Several years later explaining this to the paparazzi in new york city when they did the media and della valley. We just kind of put this together and use guy making fun of me. I was so confident work. And then these and then he called me back a week later and so but she's an involved process because when you think about letting they would fire burning barbecue bit actually on a vessel has five thousand souls on it is a very serious say its version Watch movie Tag danny of the big responsibility. So yeah i just but when add very methodically and got what's headquarters of carnival cruise down in miami and they set up a meeting with lloyd's of london world's oldest insurance company correct literally. So you say yes to guy fieri. You're like oh yeah of course guy. We can do that and then when you go back to your team. What did they tell you. What did you promise david to do this week. Figuring out it worked out in the back of this This deal in new york city was the had all rousey there and he was up to show entail at the pits in this room and he went through the whole of a and a sudden actor that we did a promotion down in texas It's texas state. Fair guy called me and he said hey we're going to be fair and what should come down. I wanna do barbecue contests on what you take care of that florida. And he's about. I want you to get there isn't guys Okay how you'll be there where you won't be any game this address. I show up at the address in this restaurant any said before we do the thing back at the state fair. I got a little work to dinner which you come along with me though. We shot three episodes of ashes. And they yes. Every amazing is there and the first one was Kinda funny. I think it was ethiopian cuisine. That's what i serve air. You'll be really skinny. Got but again i. I was if they do have easy. Open presented with this couple of ethiopian restaurants in san diego tasty to reckless and that but in the second place i thought i was going back to the limbaugh. Every damore stops this x. base barbecue now. Once you in it as well really put you on camera a uniform script anything. We faked it. That's amazing it was so fun it was the title of it. I ain't they were allowed to licensed by the state and they they wanted yo with bigger market and got a bad location and look like you're going field to get to sinoe so they finally just. There hasn't grabs her back a lot of land that they decide on it. Got back to filming. Barbecue pits about ten years later. A moment dan. That's not time the ratchet run out licenses every you'll back up there and actually went up to jefferson city. They called it. A meeting in the media was originally scheduled for wednesday and they called me the week before. We need you there monday. And a new something and a yet up there. It was basically a kangaroo court. Said we've decided not to take any more licenses wet to now. We're going to cap it at thirteen casinos already. Are you still in the casino business or you sold your shares of stock at work. I don't work there. I'm not running the tables. Isn't it worked. They're fantastic so one of the things. I love to talk about his his family in barbecue. Because it's so important. I mean you can't do barbecue without family The pleasure of working with your son. Alex the digital side of of Old hickories improving the website improving the blogs starting to put out youtube content. We're really excited about what you guys are doing. When when did alex start working for the company. And how did that. How did that feel to you. Started working at working for the company. in his early teens like twelve years old in the summer a german and were in fact i was very proud of we attacked in we had the the factory was inside of a room. Here where offices are and he'd been around the beach sleeping in clean and he listened in on the safety meetings and so forth and so we had an emergency. The it was hot hot summer day and the electrical connection to the building blew up and alex ran and got the hornet out. Get out to look at that so so heels. And since those days he's been hanging around and working even on vacation regard family vacations. We'd always stop barbecue places the way we went. Alex has been around long. That's incredible and other family members. A restaurant started out my sister about net new everyday's ever. My dad was involved in sales He likely to go out on. The road is well and then my daughter she's worked here and my son in law worked family has been a part of it. We've read their content. Read their books. Had the pleasure of interviewing both mike mills and amy mills and fort worth. During the national barbecue association. They had their annual meeting in fort worth texas and we got to interview. Both mike and amy and mike passed away. Can you say a few words about mike mills. "Anyway. The the barbecue business is different in that. It's a oh. I wouldn't be so simple as to say nine to five job but it's not that constant weekend commit get weekend off or if the weekend is now i mix business with pleasure. We have a lot of our eq- events that we go to getting ready to go to saint. Simon island air later this month and then going to kansas city for an event We just came back from orlando florida all of these events where people are celebrating barbecue now. Fine and it's almost like mixing business with pleasure. It's amazing you've you've built a business where you can make a bigger impact than you could as a single restaurant. you literally. Your tagline of your company is we. We want you to barbecue at your best. Your enable lane. Someone like me in san diego that we're not known for having great barbecue on the west coast but because of the equipment that you provide us with were allowed to build a business and utilize that in a way that allows