By the way you're you're talking about your restaurant that's a good question. I think that it depends for me. It's about ambition and control. You know so I really. I've been asked to other restaurants. I've looked at other sites. We came very close to doing another restaurant. A couple of years ago and Mayfair and I'm always thinking about how to grow how to how to be better and sometimes I think that for me. It's about being better where we are. It's about everyday come in with a set of problems or or thinking about what to cook how to make the restaurant. Beautiful and how to make the waiters more knowledgeable in how to work with the chefs. Who want to learn more about ingredients in how to make our pastry kitchen know. There's so many so many things to do in the restaurant here that would it be possible to do it and have more. Some people really can do it for me. It would be really just so important to know that I if I did another restaurant that it would be as good as this one and this one. Wouldn't you know get less good because I was distracted by another one so I never thought of it as sticking with it because for me I have the best job in the world and I come in and I work with brilliant people and it's exciting

S. secretary of education Betsy to boss who was on the show yesterday I think she's a terrific public official as a member of president trump's cabinet now the governor of Michigan governor Gretchen Whitmer not so crazy about her she has done some one eighties she has been inconsistent and now apparently her actions to try to act on the China virus infection in America have drawn literally a massive protest against her and threats of recall so I thought we got to talk to Scott holiday about that Scott is with our affiliate station W. I. L. as in Lansing which is ground zero for these protests as well Hey Scott welcome back to the program Hey thanks largely to being a it's been too long and of course we also had the little side issue that apparently Gretchen Whitmer didn't think before she decided to blast Betsy to boss saying that the the device family was waging war on her at a time when the device family which is very wealthy family was also apparently producing mass or providing massive amounts of personal protective equipment for some of the critical functions that are going on at Michigan barely that that is caper notice when she when she threw that little brick bat at the secretary of education give me a perspective on what's happening and what happened today in particular with these protests in Lansing yeah one Lansing today there were it was called the operation gridlock and the idea was to basically have a a socially distance protest normally when you have a protest in downtown Lansing it would be lots of people filling up the capitol lawn that were a hundred maybe two hundred that did get out of their cars but today was very unique up police said there were maybe up for five thousand people involved but it was simply cars filling up all of downtown Lansing even out onto the highway that runs through downtown now the only gridlock they were causing with the phone because downtown Lansing is all government workers and a lobbyist and everybody's working from home right now but it was certainly an impressive showing in cars honking horns all day long and there were some people that I guess I got out of the cars and wave flags around and it was it was an impressive showing so they certainly made their voices heard I mean it's kind of the goal was to get some good TV footage and some footage stand about going on social media I think they they succeeded yeah it was very visible to the whole country and their protest look an awful lot of as you know are under these kind of restrictions no matter where you are in America there only a few states that haven't gone along with that at all but what is going on in Michigan that the governor does not seem to have the support of the public in taking actions and some of the action chief Tate she's taken are almost laughably over the top like saying you can still go get food but don't dare you don't you dare buy a gallon of paint at home depot or don't buy any garden seeds to get your garden going so what some people are calling virus guards this year because who knows what's going to happen with the food supply I mean the idea that that she would lock down many things that don't seem to have any direct application to actually keeping people from getting sick well I think the the governor's done not kind of a daily briefing much like the president has been the one she gave this afternoon of the protest was kind of winding down I think was a good example of where she's coming from she cited one of the survivors that had met with the president yesterday who was from Michigan and she quoted as telling the president that the only place he could conceive that he might have caught the virus because it wasn't around too many people was from a gas pump and she was citing how long she's been told that the virus can live on well services like gas pumps and it's pretty clear from what she said and what she's trying to do that as she's trying to keep as many people home as possible by whatever means she can and that was one of the things were you know you can travel to a second home well that's cottages in Michigan which it sounds like you're familiar with a lot of people would be traveling from southeast Michigan which is the hub of coronavirus here in Michigan and traveling to other parts of the state and in her mind going through a lot of gas stations and touching a lot of things and potentially getting a lot of people second from what she said today it she was basically you know pleading with people to please stay home I I get the sense that her her alternate goals can we get this thing open back up by the end of the month and she's kind of willing to do whatever it takes to keep people home enough that takes doing some unpopular orders looks like she's going to

