Operator of AMP Now out there in Fitchburg. It's a big story in the park world and his world class grower. Sean is on the line as well. Frank. Why did you choose Fitchburg? So when when marijuana became legal in Massachusetts, and we decided to get in the business we had we had to identify a community. It was welcoming to growing cannabis community that had available property in the workforce. Uh, unavailable workforce in Fitchburg just was the perfect place. The mayor in the in the entire staff of Pittsburgh will welcoming. They assisted us through the process through the Cannabis Commission in Massachusetts. And there was a perfect perfect building available to all the stars just lined up for our location in Fitchburg. Did you meet with any resistance at all from the town from people living in the community, actually, and this is crazy, But we got zero resistance. We had community outreach meetings, which is mandatory by the state. We had not one person come and speak in opposition of us. We had the mayor's office speaking a favor. We have the city Council speaking our favor. It was a seamless process going through this in Fitchburg. I'm thinking. Oh, yeah. We always mail out some samples, and it's a lock. You get everybody on your side. I'm just saying, Shawn, that was a joke, Sean. I'm lapping Frank from the business side of things. How many people are on staff down there in Fitchburg? So we currently have probably 30 employees. Once we're in full production, which is within the next few months will have in that one location. We'll have between 50 and 60 employees both in cultivation, processing extraction in the commercial kitchen. And in the dispensary Now you mentioned the edibles might be that thing down the road. You already selling animals, too. So currently we are selling edibles. We're selling Gummies were selling taffy, chocolate, caramel, all kinds of edibles. None of them that we have made ourselves. Okay. But starting right at the end of this year in beginning of January, the first harvest of our own products that Shawn has been had the has been babying daily. Music to them and talking to these plants. We will have our own raw material, and we will then begin off full line of our own edibles. That will be marketing. Okay, Sean on that note, I've got to go right to you. Because Frank just said, you know you're playing music for the plants. I've always heard that works. Does it work with marijuana plants? It does. There's a lot of so I You know, I lean on the science aspect of cannabis. But there are certain you know, kind of wives, tales, things where people would play guitars for plants people would sing to them. It took us approximately 3.5 years from the day we incorporated and began the process of getting the permits from Massachusetts until we actually put a single seed in the ground. Yeah, that's amazing process. It's a process that a lot of other groups have have started down the road and have turned around and just they just They've called it a day and shut on a technical. Very, very, very difficult. A technical question, Sean for you also when it first broke, you know, I really didn't understand. People are always saying No. You need to try it because you could get a certain part. That will be good for anxiety. You could get another pot that makes you happy and upbeat. You know, there was like a pot for everything. How do you grow the different variety of parts that will provide the different variety of results. Right So as a as a grower, what happened in the consideration is that they're you know these exact things. I mean, a lot of people were totally shut in. We're seeing more and more people out and about now, But how are things going at a sweet basil business Wise for you guys Right now The good days are still pretty good. You know, I'd say like the good days are as good as they were. And they actually, you know, kind of will you into a feeling of normality? But then the bad days are they remind you that? Yeah, you're actually in a worldwide pandemic. And you know whether your staff is feeling overwhelmed and freaking out a little bit. Or sometimes I'm no one freaking out. Yeah. Are you know the customers just don't feel safe Just out of nowhere. It just seemed like Thing or you get a big gust of wind and applause of number alone. Did you have to follow a lot of people, David? Not really. I'd say like a few. A few of the people like furloughed themselves right off the bat when they just didn't feel safe. Didn't know there were their health was compromised, or, you know, like where they lived at home with somebody elderly that they didn't want to compromise or, you know it. Just it didn't. There wasn't really anybody. There weren't many people. I shouldn't say that didn't want to be furloughed. You know, there was like kind of a voluntary unemployment where you know there's people that are starting to feel more comfortable coming back, and I'm like You know, it's almost like I don't know, like a level of seduction like I have to assure them that so Yeah, yeah, I have to let you know when they have to dabble. They might come in to eat a little bit. See how they feel. Well, then we'll come into work. One of these stories now is the fact that the weather is getting colder. Are you going to be ready for that to try to maintain outdoor dining to some degree? I'm trying. I feel like it's um it's it's ah. I don't. I'm not sure how I want to go about it. I feel like every time I have a game plan during the pandemic, like they'll change the laws or they'll change the way you know. It's just a pedestrian walkway for the whole street of Moody Street. That was a big story when it broke, but that they were closing down Booty Street, actually good friend of mine. Alex owns and operates Moody's Delhi and the back room and everything right there on Moody Street. So that was a big story closing down mode because they wanted to do that in the north end, but Just couldn't do it because it would have been a fire hazard. Yeah, I mean, it's it's look. I mean, it just looks natural like they should do that every year and maybe well, they what they did when they when they posted it on Facebook, and they used the facade of Bolani. As they're as the actual like poster child for like, like the front page of their Facebook was the whole spread of the front side of Blondie, and I was like, that's pretty cool. It's like you know some some advertising that was helpful, but were caused at the time. Yeah. You know contentedly where they were, and And so, but I had. You know, I had a staff that was ready to go in Needham. And so we basically just like everybody's