The Internet has been buzzing the last couple of two three days because the folks who make little Debbie snack cakes have announced they're going to be doing little Debbie ice cream this Christmas, an exclusive deal with Walmart that's kind of the taste of their Christmas tree cakes or whatever they are. As much as I love snack cakes, I always grew up as a hostess kid and didn't really enjoy little Debbie's didn't even see little Debbie's until probably the early to mid 80s when I was going to college in southwest Virginia. Now they've been nationwide and they've been around most of my life, but I didn't really notice them until then. My favorites probably the zebra cakes. I think they're the ones I eat the most if I do eat them. My wife, I think she may have nutty buddies in the house right now and she likes the Swiss cakes and doesn't mind the zebra cakes, and while I've had the Christmas tree cakes, they pretty much all taste the same to me. But the ice cream is making people crazy. Thought? Gonna try it. Gonna see if I can find a pint at Walmart when they start selling it. It's going to be a limited time run. It's going to be something that people are going to be looking for. The look out for, if you really care, little Debbie ice cream, who would have thought people would care that much?

"When psychologists think about emotions and especially when we think about negative emotions. We don't ever think about like how to get rid of them like that's not really what we think is actually possible or necessary what we're always interested in but we've done a terrible job of sharing with everybody else is what we call. Emotional regulation and regulation is basically a two part process. Which is that sometimes. You regulate emotions by expressing them right talking about what you're feeling and sometimes you regulate emotions by containing them. You know kind of shutting them down a little while which sounds like a bad thing but can really be a good thing. Like if you're you know really really worried about something in your getting stuck in your thinking and you're not feeling better the more you think about it taking a break distracting yourself is probably a good idea what i get to in the peace and what comes up in. This question is the issue of extremes or when kids need help so sometimes kids need help containing emotion so we might say you know what i. Don't you just leave this loan for a little while. come back. We'll talk about it later. And then their kids like this one in the letter who need help expressing emotion bringing their emotions across to get some relief and we really do feel that way. You know we talk and we have all these terms like getting things off your chest airing it out. You know like you know dumping your feelings. There is something in those terms that gets at a real thing about how it's not good for us to carry around distress. It's not good to keep it all stuff down that there's true benefit in getting stuff. That's on the inside and putting it on the outside because usually it just feels better when you're not harboring it so much but it's not easy nice. Couldn't doesn't work in every family. It's not easy and especially if teens are known for sort of clamming up not wanting to talk to you what do you find. Works to get them to open up. I'm guessing it's not ice cream if it's not ice cream you got to have something else. So let's think about the something else. "You try different flavor every time or did you have some favorites that you always. That's sort of like a test if they make a great blank. I know it's a good place. I like to think. That any gillette. A rea- is putting their heart and soul into every flavor. So i don't love that metric like when people come to the store and they're like well. I need to try your vanilla vanilla but usually go for like a few or de la which is sweet cream plus a fruit sorbet plus pana. Because that's just like super refreshing. Okay so not those like nutty chocolate flavors got it but i do love make. I was just thinking. The era that you are born into was a different ice cream era than i was born in to We really only had baskin robbins and supermarket ice cream. And then maybe like a little family owned place in some ice cream trucks. But you're born until like the ben and jerry's world right you know haagen-dazs had happened. You know buying fancy pints in the supermarket back then. It just wasn't a thing totally an haagen-dazs change that whole game. And then ben and