"Seasons in a row where we started last chance kitchen with returning vets chooses in a row where the vet does make it back into the competition. And now two seasons in a row where the vet makes it back into the competition and has gone relatively quickly. And maybe makes you feel like at least with last season with Claudette. There were two people that came back into the competition. But in any case, it's just a very weird series of events. She gets booted goes right into the finale of restaurant, or it's Buddha from restaurant where it goes into this restaurant wars challenge makes it to the finale of last chance kitchen for the mid season. And then ends up in a situation where she has the ability to come right back. Like, we could just Reese. Set it the the BB rewind button and bring her back into the competition. And that's not alternately. What happened? It's just fascinating to me the way all this has played out. It's really weird that in to Nina's now, but eliminated three times from top chef that just feels really odd to say. Yeah. Yeah. So I mean, I totally agree with you that I was a bit surprised to see Pablo win. Just because I think maybe my disappointment comes from the fact that I just keep getting my hopes up for Natalie Anini like they did so well starting off and they they fell to their respective reasons. But now they have LC K. I know they failed the delta K. Oh, wait. There's a reprieve. They could come back and Natalie gets eliminated in this first round. So basically the talk through it a bit all five end up cooking their dishes. Tom sorta makes a first cut of Caitlyn who does this. Cincinnati chili spice rub steak with the mustard sauce. Basically knew the problem. The sauce ended up being super bitter and as much to try to add Honey to it. It really did not change the flavors of it Natalie ends up going out here because she doesn't make a sea bass that comes out really well, but he was on a big fan of the garnish against the pickled mushrooms that she put on there and Kevin goes for the summary ho soup with this olive salad, and he puts a bunch of. Stuff in there. And I guess that's led to the suit being too thick. So he cuts immediately. It comes down to knee versus Pablo and Nina's. Probably like, all right. This is my chance. I'm finally going to come back. She goes with this Mucci. It's something that really speaks to her heritage something that she knows she can cook. But dammit, if there were only teacups in that pantry we could've seen any finally back on top shop, and unfortunately, the vessel just led to this unfortunate texture thing where the outside we're bubbling. But the inside really wasn't and Pablo was able to take the hints. The super simple was able to use apparently his textbook apple which is in like every dish that he's made so far and as a result to your point in Tony was the shock winner. Here. It is able to survive another day get a reprieve here in L C K. Jim any thoughts about the results here? Yeah. I I'm just happy for. I mean, I was of course, super discipline for Nina. She she is so awesome. I I was really I was really rooting for. And but I wanna say I thought it was hysterical. I thought that Pablo was almost gonna get like a like a cat Suji where he says, I'm gonna make something simple. And the first time he describes the dish. It sounded simple. But the second time he described the dish. He was like, oh, yeah. This is going to have avocado and trees and radish an apple and all and all the stuff in there. I was like, oh, no..

"I'm wondering what your thoughts are. And what your thoughts on the whole the whole mix of what happened with brother is what I love and respect brother, and he is my friend. I got. Know him really well, and the time that we spent in the in the hotel in last chance kitchen, and he's someone who even before we met we exchanged nice disease on social media and talked about doing stuff together. But for me, I just couldn't believe it. I mean, I don't think you can look at this any other way, but then quit, and it broke my heart. I mean, I think that we would have a very different season. If Nina would have one, you know that, you know, the the miniature last chance kitchen, I think that I'm really happy for Pablo I'll say that now, but at the same time, I just think that. On the end of the TV episode when brother it was really reminiscent to me of that of a Mike wide on top on survivor when he's like, I just can't do it is this even worth it and then right before tribal council, and I was like, oh is he going to quit? And when when they say that when brothers sit down at the end of the episode was like, no, no, no, he's not going to quit. I mean, even if you are mentally and physically exhausted. He has to know that there is going to be before the next last chance kitchen there's going to be time. He could go to the hotel and sleep for three days. Probably at least at a minimum and sort of regroup and have the chance to be the Ozzy of top chef and to me, I was just I there's no other way to look at it. Then then quit. And I hope he's okay with I know he's okay with it. I had no idea that he quit until I watched last chance kitchen, but for me, it was just I couldn't believe it. I it was really I couldn't believe it. Like, if it was me, it would have sucked and could be sent home on the first episode after you go back in. But you've gotta know that. The people atop chef they want you there, and they won't have an amazing story. And there would not be a more amazing story than the Ozzy arc of brother luck in last chance kitchen, and I think that you know, I there's no other way to look at it in my mind other than than quit. And it it sucks. Like, I say, I love brother. He's not friend. I respect him. He's an amazing restaurant tour the food that he made that I tasted was incredible all season all of last chance kitchen, and it's just it. It broke my heart. See that happen. And I hope he's okay. And I know he's okay. He's a strong, dude. I actually saw he was posting videos of him boxing yesterday on social media..

