"There was more stuff out there for us to see so again wanting the wanting that experience of like this. When i got to see another one i got to see another one. And then you'd watch all the movies and they come pick you up five hours later and there were that a nice quiet house so they were happy but there was always something really fascinating about the communal aspect of horror movies. That people like to experience it with someone else whether it's because they're afraid or they just want to be like. Did you see that. That was so great. You know. I would always go with my best friend from high school to go see every movie that came out because you wanna share it with somebody who. It's that much fun. That was like the version of hbo. And i had never seen before. When people come up to me and say, can I do your podcast? It's the most awkward thing when I have to say, no, there's so many unspoken rules in the in the podcasting world, and I feel like I've learned a lot through you. And like I'm like now like, you're even juice me to like your other friends of podcasting. And I now have kind of like a podcasting girl might my podcast girls by time going out with my pal girls. But there's like a network now that I'm becoming close with New York. But like there is there's a lot of rules and a couple of people have broken the rules with me. And it's like I try to explain to them like when it comes to podcasting from a business perspective or a friend perspective. Because this is it's like, it's like, fun and friendship, but also work in business. And I always say like, you have to never expect to anything you just like when people like like do something like come on your show and also promote you on their social or give you a swipe up those are gifts those are favors. They killed them at thirty first downs and five hundred yards to law fence been much different picture now a year later, but Colorado's a very good team. That's going to be a difficult game. They lost two in a row. You said it's homecoming it all the deck is stacked against the beaver. So they're going have to. I think it's less about Colorado and more about Oregon state today for the viewers. I gotta just play play hard and smart and crisp on both sides of the ball. They do that to be competitive. And I think people be appreciative of that Jomar Jefferson. Of course, tried to go last week. He couldn't he's carried the ball one hundred and thirty two times eight hundred ninety nine yet yards and twelve touchdowns averaging. About one hundred thirty yards per game. Those are awesome numbers. But the big question is candy. Go today. I think he will. But you know, there's no guarantee of that you're gonna try and we'll see if that quad becomes a problem. If not I think our Davis pierces, you know, getting closer back to full strength after he was out for a month. So to me the bigger question is who goes quarterback is Luton going to be able to play. I hope so I think he gives them their best chance to win. And if not then then you go with Jack Jack Coletta and see what he can do. You know, you look at the offensive stats for the beavers. They're pretty good. And they've got three receivers with at least twenty five receptions, Hodgson's has twenty six Bradford twenty-seven and your leading receiver is I think the most consistent receiver on the team Tamie Hernandez who not only has great hands carry. But after the catch, you know, I was watching Brandin cooks the other day, he might be one of the best after the catch receivers that Oregon state's ever had. But what about the trio of receivers? I mean, that's a nice group to throw to. Yeah. No. They're all Pac twelve called quality receivers Hodges has been hurt. Or remember he had the big game where it had fourteen catches and really hasn't done much other than that. But he's gonna be in the next few years. One of the league's best receivers were able to get the ball to any of them last week. And that's what that's the problem. You can't use your vertical passenger shut down the run game. So you're going to probably say to a Trevan McMillan. Hey, you carry the ball. He's averaging about what ninety three yards per game. Then of course, Stephen Montanez. I mean, he he's got such a, you know, a variety of talent. He can he can run the ball and make an impact that way as well. Six five two thirty five. He's not going to run a lot. But yeah, he's he's not a guy that just stands back in the pocket. He can run. Their offense is is not like Washington state. So were your air raid were throwing virtually every down, and at least isn't gonna run against anybody. So, but I think McIntyre will run I think you're right. And and we'll see them try to pound a bit a little bit. Defensively for Oregon state. You know, the pass rush has not been there much this season. The sacks are down. And and, you know, the inability to come up with the big play that that has to be a huge factor today. Right. Question. Tim tips are the beavers D coordinator on Wednesday. I have the problem. We have is is giving too many yards on first down. We were running in the second shorts situations when you're you