I kid you not twenty six hundred percent from march to april and forget about getting a rental car whenever you get wherever you are going marketplace's smithfield's reports on what travel pent up. Demand looks like joylin. Anthony and her husband are ridiculously excited to finally go on vacation. The pent up demand here in our own home to just leave the house and go do something. Is this huge ankara's accountant in oregon and recently at the height of tax season. I told my husband. I needed plane ticket somewhere. They decided on tennessee. Flights were pretty cheap. She says but rental cars. That's going to be one of the most expensive parts of our trip. They're also finding most places. Tickets to campsites a lot of people like anthony our booking trips within the us and in many cases staying relatively close to home. So you know this sort of i can get there on a tank of gas. Destination and many of these are sort of in remote locations. Let me throw in a little aside here. Maybe sometimes i talk about tools and you think gosh. That sounds cool. I don't know how to do that. So what it doesn't matter if you don't know how to do something you can still show it to your kids and work and learn with them. I know i've talked about this before. It's okay to not know it's okay to introduce technology that you're not a hundred percent familiar with or you've never used but if you believe in things like providing exemplars for your students. That's an opportunity for you to become familiar with the tool and you don't have to know everything. Kids will teach you. Kids will surprise you. Empower them model for them. Curiosity and the ability to try new things regardless of whether or not you know how to do it. Model that lifelong learning mentality right. Let me put the socks. Let's talk about collaboration. And you knew tool out there called skilled space which you can find at skilled dot space now. I've been big on clubhouse and communicating in this live audio format of also had the opportunity to explore twitter spaces. Which is what if you're connected with me on twitter. You may have noticed. I now have this little purple dot in my twitter name. That's just something. I learned about twitter spaces that lets people know. I have the ability to start a twitter space. So that's why have the little purple dot but skilled space is not an exclusive. You know only you know you can use it in the web browser and it works a lot like clubhouse i think you should check it out you can host conversations that are audio only that are live and in real time. But you could check it out at skilled dot space and again it works a lot like clubhouse where you can have these virtual rooms where it's audio only and you can just talk and you can take the stage and interact and communicate with people so it's pretty cool. I played one day in skills-based. Sarah was there. She invited me. I liked it. And that's why i'm talking about it here so this might be if we're going to go sports. It might be a sleeper tool but check it out skilled space at skilled dot space and our last region critical thinking here. We go for students hot tool this year. Who's always very popular tool. But what if we could level up classroom engagement. So what book. Let's you do is reimagine. Learning k look offers a new take on trivia and review games. The way it works. Is that you as a teacher. You are the host. You pick a question set or you can create your own unique game. And then they generate a code that the players your students can use to join the game on their own devices. After the game starts players will answer questions to help them win the game so it literally gamified learning and studying in review. And it's really fun. I've tried it with my ninth grade students. And you could certainly use it to motivate your students you can freely customize it. It allows you to teach effortlessly. That's their words and i agree. There is a a bit of ease to it. Okay so these questions sets can be painlessly imported or you can create them with their powerful building tool. You can also explore a number of collections built by others so they have a a community of users and a repository of questions that you can apply to any game and i'll be honest. It's just fun. So what are the steps. Step one choose a question. Set step two. Select a game there again. Variety of game modes to choose from. That are sure to engage your students number three host. The game allow people to join the game and then play the game. Cool thing at the end you get get detailed score reports with question analysis that you can easily understand how your students are performing and you can use that data to identify areas that they may need to review again so block. It will be a great tool if you haven't tried it that you can use to promote critical thinking and you could even have your students design questions and participate in the process of the review. Remember early my career. You know or even when i was a student teacher who say all right submit questions and answers and that's how teachers built their jeopardy games back in the day so you can have the students. Do some of the work have them go through their notes in general questions and challenge their friends and play these games. Get them to use the information as well. And that's book again. Time is flying by just moving so fast so it is twenty twenty one and in my time away from podcast in the fall of two thousand twenty. I got to experiment and look at some new technology. And i gotta say i am really