"Never there's never a shortage of cocktails, beer, and music, as you probably noticed. When do you remember Puerto Rico? I did notice that, yes. Yes. And so you have two options. You can keep on going south, which is southern coast of the island. Or you can cut and go towards the center, either way is fine. I love the center of Puerto Rico for many reasons. One is a lot of the culinary traditions come from the countryside called the Puerto Rico and there's also a place that's for me is very special called, which is in the town of hunks. And it's nestled in the mountains and these young chefs bought a farm basically. And they have this beautiful restaurant studying views. I was there a few months that I think right before the pandemic, I was there with my friends and we literally were walking to the restaurant in a college just walked past us and we had a bit of a staring contest with a cow and we walked into the restaurant but really beautiful and what they do is just like a combined refined dishes, but in this very rustic setting. So definitely worth stopping by. I also love the tone of calle is known for the route of the roci pig. I remember talking about that in an older episode and I've wanted to go to Puerto Rico since then and it was one of the things I wanted to do that the darn hurricane kept me from. So you'll have to go back because it is, I grew up from guayama, so it's 30 minutes from guayaquil, and once a month, my dad would always we have an aunt that lives near there so my dad would always take us there and we would have lunch and we would have and you just see like these full side pork, especially on the weekends being roasted on Spitfire and they're cutting them with these huge machetes. These are small off the route restaurants that are not fancy. They might be sitting on a plastic stool, but I'm eating some of the best pork I've ever had. Is that the eating on some benches, but some of them, even though they're basic in terms of benches or whatever. But on the weekends, I do have a dance floor. They have bands playing. The basics in Puerto Rico would include dancing, I would have said. Everybody, yes. At least music. There's definitely music and people dancing and I just love asking you order the pork and they'll ask you what part do you want in this guy with this machete will cut it into little pieces for you. And then you'll have all sorts of sides. You'll have like rice and beans and even if you don't eat pork or if you don't eat meat, there's a lot of root vegetables that are very hearty and filling. So you can have like rice with pumpkin and sweet potato and so even if most people think oh it's meat but I think that lately there's been a big effort also to accommodate vegetarian pilots as well. Okay. But I love that area of guava. But the root of the roasted yam doesn't have the same no. But if you want to go, if you want to be supportive to your vegetarian friend, hook them up with some yam and you can have your lechon. Here we go. And everybody can agree on pina coladas, right? There you go. And so that's one area that I like a lot.

"In Aztec society, which was an incredibly regimented strict militaristic and kind of like cultish society, pulque was only allowed in public extremely special and rare occasions, just a couple of times a year. You'd probably be executed if you were ever caught drinking it on one of those non days. And after conquest and colonialism, there was a real concerted effort by Spain, Germany, and so on to sort of phase out pool game Mexican society. And introduce and kind of like get Mexicans really into beer, which I'm not really annoying Mexicans, a car that you could have figured out that you could have both the whole time. But it's a really interesting story that it was almost totally eradicated. And there is been a movement in recent decades and years to revive bulge to let it kind of reclaim a spot at the top Echelon of fermented drinks. In Mexico. And a lot of young people college students like neon Degeneres, if you want to call them that neo Mexican nests who want to elevate budge and really bring attention to what an incredible and really unique drink that it is. You described it a little bit ago as having the consistency of saliva or spit. And that's very accurate. It's not for the faint hearted, it's not for people who don't like taking risks. In terms of foods that they try, there are thousands and thousands of microorganisms in a glass of pulque that are not bad for you. And it's alcoholic and it gives you a buzz unlike anything that I've ever had and I can tell you that I've tried almost every spirit imaginable out there and there's just nothing in the world life bulge. It is a nearly kind of hallucinatory kind of happy hive that this drink gives you and it does make you feel connected over time over centuries over millennia to practices that are native to this continent on the face of the earth. Yeah, people love pulque so much that they'll reduce themselves to drinking pulque from a can. Have you