"Katherine. How are you? I'm great so it's Thanksgiving time. I make a cranberry we saw using the recipe on the back of the bag. That's creative I am. We thought maybe we'd be a little more inventive. and Use cranberries for something else maybe a desert. So what do we come up with. Well we actually intrusive inspiration from the book rustic fruit deserts by Corey Schreiber and Julie Richardson. And that's where we decided to come up with a buckle so a buckle. Is You know Chris is a snack cake and it has a really delicious crump. Topping ours has cranberries and also candy ginger in it so is this the classic one layers simple snack that cake recipe. Is there anything different about the technique. It is a pretty classic recipe. Chris we do put together. The dry ingredients in a food. Processor in order to really streamlined. Remind the process. Once we've combined the flour sugar baking powder cinnamon and salts we Paul Stat and we set some aside for the topping so some of it goes into the batter along with your usual legs and we also add sour cream for extra richness and then the rest of that we make a really yummy topping. That has some brown sugar and almonds and some more butter and you just pulse that and tells it like wet sand candy ginger that go into the that's important yes so the candy ginger is going to go on. At the end with cranberries. We're GONNA fold that in really gently one thing to note. You can use fresh or frozen cranberries but you WANNA make sure. You defrost the cranberries. If you're using frozen otherwise the batter will kind of freeze up and get too hard to work with so a cranberry very in candy. Ginger buckle you did yourself. It was pretty fancy round the holidays. How are you so do you have some words of advice or maybe words of warning this week? Well you know Thanksgiving's great and everybody gets into cooking the Turkey cooking stuffing and I thought we might just talk a little bit of safety because Turkey and Salmonella are just one of those things you don't want to screw up. They they go together right and as the old song do I mean. It causes a significant amount of illness in the United States. There's like more than a million cases of Salmonella Manella food poisoning in some way every year which is a lot accounts for about twenty three thousand hospitalizations and probably killed somewhere between four hundred and five hundred people every a year are there are lots of other cases that are unreported. So we don't know the actual number will the vast majority are reported. Probably because most people will get sick and just recover on their own. They'll have you know domino pain. They'll have bad diarrhea. They might have even a fever but most people will get well and if they do than we just don't know what it has. That million is is an estimate. So guys question I I always thought maybe it wasn't. Salmonella was another bacteria that it doubles every twenty minutes. If it's in the danger zone of of temperature but that even if you get the Turkey up to one sixty or one seventy whatever the safe zone is internally that toxins can be created during the period it was at a lower temperature and so the meat might still will be toxic. Or if you cook it enough you kill everything. Well if you cook it enough you'll kill it but you are correct. It can really set in and get bad fast. So that's why there's a couple rules that you wanNA think about when you get Turkey and you're preparing it to make sure that you say Steve The I don't ever try washing a Turkey first of all. It's almost impossible to get a Turkey sterile by doing that. Secondly you're creating Salmonella water which is going to splash everywhere aware and then now you've contaminated a kitchen. So don't do that. Secondly if you if you buy a Turkey frozen it's not a good idea to let it thaw at room temperature because wallets thawing. It's going to get into that room temperature area where the Salmonella can really set in and start setting up shop pretty best and you also want to be super careful about stuffing you have to make sure that you cook the stuffing inside all up to one hundred sixty five degrees. That can take longer longer than it would otherwise take to cook the Turkey now. You're over cooking the Turkey in order to make the stuffing safe so whatever benefit you might see in putting the stuffing taste wise inside the bird you're screwing up the Turkey so probably not a good idea. It's much safer to cook stuffing on the side and if feel like you need to stuff it afterwards feel free once everything. The thing is up to one hundred and sixty five degrees. But you also don't want to sit around for too long even with the cooked Turkey some else silica with reheating Turkey. You just don't I don't WanNa leave Turkey sitting around that long out in normal room temperature. If you don't have to.
