"See I do have standards. There's certain things I do eat certain things. I don't eat. It's not like I'm a food snob or anything last night. We talked about fate meet. There's actually a story that Jane wells did that we're going to get into later on regarding the whole fate beat phenomenon. I received a lot of Twitter hate from people eight my quick question. Sure. You don't eat leftovers. Right. No, that's correct. That's so weird. I don't eat leftovers like, for example. You don't I'll go to you don't know. Absolutely not matter with you. If I go to thanksgiving dinner at my mom's house, this is the best, I do not leave with the plate because it's not going to taste the same the next time. Sometimes better, thanksgiving dinner is the Turkey sandwich the next day you're entitled to your opinion, even when it's wrong. Come back. No, no, no. Just I'm weird like that. I am very OCD. I mean really OCD for example, I will not go to sleep with drawers open doors. But drawers, if there is a chest of drawers with as a joy sticking out, I will go around and make sure that the jurors global that too. So that's not where I thought you meant pants when you said drawers draw. This is different. See drawers for clothes draws for booties. But, for example, I don't drink soda drink pop. No, no. I don't I don't drink carbonated drinks. I, for example in my office. There about maybe thirty six sodas in there, which are over a year old from a Kelly show celebration. We did back in twenty early twenty eighteen if I'm not mistaken, and it just sits there and maybe twelve by producer. We'll have it a soda every now and then I just, don't drink soda because what I'm thirsty I'd rather have water or some of the drink. And maybe I think it's because growing up not a lot of soda was in the house, that was just not something that I would reach for. And so what I wanted to quench my thirst. I would choose something else, like Jack Daniels, but I don't drink soda. And you never developed a taste for it over the years. No, I mean, I'll have a soda, there's absolutely nothing. Like, oh, my gosh. Okay. There's nothing to drink. I can't get a bottle of water and this machine only has soda, I guess, is going to be sold on this occasion. But I don't eat a lot of desserts, either now have like a cupcake from whole foods. There's this. Cookies and cream type cupcake that I love to eat, but I'm real hit and miss with that. I don't usually get dessert. I don't have a sweet tooth. That's what it comes down to. So I guess it's good on some level. But my other vices other things that Jack Daniels. Yeah. And in fact, I can't even drink Jack. Like I used to just is hard on the but it just can't do it anymore since I kind of sweet. It depends on which will. Whether you're drinking Jack Daniels, Honey. Jackie draining keen, gentleman, Jack or single barrel. Bow single barrel, is, is a harder hitting taste. It's not as sweet. But if you do, Honey, Jack. Yes, that is very sweet. And that's a little too sweet. I don't drink Jack. What other weird stuff you got? Oh, I got plenty of stuff, like, for example. I, I really will do everything I can to not sleep in a room in, which they're like closet door mirrors. It will scare the shite out of me when I wake up at night, because it seems like someone else's in a room with me. Yeah. But that cannot be easy to find that. I mean I know in your own home. But if you go to hotels and stuff, you can't holiday inns. If you girl starts at. But that you can't control that. So what do you do? If you're stuck in a hotel room. The drawers are open. Mirrors on the closet door. And all I got is soda. I have not had that problem, I would say for last five or six hotel rooms that I'm in, because it is something, I'm very conscious of the way it was configured. They don't have. They have a mirror on the wall, but not on let the closets usually just an opening door like it's almost like a portable class that they don't really give you a lot of clauses in these hotels or at least, not the ones that I go to did you have a chromatic sleepover or something. Somebody's scared you and I wouldn't say that. But I've always had difficulty. Sleeping for periods of time. I was the guy who could fall asleep anywhere, even today. If the place is flat. I don't care if it's under a desk under a pool table. Concrete slab, I can go to sleep? Right. That's me. I can't at all. But there are things which will start on me very easily in wake. You Adam, and I think part of it goes back to when I was in college freshman year in the dorm, we had a, an arsonist who was setting trash can fires. I would say maybe two three nights a week. So we were all being awakened from our sleep, two in the morning, three in the morning. And there are times in which the whole dorm was filled with smoke true story. And so when you're trying to get out of a dorm in the middle of the night, and you can't see where you're going. And you