"Recently a listener posted a question about powdered milk on my facebook page. She was wondering whether it's okay to use dried or powdered milk in place a fresh milk. Powdered milk, of course less expensive than fresh milk. It's relatively nonperishable. It's lightweight and portable, and for those reasons, many people include powdered milk in their emergency food stores. In terms of nutrients like. Protein and potassium dried. Milk is comparable to fresh milk, and like fresh milk dried milk powder is usually fortified with vitamins, a and d. you can add dried milk to breads and other baked goods, soups, sauces, smoothies, or other recipes in order to add extra protein and other nutrients. But if you research this question on the Internet, you will quickly come across some sources, claiming that powdered milk is extremely bad for you because it contains oxidized cholesterol, allegedly the most dangerous type of cholesterol. Some of these websites also claimed that powdered milk is added to all low fat and fat free milk in order to give it more body, and they say that there's no way for you to tell whether or not your milk contains added dry milk, because the passengers are not required to list powdered milk in the ingredient list. I mean pretty scary stuff, right? Well as is typical of the nutrition information that you find online, the claims about powdered milk are a jumble of fact, half truths and outright fallacies, so let's take a closer look at the properties and the potential dangers of powdered milk in order to make dried milk pasteurized milk is I concentrated through evaporation, and then it's usually sprayed into a heated tank, and that causes the remaining water to quickly evaporate leaving behind dried milk solids. Milk can also be freeze dried, and because of the lower processing temperatures freeze dried may actually taste more like fresh milk when it's reconstituted, but this much more expensive process, and therefore it's a lot less common. It is true that packager could add dried milk to fresh milk, and because of the way the FDA labeling regulations define milk. They would not be required to list powdered milk in the ingredient list. However, it is absolutely not true that all skim and low fat milk has dried milk added to it. In fact, you might have to work pretty hard to find some that does have dried milk attitude. I spoke with representatives for half a dozen different brands of milk, including national brands like stony field farms and horizon as well as my local store brand, both the organic as well as the conventional and none of them. Add any dried milk to their fresh milk products. There is a brand that you may have seen called. Skim plus it's marketed as being creamier than regular skim milk, and they create that creamy texture by adding dried milk powder to the fresh milk and sure enough. The dried milk is not listed separately in the ingredient list. However when you add dried milk to fresh milk, it also increases the protein content, so you could always just take a quick look at the nutrition facts label, and if you see milk that contains more than nine grams of protein per one cup serving, they may indeed have added dry milk powder to it and if it doesn't, you can be pretty sure that they didn't. Now while you're checking those nutrition facts labels, you may come across fair life milk. This is a brand of milk that is fifty percent higher in protein than normal milk. However, in this case, it's not because they've added dried milk. Instead Fair life is made by passing fresh milk through a series of specialized filters that remove some of the lactose and then and up concentrating the protein. Okay. So, what's all this about? oxidized cholesterol. oxidized cholesterol is cholesterol that's been sort of roughed up around the edges, and that makes it particularly irritating to your blood vessels to make a long story short that irritation is what triggers the formation of plaques, and that is the beginning of heart disease, and what's worse, oxidized cholesterol molecules can intern oxidizer other cholesterol molecules setting off a sort of chain reaction. And it is also true that in the process of turning fresh milk into a powder, the cholesterol in the milk is likely to get oxidized, but nonfat dried milk is not going to be a significant source of oxidized cholesterol, because nonfat milk contains almost no cholesterol to begin with so i. don't think that you need to go out of your way to avoid nonfat dry milk or products that are made with it. "In two thousand nineteen the World Health Organization revised its guidelines for sugar intake. SUGAR IT turns out. It's actually worse for us than we thought. Too much can be deadly now. I say this by the way as I finish this delicious sugar cookie. My kids made last night anyway. The new guidelines now suggest adults should not consume more than twenty five grams of added sugar a day. Now think about this for a moment. A single twelve ounce can of Coca Cola has thirty nine grams of added sugar. That is a day and a half of sugar. A can of coke and if you go to the movies and get thirty two ounce cup you will burn through nearly five days if you're sugar allotment before you get to the credits so what to do. Well the obvious answer is drink less sugar which clearly is