MGM Resorts is rolling out VR experiences for its customer service roles at employment centers and career fairs. The idea is to show people what the job is actually like. More so than their previous day in the life videos or chats with current employees could really do. Laura Lee MGM Resorts chief HR officer told Business Insider that she absolutely expects that some people will no longer want to take the job after trying out the immersive VR experience. And that's kind of the point. They're trying to reduce turnover from people who accepted without realizing how tough the job would be. The hospitality has been one of the biggest sectors losing employees. So MGM Resorts wants to make sure applicants know what they're getting into and are completely willing before they join the team. They say that the VR experience will include things like difficult guest interactions, because for all that we could critique MGM Resorts for maybe needing to focus on making their work environment better rather than being game to show applicants how bad it is before they commit, there's only so much you can do about the growing number of rude customers. So really showing job applicants, the truth and introducing them to ways to handle it and showing them how the company would support them. I'd say that's pretty good. And using VR wouldn't be a requirement for applicants just something they're offering if people want to try it. That feels that could be great for this weird holiday season. You know, like something you might like. Dress up for a holiday meal. Or that just might be something you make on Thursday and Billy Hey, we made it this far. Yeah, Absolutely. I have been thinking a ton as I'm sure all of you are it's funded table about What recipes are readers and listeners that food 52 are going to be wanting to cook and eat this holiday season, and part of that, of course, is logistical considerations of Maybe smaller celebrations, traveling less shipping things more. Maybe some people want to do a big, like, go all out holiday spread, and maybe people want to do things totally different this year. There's a lot of difference. Things at play. But then also, I'm maybe even more importantly, I'm thinking about how people are feeling at this point in the year and what we're craving and I know that everyone's going to be a little bit different. But what I'm personally craving is new things new cooking techniques, new flavors that aren't just The things that my husband, my unlike desperately throw together every night like pasta and egg sandwiches and the rights that we get into Also, I don't have a lot of time or energy because I have a toddler and a full time job in a book project, and I know that everyone is in a different situation. But I think there are some threads of that. That may be true for a lot of people that the little time that we get to ourselves that we spend in the kitchen is some of the most relaxing and restorative time that we have. So those are all the things I've been thinking about in the recipes I've been looking for right now. Our comfort newness, but Do ability for a variety of different situations. And, like you said, things that would fit in at a beautiful holiday table, but also would be good if you just want a really good dinner right now. So one of the things that I've been super excited about lately is Laura Lee's crispy soy and ginger roast potatoes, which are from her new Indonesian cookbook, Coconut and sample, and they immediately jumped out to me because they're these golden beautiful, crispy potatoes. Which always is going to get my attention, But then she tosses them in this mix of stir fried scallions and sliced garlic and ginger that's cut into match sticks. So you get a ton of flavor and texture right there on top of the crispy, creamy potatoes. But then right before serving, she douses them in a soy vinegar dressing, which is literally just soy sauce and vinegar. And so I had to know if the potatoes really held up under that dressing or if they would go soggy, and it turns out because of the technique she uses. They stay incredibly crispy, and they're so delicious. Cool. What's the technique? So she originally found this technique in East Java where they deep fried the potatoes and they mix in some s on the flavors that she uses here, but also some things like Chicken gizzards and livers and being called stink Bean and the flavors are super delicious, but she really wanted her cookbook to be Very cook a bowl all over the world. And so she took away some of the ingredients that would be harder to find outside of Indonesia, and she also modified She took away the deep frying and modified for roasting potato technique. That's kind of ah, variation on the British style of roast potatoes, where they quickly boiled them. And then shake them up as they're sitting and steaming in the pot after they've been dreams, so they get roughed up on the edges and, like almost a thin layer of mashed potato forms on the outside. And then that gets chucked into a roasting pan, where it's been pre heating in the oven, And there's some really hot oil that some garlic has been infusing into, and they get tossed around in that garlic oil and roasted until they're super crisp. I love that. Yes. So if you like, rough up the potatoes and all that starch kind of like comes out and coats the potato and that You don't have to, like flower, the potato or code to behave like it sort of coats itself. Right? And then when you roast in the hot oven, it kind of have a crackly layer. Made it of its own stuff. Yeah. Yeah, And I think that's what makes it hold up so well with this dressing because if you just You know, chopped up your potatoes and stuck them in the oven. They would be crispy, but there's just still so much moisture in them. And once they said they would get a little soggy. This makes a crunchy layer on the outside that just kind of can't Go sake on you or at least not while you're eating your dinner. You wouldn't want to, like, address them in the morning or something. But like you really want to get them fresh, but it holds up remarkably well. I was super impressed. That sounds great. Okay, so let's imagine it's dinner time and it's like, you know, regular weeknight dinner and you got this. Like, what would you do? It was Okay?
