"A buddy of mine on the phone. Tells me the celebrity wine here on the Ryan Scott. Being and sheriff, David rose. I'm gonna pick it up my, man. Hello, sir. How are you? My time doing better. I am. Well, man, you get all is in full swing. Atlanta live right now or tell me you're driving a Nissan truck. Oh, yeah. Nissan titan. No doubt. You'll probably nothing else. Can you do me a favor real quick, David? And I go back back a little bit here. But if you follow David Sheff, David rose on Instagram and mice and myself together, we seem like we have a fetish with a porcupine. I know this sounds weird. But can you tell people what happened? It was around this time last year you and I were sitting on a on a call on a let's call a casting call in New York City. Yes. I remember it is clear as day like it was yesterday on a casting call, and I don't know how the subject got broach for we started talking about the amazing one liners that Steve Barbie on family. And there's a video compilation of all the one liners. The one that sticks out day that we literally laughed out loud for minutes on end is the category. Was that begins with the word, pork, pork. So. One four, and they get to the sun, I believe and he says coupon and Steve is like what dumbfounded look on his state says again. Shoe pie. And you had the newsstand here's David and I in a casting call with like eighteen people. I mean, David have the smallest t shirts on our biceps are bulging everywhere we have to wear makeup on then Joan rivers did in the eighties. And and the Kardashians and here too grown ass men laughing harder than ever going at each of the coupon. Coupon or porcupine on either one of our common history. I mean, if you ever have a bad day Google Steve Harvey and coupon and there is there's nothing wrong in this universe. Nothing at all. It's an honor to have my dear friend, David rose on. We haven't had him on the show yet because he is a travel you make me look like I don't travel, and that that says a lot you see have all over. He's an endorser for the green egg. Which is amazing amazing barbecue is also Nissan titan ambassador. He's got a cigar line. I just love this guy food network star season thirteen and I wanted to talk to somebody live at the Super Bowl right now. What is it like the day leading up to it? What is the atmosphere like what are people like are? They crazy. Lad, it's like mardi gras came full force to Atlanta where the energy is electric or I told you five miles an hour drive people out partying drinking and get out. People got Rams John attached jerseys on it's just the energies, electrifying know something's about to go down and Super Bowl. It is. I mean, I'm not gonna ask you who. Are you rooting for? I'm going to ask you what you're going to be putting on on your Throwdown tomorrow. We're talking Mike l'otage. We've got let's let's talk about this guy. Fieri and yourself a bunch of you are cooking. What is this about? And what are you gonna throw down, my friend? What are you going to be cooking? Chef david. There's some out here. Like, you said both sides your Aaron. Aaron bay. We got Iago silver out here. Doing some chiller desert. Right. We also got channel Jerry, Jamie. Fox brothers operations barbecue relief and pretty much. This is the precipice of the peak. Everything tailgate where the pizza get experience. Like, no other where we got some killers says chiller food out we have about eight bakery next out here. And what's your boy is doing? I'm doing an amazing. Fall off the bone lamb belly with a it's a lamb shoe. So, you know, something simple straightforward. But yeah, those really flavors that can only be a chief by victory net grill. Did somebody dare you to say precipice? I mean that that or you've got a cake in the back of that. Nissan, titan that you're driving that you must have an Uber driving for your ass because no. Confirm Abbott recipes. What is this poor pisses the next word. Geez. Chef David rose. Join me right now you can follow him at chef David rose on Instagram. His stuff is amazing. And I watch a lot of your cooking when you were with Bob Evans, also when you're doing some things. Yeah. Talk to me about the Super Bowl in general. And we know the big game tomorrow for a lot of people as either a hassle or it's just forget it unless have fun. Do you have any tips for tomorrow that people could be doing tonight like for instance, you're doing a lamb belly which people like that? I mean, I came like you don't understand that you're talking pork belly lamb belly same cut same primary all that. But gives some tips that people can do tonight that tomorrow is just easy, breezy and fun. Definitely going ahead and seasoning your time. If you're doing stuff that caught it labor intensive light, your, you know, your brisket stuff like that start that cooling. Now, what I do a lot of the times when I do those kind of long smoke and cook things I cook it get it ready when I wrap it in aluminum foil. And then I put it in a cooler cooler guaranteed to keep it warm for five to six hours. Socialize hang out drink to that. For a while. Enjoy yourself so much. You can do now. Ahead of time. Wow. You're saying you can even smoke the meat three or four five six hours ahead of time. Rapid cool it without the ice. But keep it in a cooler to where it's insulated, man. I'll tell you what. I mean. My tip is don't get an ice just fill up your sync with beer and cover an ice. And that way, you don't have to drain the ice chest and take downstairs and wipe it out. So it doesn't get moldy. That's how lazy I am. I mean, just fill up you're saying, and then forget it, you know, or if you have a neighbor dump it over the fence, not a big deal. Also, excellent. David. Hey, we're not gonna hedge any beds here. The bet is okay. You choose a team, and I'll take I'll take the underdog on the back end and one of us we've gone out for dinner, many times has to buy dinner for the other. Who do you choose tomorrow what you're spread? I really think the Rams are gonna do it by three and a half. All right. I'll take I'll take the odds, which means I don't have to say crap. And I don't have a spread because you chose the spread. My