"See someone that dedicated to this community has helped out and I'm not going, you know, spill His old stories, but I know for a fact. He's incredibly generous and has helped out other restaurants in their early days. No questions asked. He's the type of guy who goes and he supports other restaurant since I saw him just generous. I mean, I saw Emma King Taco and he was able Who would talk to the manager in Spanish, and I got an extra little serving cup of salsa Verde. They don't give that to white people. That's how you know that was really nice of him. They see the white guy coming and go. OK, just one sauce for that, dude. One sauce one sauce once, but he's not gonna be able to handle two sauces like I'm looking at the Burbank Outage map right now. And it looks like at least in Burbank. We're trying to keep you know an ear on the ground here. It looks like there's 123 There's only 12 11 people out of electricity right now in the whole state of Whole City, Burbank, so you're in pretty good shape. "We lead local live from the CAF, I 24 hour news room Rob Newton. He's a little He's always having such a lot of a lot of If I am at 6 40 it is the Conway show, and there are a lot of restaurants out there that are scratching their head, figuring how the hell do we know what to do how to stay open where to serve meals. I've passed by a Denny's today and they have a tent outside. And they have the top to the tent. And they have all the four rat there the floor. Of course, that's the pavement and they've got the roof, the top the ceiling of the tent, and then they have All four of the sides all covered in plastic. Well, guess what? You're back indoors night. Why not walk into the restaurant that pointed heat? I don't know why Neilson pagers with us, and I'm sure he's got a lot of friends who are frustrated is hell and probably thinking of closing up. Because of the outrageous, outlandish and crazy rules that these guys have to follow every single day, and he's with us, Neil. How are you, sir? Hey, buddy. I'm well, how are you? Good. How you feeling, by the way, I know that I haven't seen you in, like, four or five months and you went through a crazy year. But then, you know, then covert hit and you got to stay home even longer. Not gonna lie to you, buddy. A little twitchy, twitching. I'm doing great. I mean, I love being around my my boy and my wife a lot. We do You know if you ever want to know if you should marry someone travel with them if you can travel Other lands outside of this continent and you can check out places then you're good to go on. So we deal. We're doing very well with it. But you know, this is I'm going on a month nine soon, so I'm a little twitchy week go for drives and stuff, but it's really It's like anything else starts becoming the same. So I'm really in the same boat as everyone else because they're all in it for five months and It's all this holds your kid now how old your China 106 A TTE. The beginning of Kobe. Hey, was just a little boy. I know he's three. He'll be four in November. Wow. That'll have a covert birthday. Probably like the rest of us. Yeah, I remember making the mistake of taking my daughter. To Disneyland when she turned three and then also when she turned for and I said, Well, let's go in and go in your favor ride when she was formed, and she said, What's my favorite ride? I said, You know, pirates of the Caribbean. She does or if I've been on it like, Oh, that's right. You don't remember threes. I spent a lot of money every year over, you know? Well, it's free until they're three. I didn't see I didn't know that I I said when we went there on 1/3 birthday was October 5th. You know, whatever year that was side 2008. And she asked me at the gate because how old your daughter and I go. We're celebrating our third birthday. But what? I didn't realize that we're there on October 4th. She was only two and she turned three the next day, and I screwed myself out of that ticket. And you're not even lucky On the basic things. It's unbelievable gambling. Worse. I dates. I literally have the worst luck in the world. I was at the racetrack with a buddy of mine, and I had J. Cohen, the bugle player. I said, Hey, it's my buddy's birthday. Will you embarrass him by playing happy birthday on his trunk on your trumpet for him? You don't happen to know a lot and a crowd gathers Happy birthday, Dear Frankie, 88 Psychotic Crap, right? Hates it, So everybody leaves. And he looks at me and goes. You're the biggest a hole in the world. And I said, that's a nice happy birthday. He goes. No, no, because you have no idea. It actually is my birthday. I didn't know that and he goes well. And you exhausted All of our luck today on that stupid move. Oh, boy. All of it. God! Alright, So let's talk about these restaurants. I knew their friends and family in the restaurant business, and there's a guy up here in Burbank, who owns a winery slash restaurant, But there's different rules for these guys, right? Yeah, You've got Giovanni there at Urban Press Winery, and he's one of those, you know, there's many of them, so if we put faces and names to these people, it's because we know them were connected with them, and we've eaten at their place is but I know that there's many of Nameless, faceless people that are out there dealing with the same thing, but but he's like ours at Brewery. Ah, bravery Brewery there in Lancaster and An urban press winery there in Burbank. You know, they shut down San Fernando Boulevard there, Tim, If you haven't noticed, they shut that I know it's great. We're smart, you know, and Burbank would might tip my hat to him because they were early on saying, you know, we gotta do we gotta do and they were shutting down parts of streets and things like that. So they did that and hear this guy's thinking. Okay, Great. They got built this whole outdoor area for people to come. Eat he since day one. This is not something he did for Kobe it he has a permanent food truck. Its hiss. It's not someone else's his permanent food truck. He's got a patio. He's got all this great stuff. They make all their food, some fabulous pastas. They have their great pizzas, everything. So it's a winery that serves food And apparently, my understanding is Cove ID the virus. Knows the difference between a Ah winery that serves food. And a restaurant that serves wine. It's got to be a genius. Tell you walk around and go this one that one so that it really boils down to politics and licensing. I know that there's you know good people in politics, and I'm not someone that bashes him across the board of Supervisors of Los Angeles are the ones that are dealing with this and you gotta hope that they're just People trying to deal with the situation the best they can. But sometimes you gotta quest question the reasoning in all this stuff. A lot of has to do with the levels of food permit their three levels. Low, moderate and high and they're given to you based on the way you handle food of the type. You handle food. You best believe that someone handling sushi He's on the high end of that totem pole versus someone who's you know, reheating frozen food or something like that. So they're working through that the ABC is loosening rules for delivering Alcohol with food and only thinks they're trying to figure it out. But there's some. There's some weird red tape. And apparently, maybe not All the supervisors want this to happen. But l a county is set apart from every other county that I can see in the way that they're dealing with this and the rules and regulations they're putting on it. And it's a It's a real bummer, Tim. There's just really good people going. You're you're basically tying both our hands and saying Well, go fight this monster out there called Cove it right and good luck. Well, you know, Neal savages with this fork report on the Jesus Guy show, but I ran into one of your friend got him or Mondo MME and he owns Isaac Goose. Otto's No, no, Our buddy Armando dilatory is from Lisa. Does this have to do? It's Spanish? For students like student meets and stuff like that? Yeah, that guy's great man. Look, he owns like 8 to 10. 12 restaurants. And I saw that guy King Taco. You know the great thing about here, right? He loves food for one, and he loves supporting local restaurants. You will never.

