"We're does fighting it out you know and i'm just helpful at this point but yeah they've been in the works for literally a decade like we have been working on this ever since we published first book. We'd actually started work on this prior to that being published and that came out in two thousand twelve so tar so the kickstarter deals could kick down and presume they get a book when it comes out. There's different packages. There's one book to ebook. Three books We sold a butchery class. We sold theirs hats. Some nice first light hats with the book logo on them. Can they get ahead. I had a guy message me yesterday about your hat kickstarter. Now i mean just because we met her golden mean. We can't keep going definitely would like to keep going people at this summer releases soon. Presumably people can still go. Support the book. And get the yeah. We think we've got maybe twenty days left on the kick-starts so then what did you can preorder probably preorders ready until we physically printed books so nothing people can do right now to help kick starter then go to kickstarter. But you said you're gonna shut it down well. Kickstarter shuts itself down. We have forty five day campaign. And i think we're we're probably twenty five to thirty days in if i remember correctly and then after that i mean we're going to get the book printed and so it should be available and we're self distributing everything and publishing so she'll be available around march fingers crossed and then they can do it. Then we've there's websites stuff and so need. Contact us the hog the hog like that dan. But it's pretty cool. I'm proud of it hundred fifteen recipes. Some pretty heavy good pictures. I guess well the so. I'm partners in this book with the photographer who did field and so he and one of the great things about self publishing is that we get to do whatever content we want well first off self publishing enables us to do any kind of gore that we want. I mean for lack of a better term to show really what's happening butcher process. Absolutely i mean without any kind of editorial issues like if i want a picture of a skinned out pig's head in there it's going yeah and but also speaking to that we can put as many photos in there as we want. And what makes you wanna see was it. I want to see a full full vertical full vertical picture of you with an apron on holding that big that big butcher knife you've got in your mallet standing beside a big hats and wild hog call background or bringing a full good thanks. That's the vision of the photo right there. Yeah i already took that photo. Can you make this whole getting stressed out about something ono. Can you make this whole kickstarter thing. Like keep going or somehow to keep going. No because no one's gonna here's we're wasting our breath because people are gonna remember to go buy the damn book and march. There'll be more promotion. We'll get back in front of people. They'll be able to preorder goodell doing preorder. We're not not yet. We're not set up for it but after kickstarter you'll do preorders. We will get set up for that. We kind of want to have the book in like physical. Can you do this so can you can never mind. We're reducing promotional stuff with i. I'm trying to think here. It's like i feel like that people should hear this and they wanna go by the book. But they're gonna get screwed because they're gonna go to the kickstart thing is that could be on. They're gonna forget march come around. They won't buy the book and then we'll be good for anybody and it won't be helping you out. Well we have to get in front of him again. It'll happen set a reminder on your phone listen if you're there at home instead reminder on your phone and it says by jesse's book come ago whore just go right now to kickstarter if you've got if this comes out in time. Schedules like it's not going to. How do you know. I just heard the one we did last week was coming out january for but i have already been already texted coron special powers right now like. I don't care what we got going on. We got to get this out for the kickstarter deal. I love it. Yeah we're we'll see she might. She might say your action. Yeah i mean better. We do kickstarter. The more we get printed in the first run. I mean that's good deal get tall. Maybe ten thousand copies printed. The i run. You can buy that hogwarts. F- i'm saying i'm gonna save all my hog meat for when the book comes out hipsters in la. Do not have that yet. Now you please tell me so. I met my Fancy wine shop in l. a. Close to where. And he said steve's boy and the he wrote this pretty articulate description concise but articulate why you needed three beggars heads new richie got. That's significant percentage. Her kids at his elementary school and the teacher. The teacher has one. He needed to for his bodies one for his teacher. Wow it isn't that right. I don't i don't recall. Maybe i'm wrong either way anyhow so there you are in your fancy wine shop wine shop wearing that first light hat and yeah and i asked him. I was in there because it kover together. I'll shut down. You can't go in it and you just tell them what you yell into the window. Yeah yell into a guy. And i was like gimme orange wines and he brings me to. I was like which ones more blue collar. And he thought that was funny. I got a good wine. I guess that you like that right. The natural y orange wine natural wine which was more blue collar a solid good. I thought he's like