"You know, buried in this Department of Labor report, we also saw that real wages, real wages which are wages hourly wages adjusted for inflation, they went down for the last 12 consecutive months. So, you know, you say, oh, great, I got a raise. Social security payments are going up. Well, guess what, that money gets eaten up by the cost of living increase. I mean, people are paying, just put this in perspective, 48% more to fill their tanks in their cars than they were this time last year. And they're spending tons more at the grocery store, an estimated 10% and for some things, like beef, it costs 16% more citrus fruits or way up. I mean, all of it. This is not sustainable. And it's really frankly a travesty. It makes me angry only because any moron, frankly, should have been able to see this one coming, but this team, they don't bother. "A little bit and be in between those branches. Is that still the same? Correct. Okay, good. Let's say you're in an area where it's just too cold to grow citrus. But you still won't that rash, squeeze, juice every morning. Do you talk about your experience in Atlanta with your greenhouse there and foiling things in and out? Are there little tricks or tips as far as growing in a greenhouse or growing in a sunroom that you can add to what you've already said? You're going to follow pretty much the same type of fertilizing or talked about. If you're in a container, then you've got to fertilize a little bit more often just because every time you water you are going to lose some of the nutrient value of your fertilizer. Unfortunately, with the citrus, you have all of it, maturing at the same time. So I had all of the Meyer lemons and all of the key limes kind of come in at the same time. So what I did there was went and purchased some large size ice trays, I actually bought a hand press from Amazon, pressed the fruit, press the juice into a pitcher, fill the ice trays, turn the freezer up on flash freeze and froze the citrus into cubes and drop them into plastic bags and had fresh squeezed lemon and lime all year long. I haven't heard of that. That's great to know. I would like to touch base on a couple of other fruit producing trees that we discussed before. And that was avocados and olives. Would you talk about growing avocados? I know you've already talked about having avocado tree. Yeah, I did. I purchased the wrong one. And that's one thing you need to be careful with, not only on the avocados, but also on the olives. Some of the varieties of avocados get very, very large. They need to find varieties that are a little more cold hardy and there are three varieties that are pretty cold hearty. The Brazos bail, the fantastic and the Joe. None of those get terribly large. There's a dwarf that has just recently come on the market in the last couple of years called the little kata and the little cado is a dwarf variety that only gets about four to 5 feet tall. I've not tried to use it in a container yet, but I'm very interested to try to use it in a container to see if it would do well there. The avocados, they've got to have a little bit of maturity on them the first year that I had my avocado. I had maybe two or three and then the second. And this was a fairly mature plant. And then the second third year I had probably 25 or 30 well. This past year, we literally had fruit drop because the limbs could not support what we had. Avocado is just really, really neat to grow. And you use a little bit of the same fertilization every 6 to 8 weeks. Do not fertilize during the kind of dormant superior of late October into February. I've already got fruit sets on my avocado. I noticed that this week when I was out doing some work. I think that avocado get overlooked quite a bit. A couple of other things too is the pomegranate. And I did have two pomegranates in Atlanta in my yard that did quite well. We had a really, really bad cold freeze. Back several years ago where it just really shut Atlanta down and that was right before we move. That kind of sapped my pomegranate. So they can grow further north. The wonderful pomegranate that's a variety. And there's also, I think it's called a hearty Russian I believe that is very cold hardy as well. Those two are like the avocado in that they've got to get some maturity before you get production..

"How important is it to water it slightly for the first year and then after that? Watering for the first year is very important. And watering right when you install is very important. First thing we want to absolutely drench it good when we put it in. Craig as you know, the reason for that is not necessarily to wet the root ball, but it's more about making certain that you have no air pockets in and around the root ball because that can kill the root ball as well. And we want to water it in thoroughly when we put it in the ground. Then for the first two weeks we want to water it every day. And then for the succeeding two to three weeks, we want to water it about every other day, then you can water it once or twice a week for the first year until it sets in and mother nature takes. Talk about the bio town when you plant, but is there nutrition that you need to be supplementing the souls with afterwards? Yes and there are a couple of things that we need to speak about there. Number one, if you happen to be planting citrus in large planters and you have them on a patio or a portrait of that kind of thing, you need to be fertilizing those about every 30 to 45 days because when you have the fertilizer in a pot, it leaches out quicker because you're having the water a little more because the pot tends to try out more quickly than if you have the material in the ground. So you need to be a little bit careful there. I use a product on all of my citrus called citrus tone in that capital C or U.S. capital TO in E get to is made by a and is an all natural ingredient. But I have found it to be very good. There are other very good citrus fertilizers out there..