And they've got this real inner it's it's the camaraderie with these women. It's just fun to watch them. Make these horrible mistakes. Is that how you felt when you were first? Approached about doing the series. You know when you when you come from a show that you've been on for almost a decade your next your next choice you you have one follow madman. Well you gotta think something. I would really want to do every day because I may be doing it for ten years. I know what that's like. You know so. You really want to choose something that you could imagine doing. And I thought I want to work with these women and I want to go on this wild caper. It just seemed like such a laugh and so weird and different and it's also very intense so I do you know I didn't sort of consider like a well. I'm going to be incredibly stressed out every day and this high anxiety level and the stakes are really high. Of course you have to play all that you know so. It's kind of exhausting. But what if and now? I'm assuming that you and men ready get along really well. We did from the beginning we did. I knew may casually we had done some Animated things together so met each other through that I had never met Reta I in fact called. May and I said you know I'm thinking about doing this. Show I I hear. You're doing it what he thinks she's like. I think it's going to be the best thing ever and we just like hit it off like house on fire. When we all met and here we are three seasons. And that's we know each other so well we can order lunch for each other in the other person's around we're like no no no. Do not put tomatoes on reticent. Please send it back. We can't deal with it We all know each other and we and we know how we react to things and we sort take care of each other well. It sounds like you know I'm making light of it but to be on a series where you work long days. Yeah so you. It's good if you get along. It's amazing and because we are playing these really stressful intense scenes to have people that you love so dearly to laugh inbetween takes you know. Make the day lighter. It just changes everything. 'cause you're right we're there for fourteen hours a day and and You know it's it's nice to have like comfort him between and just get pissed off together and be happy when something is really making you angry. Oh Yeah we've got each other's back if something's upsetting the other. Were like yeah. Yeah what she said. Yeah we're team because we're scary you know and you could. You could do that. I ended up playing a lot of characters that have that dichotomy that they have come across as an innocent. But there's this underlying thing to drive to firefly. I think it started with firefly's the first time I had a character like that. And maybe maybe maybe one lead to another. Maybe when they opened a script they thought now. Who can do this? You Know Christina Hendricks this are doing on firefly so maybe one led to the other. Because I don't think I'm duplicitous. That's my own personality. Christina can do cold and creepy short she can go to increase drake's he's ready to do it for those people that are having caught up yet or just beginning to catch up with good girls. Who were you playing describe this? I play your typical midwestern. Mother middle class hardworking organized but found herself sort of on autopilot and lost maybe sight of her dreams or what her needs were and each cheating on her she found her husband is cheating on her lured that Matt Lillard just so great And then my sister who's a single mother is struggling to keep her child protected and safe and in school and my best friend has a daughter with an illness. And so we all find ourselves in this place where we need money to sort of take care of our families and keep roofs over their head and we. We decided that the best logical solution is to rob a grocery store. "We spoke Oke with wo Chan about their poem. June eight the Smiley Barista remembers my name. I was trying to write a sonnet day about my day and I was thinking about that practice as a morning practice with a you. It was one of Japan's most rewarding writing experiences. But it wasn't easy ahead. This friend who is a horrible of and he was saying you know the only essential fear that people actually have is fear of the unknown in writing. You're constantly poking against the unknown. Chen says they're too scared to write all the time. And that's how you know you're writer because it's terrifying terrifying to do it and so I would always start by just saying like what I did or something I did and then as it was going it gave me permission to start asking bigger questions. Here's wo Chan reading June eight. The Smiley Barista remembers my name. Beauty on earth so blue even the cheese flowers a culture with no democracy yesterday for example. I ate the same sandwich I eat every week. EGGPLANT roasted red