I've seen a few people dating for here and there for some reason. Maybe because it's too too well kind of put too much of a bow on it. I think it's fucking extraordinary. Like if i i thought that favorites was a really like startling achievement in dramatic writing and just in terms of the amount of stuff that they burn through in the way that they bring all these characters. What did you. What did you think of that episode. I agree with you. And i have not seen any criticisms because i don't really consume social media anymore but anyone who thinks it's too neat or they put a bow on it. I guess find another show This is peter. Marin is a playwright. There is a lot of construction and intentional cinematic and exposition all dialogue and set pieces built into this. It's not. it's not that it's obvious but all of it is very crafted. So i agree with you that i thought episode four was tremendous in terms of the amount of like and setup that they managed to convey to you in a very effective way. Because we don't really know anything about two of the four children barely met any of them and has been kind of a side character and so there are four children who get their own scenes and moments and so you have to develop those characters. And you know everything you need to know. That is so hard and they nail it. I mean they do a lot of stuff that i think other shows would probably shy away from because it would feel too like they were showing you too many of their cards so i kept thinking about the scene between elizabeth and an you know they go riding out. This is the thing that they sort of both share this love of horses even though and is obviously phillips favorite. And that's like in the way that that gets conveyed in the beginning and their conversations heartbreaking you know like their conversation is legitimately breaking and i think you could look at what an says. She's like. I used to enjoy being the difficult on and scaring people and now i don't feel like have any control over that anymore and you could be like well like you might go your entire life and never have that level of self awareness. "Yeah at just a real physicality and come on bill of you seem dirty dancing. Recently I watch I'm a grown woman, and was just blushing I hope. My husband does not come in this room because I'm having some time with myself and watching Patrick, swayze move and you know that physicality does lend him to like being action star, but think dirty dancing is an anomaly, and that it's just like a great dance movie that somehow we all saw. It was not supposed. Supposed to be the hit and the classic that it was, and then ghost is a great example of using his physicality and his action star in service of ultimately love story, but they just don't make as many of those genre blend movies anymore, and so he kind of gets lost. If you're just making him in action star, then you're not really playing to the type of physicality that is speaking me Amanda Dobbins if you catch my drift, who has Patrick swayze now? I would say closest as channing tatum. Who is also a dancer and has a real physicality and kind of like the tough guy not. Not the most voluble of individuals better real charm, and you want to spend time with him and has done dance movies, and Romance and also drama producer. So, it comes out the weekend of July thirteen to fifteen th, which so it's a thirtieth anniversary this? It is still in the box office. Bake make another five million on Columbus Day, and if you look at the arc of it, it's basically twelve million twelve million eleven million, ten million by the week all the way through the summer. It's in the feeders for four months Chris, Wendy, the stop happening were movies were just in the theater for four months. This was like last fifteen years. Maybe I think whenever it was I mean when when the emphasis became on opening weekend box office which I don't really know when that was. But there used to be a time where it was like something we talked about this back to the future, whereas like back to the future was just in movie theaters for like a year, and that was one of six things. You could watch back to the future the news. Affiliates game or back to the future that was like all we had, so. We go to these same things over and over again. I, think you know a titanic must have had a huge opening weekend, but titanic was the last movie. I remember being in theaters for that long. Di Grew that you grew that. "It but they're essentially a bumper cars but tables have you seen this inner tubes. Yes it seems like people are going to have a bumper car interacting experience but they are inner tubes correct and they're not small inner tubes. No they're not. This is not going to the beach and putting on a blow up. You know ring. I think they're probably six feet. One thing that I've learned is that I am. Six feet is a different length to everyone. It's a hard thing to measure and and I have never been won with a great depth perception. So it's particularly hard for me. So in that sense I liked that there is like a literal measurement. It is pretty clever. I do you want to know that this is being in Iraq enacted at a bar so you are putting people in giant inner tubes and then giving them alcohol and then telling them to interact so I do hope that everyone at this Maryland bar is safe in the in the log term. I mean it is kind of achievable right. It only needs to be thirty six inches. Because if if you have three feet and the other person has three feet. Then there's you're six feet right. You're not and that is true from what I saw. It look like I don't know if it was the purveyor themselves. The restaurant bar who is responsible for this or if the individuals it looked like there was some decorating going on like the portion of it. Where you you're you're cited inside of it but the ring is too big so because you you you're your own person isn't isn't thick enough to sit inside of a an of that size so there has to be some kind of like a mechanism to to have it. You know connect to your body and it