In New York State, there is a sales tax on sandwiches. It's in the law, if you buy a sandwich in a restaurant or a grocery store, in most places in the state you pay close to 8% tax. Now, that's simple enough, right? We all know what a sandwich is. It's something delicious, slapped between two slices of bread. But when it comes to taxes, nothing is simple. I have here New York State tax bulletin ST 8 three 5. It's entitled what is considered a sandwich. This document is a couple pages long and it goes into inscrutable detail on sandwiches, both hot and cold. For instance, you don't have to have two slices of bread. A sandwich for tax purposes is defined as and I'm quoting here. Made on bread or on bagels on rolls. In pitas and wraps or otherwise. And regardless of the filling or the number of layers. There's this whole list of examples, a buttered bagel, officially that's a sandwich. A hot dog sandwich, a taco? Not a sandwich. But a burrito? According to the state of New York, a burrito is supposed to be a sandwich. A burrito.

"Lunch But burritos are salads I've only had salads there but I had previously only done burritos now I'm doing hard shell tacos like my new thing Oh I have to try those But yeah I would eat chipotle for breakfast I think a lot of people Well they could make the breakfast burritos Did you guys have the David's king tacos and we had hot breakfast here That was like the highlight of the week on Friday They're starving King David tacos Yeah we're not getting any more of that No more You mentioned looking at technicals And I saw an interesting Bitcoin chart that I sent to you and Paul I also just sent it to you Showing that with a 6 day winning streak Bitcoin may be ready to take off And this is an asset that I think could use technical analysis more than almost any other right It doesn't seem to have a lot of fundamental action Yes and I will take this chart on and I respectfully disagree with the idea that it may break higher only because if you take a look at this chart on so many different levels there's a lot of different topping patterns So you see these two massive tops That could be a double top to go back down toward 10,000 but in this second area of congestion over the course of 2021 in there something called a head and shoulders pattern It's basically just saying people that bought well at like say 10,000 or even 30,000 are selling to people who bought less well at 70,000 but they don't want to do it in a way to disrupt their profits So they do it over time That pattern is still confirmed right now for 20,000 So until Bitcoin gets back above it would really have to go above 55,000 or so to negate these patterns I would say the pressures still on And of course it's a barometer of risk on So it's Bitcoin Bitcoin's about flat today I should tweet this out probably so that people know what we're talking about But pretty cool But what I love about this chart is 30,000 you buy it all day long I mean that's the one Yes absolutely And I think that's what you're waiting for It's been until you know when I was waiting for it and it just didn't happen this time We didn't get the kind of capitulation that you would have seen We heard from JPMorgan and Nicholas panic so golu Good Good job No that was my first try Panic dirt so gloom Penetrative I'm sure that Nick has that problem with all people that say his name But the point is he has been one of the earliest and really most bullish analysts on Bitcoin He had a price target of a 146,000 I think it was last year Now he says that the implied volatility that the volatility versus gold implies a fair value of 38,000 which is a little bit below this Although he still has a long-term target of a 150,000 on Bitcoin Interestingly I'm curious to know what his exact time frames are But I would say that Bitcoin is a reflection of all the liquidity in the system The system is flushed with cash It needs a home So Bitcoin is one of those homes especially in a risk on environment If there is a case where liquidity starts to come out of the system I strongly believe you'll see liquidity Well that's what we're gonna see right As the food starts to support this congestion we're seeing in Bitcoin that presents bearishly suggesting it could go to the bottom We'll see I stick with Mike mcgloin on the fundamental call which is limited to mental call Limited supply of this commodity It's a commodity in his mind And presumably ever increasing demand through greater use cases That's it and that's what I've been buying And I think that makes sense Abigail doodle Thank you so much for our market update here We appreciate that as always always great having you here in studio Right now let's.

