"Yeah so basically these flavor molecules by their natural metabolism that is the cells inside the hop flowers make hop flavor molecules and what we basically done is taken teams from plants that make those hop flavor molecules and incorporated them into brewer's yeast so that the brewers east now makes those hop flavor molecules artificial hops than it gives the exact same flavor molecules that are in part by the hot so is really nothing artificial about it but it is very much a new process it's definitely a very new way of making hop flavors and how have people responded any done some taste tests with your hop free beer so while i was at uc berkeley we collaborated with a professor of brewing science that uc davis which is also here up in northern california and he in his lab we made some fears a forty liter scale so a few hundred pine and we took those beers over to logging brewing company to do a sensory analysis or sensory panel to report how beer's taste and what the panel found is that the beer made with our east newly developed estrain was capable of making beer that tasted considerably hoppy or you know we saw very very much physically significant results showing pop here then beer made with control east straight people who like hoppy beers founded happier that's right yeah and so that was very exciting with other thing that was really exciting so the sensory panel really focused on chess rating whether it'd be your hobby or or or not hoppy but then we also got to talk to some of the folks at log nita's who are really industry professionals they spend much of their time thinking about you know beer like flavors president beer and one of the innovations brewing manager a guy named brian donaldson over logging described the beers that were made with our yeast as containing fruity notes he actually described it as fruit loops as well as a four inch blossom so one of the cool findings is that our east can make some very interesting flavors that are reminiscent of hops it's just very encouraging.
