"Surprises that we did We did. We created board that had kind of all of the public community spaces in and around walk, and we asked students to take a green got to the places they felt faith. And the red dot to the prices where they didn't feel safe and more than about 80% of the kids felt they could. Taco bell. Um and what was really telling them that at least 90% of the kids who put a red stamp up put a red dot on Markham Middle School. Mm. And you just When you look at that board, you can't unsee that. So what we did was we honed in on Mark and middle school and and the elementary school. Get feed into mark them. So we started working with in partnering with the L, A USD schools and classes that are in fifth rising 5th, 6th and 7th graders, and that's where our that's where we started focusing the work for the weekend retreat. Can I ask you something? When you saw those dots on the board, right? What was going through your mind? Yeah, you. You know, there's a fear. There's uh You can't you can't unsee it. There's uh I can't believe that there is this one spot in middle school. I mean, I have a I have a 21 year old middle school was funky for him, You know, And I just kept reading it over and over again, like sweetie, I don't know what else to tell you. But middle school funky and it is a funky time in a child's life because the kids are Those middle school age is the kids are going through all types of hormone changes like it's just a weird time for kids. Middle school is it is not that you're in this. No man's land, right? You're not. You're no longer an adolescent. You're not a teenager yet. And you like one day you want to play with poking on and the next day you want to, you know, hang out at the mall and pretend like you're a teenager. You're kind of You're you're shedding those adolescent behaviors. Um and need and you're moving into. Who am I going to be in the world? Right? So how do I see myself as an individual and you're trying on all kinds of, you know, personality costing, I would say. It's a hard time, right? So when you see that board how do you try to change the perception that's going on in these kids mine? Yes, we have to. Um, I think one of the things that happened that Markham is that you have students coming from very different communities. Right? And we have this. We have this toxicity in our culture across the board that we other one another right? We all find a way We're all guilty of it. We are other somebody. And when you're talking about a small community, like watch that is highly populated. There's a lot of other in that happens. So what we wanted To do was to try to bring students together. We started to bring up to school at the same time, so that when they got to mark them, you at least remember seeing somebody you had an experience with somebody, you eight months with somebody or did the or did the dream wall or the leap of faith out at camp? Um and you have an understanding of somebody, and there's a Bryan Stevenson, who wrote the book. Just Mercy says. We have to get proximate to an issue. We have to get proximate to one. Another, because once I know you, it's more difficult for me to other you. So that was sort of the underlying philosophy about bringing kids together so that when I stepped on that mark on campus, they had a bit of an understanding of somebody who comes from a different community that they've been told that they're supposed to hate. Did it blow you away when you saw that kids felt more safe, had a fast food restaurant and at their middle school. Yes, without question, right? And and I come from a background of criminal justice reform. So I worked with Children. 14 to 18 were being tried as adults in L. A county and I always doing that work. I always wanted somebody who was doing the preventative work that at school to prison pipeline that we talk about. I was hoping that there was an organization that was trying to stop feeding. This beast of a criminal justice system. And that's what H r F and can't camp a bill to was doing long before long before I came on board, right, so the more that we can The more that we can help kids. Um and so, uh, my point was that we failed them like I recognize that we failed them as families. We failed them as communities and their middle fool is not beef. We're failing them at the school system and as and as a community, so we had to do something about it. So tell me, how was your model different than any other nonprofits out there that are sending kids to camp. There's you know, there's a bit of a perception sort of in the in the funding world, too, is that camp is just about, you know, playing games and running around the field and going on hikes and doing arts and crafts. They're everything that we do has a social emotional learning component to it. So it seems like we're playing a game. But what happens after the game is we have this conversation about How? How We were successful in that game. Did we rely on the other people on our team? Did we? What are what are the skills that we can take back into into our everyday life? Even more so than that in our weekend retreats. We bring up students, family members, teachers, administrators and and community partners. Because what we stall happening with students, we realized that we, as I talked about failing them as a community. The community needed to see and hear what our what our Children were sharing during weekend retreat that we bring up We bring up the whole community to surround them with that kind of support system As they come