"And it's because a, we have developed some very good cold hardy rootstock, which will allow for the trees to be grown a little further north. And they because we have not experienced the greening disease here and the states of Florida and also Georgia have been very protective of trying to contain the greening disease and other citrus problems. In fact, I will tell you this, that when the university of Florida develops a new citrus product, they can not ship it out of state for a period of three years until they have had the opportunity to watch it mature. Is there a band along the Gulf Coast that were found in citrus being grown now? Or is it just more of a Georgia Florida thing, maybe Texas thing? I have kids in Jackson, Mississippi and have installed a couple of citrus trees for them there. So we're finding it in the Southern United States here again because of our development of the cold hardy rootstock that we're being able to grow at more and more Louisiana, Texas, Panhandle of Florida, Alabama, and then on over into our area and even to Charleston. Okay, let's say you're ready to buy a citrus plant and you're looking at them and I know rootstock is important, the pollination. Can you talk about those in any other thing that's important in selecting them? Number one, if I'm going to buy a citrus tree, I'm not going to buy one that has less than about an inch to an inch and a half caliper. And the caliper is the diameter of the 6 inches above the dirt line in the pot, if you will. And the reason for that is that means that that plant is more than two years old, which is important to me since I'm one of the senior citizens. I'm more into gratification than I am waiting on things to mature. Yeah. That's very, very important. The other thing is we talked about selection of where to point. That is extremely important as well. Find the best microclimate that you have got in your yard. The other thing is you need to clean an area. No weeds, no grass, about four to 5 feet in diameter when you plant. The other thing is when you plant, you need to be sure that you are digging the whole twice as wide as the container that you brought home. Most people make the mistake of thinking that you have to plant deeper than you do. You don't. All you need to do is die hold that is the same depth as your dart line in the container in which you purchase the plant, digging it twice as wide as more important. You want a nice soft soil for those roots to expand. The roots expand more laterally than they do vertically. So it's important to get that whole twice as wide as the container then it comes in..

"You from that northwest wing. Huge. And if you can position it on more of the south, southeast side of a structure or a hairdryer like you're saying that that's what we're looking at. That's correct. And the other thing too is you're looking for 6 plus hours of sun, the more the better. You're looking for an area that drains well. The citrus does not like wet feet. And then the other thing that you need to consider is if you're doing more than one citrus plant, you need to look at the habit of whatever citrus you are considering and be sure that you give it enough room to grow. Quite frankly, one of the mistakes I made down here was I chose and avocado tree from our backyard, which is fairly small and really got the wrong avocado tree because it's getting quite large now in my backyard. It's a prolific producer, but it does impinge upon some of the other material that I have planted in my backyard. Where's the best place to buy citrus? Oh, that's a really good question. If you've got a really good local nursery, you can obviously buy one. However, up in the Atlanta area and flexions like that you're not going to find citrus even if you wanted to have citrus. You can always put a dwarf Meyer lemon in a Florida room if you have one. Because the dwarf Meyer lemon is only going to get maybe 5 feet tall and have a diameter of four feet or something like that. So it can very well fit into a brightly illuminated Florida room that's very open. And the fragrance that you get off of it when it's blooming in the winter time, it's just astounding in your house. And then peel it out in summertime on the patio. We also have a problem too in that certain areas..

