Marketplaces Kristen Schwab checked in with two of them to see how it's going. Walk down Franklin Avenue in Brooklyn at night, and in some ways, the new normal doesn't look quite so bad. Franklin is like one big, socially distanced outdoor dining party with table spilling onto the sidewalk and into the street. Sounds and smells of different restaurants bleed together. That's like not crazy secret is like if you go to Japan, you go to restaurant that's very old. And there's two people working there. It's like husband and wife or whatever, and they can charge a hundred bucks two hundred bucks. It's just like their labors so little these the best products. So, like it's hard to compare it to like the restaurants. We worked at our like high in restaurants like thirty five forty people on the line, or whatever. So it's like it's like the less people touch food it's can be cheaper, obviously, so. On the flip side at, like, if you're sitting at the counter at Combe be, you're basically watching someone just full-time making thumb lights. Yes. That's a station. Now. "So these are generally the three types of strategies that we employ with an entire team of experts both in quantitative structuring machine learning and trading to pull off the type of positive carry positive volatility exposure, we seek to create it's not easy. It reminded me of when you're talking about it a couple other examples, you know, investors to famously kept a lot of the writes his movies in in rocky. But also the Facebook was the Facebook guy that like did the Facebook mural equity in the company. It's kind of a fun life analogy. It's looking for times in life that present you with really big potential outcomes as far as long volatility in your life. And I think that's a actually a good analogy. I wanna do a couple shorter jumping off points. Our good friend. Toby who's been on the podcast before listeners one of my favorite podcasts. I was kneeling him. I said give me some good questions to ask Chris. And there's a couple of questions that I don't even understand really what they mean. So feel free to talk about these or we can skip if they don't make a lot of sense. I won said ask you about the Japanese vol monster. What does that mean? Dashi notes. So so, you know, the shortfall trade has been something that's been going on in Japan for very long time. So it's very popular because rates have been so low in Japan, what we've seen for over a decade has been these reductions, which now being replicated in places like Europe, where what you do is you sell off upside exposure, and you sell downside exposure to the market in exchange for coupon. They're not pitch to investors as Vall trade. But that's all they are. They're pitch to investors saying, hey, you know, mad would you like to I'm your wealth manager? Would you like to get a five percent coupon and if the market drops twenty percent, you'll own the market, and if it goes up ten percent, you'll get knocked out of the coupon. Paying instrument this is a structured note, that's very popular in Japan as an alternative to fixed income, and it's all it is the big football trade. But when these strategies on wind they gonna wind and quite violent fashion. As a result, we see odd behavior. Japanese volatility where there's extreme all of all massive spikes or strange occurrences, where spot volatility and the market go up together. So in many ways, the Japanese vol monster is indication of its now happening in Europe. And it's happening. The US just the example of where these financially engineered shortfall strategies become dominant and actually drive the overall flows market. You did a pretty good wealth manager voice who's trying to sell structured products such products in the US have a long history of being really expensive and fairly convoluted ninety nine point nine percent of which you know, the average retail investor has really no business owning whatsoever. In general, usually is excused to be illiquid in charge. You high-seas? I'm gonna ask you one more. And then we'll start to wind down to some fun questions to more phrases. He mentioned that I again have no idea where you're gonna go with either of these one of which is the concept. Volatility as an instrument of truth or the concept of volatility time, you can feel free to answer. Both those either those are neither. But what to either of those phrases mean volatility is instrument a truth and the concept of volatility time, you know, it's funny. But then I get to the point where there was just so much food all the time. I put up to one point like we weren't supposed to eat. There was so much. Andrea tell you because she was the, you know, they would come in in the mornings at idea. It was such a man what in the mornings or two. And Finally, I think like rats and ants and everything down there. We would we ate a ton. Yeah. There was so much food in that studio. Yeah. Yeah. So we so we we are very choosey. That's why we're you allow in. Yes. And what we're saying is we are grateful for the wonderful items. You have brought in a studio you have been given privilege to kidding. We've seen bacon. Truro? In the year. You were there. Yeah. I love the big was it was Jason just like a big insurance. It was this explosion in your mouth awesome. Kind of made. You take a need such it truly. And I understand the take a knee. Now that happened to me. I was the one in the corner going all I can do this. I can do this rebounded. I did. But you what were the Taliban? The it was like bacon lollipop and the liquid nitrogen to freezing freezing it, and it was candied bacon on a stick beautiful display where it was. I mean. We have a we've some awards categories. And so we give awards for the best visual presentation as well as the most creative dish and this year the best tasting dish. We did like a vote by text kind of thing where you could do a people's choice award. That's really fun. And the chefs get so creative with not only how good it tastes. But how it looks? They've they've had sweets bars where you can roll your bacon ice cream in crushed orios with