looking forward to being back in the swing of things and creating content for you going forward. So what are some new things that we're going to be doing here with the podcast. So so as. I said got a lot of technology that i want to share with you but i'm not gonna share it all in one episode otherwise don't have any content so i've got a whole list of things i got shows planned for quite some time. So there is no shortage of ed tech content. So very excited about that. But i also had time to think about how i create this show and how i create the community that you are a part of and what i can do to serve you now. I know that you are very appreciative. Of the fact that i create the podcast. And i put it out here and create some great anytime anywhere professional development for you but i want to do more and i want to connect with you in different ways. Now i did mention towards the end of the fall in probably episode one sixty eight and i know i definitely mentioned it for a few minutes in the smackdown backing episode one. Seventy and that is. I have started a house of ed tech discord server. So i'm building a house of tech community on discord which means as a friendly reminder. Discord is free. it's really to use. It is way more friendly in terms of setting up topics organizing conversation and a lot of people who listen to this show have already made the move from the facebook group and also from listening to me talk about the discord community in previous episodes. "Cloud based so there are no downloads. And everything gets stored in the cloud and therefore does not take up space on devices and hard drives plus. And you and i should love this quite a bit. It allows for podcasting and audio editing as well. So there you go. That's my nomination for the twenty twenty house of ed tech smackdown. I know it's a tool that spit out there for a while. But i just really got turned onto it Really within the last few months and man is just such an awesome tool. Thanks for all you do. Create your own font. That's right we're gonna shut the front door. This one comes to us from tiktok. The account is doodles from my brain guys. Not a teacher. Not educator just through the magic of tiktok the username is at doodles from my brain and he's also on twitter at doodles f. m. b. and here's how you can make your own fought. Go to the website calligrapher dot com and there is no in calligrapher. Because it's after the two thousand and vowels and you are ells is just no good but goto calligrapher dot com. No e- and you can either digitally on an ipad or you can print it out. You can create your own fonts with your own handwriting for free. You can create a fund that has not all of the characters associated with a given font but for free. You can create pretty much all that you need like lower case letters capital letters numbers and some basic punctuation. If you wanted to pay you could create more custom characters that you could then upload and use in google docs in word wherever you use. Fonts you could create your own custom font. "Be able to put together a coherent program for this right dig it dig it. I love it. I i pray i appreciate what you're doing. I appreciate the feedback of the people who are taking the time to take party in good for them you know. I think we're looking at teachers. Who were looking for their professional development. You know it's good to there being proactive and putting it out there that they're they're learning and they're trying something new or they're they're going to find a way to use this in a virtual environment or in the hybrid environment. I just think things are very different right. Now that i just get a little turned off by by companies you know and i gotta be honest. Just companies shooting emails. Does your school need this now. We need nothing textbook. Companies time to renew. Not thank you. you know. Like don't need to spend thirty thousand dollars on a textbook that we can't even using classroom right now so i'm not just saying this is the kind of focus on a lot of the different players out there who are trying to take advantage of some of the schools. I feel like a lot of the companies. Did it right last year in march. Were they went free. You know until june and some of the companies that said you know what we'll keep going. Unfortunately a lot of companies held onto that and i understand. It's a business model. you have to. You have to ask money. But it's just so difficult begging for money right now in begging your schools for money when hundreds of thousands of dollars are going to pe for for large districts. I think to my own district that there were tools that were being paid for and subscriptions were not renewed because that money had to be allocated for other things you know. I'm sure my school is one of thousands of schools across the country in the world. That every school district needs ten thousand chromebooks yesterday You know whereas coming from. I understand that but you know this might be good that we're you know. Unfortunately some of the companies They're gonna take hits. But i think for schools. They're gonna they're gonna realize oh we really didn't need to spend that much money on this program or this textbook and then they can get things chromebooks and more In classroom technology or anything to help virtual environment. I think that's the positive sum and saying for months now right. This is the positive. We're going to see we can teach without these tools. Hopefully no you're right. I if we think back to what what shero said