jerry's came along fears later with these really extreme flavors and all the things mixed in right and then it was just a whole new ballroom and i think now we're like we really are deep into that world of people will spend what it costs to make super premium ice cream. I don't think we're there with every food category. They may not spend what it actually costs to make a. Did you have any ice cream. Heroes growing up or any today. That's it. that's a great question. I mean to be honest. I love all ice cream. I really don't like maybe this is completely uninteresting. But i don't like to or i don't actually have any bad feelings towards anyone who makes ice cream because look it's scream right ben and jerry's absolutely and haagen-dazs absolutely love jenny's. I mean she kind of started the new wave of artisanal ice cream right after the men and jerry's haagen-dazs thing but what i stalk my freezer with right now is always one hundred percent of the time haagen-dazs strawberry huggins manila. That's so yes. On the ben and jerry side. You know there's really not much fruit there. So it's the to target exclusive flavors that they offer which in my opinion are their best retail. Even know this was a thing to yes so they have to target exclusives. One is called peanut butter world. So it's chocolate. Ice cream cookie. Swirl which is revolutionary and inspiring. For me cookie swirl and peanut butter swirl and then the other one is glamorous fire trail mix also like you know loaded with stuff Marshmallow chocolate covered. Almonds pretzel swirl. I did not know these things existed or the best they're the best ben and jerry's and those are the two best talk enough. I do love how vanilla i think. That is such a good flavor and it's so fun to like mixed things into that totally. Yeah i love so many. I'm a big fan of just jenny. In general you might remember like two years ago. When lauren goldstein was lauren. The ice cream queen give you shoutout always gets cookies and pond with ponta and oreo brittle so shout lauren. Lauren did this really great survey of just female owned ice cream shops across the country. And did all these great interviews with different ice cream shop owners and time and time again. They mentioned jenny as the reason they got into the business. Also love songs draw. Yes they're like a summer camp collection ice which is really fun. I'm dying to try the bug juice. Sorbet they really push the limit and they're definitely an inspiration. They opened the door for me. And so many other Small ice cream makers. I think actually the pandemic also did You know like people started to just make things out of their homes. A lot of these brands have come out of it absolutely. Have you been over to Multi guess in. I love me. Love me went there a lot this summer. Pujols making credible cream flavors. It's almost as if we're becoming a little bit more italian because we're kind of just thinking of ice cream as like a part of our days. Now as opposed to i feel more traditionally you know in america. Ice cream is like special treat whereas in italy you know you see the the lawyers. The grandma's the baby's everyone having a quick gelato. Maybe we're going to become that. I mean we do see that. And i love to see that i love the range of human being companies To that corner now. A lot of ice cream people also talked about the penn state. Ice cream school. I know you were part of that. Yes so for all the aspiring ice cream entrepreneurs out there. Tell us about that school. That was a great experience so they actually offered two courses. And i took both of them and i recommend doing both because they're very different. The first one is like a three day smaller course on shop operations. So you know. Paper goods suppliers cleaning protocols et cetera et cetera. And look. it's not like you're gonna go to these like any class. You shouldn't go to the class. Take notes and then do exactly what your teacher says you should do. What's right for your business But it's fantastic to like have this resource and also to have like a community of of entrepreneurs to to be connected with so that was the first one. The second one is the week long ice cream short-course which is you know the very Old one i forget how many it might be like one hundred twenty five years old something like that but that one kind of more on the products self and The science behind ice cream making fat solids sugar water Which definitely helps me every day to have like flexibility with.