pepper. I only a for Kacha jammed full by Ruger capers. sweaty in Brown's butter. How have come to love routine? I'm thirsty and a bash. It the fabric of my childhood underwear triple axels and the wind while how the whole neighborhood watches me. Do emails go to therapy. She shed revenge for forgiveness. I said it I forgive you. Slipping like a key beneath adore. Were never was a house. Attached is it beauty on earth so blue each side stalled your touched for standing the sun. It's fat Macula born down grips. I wish I saw I fear here. I heard I dream like an emotion. This is not a feeling this can be I think a conversation. There's there's so much sensory wonderfulness in this poem. If you are not hungry yet you will be when you hear the description of the sandwich. I think what's really interesting about this poem as well. It reaches back to the Patriarch in sonnet. Although it's not doing the strict you you know rhyme scheme of that it is divided into an octave in assessed at light the traditional patrols on it is and it does kind of have at that moment of discovery switch. You know what we call the Volta in the sonnet where something turns something changes and it seems to me what what happens to really turn this poem and give us a real revelation. Is this concept of forgiveness. She shed revenge for forgiveness. I set it. I forgive you and that sense of that says stat moment reaching back up into the the previous part of the poem the eight lines that begin it really That really comes back to succumb to interpret and to reveal everything thing that the poet has been enjoying in the first eight lines of the poem. It seems like one of the things were getting from this palm at at least is that forgiveness can enable you to experience the world differently and to redouble your pleasures that you already taken the world. It's a curious process to and what I love about this poem. How it got me to think about it because I'm sure many people I have this feeling the same every week? And when you do that you can ask yourself like. Why am I doing exactly the same there? There is a sort of ritualistic daily life that we rely on and yet moment to moment that sameness is overturned overturned by so many different kinds of things whether it could be something or somebody that you see or a memory that comes back. That's part of the the sort the fabric of your life or the neighborhood. Everybody watching each other and there's something very alive and it. It's not the kind of ritual ritual that locks you down what I like is it opens you up. especially that sense of urban life. And it's sort of descends wonderfully wonderfully from Frank O'hara it does feel like you know you know Harris Poems. He's kind of writing to and for his own sort. Sort of group has friends. His neighborhood and this has the virtues of of inaugural poem exploit its open wide to all kinds of different people and open wide to the kind of beauty and forgiveness that as the end of the poem says in. Volta is not a feeling feeling this can be. I think a conversation which is so ingenious because it can be a conversation. So it's not making taking some kind of presumption but I like even that it says I think which is conversational but it's also literally true and be I think a conversation sation because you have to think conversation into existence and ultimately that's what this palm does it sort of opens up from being thirsty and abashed. You could almost feel the poet kind of hunkering down you know at a meal. And then in the it's surprisingly generously wonderfully at the end. It's sort of throws open. The poet throws open their arms. Ready to keep on to keep going on to survive to see what happened. Um to taste what's possible. Yeah absolutely and we know that this is dated June eight. We know from speaking going to the poet that this was a series of poems that the poet wrote in that sense of. There's something in every day. Say That you can write about that. Can Be part of a palm is just really inspiring and again I love that idea of of Sameness routine habits. You know. These are things that we don't always think about and yet in a poem we can can and they're going to resonate and taste and smell and all those those things differently and I agree. There's a kind of joy joy that Frank O'Hara took in his walks and his movements around the neighborhood his conversations with his friends and you know the sense and so here of beauty on earth so blue even that she's flowers a culture with no democracy. Took me a few reasons to to get past. Has that first line break. But the the notion that the flowering cheeses culture with no democracy was something to be celebrated as sort of like got joke in the first first couple of lines their ranks. We think oh a culture with no democracy. That's not that's not good but in the cheese culture it actually it could aid so You know the idea of grasping on to something and saying okay. This is not a metaphor. Actually I believe this is a sensory experience having to do with how fully I'm experiencing my lunch and my life in the neighborhood and my world it Kinda does make you WANNA go out. Side skirts. Look around and you know for me just that as it progresses is towards the structure or routines of its end as a sonnet. It flowers there where it's so beautiful. I said it I forgive you. Slipping like a key beneath the door where never was a house attached and then as if that's not ravishing enough you know beauty on hurt so blue. Each aside stalled your touched for standing the sun. That's so arresting for standing in the sun and it sort of helps you keep your feet on the ground a little bit the two so I find this to be. Just a a wonderfully memorable heartening and inspiring. I might read it. You know over and over again in my routine or something but you know as you said earlier. There's something in this house on. It should work. That makes you go back beginning beginning and read again and light of we've ended