The United States of McDonalds

"For ME GROWING UP IN CHICAGO. McDonald's was always around. We had birthday parties at McDonald's because her apartment was on on the small size I went to McDonald's after work in high school and after school. It was the go-to meal when my mom Um and I were driving far distances and we needed something to eat and so I have probably spent most of my life inside of McDonald's so the fact that I wrote a book about McDonald's. McDonald's is actually not that surprising. This is Marsha chatwin. She's a professor of history and African American studies at Georgetown University and her new book. The book about McDonalds. It's called franchise the Golden Arches in Black America and speaking of the Golden Arches. There's another new book out called drive through dreams. James A Journey through the heart of America's fast-food kingdom it's by journalist. Adam Chandler the Golden Arches are thought to be according to independent survey more recognizable as a symbol. Both then the Christian crosses around the world recognizable or no. I didn't imagine we'd ever focus an entire episode on McDonald's but here we are Dr Together. Adema Marsha Taylor story about McDonald's that is about much more than McDonald's making it perfect for gastropod and we of course our guest repod the podcast. That looks at food through the Lens of science in history. I'm Cynthia Graber and I'm Nikola twilly and this episode. We're getting to the bottom of how McDonald's took over America. The story starts with WHO invented the hamburger burkart. And how did it become so ubiquitous that it gets bigger from there this episode. We're asking his McDonald's basically America's national cuisine and if it is is what can it tell us about who we are as a country less. How did the tax payer ended up funding the spread of McDonald's in the inner cities and why we're civil rights groups on board? Well whatever idea you have of of. How huge fast food is you should double or triple in your mind because the statistics are bonkers? They're completely bananas us. Eighty percent of Americans eat fast food every month. Ninety six percent of them eat fast food every year which is more than the number of Americans that participate participate on the Internet atom. Says there's not a single place in America that eighty percent of Americans go to at least monthly not a library or Jim or any house of worship according according to the Centers for Disease Control which is not happy about this stat. More than a third of American children eat food every day and for the population as the whole. It's roughly the same thirty six percent of us. Eat it every single day out of all the fast food available to us in the US. The biggest I the most popular chain the one that serves literally one percent of the world's population every day of course it's McDonald's which according to somewhat recent stats sells seventy five burgers every second and Serbs sixty eight million people per day. There is no real way to get your head around numbers that large. But what's weird is that's is makes McDonald's the biggest almost everything everything. It does so marshalled as the McDonald's is even the largest distributorship toys in the world just because of happy meals. At how do they get that big to answer that we we have to go back to the beginning. It all starts about one hundred years ago with the invention of the hamburger. Well there is a lot of debate as is debate about anything culinary in this world about who invented invented any particular item there are many authors but a lot of historians culinary or otherwise. We'll give credit to Walt Anderson. And he was a fry cook in Wichita who one day in one of those kind of Isaac Newton Aha moments got really frustrated when he was cooking a meatball on a griddle and smashed it flat right with the SPATULA and the result was a burger that cooked through really quickly and he put them in these specialty buns. And that's sort of the most recognizable version of of the Burger that we have well Anderson's meatball. Smashing moment was a breakthrough. He went onto lunch white castle. And that what is believed to be the very first fast food chain in the nineteen teens and twenties. There weren't fast food chains. Americans lived in a very different world less connected less cosmopolitan. I'm a politician. Even as late as nineteen twenty five only half of all the homes in the United States had `electricity even fewer had indoor plumbing. People weren't used to dining finding out regularly. Generally speaking there wasn't a unified culinary culture. There wasn't one item. We had ethnic enclaves that had their own specific blends of items that that were cherished and part of a tradition but in the nineteen twenties America was starting to change. The model t was becoming more affordable and the number of people who owned cars more than quadrupled. Adam told us that nineteen twenty was the first year that more Americans lived in cities the not the US was starting to become urban. The First World War was the first mechanized war and the nineteen twenties. He's was the machine. Age Technology promise to streamline and modernize every aspect of American life the nineteen twenties was also. The beginning of radio's Golden Age and more and more people started to tune into music and mystery and comedy shows. Radio started to create a national culture at the end of World War One reserved this unifying aspect to American elect. Technology was bringing about and the hamburger was part of that was part of finding a national diet. The hamburger did have one hurdle to overcome Americans. At the time. I'm was scared of ground meat. They were scared of it. Because they'd all read the jungle by Upton Sinclair and they were nervous about the quality of the food. The jungle was a really important book from the Early Nineteen Twenties. We talked about it in our episode. On the history of preservatives. It told the tale of a semi-fictional worker in a Chicago. Slaughterhouse and the nightmarish conditions there for both the workers and the resulting meat while Anderson than meat ball smashing genius behind the hamburger. He was fully aware that Americans thought ground meat was likely full of dirt and and dead rats and even workers fingers so what he did was he designed these stores that all look the same. They had stainless steel interiors white tiles and they look like castles and white castle was meant to kind of convey this stately safe grandeur of a place where you could go and it would be