And then the owner of the casino comes to her and says, You know, I'm gonna back off on some of your shows. I want to put in some of these younger groups on Fridays and Saturdays. And, uh, so the management guy also manages this young Writer, this comedy writer who is having trouble getting work because she tweeted something horrible about somebody. And you know, that's something that Jean Smart just can't understand it all so that so they need to help each other. Yes. Oh, they're helping They decide that, you know, reluctantly, Jean Smart decides to take her. I've been trying to find the best possible way that I can work with other local businesses and give people the opportunity to support local business. Ben, If a spirit is a wonderful established distillery here in town, and I've been working with calling the owner to create a paired dinner, so we're going to feature different local shop. You will each prepare a course. And each of those courses will be paired with a special drink from Santa Fe Spirits. Using their liquor will have local musicians playing a local artist. Will be displaying their work local floral arrangements. And basically, people will purchase tickets in advance. And then enjoy the meal, and initially we're going to try to do it this month, however, with the current restrictions and needing to likely have it indoors. We decided to postpone until those restrictions open up a little bit, and we want as many people as possible to be able to enjoy the it's going to really be a wonderful event. So it's a five course with local chefs, some calling Keegan aah, whiskey or gin or something like that from Santa Fe Spirits, and then you'll provide a cake is part of the desert. Yeah, I'm going tohave. Ah, special case That'll make just for that event, it would be exclusive. There's a woman who does really lovely charcuterie board and she is going to make a special cheese, small cheese plate just prior to the desert, so that'll probably be soldiers an imperative. Santa Fe, Spears. And just really a nice collection of Ah, local chef. So I will definitely get the word out. Once we have a date and tickets are for sale. Yeah, it could be awhile. I have Kaitlin Olson eyes my guest today and Caitlin is the founder and proprietor of Coquette will get pastries of relatively new business here in Santa Fe, and she's going to tell us about how she got here and about her business model, and it's It's very interesting and very tasty. Steve, I've had the great pleasure of munching on strawberry shortcake that Caitlin maids had sent over to me just yesterday, too. So, Caitlin, Welcome to heating it up. How are you today? Thank you so much Tehran doing well, How are you? Good. Good. I'm always happy to talk about food. And you know when somebody shows up a strawberry shortcake Well, my gosh, you know, you've got my heart forever. I'm so glad you enjoyed it. Yeah, yes. Oh, yeah, Let's see. Well, you know how did ah that you have had a bakery before. At least once in your short life. Yes, I started my baking adventures in northwest Germany. I ran an American bakery. They're called the bakery on the hill. Or a backer. I often Google in German, and I love that with guns and German. Yeah, has a nice ring to it. I sold American pastries at the weekly farmer's market. So it was quite fun because I was introducing my customers to things they had never tried before, and that we're not available there, so pies were very popular. Brownies, Cupcakes. Ah, different types of cookies. Cowboy cookie was the only item that I would not translate into German. I just felt that there was something not right about translating cowboy into German. That's seemed to be very American idea and word. So that was that was great, and it was a hit and I always have loved to bake. I Started baking when I was a young girl with my mother, and with my grandmother, three of the recipes that I use now in coconut with the cakes come from my grandmother, Berrien. Um So I like the idea of honoring that history and tradition in her memory. Edward. And where was that? That you were going to bring that baking as a child? I am originally from North Eastern Wisconsin. And so my grandmother lived in Sturgeon Bay, Wisconsin, which is part of door county. Right on the water. Really lovely area, Its beauty, Okay. I grew up in Illinois. So I've made a few trips. A sure honey in my lifetime, and it's just, you know. Yeah. Place in that baking good background. Absolutely. Yeah. S O a lot of my early memories with Marion. We're in the early morning. We're both early birds and I would get up and that was very special to me because I just had that time with her in the kitchen and We could look right out over Lake Michigan from the kitchen, and so I learned a lot from her and I never went to any Formal training to be a pastry chef. Ah, certainly have worked in restaurants and worked in different bakeries besides my own in Germany, but I'm self taught No, I have no problem with that. That's exactly how I learned. And I did the same thing with the grandmothers and and all that were wonderful taking me under their wing and teaching me all kinds of things about cooking. And, Yeah, this is not a better experience. And unfortunately, don't think as many people have that anymore, you know? The family unit just isn't quite the same as it was at one time and those of us who've got to have that experience, I think were really really very lucky. Oh, I'm glad you did so Absolutely. You started out in door county. You're doing this baking with grandmother and all. Yeah, we're Where did things take you next? Well, I, um I studied acting and arts management in college, so I earned my degree and move to Germany two weeks after finishing my bachelor's degree. I had a theater company as well. When I lived in Germany and I did some teaching, I taught English for third grade students and 13th level students. They have one more grade in their college track high school than we do. As well as in private tutoring, So it was a really fantastic time of my life. I lived there for 13 months and got to travel all over Western Europe. Certainly was exposed to wonderful food and pastries in the midst of those travels and during the time in Germany and then made the decision to move to Santa Fe in 2009 and I had never been Teo to New Mexico before moving here. And really was John Teo, the strong arts scene here, the history, the culture and the natural beauty. And made a home here and really just have come to love it. I mean, as I said, I I moved away a few times and I always end up coming back. And certainly that's not unique to me. I mean, a lot of people share that experience, but it does have a very special place in my heart and Before moving this last time when I would close my eyes and think about a place that felt like home. It was always anything. Oh, nice. Yeah, well, an interesting just hearing some of the story. It mimics a lot of mind. We were talking about the grandmothers in the baking and and the cooking and all and I went to school in Salzburg, Austria. That's where I how you did it so there, But I also majored in I have a master's degree in arts management myself. And the way that I came about with transporting them was to put them in Mason jars and to decorate the jars. So That way, you know it was protected. It was sturdy during transport and then also could just immediately be opened and enjoyed at the beach. So Hi. Yeah. And then the concept was Tio Strawberry shortcake was the original cake. That was the really the The 1st 10 no. I'm sorry. Um, so so it started with strawberry shortcake and I wanted to transport them to the beach in the basket on large tricycles. So that is how coquette started and Andi. I, you know, did the initial things that I needed to do as faras, you know, getting everything approved And and ultimately, while the summers are wonderful in Montag, the windows are are not yet as pleasant.