back into the community, and it has shifted, it has helped shift Markham. It has helped shift the culture and watch It's had a great impact. Tell us about the leaders in training program. Yeah, I love that program That is our counselor training program. So it's an opportunity to bring campers from both the summer camp and camp of Bloomfield together as emerging leaders to broaden this sense of community broad in the philosophies of room to and not uttering. One another and so former campers that are 15 to 18 years old volunteers sort of counselor assistance, so they're learning the skills to become counselors. And then they end up being hired at both campus them, too. And Canyon Creek fourth camp, So we're broadening the impact to even a bigger community. Now that's amazing. I want to know about the impact that you've seen. At the camp. Yeah, I talked a little bit about it with that in the perception of people's perception of what of what camp does. But part of the impact that we've had was the inspiration for camp a boon to watch. Which is our which is our summer program, and we realized that we wanted to, you know, it feels like a one off. Right. You come up in sixth grade. You come up to a weekend retreat. And then what? So we wanted to have a connection to our campers and our families in their community to help drive home a greater impact of the skills that they're learning. So, um, we're seeing a change in You know the way kids are sharing the way kids are being able to speak more about their emotions, and it has a great impact on learning if we're if we're stressed out if we're distracted if we're if we're uncomfortable and afraid we're not learning at our at our greatest potential. Do you feel like some of the kids come in skeptical. If that makes sense. I think I think anytime we're bringing, we're coming together from disparate communities. There's always there's always this. Um Period of getting to know one another, and I think our young people have, uh, sure they have a There's a distrust of people from an outside community coming in. "Just to go skiing, huh? Yes. Just for a few days on the way home today. It's all over now. Back to work. But I have a recipe, Do you? Are you a coffee drinker? You bet. Because, you know, I didn't drink coffee for a long time. Um, I mean, I didn't You know, I think in my thirties I started making coffee, but it works really good. If you take some ground coffee, and you mix it with your rub on the sporting chef dot com website, This one's here. There's a coffee rubbed goose breast and I know Oh, there's a few East being shot right down to so And you can take leftover grounds or fresh grounds. It's got the rub has got some ground coffee, brown sugar, a little Italian seasoning. Kosher salt, onion powder, garlic powder, cayenne pepper, paprika, Did you write that down? Good on the website. Okay, We're making a run. Or if he doesn't want to take your basic, whatever your favorite rub is and put a little brown sugar and coffee in there and the brown sugar. What's good about that when you put it in the rub? It liquefies the rest of the rub and helps it penetrate. But of course, it's only going to penetrate so far anyway, After I put the rub on it, I like to wrap it in plastic wrap. Stick in the refrigerator for a few hours. Um Slap it into a hot skillet with a little bit of oil and the night throw a whole bunch of onions on there, too thick, sliced onions When the goose breast is just about done, I take it out. On been pouring in some a cup of strong coffee, strong brewed coffee. Let that cook down and this is almost going to be like a red eye gravy type of thing, Huh? And then Then whisk in some chilled butter, and that's going to make that coffee is going to take some of the edge off. Copy is going to make it nice and creamy. Or that goose back in there just to warm it up a little bit. Slice it over a pile those onions on top and then drizzle that coffee butter sauce on the top of that. It's really good. If you don't like coffee, you probably won't like that. But if you're a coffee drinker, 20 my favor, But I mean, it's not gonna taste like coffee. But is it just like I am of coffee? It is just to him, and it gives it kind of an earthy taste to it. Also, it's um it's more obviously more of a savory flavor than it would be a spice here and you know it. Z. Yeah, you can put as much coffee and and if you want, but really you don't It doesn't scream coffee at you. Okay, That sounds pretty good. We use your Yeah. I used your recipe. By Scotland's of sporting shift dot com. Okay, Okay, well, we were wanting how the steelhead fishing was going to be on the Trinity River and Because the water did come up a little bit. We had our hopes up on everything. So last night, I talked to Butch Chapman, who has the Junction City store. About what happened. Butch. The Trinity River had been running low, very low and very clear. And that really makes conditions tough, But you've got a little rain. How much did the river come up down in the Junction City area? Um, it came up from, I think Fire around it was running about 3 80 something. And it came up briefly till just just about four and then it's It's dropped back down below the 400 range right now, and it's rich running. Clear really clear. Yeah. So enough. It didn't rain enough to cloud anything up. So not the ring we needed. We needed a serious rain with, you know, to get the water River up and flush it out and get a muddy a little bit. Get those fish on the move, huh? Yep, Exactly. Now, during these