can't gamble. If you could get him into a second along, then especially a third along, you can do all sorts of things you can play the blitzes, but that has been a big. They're going to really try to to. "Good morning, chef Kerry morning. How are you today? I'm good. How are you? I am doing absolutely fantastic. Glad to have you on the program this morning. I I'm happy that I I was able to receive your your new book great book. Actually, thank you. I I the publisher did a really beautiful job with designing it. It's so I think visually it's a really beautiful book. But hopefully, it's also got some great and easy to use recipes, and we'll help everybody eat a little bit healthier. But us one of my favorite ingredients. Which is Honey. Well, you know, that's what inspired me. I don't know if I should call you Scheffer, chef Kerry, Kerry Kerry. Okay. I think that is what inspired me is. Because you know, we deal a lot with bees. And of course, we hear all the time about this shortage of bees are behind going extinct because different problems. But we are also interested in the Honey that they produce and a. A couple of things, you know, when I caught your book, I am so surprised to hear of the multiple different varieties of Honey, I think even I was unaware of this that there that there are so many or three hundred varieties. Yeah. There's more than three hundred in the US and more than enders thousands worldwide. I mean, just recently a friend of mine went to Italy. And she came back with a jar of lemon Honey for me. I was like I didn't really realize that bees pollinated lemon trees. But it is the most gorgeous thing, I opened it up. And it's as if I was in the middle of a lemon orchard. But it makes sense because there's orange blossom Honey sure, which I'm familiar with of course, sour would which also is prevalent in the southeast or Tupelo. So if you just think of all of the things that are be pollinates. It makes you understand why there's so much. So many different bridles. It's so interesting with all these different flavors. You have to expect that the beekeepers are placing these hives producing this specific Honey, you know, in range of a flowering crop or a flowering trees that they're that. They're only seeking out the Honey from there, but I know Bs better than that. Because they're seeking out the wildflowers they're seeking out grasses. And but I guess is the predominance of blossoms that they're looking for. I give you the the type of Honey that they actually produce. Yeah. So the way like if you ever see a sharp Honey that has a specific name on it. Sure. Technically, there should be more than eighty five percent of the Honey should be from that flower or that bloom. Oh, okay. So so they figured that. There will be some extras in there that the b because the bees. Red you five. Miles. So yes, yes. So they can be touching a lot of things. But you know, you brought up an interesting point with just the Wildflower, Honey. So you could have a high in one area, and you your neighbor like a mile down the road could have their own hives, and you guys could produce different flavor. Wildflower honey. Oh, sure. Sure. Because of the there's probably different types of plants blooming. I in every region, and of course, every just within a certain geographical area. I mean, just a few miles away could be totally different variety of Honey because the different wildflowers. I'm sure and the other great thing about the honeys. It's not just the flavors, but it's change of colors that just. Just just going in that direction apps, and I it's the coloration of some of the Ani's that you are using and working with was phenomenal. Yeah. I mean, there's really everything from buckwheat Honey, which looks just like molasses to cranberry Honey, which is it. If you hold it up to the light it actually is red. And you know, and then there's stuff like L A, Honey, which is white and thick and creamy. And so it's there's different sickness to it and even honeys can taste sweeter, some tastes sweeter than others, depending on the fructose. Glucose mix of the of whatever to be pollinated. Sure. I even notice that you've got a picture in in your book here. Your book, the Asheville beach charmer a cookbook over on page sixteen and the far right? Almost clear, Honey. Yeah. It's so acacia Honey is one of the clearest Tani's is and and that's actually. One of the sweetest ones and one of two righties that I know of that doesn't actually crystallize. Oh, that's interesting too. So when you're when you are designing a dish your thinking about the the types of Honey, obviously that you're using and how it will complement. Of course, the the dish that you're preparing correct? Yes. So to the foot actually came about from my sitting at the the Asheville beachcomber is a store in Asheville, North Carolina. And I was sitting at the Honey bar tasting the more than fifty varietals of Honey that they sell and literally I was taking notes on every Honey, and it was kind of like a wine tasting but with Honey. And and literally I just started saying like, oh, this would be great with duck our wine. Sure, this would