"Notes so probably probably my something that happens all the time kind of like you referenced your to June's. You find a new wine. You taste it. You love it. Maybe not not take a picture but just you can remember because when you're at the party take notes of what you drank because day to day. You probably drink more wine than you think yeah but. Do you remember what it was that you enjoyed. I can remember I oh. I can't remember the flavor that I liked so I think that you know. I think that that's probably the best way because to learn wine can be expensive so if you do start took like man. I KINDA WANNA take up wine first and foremost email or text your friends and family who because the best way to do to start a little group because that way you can eat share the cost of a bottle. I mean who wants to be in a book club right. I'd much rather be in a wind group. Maybe on Sunday evening you each get together. Say they're saddened view you bring a bottle of wine taste and then he just learned seven different bottles. This is such a better idea than a book. I like tease the idea of doing a Sunday scariest book club and then I realized I was like well. You don't read nearly enough to do this. I just need to start doing the the wine clubs getting people into it. There is I mean. It seems like a steep learning curve. What can I do if I go to a vineyard or a restaurant Strat with extensive mindless. What's something that I can do in order to kind of. Make it easier on me. I know a lot of times. They say like drink what you like but sometimes I don't even know Y. I like something I will taste a glass of Cabernet and I probably won't be able to differentiate it from any other cabinet on the menu yes that's. That's something that you need to take take a moment say for instance you like Cabernet. Okay ask yourself what is Cabernet and you'd find out. It's probably red wine. That's full-body so and say okay. We'll I love full. Bodied Red Wines so for instance when we have a lot of guests come in the restaurant. I WANNA Glaspie Griego. They're telling you more than that. They're telling you they I love Crisp on Oak White. Lines light bodied so you can guide them to Moose. Get you can guide them to other wines. Go so I would say when you start to drink and you're about to travel really find and out what categories of wine you like that. Will you go to a winery in NAPA or restaurant. You can be getting really right down to the brass tacks. Can I ask you a couple of different types of wine a and what you could assume on someone's taste based on those if they tell you that they like that at a restaurant so if somebody says like Merlot what assumptions do you have regarding their flavor so someone that's funny because maybe not for this podcast but there's there's some sometimes when somebody tells you what varietal they like you can make assumptions based on their personality personality and kind of certain trends within within within society but I would say Merlot to me. I love Merlot Paul Giamati God awesome. I love that show sideways. You've ruined he ruined Merlot but but that was the breakout role. I Still Watch that movie if not seen sideways even for non wikileaks. It was pretty hilarious area but to me. That's a medium bodied wine. It's agreeable right. I mean it's not gonNA be overwhelmingly dry. It's not gonNA be sweet. Merlot is really good. It's just like I still try to circa ninety nine two thousand. I couldn't give away Chianti yeah trying to sell Chianti. It was ruined as well and the reputation. I mean those things matter same thing with Merlot happening. Oh three or four. It's slowly starting to come back but it kills me when people like I'll take back Mullebeck mullebeck but they won't even think to look hello. I went to a vineyard. It was O'Brien in Napa last summer and when they brought up the Merloz I was like well I mean I mean like I've only seen sideways. I don't know anything about why and I was like I don't want my love. She skipped this and then we tried it and I was like Oh that was actually my favorite wine and so now we signed up for that club and we get that in the mail and so I I kind of eight my words and I'm like yeah. He just completely wronged Merlot it yes and NAPA and you're outta tasting room or you're at a wine list. Say a restaurant has ten cabin as and ten lows and they're all current vintage younger meaning I'd much rather drink Merlot Cabernet. Why is that it just to me. I think it's going to be a and that's a question that we always a really a challenge not so much a question. That is some liaison wind directors. How do we build in age and vintage depth indoor programs. I mean it's kind of a puzzle. It seems like you would have to be very difficult to do so the one hundred percent and that varies state to State County by county the TB they regulate alcohol in the country and they make it very difficult because most wine sold into restaurants through distribution is it's the wineries current offerings and wine not only ages for quite a while if you buy the right wine but it gets better and develop zoo you so for me if I'm forced to drink young wine. I'd rather drink merlot than Cabernet. Okay noted yeah. I completely eaten my words. When it comes to were low. I've never liked talk. Shit on it or anything like that but I definitely had this stigma in my had on how I should feel about it. say that somebody is going to a tasting and they. WanNa sound a little smarter than they are. Do you have any terms or anything they could add to their vocabulary that might make the people around them think think Oh. They kind of know something so. Is this amongst friends or maybe they're at a tasting that they're actually trade with wine professionals there. Let's say friends. Let's say they're just trying to impress their friends and so they can say something that might not be totally accurate and somebody might roll their eyes if they actually no. I think it's good to throw out the word Tannin's curve. I love when you're drinking red wine. You know in in restaurants when we go to the table. A lot of guests will say dry. No Tannin is at that sensation. It's found in skins skins and seeds and a lot of times it will literally bond. US alive on dry out your mouth okay or almost like an over steep T- across some people love that sensation yeah other other don't so if you're drinking cabernet or Rollo or Marone and it's Super Dry Sim. That's a very very tannock red wine. What about when it comes to legs. Everyone talks about the legs when they swirl it in another. I would assume that most people don't even know why they're swirling in the first place but I still do it. I don't know I'm sorry I mean just