neither no he was like we've strayed very far anyways. He sees the first light hat and as he's like bagging up my wine he's like you don't often see light hat and i was like. Oh yeah you like do you hunt stuff. And he's like a little bit of small game. This and that i was like. Oh that's cool man. Yeah i sometimes work on the show meter if you're familiar. Sometimes all the time he's like. Oh i've fucking lav meteor man. I love it. Point of the story is yet fans everywhere. Thank you chris. Sometimes even in la all the time yeah. I didn't want to sound good yourself from it. No no no. We're the all time gives you street. Cred with a kid you know. Just don't like this like this. Frank blow hundred. Feel that you distancing yourself thousands. I telling you these going back to the pop. I wear two hats. I wear that hat or i wear my other. Which is a eater logo on first light camera hat was the only to happen. It's going to be a third baird reset. And then. When i get jesse i'm getting them or you may have heard i've been doing well on so good on the income but i gotta go by in march come march sheth reminder go home go by the hog the hard book by jesse griffin user the hog book by jesse griffis graphs by jodi. Horton now to do the field. Yeah i'm looking forward schwinn. The beard award fairfield did not they ask you out nominated so british guy wrote a book about fruit. "Funny moe at this is the funny part is the most is the first Muslim friend that has ever entered. You know our family. I'm the digital. Yeah and I'm the first Jewish guy entered his family. His parents are my parents and my parents are like his parents. Like there is such a love between our families and so they like each other. Oh my parents are like friends with most parents like me. That they're I think they're very similar. No they're they're very well. There there are similar in that. They're all Middle Eastern. But you know there's the Jewish Muslim divide which you don't find old school Iranian Jews friends with any Muslims any any Arab Muslims. Just don't and you don't find many Muslims who were friends with Iranian Jews And it's from the old school. I think second generation does so but I you know I hate to get all like you know a coup by but I seriously think that in a in a big way hunting kind of brought us together was like such a common ground that that made us into best friends that there's something about a hunting buddy man it's like you've you know. I'm not gonNA exaggerate and say you've been through war together but man we've done some fucked up shit that I've never done with other people like gutting a deer in the dark while you're freezing and it's an accelerated courtship absolutely. I want to ask you a question about Show business in in career in sort of the way. Yeah personal life comes into it. Look at someone. You mentioned Joe Rogan. Yeah but he's on. I don't WanNa say is untouchable. But everything he's done as organically built But he doesn't he doesn't need the normal gatekeepers don't apply absolutely right like you look like who like if someone's mad at him or someone's displeased with something he's done what are they the. Stop them from publishing his podcast. Yeah the UFC isn't GonNa Masoom Right. He's going to be a great stand up like he's in. It's not accidental. He's just got himself he. He's like created a position for himself where it's like. Come on come on. I don't give a shit. Yeah like I'm doing my thing. People you know like like like Chris Pratt. Pretty outspoken hunter. Yeah someone else spoken hunter. But he is like he's depends on studios wanting to engage with them. Yeah So when I asked you about that do you. Are you fearful like an serious way? Do you ever think like or is just sort of a very Middle America perspective. That Hollywood blacklist the hunting guy or is that is that ridiculous. I don't think that look if I walked into work with Maga- hat that would probably have an effect. You know what I mean more so than hunting Absolutely I think you can get away with. You can get away with hunting if you're cooking if you're chef legal whereas I think but I don't think as it is stigmatized but it's not. I don't think it's enough of a to be a dealbreaker and also to tell you the truth now that I'm on this new show. There's a NASCAR show. That has a NASCAR audience. I have a feeling that's why I think I'm a little a more willing to come out of the closet about it. Oh yeah you know judgmental no not at all I mean? I'm sure it's going to be a big hunting crowd. That watches that show. What's your role show? So it's about a NASCAR PIT crew. Who are you in? I'M GONNA? I'm I'm getting too deep. I am the chief engineer of the pit crew. Are you like a nerd? Yeah that's my favorite nerdy nerdy like socially Awkward Chief Engineer. It's like it's the best because you have to learn a lot of terminology you know. Look I went to Hopkins. I was premed. I you know I I. It's not it's not that out of my wheelhouse you can do little tech talk. Talk talk no I could use some titillating tectonic. That's good see that I listened to your podcast. One of the words. You're a word. We don't use that alliteration. Really which is titillating. He's already no no by like So how'd you come so so well read and all that stuff is just just yourself just being like I feel like I'm just going to fucking learn everything I can learn your did a lot. I got to do a I appreciate his asked me a question. Don't lie I'm