A Fermentation Celebration (with Sam Pike)

"Hello, and welcome to misinformation Trivia podcasts for ladies and Gentlemen Cool Trivia and sticking it to annoying teams. It pop quiz where your hosts I'm Lauren and I'm Julia Hey, Joel Lord Hey you know it's getting chilly. We love those fall foods they're all coming up. and. One of the things that you can do in the fall I've heard I've never done it before is setup vegetables and fruits for the winter you know like our forth like in the olden days when you had a root cellar when yeah. When he had a root cellar, that's my mother likes to say. So I thought, that was a perfect time for us to bring on a very special guest four guests tober guests hct. which the song we will, we will put insert interesting music here. Hey everybody engineer Josh here instead of the guests over theme to apologize for some of the audio this week's episode we had record this in the afternoon. So we gave our baby to mind Mr Information Co host Steve to take a little nap. Unfortunately she woke up a couple of Times Mason commotion that we wouldn't get picked up on Mike, but it did I did my best. Mix wherever I could sponsor, it was possible or maybe some anise I just wanted to make clear that we're not ignoring her baby to do the podcast. She was just given the business on. That out of the way, please enjoy the show. But we have a wonderful guest today by former intern and a fermentation Guru Sam Pike Sam. Below thanks for being here to the show Sam. Pleasure to be here. Sam I. First thing you guys need to know about him is that he was one of our earliest and our best when I was working at the messy and when we first saw his because you know, you have to submit a CV when you're an intern at the se were various professional and we saw his full name. On the was Samuel Gag now pike and I we were like is this a civil war ghost? Is He? Has, he lived forever and so from there on in and God bless Sam for being such a good sport about we insisted that he was a civil war ghost, the entire time, and as long as I've known him, we continuously poke fun at the fact, and actually at one point Julian I got drunk and made up an entire TVs we planned to TV show around it's called the eternal soldier. He's been wandering the earth for the last two, hundred and thirty years and the theme song is Taylor Swift's welcome to New York because he obviously he writes into your and I'm right. GMT. Yeah, that's our TV. Show, and of course, he comes to New York obviously to solve murders. Yes. Yes as you do. CBS is all procedural. Oh. This is CBS show. I wasn't clear and also not for nothing Sam. I'm so sorry we took your so. We will not be paying you residuals at all. Right, let's get to play myself in the show. Absolutely you even look like a civil war coast. So being a minor and all, but anyway, I'm so sorry to take a any more of your time Sam. Please tell us what you're going to be talking to us today about. All right. So I'm Sam and I'm GonNa Tell You all about fermentation and the different kinds of from anticipation over the history of the science, some of the culture, some of the contemporary stuff too because it's still going it's still evolving in it is still advancing. That's very exciting. I gotTA. Tell you I don't know. Anything. Neither do I mean we've listened to people tell us about how they make wine and beer and Sticks didn't stick Yeah Yeast? Something marist. But we're GONNA find out from Sam Sam please take it away I cannot wait to hear So you guys know a bit about like beer and wine or vaguely about. One of the three kind of pillars of fermentation I'm GonNa talk about so. Wine and beer that's made leasing primarily. The same has made us us to make bread. Et for men's sugars endow. Hall. The other two types are lactoferrin venting often call Hick link that says what's called Lactobacillus the type of bacteria that can birds carbohydrates into Lactic. ACID. and. A. Few other things sometimes, sometimes a little bit of alcohol sometimes, Carbon Dioxide sometimes see the gasset which talk to cobb out more later. Ended the third kind is. It's in America's It's broadly called Koji fermenting. It's what's done to make down. Like soy sauce missile soccer it's hard. It's harnessing mold to ferment. To. ferment. Things, slightly different process Right so And Fuel Freeman feel free to interrupt me at any point to get clarification or. We will we will. Kind of assumed is much. You're used to be at this point. Sam. lactoferrin renting or using lactobacillus. That is what I know. The most is I teach frequent workshops on it's what I can and doing daily. If I should camera slightly he would see just a huge row of Sauerkraut sitting just above my. Yeah. Saint Ours and Jar Sam's Instagram is basically just bubbling jars of of who knows what that he forged from the woods? Yes. Exactly. Am I not wrong you're not. The worst part is a horrible habit of not labelling everything. Guess what stuff is in how old it is. It's never not been fine. So unsafe there. Oh, okay jars. Not sure. Sure of this is bad or not. Guess we'll try it. Snow tested. So, what leftover mentoring is, it's harnessing this bacteria that. Is. A little bit of chemistry right here that I don't I barely know about what it does. It takes carbohydrates newco simple sugars in which are the chemical makeup is c six, h twelve, O six and breaks down into a few other substances the most important one being lactic acid, which is see three, eight, six, three. And the reason that wants to sewn Horton