I think it's really important to get out there and see what what there's a doing. <hes> I have a young family at home now. I'm not able to do it as much as I used to but I have people on my team that that always going out and and checking out the scene and let me know what's going on when when I do it <hes> <hes> with a new seven-month-old baby in the house of the moment so I'm always looking you know the operation <hes> maybe I'm not timing how long it takes for the drink to go from in order to the bar and back to my table and our restaurants yes but went be quite that extreme and other people's restaurants but I but I but I'm looking at all those details and I'm just saying what you know. At what level of service are they <hes> <hes> because we always trying to be better <hes> we always sit the by very high fair ourselves and I it's. It's always difficult to get there. <hes> it takes a lot of work to to to get a team to be working at that level that we would that we won't you mentioned that team in. We're fortunate enough to be in your your recently new beautiful offices here. There's a big group of people outside. How many people are currently part out of his team here in saloon right now tire operations around three hundred fifty quite a lot of people to <hes> to get to be productive work? What is that like managing group that big <hes> not easy actually he? I understand you're doing a great job but I really truly got to live that. How do you find those people? I'm thinking about our waiter this morning breakfast Alberto who we had a number of years ago when we first visited here and you can see it. He truly cares about how everything tastes for you. How your experiences? How do you find those people we we interview them? We ask them questions we dig in we dig and because it doesn't take long before the true core soul of a person comes out and we're looking for kindness. We're looking for people that truly truly have that passion for service and that is one of our core values by the way Pesha Passion for service. I mean it's you you can see it across all your hotels restaurants. I'm also thinking about top talent and the dinner menu by Paul Bentley which is a world class chef that you guys have partnered with. How'd you find talent like that? How how do you envision someone like that creating a menu for your restaurant well <hes> look? We learned philly quickly that we're not none of us now. Group <hes> well now core family you know the the the founders and and none of us are shifts. We're not trying shifts chiefs and we had a vision of what we will wanting to provide and what we wanted to do but the basic reality is you have to find shifts to join you on that journey and we were very lucky to be introduced to pull at the right time <hes> he <hes> he had fairly recently come to bloom to do some consulting for another <hes> business end and and <hes> we we hired him to do some consulting for us as well on just improve menus and and just work on on the details and <hes> the partnership that we have now <hes> just works really really well. It's polls from Australia. He's from Perth and we we we come from a similar coaches so we just get really well and there's just no no issues any any anytime I can pick up the phone until the Bowlen's as you know. He complained to earn anything that I say that we need to change your improve. He's he's just completely open. You know <hes> certainly not one of the the the shifts that has the big egos etc.. He's very down through with and he's like we are. We just want to provide the best we can for guests and that's that's. How you guys do things well <hes> whenever we see the need you've gotta stay fresh but then there's times when there's a dish it just works? It becomes a plastic I think I think you know one of them that you you fell in love with right a few years ago. Yes it. Luckily we had this last night and then we're fortunate enough in the rumor staying in <hes> there's a book of a Menu Book and so we founded on the page I obviously snapped the rest of the recipe yes of course you sit and things at work and you just WanNa keep it there <hes> and and then there's always a little bit of creativity in rotation and try new things as well. You got to keep it fresh as well so it's a balance between the two yet balances is one. I'm sure it's constantly evolving you. Guys are trying to figure out in that core a group when you guys are are discussing plans. What does that look like? Do you have a big whiteboard like we're sitting next to here where you guys are mapping out. This is what we might WANNA try. How does that look for you? Guys <hes> look nine. Look them. The restaurants has a different feel different vibe. How strategic is that when you guys are opening? Do you want them to have a completely different feel. Yes we do. Boutique hotel is all about <hes> being individual and being creative and just sort of gene outside of of the typical traditional hotel concept which is <hes> a little bit cookie cutter <unk> when you're talking about the the Latch Hotel Brands <hes> for us. It's really important to to have different <hes> feel and concept and and