"Of experimentation at innovation. Renan is colleague David Hilbert has now have now Zilder have released a book that sheds light on their clever approach to cooking is called the Noma guys to fermentation among equals, Marcus hippie, spoke to the authors little earlier culture that spans the world, and in some places, it's very active and alive and incredibly sophisticated a place to note is Japan with measles. And sources are just mind boggling. And we started to learn from that and slowly. But surely became that thing that gave no mites flavor. But nobody could see what is it about firms? You like so much what other benefits of using them? Like, building blocks. It's like when you build a house you need foundation foundation. Everything's gonna crumble. And so the foundation in cooking is all the ferments that we have so way for the listener to somehow maybe understand a bit better. What from -tations can do for you cooking is when you have sushi that's an easy one. We all have it. And it's okay. But as soon as you dip it in your soya sauce, so the chef puts soya sauce. That's when the extra magic happens. And that's will we do. That's why we do it to bring that extra little thing. We many many hundreds of things, but we'd probably have a good hundred different potions liquids pastes that we use throughout our cooking all of them different all of them quite unique. And they all at that little extra things, and you can see it most of the time probably won't be able to taste it unless it's. Not their convenience to have something like that that brings more taste of the food in a way it makes cooking easier. Absolutely. Sometimes that we have some of the most simplest things that we serve people like, you know, that's very simple. But in reality, the might be seven drops of four different things on that took six months each and five years to develop and you know, through that hardship of work, you're able to then some neat cook easy. If you will fooding just a minute, I'm going to continue with you David now. So David judge of Novus feminization what exactly happens? The from addition lev is this entity this kitchen or department that Rene really thought was essential. It wasn't enough for us to to pardon my French like half ass these things, and when from started even before I arrived at Nome out almost five years ago now while we did it we did it in a very romantic way. And even you know. Four years ago when I began you would see bags of things exploding in the staff canteen or in the addict and our dry storage leaking all over the place while at work. You know, we'd always knew that we can do it better in the summer of two thousand fourteen the first version of the fermentation that was built out of shipping containers in the parking lot behind the old Noma on the harbour of Copenhagen. And that was really where it kind of grew to the next level when I began in there when I started when I moved from the kitchen into the lab, this was a place where we had a team where we had a scientist and clever cooks myself included that we kind of push these things forward. So we were tasked with producing all these products for the restaurant, an environmentally controlled chambers. Humidity was just right with the temperature didn't fluctuate too much, and then also tasked with just cure research. You know in advance of going to Noma Australia Rene was like we should figure out. How vegemite is made. Because that's something we should take with us. And so you look through the lens of science to understand these things and make. Make the make sense where we are. And since we reopened Noma its new spaces Noma two point. Oh, lovingly called the fermentation lab is kind of also been born again in in a new facility. That's so will acquit so well-designed and everything just worked so smoothly..

"We have this thing where we took about we talk about heartbreak. And we talk about that. We talk about hot sickness when you're hopper can someone and then you took about life sickness the sometimes you can just be down with life. And so we have the singer seller record each Holloway will always side will ask you is there is it heart sickness or is it like sickness, and we figured it out because we've both been for life sickness and we've been through hot sickness. We've had a conversation actually being a life sickness is even worse because when you live sickness that is your life every day going frenzy math leaving your tire. Yeah. Definitely even out of you. Even side of you. That is indeed. Yeah. Yeah. And so heart sickness and heartbreaks horrible hot significant kill you. Eh, you know, die of huskies. It's just so that s need to lie withstanding life sickness. You can't even tell someone be strong because that is their life. Yeah. I just David Hilbert. They sell to this as elements in your life that you need to really deal with. Yeah. And there's the pause Mckee sake where the toxic relationships. In a word conversation. Driving people the people into your life. Yeah. This is a real hot and hot sickness concerns. The life the heart. The love of another life sickness is all you. You can't even