You get this This absolutely fantastic brewery up and running your production only space and I'm going back to kind of the start of things That works really great for you guys. And then the market changes and the world says that's not the way to do things anymore. You Guys Bust your butts to create the carriage house which you can go back to the last episode of since he broke out where we were at the carriage house may talked what that's all about you get that up and running last summer. You get everything you get some. Nice Polish put on everything outside. You've got those beautiful space for people to go and socializing sit around the pond and have beers together and then this spring Again THE WORLD SAYS DENVER mind. Don't do that right now. how do you? How do make these adjustments? How do you? How do you do this? How do you still like year after year when The world tells you what you're doing doesn't work. How do you keep doing that? And how do you keep the positivity to keep rolling with it maybe a lack of options? It's it's it's uh failures never been an option for Kathleen and I There you know we don't look at problems The same way. A lot of people do We we look at the solutions and we focus on that so This is another instance where You know we had no choice We had no real probably no real way Any Barometers That we we typically have could have seen something like this coming and what helped us you know quite a bit was I guess. The way we've run our business for the past fifteen years and kind of always being conservative growth company and Not You know putting a lot at risk at any given time so you know I think fifteen years of running our business like that Put us in a better shape than than maybe some others to weather the storm and we've taken full advantage of it I've never been busier the past two months of my life You know working fifteen hours a day. I've been you know. We've we've made a lot of improvements to the taproom because no one's in our way and we can get a lot done it when we reopen this Thursday. Four o'clock A think people are GonNa like what they what they see when they get here will. This episode won't post until next Monday so when it opened on Thursday hopefully have already been. It's Kim podcast or confusing. Who knows when people are actually listening to those? That's what always drives me crazy when I start talking. I'm thinking Oh my God. Did somebody download this in six months? And now they're listening to it and they're like. Oh that car I remember. Gerona virus thing that happened hopefully How are you guys? How are you guys making that adjustment? As far as in the taproom and on in the patio area and everything to kind of make it so that people are comfortable when they go there and things are safe and well. Yeah that's our number. One concern is is is a safety like many others but You know we're in A. We're at a huge advantage because we have three acres to play with we have You know normally our restaurant or carriage house seats closer to three hundred people so we do have a lot of inside space We are going into the summer months. That's helpful for everybody but what we didn't want to do is we didn't want to look at it. As how many people can we fit in our restaurant We want the guest experience to be pleasant. We want people coming back. We don't just WANNA surge of people and then for our guest to feel like they are compartmentalized in and so we took a lot of time thinking about Our guest experience. And that's something I think will be quite a bit different here than maybe other places that are more limited because It's GonNa feel good. It's GonNa you're gonNA feel like Each each party is is private in the Because of our space We unique situation where the large majority of our table seatings are going to be for six to ten people so we have an and we've been getting a lot of phone calls for reservations in questions for larger parties and So the majority of our table seating can accommodate the larger groups which is awesome. It's I think that just the craft beer industry as a whole give you look at the restaurants versus bars. Verses Craft Breweries in tap room's I think it's already at an advantage. You know when you go to a taproom. Hugh already trust these people that that the run the place that are that are pouring you. Beer this is. This has become your spot already over time. It's designed around comfort and safety and and again I always go back to that trust. I think trust is more important when we start diving back into stuff than anything else. It's not it's not even to mean necessarily about the fact that somebody a table over is GonNa Cough and infect me with something. It's just that I feel like they're not going to you. Know that makes any sense like just that feeling of going out and feeling like things are OK. Well and to that point I think people are also at the point where they're balancing their their health with their mental health and when they walk into a restaurant this art carriage house specifically. They're not gonNA feel like we're in the middle of some kind of chaotic pandemic. They're gonNA feel like wow places even better than it was in. That's GonNa that's GonNa lift spirits that's GonNa make people's beer tastes better that's GonNa make. Their food tastes better. Because they're they're they're going to be not stressed about the environment. They're in so so I removed Just inside the building alone. We removed one hundred and two seats while it's a big space. I don't know if everybody has been out there yet but like the carriage house is especially coming from what you guys had before and the old tap room. It's just it's such a big space and there was already I mean when it got crowded. You've felt that you are in a bustling tapper but for the most part like it especially