not too crazy about it. I'll tell you the answer. No because I want when I went to graduate school. It's supposed to be two year program but to me three years to get through and you already interviewed two years. It's like basically just go there and read the secret writing a writing program you just read and you get to read a lot and you're around people who are excited about reading and I. I always read a lot in had good you know like like somewhat good retention about it but it was in that culture of you know just like several years of like very intensive reading. Yeah and I. I think I learned things from that because I remember like leaving to go to Graduate School. I realized I had never read. I never read anything approaching literature and I remember dedicating a summer to trying to get through James Joyce's dubliners they because sure as hell wasn't going to read you listen while say. Oh so he's got a little short book. Couldn't get through it all I'd ever read. It was like just stuff about nature. Yeah like nature stuff history mount man history stuff Davy Crockett. Yeah stuff. I just read all that books about how to trap and I remember thinking like man I got a bone up and so I really like tried very hard to get my way through dubliners to prepare for like a life literature. Okay yes but you know what it's like. I've gone to Grad school and they don't become like what like how you've become and it's interesting reading. Your book was very interesting to me because I was like okay. I'm going to read that. His Dad was a professor or something and like this all something that like you know. Even though they grew up around the woods like you know he was always and that wasn't the case. I mean I didn't know that you were like trying to be like a professional trapper. I was like holy. Fuck Man. This guy he he you've most people can't reinvent themselves as a fucking good writer. Well yeah but if he gets to Is in some ways. This is true of me and Yana. Some brody here In some ways right now I mean it's like affectively. Think about and talk about the stuff for a living right. So that's you know you're devoting a lot of time to it. Yeah like the subjects. You know that that's not so much for writing them down but it just you wind up getting where I think you wind up getting where you you just. You have the luxury of getting to immerse. Yeah into something yeah And really surround yourself. Surround yourself with people who are equally immersed and I did that and I got. I was able to do that for a while with when I went to school for writing. And then coming out of that. All my friends are writers and you just like immersed and that kind of gradually segue into you know hours had that focus in the outdoors but then one of the people who think about hunting all the time and think about fishing and write about it and made their careers about it and then it winds up snowballing effect. Yeah right US able to vote. And he norma some time and attention to something. Yeah absolutely which. I'm sure is true. In many many other disciplines we had the day we had the Insect Guy. On right yeah. It's been so crew mess around insects stray pretty far from his focus and ask some questions about bugs and he knows which talking about how in the world do you know like. Oh yeah because he liked me spent twenty years dealing with the same sets of ideas. It's awesome I mean it's I have a buddy Josh heald he's He wrote the movie Hot Tub time machine. And he's one of the writers of Cobra Kai this show and he he always says I hate writing but I love being done with writing. Yeah that's a that's A. That's a does many versions of that. Were there yeah. Oh he didn't come up with that how he didn't you're on Blasio. You feel the same way. Oh absolutely I think it's just like like I hate. I hate writing floors. Hate right if there's nothing like the Donald Writer in Frazier. I don't think he's New Yorker right here. The book called Great Plains. A History of American Great Plains Phenomenal Book Okay. He was saying when he was young and he wanted to be a writer like he always grew up reading the New Yorker and he said like normal kids draw like monster trucks and whatever. He would draw a person with a Martini glass but he said he is imagined. Oh I have my my shirt shout out to. Hey Jesse Ran artesia awesome. This is where we ought to eat. Oh Yeah you should hang out with Jesse Griffin. Actually Jesse. He's no he's he's a hundred Austin Texas he has a restaurant teaches a lot of people. Actually you guys. It'd be like nuts on a dog. I bet you guys just love each other. Yeah I think I remember he on here or yeah. He's been on the show. You'd love that guy. He seems interesting. You guys hit it off. He's he's got a good cookbook. For sure was getting at though. We were talking about Writing and then we were talking. Oh I'll tell you a good writing quote. Yeah how's it go- it's like I'm going to paraphrase the writing quote but it's some white working on a book is like driving somewhere at night where you can only see as far as your headlights but you just keep going and going and going and going and eventually get there. Yeah and that's miserable. Yeah without a GPS. Because I think it's like there's so much potential for wasting fucking hours and hours and hours and the amount of stuff that you write you just throw out is just like it's just wasted neurons. Well I mean it's not wasted because you you have to get through stuff to get to the good stuff. I work Lately on a couple projects I've worked with brody here as a writing partner. Oh cool and brody's I mean it's fair to say your self taught writer school. Yeah I mean. I studied writing at an Undergrad date. Yeah not like has had near nowhere near approaching what you did but yeah a little bit enough.