"David wanted to what they shrimp tar tar with cucumber, apple and radish. Adrian goes for a shrimp and avocado toast, carry us triggered with cucumber watermelon. Juniper as Serano chilly seems like David gets a pretty good comments. Like, he seems to do basically with exception except that one quick fire the entire season Adrian, she gets some comments. But then panamax note that all she got was oil, which I thought was super interesting maybe speaks to maybe a lack of consistency going on. But they're both deemed safe. Antonio any thoughts about these final two. They seem like they were safe. But yet nothing. Really stood out from either of these two to me there. It's probably good at this point to not make bad food and to just sit there in and not put yourself in a bad position. They did they did find as far as that goes. I we didn't get a ton from them in terms of the conceptualizing their dishes, for example, there are little notes throughout like brother is in the in the whole foods. And I think Brandon comes up to him and says what what's up brother what he doing? And what are you looking for in brothers says anything Asian? So it seems like even from the jump. He's just kind of taking this really broad approach to try to find ingredients, and we didn't really get from Eric and Adrian a ton about not Eric at David and Adrian a ton about what they were thinking we had a little bit. But we didn't really get notes that I felt throughout the episodes spoke to problems they were having when they conceive their dishes or problems in prep. So didn't really have much to say other than that just that they they seem like they did. Okay. And they they will live to play another day. All right. Well, let's move into. We talked about the final result tops. Our Kelsey Eric and Eddie Eric ends up getting the win here. A big week for Eric quite think, we'd all said might have gotten a more under the radar edit. Amidst the first few episodes, but the acceptance were being him talking about his incoming child. Jim do we feel like Eric might stand a chance to win this thing now considering that the previously he seemed to sort of like a non factor in the season? He this season is really unique in that. I'm not sure that there's an actual front runner. And as soon as one emerges, they likely they are likely to go home. And so yeah, I think that really everybody has a chance to to to win so far. I mean, they're a little bit of people. Who are I'm worried for like like Adrian, and I don't know if you follow Adrian on social media. But the what she posts online looks totally amazing, and she made her she made quite clear that she is an incredible expediter knows how to run a kitchen in restaurant wars. But I'm not sure that she's made anything I'll show that. I was like man that looks totally awesome. So I'm a little bit worried for her. I know that she's a lot better than that. It's like I say, I only have to do is look at her social media to see she is making really awesome food in restaurants. But for me, I think that really we're still in a point where almost anybody could win which I don't think is that happens usually they're front runners. And I really don't see it this season interning, what do you make of Eric's win here? Do you think it it pretends anything or to Jim's point, do you think it's just sort of like we need to to all head? Jar bats because we never know when someone sticks their neck out. They might get chopped off the next week. I'm on board with Jim I think that nobody's really really stepped up..