conditions. I know even the guides get a little frustrated with it, because you know you You locate a bunch of fish. That we're just hanging out and then a lot of people are pounding on him, which makes him that much tougher to catch. But if you do locate some fish What kind of techniques do you have to use, Hoping to catch one? Well, just depends. I'm a bank fisherman, mainly. So I use light tackle. I get down to £6 on my real, I'll go up £4 leader with A number six hook, and it's really, um Small piece of rope. A good color. Red Roe work starts well. And, um If you get that in within with the fish, whether whether out of small way just you know, you gotta downsize everything because at this point with Traded river being so popular with drift boats. They're pretty spooky. So if if you can find the spot where they're there, for example, we can have a go. Is it rained? The river came up. I went down below pigeon point on 2 99 little hike up. The bank stood on one rock. I looked seven still had landed six. That I would be perfect. I went back The next morning, I hooked one. And then that afternoon, I hooked too. And I've been back to the exact same spot probably four times and I haven't touched a fish in there. So he just get lucky and find him. Steelhead fishing is timing. You get that right on the heads. Um and then you know they they move up and then you got to go find them again and let's face it. The Trinity River has got an awful lot of good looking water so It's not always easy to do. Let me ask you one thing, but usually with any kind of a rain Canyon Creek kind of muddies up. Did that money up it all? No. There. We never got any any color and Kanye Creek. Um When I did hope those fish The North Fork of the Trinity. It did through some color into the river. So that's that that help because there was a little bit of Ah, um, teams to it. So you know your line wasn't so visible to the fish so that that helped out kept hooking No. Seven that one morning. But in the meantime, we still need a heavier rain and what we just got Yeah, You know, it's it's good Take, you know a couple solid couple days of rain to get peace. Weaver Creek flowing, Get get, you know, get the lake muddied up and just get things turned up, but You know, like, right now, most of the guys that I've been traveling with my shuttle business they've all went to the coast, so they're all fishing. The old River. The North Fork of the O River, the told Mad Smith. You know all those over there. That's Bert Chapman Junction City Store. By the way, Butch bought a whole lot of stuff from Tim Brady when Tim Brady finally closed the store, so he is well equipped for the steelhead fishermen. You know, I usually start out with a new year's something with black eyed peas or diet or whatever, but this time I went. I went duck hunting with Jake. We want with our friend Brett Butler of the district. 10 did really Well, Jake heads back up PICO and says, Dad, What am I gonna do with all these ducks and geese? So in spite of the fact that my son Jake, who's 23 now, and we announced his birth on the show 20 years ago. Accused your name naming him after a young turkey. Remember after a young turkey, right? So I sent him up Chico and talking through how to make a giant batch of Duck and goose stew. So I've got a spicy goose stew recipe that's on the sporting Chef website. But thing is here's There is one of the problems that he ran into. He brined it. And you and I have talked about Brian's forever. Never never You know the basic Brian a gallon of water cup each of kosher salt or any kind, of course salt and brown sugar. And so even though I told him make sure it's coarse salt, not table grind, Fine. Grind salt. What did he do? He used the fine grained salt. And so he said, Dad. My stew was really spice or was really salty, which help venture there's some people that have listened to the show that have had the same results because when you when you use a coarse salt right there bigger grain, so there's more air space in between the salt, so you're not getting as much salt in a cup. As opposed to the concentrated fine grind table salt, right, huh? I got you. So So when you do, bro, and you want to make sure that you cut back on the salt that you season it with, if you do happen to use Table salt by mistake. You've been still soak it in cold water and get some enough salt out. But anyway One of the great ways to use up a whole bunch of ducks and geese. If you're lucky enough to shoot him is to make a big pot of stew and you can freeze it and patches on what I do is I put it into a Ziploc bag. Freeze it and then vacuum seal it after it's been frozen. In that way, you don't worry about the juice coming out anyway. Back to this crew. So brown, Absolutely Brandon Upson, Dice bacon. You said bacon grease sooner have done the same thing with twinkly star. You want to get the grease in there? Takes and chunks of ducks, geese. Mixed bag doesn't matter Brown it really good throw in some chopped onion, celery, carrots. If you want it spicy. Put it a little jalapeno and some garlic and just get it until those onions are translucent. There was some beef broth or better yet, if you made some broth out of some duck and goose bodies a little worse, just served rosemary and a can of diced tomatoes or if you want it more tomato, two cans of right of diced tomatoes. Bring it to a boil. Put a lid on it and then lower the heat and just let it simmer because you got to go low and slow because we don't want medium rare in these things. We want him to be