"As summer rounds out. Let's cool down with the story of what was once. Hawked as the coolest in town talking about the icy david book recently shared a brief history of the frozen carbonated beverage over at tedium and shared a few things that i definitely wasn't expecting zoo. There are three different stories about how the icy began. But they all happened under the tutelage of omar nedlac while he was running a dairy queen in coffee ville. Kansas nedlac had grown up in kansas and after returning from serving in world war two owned an ice cream parlor of his own for awhile and dabbled in running hotels before ending up. Buying a dairy queen franchise location. Now here is where the stories differ. Either ned lick didn't have a soda fountain and therefore put bottled soda in the freezer. To keep it cool and sold it partially frozen. Something that is customers loved because the partial freezing created some kind of chemical change. That led to a pleasing slushy consistency. The other version of the story is that nedley did have a soda fountain but when it broke one day he threw some bottles of soda in the freezer and same thing customers were really into it. The final version. That sometimes gets told. Is that nedley regularly ran out of bottled soda during rushes and would put some in the freezer so that they could get cold faster and you know what happens next whichever version of the story is true and however the discovery i came about it was an instant hit customers loved these semi frozen sodas and would request them when they visited his dairy queen. So ned likud always had a predilection for machinery and tinkering decided he wanted to build a machine to create the slushy drinks on according to tedium. "So we come back from multiple callbacks, 'cause we were like, there's no way. Things don't work out like this for us. But it just did. And so casting was really, really fun. And everyone ended up just being local to Wellington. Because like you guys are saying there's so much talent outside of Atlanta. And LA and New York. There's so much talent in those places for sure. But the best roles at least for our film were right here. So. Yeah, exactly. And sometimes that works even better because again, like you're saying you got to have sort of a family on set because if you don't have that relationship that you're having fun, you know, because I think it should be about having fun being professional, but if you're not having fun, I mean, then it's not, you know, the production value is not there either. Long amounts of hours with each other. And very hot conditions. So we'll talk about weather, right? So when we were following it, I thought you would talk about hot conditions. There's always something that happens on the set. There's always a setback there's always something, so maybe you can, you know, most people talk about, you know, oh yeah, we had this, we had that, but you girls had something bigger, maybe you can tell us about that. Yes, because what's so funny, I'll tell you is that we had all the typical things like our grip truck got stuck in the sand, our ice cream truck broke down. And we rarely ever talk about those challenges because they are all, you know, I guess overshadowed by the fact that this film is about no rain and on day 12 of production we had to stop everything because a hurricane for hurricane that category four hurricane. It was headed towards Wilmington. And not moving. And he was coming right towards our city. So we had to stop on day 12 with an 18 day shoot and everyone evacuated to places like Charlotte or Atlanta. And we were stuck outside of our town for two weeks. I didn't know what we were going to come to when we came back. Because when Lincoln essentially became an island, it flooded everywhere. We weren't sure if our locations were going to be okay. And not even just for our films, but because those people who came our family do, and we didn't want their businesses to damage. There was a lot and I was also going out of the country during that time. So amazing Hannah, somehow put the Tetris of our crew to schedule back together and everyone was able to come back two months later to film. But then it was 44°. Okay. So one question about that, I mean, so when you have something like that, I said back. It's very hard on your motivation. It's very hard because now you're like, what am I going to do? And it takes a toll, especially if you're an artist, you're trying to create something that's meaningful, and now you have a big setback. How do you bounce back from that emotionally? You know, just say, you know, I just keep doing it. Keep doing it. Besides that you have the responsibility of finishing, but just more in the sense of like a personal, you know, no. The question. Hold on, but you think that's okay. Like, how did we do that? I think part of it is just we have invested so much already. And I think we could say just ourselves invested, but then when we look at our crew and our cast and all the people that contributed to this crowdfunding campaign and shared our film like when we are doing our campaign, it's like it didn't feel like it was our movie and felt like it was our communities movie. And so it had to, we had to finish it. We had to keep on going, even though we were tired, because not only us but so many people aboard their heart and soul into making this happen. And it just, it just