John Brennan never respected him I've never, had a lot of respect Senator Byrd said it best if you knew anything why didn't, you report it when you were before all of these committees he suggested he might revoke the clearance of others. More than a dozen former security officials have spoken out against the Trump move against, Brennan CBS news update I'm Steve Kafer KCBS. News time nine thirty. To the CDC is reporting that the, cause of the mid western polio outbreak that left hundreds of. Customers sick was a, foodborne illness and food. That had been kept at an unsafe temperature joining us live on the KCBS ring central Newsline to talk more about this is food safety expert Jeff Nelken thanks, for joining us this, morning standard of are always. Had this sort of casual off air Thing about well how long can you leave food out, without getting, sick and which. Is worse keeping cold, things called or are you more likely to get sick from something warm? Not being kept hot enough well you know when you when you start. Looking at foods that are being left out for extended periods of time you really. Have to back off a little. Bit and see what the history is how the food was prepared in the first place because you know there are. Many possibilities of food not being prepared as safely as it should so not only. Is it the length of time from, the time you have the food out but also think about, the, handling. Of the food by the food. Handler did they wash their hands where they in good health The product that they, were working with was stored correctly you know. Refrigeration wasn't really forty one degrees or did they leave the door open or is the, refrigerator running at forty five, fifty, degrees because they're in and out so there's just a lot of issues so it's not like a quickie answer but what's interesting about the bacteria that was found, it's called clustered fringes and. It's, what they call a spore form so what's interesting about the sport former is that when it knows it's under, attack that you're cooking it it puts a protective spore around it self almost like, the shell of a walnut and that protects it. Even in the, cooking process and it conserve I the cooking process and has also survived up. To an hour at bowling temperature but now once you've cooked your food hopefully you've cooked it, to the right temperature you know if it's poultry that you hit one, sixty five for at least fifteen seconds thirty seconds and You know. Other products, that you're following safe temperatures now it's cooling down but when the bacteria does it's happy dance is when it gets somewhere around one hundred and nine two. Hundred and eighteen degrees as calling off. That's when the shell spore breaks open, and it starts reproducing so that's when the bacteria does it's happy dance from about one hundred and nine to one. Hundred and eighteen degrees so you can see is food is cooling down if you're leaving it out too, long and it gets into that range it starts producing a really quickly and is, is an issue where a heavier load of the. Clostridium in a given spoonful of food is more dangerous or his one sell enough to give you. Trouble no I don't think it's a, question of one cell I think you have. To keep in mind that a lot of times the bacteria will be killed during the, cooking process and It's the toxins which are the waste products of the poisons that are given off by the bacteria can survive cooking and freezing So that's what, makes us a very unique type of. Organism and you need to begin start looking at when you look, at the big picture you've got to look at raw foods you've got to look at the produce how it's handled in Washington how they maintain the temperatures. Because a lot of produce becomes real vulnerability when it's like fifty or. Sixty degrees bacteria starts to reproduce so. Washing it correctly if you're washing it maybe in the same sync with the meat items so you, have to, be real careful I try to separate my produce washing, from meat and poultry washing because the the bacteria leftover from you know chicken and beef can. Be the residue in the sink and now you're putting lettuce in the sink and that's how, easy cross contamination can take place so. They're gonna have, to not only think about replacing their inventory and cleaning up the place but they're going to have to reexamine The product from where it came from the source because. Remember a lot of this bacteria can be found in the soil that a lot, of the produce is grown in so. It now becomes the source of where the product is coming from, then it's going to be delivered to the to the facility and then it's got to be handled correctly it's got to be washed correctly it's gotta be. Stored correctly and then of course how you store things in the refrigerator. Is there the possibility of cross contamination. Taking place in the refrigerator if you don't put it on the right shelf if you don't put, it in, the right position and something else is dripping on top, of it so you've washed it real well but you didn't position it correctly and now it's. Being contaminated by other items possibly in the refrigerator and again we've been situations where there's mold, sometimes found in refrigerators gaskets the not Not properly sealed and the gaskets have mold on them so it's it's looking at the big picture. It's looking at not only the cold chain but to procedures that are, being followed or should be followed on a regular basis in, every facility because having rules on paper and. Making sure that those rules are. Being followed we call it. Execution do they execute the rules and are we retraining the, staff to to be aware of all of this the importance of, washing your hands the importance of having soap and, paper towels you know in in the hand washing stations you know so it's looking at what we. Call the food safety culture which, I think Chipotle is beginning to. Look at now and try to figure out, it's not just a. Question of, closing down your operation and giving people in an injection, of food safety Culture all right Jeff Nelken is a food safety, expert this in response to what had happened at that Chipotle in the mid west hundreds of people made ill by food poison known as clostridium per fringes KCBS news time nine thirty eight The two megastar.
