimic what they did. And it's probably gonna fix this guy named cooper Is very good when it comes to Discovering what the actual problem is and the coming up with really clever solutions on how to fix. It is very rare. That cooper doesn't come up with the solution to something now remember. I had sent this to an outside company to see if they could figure out because we initially. I e the head yet at the alarm system some the remote start something like that and it wasn't but that company pulled the radio out and disconnected all of that stuff and they didn't notice that the fricken wiring harness was melted. "I've studied a lot when it comes to video marketing. Especially when it comes to search engine optimization and optimizing your exposure on Youtube, the lot experts out there. But my personal favorite expert on this topic is Brian Deane from back Linko dot com you can check out his blog back link dot com. There's a ton of resources when it comes to maximizing your exposure on Youtube he's only an expert when it comes to Seo marketing on Google but also on Youtube so I want to share with you some things I learned from him as well as others that have confirmed his strategies and what I like about Brian's approach to youtube marketing is he actually tests Out His theories and see if they work in the real world and his own youtube channel, which is huge for this niche of Seo. It's a very dry kind of topic. It's not a you know anything that's entertaining or funny or makeup tutorials or car reviews which kind of caters to a big market very niche and yet he's got a huge following three hundred and seventy three thousand subscribers on his youtube channel. Pretty impressive. Let's address the direct question of how long should videos on Youtube. In order to give you the right advice. Let me back up a little bit and talk about. What does Youtube. Well Youtube really wants people to stay on the platform as long as possible. Their big metric is view time total view time how long people watch videos on their channel? Don't confuse this with retention time. Let me tell you the difference if a former video on average people watch of to the three minute mark. My retention time is seventy five percent pretty impressive right? Let's say I have a ten minute video and people watch only half five minute mark. You would think that the first video would be more optimized would be more preferred by you would get more exposure because the retention time or percentage is higher at seventy, five percent versus fifty but the total watch time I video is three minutes versus the second video, which is five minutes and really. Cares about is that you actually keeping people on the platform for longer they're watching videos for longer more minutes is most important to them, and this is why the ten minute mark is seen as the holy grail in Youtube because ten minutes allows you to get lots of viewing time even if they just watch half the video and it's also not too long where it's like a two hour video and no one even attempts to click on it because they have to hours. So Brian Deane your video should be at least ten minutes long. You should try to aim for that. You know nine minutes eight and a half. Okay. But ten is really what you should aim for to maximize your viewing time and also obviously have a concise and valuable video. So your channel will get more juice will get more preference from Youtube. Viewers to watch more time of your videos, they will suggest your videos as recommended videos at the end of videos. Or they'll suggests it in the right hand column. And if you get enough mental, you might even be trending on their homepage. Now I don't want you to take my word for it. Take a look at some of the best youtubers out. They're the ones that are trending the ones that maybe you follow somebody maybe that you look up to even if they're not as active as they used to before like Casey Nice to take a look at the length of their videos, you're going to see their around the ten minute, Mark Ten twelve, fifteen minutes very few of these big time youtubers are doing you know three minute form videos, even people that review. Gadgets software cars they make sure that it's you know eight, nine, ten minutes at least now I want to give a couple more piece of advice that I learned from Brian. But my real genuine advice is to subscribe to back link. Oh, you know he's not paying me for this. I'm genuinely saying he's a great source of knowledge because I've learned so much from him if he ever offers the I know he has a course on youtube if you ever offers it. Opens it up for enrollment. Then he closes it really quick by that course it's a very, very good if you're serious about growing your youtube channel because you're GONNA learn a ton to maximize a results is really going to get you faster results in shorter time. But here are a few things I learned along the way from him number one. Understand the key words you're trying to target when you are shooting a video. So when you have video four, your youtube channel, you have a video idea, a title what are the key words are trying to target what kind of things that you're going to be searching for that they're going to you know stumble upon her find your video with understand your Seki words and they could be eight to ten keywords you're looking for, and you need to make sure you use these words throughout the video now, only in the description as. Much as possible in the title, even in your, you know close captioning or subtitles, but also say these keywords in the video actually speak them into the camera why? Because you actually can pick up what is being said, and it's actually picking up your audio and using it in their search engine algorithm to find people those videos that match the keywords typing in. So obviously, you just want to say these words randomly you want to put them in context in the video, but be mindful that you need to mention these key a few times. Brine recommends at least three times. So they're picked up by the algorithm maximizing your opportunity to rank for those keywords. "I've studied a lot when it comes to video marketing. Especially when it comes to search engine optimization and optimizing your exposure on Youtube, the lot experts out there. But my personal favorite expert on this topic is Brian Deane from back Linko dot com you can check out his blog back link dot com. There's a ton of resources when it comes to maximizing your exposure on Youtube he's only an expert when it comes to Seo marketing on Google but also on Youtube so I want to share with you some things I learned from him as well as others that have confirmed his strategies and what I like about Brian's approach to youtube marketing is he actually tests Out His theories and see if they work in the real world and his own youtube channel, which is huge for this niche of Seo. It's a very dry kind