to to kick off The program there's a lot going on and we're going to do things differently. You know a lot of what she pointed out with some of the negatives and education that stuff has always been there. You know. i've been doing this long enough. That we know all the the the dense in the armor of education right. This is just shown a large bright spotlight on it on a national level. The inequity connectivity access. This is just magnified. What's already been there now. It's time to fix it. And you know and and i don't want to knock anybody for for taking their time to do. Pd you know. Good like i said i. I appreciate people doing that. Hopefully now they take this and they. Hopefully the sessions allowed people to take ideas and go through. I'm tired of the same sessions over and over again the back. Here's what i do in my classroom. Now it's let's empower students to do more or less empower. Our teachers to do more in there classrooms where they're struggling at this moment. Yeah i can. I can speak to that because in the In the platform you could go through the program of all the sessions And i did a keyword search for podcast odd casting stuff like that there were. I want to say nine to twelve sessions related to podcasting content creation. That doesn't count the video stuff. I did a search for video. And they were way more sessions on doing video in education with your students etc. Probably sixty or seventy sessions with video but anyway only like ten nine to twelve seconds on podcasting and i got to be a part of go back and watch the replay of four of them. They were all basically the same thing which i will put it out there now. I want to put in a session. I e in two thousand twenty one virtual remote. Whatever figured out how to get to san antonio i have no shame if you're an ed tech companies want to sponsor the house of ed tech to get me to get me to texas next year. I'm all for it. And i wanna bring podcast. Pd with me too. But the session. I wanna do. I wanna title it the only podcast session. You need to attend with chris. nasty. I'm just gonna put that out there. I'm not gonna ask you for details. Because i want to take it for him but on the books right now. December fifth twenty twenty. Chris will be at us but no see like the gentleman you had on your first show of his name is gave me right now. He was talking about podcasting and and his ideas that he had in the book right. So it's good how to get students podcasting right. I liked his ideas of right in the script and it kinda throws a lot of the curriculum in there. And that's great. I appreciate that. But i don't appreciate is a session like here's how you anchor. Here's your record. Here's how you shared your students. Here's how you put public to the world. So if you don't know how you know how i feel about anchor david bologne. Please just leave it alone right now. Okay i won't turn this into my soapbox away. Yes for now okay good. No i'm just saying. I i just. I feel like at this point in our in our educational careers. I think the sessions that need to be introduced to teachers are not how to's it's more of why to why you should be doing this. I like why this is why this is successful. Why this is something. That's going to last in education. I've been doing wafting. God are no no no no go ahead. I've been doing blended learning flip classroom things for years and i always called it how to and the reason i called the how because straight up said this introduction to the flip classroom right. There's an introduction of blended learning now that we're in that model my my my next one is not a how to anymore. It's now why we should continue this in a god. Help us please in actual classroom setting you know the why the why no more how we know the how we've been doing now for nine months to why and you know that typically is and you and i have done sessions on a number of topics i will use the podcasting sessions. We've done as the example. We always have to start with. Why should you be podcasting with your kids. And we've always believed if you're in the session you should kind of like you should have an idea of wild ready right. We can give you again when it comes to podcasting and content creation. There's no one right absolute way to do it. There's just best practices. But i love that you always push. This is where you're pusher. Aj you push because you're always questioning. Hey this is great. I get it. How can i get other educators or administrators to buy in to understand what is the value. And i think you're more.

Up PUTTY KNIFE What you ask? Yes a putty knife My refrigerator is so stunned stopped humming. Let me tell you why it acts as a gentle scraper for counter tops like no more scrubbing and rub into your forearms. Tired on. You know what I'm talking about. You've cooked and prepped up a storm and perhaps you didn't wipe the counter off as quickly as you thought you would. So then stuff gets stuck right? Even like little tiny crummy crummy parts, right? Little bits little I. I don't even know. What you call them, but you know all you need to do is sprinkle some hot water. Well, any water but hot water is better on the counter and then run the putty knife across the counter, a couple of times and every la all you have to do is wipe the counter off no scrubbing..

