"Hi, I'm Kia Damon. I'm a Florida born chef, writer, host, and recipe developer. I served as an executive chef of a New York City restaurant at the age of 24 and became cherry bomb magazine's first culinary director at 25. I've been named one of 16 chefs changing black food in America by The New York Times and Forbes 30 under 30 in food and beverage. In 2021, I found it Kyiv is the people a budding mutual aid effort focusing on food apartheid in Brooklyn. I'll be your guest host for this month of America. This month, we're talking about taste makers, we're celebrating the black chefs, cooks, and food historians who created new food ways and preserved important culinary stories of the past. Today, we're talking about the first black nurse in the Civil War, who nurse black soldiers back to health and cook them delicious meals. Let's talk about Susie king Taylor. Susie king Taylor was born on August 6th, 1848 on a plantation in liberty county, Georgia. Susie's mother was enslaved, and so was she. But at 7 years old, Susie and two of her siblings got the opportunity to leave the plantation. They traveled to Savannah, Georgia, to live with their grandmother, a free woman. At the time in Georgia, it was illegal for black people to learn to read or write. That didn't stop Susie. And Savannah, she and her brother began attending a secret school for black children. To avoid detection, the school students would wrap their books and paper and enter the school one at a time. From a young age, Suzy used her education to help her community. She would write passes for her family and friends so they could travel at night without being arrested. In April of 1862, a year after the Civil War began, Susie left Savannah and traveled to saint Catherine's island, a community off the coast of Georgia. There, Suzy, her uncle and his family received protection from the Union Army. A few weeks later, they were taken to saint Simon's island where hundreds of black Civil War refugees were being held. On saint Simon's at only 14 years old, Suzy founded the first ever school for black people. She taught around 40 free black children during the day and their parents at night. During her time on saint Simon's, Susie's camp was often raided by confederate soldiers to capture refugees and re enslave them. The men living on the island started a militia to fight the soldiers off. When the Union Army caught wind of this, they sent a captain out to saint Simon's to recruit the men for a black regiment of the Union Army. Thus, the 33rd United States colored infantry was born. Susie joined the regiment as a laundress and soon after married Edward king an officer. She was only 15 years old, and though she started off washing clothes, she soon expanded her list of titles. When a large part of the regiment came down with a smallpox variant, Suzy, who had already been vaccinated against smallpox, became their nurse. She also took on the task of teaching the soldiers how to read. She learned how to assemble, disassemble, and shoot a gun. And she was the regiment's cook. After one particularly harrowing battle, she wanted to cook something special for the soldiers, but all she had on hand was turtle eggs and a few cans of condensed milk. She had never cooked with turtle eggs before, but she decided to try something new and ended up making a delicious custard that she served to the wounded troops. While the black soldiers in the regiment were compensated for their service, Susie was never paid for her work in the Union Army. In 1866, after the war had ended, she returned to Savannah and opened a private school for black children. She charged a dollar a month in tuition. That same year, her husband Edward died in a work accident. Soon afterwards, a free public school opened in Savannah, putting Susie out of business. She spent a few years trying to open other private schools, but most of her attempts failed. Finally, in 1872, she began working as a laundress for a wealthy white family. After a year, she became their cook. Her food was so good and won a prize for excellent cooking at the summer fair. In 1874, Susie moved to Boston, where she worked as a domestic servant. She grew to love the city, and later wrote she felt that black people were treated more fairly there than in the south. In 1879, Suzy remarried and left her job. Soon after, she helped found core 67, which helped raise money for black Civil War veterans. Susie died in 1912. Her story lives on in the books she self published in 1902 called. Reminiscences of my life in camp. It was one of the first memoirs self published by a black woman about the Civil War. All month we're talking about tastemakers. "Absolutely. We do several weddings a year, which we love to do. I have a strong background in floral designs. I love to continue to do a few weddings a year. We also have a container gardening aspect, having my husband working with me now has made a huge difference for us because there is a lot of heavy work labor that goes into that. By container garden, I mean, it's full custom container design. We'll go out to someone's house and we'll do a consultation with them and speak to them about visions that they might have just this past week we installed some large terracotta pots around someone's pool and this was after a consultation was done and I look book and a proposal sent out. We ordered and sourced containers, sourced the plant trees, shrubs, whatever it may be. And then we actually we come and we install it. So everything from start to finish, we do. And that has been a lot of fun. That part of our business is really growing, and that's exciting. Or the future plans for your flower farm. Oh, goodness. Where do I start? I think most immediately, we just want to add