of topic. It's not a you know anything that's entertaining or funny or makeup tutorials or car reviews which kind of caters to a big market very niche and yet he's got a huge following three hundred and seventy three thousand subscribers on his youtube channel. Pretty impressive. Let's address the direct question of how long should videos on Youtube. In order to give you the right advice. Let me back up a little bit and talk about. What does Youtube. Well Youtube really wants people to stay on the platform as long as possible. Their big metric is view time total view time how long people watch videos on their channel? Don't confuse this with retention time. Let me tell you the difference if a former video on average people watch of to the three minute mark. My retention time is seventy five percent pretty impressive right? Let's say I have a ten minute video and people watch only half five minute mark. You would think that the first video would be more optimized would be more preferred by you would get more exposure because the retention time or percentage is higher at seventy, five percent versus fifty but the total watch time I video is three minutes versus the second video, which is five minutes and really. Cares about is that you actually keeping people on the platform for longer they're watching videos for longer more minutes is most important to them, and this is why the ten minute mark is seen as the holy grail in Youtube because ten minutes allows you to get lots of viewing time even if they just watch half the video and it's also not too long where it's like a two hour video and no one even attempts to click on it because they have to hours. So Brian Deane your video should be at least ten minutes long. You should try to aim for that. You know nine minutes eight and a half. Okay. But ten is really what you should aim for to maximize your viewing time and also obviously have a concise and valuable video. So your channel will get more juice will get more preference from Youtube. Viewers to watch more time of your videos, they will suggest your videos as recommended videos at the end of videos. Or they'll suggests it in the right hand column. And if you get enough mental, you might even be trending on their homepage. Now I don't want you to take my word for it. Take a look at some of the best youtubers out. They're the ones that are trending the ones that maybe you follow somebody maybe that you look up to even if they're not as active as they used to before like Casey Nice to take a look at the length of their videos, you're going to see their around the ten minute, Mark Ten twelve, fifteen minutes very few of these big time youtubers are doing you know three minute form videos, even people that review. Gadgets software cars they make sure that it's you know eight, nine, ten minutes at least now I want to give a couple more piece of advice that I learned from Brian. But my real genuine advice is to subscribe to back link. Oh, you know he's not paying me for this. I'm genuinely saying he's a great source of knowledge because I've learned so much from him if he ever offers the I know he has a course on youtube if you ever offers it. Opens it up for enrollment. Then he closes it really quick by that course it's a very, very good if you're serious about growing your youtube channel because you're GONNA learn a ton to maximize a results is really going to get you faster results in shorter time. But here are a few things I learned along the way from him number one. Understand the key words you're trying to target when you are shooting a video. So when you have video four, your youtube channel, you have a video idea, a title what are the key words are trying to target what kind of things that you're going to be searching for that they're going to you know stumble upon her find your video with understand your Seki words and they could be eight to ten keywords you're looking for, and you need to make sure you use these words throughout the video now, only in the description as. Much as possible in the title, even in your, you know close captioning or subtitles, but also say these keywords in the video actually speak them into the camera why? Because you actually can pick up what is being said, and it's actually picking up your audio and using it in their search engine algorithm to find people those videos that match the keywords typing

"We can Kinda just hop into it and I wanted to. Yeah I WANNA talk about the new album all of that. But you know talking about sort of staying close to home and being I think it's rare for somebody who does what you do to to not be in L.. A.. Or to not be in New York and it's just interesting. Do you do you find you know working on music? Does the place you are? Does that affect your thought process you're writing process? Does it affect your output? It's such a terrific question. So I think that where we live in, it's one of those funny things i. full disclosure I was raised by a psychiatrist so. My mom is a brilliant doctor, and so I use a lot of what's called I think in. Seki I trick vernacular psycho babble would say official term. Fair warning but I do think there's an interesting. It's an interesting thought threatened insofar as. You know it's one of those things that people say, Oh, it's not where you are what kind of your internal locus, what's going on inside you and of course, there's there's truth in that but it's sort of a a both hand I think in that it really does affect especially for. That are are artists and our job is to kind of absorb our environment and sort of. Purge that through whatever are medium artistic medium is and so I think it does have a pretty profound impact on you where you live if you're artistically inclined and so interestingly, we we split our time between the Eastern and the West Coast we have a place in in l. a., and then we have a place. Here On the East Coast as well too, and so because I do a lot of film stuff I'm probably there about a week month, and so we've got a lot of close friends and I mean close to. Family they're actually in Los Angeles as well too and so. I miss it when we're when we're not there and I lived full-time in Los Angeles for ten twelve years and. I started to get. I didn't like living there full-time if I'm being totally honest about it. It's really really difficult place to live. A lot of people you know you put in your time you're there for you know sort of crucial number of years, and then a lot of people end up getting out again man you're you're you're absolutely right about that I. Mean I can't even tell you how right you are about that I have so many friends that have done their time there they kind of establish their career in a way that they're happy and proud of in his sustainable and then they're like on thanks but no thanks with all the you know home robberies and traffic and no. Thank you. You know so. It's