"The right time of day for Pasta though. It's energy bills the building blocks of energy. And then so that will be either some some variation on a Carbonara or sometimes I won't have I won't have an egg in there but like it's mostly like Al Saute some garlic SM- onions a little bit of the Salami or whatever cured me of the day is Great. I'll have that going while I have my pasta going to go. I'll take it off a little bit a little bit Al Dente so it cooks in the tot while I'm working by magic on the rest of it and then I'll just put it together. Toss them ready to go and then for dinner. You know. It's I don't know what to do this. I need your help. Oh okay are there. Are there proteins? Can you get a protein in the house a well? I'll tell you what I have come in so I have in addition to what I have. I'm getting some keen Wa. I'm getting some rice. I'm getting some odds and ends spices and stuff so my so it doesn't taste bad right and then I got like some chicken and some some ground beef coming. Tell me why tell me work. You know help me. Those are some great building blocks. Is there any cheese in the house? Do you have any cheese in the situation? I haven't been doing. She's a it's just you know I I. I don't have a good reason for why I haven't been on that. She is to it. I didn't know if it was a taste thing or a health thing or you know a disinclination you know everybody's got their own take on Q. Life I I mean I you know I. I'm a fan of cheese. But you know I was. I was concerned about it in this queue. Life and honestly I've living pretty good without it. It's a crucial component of the CARBONARA. But you can multi purpose of that cheese. Well to which what she should. I get well first of all. That's a great question you know. Sh- shredded palm shredded. The parmigiano graded in all the variations of a pet Carino parm. Those will last forever. They have lots of applications. They serve as salt right. So you don't need to salt and put that cheese on you can get plenty assault from the cheese and it adds a sharpness if you need. A sharpness can Add it can. It can help mellow out if you need something. That's that's too bright with a with a spice you can mellow without with a little bit of that cheese. So that's one sort of thing. Do you have any lemons in the mix of the lemons in your joint. Let's let me add some lemons. Let me get some lemons in here. They have those in California they do. They grow on the trees. I heard glass. I'll just pick them. You could go steal one right off the tree to see anybody was what am I doing with my lemon well again? It brightens things up. It takes a chicken breast. And and you know elevates it like a take a little bit of that Bucatini you. You mentioned that you mentioned to me that you have capers in the house. Yeah I do have capers coming in my next In my next shipments of so we just you just described chicken pagoda. You now have chicken. Kata in your joint. If you get the lemon lemon little butter or some other kind of fat could be olive oil. Olive oil is fine to butters better but olive oil perfectly legit as a fat. Then you got your your your capers and a little little cheese chicken picado. Boom you're done. Oh My Gosh. What what. What is your. What is your routine like? What are you eating these days? What also sizzling up. I will say this. I have lost weight during this queue. Life Wow because there's a big component of my Eating regimen is not available. Which is going out to eat. And the going out to eat is the most prominent way for me to consume the this version of food calories which is the brown stuff or the clear stuff. I'm not really drinking as much. And that's really the reason for the weight loss so I'm basically like a one and a half meal a day. Kinda guy like I am for fuel during the day because you know as you know as a podcast professional. It'd be sharp on your things you know you have to have the building blocks of energy. That's carbohydrates that can be through some some Almonds it can be through some banana. It could be something like light just maintain and I'm a big coffee consumer through the sort of course of the day and then at night we let our hair down a bit. We let the beer grow out a little bit. And that's where you know the majority my calories are in that in the evening meal and it's combination of a protein and some carbs and you know whatever ice cream I can get into. Oh that's an important part of this queue life Jay. How much I gotTa Tell You Joe. You always look great. I've told you this every time I'm on the part of the year for a man of of of taste as you are an an appetite. Incredible every time I see him like joke looks great. Jerry's great this is this. Is we come on anytime you want. You're on this show anytime you. What Your Permanent Permanent. Invite to the to the carves. Now you mentioned eating three meals a day. Is that standard? Is that your standard? Is that the state of network approach. I pretty my approach is pretty light. Like let's say this wasn't quarantine. Yeah lunches the mule where I really load up for fuel. Yeah I like if I go to the gym or something. I might eat something afterwards to replenish. Usually dinner is pretty light. Unless I'm going out to dinner with friends or something like that in that case I'll break the seven o'clock rule which is more of a soft rule and a hard rule but but So I sent similar to you. I think it's more like like one one and three quarters to two and a half meals a day less than three squares. Yeah I don't want the hungry homeys to to listen to this and lose faith now. Look I sit down and do a four thousand calorie meal. I there's a sixty four ounce stab of beef fat you know we've had prime rib there's the Tomahawk stakes like all that is in the. Don't think for a second. It's we