"And what started me. Down needing to know about Crockett was that I would talk about was sort of a shit talker. Crockett it was in Texas. Get so mad real mad my friend Jesse Griffin. It's like he turns kind of red. If you say something bad about with anger if you say some bad about Crockett so that led me to think. He's a reasonable dude. That led me to think that I needed to go read up on Crockett. 'cause I also knew there was like a little bit of a mystery. Mystery Devi Cooper right. Well did he die at the Alma. At the Alamo. Would Crockett like go. We're down in a hail of bullets fighting or as some people now think was Crockett captured and in surrendered. Well right and those. You're Texas France. Do Not WanNa hear anything about as render pets. Those guys are getting way so I needed to know more about that led me to want to know more about crock and also the connection is connected in people's heads even the Organization the Conservation Organization. Boone and Crockett right right. which kind of bundle them together in a way that they don't they shouldn't they have no business being bundled together? I agree with that. I mean they were only i. I mean they're they're they're separated by a few decades anyway. Yeah like the height of Boone's adventures were around were around the revolutionary reward. Yeah well before I mean. Crockett died at the Alamo in eighteen. What thirty six? And you know I think but as as far I love that question you know about whether or not what actually happened at the Alamo. Because they're so much tied to you. Know Texans Texans tie so much to that going down in a blaze of glory mythology. That is it's almost. It's really interesting when you look at history. How well is that really? What happened You know a lot of the it's unfortunate but a lot of the research suggests suggests that he may well have just surrendered and been executed. And then they you know they were at that point They were the Mexicans were piling them up and making funeral pyres out of them so nobody really wants to remember Crockett. That way. You're and you know when they did the film. The Alamo as ten years ago Billy Bob Billy Bob Thornton it winds up being the only man standing is crock and it wasn't so much like he surrendered. He just got captured right until then. He's very defiant. Oh Yeah Talk Santa Ana Yeah Yeah they it kill them with the killing with bayonets. Yeah I mean I had to make sure actually was very careful that that movie came out while I was in finishing stages of the manuscript and I I made sure not to watch. I mean I didn't want Billy Bob in my head as like that. This is who even though. He's a great Crockett. But like I'm sitting there trying to you know great job. Yeah me too but I do move is not a great movie did a great job. He did a great he steals the show as he always does. But I didn't WanNa have like my Crockett that was in my brain. Be overtaken taken by Carl Children's and sling blade or something you know with a mustard. I didn't want that and so I was like I watched it after I watch it after I had finished a manuscript and then I was like okay no damn he kind of nails it but but as far as what actually happens there you know. I think it's hard not to get swept up with the mythos right because it's a better ending. You know if he it goes down firing outnumbered you know fifty to one or whatever it is made no more than that. Yeah and so all A. It's a lot of north part of the Alamo. Didn't realize the amount of being drunk and being sick to win. I mean you're yeah yeah these guys are like either. Drunk or mortally ill got dysentery and Larrea but yeah I mean. It's horrible right so I was going to ask if you wanted to talk about the really expedition. But it's give me nightmares man. It should so we're Crocker's all right then. We'll talk about the greely expedition. which is your new? This is your forthcoming book right. So Labyrinth of ice the triumphant and tragic set greely. Polar expedition is coming out on December. Third Oh and it's a really thrilled. It's it was tremendous project unbelievable unbelievable story. It has basically everything I should come out in December because to read about the being this cold old. When it's cold out is it's disturbing? It should be like a summer. Read my phone. I froze my thumb. Oh you're there's a ton of frostbite in this book. Yeah froze my thumb and now the skins coming off of it well in reading about these these students foot. He freezes raises his feet. So bad can't look and eventually footfalls off. They don't even tell him and he's still talking about how his foot tingles horrible stuff. And and then they they like tether fork to this guy's hand so that he can eat by himself feeding him. You know. Yeah we'll talk. It is but here's the thing you always hear about. Here's the Arctic. Arctic explorers and Antarctica Explorers. Like if you don't you're we always like. Oh yeah they go there and they're like of course you know but to really understand this job of explaining like step by step by step day by day by day like what exactly goes wrong and it's what goes wrong is complex