is that lactic acid drops the key age of the substance of the buner making end makes it last longer preserve Okay. So. If you just let the food out, normally, it would just kind of like. Go. Get bad mold bad smell. Awful. This smells awful. The some people a lot of people, but it's still perfectly safe to eat even make some of the nutrients and minerals a lot more accessible. And the way people are the hardest. This bacteria easily been harnessing at for thousands of years is by adding salt. So that period that produces this lactic acid it can. Stay withstand able an acidic environment, but also a salty environment which things cannot do. So by adding salt, the cabbage is that bacteria will just quickly take over multiply in. ferment everything until it's perfectly say. That's interesting. It's incredibly easy to do at home for like. I mean, it was done accidentally first centuries think about it. The microscopes were invented until relatively recently, people really didn't know a dockyard east even was they just they kind of knew the process entitles like magic or a gift from God or something They're alive for theories they're really need them the basics remain laughter permitting is a vessel. It. More only time places. You'll see like crosser. Back of some sort. The easiest way to do it at home is just take a mason jar can old pickle jar or a refresh Lee bought Mason Jar, just. Cut Up some cabbage mix it with some salt N. just packed their real tight in. Let it for that. See you don't have to add any liquid or anything. So we're talking about SAUERKRAUT. You don't get any liquor sour talents was so frightening there's enough liquid in the cabbage itself OSMOSIS SIS in like chopping the cabbage bricks enough cell walls at all this water just gets leached at the cabbage in submerged the cabbage totally in its own liquids. That's that had no idea. There are few other vegetables like tomatoes are the same but something like that hickel cucumber. You could slice and mashed us that out but the relief roast texture. Yeah yes. He leave it whole than you make what's call it salt brine, which is just water and salt mixed together and just with the cucumbers in that, they just start permitting on their own.

"You know initially. Fundamental number seventeen it says Blah Blah Blah Blah Blah. Then after a while just begin to think. Why are you asking that question? Why? Why are you asking me what we should believe what I should believe to be out of call myself an author docks. True Bible believing at seventh day adventists it just every time I hear that question now I think that has just. So it's the most messed up question in the world. It's. It's. It's like it's like. Okay cult, but I'm also not an occult. So just tell me what I need to notice that. I can make sure that I'm good with all the other cult members because I make sure I get this right because I don't get it. Right? The implication is like well, it's like terrible is going to happen. You know. Yeah. Yeah, I, think a huge a huge A huge. Piece of army arsenal as pastors is the words I don't know. We don't like to say that. We don't like to say that because we're supposed to know. But Man. There's way more inscription that I don't know that I do. And the humility that that those words I don't know. Brings also opens up conversations tell people grow. And that's really important. So when someone comes to me and says, what are we believe I'm like I have no idea what you believe. In fact, I'm not one hundred percent. Sure what I believe on that I know what I believe ten years ago and it's Kinda changed since then which come fascinating the Holy Spirit's led me in a different direction. So maybe we can study that. And find out what you believe, and I can find out what I believe and we can find out. We're God leads us in this conversation. And this is this is the beauty of seventh avenue were non cradle. So we didn't say we don't believe that God spoke. We believe that God speaks. This Yes and and that keeps me in this church. Honest to God it. Yes ten. Kim. Gone. Onto was. says. That is that is so good and we're non-criminal but I bet you, Mitchell lots of adamant don't realize up. Believe that we are. This is why. It's so it's so subtle when we say. fundamental believes is actually not accurate is actually statements off from the middle belief. Which means that we have midday commitment to that list groin or shrinking depending on where to Spirit's leading us together as people. So we're not increase on and by the way we also believe in in In in a in a specific kind of revelation, which is inspiration a not not not word inspiration. We don't believe in that. we we've thought inspiration is that real context inspiration? So I think our people don't know scripture that they they studied from a from a broken Herman Uday. Leaves them with these these dead ends I don't know what to do with. So there's part of our work has passed and by the way I actually think. Jesse. That what I was going to say is that. What an incredible responsibility and trust goddess foot when like when you were saying someone comes to you and says, Hey, what would I believe that? Is the Holy Spirit window giving us an opportunity not to say, this is what you believe but instead to say, here's the question should be asking. Here's how here's how you arrive at. You're asking you're asking me a question I wanna be a supportive cast member. Your ask you asked it in the right environment a well lit played with people who no you in. Love you..