the same everywhere you went so it was meant to reassure consumers. Who didn't really know what was safe to eat? And that really set the tone for what would come in the future of these industries of franchising of seeing something wherever you are in saying. Oh I knew it. I'm going to get here. This is familiar to me. White Castle was the first to open in franchise fast food restaurants. But it isn't the biggest today as you all know. That title goes to McDonald's. McDonald's brothers were these two men from New Hampshire sure who had kind of seen the extremes of the great depression and they headed out to California to see where they could strike business. Gold Dick and Mac McDonald headed West in nineteen thirty. They were in their twenties and their thought was. Maybe they can make it big in the movies. That didn't find as much success as they'd hoped they were two sons of a shoe factory foreman and they found success more for in the business side of production the catering. They went from that into the restaurant business. They opened up a barbecue. Stand in nineteen forty and southern California and and it was one of the drivers of the era. That people are often familiar with car. hops in major at boots and a young guys cruising in in cars and people hanging out and just kind of a big scene and they were successful. First restaurant was called McDonald's and it was in San Bernardino which is just east of La. It's meaningful that. McDonald's started in southern California because southern California was really where a lot of changes that overtook. America were happening kind of on on steroids by the early nineteen forties. The Great Depression was finally over. San Bernardino is shifting from being farming town to more of a manufacturing and service industries industry center people were moving their into the growing city and suburbs and increasingly. They had a little disposable income but also San Bernardino was on route sixty six and so it was a place where a lot of people were traveling throughout California as well through as the rest of the country. So Dick and Mac McDonald. Were doing pretty well for themselves. But but then after eight years in the restaurant business. They surprised everyone by deciding to close their popular successful restaurant and entirely revamp it. The re diagram to what the kitchen would look like they use this assembly line model that White Castle and kind of employed and they cut the menu items from twenty five to nine. They also fired all all of the young women who are car hops because they felt like they were flirty and they would distract from the work that was happening there. They also wanted to pivot away from being a teen hangout to family friendly place. They got rid of silverware because people would steal it or break it and they went to wrapping Burgers in paper and they wanted to create the most efficient kitchen possible in order to serve as many people as possible. And so the revision of the McDonald's drive in is what we are living with today a highly automated mechanized kitchen and that is able to produce high volumes of food and a very short period of time. What they did was they basically just souped up the kitchen and turned it into a factory? An assembly line dusted with Hollywood magic. And the result was they could serve food for cheap even cheaper than their previous menu items had been. I didn't know what to make of it but it caught on very quickly. This new McDonald's factory style restaurant didn't just catch on with eaters. It became a total phenomenon. Within the restaurant industry. Eight people were coming from all over the country to kind of hear and see what was going on because there were these whispers in the industry about this place that was so popular and and you know there were long lines and people were talking about this place. That was not just serving a lot of people but serving a lot of people quickly so eventually the founders of Burger King Taco bell a couple of other chains that didn't quite make it ultimately stopped by and they copied with McDonald brothers. Were doing as Z.. Listeners know some of those copycats are still around today. One of the businessmen who came to see it was none other than Ray KROC. He was a salesman and he sold the mixing machines machines for milkshakes and the McDonald Brothers had bought a shockingly large quantity of these machines so great thought he'd go and see what they were doing with them. Ray had been in nearly every kind end of commercial kitchen available. At the time. He'd played jazz at speakeasy. During prohibition he'd sold kitchen and restaurant supplies around the country so he came to the McDonald's restaurant in San Bernardino we know and he saw the crowds and he was completely blown away by it and so immediately said this needs to be national. This needs to be everywhere. Ray convinced the brothers. Let him start working with them before long. He bought them out. And the tool that ray us to fulfil his dream of taking this model national and then global global was the franchise so franchising is this concept that a parent company provides all of the blueprints and the instructions and the recipes for a product or service and the Franchisee pays Hayes for the right to deliver that good or service to an audience. Ray KROC didn't invent this franchise model White Castle had already been using it and in fact many experts think that at the root of the idea goes back to the Catholic Church in the Middle Ages tax collectors did the work of the church and collected tithes and the kept some of the money for themselves at the start of the twentieth century. Rick Coca Cola had used the franchise model to make their sugary drink available at drugstores across America. But it was ray KROC who really took this franchise idea and ran with it. The franchise model. I think is amazing because it allows companies to pass on all of the liability to this other party so so that was sort of the way in which McDonald's grew really quickly and also took a lot of the risk out from opening places and this is the way they maintained control over franchisees so it was consistent. You didn't have rogue franchisees trying to sell Pepsi when you had a contract to sell coke and so it was a complicated system. But it's what turned McDonald's into the the biggest in the fastest growing fast food restaurant. The