very complex and it's not just like oh you went some real cold and died died. It's like governmental failures upon governmental failures in like like not understanding the climate well and not understanding like what's normal in Arctic abnormal in the Arctic and its series of unfortunate events. We'll get a job. Never have nothing to do. Well it depends that that was the double negative. Send me the Arctic. No okay get one. You didn't turn your clock on thank you to You GotTa let us know when we need to switch to still have time to talk about labyrinth of Ice Africa. Talk more about Crockett. Okay okay. I'm also because zero. You read the book a long time ago. You wrote a long time ago. So you're a little bit of a disadvantage but it's going to ask you about some things about Crockett right. We'll see how will you hold up. Okay I'm game because you now as a writer if I want to do an interview and some guy wanted to talk about something I wrote a million years ago. I'd be pissed. I know I'm I'm a little bitter but I want to work around it I I actually was primed slightly because a couple years ago I was I was a talking head on history channel show that was was well. The this one was I was on the other side of I was the person being interviewed. I was the Crockett guy on a show called the frontiers men. The men who built America. I was one of the boone guts. Yeah Okay and so I was crooked guy but you know it was one of those things where I was. I was freaked out because same what you're talking about. I mean I had written this book and the or between one and three and then it came out and no five and then here. I'm being you know your Crock Guy. So let's hear about it and I'm thinking God I should probably go read my book. Is that what I said but anyway I'm game. Yeah I'll make it up if I don't remember okay. I'll say it's the things that struck me about crock. Biography that learned about your book the fact that his old man the Pe- people in general were in the practice practice back then in the early eighteen hundreds of hiring their children out as indentured servants to settle debts. Like like you borrow money from a guy to buy some cows. The cows all drowning rivers say. Then the guy's back how about my boy lives on your place for a year exactly and routes our old stumps and shit in your field and then we'll call it even right. That's how this guy spent his childhood. I know in the one that blew me away was so his his own man is always in debt and Crockett was basically always in debt to Just the Ba- bad decisions and bad lot. Yeah you know. His man says saying you know what you're talking about. He's like Oh this guy. It's a bunch of money. So what if I send a little debbie on a like a cattle drive for four hundred miles. This going to last month's right in this little kid you know fourteen or think he was twelve the hook along you know product cattle staying in Rhode houses and like watching men drinking and horror and in Crockett's you know just sitting there as a little kid. You're right I mean he. He was gone for months at a time and We gave me some ideas about like some stuff. I should have probably done better with my son. Yeah he's not GonNa make money off that great but no you're right. I mean it was. It was such an amazing time where you would just do whatever you had to do. It was not uncommon to sort of sell out your kid for one point. He was gone for two years. Yeah does mets. The he he has gone about Tro- he likes smart. He pisses dad offense. Dad kicked his ass. Yeah well so he kept. He was playing hooky right right so he's playing. WHO said they're paying for him to go to school but he wasn't going to go to school he would go off it he would head off to school and then just not go to school? Oh Man at one one point Caught wind of this and he was like waiting for him on the on the road back to the House and his dad like whooped up on him with to Kane stick and then Crockett He. He he led out for a little while there. This is like coming into. He's coming of age. Yeah it is gone so long this where. It's almost like a fake story so here you don't all this like indentured servitude to satisfy his dad's debts. Dad Kicks his ASS. US He takes off for years goes works odd jobs like working on Mule trains and wagon things you almost got on a boat and sailed to Europe. Yeah tried to go to Europe other boss. Let them off the hook and believable. All this crazy stuff happens. But it's like out of homer's Odyssey Perot the product Sunday. A little bit we're right. Crockett goes back and he's he's been gone so long that he's able to go back and go into his family and not tell anyone who he is right and they actually get away for a minute right and is he sitting in a in a like a call. It wouldn't be a cafe but like you know. Like a roadhouse and his sister recognize him. It recognized him and then they're like. Oh my God did to David and at that point he makes he's really funny you know caucus it's very funny..