little bacon. Pigs in them. I mean. Well, okay. No. The first I had a bacon shake as like. Yeah. This pretty much needed to happen in my life. And you have to have that little extra wide stroke. Yeah. Somewhere between a low a bubble, tea and. The little bacon. Well, the bacon bits are better than those gelatinous things you find it. It's a welcome. The the bubble. Teas you described it. Sadness. Bob. Look, this is something went turned bad much better. Just suck up a piece of bacon. And then just say thank you each time. Thank you. Do you have any standouts over the last ten years of? Yeah. Yeah. I came. You to be like a dream. So yeah, yeah. Yeah. Yeah. Yeah. I I do so for many many years to we actually in addition to the whole festival, which is fifty different chefs each session one hundred and fifty plus chefs we had an amateur cook off. So we had people who are vying to win free tickets and compete with some of the judges for the best amateur bacon. And we've seen people make bacon ice cream cone ice cream cone made out of bacon formed and cooked the bacon stuffed bacon was probably the one that blew my mind that was five four five years ago. Stuff was a little piece of bacon, stuffed with bacon, and then sous vide cooked perfectly to perfection, and and the control I mentioned and gosh, we've the sweet side of it. Sometimes gets a little bit. Really kind of lateral lies, and you can see all the places that people's creativity goes when they start to use nitrogen and freeze dried this put it as a little bit of topping. I would say some of my favorite stuff out of the event has actually been the stuff where bacon is sort of in there. Yeah. But not necessarily the thing that everything is revolving thing, that's like oh made it twenty percent better. Whatever that dish was like that little nuance of bacon. Like this these deviled eggs bacon on top. That's the reason. I asked my next questions because it is like a six like a thick slab of bacon and eggs and like a thin thinner slice of bacon. Do you have everyone using the same supplier of bacon for bacon fest? Provide new skis bacon. Okay. That's where we get that four thousand pound number from because they've donated it for years, but we don't force them to use it. They can use whatever they want some chefs cure their own bacon. So they're going to say, I'm bringing my coffee cured bacon special event or this or that? But yet, but most of it is new skis because they've come year after year and just they send it to each time. They can do whatever they want with it whole slabs sliced, I agree with you there. I mean, the dishes that mean the vacant euros in the suite or really cool to but you're right. Some of the nuance dishes. I think there was like bacon. Souffle are. I just remember him. Cooking something it was almost like a stew, and they're just really popped because then you get all the different flavors in the dashi. Bacon. Dark was it. Yeah. Last year. It was there was it's interesting year to year. How you see a little trend emerge? It'll be very sweet one year. It'll be there was Rahman dashi a lot last year. They'll be like chicken fried bacon. It's funny because the chefs don't I don't think organiz that way just kind of trends and Honey didn't Honey butter fried chicken winning award three. In a row, they have one of the most creative use a big if they win this year. We're gonna have to name a an award after them. So that we can then, you know. Bacon. Innovation really fried chicken. Yeah. And it was for like a beacon stuff, mashed potatoes. And then it was it wasn't fried chicken related either. It was it was the original impetus for bacon fest. Did you feel any to raise bacon awareness, or where did this come from the story? It's a legend. Legend already. See let me sit down for this. So the story goes the Neo Futurists did musical performance. Ten or eleven years ago called beer colon the musical, and it took place was very location specific in a brewery on the north side as wonderfully creative puppet musical about beer, and my buddy. And I started who used to compose. I used to compose music for the theater, and we thought what could we do a music musical about that had all these kind of logistical steps that we could create songs about just like this beer making process. We just wanted to directly rip it off. Be so fun. Beacon, Colin the musical. Start out on the farm, and then we'd beat the pigs. And then, you know, all this stuff, and it got more. And so we thought well that's not as fun. You. Maybe don't want to sit through that musical. Maybe we should just throw a bacon festival news. Just eat it. You know, not really about it. Yeah. So this was a later night, you know, at the end of the of seeing the musical. So we called our who the third partners who runs the event with us and said, this is a good idea bad idea. And I think is good idea. We'll talk more in the morning that was really where the idea was born. And so we started out in the public, and we cleared out all the tables over to the side, and we had twelve chefs in the public in two thousand nine come in with probably like fifty people. And here's the thing is that you guys also do a great thing for the Chicago food depository. The greatest Cairo food depository. You've raised almost a half million dollars four hundred and forty thousand forty thousand over incredible. Yeah. That's amazing. And that's through donations from the event. Our guests come in and buy raffle tickets. They bring canned food we do host food packing drives through they confess. So they've been fun. Win win win. Yeah. Yeah. It's it is a triple win and not to mention. There's amazing cocktails. They confessed to I mean. We've had some really great mixologist there. Yeah. Just some really fun. So it's become such a big thing. And yet I can't after hearing that wonderful story. I can't help wondering one of these years. Are you going to put on the musical? Confessed had the bacon. I wish my my partner. Arnie we're here to to chime in on this because he would be the one that would have to really make that happen with me.