"Well hi hello and this is John with passionately podcasts and today for travelers. I am sitting down with Craig Craig from Nuernberger Games Craig by John. How's it going going really good well. I guess it's awesome to have you back on the show. Last last time we talked you had released capers and we're on the verge of the release for Capers Noir came around last time when was begging for money with kickstarter and I'm begging for money again so hello Jim. Hey No. It's one of those things is were. The kickstarter market for games really has blown up. I actually just did an article on our website for passionately dot com talking about how kickstarter really has kind of become its own gaming market in a way that its own sustainable separate market absolutely I'm going to be at a convention in in a few weeks and I'm on a panel for like the state of gaining today quote Unquote I know darn well. That's going to be one of the things that we talked about because has kickstarter and Patriot on and Indie Gogo. I guess go yeah yeah. to a lesser extent are ways for people as you get their game stuff out there that helped to bypass some of the more traditional routes that are sometimes difficult for indie people to kind of get their foot in the door. It's only getting stronger like every year. There's more and better games that you can think of a game. There's probably something out there or coming soon to a kickstarter new. I'm I'm really excited about it. Because usually you can log on to kickstarter and find anywhere like like on the crazy months where it's just completely exploding bloating you can find up to four hundred different projects on kickstarter board gaming. RPG area kickstarter alone just for things that are coming down on the pipe. It's pretty wild since we last talked. You launched your discord channel as well which has gotten very popular nice little community of people in there yeah and you also so. I had another smaller game that you released. I released a game called die laughing. Yes that was that happened right before. It's out in its kind of seeing some sales. People are starting to really like it. Obviously the big one coming up next is you've got new capers setting that you're coming out with do it's another supplement kind of in the vein of what I did with capers noir which was with no are kind of like both of them nor in the one whereabouts talk about kind of service supplements in the in the form that they provide you with new game. Stop you know new new player options. New Powers new rules expansions. GM tools all those sorts of things to kind of build out the game but then also with each of them. I've done sort of I've progressed the storyline of capers forward from the twenties twenties on the core game said during the prohibition era with nor it moves to the forty s and becomes sort of Ain Crime Noir mystery history sort of game with with a little bit of a horror element to it and the new one is called capers covert which carries it forward from the forties to the sixties and is is built around all that extra stuff all that game material but also building out a setting in kind of a theme where it's like maintain sixties classic James Bond Style Super Spies in super villains but with superpowers 'cause keepers is all about criminals and cops with superpowers which I think is a awesome awesome idea some of my favorite games in the realm of RPG's. If you can grieve things into styles I think that my top two are usually superhero and then horror games right there at the top but next in line is usually a spice style games because honestly I. It's an issue that I wish we had more access to and like my craft from crafty games. It's one of my favorite games of all time and so anytime. I see that option for that setting. I get excited yeah. It's one of those that it gets the super spy or you know the espionage genre get sort of a a treatment in the classical sense whether it's based in history or whether it's modern day every so often all going all the way back to there was a James Bond Bond we'll playing games from way back in the early to mid eighties maybe and that every so often it also gets kind of a treatment in another genre where you can have a spy kind of story. That's built like as a kids game where you know or suspect story. That's build kind of in a fantasy setting or investigative instigative kind of game but despite angle to it where the investigation is all about espionage subterfuge well espionage as a subject itself is really a very broad term because it can go from the things like James Bond and things of that nature but you can even go into realms in my opinion of things like the Ocean's eleven and things like that because a lot of the same skills a lot of the same themes seem to cross over for sure. I mean the your classic Heist. Scenario is is often very much kind of in that round because in