"Charles, the last time we were together in episode 29, guacamole is working your garden. We briefly discussed the citrus you're growing at your home in Savannah, Georgia. That fascinated me, and I had no clue that was even possible. Today I would like to talk about growing citrus in your home garden. When was citrus first grown in the United States? Craig citrus was first introduced in the U.S. and St. Augustine, Florida around 1565 by Spanish explorers. But we had a pretty big gap from that time period until the next real surge of citrus began which was in the 1700s first in Arizona and then in California. We really didn't begin citrus development in the Gulf Coast states in earnest until the 1940s, but unfortunately, we had a couple of decades following World War II where we had really hard winners and it just absolutely decimated citrus production in Florida. Remember in the 80s, I was on the white Orlando Florida for a football game, and I remember seeing miles and miles of dead citrus along the road. Where can centrist grow these days? They are developing citrus that can survive further north than that, just as a side note whenever I retired living in Atlanta in the first thing that I did was build myself a little greenhouse so that I could have a dwarf lemon tree in a dwarf lime tree. So I would simply wheel those into the greenhouse over the winter. And then take them out with a little two wheeled Dolly that I got at Home Depot. Every spring, but I had two citrus trees that produce very well in the Atlanta area, but now they will not winter over there. It's a little too coupe with the Georgia citrus initiative which has been spearheaded by UGA. They are developing more and more colder hard citrus that can be grown up into little above Charleston and we go west kind of across statesboro and below the make an area where we're still able to grow some citrus. But she also have to factor in a number of things when you start looking at citrus growing in those areas you've got to look at such things as site selection and we can get into that in a bit, it's important. We choose to plant it. Suffice it to say we are getting several different varieties of citrus and other fruit bearing trees. We're able to grow a little further north than we used to actually for two reasons. One, we've got some cold hardy rootstock at the other thing quite frankly is we are warming, you know, in Savannah, we're set to be an 8 B will really we're more of a good strong 9 or a now with the warming that we have had..

"I know from being an athlete for so long and really been given so much advice from so many who loved me and wanted me to do well. I think my purpose as well as to cut pass the noise and get right down to the signal of just the simple few things to focus on so it will be eye candy when you look at this little roadmap because there's only three things to think about two weeks out and the first one is actually maybe let's go back to play the most playful one. I'm going to ask you to play with foods. That are robust. Just busting at the seams with vitamin c. Why bet well. Here's the deal. I don't know about you. But i know when i put a lot of pressure on myself in the past and i'm heading into my final week of taper. I start to feel a little scratch in the back of my throat starts to feel little congestion. I feel super fatigued and bam. I'm sick with a cold. So i am proactively. Giving your body by asking you to eat foods rich in vitamin c and giving your body a little bit extra defense. I'm helping it out by giving it some protection because vitamin c is really good at fighting some of the oxidative stress that comes from your body repairing itself. I mean it takes work. That's probably why you feel. It's why you feel a little bit of fatigue going into tapers your body's pairing itself and if it doesn't have some of the protection it needs it falls prey to whatever you come in contact with. It's it's a have a natural response to get sick when you are repairing absolutely one so we're talking everything from citrus fruits. Two peppers strawberries. But you also say you could also supplement. I mean and what is that a good idea for everybody or is it district people who don't like fruits and vegetables. Can you get enough vitamin c. It's more or less your personality type right like. Do you want to commit to eating some of the vitamin rich or vitamin c rich foods consistently every day. Or do you just want to cover your basis with a little bit of an insurance policy. My personality type. I'm all about the food. But i also wanna just know that i got at least a thousand milligrams right so i will pop a few vitamin c. packets in my bag for work and just make sure i grabbed one a day and it just bolsters my defense before. I even feel anything coming on.

And i definitely want to spend time on that later but three or journey one of the things that i heard you say previously is that one of the greatest ways that you can truly learn something is to go in and use it. You're like going in the code and like seeing how everything was going you were actually using it. How was that experience crafted. How you created shape shift in which ultimately like wanted it to be. Because i'm not a developer and i actually can't read any code. Unfortunately you'd like if i could go back to school. All About The Negroni

"The negroni what well The negroni is a cocktail made with gin sweet vermouth and a type of amaro called campari Traditionally you can put other stuff in there But that's the basic basic stuff It is garnished with a slice of orange or a strip of orange peel. The ladder sometimes flamed. It can be served chilled and straight up or over ice. A single large cube is pretty popular. And it it's it's the drink is smooth and bitter sweet and herbal little bit. Spicy or spiced i guess rather But with this brightness underneath and not to get like poetic on y'all like right off the bat but it just it tastes like a like a summer night. I should have a next time. We play dunston dragons. I should have some kind of like poetry off. Oh no you have to describe the negroni. And i shall just from my dungeon masters edition. Oh gosh that would be something. That ben bolan would be amazing at and that i would be like. Give me a few weeks. And i'll come up with an amazing entry. I like all of you are really excellent at coming up with some perhaps less than traditional poetry but poetry now we are a group. It's true that's true. So let's let's let's breakdown all of those ingredients a little bit so So jen is a type of liquor made with a neutral spirit. That's then infused with any number of botanical 's during and or after distillation the primary unnecessary botanical is juniper a which is sort of brighton. Piney tasting ginneries. All have their own complex blends of herbs and spices and imbibers all have their own personal preferences. Some common additions include liquorice or a niece cinnamon. Citrus peel nutmeg. Fun Summer Tastes and the New TerraShield