aesthetic at each of our properties <hes>. It's something that evolved evolved just happened. <hes> we've got a different story behind each chevelle properties <hes> and that story Oh that series of events or that <hes> location itself <hes> dictated -tated <hes> which sties style or concept of hotel <hes> we were going to create on that location even into Luma four properties here. Every location is very very different from the other <hes> so at needed to be a different type of hotel on each different location <hes> and no there's no master plan a lot of it. Just happens just evolves. We get together and we talk about you. Know what sort of feel does this property. Give us an and what you know what what does that lead to with with creating the building in creating the hotel concept a thinking about your childhood and the details and I be curious to know what little details across your properties that you guys do or some of your favorites well. We tried to host Al Guests in a way that truly shows that we care yeah. We want them to be in our house. We want them to feel like they're in our in our house <hes> so I didn't know the the coffee delivered an thermos to your door in the morning tonight so you don't even have to make it yourself in room where you don't need to go across to the to the restaurant if it's for the sunrise with restaurants not even open yet. You've got a famous of hot copy sitting at your door of your hotel room. <hes> <hes> an equally at the end of the day when you get back to your room as a little fem of hot tea waiting for you with with with with a <hes> a little turndown service <hes> chocolate etc those little details sales are about trying to make people out guests feel like they are being looked after kid for at one of the friends houses or an someone's house is that the key experienced appearance the key feeling you want guess walking away with that. They just spent a few days at a friend's house absolutely absolutely and I think it gives us so much pleasure when we might read reviews <music> or hear directly from our guests that that is the experience that they have had an they leave with and that just makes it all worthwhile when you hear that feedback. We just don't get caught up in the hype of at all <hes> at the end of the day. If we're delivering the experience that we want to deliver for our guests and we don't get it right every time of course when you're dealing with with people you know every person has a different personality in with within that personality is this is a whole series of moods that change either by the hour. Oh by the minute sometimes so <hes> you know it's it's challenging to to get it right every time. Sometimes people just want to be left alone and not talk to anyone and other times they want full engagement and WanNa hear stories and that's that's the key to really been on the top of our game as to be able to see read and anticipate. Pay The need to vow guests running small boutique hotels gives us that opportunity to do that and that's. I think we're very privileged to be able to do that. You can't get that level of service in a hundred plus room hotel you you just cannot <hes> I mean as much as they would. Many companies would like to <hes> you just cannot see an have that intimate relationship with each guest. I whereas we try to we do our best. We don't get it right every time as I said but we try you said anticipate and I'm thinking when you first started you must have known nothing about opening a hotel so in terms of learning more understanding anymore. How comfortable are you now does it? Does it feel much more natural for you as opposed to when you just started well after the number of years that I've been sort of involved in this industry now <hes> certainly I've learned a lot of lessons listens along the way there's no doubt about it and but even when we first opened <hes> I just went back to what I learned as a kid and that's just good old fashioned hospitality and looking after the guest. I'm thinking of a young entrepreneur. Maybe just starting a business running a business what you want to instill upon them what what's key. I know you hit on a few things anything else you really important for leading a businesses successful at that <hes> yes i. I think it's really important to always have a plan. <hes> have a plan even if it's just a basic plan but have a plan <hes> I think it's really important to you always be honest <hes> with yourself <hes> and of course with be honesty is is is important across the board but analyzing data as I think is very very important for business us. Sometimes that helps you navigate your way through <hes> tricky decision that you have to take let let the data show you and <hes> and that's that's comes back to that being honest with yourself. You might have this passionate sort of vision but if you have to honestly look at the data and it tells you that you should not be hearing that any further you've got you've got to listen you. It never rains in lieutenant desert in the Middle East so <hes> fortunately we had passed a bit when tent about about thirty minutes prior and so with wave to