"Superhero fashion is able to shuck all those oysters in the prep time and doesn't always her with a rum bourbon men on yet menu net, a Grenadine Nash floater and pumpernickel really interesting mixture of the pumpernickel in there. But I guess it ended up working served as a nice pairing within the dish. This ultimately gets him the win a Jim were you surprised to see Eric at the win here? No. That is sounded so awesome to me. And it makes sense both with the cocktail and the way that are served. I always use breadcrumbs are very traditional kind of way to do it using pumpernickel than I spin on that I thought that the Grigny knives sounded like a lot of fun. And I thought it was it was it was a well conceived dish now when when you're forced to shuck always really fast, you can get a lot done. I remember on the on the radish challenge. I think I I was really worried about shucking oysters time. But I think that I I shopped like forty oysters in like fifteen minutes, and so and that that was a good one that was really good for my normal sort of Orser shocking time, but it could be done and knocking out that kind of prep. It is an important way to to to show the judges that you want to make something really cool. It. I mean, I'm glad to hear you say always her and not always sure glad to hear that all of Alabama doesn't say or share because it's funny to me. But I'm I'm liking that it's Kelsey localism. And not just an Alabama is mister Alabama speaking differently than miss. I like that it it. I think that that was a really impressive dish. I'm wondering Jim if you have anything to say about the concession. You talked about the concept of Eric's are of Brian's dish. What about Sarah's dish conceptually did that she she had a couple pure as in there? And she said she wanted the scalloped to present like a spongy tender texture. Does it seem like there are conceptual issues with that dish to you? Or did you think it seemed like more of a failure of prepar delivery? Yeah. Yeah. If for that dish to meet it really, I I don't think I would ever do accredita- on top chef just because you run the risk of. Them saying what they did it criticize. Are you're serving raw vegetables that you dip into something. That's parade. Now, the charred bitter eggplant sounded awesome to me pairing that with avocado made sense. And the bay scallop to me conceptually dish made since I don't I really didn't see how how reflected that well into the cocktail. But I think that they just wanted something I did notice that when she was cutting the raw vegetables, it looked like she was doing a really tiny cut on them. Which is you always want to be able to show your your knife skills because the judges will notice that in the show, but at the same time if it's just buried in in pure as you're really losing you're losing that. And I she may have had some conceptual issues. But to me the dish sounded like it would eat really, well, I loved that that bitter kind of egg charred eggplant puree. I'm I'm a sucker for that. Almost every time. She said, it would taste good. And it sounded like it would taste good. But yeah, it it seemed like there was outside of failure of didn't sound like there was a failure of like the. The way the dish would come together from taste standpoint. But the criticisms really were on the texture, and so it does sound like maybe there were some issues doing fine knife cuts or just just with the textures in general just didn't play out..

"And I think that's another part of this that we haven't really talked to ton about which is that he's conceiving a dish like this and trying to put it all in one bite and the difficulty of doing that with the flavors. I mean, I it seemed like Eddie, for example, goes a lot more delicate, Eric, for example, goes a lot more delicate and the brothers going lot heavier. Maybe it make sense. Like, you're saying Jim to pair with the cocktail. But as a one byte it's a pretty significant bomb by and and that has an impact for sure. So let's move onto our second group here which has bit of highs and lows going on here starting with Brian O'Brien. He was cruising high after his linen restaurant wars interests. And yeah, just flew too close to that son. His wings melted. And they fried like his yoki. So he did he was describing to Tom before is like like a green yoki in ham. But it ends up. He he wasn't able to to to basically see your singularity his Neil one at a time. He admittedly bit off more than he can chew. So we decided to basically fry them. He makes pork fennel and Cleveland, chili sausage with basil and fennel Mielke. But basically, it seems like from what I glean from the judges. This is probably their least favorite dish in terms of taste. They just taste like stale oil Tom calls at sand in a Cup. You know calls at wrong in Greece. I think this is the one that pad called greasy sponge, then we go right back up to Kelsey who does this base Gallup's Evita with a rhubarb cherry consomme Incorp. Kierra was just I mean, if you're talking about the visuals, the judges talk about it how essentially looks like a visual food representation of the drink itself..