"Samantha. Thank you so much for being here with us today. Thanks so much for having me so cooking with essential oils is something that maybe not. A lot of people are familiar with so if i am new to cooking with essential oils. What are some of the things i need to know. Cooking with essential oils might take on. It is mostly for flavor unless you're not heating up oils because like with everything. Each essential oil has a flash point which means they all have a temperature that they basically burn off at which can remove potential benefits but it does leave the flavor bind. That's really interesting. So if you're planning on putting into oils in raw foods you'll definitely get the benefits and the flavor but if you're deciding to cook with it you're just looking for the flavor to replace the dry herbs that you'd probably use cooking with essential oils is also an easy clean and honestly less expensive way to season a dish because you want to use them. Sparingly essential oils are concentrated versions of the plant. So you don't need much you can always add more but you can't take anything away. I start with a toothpick sized amount and slowly. increase it from our flavor. Can you let us know what some of your favorite recipes are. I think a lot of people might want to use essential oils in different recipes. But might not know where to start so i. What is your favorite recipe to use a citrus. Oil in absolutely really was interested. Any type of drink but also desserts. Interestingly enough i love wild orange orientate injuring in chocolate cakes brownies. It really brightens up those richer desserts and you can even add them into frostings. Or if you're going for more like a summary dish you can add a little bit into a salsa and my favorite drink to do with wild. Orange is making lemonade with some freshly squeezed lemons. Your favorite sweetener and then just a drop of wild orange in maybe a drop of tangerine and you have this bright unique fresh lemonade to hopefully cl- you off. During the hot summer

"I have received a lemon lime tree as gifts. They did great on the back deck last summer but have bust all winter indoors. I tried under a window downstairs under a grow lied. I gave them humidity any. Tips would be welcome. She writes and i can tell you. From my experience rachel. I grow citrus. I put them outside. They flourish in the summer. They're fabulous they get new growth. They bloomed the get the developing fruit on them. And i bring them inside and they start to decline from there and they drop leaves in the lower light situation. I don't have the mini greenhouse. I have them in front of sunny window in an average home and sometimes they get spider mites very prone to that occasionally they get scale so i have to treat that and by the time i am ready to put them. Outside at the end of may again they look like a citrus. Pretty pathetic plant. I feel the same way. And i will tell you this. When i was working in new york i maintained greenhouses for two clients. You would think that would make a difference. Right and the citrus would be happy in the greenhouse. No maybe not as pathetic as if they were growing in a home. But honestly i read a lot of things online that say yes it's possible to grow citrus indoors. Sure it is but will they ever look like they should and like you want them to. I think the answer is no. I think the answer is yes. They will look like you want them to win their outside. Oh yeah that's what. I meant but inside inside. No i think the best you can hope for inside is to keep them alive until you put them outside again and rachel did not tell us where she lives but it's obviously in a cold climate. So she's going to have cold temperatures even by a window in the wintertime. She's going to have low light. And if you're getting them to survive through the winter good for you rachel..

"In alliance nebraska. Winters are cold and windy but for decades retired farmer rest. Fench has been growing tropical fruit year. Round without an energy intensive heating system we have thirteen. Varieties of citrus lemons. Limes ten angelo's tangerines. United finch heat is greenhouse with a geothermal system that takes advantage of the consistent temperatures. Eight feet underground. He first experimented geothermal energy forty years ago when he was building his home he devised a system that pulls air from underground tubes where it's fifty two degrees fahrenheit all year. It worked so well that he installed a similar system in his greenhouse fans. Circulate the air. But that's the only part of the system that uses electricity so it's good for the climate and he says the greenhouse cost less than a dollar a day to run we've taken the cost of energy completely out of the equation fench almost ninety years old and he's still growing fruit year round and now he's helping more people do the same. He sells geothermal. Greenhouse building kits so other small farmers can grow citrus in the snow.