advice. Lots of people are taking because the last year the sparkling water industry hit an all all time high and sales nearly two and a half billion dollars according to Nielsen. And it's why the beverage out if your local supermarket is now jam packed with with Lacroix and Topa Chico bobbly Poland Springs and Waterloo in several other brands. And it's also big players like Coca Cola Pepsi and Nestle Sleet are all pushing into the sector. One of the fastest growing independent brands and sparkling water is called spin drift and unlike virtually every other bubbly water brand out. There spend drips. Water is as basic as it gets literally just a mixture of sparkling water and fresh squeezed juice which may may not sound all that innovative. But it's actually an incredibly challenging thing to make because fresh squeezed juice does not stay fresh forever and Spitzer's founder founder. Ah I think key learning for me was just a very clear idea of where our food is coming from because it seemed to always be delivered from our neighbors abors or or just off of our own farm You know there was local unavailable and just to be clear. I mean we're talking about like the nineteen thirties or forties. I I believe at the time of this recording. You're forty five years old so this is like the eighties. This is not that long ago it really wasn't and that's what I mean. It was really a choice. And you know. I'm not sure what the message message was. We're supposed to take away from it. I would say my mom. She love this idea of being out in the woods and being on a farm and and surviving and off of nature and she was surrounded by friends felt the same way and we had almost no rules honestly we she had this philosophy. Severe that you know have fun. Do Your own thing in be adventurous. I think she's sort of thought of the farm is our playground are self expression and and I think the thing I remember that the farm land just kind of continued in all directions and farmers to the left and right in around us and even to this stay. This neighborhood and in Western mass is really still the same way it's virtually unchanged today. Do you remember how quiet it was at night. From like December to. Let's say the end of March because I'm imagining there was so much snow. It was absorbing all of the sound at night it was just silent. Maybe a little wind I I remember that really keenly and I actually think of that often because now you know in the suburbs herbs of Boston you that level of silence that type of silence. It was really hard to find. We would keep by firewood for the most part. We had a big woodstove when that fire would burn down nothing there was really no sound left in the house. It was completely silent so So that eventually your family moved off of that farm to the town of deerfield which is also in guessing western Massachusetts and you went to high school there and then to college in Washington. DC at Georgetown. When you when you got to college like when you're eighteen years old did you have any idea? What you you want to do with your life? Now I was kind of out of the sort of grasps of western Massachusetts and I was really starting to for the first time. I What I wanted to do professionally and I should mention that kind of in high school and then as I started college I was starting to work on the fishing boats off the Cape and islands of Cape Cod or or like nantucket? Martha's Vineyard is. Is that right. That's right and you know it was just it was just magical you know you're on abode all day. You're fishing for whatever you could catch. And then eventually I got my captains license right after graduation and Butleigh why you were Georgetown. You met somebody who became presumably became a girlfriend today. I'm to meet my wife Harley while we are Georgetown and we started dating when we were nineteen uh-huh and so we've been together ever ever since I'm not sure she quite knew what she was getting into way back then but while I was at Georgetown. It was called nantucket smoke house so the idea was taking smoke fish and striped bass and other things in creating a smoke house out on island we were then offer the products from all over the US turned out to luckily not an idea. We ended up pursuing Tom. But you know the Sivas planted for sure all right so so you you graduate From Georgetown in Nineteen ninety-six. And and what did you do. Where'd you go work? So the first thing I did was go back out to an antiquated and actually continue now with my captain's license in hand continue working on the on the fishing boats. You know I was probably my fifth year and so I went out there with an idea of kind of finishing that summer and then and then ultimately going out to the Pacific northwest to pursue the smoked food world or at least learn more about it and so my wife Harley was living in her girlfriend that time living in Seattle and we piled into her sir VW and drove up the coast and basically just started hitting smoke houses and asking them. You know what the industry was like today. Play kit today. Not like it would they recommend going into it and I'll never I'll never forget finishing a tour and the guy who is leading me on the tour pulled me aside and said I mean do you favor never get into this business fish. It's fire you know. It is a shrinking