have a religious holiday coming which is basically another excuse to convene with loved ones and overeat. I promised to do my part. There's going to be a ham. There's GONNA be like we're GONNA do. The Easter holiday proper along. The table. Lamb is going to be in the mix. We're GONNA WE'RE GONNA do it all. We'll do it all now. I'll I'm going to order some of this stuff. In part of my. I approach to this life. I want the beloved purveyors the the restaurants and and the markets and so yes yes items I like. I need to do my participation. The same you know all the prepared food stuff. I still entrust to the capable hands of of of the great. Dc restaurant tours and chefs a lot of that work and a wonderful see in which I just to pull back the curtain from spending. I've been spending a lot of time in DC over the last year and a half. You have introduced me to some fine restaurants in the area. Probably I'd say the best of the best experience I had. It would probably be. I'd say bad. Saint was great which is a Filipino. Spot that you put me on which was fantast. An incredible experience that goes along with the the incredible food like the most authentic Filipino cuisine. But you're sitting literally in a in a small row house where the kitchen is the biggest component of that room. And you're you're feeling the fire as the foods prepared. It's absolutely delightful. Thank you for. That show's really great. It's IT'S A. It's the least I could do now. Look I want to help you please? Eight I WANNA help you elevate to the extent that that you know. You're you're looking for input you. You mentioned kind of a grocery list that has some good building blocks in it. What what can we do? What give me something that you you have the ambition for you the aspiration for in terms of cooking for yourself but that you just haven't worked up the courage yet is there. What what what can we do? You know what I'd I'd I would like to do access to meet. Would I think would be would be key for this but I would love to do some kind of a Ragu to really. Just get a sauce going all day on a on a Sunday and just let it cook for like eight hours. That's something I would love to try a beautiful Sunday gravy. They call it out here you know in the in the Mid Atlantic near New Jersey and New York folks yet. That's A. That's an achievable goal. And you know you. You mentioned that you have some beef coming now. One thing that I would recommend in this regard if you can figure without a way to get at it and we you know we can help you out with this We don't want all the taste buds to think all we do is traffic in luxury goods and whatnot. We're eating to sustain ourselves in life but if you're going to have an indulgence. Here's here's something I think for. Ragu you're talking about go ahead and get something that's got kind of a texture that you can shred with your hands a beef you can do with your your hands like like. I short rib or you know something of that. It could even be pork you know. It's it's fine to do like a kind of a pulled pork kind of angle to this cause of the texture of what I'm talking about. It'll stand up to all day baking but when I mean all day you know on the stove when you're done at the end the difference in the Ba- luxuriance snus that it imparts to your to your Ragu. It doesn't it doesn't have to be ground meats you can have something that's got a little bit of a string to it pork or beef. Lots of different options in that regard. That's my my one recommendation. If you're gonNA make an addition to the grocery list let's get something in there for this Sunday. Gravy that gives gives concepcion give network the luxury. He deserves another thing that I've been trying to figure out how to do is how to more efficiently use stuff like you. So when I ordered Papa is the other day I had some I had I had ordered to because you never know modified got hungry later and I don't want order again so but then I was like okay. I'm just glad I don't WanNa hold onto this so I kind of I missed the stuff up and I put it in my meal but like why do you have any tips on. Like how can I use one ingredient several times across meals? I it depends on your palate a little bit now are you ordering what sides are you getting with your Popeye's. Wow I got gravy. I got the little biscuit and I got Rice and beans. Yes Oh so. Rice and beans is a multi purpose. A friend of yours and you can a little goes a long way of the of the Popeye's rice and beans and especially with that gravy. That can be a a topping on you know another. I don't know if you have other kinds of of bread bread angle's going on there but you can do kind of starch. Starch Carbon Carbon. Ooh thing or below if you want to freshen up like I don't know you you're in La you have access to beautiful produce. Get some green beans. Put those in a tiny bit of of oil just to get them like scrunchy ish. A little warmed up and then the rice and beans. That's all the flavor that you need for from those rice and beans in with the warmed up crunchy. Green Bay. That kind of angles. What I'm talking about any ideas for. Ps I have some peas coming. I hate peace. I'm sorry we're done like Etta Mama's not the peace amount on piece work. Do you feel empowered. Do you feel better. Okay I I I. I want you to feel better. In all of the holidays across humankind it is not complicated to understand why there is only one way here at House of cards arbs that we can honor our public service commitment to you all of our hungry homeys and that is with the expert input put of the editor in