order to pull up a heist. You have to learn a lot of information. There's often spying. There may be double crosses. You know there's something to be said for going up against some greater whether it's law enforcement or another criminal in trying as you pull one over on them which is also a great part of the espionage generate general them getting the better of somebody. That's a smarmy if you will all of your kind of spy kind of they're really cool ending which is certainly James. Bond sort of thing where he super suave and sexy. CEO knows it well. There's there's a little bit of a cheek like hey. You Know Joe Well. There's always that other side to the whole spy thing especially in the James Bond stuff stuff is that there's always this almost other worldly nature to it of here are spies. You're saying access into a world of power and and wealth and prestige a lot of times that you never you know you'd never imagine Jewish or there's an built indicators covert. Where you're you know you've gone from the the prohibition era of it's just about alcohol and gambling and racketeering and so forth to by the time you get to capers covert. It's like you're playing If you're playing criminals you're playing characters that are out to like dominate a particular technological field or Excu- take control of market or to gain influence with government and then the the law enforcement characters are seeking to stop that to keep the wool pulled over the eyes of of black lists general because the general populace doesn't want to know that there's this massive chess game going on there. That's where people are toying with their lives but that's really kind of what these really powerful influential characters these larger than life characters are doing at core. If blofeld gets control of anything anything. It's going to impact you yeah moving into the game setting itself. I mean were looking at nine hundred sixties era of spies. There's so many things in that theme that kind of always kind of take hold such as in a lot of those that era there was always the big bad there is always the big boss or somebody somebody pulling the strings behind that was like the main any enemy or something like that does that figure into the game any it does extent also because the capers games you can play the law enforcement or you can play the criminal element and so if you're playing the criminal element as characters you could have somebody at the table be we sort of the blow fouled or the the doctor evil you know type car and then he's got somebody else. That's Kinda find henchpersons. Maybe someone else's the assassin and you kind of peace a team together that way or you could be playing like there's this kind of almost illuminate organization of individuals who are relatively league equal in power and on par with one another who are scheming together. You know it could be a large organization where all the characters are kind of like that. If you're playing lawn for Yap any direction not want yeah obviously you continuing with the same system that you created for capers moving into Cape covert doses seem system out expand expand some things in two leg for vehicle chases. Her car chases combats wealth while zooming along. There's gadgets gadgets gadgets so there's a whole a whole subset of rules that provide some kind of interest. You know all all your kind of classic. James Bond style gadgets the GM mm side of things. There's backdrop that is set in Las Vegas because I couldn't resist having all the casinos in the sixties kind of rat pack vibe of Las Vegas against but then there's also some shorter write ups of a number of cities around the world. This is the first time the capers has gone outside the United States because it's not really you know like a James Bond high-end espionage story unless you're going to Rome or cash or Hong Kong Yeah Art of a story. Oh definitely and that those were all classic settings picked and chose of you included London because it's easy like you gotta have like an mit kind of component if you're going to pay homage Mitch to to the bond stories but then doubted them. There's Honolulu in there in Hong Kong and Rio. There's a bunch of cities that get like a one page treatment with just like enough information to for you to take your characters there and do a thing in them or the rest of that story or they kind of go back to Vegas. I WanNa play right now and I wanNA layer in a volcano. Everybody wants to volcano lair. I mean if you play an espionage game. If you're playing the bad guys at some point you one layer that's like in a submarine always on the move or it's in a volcano for the very tip top of a mountain absolutely absolutely so other things. I've noticed about the game obviously I think you can nail the first on your discord channel then you nailed it on facebook. That's where I saw the banner art that you did for this in the art that you've released Justin that immediately caught my attention and it is amazing workup to agents and it's very orange and yellow and red. That's part of of the front cover pissed. Beth finding did did all the art for capers. She did all of our. She's doing all of covert. I'm going to have her do capers artwork until I run out of capers ideas. She's on board for that and I love capers. I Love Noir. I really liked the artwork in those books. This cover is my favorite favorite cover. That will probably stand the test of time too