more gardens. So right now we've got our one garden space. I would love for that to eventually turn into perennial garden. Then on another spot kind of in front of that, put in a few more annual garden bits that we can start to rotate, planning, cover crops, really working on the soil health and then get some really nice perennial stuff to put in our current garden right now and keep that whole thing perennial garden. Would be very nice so that everything we're starting every year isn't coming from seed. Just growing, adding more gardens, planting more trees. This past year we planted. Maybe 12 or 13 eucalyptus trees of different varieties, the eucalyptus foliage is very, very popular, especially in wedding work, but it's also just such a nice addition to any sort of arrangement or bouquet that we make, possibly adding more eucalyptus trees, I'd love to plant some more Magnolia trees because everything for me has got to be dual purpose. It's got to look nice, wherever it is, but it also has to serve a purpose of being used for oral work. What about ornamental shrubs? Are you planning those two? Yeah, in fact, my favorite are hydrangeas. In all different types, when we bought this place a year ago, the first thing we did is put in a ton of limelight hydrangeas. They grow quickly and then they produce flowers on nice woody stems at a part of the season where some things in the garden are starting to slow down. If I could plant a thousand of those, I would. And I might who knows. What about trellis and cut flowers? Are you doing that? Yes, and I should be doing more, but there are always ten more tasks than what you can get to. So challenging is always on the plan, but doesn't always happen. What's the benefits to trellising? I have seen some major destruction in the years past just by an afternoon rainstorm in the summertime. You get a few gust of heavy heavy winds. Those beautiful sunflowers that are just at the peak of opening for your farmers market this weekend, they just get tackled to the ground. Sunflowers don't need a trellis, really, but anything like corral system where you put T post in the corners of the beds and just run wire or tomato twine or something around them to give them a crowd so that if the wind does come, it doesn't knock them all the way to the ground. That would be super helpful. Staying on top of that is a great idea and something I'm looking at my garden right now. I need to go. Never can get to it at all. That's exactly right. Yes. There's actually another plant that I'm growing this year ageratum. I'm growing it in several different colors, I've never grown it before and really didn't read up white as much as I should have on its growth habit because it could have definitely used a netting sort of trellis. I'm noticing that the stem, although it's getting nice and long, if it lays on the ground, it's going to take root and sort of just spread a little bit. I'm not getting a stem length on that flour that I would really like to. When I do cut it, it's a curved stem now because it's been laying down. I'm learning as I go still every day. So there's definitely could have used some sort of low trellis for sure. What are you applying to your garden this year that you learned last year? Secession planting, for sure. Even though it looks like the whole garden may be full right now, don't stop seeding for a few more weeks because I'm going to be happy in a couple of weeks that I've got these extra transplants to go in. So yeah, definitely. Keep on seating. We've already told us how your favorite plant to grow. What's your second most favorite to grow? The shiso, this Asian herb. To be honest with you, I've never even used it for cooking. I just love the way it looks so much. It has got such a beautiful two toned leaf on it. It is extremely hearty. It adds bolt and texture to a bouquet. I've never seen, or I don't have experience with another cut flower. That does quite the same thing. I planted a lot of it, and I have more seated in the greenhouse right now. That's something I've been very excited about this year. What do you look for when you're putting together okay? There's several things. I'm sure you've heard in container gardening that there are thrillers, fillers, and spillers. Well, there's something like that too when you're putting together a bouquet, especially and I'm really going to talk to like a farmer's market bouquet right now. You've got your focal flowers, which in my garden this year, and for most summer annuals, those are your big giant zinnias, those are your sunflowers in the fall, those will be the dahlias, the big showstopping focal flowers, then you've got your frills. That would be something really whimsical things, like that adrenaline I spoke about earlier. That's going to be one of the frills. It's really pretty and delicate, also cosmos, I consider those grills for the bouquet, same thing. It's real light feathery. Add some texture, some movement, some interest. The last thing is filler. That is where during herbs come in, the basils, stuff with big leaves, the she so things that are going to fill out your bouquet once you've used all the flowers that you can use for that, particular one. They'll come around and they'll make a nice collar around your bouquet and really cause the florals themselves to pop and shine. Those are my three basic aspects. So the focals, the frills and the fillers. You want to have all three of those to make a gorgeous bouquet. What have you recently learned that you didn't know regarding flower growing? The importance of a good fertilizer. This is just my experience this year. We started a brand new garden on what was forever and always a pasture. We did put down very high quality compost to help with the soil