"You guys, they have a recipe for corn stock. Do you ever make stock with the court Put the cop's right. I have not done that, just like it makes total sense. And I've done it with other vegetables. But for some reason, I was thinking about it in terms of you know, and it's a really simple just corn. You know, taking the cobs and then onions and carrots and celery and then just, you know, kind of soaking it and doing maybe putting a leak in there, too. I think that's kind of smart. You can use it to as a base for lots of soup. Yeah, I think that's what your veggie soup in the fall. You know any kind of harvest E potato is su, right? I think that's so smoke, and I don't know why I haven't done that. But there I did use corn. I have done like the corn water. You know where you like. You'd kind of like press the corn and you get the number made corn water, the corn milk, But I made ice cream out of it and make sweet corn ice cream. That's how member I feel like a sweet corn ice cream with such a huge thing around here buries people would serve it with like a blueberry sauce. Yeah, I feel like sweet science said that And maybe when, like we first started on the air because you were really in the ice cream, then? Yeah, I think that was it. But I There's definitely something about also soaking your corn. You're sweet corn in milk, like taking really good whole milk and then soaking the fresh like smash up your colonels and throw that in the milk that I've used as a lighter essence to make ice cream like that. Yeah, I know. It's so good. But there's other I was going to say somebody thinking of you and all your self is a pretty pickle Corn Have you ever like those was the little baby ones that are in the baby? Come on, I know is loves those which crack me up. You know, she's like I love everything miniature. Why wouldn't I love miniature corn, you know? Pickled corn is fantastic. You just take it off the cobs and you could make like a chow chow. Or, like some kind of a Piccoli dip? Yep. Or, you know, Put it on anything. Really? Have you done corn fritters? Yes, yes. Is that more like is that more like doing like a cornmeal? You know, muffin or thing, and then putting your corn? How do you do your fritters? Flower? You just like colonels in baking powder? Yeah, and then corn and then fry em. Yeah, and they get like they're not pancakes, but they're also not like Ma. Funny. It's kind of summer in between. Yeah. And then I make zucchini fritters, two that are real flat that almost like our pancakes, You shredded zucchini. But then I'll make a corn relish for those. Well, that's a good idea. I do a lot of zucchini. Zucchini pancake, you know? Yeah, kind of comes out to be pancakes, even though I want them to be fritters. I can't fry in my house at all You know during this time of year because it's just so mad. I like it is like oil smell in the house. But I do love that idea of like putting like doing a zucchini and then doing Like a fresh cheese on top, Actually, the fresh ricotta that I made P s. I know I haven't talked about that with the fresh ricotta that I made. I made a whole pint of it and I have absolutely use it so much. I thought I'd totally use it all because last weekend I made this goat cheese, lemon goat cheese, lemon thyme tart. We're talking about the lemon thyme. First of all curia gold butter with the fresh milled flour from Help me inside the food building. Ah! Oh, you're talking Bakersfield. Yes, Yes. Oh, my God. Was that the most wonderful dough I've ever made? Oh, right texture and feel perfect. And then I cracked Does Artisan flower heirloom greens? I spread goat cheese on it. And then I did concentric circles. A zucchini? Yeah. You could do that with ricotta, Your homemade? I was thinking about that because I was ah, that Ricardo that I made, which was just quick and easy. You guys you can either do it with, you know you could do it with butter, milk and milk. Or you could do milk and cream with a little bit of Renate and citric salt. Would you Khun by those anywhere? I mean, like that's not too hard to get. But it's just about taking it up to like you know, 110 degrees, and then it separates and then that's all you have to do. And so and like. The inside of Barata, you know is basically Ricardo with a little bit of cream, So I just took that ricotta. I whip some cream into it. You know, And then our asserted in there and salted it papered it. And then that was what I used on like as a base for everything. I mean, I put it on top of my burgers that I was heating. Yeah, no, I mean like the ricotta. It's like one. Also, it's like, you know, your stove is on from what may be 20 minutes, like 30 minutes, That's it, and then you get this beautiful and it's a huge thing of it that you can easily just use in your fridge for awhile. Cracks so much better than actually buying regatta. I mean, I feel that was a nothing better feeling. There's no recorder on the shorts, you know, Sometimes you make something and just the grief. $2 ratio is like, Well, yeah. Vour Kata is not that it is the exact opposite of that. And I will put up a direct recipe for people who need to get a little bit more because I know that that's people will send us messages about that. And I haven't done that. I have means been meaning to put up my easy ricotta ideas so that I did it last year because you were so inspired his maker, and it was amazing. You know what guys that if you need a bit of magic, there's something magic about like putting milk. And liquids in a pot turning the heat on and then all of a sudden watching like the curd and the way separate and then you're like that's just food magic. That's like fermenting his food magic. And sometimes you need a miracle to say Yeah. All right. We're gonna take a quick break. You guys when we come back, you know. We're gonna wrap it out Stuff stuff. We'll be right back. This is weekly dish. It's that time once again, my talkers to reach out and ask for a donation. Easy there, Kitty Kitty, I was just asking for video submissions for the cat Video Festival. Yes, really squishy, and it's like soft when you touch it. But it get your hands dirty. Have you ever found anything surprising in the soil when you're working with it? Yeah. I found a lot of buds kind of bugs like warms and. Ladybugs cool. You know, we're actually going to get back to that in just a little bit. And find out more about all the stuff that's living in soil. But first we're going to answer another question. How many different kinds of soil are there producer Santa Totten is here to explain soil is made up a three key ingredients. They are sand silt and clay. Sand you may recognize from its starring role in the beach or the desert or kitty litter, kitty, kitty getaway shoe now kidding. I'm trying to explain the three types of soil was I sand sand particles are pretty big as far as soil goes. You can see the individual grains with your naked eye next. You've got silt compared to sand silt has pretty small particles. And you can't really see them without a magnifying glass when it's dry silt. Looks like cocoa powder. It's light airy and. It goes way really easily, but it's wet it's mud messy. But feels pretty good to squish between your toes who. Yeah. That's nice. Lastly, there's clay Clete has teeny tiny particles. Get it wet and clay is some sticky stuff dry it out, and it can be as hard as concrete plans have trouble getting the roots into clay. But it's perfect for making pottery most soil you find in the wild. Bo is a mixture of these three things a little bit of sand. Little bit of silt and a little bit of clay, if the soil has all three of these things that equal amounts. It's called loam, and it is glorious. You can grow all kinds of things in Lome. And that everybody is the dirt on soil..