industry. You know it's nothing we would recommend and was that enough to convince you it was at least enough for me to second guess it and so I am incredibly grateful for that person's advice for sure and the the business idea that ended up kind of coming out of it was company called Nantucket Harvest and untuckit harvest offered smoked food items That were already being produced. Even though it ultimately long-term not terribly successful. It was much better than where we would land right okay. So you're so you decide I'm going to go back to Massachusetts. I'm going to start a business where I basically. What like source food food from nantucket and create like a mail order business? That's right who is mid mid nineties Nantucket at all these really interesting producers serves that had gotten to know some of them over the years What were they making or what? What did they produce? Yes so they had you know it's thirty miles off shore so it kind of has some. I'm really interesting. Unique products only only really only available out there. "Today's episode is the frozen meals hall frozen you know what that means everything came from the freezer aisle we're cooking right I mean we're not gonna eat it as a as a popsicle that would be funny you know when I was a kid I used to make these frozen weavers chicken dramas and I would have no patience because you couldn't like thought in the microwave you couldn't there were no cheats I would just put him in the toaster oven if it was supposed to be twenty five minutes I format after fourteen and just eat them all frozen or they they were fully cooked I though yeah okay so they were cold icicle chicken legs I was an animal do that with things that I if I do it for says like two and a half minutes all at two fifteen I can't wait the extra fifteen seconds I'll take it out so it has a little ice in the middle bears hopefully today these finds will not right half that all right so what what do you got here today Michael Okay this is a strange one on you can now take an AC bath the lemonade and Blue Raspberry and cherry the ice by they now have bath bombs oh you make bath and you put the bomb in there and you can soak in lemonade cherry or blue raspberry yeah don't drink it though because that's probably ooh who would want to turn your honor was drinkable soup in Blue Raspberry so they've been spotted dollar general stores but you can also get online at a site called Holler dot com and we can link to that on the how lar- alario would you take I e Senator Beth I mean I probably was so obsessed with icees when I was a kid but I was angry at them too because they were the drinks unlike slurpy by the way isis tastes better but I like the Cherry and the about them as when you put the straw in you cannot move the straw the icy stops working it does not function in the Cup if the straws moved so I just remember being a kid if somebody grabbed it or you bumped into your would be ruined it's terrible terrible so slurpy I wonder what came first slurpee or the icy the icy maybe it'll be chew to or false question in an upcoming episode and now I'm confused too because like AC so seven eleven is the slurpee right so where did ice get sold I just felt like carnival Oh yeah that's right you'll have the movie theaters like my niece Lauren who the Vegan was like can you take me to the local theater for dinner so I could get a giant tub of buttered popcorn an icy so I did that moved in that so I wanted to be a good and anyway so today we have frozen meal finds that came from various and sundry supermarkets and other places and and I'm so excited to try them as a lot of and they look great in a lot of plant based stuff not because were vegetarian just because there's a lot of stuff out there but we're going to start with some breakfast fines right we have rooster and Lark skillets and they come in three flavors rocky mountain Greek and South West thirty to forty calories I'm assuming without the eggs so these are the kind of yeah they're just add things so you throw these into skillet you cook them then you add eggs I love this trend it's like dumbing down and omelette wonder if this would work in an egg Mug I bet might get wonderful get watery we could try it all right so let's try them I don't know where they're available but Jamie he's going to tell you so these by the way have one smart point of serving you can find them at high vis a whole foods shop right and more you can even order them online and we're GONNA be starting with the southwest skillet so it's avocado butternut squash onion bell pepper you remember how the frozen avocado debacle let's see what the it's watery or gross in any way I will not enjoy it I'm GONNA put it in Iraq in Rome I'm the thing is like I this doesn't seem like a ton of egg to me it's like Africa okay you would do I would add more egg to this but there's no rule I would add because I egg great taste fresh he's like a diner scramble mikey could not be making more notice is the new lally we now so this is South West yes how's it taste is it well seasoned it's wall season it's it's okay I'm not a lot of good my Egbo with like laughing how it's kind of bland ends a little salt but everything needs a little salt so Ireland's tributary yeah we're gonNA plow through the breath this one is rocky mountain.