Let's I would prefer a right and cake batter <hes> in a caked on it is just an uncooked donut. It's crispy cream cake. I know but also I hate a Brownie that had brownie batter in it Brownie Battlefield Brownie yeah however that even work I mean that's not my problem. Whoever I like crispy cream is doing it any way you would make this works in like it shouldn't work <hes> yeah? I'm scared of that the incident somebody's already mentioning Burger King tackle we can bring that is our next news item because we're GONNA be eating it through a straight into it. We'll we'll pause we'll get there. We'll get the news item for me that came up when it was not that it came out but the whole look you're saying in the chat right now. The tacos look good on T._v.. They do good. That's what I find T._V.. Look good on T._v.. Ended I have a lot of TACO sauce but look we'll come. We'll get there so yeah. We'll we have not open these up yet. We don't know we'll slow. We're all finding out together so news. There's Oriole News. Yes I'm excited I am well. I mean because this new or is a new oreo is buttered popcorn Oria. Yeah we had kettle corn which this this makes me wonder. Would you eat a probably a reference a butter flavored oreo yeah in order to fill out and might mutter. I I had dude fried butter at the state asset you just stick of butter. That's true yeah so yes I would enjoy my not. I mean sputter yeah butter popcorn corn though someone asked me if I would eat a glitter up obliterate of butter blizzard and I was like at I think that's just frozen custard. Maybe maybe yeah so hopefully we will have those next week. We just heard about those not able define them for this week but we knew they were having but they apparently hitting stores but not yet made it to the mid West. Yes what we were talking about ice cream though too I have I news there has been well under say that there's a man Dan not me who bought a gallon of ice cream and I think it was maybe a gas station or a convenience store and he went up and the guy the cashier said Wilkie by another one. There's a sale so he went back and he thought as he had this <music> a gallon that he was hit already bought he thought I wanNa do something funny so I don't know if he went live on facebook or if the or if he made a video and upload on facebook but he he opened up the gallon an ice cream and started licking it and put his fingers in it and made it looked like he was putting it back so he upload this just for a laugh he'd paid for it. He wasn't trying to do anything dumb but he he upload this what happened it went viral and the Internet outrage ensued no copy catching what I spur style was one of the copycats snake arrest people are getting a right over the opened up the lid of ice cream lick. It put the bag stuck it back in the freezer in uh-huh. Have you ever seen video. I should be careful of this like have you ever seen a food video but two cups and then been like I really WanNa do this challenge and that I did this the challenge <hes> yet so like this this challenge it like one woman spit in it and <unk> look it up and <hes> yeah it's what's wrong with. What's the news no that's why you may have seen pictures on the Internet this week of locks on the cases ice cream yeah the freezer that say see cashier for assistance because so these fools who are opening up gallons of ice cream licking them putting them back let no good practical joke though on the kind of ice cream that has not only under the lead but like pretty much is there? Really any food that doesn't come in like a tamper evident packaging ice cream some of it you just it's just a carton that you open. There's no plastic seal over some of the brands I guess now so and not allowed to saved from US anyway. We want to get at it. Yes so I'll we also need to mention last week. If you accept so it'd be intern Ben here yeah and that was so nice they haven't here and after the show aw Danny Knight took him out to a buffet and he got a salad so there's no longer than we are. We are back. We're looking for an intern. If you want to like fetch things more banting yes watch it. He was basically see you at the buffet can was like ask me. I'm showing him like these are the deserts over here and he's like I'm GonNa get Sal Ryan. I Yeah I will say this and and this is not an intern Benz Defense Lewis's actually like on your side I took him to Bachan on and he didn't even go and look at the meats he was like. I live in Kansas City. We have plenty of smoke needs. They're not like the high price <music> so many different kinds of things in Vegas. I get me smoke. I can get meets at home. How I'M GONNA get the N._F._l.? Canal let's now as for that is so look out for your ice cream everyone. That's what we're saying this week more news or should the GO-TO experiences not having recovered my experience to to all right. I think we're ready to dive in. These tacos are not getting any day are not these are fresh from Burger. King Burger King has dollar tackle addictive so you're kind of like it already snowing. I know I take him out of the bag and all like they've they smell good. They are clearly labeled Tacos and they're what I expected after binding know how about them okay banana chance that don't have one daughter. She's being the dog for not having fun right now. That's that's like yeah. We'll post pictures on social media as well. I need to take pictures. Yes let me take fiction business. Is I mean it's a dollar but still it's Kinda sad now. I have a question TACO. John's is a dollar when you have tacos days July shower Joe Pacos pens. I would probably prefer soft-shell me too. I like crispy with beef in soft-shell the chicken ally now me like when I think of a crispy Shell Taco I think of the like elementary school horrors when I think of like a soft shell I think of something delicious heart shot to keep from cracking so easily or getting soggy thrown. If someone put the cheese on the bottom end of it makes sense now people are saying these put the S._O._S. and gastrointestinal disorder so I've I been hearing that so like you know we're GONNA WE'RE GONNA keep classy here as there's lettuce in here not a mine and now what you could customize easies where the only options just lettuce and cheese and that's it so I'll put it back with this literally all the lead at I'm not so I had bought <hes> you do have the <unk> Burrito when that was out. I do not not listen. This is Dan within price but tastes better than expected. The shuttle is not bad yeah. No it's actually like Taco meat. Where's the <unk> Burrito was basically <unk>? PATTIES chopped up with all the walker ingredients rolled into a Tortilla. Shell a little bit of like attack it was