ever had it from a can? I have and I've regretted it. It is totally disgusting. It was not exaggerating. It's one of those things that you kind of just want to spit out the instant you taste it. But I understand the impulse. Now, because pulque is sort of constantly in a state of fermentation, and because it goes bad very quickly, it has an extremely short shelf life. So for a lot of people, like you can only really drink pulque in Mexico, ideally at a ranch, by the time it gets to a bar that sells only pulque, known as a pulque, somewhere in the soup of Mexico City, it's already kind of like not as good as it could be. So you really do have to drink it immediately almost just after fermentation after it's been scraped from the inside of the agave. Let's remind people what pulque is. It is the fermented SAP from the very core middle of the agave. And the artesanos who pull it out of the agave are called, and they are incredibly skilled in talented practicing traditions and practices that have been handed out to them over generations. Yeah, trying to find fresh pulque in the United States is nearly impossible, even in LA, and people always say they know someone who knows someone, but almost never pans out, but you were able to find fresh pulque. Yes, and so this is also a huge mystery you meet some of the guys who are selling it on the street. And they're very cagey about how much they want to tell you about where the pulque is from. What one source did tell me, their vendors that if you kind of ask around, they'll be like, yeah, I have pulque or yeah, I have the pace. But the quality level, again, is really hit or miss. It tastes better, kind of like after the rainy season. But some people do try and sell it all year round. What we can assume and what our sources tell us is that some people are basically bringing food up from Mexico, trying to move it very quickly through the land border because you can import certain amount of leader as a liquid and so on. And there's an effort to try to can pulque or bottle it. But again, it just doesn't taste the same. It doesn't taste fresh. You have to add a preservative because if you see your bulk, it'll blow up whatever container it's in, frankly. And so no one's been able to achieve it as far as I'm concerned. The taste level that you need for fresh food gap. So Daniel, what was the hookup? Who's your pulka maker? Well, there was this guy. There's a guy down there in the Mercado Olympic area. He's pretty vulnerable. He sells from a white truck, you know, he's kind of just in the general area. And I went to try his book over several times over several months and sometimes it was right on the money, sometimes it was a little off. The quality is extremely variable. And so sometimes it's just really poor. It's just tastes like basically red and white wine vinegar or something. Another times it's like very flat. So it's just hard to get good food get up here in LA. And it's kind of a mystery about where to get some good, you know? And so he makes his own cools, so he'll do curado. And a curado is when you flavor the pulque, plain pulque, it tends to be white, viscous, but in Mexico there is a practice of curing or kind of like soaking flavors inside a pulque to give it different colors and different textures. So a pretty popular one, my personal favorite is guayama. There's also a mango, pulque, people make often, and then people just go buck wild and do like savory pool guys, like a celery, tomato, one of my all time favorites was peanut. One of the most popular ones is oatmeal. So this vendor makes his own food autos. And he sells them from the back of a truck on Alameda and Olympic. So once I couldn't cry on this trip, I was like, oh my God, let me just pull up. I saw the sign, just like if we were in Mexico or the global south, you know, which is right here in LA, like this reminds me that the global south is right here, you know, but through the foods and through what we eat and drink. And so once I saw it, I was like, oh, it was like a gift from the gods. You know, this is the best that I found so far at street level in the city of LA. Here I'm a very industrial, pretty grimy part of downtown LA near the flower district and near Mercado Olympic, which is like the pinata district. And it's really does feel like, again, you're kind of transported back to Mexico. I spent a couple of minutes just hanging out there with him all morning and people coming by and just like, you know, I've been drinking this since I was little or a one woman told me that she makes bread Banda puke, she makes bread with it. You know, other guys are kind of showing up and there's always this kind of like social kind of play that happens around pulque culture. People kind of like making jokes, double meaning, triple meaning jokes. It's a very lively, ribbing culture that is also really interesting and you'll be in this kind of microscopic section of LA and instantly be connected to that. It was a pretty amazing experience to report out this piece.