if you're sitting outside you really do feel like you're just you're lifted out of what a normal brew pub or normal taproom in Cincinnati feels like into this whole other world. You know you sit with your back to the carriage house and look at the pond put your feet up and just you just. You're you're somewhere else and not so hard to do. And part of what has always made you guys so so great as a as a brewery. Is that that escape without having to really go anywhere we knew longtime ago. There's there's no way we're we're going to be the number one product on on a shelf in. We just took steps back and said listen. What what is it? People like about our brand. What is they like about taproom? And how do we had a we grow that without losing it and that was the focus behind all? We knew the dividers were common. I've been building custom dividers for two months now so in fact there The guys are just now getting the staining today so you know we're prepared were we're gonNA make it the inside just as pleasant as the outside and a starting tomorrow are outside set up and you know we may not even lose sitting outside because like you mentioned we. We've got lots and lots and lots of room as things go forward and I don't know how much forethought into the future. You guys have had a chance to really think about. How does this affect the way you run the business? How does this affect the way you run a brewery wing? That stuff like this can happen whether or not this comes back again next year or whatever you know you hear different things from different people. But how does this? How does this shape kind of the path you take from here going forward versus how you've been taking it question? We've we really. We expected we had planned not open until June. Maybe July so this is unexpected startup. We didn't quite finish all the things we wanted to get done but You know when we look at The areas we have were focused on on like you pointed on Lake Fall. Okay if if this becomes an issue in the fall we're GONNA need more inside square footage So The summer our goals going to be to enclose more of the patio and extend that out so we would essentially be adding an area. That's Fifty two by twenty. So that's that's our focus being balanced. We're always balanced. You know we've always been balanced with our Business versus our wholesale business versus are taproom business and being able to pivot in have different means of where our revenue comes from has been helpful but I mean there's there's planning for stuff like this my opinion. I think everybody was. Kinda just hit. Hit a wall with it in the in in I told our staff when we when we let our front of the House go on the following Tuesday after they closed restaurants. I reminded them all that you know just restaurants today. It's it's IT'S A it's a problem that's GonNa Affect all of America and and it's just us today so don't think you're you know. Restaurants are being shut down and eventually you know once that was done. The next group was shut down. And it's you know we. We made a huge effort together and From what I've seen and what I've been told Now that we've opened a couple of places up outside There's been a lot of support for those businesses so by opening this week A week later than the state allowed for Patios to be open Not only do we get more things accomplished but We we kinda saw what to expect in in. Now we're little worried about the amount of staff we have to open There are some people that are still struggling with daycare and things of that nature so but there's a lot of new interest out there too so you know. I don't know that we have a way other than Enclosing more having more indoor space had to prepare Everything else working working. Well I wouldn't I mean we get hit hard with the timing of this. We had just about all of our draft production complete For the spring Russian and all this summer orders and end You know luckily Within a day or two we would have been on the other side of this but luckily we We didn't Actually rack any of that product. So I've got I've got fermenters that you know everything's Bowl but In the best place for that beer is in a dark cold stainless tank with no oxygen. So the bureau. Obviously it will hold up well under those circumstances and will will be well within our code dates here since the draft start to move in the packages also picking up. It's again. You mentioned it like nobody expected this to happen. This is this is one of those things that is. That's unprecedented you. We've lived in this world. Where where everything was always about moving fast and and growing in and this this fast fast fast in and then all of a sudden somebody just puts a halt to all of that and everybody just has to stop. Oh Shit like how do we? How do we do that in? You know not that you guys have are a slow moving brewery but just by the knowledge released. I don't mean to be negative by the nature of just how you guys do things like it just seems It seems that you're able to adapt to that better than I've seen some other places Do we see places that are just dumping tons and tons of money into packing their places with stainless steel? And then all of a sudden now. They've got this. Md tank space that. There's old no we're paying for this and there's nothing in it and how does that work and it's it's there's benefits to move in slow. I mean there really are this For the past fifteen years it's You know we're not. We're not aggressively going after. Anything is a lifestyle business and we try to keep the atmosphere around this brand inviting for not only our customers but our employees to because We you know the the people come in today to re wash a dish wear and and clean and and just Re Washed Pints. And and do all that stuff. These are people that open the carriage house with us..