looks like people were entering aspect of it. We'll so I thought that was the table itself. Because they're their billing says innertube tables right if you think about it if you have an inner tube around you can't. I don't know how long people's arms are again not great with the with measuring amended. But it's it's GonNa be hard to reach a table. So you gotTa have a portable table and also then the table is self contained. And so you don't have to be exchanging with other people. It's very clever. I do wonder whether it's scalable. I don't think it is but you know particular restaurants. Ice Bar also had the benefit of being near the water right Yes yes. And so the the nautical theme now the thing that you touched on a bit ago. We don't want anybody to get So inspired by the alcohol component to think that it'd be fun to just go jump in the water with their inner tube table. I mean it wouldn't surprise me if if it happened. I'm giving points for engine. Nudie here right. That's the seem of this podcast and it's a very clever idea. I do hope that everyone is safe and responsible when using it does. I will say you know speaking of that. Ingenuity. I've heard a story where restaurant here locally that has its own. Parking lot is is setting up tables. You can reserve a parking space and they will come out with a table dinner ware and set it up in that in that space and then they don't put somebody in space next to you there. They won over. They skip the face. Yes so you can do some some lovely outdoor dining. The weather on the East Coast is beautiful right now. Some Nice alfresco dining this kind of ingenuity. It's it's inspiring a man. I am going to let you go but I have been over the several of these shows and other shows talking about my new found admiration for one. Guy Fieri. I've confessed. I am now a staunch And I've greatly admired. I've seen on the food network over the last handful of week. Several weeks of the shows that he's doing he's repurposing some of the Triple D. shows some of those personalities. They're sending him food. He's making it at home and it's been inspirational in. Its own way. I just want to touch base on the fact that one of the stories on our list was him and Rachel Ray doing Giant donations to to food charities and restaurants and sewer service worker funds. Just you know I I now might have to just have the Guy Fatty moment on house of cards. It's just going to be the fee each corner. I don't have to come up with a name but Shot shouts to guy. Keep doing it. My Guy Keep doing your thing. Rachel Ray guy fee eighty give big to food charities restaurant service funds. That's one of the things that the hungry home he's out there can can check out and props to my man absolutely everyone using their platform to do what they can. "The opportunity to talk has been championing. The interests of independent restaurant oppor operators but one of the sort of kind of a messages is the thing about restaurants is their capacity to figure stuff out and that really to me is what you're talking about here and it does to me seem like you know we're there isn't going to be a return to the way things were. I don't think that's really possible For a whole sort of variety of reasons We don't have a way out yet. In terms of you know everybody feeling safe and secure and able to sort of get back into places where we can all be near each other. I mean there's a whole myriad of challenges in front of us but this kind of innovation to me does feel like there could be a kind of permanence now again. It would be great to not have to need food banks. It would be better if people were had stable employment and we're able to earn money and then take that money and go buy the groceries that they want for themselves and and care for their families and friends but as long as food banks are out there this kind of innovation. This kind of figure it out. I stuff mean this is what what what were. Where do this is what we're all about? I'm not going to stand up and sing the Star spangled banner. Banner Right now but you know I grew with you. It really is inspiring and you everyone I do. Think looks for these these moments of hope and also just as a model of what can you do kind of like? Here's a model of of of what you can do. I wanted to share with you one more detail from it that I just I thought was so lovely so another of the of the food. Kitchens is in is in south Florida where they obviously have a lot of citrus. And so here is Chrissy Benoy. Who is the general manager of a Food Bank Florida? Who's going to plan to do with that? She's like we want to do. A lot of citrus marinades. You got a ton of flavor and it adds to the meets. We see a lot of oranges lemons and lives around here. And I like I just loved the specificity of that and making do not just making do but turning quite literally lemons in this case in two. Maybe not lemonade. But like a lovely marinade and making the best of it and Or or making it slightly better at least if not the best of it and I. I thought it was great. I'm here for it all right. Well that's a great story to kick this off. Let let's hit a couple other high notes so we mentioned Jose Andreessen. I you and Jason. Gay spoke about him and all the incredible work that he is doing last week. And I think we're just going to do that again. This is really a a profile of of hose. Andrey's on CNN business. And the headline is why this chef keeps showing up disaster zones and it's a great overview of the work that he has been doing for a decade now with though. World Central Kitchen. And why he's doing it and again some of that infrastructure of like how it works and what we were just talking about Was a little bit of an example of things breaking and people not having that infrastructure and very quickly putting into place. But I think what's been so amazing about hose and races that he has already been working on this infrastructure. He identified that getting people food after a disaster is a real problem and here are some ways to do it. Not just the humanity but although