"Okay, the way you just said that when you said nothing has happened, given the fact that hurricane Maria was so I'm using the word transformational, both in the good sense and the bad sense of the word because you can take that transformation. You can see sort of community reactions too, but focusing on the bad word of a transformation for you to say that nothing's really changed after 5 years. That's, I can see why people seem to be pissing frustrated a little bit, right? Yeah. It's really good because you're still the scope of investment that's been done around the world in renewables. Smart grid. Puerto Rico should be at the forefront of that. The money is right there, but the money hasn't been invested. Because of bureaucracy because of legal bankruptcy process making years like the negotiation between profile which is about 31 holders and the government basically collapsed on Friday and like I said on reading requirement from the federal government that they will not be converted to month for particular power grid until power is probably being finished. So do you think the government, you know, I remember when Maria came and I remember the days of the early days of her schedule and remember the secretary of health and security with their, you know, the death count was the biggest story that seemed to be untold and the spin of all that and obviously the truth finally came out, is this the story that the per louisi administration will know sort of need to try to confront because, you know, I don't know, but you know, he was asked on national television about the power grid and, you know, he's like, someone's like, is the power grid of failure in Puerto Rico and he's like, it's fragile. It's fragile. I wouldn't say it's a failure. What do you think? How do you start making sense of all this in the context of the governor of Puerto Rico? So under hours after reform, it doesn't seem to be a huge thankfully. I think today there's around 8 people confirmed that and most of them were with things associated with the storm, but not directly related to the storm, for example, person by trying to become something that there are power stations or gas powered. They basically ran inside the home and they were in toxic air and carbon dioxide person that income, which is a mountainous town in the central mountains, which either he had a heart attack or he had a blood tour episode on he felt face first into a train man he drowned, but he wasn't like he was taken over by the stream. So you see something like that. I think we were lucky because there's so many images from the south in the time of guayama, for example, where we were overflowed where he never was basically took over houses up to stage 7 and feet. And I think we were lucky that we have more people directly responsible for buying because of the hurricane. Obviously, what could happen which happened after Maria does a week after two weeks after the hospitals in the area or patients are about reading and there are no communication. But I think the major practice right now is the power and also something like different in this time that actually beating up in Maria. Most of the island is right now without horrible water. And that's new. And you know, what can we do with our power? But making the world award and if you have for children, you can have elderly parents that are reading, having no water will be made by me that makes things and how frustrated. So how has the response been? I mean, how would you read it? That's a big question. I mean, we still in the middle of it. I mean, what do you think? I think obviously I'm biased from the yeah, I know you're biased, but you still have an opinion. You do have one of the top political podcasts in Puerto Rico. So I'm asking you. I know you're biased. And I know people will tweet at me and be like, why are you asking him this question? I'm like, it's still a question. You can be factual about it. It's all good. If I were writing the immediate response, like getting people to tell their opening roles that were going to be stuff like that, I would give the response and I think you need a response out there about the things we as good as it could be. And I think in part, there's not that many people there's not that many deaths because my response was okay. Most of that response is led by mayors like Puerto Rico and 78 new years and that's going to get a job and they won't either win or lose election is how good they do in this week. The problem now with their dropping the bullies with the power on the water because I mean people don't give you 24 hours, 48, even if you wear a big storm like Maria, people can give you a mug because we've been through this before we understand how it works. But if you don't see any damage in your area and there's no power, 7200, a 124 hours afterwards, and that's where people need the patient. There's a patient. And I can tell you from private polling I have seen before the storm. The governor walking really deep water before the storm. So he has a very, very narrow operating field, very, very narrow marginal bearer. And so does move out of the way. So will this translate into probably demonstration and stuff like that? I don't know. I can not predict that, but this last week more, but they were. I don't know. Yeah, you just start to tell. But so in essence, it's the initial response was relatively better. Now it's trying to catch up to, you know, I do think part of the difference is, I think you're right. The difference is there needs help. Regions in the south need help, right? That has to happen. People are activating. We'll link to a couple of places and things are happening. There's talk of even more federal aid for Puerto Rico all that. But I think one of the differences and I think you're saying is that Maria, you needed like two or three weeks to be like, I just got to worry about what's literally in front of me. Right? Now, it's like you go to places like, you know, and this is the difference. There are parts of the island that haven't that relatively suffered less there was damage, but it was relatively less damaged from the more harder hit areas. So the patients could be shorter because people are like, okay, I'm good, right? Now where's my power? And my water. That's what you're saying, right? That to me is a difference because I think Maria just totally people didn't even they're like fema, what? They're not helping us. Let's just deal with this ourselves, right? Yeah, I think Maria when you look at the landscape when you saw like a bar of mountain. It really felt like a nuclear bomb. The level of these structures, like most all three luster leagues. And those are not worth still standing. You can only see the trunk. So like the home, you're used to seeing those mountains to be green, all your life, and then you woke up an exam, everything was brown. And the chuck on top, it was for now you just think you woke up the next day, if you're in the 80% of the island that wasn't really affected, and the same day as the day before. Because you have no power, but it gets restraining, it gets really close to so warm. We have a heat wave at the moment right now. So today there were heat wave alert going up. Imagine people just trying to learn everyday stuff with a water and we have power and we got a hundred mid weathers. I know. So all right, so this is your moment. I'm glad everyone's safe. I've connected with everyone I've known. It's good to hear your voice a couple of days after. And not be like, hey, it's been a month. So I'm very grateful that you've taken the time and I'm conscious of you being in the car with your phone.