them as it come by and thinking back they must've been thinking what is going on here where these guys go into so we get back and we go to visit them and they were incredibly. We weren't allowed to be in the main <hes> sleeping quarters with them and if the family but <hes> we were very very happy to be in with the goats and and the next <hes> the next morning <hes> the it was a trader I think coming to check out the goats and by some of the goats and and he <hes> kindly drive us where we want to go the next morning where you guys even headed so what in the right direction not not really not really so those are the sort of moments you think maybe that was not such a good idea. I'm getting butterflies. You telling this story thinking about the fear you guys in absolute terror when you got the top for that peak at and look out and see that you're nowhere where you thought you were ought to now. I guess we were <hes> young and stupid and and we didn't really think about the consequences as much as we should have so. Actually that some the first time <hes> it's this is a an interesting story as well on my journey from from that started in Canada and ended in Bolivia. I I flew into Cancun from from Miami. I had almost zero Spanish and I knew that I needed to learn some Spanish so I'd heard that Guatemala was a good place to do that and I had heard that. I just bought some property into loom Di Dino I wouldn't hit yes. I know it he said well how about you know you come and do something with me and <hes> and we do a little hotel or something and I said well hope you on the next plane. There was no question in your mind. Oh absolutely not no absolutely not it was like a dream to to learn men to <hes> to open a hotel <hes> with my brother-in-law did you guys actually have much plan about where the property was going to be what the the hotel was gonna look like or was it more. I think this is something we could do. <hes> it was more very spontaneous and <hes> and <hes> it was just a series of events that led us to <hes> bill what we did with Ms Inane the first property <hes> <hes> and the concept that we created etc etc.. We did a Thai restaurant looking back was probably the most crazy thing to do you know coming to Mexico to set up a Thai restaurant but and and two thousand. Undimmed <hes> four two thousand three I've been living in Sydney in previous to that just on a big trip through Thailand and I just fell in love with the cuisine the food the Thai food and and living in Sydney at that time it was just like it was the haute of cuisine. I mean every second restaurant that was opening was tie so I thought right. Let's do it and I thought you know. The climate's a similar tropical A._M.. Surely we can grow <hes> what we need to for the ingredients that Missingham show we can engro them and that's exactly what we did speaking of food. Do you have a most memorable meal or dining experience throughout all your travel. Oh that's a really difficult question. <hes> there's been so so much the variety I think something what does what jumps out at me I think probably dining in the digits of Morocco and and the Moroccan food and having this banquet <hes> that was that was one of the meals that is in when you ask me that question that jumps to mind. I just wanted to see all you're responsible. As since you've been all over the place I wanNA jump back into you coming here and opening this hotel and it appears like this must have been a huge frisk. Did you view it as a risk <hes> personally no because I was not financing it helps yet. My brother-in-law was the one he was the he was financing FFOM. It was more of an adventure in an opportunity to to get stuck in and apply many things that I've learned and had a lot of freedom to create the concept and and <hes> create what mezzanine Stiller's today opportunities in these challenges. What's it like opening up a hotel on the other side of the world? I just need to know when you first started out what are some of those big challenges adjusting to the culture in any country when you're actually taken a decision to live there and to actually try and be productive and get a business on the way <hes> was by father the biggest challenge <hes> we arrived in tiny little town to limbs different place as to what it was then <hes> in two thousand four. It's it's growing a lot in a lot more is available now back then <hes> just just finding what we needed to run a business at the level that we wanted to run it. <hes> was difficult <hes> adjusting to the cultural differences of course you know. Well News Ellen Little Island in the middle of nowhere our closest neighbor Australia is a is a three we our flight away three and a half hour flight away <hes> so that makes us very <hes> very isolated <hes> so when you there you there which is actually why a lot of a lot of Kiwis <hes> go traveling for long periods of time because when you leave you WanNa make the most of it as well <hes> very much grew up <hes> it's New Zealand is a colony from England England and it kept its pioneering spirit for for for for very long time so I grew up <hes> surrounded by a community of people who