there. There's not a lot of labor if you like a Taco with seasoning and flavor. You're not gonNA like these. If you're mean you'll feel probably enjoy it because it just like me as you think to yourself. I WANNA tackle that only costs a dollar dollar taste like from a fast-food place. You know what I'm actually. I didn't expect I'm going to recommend these dollar. I think Mexican finish it that I gotta take another picture finish it because I didn't have dinner. We'll just say it doesn't taste like anything but like refried beans and a little bit of their no beans in county better than enough but I'm saying it tastes like refried the answer. That's how like we're the beef is but if anything happens here and we need to excuse ourselves. Let's just saying excuse me I have to go cough from or something I dunno indoor on the chat asked how they compared Taco Bell will good news and bad news for you. We don't have Taco Bell Tacos to compare them to but we do have <hes> we have some Taco bell flavored sunflower seeds that we can compare them to not gonNA Taco flavored potato chips it compare them to. We don't have Jack in the box here so we can't compare them to well. I can't at least you've been to Bosnia. I'M GONNA say the meat here. It is the texture of refried beans. WHOA you're saying that Taco John's Taco bell both have like it's like meet that you will never go? That's that's the difficult term I was looking for ground beef. This meets line. Let on extended Neat Mush. I don't know they did that meets line. If you want good Taco from a restaurant don't get this. If you WANNA fast food TACO getting all your friends want to go to Burger King and you really don't WanNa Burger. It's a book I have to tell you. If you want go to Burger working really don't want a burger if French fries no but please get the APP everyone. I don't eat at Burger King a lot but I was like I'm going there anyway so I got the Mozzarella sticks which are so good and I got Mozzarella sticks but only brought us. macos even if I bought something would not have made it. They're that good. It's been ages but pam when I had them later. Yeah they're really good. Anna had a fifty nine hundred cheeseburger too so so yes so yes. The meat is like case. I'm gonNA open up the smell as smelters. These are new for the summer. Leys has the we I think we had tackled from some other brands but these are crispy Taco flavored potato chips so bs look at the Colorado voter king better than we thought let's see they smell like a Taco. That's like the color of tackle with being a potato chip. They kind of like I can taste. I hate to say this but I can taste more distinct ingredients in the chip than in the Taco Bell after this I can get the tomato because there's only has lettuce cheese cheese and sauce in in the Amer game. Yeah the chip. I'm sure has way more flavors way better than this is what you gotTa do you gotTa Open Up. The TACO. Put some chips in it now that shooting 'cause you're like now. My TACO NOCCO tastes like a Taco because you've added Taco powder. You call it cheating cycle life. Hacking these are pretty damn good. <hes> I Mike I like I said I don't like the crispy Shell Tacos but these as more like crispy Shell Taco yeah like that I remember from my school days than the Burger King fees and I'll say the Burger King Taco is a little soggy but I did bring that from Burger King to here missile at Miami but to do what he had set up everything so to sit but the other chips definitely putting in the TACO crispier these. I think that's the intent I know we make face it all yeah. Can I saw AH camping out and Fed a side note last week. <hes> we played F._M.. Cave with the chips and leave all read we want to marry the Fried Egg Gypsum Danny United side right away like all the time yeah divorce <hes> yeah you know it was like the hangover where you wake up and you're like wait. What did you finish them? No he's still have W got divorced. It's a moment like the leftovers are knowing them. It means that there will be cultural indicators that we can look too, so that we don't have to wait every two years for congressional elections in every four years for presidential elections in, I would argue that this right here is one example. It'll be emailed, a settlement between the Federal Trade Commission and Facebook for a five billion dollar fine for its mishandling of personal user info is being delayed to Democrats on the FTC commission. How much higher is a CEO salary over worker salaries. Well, this Associated Press study is a real eye opener the average pay package and twenty eighteen for a CEO at a big US firm when you add in salary stock awards, bonuses, and other payment rose seven percent. That's an eight hundred thousand dollar raise to over twelve million dollars by comparison, the average worker at those very same company. So their pay rise just three percent last year. "Any of the democratic candidates. I will not do it. Last thing. The Democratic Party means now is for the be a fight among Democrats that gets into something that's unseemingly whether it happens or not I pledge to you. I will not be partying Joe Biden at king taco in PICO union here in LA yesterday. Mayor Eric Garcetti was by his side as he spoke to fellow taco eaters and ate taco Garcetti also met with another candidate south bend, Indiana. Mayor Pete Buddha judge today, both Buddha judge and Biden are here. Vying for potential votes in California's primary they're also looking for some money. There are a lot of rich donors here. California is an important state in the race for the nomination. Of course, it has around five hundred delegates at stake here to tell us more is Paul Mitchell. Vice president of political data Inc. That's a bipartisan vote. Data firm. Welcome back to the program. Paul. Thank you for having me. Well, but a judge is getting a lot of attention here. He's in northern California tomorrow, basically meeting with besotted Silicon Valley types, but you know, there's Senator Kamala Harris, and as we said, there's Joe Biden who is also popular he's he's pulling at the top in national pulse. So California anyone have an advantage here yet. Well, I think obviously by Newsbeat on the ballot. And then, you know, California voters voted for him in the past and Harris. So I think there's some built-in there. Sanders, obviously has had a basis support. He's been on the ballot here in California as well. So the three of those I think have have that going for them Buddha judge and maybe to Aurora or Elizabeth Warren or all the types