the humidity is like extraordinary and what he's doing but also just the the effectiveness and the logistics. It's very hard to do what he does at the scale that he does. That's the whole point. I mean that's not the whole point but that is a a one of the points that's most fascinating to me. Which is you know. You basically had a chef a successful chef who knew how to do food across a number of restaurants in a number of places and relatively upscale all of his restaurants in Washington. They're very accessible but they're they're nice. It's not like white tablecloth. Necessarily they're open in welcome opening and there's a welcome kind of experience. But how does a guy like that? Think about his own sort of station in life and recognize. Okay I I can do something meaningful when folks run into something real and I want to jump in and do it so he he did it right. I think Haiti was one of the first the earth there was you know the massive earthquake in. Haiti was one of the first things and it was like. I'm going to call up this person that I know that can provide air transport and so we sort of get the getting their part get solved and then you know the actual physical cooking aspect of it and that's the part of it to me. That is so fascinating like the scale. How can you turn out ten thousand meals in a day in a place that's been laid laid the way spot by an earthquake and I honestly feel like you know Jason Made the semi serious observation that this guy should be running for a Nobel prize at some point But he could also. I think go to Harvard Business School and do logistics. You know do a course on on logistics or any business. It doesn't have to be harbored. Any business school in the country right and do like let me talk to you about the challenges and this is how we thought about it and this is how he conquered it right. Yes absolutely there is both. He is a really inspiring spokesperson as well. And I think you know this piece and all the work that he does he can about. Why the work? That he does is is so important. And what food means to people which you know is important connecting to people but then just backs it up with just like a massively sophisticated organization that already exists. And that's kind of what I keep thinking about it. I felt a lot that in recent weeks and we don't have to go down and policy things but a lack of preparation and a lack of foresight and this is a person who saw a problem and understood what food means to people. Not You know both in an emotional way literal way and figured out all of the issues and it just kind of like okay. Where do you need me next? And it's it's his innovation on this. It's a nonprofit and non governmental nonprofit. Now he does have to collaborate with the local governments to make sure that he's meeting the standards but also the best effective way for him to get you know the most food to the most people is to be in in concert with in partnership with local officials. And and you know like the police the fire. Those are the people that that that need to do. The eating right there public employees. That are in the first sort of you know in harm's way in the first place so it is a public private partnership it. Does you know where you again. We won't go down this policy thing but like you know. Local governments could could take a lesson in terms of the resourcefulness and thinking about for their own selves. How can you you know what are lessons to be learned from from this guy and his outfit? Yes absolutely I mean get everybody. Who's making decisions? A copy of his powerpoint is is what I have to say. That's the point life. You could go on zooming. Yeah it's really inspiring. I wanted to share one more hoes. Andreas related thing with you. So all of the work that he's doing incredibly important in and a you have been focusing on it so much and you know. The ringer obviously is raising money for the the world central kitchen. So we'll continue to talk about that but I just great instagram presence. From him as well. He posted a ten minute instagram video last week from his home with his daughter. Carlotta and they gave you. They said it was ten kitchen tips for quarantine nine because they only got two nine and she has there in the home and he has his stations laid out and he's going wants to the other giving you quick tips. I'll give you a couple. I don't want to spoil all of them. Number one is how to make a beautiful creamy dressing for an avocado with like the last bit of Mayo. That's in the jar that you never really know what to us. I had this last night and I like unfortunately I did the squeeze bottle instead of the jars so I couldn't do it. Jose Andrews taught me which I felt really bad but I had watched it and I was like. Oh that's great. The second tip is what to do. If you have an annoying party guests who keeps coming into the party being like what can I do? What can I do? Give me a task? And he suggests asking them to peel blueberries cousins rude. That's the point and what I liked like. They'll never come back in. You'll be very happy. He's he's prepared for all situations. Okay cocktail there's had appeal a tomato. There's what should you if you don't have milk but you do have unconvinced valk. Oh okay which. I have had condensed milk in my home for a long time. It's one of the key ingredients in key lime pie. I had never thought about the fact that you could condense it. Even though it's there in the title it does. It does seem like it. I have led a nearly milk. Free Life since my son was born because we found out early on that he has a milk allergy. And we've been plant based milk like drinks and you know all may the milk industry doesn't like it if you call all those drinks milk but almond milk nope milk and plant based milk and all that soy milk. That's been my life for about eight or eight or nine years but I mean let me hear it. How do you condensed the condensed you put water in it and stir okay? That's what I would have guessed. I understand that it's unbelievably obvious. And I understand like