wasn't really an option to be like, well, you know, we tried our best. And we had a lot, I mean, a hurricane was big, but we also hit some equally challenging things during that production after production before production. Just a lot of lifestyle, hard stuff in between. And so it's kind of like, I don't know. We just kind of had, I think also 'cause we're a partnership. So when one person is tired, the other person can lift them up and vice versa. Megan, what do you think? Yeah, the thing I was thinking of is a lot of times those setbacks I think we used as motivation to be like, this will not stop us. And it almost made us get more fire. Every once in a while it gets to you. And I think that that's when it's okay to call up your friend or like I got to just call it Hannah. And sometimes we're like, I can't do it today. Like today I take a break from the movie. Because maybe these are a can be at least a nonstop thing you're working on. You can really get burnt out on it. And the thing we didn't want to do is get so tired that we made a wrong decision. Out of just because we felt fired. So the process of making the movie took longer than I think some do, but a lot of that is in part because we allowed ourselves to take a breath if we needed it. Yeah, that's extremely important. I mean, you pretty much said it like you have to step back and do something fun, relax and then come back to it, right? I mean, that was guilty. I feel guilty. Exactly. Well, I mean, I was going to ask you about what your advice for filmmakers was, but I can not set out, but let me make sure that's where it doesn't have another question. And then I'll ask my final question that you girls go with just show the trader one more time do a little plug for Amazon Prime because I know that it's on Amazon Prime and then go from there. I'll check well also if we have any questions on our site. It was exploring your social media. And I was interested because you put it on your Facebook our hopes, raise autism awareness, brand jobs to our community, provide opportunities for women to live if you want it to elaborate on those. Yeah. I think it was really cool. We were able to pay our crew and we were really proud of that. It wasn't a huge amount. But we were also able to give them an interest in the film. So once the film makes money, our hope is that it does because we don't have investors. It is our crew and our cast and we can give that money back to them. In 2018 when we filmed our town was in a really big world for any filmmaking happening in the area. And it kept everyone energized. I think it kept. It gave people opportunities for roles they hadn't begun before. And now they've moved on to studio productions in our doing those roles. So I think got that goal and yes, number one is to raise autism awareness and acceptance in this film to get people talking about it. And to just promote the message that there is no such thing as normal. And we are here to accept each other but also ourselves. And then finally, from when it in film, you know, one of the reasons we set out to even write female characters is because we are actors first. And we auditioned for a lot of roles that were very grateful to audition for their typically very small and they could be like dumb blond or quirky white dress and we're like, ah, women are so much more than that. And so our hope is that people can see two female characters interacting that just have a family relationship and the complexities that come behind that. So those are our hopes. That's very important to have goals. I mean, other than that, I think you have given great advice throughout the whole talk right now, which is really what we want to do. And I think you couldn't have said it better that, you know, you're doing this for yourself. Obviously, but also people get opportunities because they do a project. You know, like not a lot of times, you know, people are just doing something in the last 6 because something there's always someone watching, right? I always say that. There's always someone looking at your staff and then seeing what's out there and it's great that you're actors or maybe someone got a production somewhere out of that. And I think that's the most rewarding experience that you can get as a filmmaker to really see somebody in your film, making it as well. So we're going to do a little plug. How do we find your film? One thing that you would have done differently, maybe just or you would have told yourself before you got this project going like that, maybe yeah, we could have gotten different at different ways. You know, like, oh, sorry, Meg's. You know, you go first. I was thinking you have sex. Okay. I feel like everything was supposed to happen the way it was. So I wouldn't change anything because had learned so much. The learning curve on this project was huge because every single role that Megan and I stepped into was new. But I will say if I could go back and tell myself something that I'll continue to tell myself for the next projects that we do, I really struggled on set and only Megan really knows this. As a director, because I felt like I was completely under qualified, which I was and still am. But I felt like I needed to know everything. Especially technical stuff, which I was not familiar with at all. And so I really got in my head when I was in director mode that I just was so inadequate and it made it