"All right emily kwong lay some of that chocolate goodness on me. You got it because chocolate is the true meaning of valentine's day only chocolate. This pure can be this. So i love you but lactose intolerant. Why are you doing this to me. I thought about this. The thing that gives chocolate. Its flavor is dairy free. Did you know cocoa comes from a fruit that grows these amazing looking multicolored cacao pods and i was. Cd's read things hanging from the trees. While what are these things. This is food scientists. Darren ostrom suka at the cocoa research center at the university of the west indies. Speaking with simmons safety and our friends at life kit about his fascination with cacao pods. It's like it's like a football shape. Fruit it can be smooth. It can be wate. it can have ridges. Darren saw these pods all over the place. Growing up in trinidad and tobago. They grow on the couch. Frey or theobroma cacao in under story crop of the tropical rainforest meaning they grow pretty close to the ground and the exterior of these pods is hard like it's tough but not so tough that critters can't break it open to go on a little cow binge correct if i was a squirrel. This would be what i would do. I mean absolutely. Darren breaks open a pod with a special tool kind of like a dull michigan it resists when gives time what it feels very satisfying on. Then when you twist the blade you hear a sort of crunch on you see opening insite describes the inside of the pod like a sticky cobwebs it has rows of caucases which he calls beans covered in this gummy white pulp called musa delicious mm-hmm usage and the aroma hits immediately. I'm spending my and it smells. Citrusy like like citrus flowers. It's like a subtle perfume Yeah there's so much flavor potential in these cacao beans at this point once the pot is opened fermentation begins so after. The seeds are removed from the pod. They're collected and transported to an area where they can ferment for days. Yeah and naturally occurring microbes breakdown. Those beans unlock their flavor notes. I i did not know that. Quang i mean for meditation gotta love it. Kind of sounds like like wine a little bit. Maybe a little bit. Yeah kinda if you think of cacao beans grapes and the tastes does reflect the ecosystem from which it came. The beans are then sorted roasted and sold to chocolate-makers to become the chocolate. You know and love. it can be fruity. it can be floral. It can be bright. So i like to think of a flavor profile that cuckoo offense to be like a good piece of music is we. What makes a good piece of chocolate is a harmonious 'presentation of flavor notes that in balance with each other at the coco research centre. He works on the level of genetics and with farmers to optimizing flavor and adopting their crops to climate change and disease. Darren even works with the cacao. Farm used to pass as a child. Chocolate is something he just can't stay away from is like with ocala. Florida is she. You can check out anytime you want. But you've been the relieve gets on the skin and it becomes your positive your consciousness so for me. I don't really work at a job. I work at