because like you're always kind of like wow it's your favorite because it's new right but it's a really beautiful cover ended its set on a green back on everything so like the reds and the Greens kind of pop in inside so very colorful engaging oh yeah he's got to really cool lookin' super spies on the phone for me when I see a cover having a background in designer everything else one of the first things I ask myself when I see it is if I saw that across the room or if I saw aww convention hall would grab my attention would I would. I gravitate towards it and I gotta say the colors and everything else on it. I love that's the kind of cover that if I saw that I'd be like hey what is that and I'd walk over and pick it up and she she knew what the Color Palette was just kind of general and being that it's sixties like there's a lot of very specific the colors there are colors that are kind of sixties right you know like an olive green and an Goldenrod and burnt umber were kind of color and so that the that color scheme and those types of colors kind of permeate the rest of the book as well so it looks nice now what all these things that you have been doing. I mean you have with the capers getting the game out following up a Caper snore and now with capers covert just idea after idea idea I do you have any other ideas. I mean I'm just asking general. Do you have any other ideas already where you want to take the setting when I decided to to to do supplements. I figured if if I'd made no are in that did well enough like if you know the kickstarter actually did okay that I wanted to make more. My plan was to essentially make three total water is number. One covert is number two in the third one that is in in process right now. Actually I was writing on stuff over the course of the last couple of days. That's going to be capers bruce off world which is going to take the cops and criminals into like a nineteen twenties Retro Future Outer Space Kind of setting Allah Flash Gordon Buck Rogers yes will also include rules for time travel and so that can tie all of the settings together so you can take your character from one era to the other that is awesome. I cannot wait to see these games. Come up now zones in the works. I'm still writing stuff. I've evetually gotten contracts out to two other writers to help with some stops. I've contacted to.

It's Officially the Best Time of the Year to Cook

"Talking about the fall playbook from the September issue of Bon appetite and really should have been the whole Lsu but we'll talk about the issue with the issue Chris. Do you remember when this story is being conceived and you you and Andy and I were talking about what this story could or should be. What was what was the mission we sort of decide upon we wanted to get into sort of get people into the mindset of like okay like summer's over but that's not necessarily a bad thing like we want people to be excited to get back into the kitchen and you know just give them like some recipes that that are kind of simple uncomplicated whether it's something that cooks quickly but it's kind of hands off you know or some combination of Maimi? It's longer cook time but I'd like with zero. Prep just give people an excuse to feel great about getting cooking again getting back in the kitchen. A one phrase that I have bandied about is the Shen situational cooking because I think that dictates a lot about what we make when is it. Is it Sunday when you've got all day to sort of braise something in your job in Tuesday night when you wanna eat something good but it's six twenty eight. PM and you haven't started cooking yet. That's a lot of ways we sort of approached these recipes of which seven recipes Andy. I don't believe so one of the recipes got cut so yeah which one guy cut. I don't understand got cut it. It was it was designated to become a digital exclusive yeah yeah. It's like the right part which one was it. Was the lentil bowl well. I don't think it was called that I think it was like it was like girls wasn't with with the Spice Chili oil and then it was just like I am just going to call it a lentil bowl for now 'cause it got cut. I think we realized that people only want to work so hard on a lentil bowl. That's true and it took a little bit of doing. I don't know I do get excited like that. When there's fall there's a little bit of bite in the air and summer's over in summer is great. Go to the beach grilling all that but it's nice actually just get serious about wanting to be in the kitchen. Point your cast iron skillet point out your Dutch oven getting your tongs and cooking again yeah and having the patience to really think about what ingredients I mean th you should be thinking about ingredients around but really putting the time in for cooking the dish you wanna be cooking the first recipe this. This is Morocco recipe right now. Oh yes that's very interesting interesting. He's got all this pasta. So of course I wanna eat this just by the title Creamy Pasta with with crispy mushrooms. Yes I wanted to come up with the positive I've done so many over the last. I think almost four years here but I don't think I've really done a creamy creamy pasta dish with mushrooms. I love Pasta Love Mushrooms. I was like the smick sense and it feels very fall and I thought this could come together fairly quickly and that was my hero and then we do a lot of creamy pasta from the standpoint of Oh you know