"Ones. From England to made got into the NATO radar and they're like, whoa, there's a pig flying. Some guy. Cared us cows. Pig. Does he? Hog problem. They got flying pig. Schiff Jesse Griffin in the studio with us his place here called taco. Talk area day. Do we talk, and then they do these and what I like. You like to cook a lot of feral pig and venison, which is. You know, people tell me oh kin. You know, you shouldn't eight red meat, you need to be chicken. Well, what was it yesterday day before yesterday was watching television show? They're saying, oh, Turkey and chickens just as bad for you, beef on cholesterol. I think L depends on where it's coming from, I think that's a very, very key thing. That if it's form rate. Open open range, or they just get out Nate, whatever they can get. Live corn to him too. But if it's while there's fifty thousand of them in a house, and, and the food the feeds running down a tube Duffin out. Yeah. You don't want to know. Plenty but understand. Yeah, but a deer that, you know, a you know, out of a note field browsed around toll life that, that yeah. Well, that's talks about that all the time. You know, people say, oh, well, you shouldn't he shouldn't tell harvest Bambi. Well, if you won't a free range animal that has nothing but. You know, the browse and the grass and everything that, oh well, I don't eat method, but free range beef. Oh, no. It's been a whole lot more than free range beef. But we won't get there, but venison, their free range then been that way from day one. So a resource I mean in a in a in a very sustainable and renewable resource here. It's not especially central Texas. I believe has one of the highest whitetail populations in the world that wouldn't surprise me. I mean that they're a little bit small and started. But they are a resource. And I think that's, that's a really important thing to look at too. And, you know, here also have so many, we were meant Jesse use does telling Jesse about my son. Over around stonewall, and married a gal from there, and they have a lot of access in we're working on possibly going on access hut here for low, but. Access anybody. That's not if they got access on their place. And they ain't taking them shame on you. Call me and Jessie. We will come help. Thin your access heard Dale. Yeah. I think they're access fascinating and they've really come up in conversation. A lot in the last year, especially for me, and it's, it's a of had like offers people used to be like, hey, you can come out and pay for access. Now, people are just saying, please come out and shoot axes. They're kind of low impact hog this point. They are still spreading. I shot my first one this last season in just popped up out of nowhere south, you've Audi. So they are they are spreading, and need to be controlled. And also, they are delicious. Axis will. I wish to one of the biologist in here. I don't know if they drop twins but they will drop babies twice a year. Correct. And they breed anytime in the year and you'll say hard horned access bucks and you'll see access bucks. Just barely got nubs where they're starting to grow their horns, it's not like whitetail. So they're breeding all the time and they will. Don't be a lot of but they're tasty. If you have a problem, call me and Jessie, they're incredibly awful, my and they are now. They are like elk like guy like white tail they are very what almost like DRAM meet. They don't have a lot of fame in them. They have a lot of exterior fat, but you're probably trimming a lot of that office wax. Right. But yeah, they I mean just like most game animals. They're gonna they're gonna tend to be a bit lean. And what now? People's asked me Ken, how do you fix whitetail and Jesse you're going to help me here? How do you fix whitetail or you can barbecue it? Well told you one of my recipes you just bone at him out. Open it up. He put whatever kind of sausage you like I like I like the good smoked sausage with some flavor. Now, I don't want. I don't want it hot. I wanted a good flavor. Rep that backup put a little bit of salt. Maybe a little bit of pepper and there and some different seasons in their Rolette backup, then say's near outside of you ham, put it on the pit slow and just said it, let it cook. And once that sausage gets hot, it'll burst and then it flavors. And also puts the juice into the meat from inside out and good. Call that Basti Basting. I'm just a damn redneck cook now the only difference is vocabulary. The same thing. Just curious. Condign affect how the animal tastes. The person fact just referenced someone asked me to come out soon access, and they specifically said, we'll you'd come. She didn't access out of this outfield and I almost fell over myself. Field. So that's about. I mean as far as wild game goes. When someone says I got I got too many access in my outfield, will you shoot one answers, a definitive. Yes. White tail had coming out of a food plot big food plot. And they are as ING, so. Yeah. Diet affects just like any hog Steidl will check them severely. You know, I've heard people feeding them like hazelnuts stuff. Oh, yeah. Sure. In Europe, chestnuts hazelnuts. But I mean tree mass like acorns thing like that. We're, we're we're shifting over to hogs right now. But that, that makes the most difference is if they have access to, to treat them tree mass like the cons and acorn. So that's why certain parts of the state are specially good for harvesting feral hogs out of the brownwood goal tweet area where you're at predominance of oaks, as well as huge pecan orchards there or the, you know, east Texas where you've got a bunch of different oaks. But then you get into south Texas into the brush country where there's not as much of that, and you'll see the hogs get to tend to get a lot leaner. Generalization though. Now I got one here. My dad took we were hut. Oh, oh. Gives milk. Was a wild page of chili. Spicy shot the Turkey off hotel pertains the