I I get it trust me and also that it literally says condensed milk on the can't like I do you understand individually what those words mean and also I have a knowledge of how to uncondemned something but in a million years. It never would've occurred to me. I think it's something because the consistency of condensed milk you know off and also I have sweetened condensed milk. That's right of course that's it. That's right so he wants to Sweden's in there. It's like it's taking me farther away from the original product but the consistency is very syrupy in a way that I just kind of and sticky. So you don't think that it's going to make its way back to milk. So there's just something about like the distance between the product itself and the origin that I just I don't know I I just wasn't thinking about it. There are other things to be thinking about. I agree with you. The degree of difficulty seems very high to get it restored to what we would traditionally think of milk. And if you're in that moment semi-panic moment like I have this recipe that calls for milk and I can't go get milk right now. It'll ruin my flow trying this technique. It could feel daunting Because you WANNA get it right. You don't WanNa blow the recipe with with them unconvinced. Condensed milk he really did. Just want to tell you on the video. He poured water in it and stirred. And that is just like it's like I'm a four year old watching science I was like. Oh my God. It's so good I love it. So those are the type of tips you know given with real flair and also there is a time to element for it even though there is no reason to because they're just in their kitchen and it's very charming. He's with his daughter. He's making fun of his daughter. But in a loving way it's great stuff. I recommend the content and useful tips on you if you don't have milk. Amanda this is Great. As you know we have been doing some shows here lately where we've been exploring the ways that all of us have been dealing with the effects of of saying at home and cooking at home and what it's meant in a lot of different kind of walks of of food life. Of course that means there is lots of food knows out there and today we thought it made sense to look at some of the Food Hero. Some uplifting stories in the world of food and restaurants and give some shine gives him attention to those folks our beloved pal. Amanda Dobbins is on the line with us. What'S UP AMANDA? Hello House. I'm honored to be here for the return of food is so you were all one of our first guest on the Ringer Pantry. Party where Lots of folks like you. Graciously invited us into their kitchens to walk me and our beloved house of carbs audience through what was going on in your own kitchen and how the fridge was populated and I have a question for you from from from that experience we left as an open question you as you said. You had some ambition for a particular dish that dish was. You're craving Szechuan food. And you said you were thinking about some hand pulled doodles some see Schwann pepper corns by question to you. Amanda is digit do it? I'm really sorry to disappoint you and I haven't done it yet. I have the we had the pepper corns and I still have them in the fridge and I have been cooking with them a bit to. Kinda scratch that issue but the hand pulled noodles are a quite an undertaking they. Are you know a tradition over hundreds of years? I believe from northern China. And it's really difficult there are. There are a lot of steps and I haven't been brave enough. I'll be honest. I have watched the videos. I've thought about it and then I've said you know today instead. What I'm GonNa do is we have ordered takeout from several restaurants in the S G. I have I finally did the. We've got the freezer full of frozen dumplings. From Mama lose dumpling house which is very exciting to me so but I did instead of the noodles. I didn't do the noodles and I'm GonNa try to spend a negative into a positive for you. I have one thing that I did do which is despite growing up in Atlanta Georgia and being a huge enthusiast of fried chicken. I had never actually fried chicken at home. I was too scared. Is You know we talked about this on the show because you mentioned chicken salad and for a half a second there? I was confused by which kind of chicken salad like salad. Greens or you know the traditional man as base chicken salad and You confessed in that moment that you hadn't really tackled fried chicken in earnest please. Let's hear about this. I think it's because there are many places who know how to fry chicken like beautifully certainly in Atlanta where I grew up. And and all of my you know grandmothers and aunts and uncle. It's just like I didn't need to be doing it but in this particular case I did need to be doing it and I think it's another one where there was like the reality of like the actual frying. I don't do that every day at home. And so it seemed a little intense and so I used a recipe by Julia. Tertia do you do you? Are you familiar with joy attrition? Not Not really. She's a wonderful cookbook author. I'm using her cookbooks. Small victories as part of my mic. Stand here at home. Yeah you have a whole bunch of cookbooks as your beautiful array and that's not just special for House of cards. That's what I use for. Every podcast but at the top here is the well used. Small Victories by Julia Attrition. And there is a buttermilk fried chicken recipe in this that we've been using and that is fantastic primarily because she's really good at explaining how to do stuff in a way that doesn't that makes it not scary and the thing that she suggests for. This fried chicken is to do it in a Dutch oven or in a like an a`deep pants so that you don't have to be as scared about the splatter or just the mess somehow it made. It seem like a lot more accessible. And so you marinate the chicken for twenty four hours and buttermilk and some spices and then you just fry it and she liked calmly explains how to fry it and I did it. And it's amazing. Oh what a what a victory a rare Q. Life success.