be great. And you know, a brownie or whatever whatever it was. And it really the book of all from that kind of today's session. Wow. Now one thing that was interesting is you've got some firecracker hot, Honey. Where where where you're dealing with Honey that was drive from either peppers or even ghost peppers some of the hottest peppers that we have out there. So those ones are actually infused honeys, so the charmers take their own wild like they are beekeepers themselves. Yes, do they take their own Honey that they produce and they infuse it with local mirrors Carolina peppers, and it creates this firecracker hat Honey the ghost pepper or such one of my favorites is a smoky AAA one. Oh, sure. Anything with a little extra smoker flavor to it is is always good now where where are you most people buy their Honey, I mean, I know what up in Asheville a lot of people can't get up there to to visit the store, but where where would other people go to purchase their honeys? So I always recommend try going to your local farmers. Marquette and really get to know that there's always somebody who's selling. Honey, they're even it might be a farmer selling his fruits and vegetables that knows beekeeper and is just kind of selling their Honey. By local, and then really taste it and see, you know, there's an there's a table at the front of the book, which tells you the different flavor profiles of the honeys. I used in the book. Sure. Yes. Feel free to substitute. And you know, if for lack of about everything if you can't, you know, not everybody's gonna have twenty eight right? Also, honey. Use a Wildflower or clover. Honey is a neutral Honey by local, and it's really really really important to support kind of your local ecosystem and Beezer such a crucial part of that. Well, you're using most of the Honey at you have a over in the book, you're using these in in as a replacement of sugar to make it a little bit more of a healthier finished product cracks. Yeah. I mean, there are some recipes where I couldn't completely get rid of the sugar because chemically and structurally sugar X in a certain way in certain and recipes, and so some recipes still will have some sugar, but for the most part like people don't realize a lot of savory recipes use sugar or sweeteners in them and so- Honey is a great way to at a lot of. Flavor, and it's healthier because since Honey sweeter than sugar you actually use less Honey and a recipe then he would sugar. That's interesting. Also, this is a great thing for busy moms and dads. Like in an sauces and salad dressings by using Honey instead of sugar, it's a huge time saver because all you have to do is really blend. It you don't you would never have to cook Assad like I don't know if you've ever made a barbecue sauce. Sure sure to cook it for ages. My barbecue sauce in the book takes five minutes to make you know could be one of the questions. I wanted to ask you is there a magical mixture or let's say if you were called to use an ounce of sugar or a Cup of sugar. Is there a conversion table for Honey that you could apply, but I guess because you say sugars some shelters are actually necessary in the products at the end product. You can't do that. Correct. I mean, it's for savory recipes that you cook on a stove. You can substitute sugar. Honey, one hundred percent for sugar. It's in the baking that because baking is such a precise formula. It's a little bit more challenging because one Honey is a liquid and sugar sugars, a dry ingredient shirts that ratio that you have to deal with. And then you also have the. Just the issue of the sweetness, and then the structure, but for stove top cooking or something like that. That would be fine corrector barbecue hundred percent wonderful now because that's that's more than what I what I would do. And I even picked out a couple of recipes here that you can go over real quick. I've got your lemon ricotta blueberry pancakes. Oh, those are so good. I'm not actually a pancake girl, and I made those and they're just they're super fluffy really creamy, and some friends of mine were very lucky to be my. Pace testers where I was perfecting the recipe and for me, there's nothing better than lemon and blueberry as tastes combinations. They they look fantastic. I had another one here. Of course. I I love salmon. And you had this measles, Honey, glazed salmon, yet that and the Chipotle Honey marinated skirt steak are probably my two favorites. Picked out a good one me socal is try it on some chicken as well. It makes a great marinade for a lot of different meats, and even makes a really great drizzle and vegetables. Well, let's see my my last one. I want to talk about here is the lentil and sweet potato soup stew. Looks like is this is a a and they vegetarian dish. It's it is. And you make it on the stove. It's super easy to make has got lentils and peppers and sweet potatoes. And what's great about it? I always make soups and stews and really big batches. And then I freeze them for later use while it looks very good. I'm sure they're all very healthy. I'll tell you carry a chef Kerry, I should say great book. This book is available.