Why You Need a Signature Scent and How to Find One

"So. I used to wear this perfume knows wearing. I wore it for years. But then i i kind of stopped wearing. I don't know it didn't feel as me. so is it possible to like change. Your signature scent. Is that an absolutely. Yeah for sure we all kind of grow into you. Know what we appreciate more as our paced matures. Let's just say it that way. I think i think we all were like bubble gum lip gloss stuff white. Had you know and all of our sense tend to be more sweet or Fruity and those kind of things and we just kind of grow up in. so yes. you're your even your censh- taste can definitely change over time So it's totally normal to have you know maybe a signature scent when you were younger and then you maybe find something new. I have you know so many people that. Tell me that all the time. They're don't always wear this. But i found something new and this is it and so that's cool. It's neat to be able to transform yourself in that way i mean i. I don't really know a lot of people who i think. When i was growing up in the movies you would see all of these sort of boudoir and people would have like so many different perfume. Bottles reality. People don't really mix up their sense like they would. Let's say a lipstick shade. yeah. I think that it's wants people kind of know what they like. Most people tend to stick with it. Some people might have two or three different things on the counter. And that's a good thing. You're on your bathroom counter to have something that's a little bit sweeter for maybe daytime something. That's a little bit. You know a little bit deeper for like inter Even definitely switch it up with the seasons or whether you're out for the day or out in the evening That's okay. But i think having one that is continuous goto that you kind of fall back to is is always a good idea. Well i have. I'm so glad you today. Because i feel like prior just around like last february aroma. Valentine's name like. Oh i need to find a new sent. You know i feel like. I was going khloe phase at that time and i. I don't know i i really like it but i don't know if that's what i was going to stay married to. And then covert hits and not only do it hits but i got it and i lost my sense of smell. I'll be honest for the past. Year i've been wearing anything It comes to trying to find a signature set. Like if you don't have one. Where do you even begin. I think you begin with just things that you already know and are familiar with and what you're what you gravitate towards so most references are gonna fall into one of four categories. It's going to be woody. it's gonna be floral. It's going to be fresh or it's going to be orientale and so once you have an idea of what each of those are what they smell like. It's a lot easier to then find a signature scent that because you know. I liked something for example. That's fresh those are your kind of citrusy those things it's kind of like fresh cut grass the the clean water smell those. Those sites have smells that once. You know that that's what you'd like when you are reading about perfumes and they say they have you know notes of of citrus than you know that something you gravitate towards and give it a try that way so there are ways to figure out your signature scent even if you're like shopping online like we're all doing right now because we're you know can't go out of the house budget and so we're shopping online and i get it but there are still ways if you read the description of a properly studied the notes that are there you can decorate figure out at least get close to something that you know will be you know more your style. I feel like we just went through is three said. I'm like a bright citrusy which was What was the category for. That look shot fresh go or the other categories starting with equity like. Give us some ideas of woody. So what is going to be your more Kind of deep pachulia okay. musk's those type of sense are going to be a little bit more. Are you gonna be your in your woody category Floral is going to be your typical florals. You've got a half The any kind of rose and he kind of lavender All those that those kind of bright florals that you're used to That are very common in a lot of of of female perfumes. And then oriental. We don't feel quite as much. It's a little bit warm kind of spicier. A lot of men's colognes tend to have bass notes that are that oriental women's if they have those base notes they usually top it with something a little bit floral to balance it okay. So a lot of times you can play with more than one of those categories with. That's why i always tell people figure out you know kind of lied about those or categories figure out things that fall into those categories that kind of sparked your interest and look from there. I find what. I'm seeing a lot in in the marketplace or what i was seeing. Was that a lot of these sense that would be typically more masculine. Women are now starting to wear right. Like the lualaba son tall which to me is seems to be almost a very masculine. Send out. I know a lot of women. Women who are beautifully Yeah i am a big believer in the we. Okay, We're going to play 60 seconds. C E o. And you can just give me your quick rapid fire answers to these questions, and then we'll die Born to your journey after so let's start with who is your favorite entrepreneur? Oh, hands down Oprah Winfrey, and she's built an empire on heart and passion. And if she influences everyone to do good, you are the first person to have said Oprah so far, and she's also my favorite. She is the best. Someone is very destructive and your company, but they're great at what they do. Do you keep them or fire them? You know, they say every great thing lease on this edge of a razor edge of greatness, So it really just depends on how they're being really destructive, Disruptive because sometimes we need those creative ideas to make our businesses grow. But if they're disruptive and don't follow our core values, like changed with world have heart be remarkable and make lemonade and lamented that they're out. Good point. How many hours do you sleep tonight? Six or seven? Do you work weekends? Yes. What is the first thing you do, and you wake up. I followed the miracle morning. What's that? You know, just all the habits, so drink water journal. Meditate. Workout. Oh, awesome. What rules? You live by the remarkable on a scale from 1 to 10. How weird are you? 2020? When did you realize you have the strength and power to become an entrepreneur? I think when I was starting my first business with studios, Okay. And how would you describe yourself in one word? Effective. Lastly, what superhero would you like to be or what Superpower would you like to have super intuition? I think that everyone needs to learn how to trust their gut because it'll never their heart will never leave them the wrong way. That is so good. Okay, well, we're done with the rapid fire questions, but I love actually for you to expand upon that. How is your intuition Help to you and your business is I mean, there's a voice inside you that tells you You shouldn't shouldn't do. I think that if you pay attention in our present you really take information. On Whether or not it's through their body language or whether or not it's something that they said 33 minutes ago. Your your brain works in fantastic ways. And I think intuition is one of the best qualities of being a successful entrepreneur. And one of the most important qualities for entrepreneurship. Yeah s o. You think slowing down is one of those things that can help you tune into it? You know, I read this book by I'm Jill Willard called intuitive being and there's different levels of energy. You know that you have to pay attention to, and I think that that's really you have to really understand your Your body before I started meditating before I started really understanding Intuition I people would say, like, Oh, you know, what does it feel like to be angry, and I'm looking. I don't. I don't feel angry like I didn't even know because I was so numb to I was just working, working working. But when you when you like you said, just that slow down and you can pay attention to what you feel you're there's a There's a beautiful butterflies, you know, and sometimes it's intuition. Also, the one thing it does is it comes in this fact, it doesn't come in as emotion. It just comes in as like the sky is blue. The Bible says, be not deceived whatsoever. A man so effectually also reap some on Wall Street. Do you know where your money is? Welcome to financial issues where we align reality.