of candidates that might catch fire in and could also be competitive here. But what about the California favored daughter, and that's come la- Harris like shouldn't she be wail? Well ahead amongst California voters since she has very high, but our name recognition at least. Well, I think that mostly campaigns are probably going to treat her as kind of the primary contender in California. Among all these presidential candidates, more important than whatever. The pulling numbers might show initially. The fact is is that she has a cat. California team. She knows California politics. There's some intricacies of the California system with open primary. There's you know, the endorsement race, and obviously fundraising here in the state all which will contribute. I think to her being probably the the candidate that everybody's going to be looking at and that I think the media is going to be looking at as well for exactly that reason so California moved its primary up to March third Super Tuesday. So it's getting a lot more attention than it normally gets not just an ATM anymore. What do the candidates need to do here to attract the voters? Well, it's interesting that might be different scenario for different candidates. The the delegates in California actually allotted by congressional district. Four hundred and sixteen of the delegates are a lot of by each congressional district getting anywhere from four to six or eight delegates assigned. And so if your let's say a Latino candidate like in Castro, your your what's on your plate might be going to all the Latino districts and trying to do real, well, they're people to judge might be trying to do real well in districts that have high LGBT population. Kamala Harris might be going to districts where she did best when she was running for US Senator attorney general and making show she locks down those or locking down the base in the bay area. So each candidate, there's probably slightly different agenda. And it's also important to note that these votes, they get broken down, and and the delegates get allocated proportionally. So it's not like traditional election where somebody wins, California. And that's it. You could have somebody winning a few congressional districts are doing really well. And if you congressional districts in getting more delegates out of California, then they got out of Iowa New Hampshire or any of the other early states. Let's talk about the money now who has the most excitement when it comes to the big donors. Well, that's interesting. When you look at the articles, you'll actually see a lot of the big donors. The folks that cool. These donors that have big fundraisers, you know, they are definitely like you've seen this week with Buddha judging Biden attracted to both the shiny new object and to the established known quantity. And some of them are fundraising for multiple candidates. I saw in the paper today that one of the fundraisers in San Francisco was doing an event for judge. And then also sent on a thing for Kamala Harris and a lot of individual donors are actually donating to multiple campaigns. Because they've heard that if these campaigns raise enough money, they'll make it into the debate. And so they'll give fifteen dollars to four different candidates. And what about the power of the endorsement from mayor Garcetti will will that be very influential when it comes to sauce Angelinos, and who they support. Yeah. I mean, I think that endorsements like that will have an influence when it comes to really kind of determining who's viable who's a real candidate. If they're getting endorsements from major players, especially if they were a lower tier candidates that starts catching big don't big endorsements from big elected officials that starts to send a message the other thing. California voters will be looking at is the other early primaries when our ballots get mailed out that's going to be the same day as the Iowa caucus few days later, we're going to have the New Hampshire primary. Whoever does really well in those races are probably going to get as much more of a bump. Just because it's gonna look as though those are the candidates that are are viable and and doing well. Right. So there is that factor. You just alluded to the factor that many many voters here in California by mail. So they might not even be voting on March third. Well, there's an increasing number of people voting by mail, those selecting to become permanent vote by mail and also many counties are switching to a system where their mailing ballots to everybody and they're using less precincts. And they're calling him vote centers, and in total we project that about sixteen million of California's probably twenty one million by the time of the primary will be receiving about in the mail, and that's unprecedented. And it's a big challenge for campaigns. And it's also a big challenge for campaigns. Because if they decided, hey, we're just going to wait around and try to do really well. That in South Carolina, and then walk into California a couple of days later and start campaigning here, we project forty five percent of California's votes will have been cast by the time, we know who oneself Carolina. So it's not like they can just count on momentum. From those other four early. Primary states actually have to be on the ground in campaigning here while people are casting ballots and also at the same time making sure they're getting their Iowa New Hampshire. Operation's going. Wow. That's a lot of balls in the air right there. So do you expect, you know, we're seeing a lot of activity this week and next with candidates coming come Harris's coming next week for a bunch of fundraisers. Do you expect this now to be like a candidate a week in California until the primary? Absolutely. I mean, there's there's twenty candidates twenty one candidates. So I think it candidate week would probably be on the low end you're gonna have candidates coming for multiple reasons to like you looted two there's the fundraising circuit. There's the having tacos with endure with big potential endorsers circuit. And there's also the trying to get an media circuit noticed one of the trips that was most recent with Aurora you actually went to the central valley, which other candidates haven't been doing so much because it's not such a fundraising base. But I didn't go into the central valley. He was able to kind of dominate the news in a big chunk of the state where lots of delegates are going to be allocated in a way that you don't really get when you.

