"I really don't think there's another team. I'll say north carolina. But i just don't. I don't think anybody in that conference besides clemson loses three games. Big ten wisconsin. And i think wisconsin is the favorite in the west in the big twelve. I would take texas before. I took iowa state. Yeah i i just think from a talent level. They're very good. Last year i think be john's better player than nausea harris. I think that could be really beneficial. I just think iowa state really kind of over performs its expectations and that kind of causes us to over. Inflate our own expectations for them. And just the tom herman and having to deal with all the kings of texas and all the boosters that they have they're pulling all the strings. I think that comes in with a fresh start. They've got a fresh. You know everybody's got a fresh start. I think that they're very talented. And i think that they're a very good team. I think we're going to see a good season from the law codes. I still think oklahoma's the best team in the big twelve by far. I think this is a texas team. That can be very good so all that said. Are you still going chocolate. If you're looking at the top for the presumptive for that are going to be there at the end of the year and hold their serve for the entire season. "Fun things going on and to really concentrate on replicating that many different sites. I feel like you have the opportunity to lose a little bit of that precision. And what we're really trying to do is become that we want that flagship. To be the precise location. I really feel like our biggest growth. Trajectory is going to be helping other people get their shops open We have the opportunity for wholesale sales there as the people opening. That store have the opportunity for having their own income as well and being their own on having their own establishment. So it's kind of a win win situation will we're looking to do is taking all the pressure from the coffee side of it off of an an owners that they can concentrate on running the business and making sure the business is profitable successful so we can take care of the water Equipment repairs the coffee. Selections the barista trainings things like that. And then Business people can do what business people do best. Do you help out with their numbers at all. yet we can help out with Getting things started up like a lot of people. The first question you ask is well. How can i. How much should i be starting. Yeah exactly how much. How much do i need to start. Especially s yeah exactly and then how much can like. What kind of equipment do i really want to get in there. I mean i can match anybody to a piece of equipment that i want to sell. Because it's got a great margin on it but that's not necessarily the best avenue. I try to listen to people. See what their vision is. See what their experiences are what they see their cafe being and then find the best equipment for that The getting into a reasonable price range for them so that they can concentrate on help. You know i'd like that to be surprise. lower costs. it could be that the build out surprises that go in the other direction might balance itself out the other thing that we mentioned in which people should think about their causes. We were talking about. Lisa's yes and how. I pretty much a lot of people are like. Oh five year lease. That's all i wanna do. I don't wanna do anything more on a chorus building owners. Typically like longer we says by there is a bonus number one is we know like you said you. Six years is like a blink of the eye and like here. We are same thing when it comes to leasing space. You don't realize how fast five years will go so having a little bit longer of a lease is actually. It could work in your favor. Especially if the market does do better and the rents do go up or impacts in everything to the area causes. Rents go up. So and there's that uncertainty to while you're renegotiating a new lease you just want security. Sometimes i wish that we had negotiated a much longer lease upfront knowing that were successful now but of course there's always the back and forth with. Is this even going to work. You know my going to be able to make this happen so yeah. Six years flew by really fast. It was really a blink of an eye and me is when we came run. Having to renegotiate there was a lot of time in between where we didn't have the certainty so we wanted to make sure that we were on. Would now we have a path forward for the for the next pandemic during that period of time as well that added a little bit of stress to it as well. you know. we weren't sure what it was gonna look like right as this was. The pandemic was occurring was when we needed to start renegotiating and figuring out. We're going to go so we didn't even know what the the new normal like. And i think you guys did..

