"To Rice. Hi, Michael. Hi. How are you? I'm good. I'm so happy that you're here with us. So let's talk about rice in the South. Do we know when it arrived and how? Yeah, it shows up in various places. In the 16 eighties. We know that in Virginia on the James River There are Africans who are Growing rice on the James and it's probably because Rice in the seed form arrived on slave ships. That's probably sort of in the zone. But we do know that African race a Rezek lab Arema, which was not commercially viable. Which was indigenous to West Africa. You can also call it I don't Americana, um, Mexican race coming from the African presence in Mexico. You can call it you know Brazilian rice in some cases. You can call it tomato Palau. Per Lu Pirlo is the right word, and he's he's even been called Mlada Rice. It shows you something. But red rice is I would call it the granddaughter of benediction and and travel gin. And GLF RICE in West Africa. All of which, you know, I have to admit our contemporary words for a type of dish has been around for quite some time. But probably did not achieve sort of like a name and a recipe until after colonialism. And that's so important to keep in mind is that not everything was named and claimed. Before the coming of the Europeans. You know, people didn't didn't always categorized their world in the same terms. Which people conveniently do so today. And in Western culture. This is African culture and African culture. It's a very different thing about how you talk about food and what goes in and where, but inevitably Red rice contains tomatoes, maybe tomato paste in a contemporary recipe bell pepper and onion, which is for us in the Afro Atlantic world. Either that or hot peppers is our was like our food Trinity. That's like the base that goes into a lot of things. Sometimes we talk about garlic. Sometimes we talk about Hillary and and other elements. But it's the tomatoes, the peppers and the onions that really sort of signify that African presence. Can you take me through the dish? How you make it and and share? Um The history of different ingredients within it, but also its meaning for you. I know that You've done a lot of work to figure out where your family lies in Africa. And I know that your grandmother made this dish, so take.

It's wonderful farmland of great rivers but It is also criss crossed with canals and vineyards. It is it is while flat It is not the easiest terrain to traverse and the po river is of course the the most dominant of the river lines that can only be crossed in certain places or by barges okay. That's very comprehensive. "Want to just talk about the Philippines for a minute when I was six and seven and eight years old. I I lived in the Philippines 66 through 68. My dad was Navy intelligence. Uh, And Subic Bay. Yeah. What I want to say is, uh You know, From there, we moved to hold any Georgia in the middle of segregation and busing. And, uh, you know, I've told stories to my classmates and a teacher of Of pythons and, um you know, snakes and being chased by monkeys. And along the Po River. And all these elaborate stories of what? You know what I went through the typhoon there? Yeah, I went to the earthquake that destroyed Manila. And these were my experiences, and I came back to Albany, Georgia, if you know anything about all of any backwoods Albany, Georgia back then. And speaking another language and telling elaborate story. So everybody thought I was nuts. Nobody understood me. You picked up the Gallic while you were there. I I picked up something Galligan to this day. I'm 60 years old, and I still remember some of it. You're well, I do, too. Uh, first thing, uh, toothpaste is perhaps ident. And any soda is a Coca Cola. I remember two words specifically. Yes, yes, and the little kids around me saying Americano Americano. Give me 10 Centavo Americano. If first thing it's I'm glad you brought that up, and then you go back to Georgia, or we deal with race issues here in America. And in the Philippines for those who don't know. And the typhoon would pass underneath You. Literally, but driving up that road. No, you've never lived till you've gone up the side of a mountain like that. Where you have these terrorists is of rice Patties, Right? Patties everywhere. Beautiful, beautiful. It was a beautiful drive and you sit back and look at it Now. Would I ever make that drive on purpose in a Chevy Monza? With drum brakes. And the answer is there's no way anybody in their right mind would ever make that trip today. So no, But it was absolutely just gorgeous. And I have so many memories from the Philippines, So I really related to what you were talking about earlier and again. My only question was a They were our allies and one day I told the story. A couple weeks ago, the military police came out to the house. As we lived in Angela's The first year took us on base because the Hawks that come out of the mountains and you may or may not know, but being on the Air Force base if you wanted to buy nice stuff. You had to rent a limo on the air Force base and go to Subic Bay because the Navy always had the nicest stuff because it came in on your ships. So going to the P X and all that at Subic Bay lot nicer stuff than we had at Clark. So, um Yeah, There was inter service rivalry back then. But the reason you had to rent the limousine to go from Clark Subic Bay, which wasn't that far because of the guerrillas in the mountains. Yeah, we went actually, we actually went up to the degree toe village. Which was a no, No, We weren't supposed to go up to the knee Retail village, but my dad insisted, And that was an experience as well. Well, no, we had we had one on the base. The king of the degree does. He was actually on Clark Air Force Base along with their village. I wondered what happened to him. For those of you don't know. Those are the Filipino Pygmies. And they have been huge allies of the American forces during the Second World War, and so we gave them