was just really unhealthy. Unhealthy thoughts, you know, of like, I'm not good enough or like, no one's gonna listen to me, all that stuff. It's such a waste of time. And so what, maybe I don't know all the answers, but that's why you have a team. So I think I would go back and tell myself just chill. Just trust your gut. You know that other people are working just as hard, you don't have to know the answers, and that's why you have all these great people with you. So yeah, I think that's maybe something that I go back and tell myself. Intel others, you don't have to know everything, just take it one step at a time. That's perfect. Yeah. You know, it's going to sound cheesy. It's mine. It's about the same. I would think in my modes though if I don't know something, I try to learn everything I can about it. And sometimes you just don't have the capacity. I don't need to know everything that the gaffer is doing. As I do more or sound or the first AC or DIT, you know, I wanted to know everyone was doing. I think that comes from a good place. And I think what Hannah's talking about comes from a place of wanting to be a good team, team member. But being a good team member is sometimes releasing responsibility and letting people do what they're there to do. And as we do more projects or as you can do more projects out there, you'll learn more and more each time. And you'll feel, I think more like you have more knowledge of everything going on. It's okay if you don't. That's perfect. I think that's perfect by this way. I mean, pretty much what we've been saying and we're gonna keep saying it and we're gonna try to do this little segment as much as we can find filmmakers that are doing great things in this area and outside this area because I think we're all connected anyway. So maybe one, maybe one day we'll get to work in a project together, and definitely. "Men who battle self-doubt don't know how to flirt and who just basically walk through the world being like, hey, I'm not good enough as I am. I need to pretend like I'm some kind of alpha or some kind of bad boy. And at the time, the mistake I made was I put on different masks. And I would try them out on women on dates. I would be the bad boy. I would be alpha male. I would be I had a date once with a woman had a huge crush on and she liked outdoorsy rugged guys. So I pretended to be some outdoorsy rugged guy and started making up stories about swimming with sharks. She's like how on Earth could do ya off the line and I have a terrible Poker Face on my forehead became this slip and slide of sweat and I don't even know if she knew that, I was lying to try to impress her but she could definitely feel like something was off and it wasn't until years later. I made this really dramatic shift leaning into what I call radical authenticity, which is about really leaning into who you are getting in touch with your core best self and not showing women that guy and it wasn't until I said, you know what? I'm just going to show women that nice nerdy theater. Musical theater, loving hipster, gaiam and Thursday. They like that guy and that made me almost instantly confident and charismatic, not all women of course the women don't like that type but women who like that authentic self who you show them going to love you. Yes. So that's essentially what I teach I say. Don't try to be all things to all people know who you are and like really lead into it. You mentioned the ice cream example, for me, it's like don't be a watered-down wine. Spritzer be a shot of the eighteen-year-old, good stuff, the scotch give her a glass of that, that distilled you and then if she likes that she's going to catch a bus.

It's very easy to eat too frequently. Because of a number of things one reason why dairy is so addictive is because because of its protein casing so the protein and dairy is called casing which your body breaks down into case a more orphans and this causes your brain to release dopamine which gives you a pleasure reward. Every time you eat dairy such make that more simple you eat a piece of cheese or you eat any kind of dairy and the protein called casing breaks down into caso morphines that cause your brain to release a bunch of dopamine and then you feel pleasure and you feel reward. So that's not bad. That's not good. That's not anything it's just. It is what it is so every time you have dairy. You're getting a pleasure and reward response so that makes your body want more of that it. It wants to eat more dairy to feel better to feel really good and it's just kind of goes on and on and on and it becomes an addiction so that would show up in real life like this. You're may be feeling a little bit down. You're tired you're sad you're bored and your brain knows that it wants his hit of dopamine and soap makes you want to eat a slice of cheese or it makes you wanna have some ice cream or some cream or some cottage cheese any of that stuff and then you just go for it because you're thinking. Oh you know. I'm going to be an intuitive eater. I'm a carnivore. Dairy is totally fine. So i can just have as much of this as my body is craving but you can see how. It's not really a true craving that your body needs the dairy. It's that it your body is wanting this hit of pleasure this hit of reward so that's why it can be so difficult for people to give up dairy and that's why so many people are they have an emotional reaction when you even suggests giving up dairy. It makes them feel bad in their in their mind. It doesn't they don't wanna do