"Out between some of the bags of coffee at time so it was It was getting a haphazard. So i know you already said. That's benji to let everybody know. What's it like to relocate an and move things over to this new location. What was that like for you. It was terrifying. The the roaster itself is almost nine hundred pounds and its top heavy. No moving company. We'll touch it so we didn't have any kind of an insured You know licensed moving company to take it out of there for us instead. It was too heavy. That in one injure their workers which i totally respect we. it doesn't. It's a little heavier than a pool table. Oh yeah it was it was. It was a beast so we had to put it on a dolly to scoot it out the door because pallet wouldn't fit into that on the pedestrian door. How many people were helping out. We had four. They're only four of us had a few people that are That have become good friends to the coffee community Offer to come help us out in april for their help because there was a big assist and then we had to transfer it onto a pallet transfer that onto a trailer and then ratcheted all down in tow it over to to border the glenwood. Location in youngstown. So and it's the working. It's still working. Everything got there safely. We got it all hooked up and there was nothing more relaxing than firing it up and everything worked way. We expected to so do nothing got jarred loose. See you're mentioning before like drilling a hole in the roster to be able to monitor the temperatures and everything is. Is that the same thing that you do with this one. Yeah it's the same roaster. We're saying we were drilling holes in that roster and it's the same year union sweat starts to be because like one small little mistake and you've just punched a tally. "We work with the manufacturers. And you know they're able to get better deals on coffee equipment than they might otherwise find Able to get them started without making some of the mistakes we made in the beginning and also find cost savings for them as well and sometimes they become wholesale partners with a purchase. Our coffee sometimes. They don't but You know we're able to at least support them in the process there to kind of raise the coffee game in the area. But that's the attitude that you need at. And i will say i love that When i first started off in my industry in the dc market it was a lot of other people networking giving out there helping those that are just getting started in the business and helping them. Strive and not make the same mistakes and and i do. I think you do get paid back. And it's tenfold because having is audited yes and we've even had an incident where someone who down the road was it was joe sylvester at high-octane coffee roaster broke and he needed to get a new motor so he called me up and i was able to roast his coffee for him. You know it might seem like a competitor kinda mindset to be like a tough luck. Sorry about your sorry about your incident but you know we we work together on a lot of things and it just kind of you know it helps all of us in the end tubes gonna probably be a day where something was wrong. I end s. Exactly i can give joel. And i know that he'd be more than willing to help me out. That's exactly right so you just acquired some additional real estate so brand copies located in huntington plaza. That's your that's your flagship store. That's our that's our our s right. So we had to start looking at You know what are we going to be doing a year from now because it's really hard to keep it organized now. How are we going to do this or taking on more townsend. Taking on larger roast. And we did we we you. You were going to look at another space at one point in time in youngstown. Unfortunately it didn't work out and and it would definitely not have worked out because you would have been waiting another for six months before you were able to even build out your space. I'm really glad that you were able to find this other location. Glenwood it's again it's bittersweet. My heart was in that location. I really love still opportunities for you. That yeah i think so and i i always love keeping the door open and Finding out what might become down the road there but this Space on glenwood avenue was taken over by y. n. d. c. and it became available and it was the perfect square footage. It had all the amenities that we needed and it was just available for a few days before they were making their decision on..

"And i usually took a little bit cream little bit sugar with my coffee and i drank it black and it was amazing and i was immediately hooked. I want to know more about. Where did this come from. Why was it so good. What made it so good I went down found. It was from a place in new jersey called rook really popular in new jersey. Now they have something crazy like twenty locations and they they do a really great job so on the weekends my wife and i would go looking at different rosaries in the area to find out what the differences were. You really became hooked. Yeah took a week or two but You know eventually we did that on the weekends as a way to kind of get together find something unique to do besides going to the beach area go. That's awesome and then what did you do. So you have your whole science background Clearly super smart And then what did you differently when you started your own roasting coffee. I take everything to a very try to control everything that i possibly can. And a lot of it came from the nuclear medicine side of it where everything has to be very carefully documented. You need to know what happened with the doses different times or you can make big mistakes so immediately we started tasting the coffee saying why is this one different when i do it that way and just started compiling that data. It got to the point where i was drilling holes in my roaster and putting thermometers inside of it in different points just kind of measure what the temperatures were happening throughout roast and i've got software that logs all of the changes in the data so we can actually see it live if i'd nail it in a really find a great roast for particular coffee. We can use that as the background and then when we roasted the next time we can make all of the same notes in changes to make sure that the coffee is exactly the same..