say, it's because of another you can't even point to somebody life sicknesses or you and you have to be right review until we realize that actually we are the center of a lot of thinkers, who when you think about lifelock is just we are the things happen to us. We happen to. And it's about finding that balance as well. Because we can we let the same person in the same person says web and say of the same thing happens all the time all the time over and over and over, and until you learn that you can say, I don't actually no I don't want that for me. Now, don't need me. Listening portion foundries use at the boundaries. And this is what you want for yourself. That's when you can start. That's what you saw seeing the drastic changes. You're like, wow. I actually I set my life up in this, and I can do that. And I kind of stress to you how important boundaries. Our remember those one nine long ago hours crying, my eyes out if some stupid matter and gossip to me rifle where are you boundary? High boundaries of where are your boundaries because boundaries make you? Is that a second reclaiming of power? You don't like to do it. Because it hurts. It hurts to out those boundaries it hearts to draw that line to be like, no, you will not come ever. You will ever the false were at the at the passan. You will not come through here. And when you set those boundaries they hut because at the end that you want whatever is to come through you want crave for realizes. What what you want is not always good few precisely seasons. Sometimes don't do it. Sometimes relax put those boundaries incognito in called negro it won't hot. It's funny. L hut for like a few minutes few days a few months, but it's a reclamation of power. That will that will change your life. And there we go so Sipos boundaries, girl, baby. Boy, your your hundreds in control the world Guagua around. But anyway, yes, that's the binding binding. I can't wait to redouble. Bridget. What become I'm gonna discuss next. I'm so lost some time yet. About one is cooled. Silence..

Guitars, go ahead LeBron Qatar who'll United breaks, guitars, them dragging some nice Asian-American grandpa down the aisle is he kicks and you're like that beautiful guitar. Their videos called United breaks. Guitars, because United breaks guitars, it'd be a good name for of Bandra. There is the United breaks. Guitars. I don't know. The clash broke attires and we like them. Why are we pro the clash anti the United because United to doing it in secrecy United is doing it like in their strange paradoxical world of surprise regularity and there's no amazing photo of them doing, oh, that's the thing when the clash breaks guitars, like it ends up on elm covers people copy it for decades. If there's some photo of United baggage worker just Smashie ATar we would think they were kinda that asks, we'd be like, hey, that's pretty cool. They break that right there. I would fly United again if they had baggage handlers just out on. The tarmac crash. What if it's your luggage, you're like, I almost ocare. It's so Coors. Another one. In the world of theoretical mathematics. Oh boy, the most up the most famous example of a full hotel. Someone arriving at a full hotel. In fact, not even in the world that critical mathematics, I'd say in all fields in all human endeavor and experience in our future lanes, the most important and canonical example of someone showing up with a full hotel is the Fadh experiment called the Hilbert hotel because it was dreamed up by German mathematician, groundbreaking, German mathematician, David Hilbert today. David Hilbert is best known possibly for his set of Twenty-three problems, twenty three unsolved problems in mathematics that he delivered in nineteen hundred. It was kind of a challenge. It was like, here's what we need to do. And in fact, it came true of his Twenty-three problems. Ten of them have since been solved in the succeeded century. I'm sure they're all twenty three or salt in your time future listeners. But in our time than solved, seven have partially accepted solutions. There are fewer people are like, well, he he didn't really make a good problem. They're like, that's the thing you can come up with the right answer, but if you proof is bad, nobody accepts your solution. We're at such a high level here that the best mathematicians in the world will disagree about whether you're proof is good or not. So who knows? But they're still three or four that are still outstanding. In our day, the Riemann hypothesis has not been cells, and I know the future lynx, just laughing at this because that's they get up every morning and solve the Remond this. That's how the back of their grocery list. That's how they're little wrist. Born computer doors are powered Hilbert. Has also well known to me for the huge floppy hat he wears in his portrait of him. That's everywhere online. Oh, now we're that we've arrived at something I can talk about. Finally, yeah, he's kinda look. It looks like the maybe the spinster governess in an EM forced or novel or something Embiid. He just had an incredibly small head and it's a normal hat. It's hard to say. He looks like..