know, the, the fire is real on some level, and you're rushing down the stairs, and let them the third floor of a ten story, a dorm room. Call Harvard hall. Yeah. It changes you anytime anything should start. Will you after that in the middle of the night? Yeah. Like, I'm a guy don't try to start on me. What I'm sleeping because I'll come up swinging. I'll start with the salad, then I'll go to the vegetables, then I'll go to the steak and then I'll go to the potatoes because I enjoy the potato interesting, I would think that the state would be less 'tatoes always last. You need better steak does. No, no. I'm just saying good mashed potatoes are hard to come by more so than I think even good state. Are you someone who like, can't let your food touchy? Either or do not have I'm better. I don't like food mixing. I don't care if they touch, but I don't want mashed potatoes on your lettuce. What do you think about? No, I don't want my mashed potatoes. I've been eating very little animal protein, and all my the majority of my dairy has is now like rice milk instead of dairy milk. And I have very little cheese these days. Yeah. Me too. I can't do any cheese arly. Yeah. Getting so used to coconut milk or soy milk yet? It's a lot better tastes, much better. Well, you do get used to it. The judge will probably continue the case. Pending you get a lawyer. And then you start going after your wire complaint complaint to the state bar for extortion for whatever. Now, he's going to say that's a normal price. I charge your, and it's I I would pay it. And I'll tell you why. Because chances are the retainer says, you're a pay, and if you have the money, okay? So the guy's a jerk, but he's going to do the work. Why don't you want to pay by the way for all this extra work? Why why would you not want to pay? Okay. First of all because I found it very beginning. I say Tennessee jury trial, then I will not do the taste. She said, oh, the my attorney said don't worry, we will try to now we're getting complicated. So you you said if we go to jury trial, I won't do the case. I would drop the taste. All right. So why don't you drop the case? Then why don't you just drop by drop it? That's all. Okay. And the the freezing of the water actually creates this dropping of the salinity at this this of the salt, and you can see it drop out of the water as the water freezes. So all those glaciers that have frozen from water. They're all fresh wall. Wow. That's interesting. Yeah. You know when my mom back in the late seventies. My mom taught bridge for a living. Right. I mean, she's a life master, which is very difficult to do and she taught bridge, so she would go on a bridge crews and teach you know, ladies who are in their seventies and eighties. How to play bridge in how you know, techniques and stuff like that. And it was very popular. So two weeks before I started high school. My mother says, hey, I'm going to give you a graduating junior. High gift wanna go with me on an Alaska cruise for two weeks. It's going to be the first two weeks of my of my high school years. I said out of school for two weeks of loved to. Courier boat lifeboat out to pick up the glacier, bring it back. And that was the ice and the drinks that night at the bar. That's not crazy. That's really cool. So I know it's no. And there's no salt in it because salt does melt is and that's why they put salt on the roads. But here's something that that always baffled me. And maybe Nielsen Badri concluded it's up for me. But when you make ice cream, one of the key ingredients is salt, you put ice cream inside of a little, you know, whatever Cup or whatever. And then you've got ice around it. And then you pour salt on the ice because salt makes the ice. I like three or four times colder than it normally is. So why would they put salt on a road to make the is colder than it already is colder part? That's true true story. Is that true? The Mondo, you know, but you went through cooking school salt, a key ingredient making ice cream is salt. And that's to get the ice colder than normally is. Yeah. When I would set my prep station. I put all my put a bit of ice and then salt on that. And then all my prep food on top of that to keep it colder. Oh, really? Yeah. So not even making ice cream. You just wanted your is colder. Yeah. Well, and that's the first time I had to be from a consumer model was at your house. And now they've come down there. Beautiful. There's sleek they're they're not cost prohibitive, and they're just a they're a beautiful and for those that you heard a little bit of the description there, suveyed cooking sous vide means is French for under pressure. And you basically vacuum seal whatever you're going to be cooking, and you poach it in that in that seal in water bath. And the thing about a water bath is that. He can hold a temperature a precise temperature. Whereas when you're cooking. Traditionally you're taking five hundred degrees or four