"Rescues for the price of one one boy one dog one old coot bentley. And i don't see i. The reason bentley is a brown. Eyed boxer slice shepherd slash. God knows what else mix. And i'm an old coot. He's now eight so that makes him fifty six in dog years younger than me. But he's catching up. My oldest grandson and i rescued bentley five years ago. The eleven year old boy had just found out another baby would invade his house in less than a year and he was livid he already suffered through to other babies in his life his four years younger brother and a sister not yet a year old. This last one was a surprise to his parents and infuriating to the boy. Despite being the seniors sibling of the household. He didn't like it. One damn bit not sure why. Less room and attention for him. I guess who knows how an eleven year old thinks anyway. We live in the same town. So i went over to get him out of the house and hopefully his sn. It seemed like a good excuse to go get ice cream. I had no actual plan. Figured we'd hit a best buy to troll through the electronic wonders. Maybe visit brahms a big pet store. Occupied part of the same retail cluster. As the big geek paradise as past it. A sign outside announced a rescue dog audition side by that. I mean dogs. That needed it. Not those that did it. The boy opted for that. He already had a pet dog but his sudden excitement was much better than his silent brooding. What the heck. That's where we found the beast. The biggest dog on display a silky blonde. Sixty five pounder. He lay in his cage yawning while all the little yipper ze m. medium parker's on display. Set off a cacophonous row. "You get all the ingredients that i asked you to like a good student i did. I am ready for the thomas loose school of ice cream. Lesko hogan is so all you need are one gallon size visit bad. Got it when quart size. Zip bag one cup of half-and-half or equal parts. Milken cream one tablespoon granulated sugar and one and a half teaspoons appear vanilla extract. Got to start with the perfect formula. Exactly i mixed ice cream base together. Okay now four tha- ice cream base into smaller bag zip it up tightly and set aside the marcher bag fill it with three cups of ice and the third of kosher salt. This is what's going to help us. Raise our ice cream mixture we. How does salt an ice help with that. Yeah so remember how. We added sugar to our base. Yeah sugar actually lowers the freezing point of the ice cream mix meaning. It will not freeze at zero degrees celsius normal regular water. Okay so freeze this mix. We are recreating a crude form of the barrel and coolant from the commercial ice cream making process. Gotcha gotcha so the salt and the ice combined in that bigger bag do that work yes. Salt lowers the freezing temperature of ice similar to how we put salt on snowy dates. Okay but okay let's go back to our as criminally place. The small bag fully zipped into the larger salt and ice back that up. Grab of amid and arts. How it around this bag okay. Then get ready for it. I want you to shake. I m shaking after a bit. The smaller bag to make sure it's becoming face cream if not keep going. I'd say for about fifteen minutes. Give or take fifteen minutes shortwave. Okay question though this this shaking. I'm guessing it is distributing air and breaking up these ice crystals. Yes this is more or less mimicking. The freezing is can beat the salt and ice in the outer bag. Work has the freezing joe and like the commercial bureau. I described earlier. The mixture will start to freeze from the outside of the back inwards. So the shaking of the bag helps agitate and break up. The ice crystal that are forming okay so listeners. It's been about six minutes shaking and the ice cream looks ready or my arms are just sore one or the other. I think i'm ready to try this. Okay so tell me how it is here. Oh it's a really creamy texture. I noticed that right away and as for the taste money. That's really good. I mean it's not. It's not as creamy as the ones in my freezer right now. I will say that. I will say that all icy yup that sounds about right still snack on maybe not the best qualifying. Oh for the science lesson alone was worth it. Cream is my canvas waiting for me to put whatever i wanna put on it and you know just like you were to go into a museum and look at art. It's the same thing you go into an ice cream shop instead. And you eat the exhibit. Which of course is the screen so today on the show ice cream you scream we. All report is cream. We'll talk about some of the processes that create the texture of deceptively simple dessert and how that texture plays into our enjoyment plus a quick recipe to make at home. Lou shortwave producer and resident. Ice cream aficionado. What did you learn about the science behind your favorite frozen dessert. So let's start at the beginning. What is ice cream. Dr myra warren tells me that are legal. Guidelines at the core of it ice cream in the united states has to have ten percent or more milk fat and that comes from cream right. That's exactly right okay. So the milk the cream basically the dairy in ice cream. But that's not. all ice. Cream is a combination of lots of other things like ice. Okay okay emily. i'm. I'm something a little food dessert. I know just an