more tender follow for a lot of people like so it's gonna take a couple of hours and once it starts to get tender, I throw in some diced potatoes. Check for seasoning with salt and pepper. If you wanted, Ted, you want to pick it up. You could put a little tomato paste in there, but It's that simple. And for those people like I said they were fortunate enough to shoot a lot of Ducks and geese this year. It's a great way to use it up. Yeah, that's great. I love stew. And you know, just like chili, you know, you make venison RL chili, Uh and you freeze it and in the winner, that's the time. It's an easy meal anytime. You can take it up to your duck club. You can do whatever you want with it, but That's a great winner Recipe. I love it. It's good. I mean, this is this is too season. I don't usually have a big pot of stew in the middle of the summer. But right now good and by the way, sporting Chef is back on Sportsman Channel for a new season and dead meat is now on outdoor channel five times a week. Torto bring some or in and the clam it and they'll shoot up and come into the Trinity. This Willow Creek last week and we hooked a couple adults and had a ton of half pounders. But we definitely need some rain to bring some fresh fish. So what happens to the slug of fish that moved into the Junction City? Do they just get beat on and kind of hunkered down or do they move up? Do you think I think some of them hunker down because they're waiting for Canyon Creek to get enough water to go up and the North Fork to get enough water to go up and Browns Creek and all these different feeder streams. But ah lot of them shoot up towards the hatchery because they're you know, just depends on what What creek they're going up to spawn this time, years, Mostly wild fish coming in sure. That's good news. That's good news. So the not know when you were catching him at Junction City. What technique where you're using. Limps under an indicator actually, eight patterns mostly Okay, so the egg patterns were still working out fishing the rubber legs. Well, we got a few on rubber legs but down there they especially the South Forks, bringing in some color right now, so They speak color the et eggs when there's color in the water, and then those fresher fish. Mainly because of either too much smoke on the trinity and fires and the trinity and road controls or the Klamath on that and the national forest being closed where you can't even get to the pudding ends and the take outs with the drip boats. They catch those fish to eat so much, maybe smoke, but they went out with white tackle and maybe caught 15 or 20 Sam in a day. Done, And that's what they went for. Just that kind of action. Where is on the Trinity? You catches nice salmon. My goodness. It's like fish in a trout stream and you're catching a £15 fish on light tackle. Doesn't get much better than that. Now It's a lot of fun. And and this year we get we get plenty of opportunities every day. So it's it's actually been a good year. And you think that there's ah good number of fish in the river. I do. I think in the last 10 days or so there's been 800 fish showed up at the hatchery. So and there's and the were injunction. City's been seeing fish moved through every day. So I think that the others there's a good number of fish in the system already in that upper stretch that top 30 Miles, and I know there's a bunch of behind him because I saw him with my own eyes last. Yeah, yeah. That's the that's the beauty of the paternity. A lot of time you can look right down from the highway, turn out and see the salmon moving up from ripple the riffle. That was good at a lot of fun to watch. Yeah, it really is. And then this year, Matt, I think ah, you know that the actual last day of fishing for adult salmon on the lower clamor down below which effect to the one on one bridge on that last day, which was a Monday A big run of fresh salmon came in. So those are probably the ones you're seeing down by Willow Creek. Coming up the river. I would guess. Have a guess, too. Yes, sir. There's and there's plenty of fish in that little planet. I was there last week. Swing implies steelhead and I watched and they still feed Jax and I probably saw 40 or 50. Salmon cod two days they're efficient. Yeah. Did you get a steelhead over there? "Phone and my gun in the truck. I intentionally travel light so I can move fast only planned about thirty minutes and thirty back wearing running shoes. Shorts t shirt and a bright yellow baseball head notably. The hat is so nicely bright. That friends say it's probably scarce fish. I began running about two PM as the first few miles a relatively flat trails follow a creek that flow off a mountain through canyon. There are several trails that branch off heading up in the mountains. I'd prefer a particular trail that follows the edge of the canyon with the creek flowing below. It's absolutely gorgeous before the trail get steep. It takes you through a large Aspen Grove. There is a point about thirty minutes in where I plan to turn around. The trail becomes increasingly less worn and more difficult beyond this point. I have hiked that area many times. Something felt off this time. I didn't feel normal. I moved through the Aspen Grove before taking a steep trail up a mountain when I got a strange feeling I stopped notice. It was quite something made me look up the mountain to the right at a point. Several hundred yards above. I noticed a large granite rock formation. The area is off trail so I'd never looked there before I thought I saw movement