trained up and that you know, as far as like during the pandemic, it seems like Italian food and comfort food in general, where you know the types of Dishes that were being like the best received were like, you know, it seemed like fried chicken and general gods. Actually, his food is so good at sweet basil, but leave it to you so to be clear. Modi Street is the second sweet basil now. Yeah. No, we're going to make it officially sweet Basil on Moody. So First give us a little bit of background where the lobster trap is. Now. What are you guys offering in terms of of feeding? And and what are some changes that you had? Well, Whereas Faras menu we're offering our full summer menu. Ah, you know, we also have a full service fish market located in the same building of the restaurant. You know, we're open daily. As far as getting creative. We did. No to Ah, In the beginning of June, there we were able to open up the patio and ah kind of extended and give us a little extra seating area. We did, uh, put up some jersey barriers along the street in the front of our park in law and, ah, you know, spruce it up a little bit and make it look as pretty as we can and We're able to add about five more tables in the parking lot just adjacent to our you know, regular patio going to here and so great that you're able to offer your full menu of which I know is pretty inventive, creative and extensive. On DH. Certainly the market as well because I broke, you know, maybe are doing a little bit more dining in, and they they typically are. They could both come to eat with you and then and then bring something home for the next day. Can you talk to us about the cape in general? Take us a little bit outside of your establishment. Are you guys a little bit more insulated because you are You know your last season islands and in some ways Definitely, you know, Unfortunately, we and even set aside and talk it and, ah, the vineyard, even guys and Orleans and, well, Feli. Friends of mine in the business are Having a real hard time with staffing. Fortunately for us because we're opening around, we have a solid, you know, core base of full time employees. Uh, we did get all of our regular employees back. Plus, you know, all of our summer. Kids were chomping at the bit to get in there because they all get sent home from college early. The kids they're usually in the middle of May. We're calling me April. Firstly, when can I start working? So feeling? Ah, little bit insulated? Ah. As you said, compared to other restaurants that's great to hear. And can you tell us a little bit about the response from customers? Are you feeling like people are are are are more anxious than you would imagine what calm than you'd imagine, are grateful to be out. What is your sense of your customer of the overall consensus majority? 96 97% of the people Are very especially people live right in town and born and found a sandwich in the core customer base. They're all grateful, thankful that were open. We're thankful to have them in their support. Most people that are coming out just like they set out on the table. They order drink, they get an advertiser, and then they go. Wait actually feel little bit normal for a few minutes. Um, we are again. You know, a little bit of some people. You know, everybody thinks everything is going to be perfect. We're trying the best we can every day, but we do get Get a couple people every week. A lot of people are grabbing something at the cash register and, you know, sitting outside but it goes hand in hand with this kind of weather. You know, we do. Fresh fresh juices that are refreshing and these people that are packed their huge They're filling and cool. You know, cool off smoothies, and we have a gourmet toast. So you know, we got a really nice menu, but ah, you know, just a matter of getting people to come out now, after feeling comfortable with that Coben and all that. So you say Gourmet toast. I'm guessing avocado toast. Yeah. Avocado Dawn there. We got Greek toast. We have new teller. We have a tomato burrata. Um, we make our own peanut butter. We gotta peanut butter toast their huge Billy there. Ah, actually way deal with pm Ferdowsi. Quite a better boy and, you know, see Bacon company where equality is the tradition? You know, you know, it s o. This concept. Was it yours or did it already exist and you jumped on board? So we kind of took a little bit of a few different context. There's people are familiar with pressed in Burlington, Um, And then there's some juice bars that are just kind of like small juice bars that just just ew juices, So I kind of You know, pick pick and choose the best of what I liked and left out What I didn't like from these places and kind of put it all together, So it's a bit of a hybrid. It's it's amazing to me so now that you're in it was I overestimating or underestimating the hours and the work. I think you are spot on. I think they're spot on. I mean, I'm there every day. Um, you know, as an owner, which you know, a lot of people don't I mean, they just, you know, they just hire staff and all that, and that's on top of having a full time general manager, assistant manager and we have about 20 people on staff. Wow. You know that airline workers. There's probably about 10 to 12 people on any any given time. And the work that I'm doing behind the scenes is never ending. You know what you have to do all the ordering right? Yes or general manager is he ordering, But I'm working a lot of research and kind of trend And, you know, then looking at the numbers and all that. I mean the numbers and all that honesty that's boring to me. I'm enjoying doing kind of menu creation coming up with, like, you know, cool new smoothies and things like that. I love doing that. Well, you're dead on man it its countless hours, you know? Well, I've had you on food for thought. Now you have to let me bring the cameras in and get you on dining playbook. About 20% of them have any type of capability outside and some of them, you know, have just a few sights and sit in chairs outside. So what scientists in anticipation of that? Well, actually way we're fight. We filed a bill to try and use outdoors is a life preserver. You know something we'd be indoors to stop but with restricted capacities, so that bill was going is going to the Legislature. But the governor passing an emergency bill this week. On Monday that would allow the entire process to permit outdoor seating to be streamlined. Yeah, take it away from a back and forth between city town states and butters. On the ABC. So, uh, cities and towns of working aggressively to figure out with owners how to bring it outside.