observation. Whatever emily the the other part of the word you're not wrong. The basic component of ice cream are fat globules from the dairy ice crystals from the liquids air sugar and sweeteners. Flavoring and sometimes additional ingredients like eggs or chocolate chips which can give ice cream. It's body so yummy and that's kind of cool that they're solids liquids and gas from the air bubbles all in one you've got all three basic states of matter wrapped in one desert. Yes that's right emily. It's the balance and distribution of all these components in a mixture that bills ice creams micro structure. My puts it this way. It's sort of like a selfie and it's like how you looked at that moment then we freeze it so we don't let it move. We make sure that it's frozen in time and it is this frozen sap. Shot of the micro structure. Emily that gives ice cream. It's taste and texture is such as sensation experience because it's not just about the flavor itself. Some ice cream products might have more air. Some might have less air. Some might have a little bit of a coarser texture. Some might have a little bit of a a kind of a weaker texture. Some have a fuller texture put in another way. Emily the way ice cream. It's me and the ingredients that we use to create these ice creams at a physical sensational experience in our mouths. Gotcha gotcha. that's that's super. Awesome is in it but speaking of air. Emily just like milk. Fats are guidelines as to how much air can be incorporated into ice cream. This is called the overriding for ice cream. The maximum overrun is generally around one hundred percent. Meaning that the volume of ice cream doubles with the addition of air. These are typically the store brands or the economy ran They'll often feel lighter or heavy fluffier texture. The premium and super premium brands on the other hand tend to have overruns at about fifty percent or lower which is why these brands feel a little heavier. or denser. got it like when you're holding the carton. You can feel that it's heavier that's exactly right. My also says that typically more premium brands will also have a higher percentage of milk. Fats if you have more fat you don't want to necessarily add so much air because fat is expensive and you're paying for the fat so you want it to be a heavier product. You want not to go against what you're paying for it. So with these premium ice creams they have more fat and less air in them. Which also means they're likely to taste creamier and feel denser as a result is that right. Yeah generally that's the idea and to be labeled ice cream in the us after adding the ingredients and accounting for the milk fats and the over on the finished product must weigh no less than four point. Five pounds per gallon salacious. So i think. I have a good handle on the science behind ice creams texture. But thomas how does this all happen. Like what have you found out about. The process of making is get ready for a roller coaster. Emily i'm ready. I'm ready so let's focus on the commercial process when you're making ice cream in huge volumes. The ingredients milk milk solids sweeteners and other elements need to be perfectly balanced. Then you take that mix pasteurize it at margin is it which you know fancy words for basically killing bacteria and preparing the fat globules so that they're ready to be transformed meaning that it's going to stay in a tank that's how about four degrees celsius and we're going to cool it and hold it at that temperature so that the Ingredients can perform at their highest capability. Got it following. Okay get ready. The next step is the coolest pine very much intended. It's called dynamic freezing. Where basically the ice cream mixture is getting churned and frozen at the very same time the way this is done. Is that usually. The mixture is put into a barrel with the bleed inside called the dasher and this bill is surrounded by an even larger container. So there's a barrel that the dashers and on the side of the barrel. There's some type of refrigerant arson type of solution that can allow you to lower the temperature at which you're actually going to start freezing. And the dasher she says scrapes the sides of the barrel where the ice is forming so the ice cream mixes cooled from the outside because the ice cream mix. That's actually touching the size of the barrel. That ice is actually gonna start freezing before is in the middle of the ice cream. Mix so that that rotation of the dashers scrapes larger pieces of ice turns them into smaller pieces of ice. Oh so this is how. The ice cream gets churned and frozen at the same time. This is the dynamic freezing process. Look at you emily. Getting all this knowledge i try. Try so the breakdown and shuffling ice crystals. Help give the cremedas. Were all used to in ice cream. The smaller ice crystal generally the creamier. It will feel the dasha begins to incorporate and distributes air into the ice cream but importantly the sheer force of the dasher also causes the fat globules throughout the mixture to attach to one another in a phenomenon called partial coalescence. So thomas at this stage is ice cream starting to look like ice cream and getting its dreamy. Texture dreamy indeed after this dynamic freezing. The final step is hardening. You want to freeze the ice cream as quickly as possible to prevent the ice crystals from growing any larger that locks in the micro