What kids can teach adults about asking for help

"What can we learn from children about being better humans their first they loyal to their friends fast to defend quick to apologize to forget. But as past kindergarten teacher always a kindergarten teacher at heart I want to share with you a surprising lesson I learned from them about being asked for help I love human behaviors, how we act differently in different situations and environments in these kid five-year-old's with their adorable cheeks the perfect height to give one morning to an almost a competitive love or high fives were so interesting. My first class was called the Mars Class I attend students and each were so full of character but there's this one kid I'll never forget. Let's call him Sam. Sam behaved like he forgot he was only five he was so independent not only did he know how to tie his shoelaces but he knew how to other his shoelaces to. He also never took home a dirty thermo because he would clean it after his lunch and if something happened and he needed a change of clothes who would do so very quietly discreetly by himself. He didn't ask for help much himself, but he was the one that his classmates went to for help. Above. Things like can help them finish the Kimchi because it's so spicy. He did ally showing any type of affection teachers in came across as the Cold Kit. If you gave him a good morning. Hong roll his eyes and make a funny faces to show discontent but also stand there and wait if you didn't his morning plug. He was so smart and reliable that even forget that he's only five. As a novice teacher I spent a lot of time to come more experienced teachers interacted with their students and I noticed something very peculiar. oftentimes, when Kids Fall Day don't start crying immediately, they stand up puzzled as if trying to make up their mind, you know what just happened is as big of a deal enough for me to cry this is her what's going on. Usually kids will be okay until they love is with adults when that they trust in? No can do something for them. Is Lock then Bieber stabbed in tears? When I noticed this I so wanted to happen to me because to me that meant you had earned a kids trust and had proven that you're capable to help them with anything you are a hero to them. Week spent by of me just watching other teachers have kids run to them in tears in I'm watching in. Jealousy. Oh. Was I jealous of course I didn't want the kids to fall, but I really wanted that moment of validation that yes I had earned a kids trust enough to be the one to help them. Then it finally happened. It was a beautiful day. It was during recess at the indoor playground. The kids were playing in getting something slamming needed because teachers are forever limiting stuff in the teacher's room next door. Then I heard a kit yell teacher teacher Seinfeld down. So I went out to Pique Look Darren for Sam and there he was looking very puzzled as if he was trying to add double digits then he looked at me are is locked and then it happened his lower lip started to tremble at his tiny is starting to fill with tears. Then he bursts out in tears running towards me and it was glorious. I'll never forget that moment he let me give. Him a big hug into help him come down and turns out that yes he did trip over his own two feet. So there was one other four to reprimand. We check to make sure that he wasn't hurt and he overcame that with not a burns. It was in that moment Ali it didn't feel that I was there to help. Sam but rather he was giving me this gift this opportunity to help him. It is something very weird that I struggle putting down in words with his former ability in coming to me for help as if I could do something about it, you would think that gives me power but in that moment, no, it was quite the opposite and the power shift even more so to him. Being. Asked for help is a privilege a gift for you to do something for someone especially when it's coming from their place of Boehner Ability. With everything I learned from kindergarten or in teaching kindergarten, I went to conquer things in life festival were nine years and I landed in an association for project. Management professionals in a role that works extensively with volunteers. Working volunteers is a wonderful experience but there are some things I wish I had been warned about like how to set boundaries. It's very easy to fall into the rabbit hole of because they're volunteers late night calls. Yes. Because they're volunteers have day jobs, business trips that are almost exclusively only on weekends yes. Because they're volunteers have day jobs. Not. To Pat Myself on the back but I got quite good at my job as thriving off their relationships building. And the best way I knew how to judge whether I earn someone's trust was if they would come and ask me for help I loved it.