"Yes. I was really really worried for brother Alex onto something else. To may not make sense in the episode is I you know, a lot of times in top. Chef you get the challenge. And then you go to the store maybe the next day or something you go to the store, and then you prep the next day. I'm pretty positive that. This was like as soon as we're finished filming last chance kitchen, they were wheeling out the cocktails, and that means that almost certainly they went immediately from there. To whole foods to that three hour prep time, which means that brother is probably in the middle of like a fifteen hour workday. And so it had to be really hard for brother. I I think you heard him say that he was tired and episode, and I think that probably showed up in his food because it was a really long day. I think that we may have had like a maybe six AM call time to be there to film last chance kitchen, and so you know, and there was almost no downtime. As like, I said there was it was bang, bang bang. And so I'm sure that was a really super long day for brother. Yeah. That's that's the thing is, you know, say what you want to about your feelings about brother as a chef pry, really my heart does go out for him here. And I think it's going to again informed some stuff that happens in last chance kitchen where for those that don't remember L C K was basically filmed back to back to back to back to back. So brother, essentially cooked through five challenges a full three course meal, and then got willing the stuff and said, okay now, you have to do another thing. Like, I think that would exhaust anybody, and I don't wanna say that should necessarily excuse the job that he did. But I think we should take into consideration. When we do sort of look back on this that essentially he was running on empty at this point as compared to his competitors. Who had just sort of, you know, woken up. They went to go cook sous-chef for somebody. And now they were ready well rested to sort of approach the day. I'm brother was quite the opposite situation remains to be seen. If this is a new wrinkle that will continue throughout top chef in that wrinkle is the returning that like brother, Jim or carry having a shot through last chance kitchen to come back midway through the competition. If that is the case we have not yet seen I think enough of a sample size to know the effect. It has on the chefs what I do know is that it is. It is not as done what everyone or in some cases, one individual who shall not be named on this podcast has so scared of which is at the vet will come in and just ruined the season and win and. Disappoint everybody who tuned in for the the newly appearing shafts what we've seen. Instead is that the vet chefs for one reason or another go out quickly. I don't know that this is true. But from what everything that you guys are saying in terms of the difficulty of it, all it may be that the re if a vet does come back from last chance kitchen in this role in the future. This first challenge is going to be the most difficult one for them to get under their belts. Because not only are they dealing with all of what you guys are talking about in terms of the physical strain and just going having a really long day or a series of long days. They're also dealing with the the surreal aspect like brother articulates of being back in the competition. They're dealing with whatever they're bringing with them to the actual competition in terms of being stressed out about the choice. They made that sent them home. The first time they're dealing with. Maybe chefs not feeling so welcoming to them and not liking them feeling threatening to them a feeling like a fish out of water and not fitting in so they're dealing with all those things emotionally. "What the smallest crack of a smile on his face his bourbon. Cured smoked salmon. Crude Brandon, even though he doesn't end up in the top does actually get a bit of commendation here with his being leftover with the whisky sour. He's able to make duck and artichoke croquettes and poor brother. Unfortunately, gets a limited here repeating the same thing that centrally sent him out in a similar alcohol theme challenge last time where his take on the south side phase. He had said that immediately thought bond me which confused the judges and bond me as well. His chicken salad with cucumber peanut sauce and area to beef liver mousse, essentially was a big old spice bomb connected with the fact that it didn't really link up to the challenge ultimately sent him home. Antonio any thoughts about this first group at three Eddie's burnt butter like it was causing. It was burnt butter. Brown butter was causing such a stir or lack thereof with all the chefs in prep, but he knew what he was doing. He wanted to create these Brown butter. Rumbles for texture for the fats from the butter. It really seemed to have a significant impact on his dish. So kudos to him for that really stood up for sure. Yeah. I love that. And whenever you're in a kitchen and we're working with other shafts. And I'm sure that other ships were doing this like you see a bought a pot of boiling cream on the range. You turn it off. And you say, hey, who's Boylan their stuff over here? Because you're you're cream is burning. But you really only need to say it was stopped turning off Mike cream. I'm trying to separate the Kurds in way as part of my dish. And you know, I I thought that was really funny. I think it also came from just the general assumption that Eddie is a little bit of like a loose cannon in the kitchen in terms of like running around trying to get everything going. I think they were all looking for him. Like, a no Eddie left his cream on. We'd better make sure that like things go. Okay. But like it actually was planned out of the fact that he was uncharacteristically calm to that. I think is it was really fun character moment. Right. This is a really fun episode, Freddie, and general really savvy choice by him as well. He said he took the old fat. Because he knew that if he took a more complicated cocktail he would get in his own head too much, and he would screw it up. And I think that's a mature choice. And it shows a chef who has the self-awareness to rain themselves in to put themselves in a position where they can succeed. So it was a really good episode for Eddie. We got yet more episodes about how any looks and whether Eddie's relieved or not I mean at this point, I don't know that I've ever gotten. I've seen a season of top chef that this few episodes into the season, we knew as much about chefs temperament and had as many repeated discussions or moments. They are really hammering these notes on Eddie's temperament, I gotta feel like he's going to stay in the competition. Awhile considering how much fun we've had with that. And it seems like they're really enjoying Thomas cracking up throughout oval because Eddie says it's really awkward thing. It's like, you know, I'm not I'm not unhappy. It's I I don't think my eyebrows or my face really on the cross awkwardly phrase the Tom cackles at it. Yeah. Resting stress. Face for Eddie. Yeah. Our SF not great. But he did he did really. Well, what were the other two dishes that were in this round, Mike? So we have a Brandon's duck and artichoke or choke of kept. But I think the one that we probably wanna focus our discussion around is brothers. Take on the bond me that just did not come across a it was a big old spice bomb that pre practically ruined all the other flavors and be the judges felt that it wasn't necessarily adhering to the idea of the challenge. And so it was a two strikes, and you're out type of thing. Jim when you saw all the dishes, come out at the end of this. Did you feel like brothers job ended up rightfully in an elimination here?.