chief of bone apetite. He is one of our original tastebuds here at House of carbs at rappaport. Welcome back buddy joe how how are you. I'm spectacular because Thanksgiving is is two weeks away and I have been eyeballing the bone appetite issue. It's out within online. There are recipes flow in. And you guys have made a bold claim. I mean the first thing I see. It says his Bona petites absolutely positively perfect Thanksgiving menu. I mean that that creates some expectations. Buddy no we we fact check it and everything. It's one hundred percent true five. We got the check and everything next to it. It's verified. We're all good okay. Cool congratulations. We're interested in hearing what went into this and some of the things that we might Do do ourselves between now and then Thanksgiving on the day off to to to have our own shot at perfection. What we did this year We essentially fused the magazine with our very successful Youtube Channel which I think is about five million subscribers. Now it's whole lifestyle life of like celebrity editors and whatnot And we have a series called making perfect where we sort of send the editor out. Test Kitchen editors create the perfect pizza or in this case the perfect Thanksgiving meal. We all And so each editor is tasked with like what is the perfect Turkey. The perfect mashed potatoes and whatnot. In a way that's creative new interesting but also delicious so we kind. I took this six part video series and transmogrify into an eighteen age article in the magazine with all the recipes and tips and techniques and whatnot And it's kind of cool actually. It's worked out really well better than I thought it would give and trying to sort of emerged cross the streams if you will of print and digital video so before we jump in and I'm looking at some of these recipes and I'm excited to talk about them. How much of this Have you forked. Mouth Yourself I WANNA say most of it. Typically Ed Bouchette petite we have a test kitchen On the thirty Fifth Floor here World Trade Center and every day a around three. PM dishes or put up for tasting And any editor working out a story has to come down there. Taste the dish give feedback In the case of Thanksgiving because print magazines are made so far in advance Thanksgiving happens essentially in July. So if you're in the test kitchen and July you will be eating eating stuffing and mashed potatoes and Turkey. And what happens is a lot of times a disco through multiple iterations before it's deemed like you know has passed the test So Oh you might have four straight days where you're getting cornbread and sausage stuffing and if you're into that then you like this is awesome some of us by day four. Hey Man. I'm good with the corn. Bread stuffing. Thank you guys do it. I've had enough well. I'm interested in particular in the. Why is it so good gravy because so yeah I love the fact that that? MSG is on the comeback. Never went anywhere. It just caught for some weird reason for about oughta decade maybe fifteen years a weird cultural Derogatory place in in the You Mommy food chain completely undeserved deserved some folks claim to have sensitivities to. It seems very unlikely that that the medical science backside up and it feels like MSG is on its way back and again. I'm saying it never went anywhere. Tell me a little bit about this. Why is it so good gravy if you will so call a music or food director developed this Chia they the big? MSG proponent as your boy. David Chang It's just a seasoning element that can add that something something to edition. I E tasted this. You know like and they they were saying oh it tastes okay the gravy taste okay. And then they added just one teaspoon of MSG and they're like. Oh now it works. There's that mommy that debt that Tang that that's something something that really brings a dish together and ms she can do that. And it's sort of like br activate your case budget wakes them up So Carla is has always been a big proponent about it but there are people out there. She was saying when she did her cookbook last year. we're cooking begins. The only bad review. She got an Amazon with with someone who is irate that she included Emma she and her cookbook. And then when we did this gravy. I got this long handwritten letter from someone saying how oh how irresponsible it was for us to include. MSG people who are allergic to it. It could could create a violent reaction. I'm like well. Yeah if you're allergic to shrimp that creates a violent reaction if you're allergic to peanuts if you're allergic to something then don't eat it but to the average person. MSG is completely fine. That's right and by ran. I will get off my soapbox now. No well. This is why I wanted to start here because you know it had a controversial pass but the elementary it. It was very much alike. Angry white people complaining about stuff in America in the nineteen eighty. Then sorta stereotyping certain types of Chinese food and yeah it was completely unfounded. It was debunked and it was nonsense and it and and it's like for the vast majority of people out there is a seasoning agent that works great and there's no harm in it. That's it so I this. This is why we had to to kick off with that kick in the pants. It could be an MSG thanksgiving for for for all. We know I mean you know. I don't know how many other of these recipes but let one teaspoon makes a big difference. I right I mean. Imagine that with potato mix but but let's just do Another kind of thirty seconds or so on this gravy recipe because there are lots of