protection because Filipinos didn't particularly care for the Pygmies in their mix. Well, No, I wouldn't met King Alfonso and everything was in high school or junior high. So that was just what it was. You talked about the open sewer and you know when you drove across The Longo pool along the Po River into Subic Bay. Um the soldiers, sailors would throw coins into the river. And all the young men would dive into the river to find the coins at the bottom. The problem was all of their sewage. Went into that river. But that's also the river where they wash their clothes and got their drinking water. So back in that it was not sanitary bags. Jeff the open sewers on the that ran in front of all of our houses off base. When it rained heavy and the monsoons were heavy rain. It went all over the roads. It was everywhere and and again in America. We complain maybe sometimes too much, although some complaints of legitimate go live in a place like the Philippines for a year. And come back and see if you think that we're really slacking that much. I agree. I like you said. I completely agree with you that every American needs to go live in a third world country for a year. Absolutely. And these were nice people. I enjoyed the stay there. They were nice people There were hardworking, but they they weren't given education, which is what it takes to get ahead and you would think that after six decades under our stewardship They would have been equal to or better than the Japanese. And they weren't. That was the question. I asked, and my dad never forgave me for asking that question. Because it required an answer. He didn't want to give me Yeah, I love the Philippines. But my real question here is my wife bought 22 years ago. From the best. So the best Lexus dealer in Dallas, she bought a Lexus LX 4 50. Okay? She still she still drives that Lexus LX 4 50 today and it has 350 something 1000 miles on it. Yeah, I'm high my leads to Jeff so she won't get rid of it. Okay, so, but she's still your life, right? I was actually in Italy in the Porter Valley, and I just loved it Now. I mean, and I did, And I do really believe there are wonderful Lambert's gets out there. And it's a little bit of a for gotten category and it and going back to your story. You know, wine is also contextual. And it is always true that like if you have it in the Po River Valley, you have an amazing trip. And you you know you you drink it there. You're like this is the best wine I've ever had in my life. So But, you know, lambrusco. It got kind of beaten down by, um what you know what the good producers in a region called the Red Coca Cola approached the lambrusco, which is Sweet and just not very interesting and through mass produced on a huge scale and, um, and that you know that still exists. But what you've got are some smaller producers like Leni's who I wrote about Malini family fly, and I I wrote about in December and others like men to Geum right day and plate. Okay, Charlie, um, who makes Dry, sparkling red wines. Miami Let Flem Briscoe traditionally is a dry wine. And if I think it's one of the ultimate dinner party wines because it pairs as a red wine would cause it is a red wine. It does happen and sad bubbles in it. And his gorgeous with food and also you pour it for people and they look at their glass. And they're like, What is this red like purple? He read. It's got bubbles in it, And then you take a sip, and then they eat and they think This is amazing. I've never heard this. What is this limber staple? And you know the next thing that you know they're finding out where you bought it, so they conserve it. Their next dinner party and I just think it's you know, it's a It's a little bit of a forgotten category and therefore it's also not that expensive and you know that so it could be hard to find any individual producer in one given wine shop, But if you I mean, and this is my general advice about buying wine anyway is if you you know if you find a good store with people who will talk to you and listen to what you like and suggest things that's the best help you can get and see if they have good, you know, Artisanal Ambrose going And as for what you're talking like 22 bucks. It's not a crazy, expensive bottle of wine. And and I think you'll really be mean You won't because you've been in the Po River Valley eating Italian food. Well, while you were there with lamb Briscoe, you know what it is how it works with food, but anybody out there? I mean, it's just It's a magical, you know, food, wine and really kind of fun, too. You know, it's like Have all the fun of bubbles and all the through boom from a red wine, which is which is pretty great. Exactly. All right, let's go before I leave the bubbles. I wanted to ask you specifically about his natural wines and orange wine, which I've been getting into lately and how that fits into the holidays and your opinion of what those kind of winds with matches Yeah, I mean, it was natural wines. I mean, for our listeners out there who aren't necessarily queen with the category. It's It's It's essentially of, uh Approach to making wine, which is there is nothing added nothing removed his little human intervention as possible. So you're looking at a grant Organic viticulture? No, no interference in the winemaking process, No additives. No, no, no. Um, know anything. Um, and orange ones are related category where you've got, basically you've got white grapes. But instead of squeezing the juice out of them and fermenting juice by itself, you keep the skins with with white produce from the white grapes. And it can give the wine anywhere from a kind of light amber to a really quite orange color, the in terms of natural ones. Because the natural lines run the gamut of different grapes. They could be white. It could be read, they could be anything. Um, They're pretty broadly. You know, it's more a question of which specific wine you would pair it with. They sometimes have a little bit more of us..