"The house, and what was happening at the house was a huge part of of what went into early top chef. And of course, that was when reality TV was more in the where in the house era, whether that was real world or otherwise, it certainly the interpersonal drama between the chefs was something that was more center stage. We have a much more polished product. Now that follows them much more consistent theme. I thought for example, when we. Saw this scene from Michelle that it didn't bode well for her. We're familiar with that from reality. TV editing o. We're finding out more about Michelle's life random factoid inserted in the middle of an episode doesn't look good. That's not the case. Maybe they're playing with the edit a little bit. Or maybe this is something where we're going to get more of a Michelle story throughout the season. We shouldn't put it on the white board though. Mike only partway. Yeah. You you got me there. Let's go to the seal back here because in Tonio, I just want to like settle into a little bit of history Kentucky history corner. You talked about a bit last week. But tell me what, you know about the seal Bach hotel, and and you know, it's involvement specifically in the prohibition era, and the Gatsby of it all there's a lot of tall tales. Lot of rumors for sure the seal Bach was the inspiration for a hotel that that have Scott FitzGerald writes about in the great Gatsby where Tom and daisy were married. It has a different name in that starts with an M. I can't remember what it is. But it is hotel that he went to. I think he was in the service or he was. Otherwise, working in that area got kicked out for drinking that wrath skelter there that beautiful area, which I don't know that the German inspiration for rats Keller. I know that's German word. I don't know if it's just basement if that's what it means. There are a lot of bars Cincinnati German city that have those around Louisville has a lot of Germanic heritage as well. I think so I I it's a beautiful hotel. It's just a gorgeous hotel, and it's old and it predates prohibition for sure. But you hear about the underground parties you hear about the jazz age, and you can't help but go in there. And I think it was it was Justin who points out that beautiful crown molding, you see that. And you feel that. I mean, that's what you feel like you're taking a step back into that era and their places like that around the country for sure, but this is certainly a gem of Kentucky and Louisville specifically this hotel in in his all for the reasons that they said, there are just a lot of these rumors about oh, yeah. This is where prohibition parties where. People just drank down here in the basement nobody cared. This was the jazz age and on and on and on. So it is I'm glad that we got to see this as I had said on the previous episode and not to repeat myself over and over..