contract pepper. The damn thing. Oh man. They were hot. No. I don't like. But they were hot. Get outta here. We're gonna talk about. Recipe's on lake sad. Because I know you've got new recipe book, or so what talk about that. You want to jump in here. Eight simpson. I'm saying some of them, some of them can't be just fine. And this one came from a place that had tons of oaks. It had a lot of fat on it. It didn't have a lot of bad stink on it on the ground. Okay. And while we're processing and I was like, well this wanna shot. I mean it was at night. And so, you know, when you shouldn't or nights go, you don't know how big this is what I got up to it. "Larry Washington here we got ship Jesse Griffin in here. Found out books if you wrote just one just one working on number two. I'm almost finished with the second one. We got another Arthur in here. Larry. He's wrote a bunch of books out south takes a little bit of everything that eight or nine and some of them. Round the world and all that other kind of stuff, but there's a little bit of south Texas stuff and some of them as well to just got back from Spain. I did the food in Spain was absolutely fantastic in and pork is one of the things I really truly do a lot with and I can only imagine what you can do with pork during the break or you're on that so things will eight and and we were talking about survey t- to begin with. Drifted off into some of the. You're talking about just got my mouth watering switch. Mike's a little bit. Sponges? Well, you know, what's interesting about that is some of the best fork in the world comes from Spain. Yet. Our feral hog problem also space. Line is actually, and I bear echo or Spanish hog. Yes. At its root. Now, of course, it's been mixed with just about everything else that you can throw at it. But but at its at its root it is. Has a lot of the same qualities. They love acorns, and they get real good when they've been eating. Yes. Yeah. I mean, a really big thing cure their hands kind of assault. Brian care. They'll hang hams for like three years where they start them. Harley. No. And I mean, the ones that are really good. I was told when I was there. Go back because I was you look for those because is attached to that that that hindquarter and you look for those look like they came from or from a wild hog as opposed to domestic in may not tasted the to. And the domestic hog is good. But that while there is out of this world with what they do with phone. Yes. They actual grade of of hand their Negra yesterday. Yeah. Exactly what we got over here. And then another great, which means a coral. So it's it's there's a lot. There's like a good like seem as a Senator between Spain in here. And if you noticed too, I mean the country they're almost looks exactly like it is it is. I'd absolutely love it. It's amazing food. There is this world. Here. We are. Now, we gotta get back talking Savitri. I'm sorry that that listeners. Just go. Oh, yeah. We got to come back around to where we're supposed to be. So you soak it in salt water or salt and lime juice juice. Then once it's cooked drain that off. And then what I'll do is toss it with I guess for lack of better term. I'll just toss it into fresh dressing of more lime juice fresh lime juice maybe a little bit of olive oil. And then all the whatever vegetables, and garnish you wanna put in tomatoes, and your salon show onions and Serano maybe some dystopic KADO things like that. And I'll put that in their fresh. I don't soak that in with the with the bankers. Crackers. Crackers chips. Wow. Crackers chips. Won't crack. Right. I just down. My wife's eats chips crackers house divided. Now, eight him on tips, but I like crackers. Then you got to talking about Peru, Peru. Yeah. Well, yeah. In South America. And I'm sitting there. No, survey cheese, just got onion. Bam. Put bell pepper in mind in that heated up with the basketball's. All right like. I don't like hot. And sometimes you can get a pepper. That'll just smoke. You burn you twice. And then the next time you'll get a jalapeno in mild. Right. And so yeah. So I just use Tabasco sauce might up, and you know, the select show the onions avocado bell pepper. And if it's a mild jalapeno, I will use it salt mine in and lamb juice overnight. Dislike you said with a little bit of of south, Dane it. Now, the next morning trying it off like you said than our will use the talian trysts in just a little bit of Italian dressing and there to start with to to put the all also you'll oil little more acid vinegar little herbs probably oregano things like that. Then I put all my vegetables in there. Avocado. It sounds fantastic. It is good. And sometimes I put key Linnet. Yeah, you were saying just a little bit of us talking about using orange juice in all different. And and coconut milk in. All absolutely. There's so many different styles. I mean, there's there's whole books written just about that topic of Savita, and it goes way beyond just your lime and an onion tomato. So yeah, there's there's endless citrus alone. You can change up the citrus juice. I mean. Grapefruits? Here's reason not to juice grapefruit and make it with that. We're learning stuff. Larry. Venison put a little garlic on it. Rollet little flyer. Throw it in Greece. Brown taking out you drained all off. And then you mix gravy little flour Brown a little bit porce, Milton and salt and pepper in there and you make biscuits. That's how you cooked mashed potatoes. But. Well, let's just many different ways to parents stuff now on feral pig. Now. Do you have you? You said you have cooked a whole one. Do you keep him whole? Yeah. I mean, we get asked that a lot about cooking feral hogs hole. And I say I mean, you got to choose your battles with that one. If you're gonna do that, you gotta get a really nice fatty one, otherwise they tend to be they can dry out. Typically, lean depending on where you're at the state, you know, Texas brush country, they're going to be pretty lenient Wes, they can be lean unless they got access to.