just <hes> my family and their friends etc that very much get in and get the job done. Get your hands doty type attitude right. Nothing was ever too difficult. <hes> you just got the job done. You mentioned the hard work and it's so so obvious seeing this in in your hotels restaurants here. Did you know you're GONNA go into the service industry. I knew from a fairly early age <hes> that I was probably GonNA end up in the service industry. What about that? How how did you know from such an early age? which was there things you saw around the house dinner experiences anything like that yeah looked my my family? My parents were incredible hosts. They I grew up surrounded by <hes> <hes> visitors coming over staying <hes> there was seemed to be always someone extra living now house will come in for dinner and both my parents <hes> took it very very seriously with a lot of passion when they hosted someone who had someone over they they went all out and it was all about the details and <hes> go out sometimes my father would even come home with hitchhikers that he'd picked up when he'd been out on the road and they would stay for a few days and they would just host them and look after them and treat them really well and you know the bedroom the spare bedroom always had you know my mom was very particular in always had the best linen of the House on very crispin clean and a little vazza of roses or flowers or something does it oh details and <hes> and should make amazing meals as well but <hes> you they I grew up having to participate in all of this <hes> setting the table making sure Napkins will I end and pressed and in the right position and special silver <hes> silverware would would come out and <hes> <hes> you know we used to hate it as kids having to clean the silverware I loved it when they came out with liquid dip cleaner rather than the cream that used to put on them and birth yeah. Oh yeah that was that was a that was a difficult <hes> household chores that one we will has kids hated that one cleaning the civil way <hes> but I guess yes I guess that's where my hospitality passion came from. It was in the house my father would go out when they would have guests to stay and and make sure that there was plenty of ice in the in the freezer and all the glasses were polished and and they would really take a lot of pride with what they did I and hosting and entertaining and the house so even from that young age you mentioned the details and it's something that just kept going through my head this morning as I notice all the little details and your property mia more and it's those little things that really make all the difference and so I'm thinking a young Brennan and did you notice those details and how much impact they had such a young age or was not till later you realize the impact of that. No it really wasn't too later. It's it's been an moment of reflection that I've suddenly because it gone click. That's where it came from. So at the time now it was just <hes> you know it was it was part of the the household sort of environment and that we lived in and <hes> I had no idea it was going to impact what was going to happen in the future. At the time I had no idea you mentioned the meals and how important they were and I'm a big believer in the community that's built via meals and that's why I love staying at your properties because it's such a special setting for an unbelievable meal. How much when you're building out a hotel are you looking at that aspect of the business and creating an unbelievable dining experience always always for us <hes> the restaurant experience we run boutique hotels and for me? I think the restaurant experiences is hugely important in that experience <hes> when we opened L. I property mezzanine in two thousand four. We actually opened it as a restaurant at happened to have four rooms <hes> as part of it as well but even to this day I mean the logo says <hes> Restaurant Bar Hotel so restaurant is a big part of who we are. It's a big part of L.. Passion <HES> WE WE PUT A lot of energy into our restaurants and and we we want our guests to get excited about the food and beverage programs that we have and to feel <hes> like they have everything there and it's a complete experience for them the complete experience I mean we've lived it. We we've seen that such an enjoyable experience I wanna know as you transition from a child. I know you've done a great the traveling where did that issue come to explore this world. <hes> look as I said as a culture <hes> wiki. We's heaven us. It's it's it's almost an expected the thing that you at some stage <hes> in your life you you take off and you go on your big eight. which is your overseas experience? <hes> you know my older siblings winced did it. <hes> my friends were doing it. It was just a matter of win. Not If when are you going to go off and do it when you're gonNA go exploring the world and see what's out there so <hes> so I left in my mid twenties <hes> I left my <hes> career in which had only barely started but <hes> I studied science earth sciences and and quick does hydrologist for a couple of years <hes> never went