"If i was somehow asked to say only one thing about the place. I'm from it would be that it. Has this unforgettable smell when it rains. It slightly floral but mostly. It's this very specific cool earthy desert aroma. And there's usually a calm clear breeze which carries these concentrated little pockets of fragrance. The smell comes from the creosote bush. A resilient plant that thrives only in this particularly arid landscape especially after a thunderstorm the creosote bush releases a bunch of these oil compounds into the air stuff found in citrus rosemary pines and it just smells like the earth. Exhales creosote can live for thousands or tens of thousands of years. It's one of the oldest living things on the planet and here. This ancient brush grows at the foot of the franklin mountains and the valley nestled below cutting through the desert valley is the rio grande dividing two cities and two countries al paso texas to the north and see that quite as in mexico to the south. This story my story long before. I became a journalist and moved to the east coast. Begins here why i remember seeing opacity from hill where my morning lived. This is my brother. He was five when i was born. And see that's what is just a few miles from the border. One of his very first memories is looking into the us from mexico. We could she youtube. We could see the buildings highway. We could see the other side in mexico. We lived in vesey. These tenements studio apartments are connected through the same courtyard. Ten families shared one bathroom outside. Both of my parents have to quit school by the age of thirteen to help their families. The other side of the border looked like it could afford my brother. And i the life. Our parents couldn't have when i was three. My dad landed a minimum wage factory job in the states so we moved across the border to a refurbished trailer. In the most rural outskirts of el paso county the land was dry and flat untouched. And i remember getting off the car and seeing both huge tumbleweeds and under they're usually there's snake pits the snakes and when i moved out here there was always you know there was always next coming up. One of my earliest memories ever is the smell of creosote bush here. We were ecstatic as a family. We love the trailer nelson demos. Basically we still went to what is every weekend there was always a cousin's birthday party or a baby shower or an anniversary in mexico. We made home videos. At these big family parties a bunch of kids speaking spangler and staying up way late. I remember what is always being loud fun loud. We danced into the early morning hours. At either of my grandmothers houses of root of coaches eating street tacos glistening in the dark amber of the mexican street labs. This was my early life mexico on the weekend. The state's week and soon. I started school first day of first grade. My teacher called me marry. My actual name is a name passed down from my grandmother. My mom says no one ever asked her changing. My name from mario lena to marry was okay. She just kind of found out in an open house with the with. We loping house when my teacher started talking about mary. Maybe is does this the my mother. Mary and she was like who's that to here on the merry mary. Oh it didn't even occur to my mom to object. She didn't speak english we were undocumented so she was like okay. I guess they'll call her. Mary bins brand really three here on marion. Mika win studying my name soon became a source of ridicule whenever a substitute teachers at my real name. Maria kids would say you a mexican name.