"The sunday morning and here again is dr david hilbert so we've just heard one of the more startling stories i've heard in a long time from the person who experienced at least you told us her story of her cardiac arrest while swimming in in cambridge wisconsin and how her family and base their dad or sister her husband saved her life with cpr and she had a cardiac arrest i'm going to give back to a lot more from alicia herself dr bart i want to ask you she had a cardiac arrest while swimming she used the words ventricular fibrillation what is that and if you could distinguish that from a heart attack we actually have a text message asking that question so a cardiac arrest is when the pumping function of the heart stops so the the function of the heart is arrested so when the heart stops pumping there's no oxygen getting anywhere and you know you can only stay conscious for about ten seconds without oxygen and things rapidly go down from there so when the heart stops beating you rapidly lose consciousness and if nothing else happens you know you'll it'll be fatal now the difference between a cardiac arrest and a heart attack is important a heart attack is caused by a blockage in the blood vessel of the heart and it can cause damage to the heart muscle it can cause pain sometimes it can cause a cardiac arrest but not every time so a heart attack can cause a cardiac arrest but a cardiac arrest is not the same thing as a heart attack so at least you had an electrical problem in her heart that's right it's an electrical problem so there's the heartbeats every every moment you know usually seventy or eighty times a minute and it's all run by an electrical system in the heart and when the electrical activity of the heart becomes disrupted in some way especially when it involves the bottom pumping chambers of the heart that can be ventricular a cardio or ventricular fibrillation and when that happens the pumping function ceases and people collapse it seems the number of things that happen to a leash to allow her to three weeks later you were back to exercising or at least doing cardiac rehab you're back to your job as a nurse you're hearing a radio station talking about it just a year later and you and for those of us who are here with you look like you did just fine with that there's a few things that allowed that to happen i think a lot of a lot of events and we're going to talk about some of those in the second half of the show but few of the biggest things that allowed that to happen was somebody did cpr somebody shocked her heart there's at least two things can we talk about either one of you let's talk about why that's so why it's so important let's start with the actual cpr alicia maybe you are why is that so important and then then dr bart will have you tell us why is the electricity so important sir so immediate cpr is important so we can deliver oxygen to our body and our brain specifically i kind of refer to it as being someone's heartbeat you are buying when you're performing someone are performing cpr you are being someone's heartbeat you are giving them oxygen you're acting as their heart because it's nonfunctioning for them right now and when you do cpr now for bystanders it's so important to know that you do not need to do mouth to mouth anymore it's strictly just hands only you wanna push hard and fast and pushed to the beat of the song by the bg staying alive so don't be afraid you do not need to give mouth to mouth anymore if you're a bystander so and you just i i like we use the staying alive thing a lot the point of that is that it's fast one hundred to one hundred twenty beats per minute is where you want to be and you wanna push down to a depth of about two inches into their chests so let's say you know people i remember the.

"Give you one three and five box and if you don't think about it right away or maybe there's something like gay i don't know why this would happen but if you thought a week later you know what i really liked the fact that austria was my obre driver and i think i am going to tip him you can tip up to thirty days later after your trip that's good because i had good oftentimes i'm in a rational whenever i look at my phone then next day it's like here's a recede i'm like oh would i forgot i ask you a question yes is just you and me no one's listening hunker when you say you get in a rush rushed you mean you're drunken you for no no i'm not twenty lamai body but if i have if i plan on how the wine glasses why jenner i always take it over or adler left joe has one glass of wine and i'm not doing lhasa i was not doing the last of the david hilbert needed to do something drastic and that this adding tip option is a drastic move for the company which i don't i don't see he it that way i don't i don't see that as a drastic change to try to rebuilds of it's a minor change to rebuild some of their reputation but i don't see it's a travesty necessarily builds the reputation it's more for the drivers obviously you know they're the complaints that they've heard from their employees basically and there were plenty of driver actors plenty of drivers who complained that they were not being treated well by the company that they were ganda the money that they thought this they deserve i'm not i'm not a huge fan of this actually i i have tipped i do tip on a good unagreed right on a good experience great person but you know these tech companies the same thing with like a amazon and whole foods know these tech companies are changing the game now yes and over change the game when they came aboard with this is not a taxi it's this whole new set up that they do and when they started they set a precedent there is no tipping it's prepaid on your credit card all this whole cashless transactions cashless transaction i would be much i would much rather have the note the price of my ride.