"Sort of behind the scenes fallen in love with Los Angeles a little bit. But I didn't think that there was an opportunity until I got a call from my boss actually the day before I was flying out to visit my brother in LA, and he said just think about it. And I tried to play it cool. But I was just so thrilled. And before the move. Yeah. What was your your beat? I didn't have much of a beat. I covered restaurants. I did stories about dogs who are being trained to sniff beehives and Maryland, I wrote about food trucks and wrote profiles of cooks wrote about home cooking culture as well. I mean, very very general food, which is just the best. Yeah. Exactly. And so two now habit focused more on restaurant reviewing is that something that you find challenging have you done it before I have done restaurant reviewing before for about a year at the village voice in New York. And then for a couple of years at Bloomberg news, it feels very different here though, because it's not a weekly city beat. So I have not figured out how it's going to work. But I'm hoping that the other things I'm curious about can find their way into the restaurant criticism. Like, I can write about non restaurant things as well. Because I think that broader view is really important everywhere. But in California, especially and it's not a city beat. It's he anti stay exactly you're gonna have to figure out if San Francisco are gonna go. Hey, she forgot about us. Yeah. Which would be a first she says. Is bitterly. You had this extraordinary childhood in terms of the number of places you lived in the amount that your family moved. So did this also extend your palate as a child it did? I mean, I was very picky eater as a child. My my family thinks it's hilarious that I write about food now because they remember me as the kid who would only eat, you know, white foods or nothing spicy or that was a long time ago. We moved from London to rural France when I was about nine years old after that move. I became I think I just was no longer disgusted by textures or something shifted, and I became a more curious and excited eater and wanted to eat everything. And what about at home did either of your parents cook? Yeah. Both of my parents. They both still cook. My my mother would cook throughout the week. And then my father would cook on the weekends. And we would go out to restaurants just a few times a year for really really special occasions. So my mother is East African Asian. She's born in Uganda and raised in Kenya. But of Indian origin, and my father is from India and they met in high school in Kenya. They come from very different Indian regions and represent different regional cuisines. But we ate probably Indian vegetarian food once a week. And then they would cook all kinds of other stuff throughout the week. And as a treat we would get chicken Kiev from marks and spencers the frozen. Were you cut into it and the butter seeps out? Yeah. Okay. So let's talk about this experience that you had which I think is so smart of coming to a new city a city that has a lot to absorb a lot to taste and to start first with the old stalwarts. You started your expiration close to your new home. So let's talk about king taco, what should we know about it? I don't know if I have anything to teach LA about king taco a city that is very familiar already with king taco. But the tacos are delicious that king taco, it's good fast food for fast food tacos. I think that they're great and to try and understand my neighborhood. I was just going to local places king taco is really bustling on a Friday and Saturday night. It's people from different generations. It's locals. It's the language. Tacos seemed to be really big. But the Alpe store are are the tacos with history because the founder of king taco was I believe one of the first people to sell those pork tacos in the city originally had a truck and then later at this location of king taco in Cyprus park. Yeah. Raul Martinez is the guy who popularized them one could say. So where else did you? Visit. I went to phillipe's, which I absolutely loved, you know, sitting in Felipe smearing a little bit too much of the hot mustard on everybody. Yeah. It's it's a very hard balanced to find. I was continuously making myself weep, but enjoying it. It's a really diverse dining room. It was such a pleasure to sit in there. And be a part of it. Yeah. They get a lot of workers who work in downtown LA. I understand you also went to see a lethal Lynda actually went back there a few times, even though this wasn't the kind of review that necessitated repeat is it's I kept going back there because I thought that the tech ethos were so delicious, and it was such a fun place to people watch as well. And watching the cooks in the groove of frying. And then dousing them in the sauce. They really had a beautiful rhythm, and it was really fun to watch. And then you ended up at Thomas chanter, which I think is is a place that everybody in the neighborhood there in out water knows it and a lot of people forget about it people who don't live close before. I went I had imagined it to be kind of tourist attraction. And I mean, I think writing this story just undid a lot of the things I thought were true, it appears that way. And everyone's in the tartan. Outfits and the hats, and there's the old Walt Disney drawings or all over the walls. It feels a bit fusty but at lunchtime. It was really all regulars reading their newspaper eating their prime rib, creamed spinach, mashed potatoes. Just really I thanked really perfect. This sort of realization that you had about who populated. These dining rooms seems to be a big takeaway for you. Could you talk about that in in light of New York? Yes. The reason I wanted to do this story. I don't want to pretend I have an expertise of Los Angeles. I'm a newcomer. And I thought it was really important to start with these places and kind of learn something from them or pick up all these fragments and try to put together some kind of lesson for myself. But one of the things I'm trying to do is not used New York as a reference point as much as possible, Los Angeles has shaped by. Different patterns of immigration. It's shaped by different politics and as much as possible, I want to not compare it to New York. But you do say that what surprised you the diversity of the dining rooms and not racially, but age wise. Yeah. Yeah. In every possible way that feels very different from New York City. It also feels very normal. It feels as it should how nice to know that we're normal. We're normal in some way. Yeah. Dining rooms that are full of wealthy. White people do not feel normal. Well, it's a pleasure to bring you into our culture, we relish having you.