us to make a bigger impact. We can start a barbecue. Podcast we can make barbecue. Content and somebody in new zealand concede that somebody in united kingdom can see that. It's it's very exciting for us to be apart of this barbecue community that's global barbecue community. I'm so delighted that to have you part of this community and you've got a beautiful future because it by using the internet technology using different media and so forth a the world is is a year oyster. I i appreciate that. And that's the thing that excites us. The most is when we have partners like old hickory or toast is our point of sale company. I mean the the the imprint. That toast has on the united states. Market it's significant. We're talking about twenty six thousand restaurant tours where they're utilizing this technology to become a digital first restaurant you guys you ship. All hickory pits all over the globe. Is that correct. Yes would which mark look market accomplishment. Now that's congratulations on. Well thank you but but those are our partners you know in the and that's the fighting part. Is that no longer. Is it just a vendor relationship of vendor partnership now because of social media we can tell the story of the impact of our vendor partners that it has on our business which helps our partners sell more of what they do because if it helps me as a barbecue restaurant on her. It's certainly going to help somebody over in australia if they want to get a barbecue pit. What which pit do you think. I'm going to recommend tehran. It it's going to be an all hickory pit so when when was the win was the so you go from a restaurant so to a pit manufacturer. When did you sell your first pit. And what was that experience like. Let's say i bent good rate. Now you give me a math test here. I'm going to say not the year but more of the experience. Like i. I'm looking for more of you know when you knew that this could actually become a legitimate business where somebody bought the pit or multiple people started asking you. Hey dave can you make me a pitt for my restaurant. Sure enough well. We sold Few within a reasonable range of cape gherardo this guy people that we knew and said hey try this and they liked it and so it became very apparent. There was a need because everybody was having the same problem of the fires in control and the waste The consumption of wood shrinking on me. Everybody was having the same problems so it was pretty easy to figure that that That's what marketing during this one up here But the Threw me off Anyway that it was over a period of time that we somebody says some one restaurant owner says dave. Can you make me hit the restaurant owner hears about it and then they go. Dave can you make me another way. Went door to door really so you started. Wow where were you. Where is it. Actually you going door to door. Of course with a car attracted it can have votes. that's great but anyway one late buffets Was to go to a trade show okay and we went to a trade show at oklahoma city and we just happened to run into a pizza company that was getting out of pizza and they wanted to do barbecue and It was called pizza planet. And i don't know what the competition was or whatever but they just wanted to do something fresh and new and so they started a company called Crooked smoke house we so a bit delivered it all set up in. we didn't even get back to missouri. They're trying to call us. Okay yes we need. I'll really they last. How many how many employees did you have at that point the depth by just to you got to build these bits faster go start somewhere gotten works menendez shop there elbing that so tastic so how. How many employees do you have now. between forty fifty in between forty and fifty and still. Have you still have both locations or have you moved out of the all those locations. But we've moved all the manufacturing out it to stability by the airport. Okay perfect road and in fact. Our offices still downtown eventually. We'll move those out there. While i'm doing development on the riverfront the rest of the riverfront this two blocks from the restaurant and To fill the gap between historic downtown in the casino. That was another side project at yet. Did you did the casino up here extra extra time or something. Tell me about the casino project. I didn't know you were part of that. Yeah have you no. Why would you wanna casino. I said well the same reason machine. I'm joey rob might. That's where the money you the one hundred percent. Yeah we opened. A sports by much would prefer sportsbook than a sports bar. Yeah one hundred percent. How did you get a casino belt. Passionate harder to build the barbecue business or the casino. Well actually the barbecue business was more complicated than anything. This in a manner of speaking came to me rather than me going up it cow. I was in my office. One day to gentlemen came in and wanted to sit down and talk and okay. What and they were interested in a piece of property and it was a building up the street from where where the offense is now and come to find out they. This is when the very beginning of riverboat gambling.

