"And it is really an extraordinary encyclopedia. And what a story John Becker is here to dish on the new Joy of Cooking, just released. John. What a privilege to have you here. Thank you. We would never get the back story. So I would like to start by asking you to chronicle the joy of cooking from 1932, please, if you can synergistically Oh, yeah. Irma was a And she had you know much education as as a society lady would have, you know, in the 1919 twenties and you know was married. She Became a widow. And afterwards she really had no professional skills fall back upon and you know her. Her daughter, Marianne and son actor had moved out. So she came up with the seemingly crazy idea that she was going to publish a book on DH have it printed privately. Uh And so she did. She took half of her life savings and Published the first edition of the Joy of Cooking and Hand sold it to Friends to Family. Amazing. Ah, cooked yet book to bookstores. She would just go in and see if they want copies. Eventually she got a publishing contract in 1919 36 with bobs Merrill, who was like a pretty major Midwestern publisher at a time no longer around. Uh oh, yeah, that that first published, you know, honest, Got published Edition had a ton of recipes. So that was really like the first big increase it had over 2000 recipes. My hand was, you know, trying to be pretty comprehensive, that was extraordinarily industrious of her. She was not known amongst the family is some sort of fantastic cook, but she definitely had a really good senses. You know, uh, kind of the questions in the tribulations. We all kind of face when we first started cooking, and exactly how she managed to, you know, meet readers was as appear. You know, not necessarily as an authority. She surely had the knowledge because it remains valuable information in the book and then subsequent editions all the way until 1997 when the 75th anniversary edition released right, we're all from the family line. Irma was involved with Two more additions. Okay when one of them was published in World War, two actually had a lot of information in it on how to cope with rationing wartime rationing. Really interesting. And then her Last edition came in 1951. All of them wonderful to look at and just kind of see what you know, like what was going on at that time, and then I have my dates wrong because you're you mentioned I said 97, then the 75th anniversary followed that In 2006. So ever since 1975 yourfamily generationally has been involved directly in the updates of the book. Yes, Absolutely. So Marion took over after I mean Marion was Marion Rombauer. Becker was involved in the and some of the early editions, especially her artwork, which endurance? The first edition. Yes, she published two editions, which were pretty much I mean, Rightfully consider it like The classic and what most of us would think of as the modern tried cooking. It added A ton of reference information. Um, uh, more international recipes for French recipes in the sixties. Kind of, you know. When Americans were trying to cook more of that kind of cuisine. Um she was really like the systematize er she was like the bookworm. And in fact, she was pretty much my inspiration for you know, howto How did before with joy and 2019. That's your grandmother. My grandma. May she rest in peace than it followed to your father. And then to you? Yes. Wasn't wasn't a done deal? I was never like I never forced into it. But I can't do it on my own. And I think that was a great way to do it. Now I have something to offer. I'm a I think you have a whole lot to offer. John. You are classically culinary trained. And there is something truly beautiful about your family legacy like no other So then take us to your strategy for the revision. This revision now in its complete form the new joy of cooking as I call it. Is released in 2019. And you've brought it completely current as much as we possibly could. We, we, you know, kick the tires if you will, for every section of every chapter. You know, we we had some experience going into it. You know it well, so the first thing we did when we start working for the family was just to cook through the last edition that 2006 edition on Do Genealogies when those recipes were added to join cooking, so, you know Was headed in the 1943 additional was, uh, you know the 1951 and then kind of we wanted to get an understanding of how those recipes changed over time. And that gave us a really good kind of, um, I guess we called a graduate course and joy of cooking history and then way helped develop an app. Out of the last edition, and which, basically until taking it apart and putting it back together in a different form. And after both after both of those experiences, you know, we started feeling confident that we have something to offer and Uh, you know, kind of a good basis, a good base of knowledge for moving forward with an extra. I think you would make your great grandmother very proud to know that you added a much larger array of ingredients. I mean, you cover Za'atar and Su Vida as a method of cooking and you are a lover of fire and smoke. And so there are barbecue and smoking recipes and outdoor cooking methods. That are considered as well in in great detail. If you would share a classic recipe that you and Megan make it home one that you know Irma Would have made and then share the counterpart. A new recipe today and and the compare contrast of the two sure. Well, I mean, I was thinking of, uh, you know, one of the one of our favorite Desserts that we, you know, it's not something that we grew up with. And we actually first discovered it when we tested the recipe for the last edition of Joy, but we really like the Apple Dumpling trustee, and that one definitely dates back to 1931 amazing, fantastic, really simple. But Satisfying and really warming dish. Especially going into fall in the winter months. It's just a fantastic thing. How are they cooked the dumplings? Well, they're they're big, You know? So you take apple have you know we my favorite? My absolute favorite variety is a little hard to find. We could only get it like for liver of time here. But Ashley, it's colonel. So the apples were halved. Battles have wrapped in a in a pastry to hide. Oh, right. And, you know, they're, uh In the corners of the pie dough up, and then you take them off. Uh, drizzled with a syrup and fantastic, wonderful dish, especially with you know, just adding a drizzle crema The end or or scoop of ice cream has been known to happen. So yeah, of course. Sure. "Welcome back it's just it's just so I don't care we are so excited to have the the authors or the stewards or however you want to describe yourself I've often called you conspirators of the new joy of cooking the updated joy of cooking cookbook and we're going to do a whole series on this book because it's Terry said my favorite is when would you say oh yeah absolutely as a as an American cookbook I am only yeah because I my wife introduced me to it and a great great book so this week we're gonna get delve into their history it's got a quite the history we're going to go in in future weeks into with all the six hundred new recipes that are have been added to the book of maybe some of the ones that have been taken out I'm gonna do a whole show on baking and we're gonna do a whole show on beginner cooks and how do they how do they approach the book it has to be a book make them more successful in that process to turn the corner I'm loving to cook but first make it's got John Becker welcome to the show let's talk about the history of the joy of cooking and how you guys got work who are you where do you come from and how you've got this this incredible opportunity to affect one of America's greatest cookbooks well it says straight up nepotism I have worked for generation of the family to take up the the the task of revising joy of cooking hi my great grandmother Irma I have self published a book in nineteen thirty one this is you know she her husband passed away she took half of her life savings and just got a wild hair and decided that she had just with that with despite not really having any any renown in the Kitchener or professional training that she she's gonna publishes cookbook and during I mean during the Great Depression the great just what blows my mind is that she even had that idea not like I could we could see it seems so I'm unlikely that it would be successful but she what armor was bringing to the table was at the time a lot of cookbooks were very dry kind of home economics focused cookbooks and she had a really incredible sense of humor she was very rich witty and she really injected that into the first edition of joy and I think her readers saw that and it was just a complete it was completely new at the time to do something like that it was a very personal cookbook and I think that that sense of Irma being kind of your friend in the kitchen rather than a teacher who was you know standing at a podium and telling you what to do really resonated.