probably a black bear as they are coming. I was curious so I pressed on definitely not scared at this point but notice the silence. I continued hiking and reach the point ride plan to turn around decided to hike further hoping to see what caught my eye earlier the trail becomes overgrown and harder to follow at this point so I had been farther than this before but never off trail. I noticed an aspen tree bent over the trail. It had been up rooted in broken off. The tree was green so it was odd could have been a lightning strike but wasn't clear locked. Maybe another eighth of a mile and then took the right off a trail heading in the directions of granite rocks. I wasn't concerned about getting lost. Since it was easy to orientate myself with the Canyon and creek a hiked the trail toward the large metal with many granite boulders reflecting on it now something was compelling me to the meadow I climbed scrambling up the hill to get where I could sit got to. The meadow unnoticed. The rocks look like look like Granite Fortress. I set down on a log and enjoyed the scenery looking down into the Canyon and the creek below the metal and rocks behind me looking around. I didn't see any animals suddenly noticed it was dead quiet. It had been a sunny warm day. With birds and bugs everywhere wasn't scared yet. But notice the extreme silence. I could hear the creek before so. It wasn't as startling as it is now. I began taking off my running shoes. Notable is this isn't something normally do since I have permanent nerve damage to my right ankle. I Walk and run with a limp and sometimes where a brace I remember feeling like my feet were burning wasn't particularly hot button over seventy degrees Fahrenheit. I was becoming unnerved by dead silence and started tying my shoes. This is where things turned weird. I clearly heard my father called me by my first name. The voice was loud and came from behind. I talked to my father earlier in the day. He was at his home in Georgia. No Way was calling me from the rocks behind. Immediately I became overcome with fear. Difficult to describe how overwhelming it was. I began sweating and shaking. It was like knowing lioness stalking me without seeing but more terrifying definitely not fucking around at this point I stood up and looked behind me and saw nothing but large granite rocks started hauling ass down the hills toward the canyon trail below absolutely terrified and I was feeling like something was chasing me. I literally stumbled and fell and rolled down the mountain. I got back up but couldn't recognize anything. It looked completely different. No Canyon Creek or a trail. It was cloudy and I wasn't in the same place anymore. At this point I started hauling ass and what I thought was the right direction and eventually I found the trail and recognize my location. I sprinted through the Aspen Grove back to the truck. I didn't look at my watch. Not sure how long I was gone. I was so terrified. I could hardly drive home. Not sure what happened. But I've never been so afraid in my life. I know something was stalking chasing me. Yes I have gone back to the area from time to time but I'm too afraid to go to the same metal with the granite boulders. I've considered going back but well armed but my instincts tell me it's a bad place. I will never hike again without my three fifty seven. And haven't since something scare the hell out of me and I feel like I was close to being a victim I trust at my flight instinct kicked in for.

You also obviously don't want to take a wine that is really fragile. or the old and can't be jostled in the car. You want something that's fairly resilient and can stand up to being moved around. Don't take your best winds to restaurants restaurants that have poor glassware or it's going to be death by little Gulf ball glasses. Some people take their own stemware to they come with a full case. Several half bottles are always great idea so that you can pair by the course. Also if you're bringing wine make sure it's not one that the restaurant already the offers on its list exceptionally you've got a rare old vintage of the wine because it's like arriving Thanksgiving dinner with your own Turkey. Don't do it so if they already offer that wine on the list. Don't bring the same wine. Let's see what else avoid homemade wine unless you are an award winning amateur. Please do not skip the homemade. Wine often refers only to wine so spirits beer and fortified wines may be discouraged or even illegal so you WanNa make sure that you're bringing the right beverage wine. You might want to consider buying an insulated wine case especially for bringing Rosa bobbly or white. The has to stay chilled. Maybe has some compartments. Let's see what else can I advise you to find. Some restaurants more formal restaurants will want to store your wine out in the back. Just make sure there's no oh mix up. Of course it's a mix it up with their truce. Who cares even if you bring your own wine especially if it's a fancier restaurant I'd still let the server top up your glass rather than you just helping yourself go with what the typical service etiquette would be is if you bought the wine off the list also also final tip? We don't WANNA use restaurants as cheap places to drink where you know we only order a little bit of food or a bit of tapestry and then drinking in lots of our own wine so there you have it all right. Let me just give you a few quick tips on chain restaurants so I think most chain restaurants. Don't use their wine list to attract customers.