"Gets young. Oh my gosh. I love that story. I appreciate you sharing that. I mean in the restaurant. Business if you're open for one day. It's an accomplishment if you're open for any more than one day but we all have stories like that and it. It's crazy how much i mean. I always talk about it. You have to run a marathon just to get a restaurant open and then you realize you've run the marathon and it hasn't even started the race hasn't even started actually have to run the business. Now you actually have to get people to come in and pay for all the lights in the electricity on the payroll and everything else that you're trying to accomplish. At which point did you make this shift. Because did you built like the original barbecue pit. That was in your restaurant. That was how that was the birth of old hickory pits. it was So back and there was no modern technology at all and you only had two choices you use barrel or a fit and so i thought well this be stupid if a maryland said beautiful historic building made out of red. So i've made it a the outbreaks in that found some antique Gets the patina of the brexit. Were on the building and made it looked like it was supposed to be there Wide and five eighty and three stories. Tall as billy had three floors on it so he had to go up through the floors with big slough and that took control the temperature inside. That player was a damper. You open it up. It would increase the airflow in in the heat so in decor than new clothes and that would Moderate temperature which worked fine as long as the Remember to do that. That's unfortunately ask. So they the actual true beginning of electric. It's the idea of billy. Bits came about the third time. The firetrucks game on fire trucks came brian down down. Cape girardeau right on the mississippi river and we're belch out all these parts planes and at over the risks of all the other big so start a fire. There was just so much smoke as i read. It certainly changed my hair color cutler. Made you rethink the restaurant business. That's hilarious so did you call the fire department or does someone call the fire department on the phone okay. That's going to be a better idea of the story. Steer panic so then so through. The panic comes inspiration inspiration. I mean. I love how entrepreneur. I think it's you know you never know where the inspiration has to think that you know forty seven years later you have barbecue pits. In all the greatest restaurants all the amount of the footprint that old hickory has on the barbecue world. The restaurant world the culinary world. It's so impressive. So impressive to go to cape girardeau to where you guys. You have so much love for what you're doing for the craft of barbecue and it's something that gene when we first met jean and he told us you know if you wanna learn how to barbecue the right way. We'll teach you and you can add some barbecue menu items to your to your restaurant. I said sure and once we started doing it and started using the old hickory pit to slow cooked ribs and slow cooked brisket. All of a sudden we fell in love with the craft of barbecue. But we fell in love with your brand. We fell in love with the dependability of having something done where every single day we could work on being a little bit better a little bit better making brisk a little bit better at making ribs and over time that story will will go throughout not just our village but all throughout san diego and then now that we're doing media goes all throughout the word world for you looking back seeing from those fire calls to go. Well maybe this isn't the restaurant business. Maybe there's a different business. How do you get from fire call to. Let's make a pivot and let's start to come up with what ultimately became hickory pits. Thank the real impetus was the necessity of perpetuating business on spent a lotta time all the money adnan so the open so it's not like just okay. I guess i've had enough of this move onto something else. It's like jay and so there was a struggle for a long long time to make make the transition into any kind of a reliable. How many years in was it was years. Wave modify here and there and so on delete forty seven years later we still modifying our equipment to tweak it. Prove it all that how did you. What what year did you make the switch where you are a barbecue restaurant to were all hickory. Pits like would no longer a restaurant. I'm gonna take that was about seven years seven years in somebody takeover the restaurant or did you close the restaurant until later i i held onto the restaurant for about Fifteen years okay. And that and if both the restaurant and manufacturing pits and that got to be a twenty four seven hour proposition so i gotta go and And point what is back with the restaurant. Sports develop Casual atmosphere and it's the our review so the situation would have been. I wanna do a chain of barbecue. Licensed or do. I wanted to do the yoga equipment. Yeah my choice was the equipment route for multiple rees because it wasn't an easy decision to the restaurant. Business fun business. And it's a you know you have haven't made a decide year twenty seven years old in a bar. I know i know all about it. So that's kinda can also be a betterment to progress to the against one of the most compelling danes was Friday afternoons because On friday afternoon in the restaurant business. Well everybody i knew was getting dressed up. I was stressed out. That's good. I've never heard that before is absolute truth of the restaurant. We talk about our ongoing thesis and that is digital hospitality every business needs to be in the digital business and every business needs to be in the hospitality business. What exactly does that mean. Well we are barbecue restaurant that became a media company for thirteen years. We've been running a barbecue business out of a very difficult location in san diego but because of the smartphone because of all these different apps that have been created we've been able to share our story with so many different small business owners other people that are doing an incredible things in the barbecue world. Other people that are doing things podcasting and other people creating content and sharing stories about their business on all these different apps so every single week. We'd like to bring on people that we are in that inspire us people that we admire. And if you listen to this show you know that we care a lot about branding. We talk about