And Jesse is in here and jesse's all kinds of books on wild game. And then well, we'll get Intel we have you the rest of the hour. But. Good morning. I mean good morning, but I have to apologize. I didn't do my homework on you like, I should have, sir. And what's started looking into what the top Korea got ask you something. Right now. All right. Who has the best breakfast tacos? San Antonio are. Austin you're going to start up. You know, I might even do something. That's not very self serving. But I'm not gonna San Antonio. Oh, I'll tell you. Why? I think. Interesting something to having a kitchen. That's maybe eighty years old. Pots and pans. Maybe they developed some sort of patina. I've had some tacos and San Antonio. That'll just blow your mind, and it's a different style there too. Yes. And you can't replicate it, and I think San Antonio needs. Do it's it's one of the things that they do very very well. So it's like doing a New Mexico hatch, elk roast. Yeah. I've had in New Mexico, and I've had it in Texas. Correct. It's all about setting. It is it's so much better in New Mexico to get back here and Chico. He's he's from New Mexico. He's in their life. But and he's he tells me says this the hatch peppers. It's just the the way they're handling way. They're shipped. And and fact now we get our own hatch peppers. We we roast Marcel f-, and we I like mile I don't like hot. So we get the very first ones. They're mild. I think we've got a cast. Hey, we're going to San Antonio RV's. Now, Matt, you know, we're in here talking food got Larry wash with trailing the hunters moon. And we got Jess Jeff Jesse Griffin with daddy's and the top RIA. And now, we're gonna talk RV's Matt I I saw one of the day. Got a slide out. I know I'm way behind because the guy says can they've had slat out for ten twelve years. I'm sitting there. I don't get out lot. I know you've got him with flat out. So. Those things are nice. Do we have with slide outs? But like our avalanche series has has a seven foot tall slide out. So if Tim Duncan wanted to come in and eat a bunch of breakfast tacos in the middle of that. Tonio breakfast tacos. In the world. There. They make slides and slides. We'll go out, and then and then it goes out a little bit further has another slide built-in. Telescoping mechanism. Yeah. Just unbelievable stuff. These days. It's all to create more room know square footage, right? More room in in in the RV, which is you know, or recreational vehicle but anymore. They're becoming housing though. Everyone needs more room in their house. So I it's it's just they're drawn everything they can to make things bigger and bigger and bigger Larry we're gonna have to go look at the one of them. You're right. We do me and Larry both a big, and we get in a little RV. And I'm sitting there. I feel like a sardine. Breakfast tacos. You can look at anything. Now, we gotta have them with feral pig like the make at the talk Korea here in Austin, though oil. Taco taco. Good. Now. If you come down to meet, it's getting warmer outside of that. Did we hit we hit ninety degrees last week? Yeah. So that he was due to them tires before you get in your car ios. Makes you tired of the same thing with your V. So you gotta make sure those travel trailer tires, or you know, they're going to pass inspection and make sure you don't get a PLO out. And we need to inspect those tires and people have already taken their RV's out one. Yeah. For the first trip. So you know, they need to run it by saying Tony V's either get their state inspection a free roof inspection. And always, you know, we'll look at your tires and make sure you're not going to have trouble getting into the we don't want you to better to beat the lease and own side of the road. Yeah. To have blow out. So I never thought about checking the tires on RV your ride me to do that. So they people can bring there's by that you check it all out and get it all service and make sure everything's good. And if it needs anything happen, y'all got shop there and fix you up. Oh, yeah. We gotta shop at in. And we'll do that while while you, wait. So so you're you're on your way down to the end of the lease and depicted up or down to the coast, we drop in and say eighty mind looking at my step real quick, we'll draw whatever we're doing give you a free roof inspection. Check your tires meaning state inspection because you know, you need that state inspection. Your your deal. It's pretty important in a lot of a lot of companies. I hate to say it, they find it burdensome, and they won't make you said an appointment for. We'll just do it as a walk in. Yep. So besides having the best prices in San Antonio, y'all just service the take care of the of your customers. I mean, you you have everything that the customer needs. Besides the best prices on RV's. You know, I if we don't have it there. I it could be there within a day or two.