It's one of our newer coffees there. So how do you go about selecting your different beans in everything that you have what we've got Probably about eight or ten different importers that we work with and were able to get a hold of tiny little sample bags that have maybe like two hundred grams of on roasted coffee will do is. We've got a really tiny sample roaster. And we put them in their roast them up and then go through a process where we call cupping basically where we grew up little coffee and we kinda taste them and this we can actually see what those coffees are gonna taste like before we commit larger amounts thousand pound orders since very similar. Bruins right absolutely so you have the. How many different i mean. I know i've asked this question to the brewers and they said there's an infinite amount. So i have a feeling you might say the same thing. How many different types of coffee beans are there others. It's from all over south. America central america africa We've got indonesian coffees. There's even some american coffee from hawaii. So it's anything between the tropics basically if there's a country there that has a high enough elevation They'll be able to produce coffee plants. They love growing in that relate tropical High sun really warm atmosphere so it can be anywhere around the world inside of that little belt and There is within a country. there's many different regions to they'll have totally different flavor profiles so it is kind of a limitless supply of coffee there. Is there anything. That's done with the beam to make like the tanzanian or the ethiopian or all the different types of coffee that you'll go and have the opportunity slip when you go to branch street. It's very much like wine where they have the The nicotera the land produces a lot of flavor so the richness of the soil. The atmosphere the rainfall The winds the temperature of the sun.

Because he think long and hard about it. It's $68 million is an obscene amount of money. But a man from Canton, Ohio, wants to know that they're taken care of and that they're comfortable. And while he could go to the Detroit Lions in failed and still come out and get a better college job that I was state It's still not something he wants to risk unless he is absolutely positively sure. And frankly, as much as I like Detroit sports fans The Lions are an organization where you might be thinking if you're Matt Campbell. And I don't know this for sure. I would not ask him this. It's not my business. But the lion to the type of organization that you would think if you're Matt Campbell. I'm the head coach. I was state. You're offering me 68 a half million dollars. Is this situation really that bad? Because a guy like him You already believe you have more money than God. And he does. Most coaches at that level do from where they start. You could always make more, and that's a hell of a lot more. But there is something in terms of legacy and in terms of reputation. I believe there will be a day where Matt Campbell will go to the NFL. Can't say. When can't say for certain He's going to make very clear He's got to be comfortable with it. I don't know where he'll go to there. I do fear there might be a little bit of Pat Fitzgerald or Gary Patterson, where you stay in a place maybe a couple years too long. And then all of a sudden you're stuck. I feel the same way for a couple of other young football coaches out there in college football. Fear about that, from an outsider's perspective idea. There are certain things that are more important than money. And so whether it was 48. A half million or 60.5 million. It would seem inconceivable to me. Go upstairs to Liz and to turn down that amount of money. But as another person from Canton, Ohio, I will tell you it is actually 100% plausible. That he would turn down whatever money the Detroit Lions were willing to offer him. If he did not believe that this was going to be something he looked back on. And would be happy with in 10 years. It's a different lifestyle. It's a different upbringing. I believe one day we'll go to the NFL. I don't know where I'll go. I believe one day he'll leave Iowa State. I don't know where he'll go to there. I do fear there might be a little bit of Pat Fitzgerald or Gary Patterson, where you stay in a place maybe a couple years too long. And then all of a sudden you're stuck. I feel the same way for a couple of other young football coaches out there in college football. Fear about that, from an outsider's perspective idea. But I still feel I was state will have a pretty good season this year and that enough NFL people in NFL circles really like it and that'll be it. Matt Campbell makes good money in a great situation that he has created and controls more money and being miserable may not be worth it to him. That's absolutely it. That's absolutely it. Matt Campbell deserves a lot of credit in Iowa State for making that program relevant for making that program. Fiesta Bowl contender for making that program or ranked team of the top 15. That's no small task in Ames, Iowa. That is a pretty incredible achievement already in five seasons for Campbell and Campbell every year has had NFL executives talk about him. So that's if this report is true. Dennis Dodd, CBS Sports is reporting