glossy emulsified butter. Oh yes but I was like Andy. Just put cream in the pasta. You know how you make creamy pasta sometimes if the move fast and and you know not break things like just put cream in the pasta and my life I started twitching when he said this heavy cream andy make it delicious. I don't know how many recipes I have have that call for every cream but in this case I did go for it and it really did make a difference. It just made it easy. It was like a nice little thing crutch to the US also when you blend heavy cream and then throw some parmesan cheese it is so good. Is that the problem with Italy one of those again on the streets as the pastas that you can't stop eating. It's like you don't want to see a calorie counter going but it's amazing sorry so this one. Mike you can use either just simple criminally mushrooms. You can find any market or you can go to the farmer's. There's market and splurge on a lot of interesting wild mushrooms and re introduced different flavors and textures guess a question. I always have when I love a mushroom positive because it feels it was very autumnal. How do you cook the mushrooms themselves so they get Nice Brown and caramelized and Krispy before you know blending with the cream and all that because I sometimes I get Kinda just squeaky and squishy and you know what techniques so sometimes you if they're using a lot of motions Russians in this case we're using a pound of mushrooms. You really want to do it in batches. Most likely I like tearing my mushrooms up a lot of us do that and you end up getting these kind of crackly pieces and so they get Brown because also when you cut him up the end up looking like canned mushroom sometimes they just don't look right I kind of tearing them to their natural shape and and then I took them in oil in this case extra virgin olive oil and then I just go pretty hard undisturbed until the brown around on the edges to they develop a crust. Yes over yeah. Give it a little bit of a toss. I don't even know if I really flip flipping each individual mushroom. If you work in the line my new restaurant shaking I think I read somewhere and wait a minute petite mushrooms to develop a nice caramelized crust you. I don't add salt till the very end. Assault draws out too much moisture. Is that correct yes. I don't see my mushrooms until both sides are deeply brown and crispy see around the edges. Ah also some shallots. I love that smell when you shall. It's there's no sort of introduce a pretty classic yeah and then you get all the mushrooms on add the shallots shallots You're not trying to get too much earlier softening them and then wall while you're doing that. You have the mushrooms ready to go. There cooked the shelter going. you cook your pasta and you're going to cook it. Just under all dented like two minutes before for and then I add the pasta the heavy cream and let that go until the cream has reduced lightly and then I add a bit of zest and juice from half Philemon ooh. There's a lot of the cream is so heavy who you have creaming of butter and your Parmesan yeah so there's quite a bit affect and you have extra virgin olive oil so you need a bit of zest and juice. You need that acidity kind of brightened things up and bring everything back to life again. Yeah couple of tips here love the pulling the mushrooms apart pushing the mushrooms by hand tearing the much mushroom by hand I love not salt in the mushroom still after they're nice and Brown then thirdly what you guys in the test kitchen seem to love to do is use a Dutch of in when you're sort of like tossing pasta with whether it's mushrooms or any sort of saw that you that is high enough side toss and swirl and get everything inc.. It's it's such a good little insurance policy for being able to really work the pasta around and like let's face it even just twelve ounces nevermind a pound of Pasta in the largest skillet you own. It's it's fine to work. Bring it over to the sink to try to toss pasta over that so that you don't get all of your stove okay. I'm going to bet that this is all right. Let me say what is the next one. It's called Sweden saucy pork chops. I'm GonNa Citrus Morocco too good. It's kind of a dad families or not honey over to pick up. Some pork chops underway right. Oh my God all right. Wow that's how you really see me. Hunched over like the plate of pork chops like not talking. Can anybody on a Tuesday this to cope we buy some good bone in rib pork chops but you call for one inch thick one so they cook really quickly quickly but so you don't have to overcook them you add some sugar to sort of Maryland Dryer up. Whatever so we get a quicker caramelized cross yeah just just salt in a sprinkle of sugar on the pork chops because the thing is pork chops an in a perfect world we all be buying like pastor raise heritage breed pork and it would be super fatty and rich and unctuous? You know just whatever you do to it but this is kind of optimize to work with any pork chop. This is like you know and this is a a method of cooking them that really mitigates that tendency to have them dry out and get like really kind of like cardboard so adding that little bit of sugar to the outside means. You'RE GONNA get crazy amounts of color within just a few minutes. You don't need to overcook that first side in order to get the color you want and that is like that is like the death of like the one inch inch thick pork chop. We went