Chef we we've done a lot of chatting online, and I really hope that we're gonna do some events together in the future, which were planning. And I thought I thought that line was hilarious when she called herself the Queen of Alabama or miss Alabama. I really I really love that line. I will say I was digging through. I'm sure that you guys have days things like I was organizing my cards. You know, the people get handout cards, and I did have a card from her restaurant, which means. That I may have met her at some point along the line. But I'm art. But I really don't remember it if that has ever happened does she do the Shiva catering business. Jim is that what is that? What she does. She has a catering business. But I think she also has a restaurant where I can go in and sit down and eat, right. I I'm looking forward to go into freight house in Kentucky and Paducah Sarah's restaurant. So I'd love to hear from others who have gone to some of the restaurants from some of the chefs from this season or have any experiences in that certainly something that I know Kurt likes to do. And probably will do it some point throughout the season. I'm sure he's looking forward to getting the chance to meet Eddie, for example. But I I'm I'm interested to know, what some of these chefs restaurants, actually, look like or or represent because we're getting to know more about these chefs and getting to know more about the food that they cook and their style. So I'm always interested in that for sure speaking of which I think we can put thing number two that we know about Michelle up on our big whiteboard here from this week, a not only as mish. Shell intimidation. But she is part of talian part. Mexican part native American super interesting lineage from my perspective, Jim at any takes on the brief moments. We see Michelle in meditation. That was that was really nice thing to do. Yeah. People forget that oftentimes chop. Shop doesn't take advantage of the living in the house stuff. Like a lot of other reality shows or or even earlier seasons of top chef did. But. Every morning they walk in the door. When you're in the in the house, and they wake you up at whenever the call time is it's usually very early and their cameras in your face. And they want to make sure that they get some B roll. If you brushing your teeth and all of that kind of stuff and so sometimes it's easy to forget on top. Chef that these these folks are all living together. And that people do things like, you know, meditate in the mornings. I remember that Casey Casey Thompson led exercise produced in the mornings at the at our house, which is which was a lot of fun. I was a little disappointed that none of that made made any sort of the cuts. It's funny that seems to be what gets cut out a lot of the time because we talk about the Canadian cut with Haley, and we joke about it. But even in the first episode of this season, one of the big things that didn't make the shorter they the our cut. Whereas a lot of the stuff that was happening at the house jokes about hair or tours of the bathroom jokes about the days. Whatever it is the slice of life stuff that we see in. I think you're gym your right to observe was more prevalent in early top chef, especially all the way back to the head shaving incident, or before the the drama between the chefs at.

"I think Tom was absolutely right. When he was talking about the brothers pickled vegetables. I really don't think that they were the change that he made to the dish made that dish less good. The second time than the first time, which is kind of weird. But he makes this all the time. Apparently, it's on has been using. So the changes he made were not as good. I'm sure he didn't take those changes home with them. The second round was the Neiman that lemongrass pork chop, which was very good. It was executed. Very well. But the problem was is that. It was really lacking in all of the Asian flavors of the dish. Like, you could tell that. There was a little bit of fish sauce in there, and there was a little bit. But I think all of us really wanted a big a lot more Asian flavor in that dish, and it was really kind of lacking. But brothers human scallop with Yuzu grade us, you Yuzu Nori the com-. Congress guest was really awesome. It was so good. And we'll tell you something that was not on the episode either. He put plain Rice Krispies on that dish. And we all everybody who was judging these dishes thought that edition of those plain Rice Krispies really brought the dish together. Even Tom, Tom. And I had a conversation about how we were both worried about what the key those rights Christie's, we're gonna do the dish. But they were really awesome. And the third round a brothers. Brothers tuna. Dish was really awesome. And it was beautiful. It was it was really plated gorgeous lay in the bonito flakes were awesome. And that was against the bananas foster. I love this. This is a dish. That is a really traditional Asian dish. It's tapioca that served in in coconut, and it has a prude on actually my my wife makes this this. I make a version of this dish. But the best part of bananas foster is when you get that awesome, caramel pan sauce. You know, you d glaze with alcohol, and you get this really rich. And there was just none of that. On the dish tastes like there were some cooked bananas on top of it. And so this dish tasted way more Asian than. Delta, Mississippi, delta. And I think that is one of those examples where when you promise something to have that bananas foster flavor, you need to deliver on it and this dish, although really good just it didn't have that caramel. It didn't have that awesome. I'm sure that they use maker's Mark in the pan to d- glaze. But none of that player was present. In the dish. At the end. Even though the dish was really good. Brothers tuna looked incredible. Like, you said the way it was played it. I mean, it just it was a beautiful dish..