"I'm Tom Douglas and Carrie. Right. You're the chef and a half and chef Britney Marta Leben is here from Met Markets. Britney, This is the time of year. I know you love walking through the produce Department of Met Kind of decide what your company should be doing. With their produce at any given time. And the last time I saw you super excited was during the big apple harvest in the fall, and you were talking all about apples and the smell of the apples as you walk through the produce department that kind of being overwhelming and It's getting your fancy right now. Oh, the Citrus. This is the best time of year for Citrus better than any other time, And it's It's perfect timing because it's so dreary out. I know that's what's lovely about it. But is it really? Yes, this winter? Let our winter grapefruits better than summer grateful. Absolutely. There. Okay, So why is it just cuts where we have nothing else to choose from? So you think taste, but it's the growing season. What's the growing there? It's a tropical fruit, and that's this is when they're at their best on, but just the sheer variety. Of it all. It's there's so much on D even I've had I had a chat with our produce specialists that met market even the lemons alone. Something you get year round there usually fine. The lemons are alone are at their juiciest. They're all seedless. So this is the time to even buy a bunch of lemons and make lemon curd. But that aside the variety of all the cool stuff. We we've got coming. Next Friday. The 15th will be our first delivery of sumo mandarins Thies have sort of become at first. They were sort of like a cult A cult thing. Now that like everybody knows about them the nose of the big kind of wrinkly, ugly. Ignore mess that got a little not on top. They're easy to peel and they're like a giant satsuma. They look like me very much, so I didn't want to say it and you know as a baker Normally I'm trying to do all sorts of cool things with these Citrus fruits, sumo mandarins or something. I do nothing to. There's nothing I can do to assume a Mandarin to make it Better. You just eat it. Um, but, you know, there's also Kara Kara oranges, which are very delicious. They're pink, so they're pretty. It's there. Always pretty on a plate of desserts. Oh, started showing up about five years ago, and they have become very popular. Yes. Yeah, I mean, not only are there pretty, but they're great orange. Some of these, There's some things that are just, you know, decorative. They don't taste that good. But these Are truly delicious. What we've got coming up also the Gold Nugget Mandarin Now if you've heard of these, but this is what our produce specialist says. It will be one of the top five things you will eat this year that good You know what I'd like to do with like going back to the character Kara Zor, a blood orange or something like that. I like the thinly sliced them whole but thinly sliced him all the way across and I put him in the bottom of a big sautee pan. And I put sugar in with them, and then I just caramelized them right in the bottom of the pan, And then once they are kind of tender, I put a layer of paparazzi on top and kind of make a Cara Cara, It's hard to 10 type. Yeah, they turned out beautiful. You're so gorgeous, And I think that the upside down dessert, you know, an upside down cake, Anything like that. People don't think of turning to Citrus for that. They think Citrus. They think curd and marmalade, which we'll talk about marmalade in a minute. But it's the skin which people are afraid of eating or think they'll do to pithy and better that completely mellows out in the sugar in the cooking process, and it just a beautiful dessert. I think that's the big part is that people think they have to. Feel it and these air literally just sliced across the whole orange Chef. Have you tried that before? Yes. And I love these things, Lemon. Lemon, even lemon, which is usually You know, pretty obviously the skin is usually pretty hard or pretty. Not that prayed to eat. Except when you're dressed. If I slice the lemon, just like your brother Lunchtime? Yeah, just across and I do a mixture of silicon sell rice vinegar, sugar. And a few five lemon verbena leaves and put them in there, too. And cook that super gently with parchment paper on top for a couple of hours very, very slowly. And then take this meat and like Britney's kinds, same upside down cake with that. Oh, um, in occurred, you know if you make a lemon curd and you die so that Sweet and sell lemon, and you put that in the could. It really enhances the whole flavor and put that in the bottom of such shallow Even by itself. You know, it's been a bowl and serve that with some. We cream It's maybe some Graham crackers on top. So you have like a mini Lemon curd cheese kicked in the radio. You said something key there and that is cook it very slowly. That's really important. Anytime you're cooking, even if you're making marmalade Citrus will scorch very easily. But if you're cooking is that you're making candied peels or your candy ng some Come Quat, what you do not have to do you can eat come quite soul. They are tarred. Today. I've seen people pop them in their mouth like grapes. It's not for me. I like them sliced and gently cooked in a syrup but slow and low and just let your kitchen filled with the beautiful aroma. Um, you know, another trick is to put it in the oven in a deep pan. Put it in the oven overnight. You know, your pilot light on it could be very, very slowly. The sick thing is, you don't want a boy Citrus when you're cooking them because it brings more bitterness. How exactly and break down the whole meat. So you want to keep them shape, You know, try to keep them home. I think I'm too much of a control freak to put it in the oven. I left. What would you like to watch? I like to watch it happen. Um, speaking up, Come Quat. I think it's going to be around the 2020 seconds of this month. We have a ton of conch watts coming in. They're calling it They're quite promo, and we've got some come. Quotes I've never heard of. I didn't know there was a a man drink Watts. This is a new hybrid, so they're larger. We have a lime quad coming..

"The first hour today, and it was like in the first hour yesterday and We had, like what I say Three of our first five calls were from Cyprus, and two of those three calls were all about fruit trees, and in both cases I had mentioned to the I think they were. They always are. I know it's raining today. I don't know if there's a low that's gonna allow you get up there. But after things get cleaned up, I say cleaned up but put back up. They probably have they have in the Citrus Department. Every kind of Citrus tree that works well, any type of great free tree that works well here, the line trees, they all have to be protected the lime trees, but They have several varieties of that. And of course, when it comes to oranges, I don't think anybody has more sat sumas than our friends at the Arbor Gate. They have Taking that responsibility. Be well stocked on fruit Trees year round that didn't happen 25 years ago, nurseries and garden centers didn't stay stocked on fruit trees year round because of the way they were grown back, then, versus the way they're grown now, but hands our salute to kudos to the arbor Gate for being able to always bring as much fresh fruit for transplanting purposes.