spray will be we're going to labor to Dan because you're gonna pay for the whole meal. Fair enough. It. All right. Tom Brady's gonna bring it out. I don't know. I don't know. All I know is I'm with my friends and my family tomorrow, and you know, as much as we travel that is about just spending time with people we love, right? It really is doing something real laid back real casual and quiet up. Yeah. Exactly. In a Nissan with green egg and a keg. Forgotten the Davidoff cigar oh met Tammy, man. Well, you haven't sent me a cigar yet. So I don't know chef David rose working everybody. Follow you on Instagram and all that great stuff. They can follow me at chefs David rose on Instagram. Chef David rose on Facebook website. Chef David rose dot com and what they're using David rose at chefs, David rose. That's the Twitter prepa pit purpose. What was the word? Precipice? "To Ryan Scott on K G O eight ten. Brewing company. Finally got in the studio. I wanted the boy come here for a long time. They're they're your flagship is in Berkeley, correct. That is correct. You to look like a very cute version of sunny share up next to this Mike right there. We're we're pretty good friends sunny market over the tight all boys. I'm going to say this is smells like weed in this room. It's a good thing. It's it's definitely understandable in. We're going to get into the beer that you just open for me. But before we even get into this. You're opening your their six bay area location on the best day in the world November. I was in my birthday in San Ramon at the city sitter Bishop ranch is that correct? That is correct. The date has been moved to November eight November is the second best day of the year. That is not my birthday. But it's close enough not to disappoint. No, no, it's fine. Look, I would never put a date on it. You know, you're opening in November. Yeah. That that that it is a construction project it most definitely is talk to me about fuel were brewing. Because it's it's it's a staple of my house. I've been drinking for a long time. You guys do an amazing job, but get into the logistics. How how'd you how you got started in the fact that number six on his way? Well, so basically, we're almost four years old we opened up it'll be four years in February of fifteen and I've been with the company since day one and Jackson with the company for what almost three and a half years pretty much all just been with the company a few minutes longer than he has as quick growth, by the way about the math. I mean, it beer has really. I mean beers surpassing everything. Yeah. It's crazy. I mean, just it's been an awesome rollercoaster ride, but you know, four years ago. Berry. Brayden and Alex tweet those are the two main owners decided to open a brewery, and Alex is the head brewer. He's just a, you know, a mad scientist. He just he's amazing. It what he does. And so is berry, but you know, basically, he came from a couple of breweries down in San Diego for ballast point and also for modern times, and you know, basically. Hebrews scoping. He grapefruits copen is his creation. So he's you know, he kinda got famous for that. But you know, basically for years ago when they opened up field work. You know is the idea was to just serve the freshest speier, you know, we don't have any flagship beers. So we're constantly just rotating through all the stuff as somebody in. And this is what I know about you. If you love something last year. Well, yeah. So it's kind of it's kind of like you laugh your Jackson. Yeah. So I mean, it's like it's like the solar system. So some some styles and some beers. Come. They come around frequently like, you know, like mercury Venus. And then there's some that are like once a year, and they're like, Neptune Pluto. But I mean, there's there's quite a few. Let's say IV as that, you know, they do come around frequently and you'll see those, you know, maybe every other month, but it's it's cool man because you know, like with our accounts and also with the tap room's. You know, the customers they're like, you know, they'll see like, let's say pulp comeback awesome. I love that beer. And then it just keeps things fresh because then it's like for, you know, for the accounts that are getting like the freshest CPA every week or freshest logger or whatever style accounts getting. But it's it's awesome. Because it's just you never know what to expect with this company. It's like, you know, there's always something new coming out, and Alex is always create new recipes along with the the Bruce staff, so. It's fun. It keeps things interesting. It does. And it keeps the fans hungry, and it's almost like a new show all the time. I would think is really fun. And this is a rotation that you don't see a lot. And I think that's what really makes you guys stand out. And you could see the growth the fact that number six in what five years? Yeah. So I mean, you know, Berkeley's the flagship obviously and then Sacramento open next, right? A little over two years ago. And then Napa was followed just a few months after that. Right. And then San Mateo and the Monterey. So. San ramon. I'm really excited about because I actually live out in danville. And and bury the owner is is families out there. He's from out there. But it's cool because San Ramon is like is this like town that doesn't have like a main street like downtown how like I don't know if you're familiar with like area, but like Now, Dan villes got heart street, Pleasanton. Scott main street, you know, etc. But like the city centers is going to be an awesome, like just hub and for San Ramon. And and you know, people are talking about it and they're excited about it. And it's going to be awesome. Just for that. You know that six eighty corridor. Well, let's talk about that that new growth, and this is the next one. I mean, are the CDs calling you the growth seems like you start in Berkeley and go boom, Sacramento. I mean, like this is not like list, they close in our three mile demographic here. I mean, you you're you're going to wear. I mean, let's let's let's face it. The European European style beer gardens are hot. I mean people love that in. That's what you're doing