that Matt Campbell turned down $68 million from $48 million. From the Lions 48 million bucks over six years, so more than $8 million per year. Coach in the NFL, and not after recruit teenagers and not have Playing a conference that has the Sooners and the Longhorns in it. He absolutely values happiness over money, no doubt because there's no way he's making that money at Iowa State. He just signed a new deal, which is half that money about $4 million per season. So that's what I'm saying. Is that imagine being offered twice the cash for a promotion. Guaranteed cash for six years and saying, No, I'll make half the money. Now, four million bucks is not that a sniff out in Ames, Iowa. That goes a long way. Don't get me wrong. What It tells you about the job you don't want Not many people in their lives have a chance to double their salary and which still say no Like no doubt about it. Matt Campbell. I don't know if he believed they could ever be Oklahoma or Texas because that's generations of success, and that's deep pocketed donors that you have over generations. At Oklahoma and Texas that you're never going to have it Iowa State unless he's there for 25 years. But he absolutely is valuing his happiness over his money. And you got to give him credit. But it also says that the Lions are a place where people are unhappy. So I guess coaches have noticed. Okay. Eight million bucks with the Lions. What it's cracked up to be. Let me just bring this up because Campbell's been a very good coach. But here has been Matt Campbell's best successes in his years at Toledo and Iowa State. Toledo is final Two seasons in the Mac. He went nine and four and nine into where they win in the go Daddy Bowl and that it appearance in the Boca Raton Bowl. He took the Iowa State job before the Boca Bowl. He's been in Iowa State for five seasons. He's had 28 win seasons and 19 win season last year nine and three. Coming off a Fiesta Bowl victory, so we absolutely has helped build that program up it up it up it up. He's going to four consecutive bowl games. But again There's a ceiling at Iowa State because you're competing in a conference with Oklahoma and Texas and you're never going to have those pockets. You're never gonna have that opportunity in terms of recruiting base in Texas. You're never gonna have those types of donors. That type of travel that type of budget for your assistant coaches. You're never gonna have that. We just know this. And so if Matt Campbell truly turned down the lines and their six year offer at $48 Million, it should make every Iowa state fan Beg for mercy of the altar of Matt Campbell. But you you for staying It also means he just signed this new deals. We must like that new deal or Maybe felt loyalty because he just signed a new deal. But also that this lion's job must have been really bad looking like Yeah. 48 million bucks. Sounds good, but no thanks. Like, imagine somebody offered to double your salary. And supposedly, it was a promotion. And supposedly, the hours were Justus long. I mean, you've got to imagine that in terms of coaching and recruiting But I was state. It's Justus much labor as what you're doing in Detroit for the lines. Would you want to recruit? They just give you the players. And it's guaranteed to imagine somebody offered to double your salary for the next six years. And give you a promotion. I mean coaching in the NFL is seen as better than coaching. At Iowa State, No offensive Iowa State, but it just does. And saying, No. What would that say about the job you're being offered? What would that say? And that the Lions then said, Okay, we give the Godfather offer to Matt Campbell. If he says no, we'll go to Dan Campbell, who's never been a head coach before. Lot of Michigan fans are looking for the next best thing, and you have to make a decision. Now, if you're Michigan what are you going to do with, um, horrible. He's a Michigan man, and that's the only thing he has going for him. And now you have this season that is gone awry when you were supposed to be better when Joel Klatt said at the beginning of the season after your first blowout win over Minnesota, this is possibly the most talented team that you have had since you've been since Jim Horrible has been there for the last seven years. And now Michigan has to make a decision. Because more than likely this is that man's last year last season in Iowa State. And are you going to stand by and allow a guy who would take the rivalry personally? Would make your players believe in the rivalry again. It's not just another game. Has already proven he's able to out coach and out scheme with less against conference titans in the big 12. And a guy who still has been able to recruit at a very high level for Iowa State. Are you willing to let that guy go somewhere else? For Jim Harbaugh? It's not about anybody else. It's not about PJ flag. It's not about you. Freeze! Not about anyone. The other guy. Are you willing to let that guy go? Because you still believe in gym? Horrible. That's the question Michigan has to answer here over the next month. And as of right now, I think we know the answer to that. The answer's no. For Tom Herman. It answers a different question. So let a team like Iowa State come in and beat you. Lose the way you have.