hundred degrees. Whatever you're cooking in your oven and trying to push that to the center of the meet the until the center of the meat is done the way you like it in this case, medium, rare would be one twenty eight one thirty something like that. And and it gets hard. So now, you have different layers of done this. But the center is actually medium rare the whole steak is not whereas with a sous vide, the whole state is medium rare. It's incredible. It really is amazing. But like you said the technology's been around since the eighteen hundreds or so late eighteen hundreds, and it's one of those things that the technology is catching up with it. Because you're you're holding a precise temperature for longer periods of time. So you're not you know, nailing the bacteria with high heat your low heat for longer periods. So this technology to be. To to connect with it via via your phone. How do you see that really changing the game? Well, I see it's really changing the game, especially for visiting family and families with young kids and. In fact, I think that was pretty much the theme for kitchen technology at CSS years. Connectivity. Not only in the smart home application, but also with voice activated technology. You know, Amazon's Alexa, Google home are both really neck and neck right now. So I can easily see the Nova in their generation because they have more expensive models. But the one that I was looking at at the show this year was ninety nine bucks. And it's a great entry level gadget to get you into the family. But so connect is going to be a big deal because as you heard told say, you know, you can put everything together put all your your meat and everything in the water bath and have it sitting there, and you can be at work in and around one or two o'clock just say, okay, let go go in your app on your phone. And then started to that you time the cooking of your product to finish by the time, you get home. And then all you have to maybe a couple of dishes, and you're ready to go. So it's all about the connectivity. Which leads the convenience. How does that? Did they get into how that would work with? Let's say a protein because. What about the time? I mean, well SUV it's gonna be is gonna take long any. It's going to take about the length of time that you're that you're going to be at work anyway. So it becomes a slow cooker. Then right. Yeah. Exactly. But you know, you might be able to time it in a way where you keep got it. As with anything else in cooker. And all of that crap is a big deal you have to put time into the part of it. So in this particular case if but say you you're really into now you've kind of mastered. It it. It's the perfect. You know, go to for your meat, then you do prep it in the morning. And then you do set it up you have everything ready to roll. But you don't want it to be sitting in a water, bath cooking all day long, and you wanna tie into where it comes out and be ready to go where it's gonna remember when you and I were first talking about it. And then I was having it at your house, and we had a long conversation about it. One of the things that said, you know. You can't just get up in may and get started have to cut a Chuck up your day out. And and be ready for it. Yeah. It's one of those things that you can do progressive cooking. You can cook the vegetables in there. Then. Or you go backwards you go from high heat too, low heat, and then everything stays warm. You can do an entire meal, and it's crazy. Hey, steve. I've talked about this as being a new religion absolutely on the militant side of veganism or any food tribe. It is a religion. I studied religion for a long time. And I will tell you. It has all the earmarks of a religion hands down the circles people run in it is it is identical to Christianity the way the, you know, having their groups, and they're they're Christian. Barbecue on the weekends. And they're Christian potlucks and with the Christian friends, and they're all these things it's the benefit of eternal life. Yes. Okay. But maybe so I know they're eating right. Who knows if you live longer? Yeah. But there is a lot of that ties into this. However on the flip side of that nets this food show on the flip side of that is great food technology that we all can benefit from. Now, you can eat like crap and be vegan. There's there's tons of bad vegan food out there. So don't don't be fooled into believing that vegan is healthy doesn't have to be nothing has to be healthy anymore than eating meat has to be unhealthy. I don't believe in that either. But the technology is really outstanding. If you find the brand corn spelled Q U O R N, they have a meatless chicken breaded chicken, Patty that I'm telling you in the frozen section is better than a chicken, Patty. It is absolutely better tasting. The texture is more pleasant. It's got a great crunch and to me. It's like, well if it's same same that way to me. I'd rather eat that.