conventional ingredients in this gravy recipe but there are a couple of unconventional ingredients to go along with the MSG that seemed to me to be creating. You know this this platonic that guy deal of. I haven't had this but you guys are shooting perfection and there are enough unique ingredients in this as you would expect out of. Karla MARLA That you know if feels like some something where I'm going to taste it and it's going to taste familiar but elevated and I think that's Whoa you're after with this whole Make perfect exercise right. Yeah and we want a we wanNA delicious what we also wanted a manageable. So what Karla And our colleague Molly did was. Let's make gravy that you could make ahead a lot of times peop- with typically on Thanksgiving you're taking the drippings from Turkey after the Turkey is roasted you have the big grossing closing Peintre de glazing it that often stress is a lot of people outright before they sit down to dinner whisking in a row and stock and whatnot. This one you make your own stock use you use a Berman. YEA which is a fancy word for basically just marching together clower and butter And then you've got these sort of these elements that sort of give it depth and flavor so Carla and molly. They're adding a little bit of sherry ginger in their red wine vinegar Nemesis Nemesis G. So you take. What essentially the stock butter flour? And how do you. How do you give dimensional? Is that because you have the base of the another gravy but you need to give the gravy some personality and character and that's what those elements do. I think what's cool about having a recipe that you know has been tested multiple times times. Is that when it says use one teaspoon of MSG two teaspoons of Sherry Vinegar that you know that they have. They voted in like that. The exact amount you need and that gives you enough flavor without overwhelming gravy while still tasting fish And I think that's what's cool about honesty work in a place where you know. I'm not in the kitchen testing and stuff but it's nice. You know that I can trust these recipes. I've been down there in time that they've gone through tasting after testing after testing and again start. Sorry to sound preachy. But a lot of times you get a random recipe on the Internet. You have no idea how many times that recipe is tests been tested if so at all And so here you can trust those measurements dramatic and and the little measurements make a big difference. Yeah well I kind of hijacked the conversation here at the start and had us start with gravy Rayvey because as has been scientifically proven on past episodes of House of cards It is our Staunch belief that gravy is a fulcrum component to a successful Thanksgiving meal. It plays such a crucial role that if you you are able to nail the gravy you've really opened up some some possibilities with this Thanksgiving dinner. Do you agree with this. Yeah gravy makes everything better carry carry it so you need good gravy and you need multiple gravy boats on the table. You need a gravy boat on each quadrant so four to six people maybe sharing one gravy have you but you can't be asking someone all the other end of the table to pass the gravy boat down it's doing with gravy gravy makes everything taste better also makes everything moisture the white breasts Turkey meat like Pelosi gravy on it all of a sudden. It's like Oh that's pretty good. Yeah it's it's it's a has a re- rehabilitation kind of aspect aspect to it and it takes any anybody that's been damaged and brings them right up to speed one hundred. Yeah so okay I like I said I a hijacked and I wanted to start with gravy because this caught my eye the MSG component caught my eye. These cool ingredients like ginger a month Yaldo Sherry. That caught my I but let let me let you tell the taste buds out there the stuff that you guys have up your sleeve and some of the things that you've developed that you would like to takeout from the rooftops and have everybody put on their tables. This thanksgiving all right. I'm GonNa ever started with gravy gravy partners mashed potatoes and what I love about this recipe with Carl and molly did they take. They were so hell bent on having crispy potatoes on the table. And I'm like guys you can't have Christie potatoes. We can't be doing what we need to have mashed potatoes on the table so they were like okay fine whatever. We'll make your mashed potatoes. They do a classic almost more of a puree potatoes French. Dial with a lot of butter and cream and pass through either a food mill or a writer so it gets super premium pureed but van. Dan a genius moved that they made a she tray of what they called. Crispy crunchy which is broken up. CAPE COD potato chips breadcrumbs breadcrumbs trash herbs that are then tossed in butter in roasted in the oven. So they get all super crunchy in Golden Brown taken out toss with a bunch of fresh chopped parsley shower that.