You can't start being a professional ballet dancer at age, twenty five, right. So, and you're so successful and I have news for you. A college degree doesn't equal success. Happiness luck love. It doesn't guarantee anything. I'm not saying people shouldn't go to college. Education is very important. You're having a different kind of education. I'm so proud of you. "Yeah but it all started in the same place which is an genetically they are all so close i mean they're tiny little changes in their genetic code that create all of these very different looking breeds but at their base they're really all very very close genetically and it all came from the fertile crescent do you have do you have a favorite historical cat tricky you hear a lot more about people's dogs in history you think cats often you know dogs are out with people title riding in cars and saving the day cats are at home by the fire while i was even startled to learn that queen victoria had cats yeah because i'm kind of a queen victoria nerd but you always hear about her and her dogs and this doing research for this is actually the first time i heard about her cats yeah it was like whoa they accounts cats too but i don't think i have a favorite historical i have a favorite from recent history yeah which is is cocos kitten all ball oh yeah who was a main cts yeah and that was the they wondered if the reason that koko the gorilla picked a makes for a cat as because that kitty had no tail yes if you don't know about the speed they have they can have all links of tales but the breed ideal is to have no tail so they do kind of like little balls the the breed standard if you go to a show one of the things that they're looking for is that the cat could be drawn entirely with a series of circles like you want all round shapes about its body so it would make sense that cocoa identified it as a ball just very sweet.

"Here or a main server chartreux if you look at any of those show cats you know purebred show cats they're thicker and heavier and they don't look the same as you know kind of the leaner like an abyssinian or any of the the kind of live breeds they have like a a little bit of a husky or appearance so there was some mixing going on and it's actually this is a little bit of a side note a believe that cats were first brought to britain which probably catalyzed some of that breeding by the romans around ten ce and so that's when this crossbreeding started happen in different species that we eventually turned into purebred i'm using the air quotes pedigree cats all started at all capitalized right there yeah various mutations and crossbreeding have occurred that gives us the assortment of pedigree cat breeds that are today so siamese cats and burmese are the results of an albino series mutation rex breeds have a curly hair mutation the hairless spinks ear mutation of this cottage fold in the american curl all of these come from breeding mutation and if you ever want like a fascinating walk down like breeds specifics and mutations that have purposely been retained through breeding go to catch show it's one of my favorite things i do at least one every year because i think people that have never been won and they've only been around like you know your regular house cat they're a little bit blown away by how different all of these cats sort of look and how they've been and how they behave them have deeply different behaviors.

"Because all cats have really similar genetics their thirty seven species in the family fell a day that's everything from a pet cat to lions tigers awesome lots who were my favorite wildcat at cetera every domestic cat is a descendant of the wildcat species and there are five subspecies of wild cats and some of those are almost completely indistinguishable from you know your nonpedigree pet cats and this is not a situation where the domestic cats have gotten free and reverted to becoming feral or the you know become strays or they've just wandered off the actual wild breeds are so genetically similar to house cats that many people could not distinguish on visual alone we'll see wildcats that look just like a cat your friend has stephen j o'brien a molecular geneticist at the national cancer institute's laboratory in frederick maryland was working with carlos driscoll here's a graduate student at the university of oxford and david mcdonald an oxford zoologist and others together they conducted a study in two thousand seven in which they took blood and tissue samples from all kinds of cats from the pure bred house cats to nonpedigree house cats to feral cats and each of the five subspecies of wildcats to compare their dna and they took those from all over the world and a washington post article about the study stated quote the findings drawn from an analysis of nearly one thousand cats around the world suggested that the ancestors of today's tabbies persians and siamese wandered into near eastern settlements at the dawn of agriculture they were looking for food not friendship the researchers found that domesticated cats all over the world most closely resemble the liberia subspecies that comes from the near east this is significant because it shows that it's not a case of any given region simply taming their local wildcats.