structure. In years past, when I have grown production garden, I guess where I was before I had much better soil that wasn't just a mode pasture for so many years. I have just seen a night and day difference in the plant hill, the color of the plants, the hardiness of the plants by adding a high quality organic fertilizer to the beds this year. What are you using? We are using a talented chicken manure fertilizer. I aged, I guess, and then politicized. Yeah, it comes in a bag, organic certified man, what a difference it's made. And I'm seeing such a vast difference in any garden I've ever grown, just from the addition of that high quality fertilizer. Definitely a huge lesson for the positive this year, for sure. Why'd you decide to pursue flower farming? Well, honestly, it just made sense for me. My 15 first years of my work experience were in food and beverage. In all aspects, my parents had a catering company. I worked in coffeehouses a way to tables. I worked in kitchens, everything. My husband and I were living on saint Simon's for several years, and I was working at a golf club. We did lots of events. It was just a very busy, very high end experience. I'd never been in before. We had this fantastic chef who exposed me for the first time to the farm to table movement. It was just like a lightbulb that went off in my head that I need to know more about this..

As you know, you can actually go back to the last supper and Judas would be a spy in a sense, but the point is, it's about espionage stealing secrets. Uh, pretending to be somebody else, Which is why it's so much fun. And one of the first spy, Uh, one of the first spy theatrical presentations was something called the 39 Steps, which became a film Hitchcock, one of his early films. And you know, you can look at, uh detectives like Hercule Paro. That's not really a spy. It's more of a detective sleuth trying to figure something out. But the spy goes undercover and oftentimes has to pose as somebody else. That's the big key. Let's go up to Maine and speak to Alison. Uh, I don't know where to start Request. Did you hear me? Yeah, It's really you know, so I was just wondering like Jordan. What's your favorite level with? You have a couple episodes? Well, I'm so glad because we talked about that briefly. I was a huge fan. It was also one of those shows that went from black and white season 12 color. I think after that, any episode with Michael Dunn is make a little love. Really. I mean, that was that was must see television for, you know, for five year old Seven all together. Is that right? He was brilliant. And it was just great. Yeah, I'm not going to, but I think it's about 11 or 2012. He did for the first season for the second and then it kind of dropped off. By you doubting the great Morgan White boy. Morgan. Yeah, Yeah, yeah, just in that regard, I think it was maybe 10 or 12 years. My favorite, denies the murder of spring in the first season with Dr Loveless because that was just such a great episode pretty much wiped out humanity. Weren't all the titles the night of course. Yeah, Yeah, Just like, you know, man from Uncle was the affair. And you know that kind of thing? Yeah, And I just Yeah, he was fabulous. And I like I was fascinated by even though I don't really believe it necessarily. But I've always been fascinated by the supernatural, especially in TV shows and films. And I like the ones that were kind of CBS apparently wouldn't let him go totally supernatural on Global West. So they would do ones like the night of the man in the house, which was a dream, which was just incredible with her, Hatfield We're essentially played a Dorian Gray type character, right? Yeah. And then he came back to another one with sort of zombies the night of the undead playing a different villain. And was a Greek chemistry to with Ross, Martin and Conrad. They didn't let Russ Martin do enough. And then and then later he did. I wonder how much different would have been if Michael Garrison the creator had lived because he died in a terrible accident at the end of the first season, you know, and it got I'm not sure would have gone quite as comical as it did sometimes. But I didn't like to wear wild west that stepped over into almost slapstick. Yes, it did. Sometimes when Ross Martin with you a costume and disguise, and you think the villains would just you know great. What? Who is this buffoon? You know, I mean, yeah. And even though he was always good at it, you know? Yeah. And as far as Avengers, your favorite episode is epic, right? Is that right? Morgan didn't want to. My favorite episode of the Avengers is which one epic you said the one where they're trying to remit and make them the crazy movies like they're back in the old Hollywood. I love that one. Isn't that a great one? I mean, it's so fabulous. Now that Peter Wind guard in it, who was also in another great episode of Touch of Brimstone, Of course, they'll Fire Club the infamous health are glove episode. And my two favorite Avengers, um, are actually going to cheat a little and make it a double because they're both kind of solar ones is our Disappear. Leave seven were seat is pretty much on his own. I never have but after some security incidents a few years ago we decided we needed to and so we went out and and learned proper safety and etiquette and and had a handle your guns and and go to the firing role we used to. We're not rich enough to go to a firing range anymore. in in waste money on mo but when we can we do go. I actually liked to shoot guns actually fairly competent shot. Surprisingly we want our kids to know how to use firearms to be particularly. If you're in the south. Almost everybody in the south has a firearm. And frankly i think that you as a parent should teach