back and forth about what pork chop to us because we'll all of a sudden you want like a much fatter one in order to get got like a really great crust without using sugar but this just like. Let's get that really quickly and then you're really just you're. You're just you're picking that second. Side very briefly can interject with any piece of protein. One side is always going to get more done than the other in that side gets the beautiful cross that society serve up right. It's what's going on underneath doesn't matter yeah exactly it's like the old sort of old school. French like approach which is like you have the presentation side and then like who cares what the second side it's super yummy super easy pan sauce with some red wine vinegar that sort of introduces acids and capers butter and then disorder garlic and in the water. It's Rosemary and it all together. Yep and you serve it and it probably start to finish. How is this dish. Take fifteen minutes if that if that yeah I mean twelve twelve so yeah. It's it's great. You know like that kind of like that wet cook. You know kind of environment. Just like means like nothing's going to dry out doing when people see like some like pants author very impressive fastest like no that's just like cooking the pan and thrown much ingredients speaking of hands when I saw the photo for this sheet Pan Potato Hash with fixings and it was beautiful she he tray of these beautifully shingle potatoes at our oven. Crisper looks like homemade potato chips. I was like Oh my God that look so good. The question is which one of you develop this Chris Morocco. Wow okay okay yeah. That was me at this is this is. Andy doesn't do brunch brought. She's not doing potato doesn't brunch. Andes Andes Andy's protein smoothie. He's busy working out on Sunday morning onto this again. This is a very bad move like making brunch where the family well it look potatoes you can you can make them as complicated as he want where you can make them as simple as you want and this is just a great way to take a lot of potatoes and make them unbelievably. Lee crispy Jammie Chewy. Just everything you want so big russet potatoes. You don't even know thinly sliced. D Use a a mandolin it. Can you slice slice by hand because honestly the irregularity like it's going to be totally. I liked that because in some get extra crispy tender and that's fine in the oven these you're going to be in the oven for close to an hour you know were and you're. GonNa get some that are like crazy. Crisp like potato chip and others are just going to be no more in the center. They're going to be a little bit like Kinda. Chewy Jab ultra tender so I- similarly toss him with all spread them out on a sheet trays by two and a half pounds four twenty five forty to fifty minutes and an almost that's when you take it out almost with goes tray of nachos chose. It's like it's some. It's like the lovechild of like palm. Anna clarified butter like beautiful kind of fanned out sort of potatoes I did. I did this video with molly. Baas mayor. Her bread and butter is in indy comics. She does a lot of indie comic work, and you can see that certainly in her art style. When capers came around, and I was looking for artwork for that I thought well. Let's see if bath can do the whole book because that's the. That's a lot of work. It'll be spread out over different times. And she was, and we negotiated all that out in the work done chunks, and I've been very happy with it made my art direction is. Straightforward. Described the basics of what's in there in the scene. and. Really let Beth kind of. Make her own as possible occasionally. I'm get really picky about something like usually the front cover I spent. We spent a lot of time going back and forth on the front cover, but a lot of the artwork it's. It's her envisioning this game world that I've come up with, and she makes good choices because she knows her way around stuff. The artwork is a comic book style, which is appropriate I think for. A game set in kind of first of all super game, and then also game set in the earliest days of comic books, so she made a lot of great color choices. The colors tend to be a little more muted, but with some good accents and things there's different spots in each illustration. It really pop and bringing illustration alive. I've been very happy with this and I love working with she's. She's a joy to work with. She knows her stuff. We trust each other and I. I've used her quite a bit on my projects and hope to continue to use her in the future of fair. You've also some great. Add ONS for the CAPER systems such as Moxie cards and playing cards as well as a series of adventures to get players into the game. What can you tell us about these? kind of went a little nuts with the support materials for capers. I did a lot of the stuff that. I had done previously for murders acquisitions, some adventures, a rules one sheet. Pages that you can slip into. GM screen for people who like to have that a couple of little things, but then obviously the playing card thing made sense to like drive through cards does a pretty good quality deck of playing cards, so made it very easy for me to do. Print on demand cards for that. I was kind of a no brainer the MOXIE cards came out of. Me Running out of stretchable ideas and figuring hey, why not make more work for myself and get? Another deck of cards and the moxie cards are are optional..