"Yes so if you're a new nerd or an old nerd season person come join us and listen to our podcast you can get it on apple podcasts and we'll have you saying i'm actually in no time flat checkout near deficit nerd if isn't i messed up that harmony at the beginning so i wanted another shot so although cats were domesticated centuries ago the idea of a pedigree is still pretty young that probably started in england sometime in the mid to late nineteenth century queen victoria owned two blue persians which is believed to be one of the things that gave the the cat a reputation for being a perfectly respectable pet and the first cat show took place in london in eighteen seventy one and england's national cat club was actually founded in eighteen eighty four the first pedigree records in the united states were for maine coon cats in the mid eighteen hundreds this breed is still one of the most popular in america it is beautiful but even with the popularity of pedigree cats it's estimated that less than ten percent of cats in american households are purebred compared to more than fifty percent of dogs in american households so i mean most people that you know that have cats they're just cats it's a domestic pass yeah they'd get listed in your vet records domestic short hair because usually are mixes you know different cities are trying to control their feral populations different ways but a lot of times rescue groups will scoop them up and socialize them in adopt them out so there really isn't any knowledge of their lineage and where they came from so how did we get from wild animals to fluffy lap friends all over the world well this is interesting from a genetic standpoint we have had sort of a startling revelation about it it's really hard to track where cats entered human homes in culture versus where wildcats are because the skeletons of small wildcats and our domestic cats are virtually identical they're really hard to tell apart so you can't really contextual is if you find a cat in ruins it could have wandered in later it could have been part of the thing we don't know it looks like a wildcat will they all look the same so you can't really do that and even dna testing is not always conclusive.

"Granaries meant that cats were moving into hunt rodents yeah and it's believed that catherine probably really welcomed by the early farmers for this helpful service and this actually may be how egypt can't came to really revere the cat like they recognize that of their own volition cats were just coming in and doing this thing that society really needed yeah and so that was part of their growth as a very respected and loved animal keeping the rats out of the grain yeah and some evidence actually suggests that the theo paeans were the ones that brought cats into egypt after they conquered the nubians which is a whole other area of history that i would like to do more podcasts on as we know the artistic representations of cats and egypt are not all about their uses the rodent police cats are depicted as part of family life and their pampered and even adorned with jewels the penalty for killing a cat in ancient egypt was death there have even been discoveries of special cat cemeteries in egypt and lastly the protector goddess best it is a woman with the head of a cat as an interesting side note the agip show word for cat is now and there's actually a breed that's recognized globally in catch who has called an egyptian mau but it's basically just saying it's an addiction cat which i think is funny and they're lovely cats the exact point of the transition from wild to domesticated in egypt can't really be pinpointed with accuracy logic tells us that it would have been a gradual process with each generation of cats living alongside people becoming more and more tame and there's also at the breeding really began around this time with cats so that they were they kind of forked the cat population they were breeding the wilder cats and the more predatory cats as their hunters to keep policing for rodents in the green and then they were also probably breeding the more docile cats together to create house cats that would be you know part of their family and their household and maybe also.

"Quance they've been portrayed as you know the familiar of super villains and they have been associated with doubles and sorcery but overall they still have a pretty okay standing cats are divided into three genera there the great cats which are lions tigers leopards jaguars cheetahs get their own and then small cats all house cats belong in the feeless catez genus the largest cat in this group is the puma at one hundred to one hundred and thirty pounds or forty five to fifty nine kilograms and the smallest is the black footed cat of the kalahari desert and southern africa which is between two and a half and four and a half pounds or one to two kilograms if you google those things they are the cutest cats you've ever seen thirteen and they look a lot like the cats we would keep in our homes the been there's a reason for that so we're focusing today on that third group and how members of feeless catez became domesticated for a long time it's been believed that the ancient egyptians were the first people to domesticate cats there's certainly lots of evidence that the ancient egyptians loved cats but the belief that that's where they came from has shifted a little bit thanks to more recent genetic studies the earliest artistic representations of cats that we found have been an ancient egypt on crete in cyprus and in some areas of the orient and they're also catt statues in some of the ancient art of india in nineteen eightythree an eight thousand year old feline job own was found on the island of cyprus a site fifteen hundred years earlier than that was discovered on cyprus in two thousand four where a cat had been buried with human and it was very clearly like that they had been buried together right not that he happened to be jason's and since cyprus is an island and wildcats would be very difficult to travel with on a boat it stands to reason.
