Yeah. Simple. There's an easy peasy joke in there somewhere that was it was bad moving on this elation probably arrived in Scotland via missionary monks in the fourth and fifth centuries. The church of Scotland sometimes made space for storage of scotch in their pulpits and occasionally transport it in coffins stills were hidden in the hills and smugglers had a system for signaling each other about excise officers in the area more than half the product was illegal and in the eighteen twenties and the eighteen twenties saw the closing of fourteen thousand illicit stills a year. The government was doing its damnedest regulate the whiskey business, but legal whiskey was all the rage and eighteenth century. It reached a point that in eighteen twenty three the government passed another excise act one that outlawed small stills and collected a per gallon tax and licensing fee for larger distilleries this did the trick after a bit. Meanwhile, wouldn't barrels made by Coopers in Scotland and the rest of the now United Kingdom had become expensive. Most of the oak in the area had been going to making all those ships that made England such a powerhouse during globalization, France, though, which had greater land resources and had started a forest conservancy program in the mid sixteen hundreds helpful was making lots of barrels for its wines and fortified wines like port and Sherry. So as treaties in the early eighteen hundreds started allowing greater trade between France, and the UK more of these wine products wound up in UK ports where they would be bottled for sale at port the spent barrels were up for sale and Scott Stiller's bottom up these barrels created us lightly sweeter darker scotches as they drew compounds from the wood and from the wine that had previously held. In eighteen thirty one nays coffees invention of the patent or coffee still allowed for continuous dissolution process, which in turn led to grain whisky and the new milder flavored whiskey boosted scotch sales outside of Scotland. It's a little bit lighter flavor in color with more of the of is that are so common in bourbon really changed the industry. Yeah. And there's a it's a whole big world out there of scotch and oak. This is. Yeah. Just glancing glancing off the surface, if you've been intimidated by it at or if you've had some, but one experiences bad, I would say do some experimenting. Yeah. Tries justed. Absolutely. Yeah. Try try some others. Like, maybe maybe look up look up some of the common flavor profiles of those different areas of scotch production and pick the ones that sounds like you wouldn't hate them. That's a good starting point. Always a good starting point. And thank you to AS w distillery and Justin and Chad for for speeding. Oh, absolutely. Yeah. We we only used most of what we talked about with them was pretty specific to what they are doing at their distillery, which is actually very fascinating in terms of how they're using a blend of traditional presses and ingredients and their own like what's working for them out of either necessity mostly necessity or just what they like.