your children proper gun safety particularly if you live in the south because so many people do have firearms. You want your child to know what to do when they come into contact with the gun. don't pull the trigger. Don't look down the barrel and pull the trigger. It might be loaded do you. What do you do when you encounter gun. It's real easy to say. Just don't touch it but curiosity killed the cat. So your kids probably so teach. Your kids could gun safety whether you're pro second amendment or not if you despise guns and the whole world should have them. Confiscated melted down. Your kid lives in the south. Where virtually everyone has a gun. Teach your children proper gun safety etiquette. But i kind of think given the state of the country. Right now the kremlin particularly girls. Here's our first email for Maria, who listens to us in New Jersey she's asking, I read in our local paper that the abolition trails, lodging sites are nearly booked for summer 2021. And they're recommending travelers consider alternative parks and trails this summer due to anticipated problems with too many people on the trails and no capacity for lodging or shelter. Do you have some favorites or others? We should be looking at that we can consider booking now for the summer. All right? Well, that's a great question. Yes, it's January. But believe it or not, That story is true that the Appalachian Trail has basically said they would encourage you to look at alternately had to go look it up to make sure people are booking now, So even though it's January, you want to definitely get ahead of this. So I'm not sure how far you're willing to drive. But if you do want lodging highly recommend for anyone who's thinking of any of the parks that you book early, But I had a couple of I could recommend a lot, but I have a couple of suggestions for you. So the first one is the Continental Divide trail. That trail is gonna offer great trails at a fraction of the crowds. Most years. It's a really great trail system. It follows the Continental Divide of the Americas right along the Rocky Mountains, and the Traverse is five U. S. States Montana. Idaho, Wyoming, Colorado and New Mexico. And we have a trail here in the U. S called the Ice Age Trail. Believe or not. It's about 1200 Miles it runs east to West across Wisconsin. Great trail very popular in the summertime and a Katya National Park in Maine. This came up in last week's show is a good Winter park. But Robert and I have joined that park immensely in the summertime, so I would recommend that one I'd recommend Shenandoah National Park in Virginia. And, honestly, if you don't want crowds, but you want great scenery from glaciers to the green Forest. If you're willing to get on an airplane. And and do it safely and you're comfortable with this. I cannot recommend Alaska. Enough. They have many, many getting what you said. You gotta fly. God be willing to do that. But you're not going to see a lot of people and it's too wide open spot on the national parks. You know, I'm not sure Maria. How far you're willing to travel or the left. Your trip's going to be so I'm going to suggest that you also look into some of the state parks and know you asked about national parks and trails, But I'm going to tell you to look at some of the state parks. I see your New Jersey Hackle Barney State Park in Longview is known for its hiking trails. Rickets Glenn State Park out in Pennsylvania is considered one of the best. It's in Benten. It's off. I 80 It's west of Wilkes Barre. I know we have an affiliate out there so you can listen to the show if you want last summer, Mary and I, You may remember we did a live remote of the show from the water's edge resort in spot. It's up on the Connecticut coast, not far from the Rhode Island border. We spent a few days checking out some of the state parks in Connecticut state. Rocky next state park Me. Remember it East line. It was a real fine, fine, You know, In my point, you know, we frequently talk about all the national parks and for good reason. But don't overlook the state parks. They offer a number of gems as well. Totally agree, And we have almost 4000 state parks in the U. S to take. We'd like to book a short getaway, but stay in state. We live and listen to you here in Florida and big cities where the keys don't appeal to us on Lee because we've been there done that if you will, and we want something different, But because of the time of year we don't feel comfortable leaving our home state to travel somewhere else. We heard the person on your show talking about Anna Maria Island and Vero Beach. We're looking into both any other suggestions. I will simply say, you know, so we love Florida. It's a great place to areas that we really like in Florida. ST Augustine That's on the northeastern Coast. Sarasota. That's kind of in the middle of state. If you will in the western Gulf Coast, both our tourist friendly. They offer a number of terrific restaurants, excellent beaches, shopping museum's outdoor fun I could go on and on, frankly, but I know we're gonna get the breaking news successions, But I would also recommend Boca Grande. It's located on Gasparilla Island off the Gulf Coast northwest of Fort Myers. That is a beautiful, beautiful island, a great place for relaxation, beautiful beaches and great fishing. And an east of Jacksonville. It's Amelia Island, part of the Sea Islands chain of Barrier islands on the Atlantic coast of Florida. That's another great option. And honestly, I'm kinda fits in the ST Augustine theme, if you will, but I wouldn't rule out the golden miles off the coast of Georgia. I know you said Florida, but the Golden Isles off the coast of Georgia, you've got seen Simon Sea Island, Little Saint Simon's and Jekyll Island.