When we are convening because food television in in the time since house of carbs arrived on the podcast scene food TV's gotten so. Great. And not only do we get to geek out on the the annual series of top. Chef this is the third year that we've had chance to compare notes on it. But we also just to get to explore the beautiful space of food TV and all the weird stuff out there. In fact, I I'm going to suppress you with one that you may already be intimately familiar with. But I wanna get through top chef season sixteen I and where I'd like to begin if I may on February the twenty seventh you sent me an Email the title, which was simply top chef. And all you said was that's right. I can't believe this incredible season. It's a wonderful season. I hope we're able to compare notes about it when it's done. And of course, I wrote back immediately. Yes. I can't wait. Let's do it. Now. It's curious that you chose that moment in time because it was right before the group went off to Macau and for the listeners of house of cards. If you aren't well-versed in this season of top chefs, he's sixteen of top chef in Kentucky. You may not be able to keep up with all this. We're gonna pretend that all of you watched it. So if you haven't get yourself caught up, and then you can enjoy this hot and heavy conversation between me and Greenwald. Right. Correct. So why did you why did you Email me on February the twenty seven that? So I think you and I talked a couple months back at the end of the season in early on. I think we and this is to our credit point to our credit. We identified that. This was a very promising season that things seemed to be clicking things seemed to be swinging. There was something about the refresh pool of shift Heston's that they had gathered coupled with a truly interesting locale that the producers seem to have a lot of respect for and a lot of understanding as to how best to communicate it to the viewers who as we often after mine people cannot smell the, smells or eat the food that we're watching on television. So all the ingredients were there for dare. I say it a good meal, but I was truly blown away by how excellent the season was once we got into it. And I wrote to you after watching miss, I think it was delayed by dare to the episode called Kentucky. Farewell the twelfth episode of the season before they went off on their Fennell. Ali trips. The last episode in Kentucky. Yeah, in it was mainly because will two things there was a there was something bubbling, I'm really going for the metaphors. There was something bubble in on the stock hot that we can talk about an a minute in terms of who was succeeding in who wasn't in ways that surprised and delighted us as viewers. But specifically this episode did the thing that I just simply love best. And I and I really appreciate the thing about top. Chef this is sixteen seasons in they more than maybe any other competition show. I think understand what's good about their show, and what makes them special, and they're not afraid of repeating beats if they're the ones that work. And in this case, it was the Tel the chefs who were there to cook an incredible meal with very high budget to impress their mentors. And so each of the I think our five chefs remaining had various team chefs who they had worked for word with come and taste their food. It was extremely emotional for them. It was very. Moving and it spoke to the thing about cooking that I find fascinating, I think you do too. I was most. I was in France, London, but I also popped over to Monica which you know it's it's own principality cellphone service, not the same there. It is in France, and yeah, it was great. Very, you know, just a stone's throw away from Italy more on that a minute, and it was fantastic. I, you know what? I love Europe. It's a really great place. I love traveling. I love being abroad. It's just such a great, big ratings variance and Francis can't go wrong. Pretty pretty much can't know where in France did you go? I was saying NT which is like halfway between niece and can. So you could go to both. And I didn't go to camp and I went to knees, went to other small cities on the water Villefranche. Then there's a couple of men like there's like there's like the the seaside stuff, which is awesome. And then there you go up into the mountains and there's like these amazing views we went to as and saint-paul-de-vence and it was just great. I, I mean, I, I love France anti was really cute and Tebas like nieces, like pretty big. I don't. I was surprised by that. I guess people know that and Tebas pretty small, but like still has everything you need like a legit place to live. And we were saying, I was with my friend. We were saying there right outside of our door was daily market that likes from like eight to one is kind of like a farmer's market with also cheese and and meet and whatever. And then let transitions crafts, which is something we need to adopt here in America. Like the farmers market lasts all day. It's just not always. Food, it's just like, but the market's always there. It was really dope. That's interesting. So what what the crafts meaning like you can go buy a lottery and yeah. Okay. RT's lamb, household goods? No fan writes up, like artisanal goods to the best way to put it. Yeah, Santa's we are my guests preceding you. Our beloved Geoff Shackelford is presently in a town just outside of verse I for for the Ryder Cup is being competed this this weekend. And so I had him on because he's been. He arrived in Paris on Saturday. I wanted to get some details about his eating experiences in France so far you were in a in a portion of the country nowhere near Cy right now. I was the south of France, very close to Italy. Right, from Spain. Yeah. So different walk of of light. But yeah, sounds like go ahead. The Italian influence is very strong. I ha. I mean, there's just like pasta everywhere. Like it's not Paris its own, and I think like the kind of the non Rivera Porsche. Sion's of France are different food seen than the Rivera. It's like it's a lot. It's very seafood focused. It's very pasta focused and it's not as much and then, but they're still like all the bakeries..