The FBI says it was another ransomware attack on a sensitive government network, ransomware locks up victims files until ransom is paid more. And more critical public service networks are the targets before Cleveland. The city governments of Newark, Atlanta, and Sarasota were hit and San Francisco's transit authority. The Colorado department of transportation and the port of San Diego today. Twenty six percent of cities and counties say they fend off an attack on their networks every hour, perhaps even worse. Dozens of hospitals have been held hostage across the country. In January twenty eight teen the night shift at Hancock regional hospital watched its computers crash with deepest apologies. The one hundred bed facility in the suburbs. Of indianapolis. Got it CEO Steve long out of bed. We had never been through this before. And it's something that I read in the journals. And I say, oh, those poor folks. I'm glad that's never going to happen to us. But when you come in, and you see that the files on your computer have been renamed in all of the files were renamed either. We apologize for files or were sorry. And there was a moment when I thought, well, maybe they're not so bad. They said they were sorry. But in fact, they had encrypted every file that we had on our computers and on the network. Well, the as we've said still had long told nine one one to divert emergency patients to a hospital twenty miles away. His staff turned to pen and paper. Nothing electron. It could be trusted. This is a ransomware. So this is a virus that has gotten. To the computer system. Would it have the ability to jump to a piece of clinical equipment could have jumped to an IV pump could have jumped to a ventilator we needed a little time just to make sure about that time was a luxury not offered in the ransom demand. Your network has been encrypted if you would like to purchase the decryption keys you have seven days to do. So or your network vials? We'll be permanently deleted. And then it gave us the the amount that we would need to pay to get that back and that came to about fifty five thousand dollars that was the same price demanded of the city of Leeds Alabama three weeks after Hancock hospital near David Miller was surprised his town of twelve thousand would be a target not much to notice in. It's at least not since Charles Barkley graduated from the high school. I didn't know that this Mauer attack was actually a ransomware attack soon as we've found that out that took it to the different level. How do you make? Well, it was. Going to cost us money white the hospital. The city of Leeds was cast back into the age of paper. No, Email, no access to its personnel files or financial systems can all companies and local governments expect to be attacked. I think everyone should expect to be attacked the FBI's might Chris man says cyber-crooks, no governments in hospitals are likely to pay because they can't afford not to until his recent promotion Christmas was in charge of the FBI's cybercrime unit. You're waiting for the day that somebody says we have the nine one one system held hostage in a major city, and we need ten million dollars today. I hope that day never comes. But I think we should prepare for that possibility. Crispin says in twenty seventeen seventeen hundred six cesspool rent somewhere attacks were reported. But he figures that's less than half more. Most businesses. He says would rather pay in admit they were hacked on the wear of one ransomware variant that affected all fifty states that had some thirty million dollars in losses and over six million dollars in ransom payments. I would tell you that the losses are very significant and easily approach one hundred million dollars or more just in the United States that ransomware variant. He's talking about is the one that held handcock hospital hostage. It's cold Samson. After one of its file names experts told Steve long Sam Sam is unbreakable. There was nothing that we could do to unlock those files are only choice was to wipe the system and hope that we had backups or to purchase the decryption keys to pay the rent. Indeed. That is exactly what that means. But Sam Sam had infected the hospitals back-up files, the FBI adv-. Vise long not to pay. But after two days after his staff filled out ten thousand pieces of paper, he paid the ransom. The crooks demanded digital money known as bitcoin ransomware is possible only because bitcoin is so difficult to trace mayor Miller held out two weeks before he paid his bitcoin ranson after a little bargaining at the said to grit my teeth and realized that this was a business decision. And that was the way to do it. So they asked for sixty and you paid eight how did you get there? Well, I agree and

"But if someone in the audience has of a Ferrari F f and they want to sell to me for sixty cents on the dollar. Let's talk. Okay. Great. Okay. Sam. Sam harris. Austin fact, chided dizzy, I mean, I guess we'll tell our listeners like we could we could talk for seven hours on in. This fact, check about stuff that was sad. And I'm not gonna do that. I picked a few things that we can talk about that. I thought maybe needed saying after listening. There's a lot of may be could be considered controversial opinions, and I'm not going to pick apart every single one. Okay. So. Okay. Well, I you said four out of five guests of ours. We site Sam exaggeration. I didn't luck. Yeah. That's an exaggerating is probably an exaggeration at the beginning. Yes. Tapered off a little bit. Because we've we also heard about all these people. But what's interesting is even when I'm not actually saying Sam, but I'm talking about something. Paul bloom wrote about empathy or I'm talking about something Brett Weinstein said or on talking about even Yuval Harari, they came from his podcast. So even if I don't say Sam, and I just go do you heard this, Paul bloom thing, really, I'm talking, you know, I got that from SAM's cast. That is true. Okay. So he mentioned honor killings, and he said. I don't actually know what he said the percentage was or maybe just a high percentage of Islam believes