San Mateo. Is that correct absolutely than San Mateo and Monterey. Does that too? Right. Exactly. Yeah. So you're paying attention to the styles and how people like to. Drink in the hangouts. But I mean this new location. How did this come about? Let's it's interesting that you ask that a lot of people really are. Absolutely. I'm a lot of people really sort of get. Are interested in what's going to be the new hot thing and craft beer in terms of style. We're focusing a little bit more on. You know, how consumers get their beer, and that's where the tapper model kind of comes around. You know, we're able to sort of, you know, supplier, selves train our staff and keep the beers rotating at the rate that honestly people really identify with. And that means everything is fresh. You know, there's this bureau were you know, we poured right here was brewed two weeks ago. It's never going to get much older than that. Unless you just don't drink fast enough. Well, and you know in the bay area has been pretty pretty pretty good at that. So when we when we you know in terms of specific tap room's. We look to go into markets that aren't as saturated. Sure Sacramento is an up and coming market when we first great market, huge your town, really popular laws. My wife's from we go. Visit you guys all the time. And we have a great little tap there. And that was her first beachhead out a satellite taproom Napa the Oxfam market. Napa is a huge wine country not a lot of beer there. And so we were an early edition for the people that are in our Napa regulars are great. You know, they can you know, compared to all the taverns we have people in there five days a week. Well, let's talk about the growth of beer where it's going see Serono and all that great stuff when we come back and want to get into the beers that you guys brought get into. I mean, the ninety eighth the certificate of ce-ceremony certification assise around people who who are you talking about is this a sausage maker is this. We're gonna talk about all that great stuff and more of the science of beer and the freshness. When they started putting the dates on the beer, we're like what skunk is who when we come back. The ryen Scott show on cagey. Oh, hi. It's Jamie, progressive's employee of.

"It's called Guler Serey. They'll convert the metric to for you to be able to get it. And wait or also just in cups for you. But can you just give it a we beating this butter and adding the sugar talk to me about the methodology of how we're making the short shortbread. So you got room temperature butter room. Temp why is that because it combines with your sugar you're gonna make it nice light and fluffy. So that is the key to not having a pebble biscuit per se because when you make a biscuit, what would you want with the butter the butter you want it to be cold, right? Like chunks of butter in there. But you want us really all homogeneous. You wanted all incorporated you want it all together. Then you're gonna add your your wedding gradients. Is there any egg in this? I don't use mine. No, not even a white. Not even the white and mine, really just me. Okay. That's good. Do that. I have you here bacon. Scones? I add a lot of other things but not for this one. But you hear what you just said. We just went from a simple from biscuit to a cookie to a Scone with basically the same ingredients. But the different technique for technique. This is not hard. Now. It's all related if you can make one you can definitely make the other one. Now, let's finish this short DOE here. So we've got the door. We. I don't want to beat it. Too much wants to just come together. You take it out. Maybe paddled together needed a couple of times. And that's it. You put it in the fridge. You wanna let it show for a couple of hours. And then you have so many options with this. You can use this as a target though, you can use this just for the cookie cut it out and make stars or bells or reindeer do all kinds of different things. Once you roll it out, and you have this one Dow with all these multiple uses it's great, and you can stick it in the freezer. You can freeze it for like three months, you can frigid for anywhere up to a week as long as well you can make pop tarts from this. You can you can really make anything from. You know, what I love about this recipe of yours? Is you make the crust? If you wanted to use it as a cross and then punch all your little ornaments on the outside. And then as you make your tart to put the ornaments or the rounds of the stars or the mass ups. Crip right. If you can't cripple a pie crust. You turn around just punch out all stars little rounds. I've done little squares. You just don't call me that on air here. Big square. Queue the Christmas music. We're gonna put this on the chef Ryan Scott web page, which is at Facebook. Or what we're gonna do is walls have site. Turn up. This Mavericks.

"Leslie, no doing things like that. Like using one zero for a number of things, I do always do a bunch of Prado. So I'll do three or four those. I'll put some of the shows put them in the freezer. Get that already. I'll start with simple stuff. Like, for instance. I love shortbread short breads great. You could use it as a tar crest. You can use it as hooky you roll it out. You can have it sugar cookie. So again, you can put all that stuff away. So you're telling me, what one recipe could do a lot of things for the whole is actually one of my favorite recipe because I love trick quick bread is great. Because what is it quick quick bread is a banana bread is keen per se, but also pound cake comes into that category. And Ryan Scott happens to have a yogurt pound cake. Super simple. You ingredients. You can throw it together very quickly. You can make a couple of those. You can freeze them. You can actually fridge them you pull them out. And suddenly you have a base for say a a fruit. Shortcake a trifle a trifle. That's one of my favorites. You could mix that stuff up all day long. A little lemon curd with this. Really great give you a trick that there's a place called a traitor and finishes with the Joe's and they sell four ounce bottles of Ardy. Pre Don lemon curd to fifty for a bottle.