to get it. A little more aerated plea yet involuntary reaction you pick up a glass. You have to swirl it. Th The it is sure it is it is too arid area to put a lot of times you can learn a hell of a lot about a wine without even tasting it so and and I urge all the time when I'm teaching classes or with friends. Your first first instinct is to pick up the glass swirl taster right away but look at it for a few moments and smell it because the legs can tell you if there is maybe residual sugar in the line if it's going to be higher or lower alcohol and then that can help guide you to what grape it is or is it grown in warm part of the world cold part of the world. are those legs clear more. Can you not see through them is. They're actually color cling to the glass okay. I did not realize there was so much to it. I learned learn a lot. I had this assumption for my entire life that like just the the longer that the legs stood there the better the wireless and I would assume that's probably not that accurate no you you could argue a case that could be accurate but really what we're looking for is its surface tension right. I mean are those legs moving slowly down the glass yeah are they thinner they thick and from that you could probably make a pretty good educated. Guess before you even taste the wine. Are you a red wine or white. One guy or is it completely situational yeah. I think it's so situational I would say I default to white wine for sure yeah okay. Did you default that. When you're living in Chicago Haga or has living we talked about this before we recorded that people in Texas do not mind drinking a hearty white or red wine. When it's ninety five degrees outside my goodness it is and I don't know it was a very disturbing thing happened this morning. I was listening to the radio and the host is like it is officially summer and officially fall because we're now in the mid nineties and they were exciting. I was waiting for him to laugh or for it to be a joke. I'm like this is crazy. This is just a pressing we are celebrating the arrival of fall with ninety four degrees. Luckily I started drinking white wine and preferring white wine years and years ago. I have been prepared for my transition down to Texas. What's your favorite varietal white my favorite varietal white probably gruner about leaner it changes from time to time and like you said situational a lot with what I'm eating depending on the Diet but right now Austrian so the main white grape of Austria okay gruner veld L. Leaner. I love that okay. I can't confidently say whether or not I've had one who knows maybe I haven't passed and we have them all over McGuire Mormon restaurants. What's this guy actually at June's and I would say I mean go for it. You're never gonNA spend that much money on it. They're typically going to be medium. Bodied coked and it especially with food. They're not sweet. a lot of people think they're sweet because they're bottled and that kind of recent looking shaped bottle but it's definitely taking a chance on a lot of white wines have a bad reputation for being. I'd like to sweet for people and people will complain about that. Whether it's fair or not I mean I know a lot of people that just won't Drink Chardonnay and when I've tasted chardonnays I'm like actually these are some of my eye gravitate towards those more than a lot of other things do. Do you think that white wine among amateur wine tasters has some kind of bad reputation reputation or is that just made up in my head you know I think I think you're right. I think that there's a perc- perceive lack of value for whatever reason I think that when when you're an amateur wine taste or you just think red wine is more expensive and yet you're getting more for your dollar two hundred percents mentality that I had when I first started like I saw some. I'm for the first time I was like oh I got it like I drink red wines. If I WANNA look cool right but that's not really how it goes but all those Geeks I mean a lot of Psalm geeks like we all like we'll love white wine. Oh yeah really Chris pie acid white wine whether it be like Shannon Block or Valvoline or Chablis Chardonnay from France but chardonnays a tricky one we we struggle with it all the time because they're there to camps you either love on. OCHT light refreshing Chardonnay or were you like the Aqui buttery Chardonnay. That's what you always hear. People say who told difficult so buttery yeah if somebody is planning the trip a lot of people that listen to this podcast they're kind of you know in their mid to late twenties they're traveling. They like to get into wine. Where where would you recommend that they go. If they're going to go somewhere in the United States to do a wine tour one trip I would one hundred percent say Oregon. That's will admit valley. That's where I'm so interested by and have not gone. It's I I will say this. It's not set up for tourism. I would say as much as Napa Valley.

We don't really duplicate a lot of yeah so in the wind director role you might have to create a menu for small tex-mex restaurant like Joe ends and then maybe a more serious program like jefferies which could have seven hundred selections. Joanne's might have twenty yeah. We have to put the same thought into each and every one of those wines. Do you have to have any certification or anything like that in order ordered to do it that is that changes every year. I I would say if you're asking that question pre two thousand eight two thousand nine probably not who the the the certification process has become more and more popular over the last few years doodoo certain characters running to prominence also some Netflix shows that came out. You've probably heard of but you do not the answer is no I think from what I've seen in different restaurants and it really all oh come from the ownership I would say experience experience work. Ethic plays into that as well certifications are certainly important but I don't think think if you're an aspiring wind director you want to focus solely on those certifications. Have you gotten certified for anything or is that something that you've kind of. Just you know. Put Your experience in front of you. I I did actually along the way I did go through. Both the two big certification bodies are the guild of master sommeliers. which is that's how you become a master sommelier? Oh Yea the second being. What wine and spirits education trust and that is master of wine program so I went through both of those and got the certified or find some and then I went through jeeze. Maybe the advanced level at the W. set okay. I can't even imagine going through like any psalm exam. I have terrible pallet anyway.