back to it in the end took off and I was yeah on the road for <hes> good almost two years <hes> before I finally stopped and and <hes> and found a place to work which allowed me to continue on thinking when when you're dreaming up this world travel what was going through your head at first where where did you WANNA stop. What destinations did you have pin down? <hes> it was all about adventure what was going to give me the most adventure and <hes> I think I ended up my first year starting in Vancouver Canada and doing some <hes> some skiing in the middle of the winter there is January and end by December. I had made it down to Bolivia so <hes> I did most most of the Americas. I didn't get right down to the south but I think the big draw for me for South America was I think I had studied <hes> Machu Pichu Chew as a child and school in that just <hes> sparked that was that was something that set with me. I had to go and see it. It's so funny how how things like that from our childhood just resonate so much and you have to explore them. I WanNa know whether any other adventures church that you just to this day love you've remember that are just ingrained and you still oh yeah <hes> usually usually the ones that stick with me. I mean is the big sites that you go and see when you're backpacking and traveling <hes>. Um You know I mentioned Machu Pichu but this Petra Jordan and the Pyramids and you know these big sites <hes> but the the the experiences that you truly truly will in my experience the experiences that you really remember and you keep reflecting on when you go off the beaten track when you when you do something that's sort of a little bit outside of Your Comfort Zone and pushes you a little bit and usually those a win win the Magic to happen that when you go you know you just take this crazy decision to go somewhere that normally nobody would and you make people that may be haven't had been exposed to a lot of tourism and that's when the magic happens. That's that's <hes>. Those are the special moments that I that I often go back and reflect on. Can you expand even more about those special moments because anyone who's traveled. I think resonates with this in understands there are these these moments that happened and I just love to hear even more about your experiences in those special moments for you you want to hit some of the actual experiences sure I mean you can see it right now. I'm sitting across from you. The Passion your lighting up. I can see me about southeast experiences. I'd love to hear <hes> I did something crazy. I was in the northern part of Peru and <hes> you know most people just head down. The coast was <hes> hitting down to Lima for some reason I met somebody that's triggered a decision to you hit across the Andes and into the headwaters of the Amazon and it was happy even mentioned in the Lonely Planet Guide which was the Bible in those days <hes> so head to just sort of <hes> find out how to do it and and and ended up on this boat for a few days hitting down the Amazon we stopped in this little village and <hes> we found some some locals that we're prepared to take us in a dugout canoe <hes> right right into the small tributaries of the of the Amazon and we went for a few days just camping on the side of the in the middle of the Amazon is camping on the side of this little stream and seen the wildlife and you know the Anna condos does the crocodiles and things right up close and and this was felt like completely uncharted territory because they were trees it had fallen across the river that we had to us out excess to cut through wouldn't so that we can keep going you know for a young young traveller in his mid twenties that was that was pure adventure that was that was just Super Fun and <hes> you just learned so much <hes> <hes> from the locals and how they live in and the experiences you know the environment that are in every single day and you just get to experience that you don't get that living in stain and in hotels. Did you ever say no to an adventure opportunity. No I had a feeling I it seems like you. You love going after life. Which is why this conversation so fun? Did you have one more experience that the Amazon hearing about that is just so fascinating. I'm even thinking about what you view is some of the most gorgeous views on this earth whether that being an amazing sunrise sunset something like that the thing when you're <hes> when when you're traveling with like minded people in you sort of you know you usually end up with some travel buddies that you've made along the way we had this <hes> experience in in the digits of of <hes> Jordan where we <hes> we we had a local <hes> take us out camp in the <hes> in what he run we wanted to we want to experience the Lawrence of Arabia sort of <hes> experience. We wanted to get right out there and we <hes> we camped overnight at in the desert and for some reason the next morning we we took a decision and reflecting it was probably a stupid decision but we we we asked the Guy Halong would take to hike through the desert to get across to Egypt and he said well you can do it in a day <hes> so off we are we.