kelly. Barbecue kelly barbecue media digital hospitality typically. I'm wearing a kelly barbecue media hat. But today i have an old hickory pits hat so the only reason i do that is because today we have a very special guest and it is the founder of all hickory It is david b night. He has a barbecue hall of famer. He has been in the barbecue. Business since nineteen seventy four supporting barbecue restaurant owners caterers pitmasters culinary schools all over the globe. They've built an incredible business. And i had the fortune of going with my wife receipts a and gene Back in two thousand sixteen. We actually went out to cape girardeau. We got to shake hands with david. We got to meet his team. Luke gave us a tour of the old facility with the original old hickory factory. Which i believe is still working but then we also got to see the new facility that they were building out because their business was booming and anybody that's been in business for forty seven years has a wealth of knowledge so we can't wait to To ask him questions so that you guys can learn and hopefully implement some of the things that he's learned to grow his business into your david. Welcome to the show. Thank you so much this great here. We since nineteen seventy four cape girardeau. Can you bring us back to the original restaurant that started started. The company certainly again. It's a the original. Restaurant is a historic building built about. Oh fifty years ago and it's right on the mississippi river because of that Since the time the building built a huge concrete floodwall was built in so the restaurant is situated right between the big opening in the concrete wall. And there's another a block away that so that the people can actually walk out on the riverfront and that sort of thing but anyway the building had been abandoned for about twelve years and there is talk about me. Torn out and that that would be a very tragic thing that resource like that historic building. Turn it into a parking lot. And so i've made offer and was able to buy the building and just started from scratch. Rehabbing have had. They'll twos not wiring and no of real plumbing. That would sit good. So we really destructed down sandblasted inside now tech point all the bricks so it was right at quite an undertaking dude. Take this building for the been abandoned for so long to get it up and running but we had started in july and we opened in december. So were you in the real estate business or the restaurant business. When you made the purchase. Neither one point. I was a teacher. Okay perfect so you're a teacher. You decided you didn't have you had enough time. You're three months off that you want. You wanted to get into the restaurant business. Yes that I went to school at arkansas state university and graduated with the mba and got a job teaching marketing and management at jacksonville state university in alabama. Okay and i did that for two years. And i thought well i kind of tried to try. The real world studied business and just to keep talking about. It is not quite as fun as excellent and so be held decide. Yeah a restaurant says first business into a had grown our power you at the time david l. Let's see here empty handed years old. Now let's see Forty seven years ago. And i'm seventy three so you do the math forty seven. Seventy three whatever he So forty seven years ago. Forty seven four okay. Nineteen seventy four. They up and So back in the barbecue is kind of a. Oh that when food cuisine it was on the other in the town or not nearly like it this now but i- grown up at a town of popper bluff. It's about an hour and a half k. Through m best friend His family had barbecue restaurant. I was just fascinated with how far. How far was the barbecue restaurant from where where you opened up our half dry. And so that's where i grew up and but folks moves from up above to near cape gherardo when i moved up to college tape each and They have moved close to date. And i was visiting and i saw this building and i just had one of those eureka moments to make this work. So it's kinda leap of faith. Faith getting into the any business especially the restaurant business but that is one of those stories at as happy yes absolutely. It's really been. Why were you married. Were you married at the time that you know years and years later years and years later. Okay so you get into the restaurant business. Are you doing breakfast lunch and dinner or are you just doing a barbecue. What what was the the initial. It was really lunch and evening meals lunch and evening now and we had a cocktail now onto the bar area and very casual atmosphere kind of one of those places scuttle historic theme to it adding dictators and grabs of the cape dorado area and oh antiques on the wall. We had some old guns that were hanging on the wall of now oh a moose and wild lower and the places got a decorated with a belly stove a lampy adam. Okay so it was kind of you know trying to have something rather than just walk in and tables and chairs sure you wanted to. You wanted to create a hospitality. I mean we're in the you want to create a memorable moment for someone. Tell you memorable moment was opening day of the restaurants helmi. I'd love to you know. This is a little embarrassing usually are in restoration process We had sandblasted the building inside and out and the editor a tall ceiling but it was beautiful. Know for the beat it would a ceiling and that and So we were the the restrooms right across the street not only from the mississippi river but also the burlington northern railroad and so opening night. The just a train. Jane cer- every day jamie was gonna shake to building a little bit there. You go little ambiance and it was on second floor started directly up to that ceiling now plates and really.