structure giving you that beautiful ice cream selfie delicious. Also thomas i just gotta say making ice cream. Sounds like a super involved process. It's amazing right. There is a lot of chemistry and physics to it but luckily for us. Emily all can be simplified and you can recreate the dynamic freezing process right at home one to do that. Is the ice cream and a back method popular in a lot of elementary schools. Today i've got a review and this is definitely something that is a non traditional food item. It's one of those like alternative foods. And i liked chinese alternative foods. You know me. I am the experiment and guinea pig. Queen so i will try some of these things and i love sharing it with you guys here on a podcast so this one is interesting. Avocado ice cream. Avocado is drink now. This is a tough one for me. as you can see i'm gonna go ahead and open this up and if you guys are watching on tv against this I have eaten almost half of this. And i will say this. I don't hate it but it definitely is not very high on my top five Ice cream substitute lists now. I believe on this podcast. I have Reviewed some other ice cream alternatives. If i haven't on there will be some more of those coming soon. So stay tuned My favorite ice cream alternative is the cashier or cook ice creams though really. I can't tell the difference. This is a little strange and the reason. Why is because i feel like it's a good idea. You know avocados. Yeah owners sought their little bit. Wishy but i feel like the natural flavor that they have is just going to be a little bit harder to kill you know and i feel like i do get a lot of the flavoring of the avocado coming through in this ice cream. The other thing. That's a little bit interesting about it is it is kind of It's got like a more of a oily texture. To and of course that makes sense because what avocados have a ton of oil in them. So that's a little bit different for me. Having that kind of texture of mixed in with is cree little different But hey. I'm glad that i tried it although i will say this i like this as an alternative for kids because i did let my little ones have A little bit of this on out treat night and this is really good for them because they get those avocado fat in. You know what i mean. So i'm gonna to go over the ingredients and it's organic avocado cure. Ray water organic avocado oil Organic cane sugar or tapioca starch. Organic cocoa powder organic vanilla extract. See-sawed organic g- argon and that is pretty much it. So one thing i like is that it does have a pretty short ingredients list. You know. that's something that. I always look for things and i'm buying like ingredients like not highly highly processed in everything. This is nice too because it is soy free vegan and gluten free. So if you have those issues you know like you know. Let's say you're gluten you have gluten sensitivity then the might not be Democracy out wait a minute hold on. I could be misspeaking there. i can't remember. I don't think is in product. But i could be wrong there anyway disregard. Sorry i Just coming in from a little bit of low sleep but So again this is. Just you know an alternative. Maybe some of the other non dairy ice creams don't work for you. For whatever reasons like me. I can't do this. Soy substitutes and people seem to really like those so for me. This is at least one. That's in my arena of choices. That i can. How so. i'm happy as year because the choices i have a better with my dietary limitations but the texture is just a little bit different for me. You know you told me avocado. I'm thinking you know chips and also would walk. I am thinking of all my lovely food. I love to have my avocado wit. I just can't quite get there. With ice. Cream ages something about the texture and again the fact that it has the oil is just not doing it for me. But that's just me you know. Why don't you give it a try you. I'd be like oh. This is great. You know my kid doesn't mean earlier they love it and i like giving it to them because it gets them to get some of extract oil in although this is loaded with sugar. It's still better than giving them straight up. Ice cream or sherbert does nothing but like just water and sugar. You know what i need. So i'm like okay. This is a good fat and even has that right there. Avocado is a good fetched. So they're getting a little bit of good. Fatten and i liked that so i am probably going. Kasur revive is and is a good little that i can sneak in on for our little friday fun days. And it's a treat that they can have that is minimal ingredients and not unhealthy for them and again the average kid they just want something that tastes good. They don't know what it is or how it's made it is like oh swing yummy. I love it the in so for that. I like it and i'll probably have it again to. It is good to get some avocado oil Avocado fat in there into the diet. And so i'll just probably you know do this in conjunction with my sweet treat day for myself and call it a date now They do have other flavors. I am going to go ahead and do a screen share on this Just in case you guys to actually check this out In the company and sport a brand. That's me like not only dwelling charter product. I feel like Pumpkin ice cream is perfect to eat in September. That's true because it's still a little bit warm now but you're getting into that fall nude. You know we know Pumpkin ice cream.