"So I thought that was it was it was interesting TV from abroad standpoint, things we don't often see a we saw in this week's episode last chance kitchen, Mike. Yeah. But yeah, I think if you're speaking about brothers journey which I think will definitely get into because this is a very brother Centric episode understandably. So there are some things that I think, you know, the way that the other episode of last chance kit. Chin runs. I think inform. Some of the way that we look at the way he approached at least the challenges that were going on this episode and speaking of which let's get into this episode because if we're talking about L C K, let's bring Elsie K onto the main show for those of us that watched last week's episode the first eight minutes are a bit of a rehash. You know, we get the chef sort of waking up groggy and sore from restaurant war the end up surprise. It's restaurant wars bitches says nanny as her brother working hard. We get to see what we saw last week of the knives being drawn everyone's sort of working through their courses. And we finally get the cliffhanger of the third course resolved. But we had this unique guest in gym who not only was there to see this challenge. But actually was there to sample the dishes. Now, what I will say is we all make predictions as to who is going to come back into the competition between Nina and brother last week and inessential Josh regular was the only one who was correct element. I think part of it might have just been tongue in cheek that. He wanted brother to be like the Ozzy or the mat L rod of last chance. And just immediately go out and keep working his way back, but I don't know at least from the way I saw all the comments being received. It seemed like Meany in my opinion had this on lock especially with her making a desert Jim being there in the moment and trying the dishes wasn't a clear cut way for brother in your opinion. Yes. Brothers dishes. I will tell you the brothers. I tasted brothers first batch of the Tempera hell Popper, and it was better than the second one. But brothers dishes on the whole were head. And I'm happy to go through all of the dishes if interested in them, but there were some I will tell you brothers. Since we're three courses. It was pretty easy to say this person one. This course, and you know, back and forth and Nina's. First course poboy, Sal fried. Shrimp was good. But it was definitely over breaded. And it's something that is almost like it had a three step breading process with the breading was really thick on it. And it was good. And it was probably almost on par. I would I would call that. "And I'm proud of that dish, and I I would serve tanning one. Now, I think I think my thought on both the dishes was well gyms if Jim was. To make it then I think I want to try it. But yeah, I wasn't. I think the lemon thing made a lot of sense to me the way you were doing the different things with the lemon. So in makes sense then coming from that that it's it's probably feel a little better like head held high. Like, I know I I made a great dish. And the choices the choice. But I know my dish was good. So that makes sense to me. And I don't know you say, you, generally taste the other dishes. How does that I wonder in probably comes into the conceptualizing of the dishes? But when you're making addition last chance kitchen, and you have to make a dish where it's going to be tasted in some order. Does that affect the choices that you're making? When you're preparing it like, well, he's not gonna taste this until maybe ten minutes after I've played it. So I better make something that is going to be good ten minutes. I mean, how does that work and play out because you're probably tasting the other chefs dishes at that point. I I mean, ten fifteen twenty thirty minutes after they've played them. So I'm guessing it would taste a little different than if you were tasting it right after they played them. So does. That play into your decision making of making dishes at all no one gets going to have to rest or maybe not have enough time to rest before it's tasted or judge. Yeah. It it's definitely plays in something that you have to think about I do think that in general, the judges don't punish you. If if it's taken them fifteen minutes to get your dish in the quick quick buyer. I don't really think that they punish you for it not being hot because they understand that. It's just not going to be hot. But I do know I have talked to some people who have been on the show in the past to strategically tried to make dishes super spicy or flavor bombs in order to not only have their stick out of their minds. But also to kind of blow up the palette of the of the judges. So that the dishes, the tastes after yours aren't what antenna to be because you know, if you take seven this really spicy that he can linger on your palate for a long time. And so I think that there is a little bit of. Sabotage not necessarily sabotaged but taking into account that what you may will affect the judges pallets in the in the in the long term. I wonder wonder if that's why everyone makes all those crew does in severe Jays. It's because it's you don't have to worry about temperature in that regard. We criticize the beaches are strategically smart on top chef, and it is just because if you can cut out ten minutes cooking time up I'll make somebody say this on the show, but they're right about that. But if you can cut out ten minutes of cooking time, you don't there's an advantage to that. But at the same time crew doesn't Savitri as are really very light and very they're not big heavy dishes. So if somebody makes something huge in heavy with big meaty in the next dish that they taste is a crude. Oh, your crew does gonna seem like it may may be lacking some flavor or acidity just because they had this giant heavy just that's why you need courses in order. That's why you'll find crew does in Raleigh at the beginning of menu instead of the end. So I want to speak..