"Good plumber. Eight hundred four four six Mike in the air. Brian KFI in the sky on the ground. Lyndale? Police spokeswoman tahnee Lightfoot says an ongoing problem. Call came in around three thirty in the morning and your neighbor. Monica Rix, KFI news. Five. And iheartradio station. KFI AM six forty. It's Conway show. I can't remember the last time I had a car that was laid part because I I don't really, you know, they don't do that at arby's and. King taco or WalMart. Right. So I don't know different. You gotta vegan restaurants where they do. Now. I live in the city. So you have to single parking meter in Burbank. So you can park anywhere. I was just thinking that today. It's so funny. Two hours ago, I was parking. And I thought of you because on this show, you gave me that revelatory moment where you said, you know, what you won't see anything won't see at all in Burbank. And I said what and he said parking meters since then I just cherish those moments where there's no parking meters terrific, and then Mark said years ago three or four years ago. He says, well, how does it work in Burbank, then and I said, well, you know, you see the restaurant you're going to you pull over you park. The car you go in lead you pay for your meal tip the guy out come back. You get in your car, and you go home, and he does. That's it. Yeah. That's it. You know, most of it is two or three hour parking. And you're not gonna get ticket for three or four hour parking go to the movies here. If you go to the movies up at universal. I like Universal City walk up there. You know, I'm all about that by I don't like paying for parking. And I hate paying to park and then go to restaurants. Well, it's a it's a tax in a way, it's a tax on your evening. In other words, right? It's a it's an added cost, and you've got it across the board in LA and show. I live in the city, and I go out in the city, and I go out to dinner a lot. So I'm dealing with valley's constantly in two points. One of the first on the parking meter before we leave it they double screw you in L A. And here's how they if you find a meter only offer many times, I mean, oftentimes most of the time an hour on the meter right now, if you go to meet somebody for lunch, you're taking an hour in the lunch easily, right? You're not it's not an hour from park the car to being back to the right place. You don't wanna feel like you're having lunch and being pressured to end it to go get your car. Yeah. And if you've got a run four blocks to feed the meter that's ridiculous. I mean, the best part for the other party is when you constantly look at your watch. Right. And there are apps in their certain apps. They've got him in Santa Monica where you can electronially feed the meter from wherever you are. Good idea. Yeah. But but if it's only an hour, then it's only an hour. They don't offer you that option. That's deliberate. That's not an accident. That's a deliberate way that they are going to are trying to screw you by giving you a ticket to raise revenue for the city. It's it's an it's an eft up thing. And it's a fact in the city, right? That's parking meters. The other thing that's a fact that shucks also is that valet parking that God, they've got valet parking because there isn't any parking for most of the major restaurants that you're going to be attending of patronizing. I should say. But the valet charges are massive are they know I haven't seen my God. It's. Twelve I fifteen dollars. Yeah. Tip. Eight dollars is like you're doing. Okay, you're doing. I know you're saying, oh, that's not Mark. I'm at a place, and they have it's four dollars or it's five dollars. I get it. If it's in the valley, it's a little less and some of the higher end places, but you're already spending a lot at the higher end places. And now, the valet is twelve bucks. What do you do that? Of course, you gotta tip on top of that Shane wells on Twitter. One percent problems for one thousand Alex. That's right. Everybody spires to be a one percenter. They want to be a one percenter. They've got to learn some of the facts facts. All right. So where is the worst? Valet Parker, by the way, remarking established one percenters are dropped off by the towncar. Okay. Jane, it's not quite one the valley and shuttle. The one of the worst valets and the and the food is great at this restaurant. It's not a vegan restaurants has got nothing to do with that. But the food is greater discretion. I do go there. And I like an it's not that the values are bad. It's the valley setup is awful. And it's one of the worst in the city. Okay. And it's Moser in Hollywood on Highland rose by pass you will celebrate birthdays waiting for your car. It is awful. It really hit. Horrible. It when when you have a bad parking situation. You know, it's going to be bad. It takes away from the enjoyment of going there. You know, like, for instance, whenever I go to the Hollywood bowl. And I don't go there often. I think the last time I went there was maybe fifteen or twenty years ago the whole concert. You're worried about how you're gonna get out of there because it's all tandem parking. Right. You could leave their ten minutes before the concerts over and get behind a guy who decided to wait till the till the end of everybody leaving sit different our waiting for that moves car. That's right. There's no incentive at the Hollywood bowl to leave lever. What they need is the valvoline oil change place across the street needs to open all night. What you do is you drop off. Car the oil change place you walk over then that's your valet. And by the way, you get an oil change. They've got there is parked cars somewhere farro noth- away that it's a pain. Now get the cars back. They've got to go get that car. And then they've got to have that car manipulated shelf through all of the rights and all the rest, and then it takes just takes forever. I thought there was a great idea at Santa Anita where they should set up a car wash at Santita. Then when you're in there for eight rays, you come out your car beautiful. So I said to a guy who works there. I said you guys should set up a car wash in the parking lot. And you could do to three hundred cars a day make a ton of money. And he looks at me says. How many guys you are going to the track? Also, get the car wash. Which is true because like even Mickey Rooney Mickey Rooney used to be a great race guy. And who's was the guy from eight is enough the father, dick van Patten? And I love dick van Patten and dick van Patten. Literally. I saw him one day and he had like an open sore on his on his four on his forehead and one of the top of his head dig you. Gotta get that looked at and he goes, no, no, no, no. Because I'm spending the money on trifecta is today. And that was his and that was that was a standing line zone on that that that can wait. This is try affected buddy for the last race. All right. Very good. We're live on KFI. It's Conway and Marcus Thompson.

"On the way back. That's a whole new story. And then she's at her mom's house, and she's. Right. Is that being a busy body? She's trying to help out. It's not your home. And you're trying to help, you know, I clean the house from top to bottom. I work. My vacation is her to do list. I, and I bet you really appreciates. It does point. To this point. And so she was she was cleaning out season pan and Mondo you're a trained chef. Will you explain the season pan to people who've never heard of one? So season pan is a pan that you never wash. So every time he cooking it. It's just gathering these flavors and seasonings from each time you cook, so actually clean it. You just gonna use either salts? And then wipe it down to get all the grease or during this out of it, and that adds to the seasoning or just wipe it down with loss or you get really really. But it's it's never a a stick free pants. Always like a Skillet. It's always a cast iron or it's a walk. Okay. This was a walk interesting because I actually went to a class where the offered to season the walk for me. Wow. That's great. 'cause you know, it's it's kinda hard season. Get the season he done correctly. That's right. Yeah. That's right. I remember that from home making some. Takes takes years sometimes and on and all that flavor from when you get it to, you know, however long you've had it. It's a history. Could you keep a season pan going for two or three years for January is Kenneth Ray? Wow. That really makes. And people think I'm crazy. But when a new I love king taco, and when a new king taco opens I avoided for about six to nine months because I need that grill to be seasoned and the one read it opening Glendale, and I went there, and you know, the first week I'm like, wow, what is this? And they the grill wasn't seasoned. Right. So it doesn't taste like the one down off. I read or Broadway in east LA or north LA. So so bellio is at her mom's house and she takes the season pan. And she puts soap in it, and scrubs it and her brother who I don't think cooks now because his wife does says to bellio. I don't think mom wants you to do that. So a guy who never.