A. It's a tough place loon especially with what's going on now. Is like a safety issue in Los Angeles and P something did he pulled don't like talking about but in everywhere in Los Angeles there it's it's. Safety issues honestly I mean most major cities man yet. So it's a little hairy. I mean even for me living in the heart of DC in DC by the numbers is not as bad as a lot of places but. It feels a bit weird to be so close to so many people right now. "We want to know what was your first food memory. My first food memory. One of my favorite things to eat is I just love rice and then not just rice but I love eggs in races so lake any kind of eggs generally. When I was growing up in Japanese food you can eat raw eggs but in the cat so we have to like a pan fry are boil it. But it's the idea of mixing that with the rice important slice sauce on it if there's nothing to eat eggs and rice was that you making that for yourself or is it somebody else making it for you. That was my grandma and my mom making for me and then when I got to do things at home because at cravings I got very creative creative with like found ingredients. Yes let one of my best things that I felt that I created when I was young so I was craving pizza. But we don't have pizza at home and it's not like you can make pizza. So I just got like the USA dumpling. Skin and I put regular spaghetti sauce on it. Cut The craft slices of Cheddar cheese and some ham and a toasted and I was like. Oh my God. It's pizza aided and then I gave it to my sister. She's like that's bad shirts pizza. Now you're like see it was cuisine. Yes see those creative. Your Mom's food like we ain't a lot of like Japanese style American food for example like Omelette race or rice. We eat a lot of Tom. Cut Su Eight Curry rise we just had a lot of things like that but we also eight really cleanly to eat a lot of like you know Japanese. They say oh she. It's just like boiled vegetables. Soya sauce or just very simply my parents. They started as seafood market and then they would always have fish and seafood at home and I remember growing up thinking. I hate seafood. Engages won't meet. Can we just have meat in there? Like no secret is good for you. Is that household like where you can get a lot of things. But you're like I just want something else. Yeah I definitely grew up eating all Chinese food right and then I grew up in the south and so I wanted to try crystal and white castle like what was that food that you couldn't get you wanted to get McDonald's back in the days. When I was growing up that was what was nearby. It was like I looked to the left. It's McDonald's I looked at the Rights Burger King Well I wanted to ask you basically about kiosque and your experiences going to Japan and learning to cook that as a southern California born and raised japanese-american but I How would you describe Kaseke. I have to tell people when it comes to Seki that. It's the most formal way of dining in Japanese cuisine. Because it's a very completely thought out meal. It's not just you know where you randomly pick things and put it together. It's a formalized meal where you really have to think up a thing greedy and you also have to think about the cooking methods that really highlights ingredient and it's about seasonality about representing the area that you're in what. I always say that the thing that I love most about is that it's really about showing gratitude toward nature like this feeling of really appreciating what nature has to give you and then giving back by doing the best things that you can do to ingredients to highlight them and make him shine like honoring essence. Yes I didn't realize how. How much of an outsider? I was until I actually went to live in Japan because I remember going up here and thinking. Oh you know one day when I I remember like around the age of twelve hours. I think I want to go to Japan to study. I WanNa live there and Experienced that kind of life just to what it's like so different from what would've known and I thought that would would be an amazing experience for me to do it and I always had planned it in my mind. That was going to go after high school and just sort of experience the lifestyle and there was only when I actually went there. Did I realize like Oh my gosh? I think I'm so much more American than I recognized when I lived in America. Because there's just so many things that are so different from our lifestyles and there's so many cultural nuances that if you're not familiar with you could come off as being offensive to people. I felt like I had a really good education about those nuances. But it's only when I went there that I realized oh I can't walk around and eat at the same time because that's not what you do and your pen like and then. I can't sit in the subway with my legs spread out because I'm so tired like I just have to sit there properly and behave yet and I think one of the most hardest things when it comes to trying to get into what I wanted to do with cooking was finding the right place to sort of accept what I wanted to do. Luckily I had relatives there that were willing to take me in and give me that training and things like that but I felt that there are a lot of differences but at the heart of things I always feel like I can relate so it's very difficult I think at one time I really wanted to be a part of the society but then after as I got to know it a little bit more deeply I just felt like I think the best thing is just be who you are and you came home. Yeah well what was it actually like growing up here? I think one of the things that was different growing up here is unlike how it is. Maybe now there weren't as many Asian people when I was growing up and I felt like I had one Japanese class main ahead. Maybe like three Korean classmates may be there to Chinese consummates but it just felt very on some level isolating at one point. I hadn't really thought about it. Wasn't like a big deal wasn't like. I felt the need sort of not belonging that I noticed that there are differences. Thought about being as an I guess or being seeing how different you're from everyone else. Yeah you know what I didn't really think about being Asian until I actually moved to this end. Gabriel valley and that was really an unique experience because the high school I went to had. Maybe it was probably seventy percent Asian. The thing that struck me was like this is not how imagine highschool leg where all the cheerleaders and jocks that you see going on. Tv's and my high school does not look like this and That was the thing that blew my mom. I'm from Tennessee. So that was the thing that blew my mind. The most of California's there's a majority Asian highschools I was like one of you know two or three and my high school Tennessee. You know coming out here like I'm like oh I'm Asian and then there's all these other Asian people it's like I need