that we that honor killings are okay. And the Washington Post in pew in two thousand thirteen did a survey and in fourteen of the twenty three countries where the question was asked at least half say honor killings are never justified when a woman stands accused similarly at least half in fifteen of twenty three countries. Say honor killings of accused men are never justified in only two countries Afghantistan in Iraq. Do majorities say honor killings of women are often or sometimes justified. But you know, it's interesting is it almost declares your your position on this topic. Even the way that was just said, which is to say they found that half of people don't believe in honor killings. You could also then say half of people believe. In honor killings, which is very dressed of it though. That's what it's saying into it. It's pointing out the countries in which the majority does. But even even if half of population believes that that's very troubling of a country. Yeah. It is. These are also like well, my take away from this. When I looked at the whole last with. Yeah. The country's the more modern countries have have small number that really troubled war ridden countries have a high number met to me was clear in looking at that list. That was my takeaway. I mean, it's scary and bad incredibly, I guess, the I think this is what gets frustrating for me in these conversations and probably for other people is and I think it's largely would Sam gets frustrated with. Is. Ee you have to knowledge this large amount of people that have these views. That's just a statistical fact now the more important thing that no one ever gets to. It's like the left wants to deny the less. Big messages will the vast majority of Muslims are peaceful and wonderful, and that's true. Absolutely. But then you read stuff like this, and you have to acknowledge a pretty good hefty amount of people do believe in honor killings. That's troubling. That's that's a big concern..

"And that is traditionally one of the metrics that are used most often to measure the efficacy of you know programs that are meant to keep people out of prison after they've been released back into siding and and i think that sometimes when when people see someone recidivism or that they reaffirmed ended they automatically assume kind of implicitly that they committed a similar crime or crime that's analogous to what they had done before right so if somebody committed a violent crime in in the sort of collective imagination of many americans because we don't we haven't been taught or we don't necessarily have the language to think differently about it we often think that they are doing something that is similar to what they did before but instead oftentimes people are violating parole or even probation for reasons for for you know again quote unquote crimes that are much of a much lower level and lower tier than what they initially were incarcerated for right so that you may have been released on parole and and you have you know a dime bag of marijuana on you and and then you end up back in prison and for a much longer sentence because you evaluated your parole and it doesn't matter what the nature of the crime was it's that you violated one of the conditions of your parole and so i bring that up just because i think sometimes we'll be cd's recidivism numbers people can say like oh man these people go back into society and they engage in the exact same activities and and problems that they were engaged in before but but oftentimes the things that end up putting people back in prison have to do with mental illness they have to do with the sort of drug use or abuse that that again many people do all the time and don't find themselves incarcerated four so i i just wanted to bring that to the conversation because i'm continuously reminded that that folks don't always necessarily understand that that's how recidivism works i think it reminded at people are uncomfortable naming racism is racism that sam sam talked about people that backless attract explain away the disparity marijuana arrested like they did the whole whether it's more crime they neighbor did more dangerous.

"You imagine that about a week and so that that they this was the mass for them now i haven't read what exactly caused us of them the ransomware that was supposed to hit them was called sam sam or variant of that particular ransomware and in a you know that's that's a huge company with i'm sure very huge resources and for someone to get through on that it goes to show you that these guys are very sophisticated and how they can target and get through and so what is your solution and and i keep going back to this again and again and again and that is backups you've got to have your data backed up now listen backup serve our it's not just simply go in backup you files and you're done okay from the most simple standpoint of all that would be the way you do it you would simply go in backup your data and you're done we'll keep in mind most of the stuff today now we're and so forth they seek out backups they want to find these backup so that that way if they can encrypt your data then they can equipped your backup now you have no way of recovering you had no choice but to pay them so if you're going to do backups in is simplest form which is strictly set a lot of people just hook up an extra harddrive back at the data and put it on the schedule the problem with that is if that backup devices plugged into your computer or if you using like a little networkbased backup uh device those are vulnerable you need to have more than one of those and they should be unplug when that being used if you're gonna just simply hook it up to your computer backup then disconnect that from the usb porter what you've got whatever you're using so that if you do get hit you don't want to take the chance to they're going to find that backup in encrypted as well okay so disconnect that harddrug backup disconnect come back again backup disconnect and i recommend using more than one device because of lot of listen folks if you use one single ex ferro hard harddrive and you.