I cited by the way tom that as long as my body looks. Okay i can make up words and people trust me. that's right. that is all this talk about. Foods make me angry. I would love to hear where you come out on. The mac rose versus calories debate. I feel like this is usually controversial. Would love to hear your view. Maybe some of the failures of Fits your macro which is kind of where you come out on this debate. General like i mentioned earlier. You know the i f. y. m. if it's accurate i was talking with my son's about this in the car the other day. This idea briefly for people this idea that at the end of the day all that really matters is have you nailed protein fat percentages. Whatever forty thirty thirty or you know some of kito ninety ten died or whatever the case may be and that the actual content. Her quality of the food is not important as long as it fits. Your macro. 's this is a pain point for me because it shocks me so many people still do not acknowledge the fact that the carbohydrates derived from. Let's say six orios is going to processed by the body differently have different. Hormonal impact have different digestive enzyme. Impact have a different microbiome impact. Then that same number of carbohydrates that you get through. Let's say Not an apple and a piece of dark chocolate and maybe you know a nice plate of of sweet potato with a little bit of raw honey on it right. There's a real real difference in terms of the nutrient density in terms of the spike in blood glucose in terms of hormonal impact. And you simply cannot deny that. There's more to food than calories that there's a study that i just looked at. This was like six days ago and it showed that starchy foods can have an impact on metabolism as we know but the structural properties of that starchy food effects. What they call the nets that the digestibility and what's called the post-prandial metabolic response meaning like what happens. Hormonally into blood glucose and insulin after the meal and it turns out that that you know very very complex factors like the amyloid beta amyloid pectin ratio and the starch. Gelatinous ation process. And you know the starch. Protein interaction in the cell and tissue structure of that carbohydrate massively affects post-prandial glycemic response and insulin response in healthy people in and so you know that. That's a perfect example. That yet your slice of one. I like to make myself this in the fall right like i'll make like a nice slice of pumpkin that'll roast in the oven with little bit of raw honey and cinnamon and sea salt. That is going to be processed differently by my body than the carbohydrates from. Let's say ben and jerry's ice cream or you know or an energy bar part of it is is the chemical makeup of the food and how it's digested and then part of it. It's the sacredness of food. His work came from. It's like yeah. The i'm getting get the same amount of protein from grain finished cow. That's been you know electrocuted to death. Like you see in food inc and lift. Its whole life. You know sitting in his own shit. Know whether it's a chicken or cow at a k. fo- food operation. I'm going to get the same protein from that. As in from a grass-fed grass finished cow. Raise generally and loved its entire life and sacrificed humanely but the actual sacredness like the energy of that is different. And this gets more into the wu tom. This gets more into what you called like. Kind of like the witchcraft. But it actually is true that there's something to be said about how your body responds to caring for the planet and caring for animals and acknowledging the spirit of the animals and acknowledging sometimes their sacrifice of their death with gratitude and honor than there is just like going through life mowing through whatever calories you want as long as it fits your macro bro right so you know up. A pop tart is going to be different than a bowl of sprouted wheat with fresh blueberries or a microwave. Brio is going to be different than like you know. Authentic mexican meal with cilantro gazpacho. And you know in some some housemaids sour cream and a wonderful organic bit of of ground beef that you eat with your family you know. Or or a few scoops of like the bland way protein powder has been sitting in your pantry for two months. That's going to be different than the protein that you get from. Let's say like a like a a piece wild caught steelhead. That just came out of the river two days ago that your friend gave to you right so anybody who each holistically knows this. That can feel intuitively. I can't necessarily site a scientific study that actually looks into the microwave burrito versus like the homemade burrito with all the healthy holistic mexican ingredients. But i i'm always always aware of the sacredness of food. The energy of food the source of food the impact of food on the planet. And if all you're doing is just blindly fitting. Your mac rose with carbs proteins and fat. I think you're denying i. I recently interviewed charles eisenstein about his book sacred economics in the same way that money can strip a lot of the sacredness out of relationships and transactions not acknowledging the sacredness of food and our sacred connection with our planet can strip a a lot of the the meaning and the even even. I would argue the help out of food. So i'm not a fan for getting the impression of the i. F ym approach. I just think there's way mortar. Food and food is way more sacred than that to to strip it down to individual calories carbohydrates fat and protein. What will you have your clients tracker food still. Though it's there's been some studies showing that whether it's the macro or whatever it is they're tracking just the the active tracking food has been linked away. Loss like you have people record with reading or is that just to get you up to speed. So you know you're working with both like i have people record because many studies have shown that when you record you actually that dot which is what measured is managed or over the saying goes but yeah yeah so all of my clients i. I'm very careful because most of my clients are like busy. Exacts their people you know they're actors there are people who are just go. Go go all day long. I don't want somebody to have to spend ten minutes of their entire meal logging. What they but we do everything from quick photo of your food and upload it to just follow what i wrote and let me know if you stray from that to you. Know jot down something on on a napkin or piece of paper and shoot over to me via text so it varies but yeah everybody that i coach basically at least keeps me up today and themselves up to date on what they're eating and then i personally spent two years as a bodybuilder logging. Everything ainley every last thing that slice a banana. And and i and i had software system very similar to like the the one that i like now called. Chronometer c. r. o. n. e. t. r. And i'll still feed my food into that like every two or three months just to double check and kind of see how i'm doing micronutrient wise and you know in in macro nutrient wise and and you look at my vitamins and minerals and nutrients sarah but i spent two years as a bodybuilder. Doing that like every single day and the payoff from that now is i can just look at a banana. Look at a watermelon..

Before he has a coffee shop down there and a smoothie bowl and juice bar place called sunlight organics. If you go there and ask for their they call it their billion dollar bowl. It's like everything like colostrum and rice brand and know county nibs and all these different superfoods mushroom extracts. But i i haven't made a kito version of that for me where they instead of using sl or strawberry or blueberry or anything. They just substitute all of that. It's super funny, And it's super reminds me that maybe these Super Bowl ads are not going to skip the funny this year because of the pandemic that that's kind of like the typical type of Super Bowl ad. We're used to. What do you think, Megan? Yeah, that zit really good point. I mean, I do think that there's this kind of hidden, you know, business agenda in there. That is kind of wedged in between a lot of humor, which which is that GM is kind of promoting its all electric future. They're going to launch their models by 2025, so they're really kind of getting their message across. But you're absolutely right there kind of doing this and the really fun way And I think we're gonna see a lot of that. There's a couple of the snack friends are doing super funny as well. Um Iquitos is doing one with Mila Kunis national culture and Shaggy and they're doing kind of Ah, You know the song It wasn't me. Neil is feeling ashen Cheetos popcorn mix and claiming that it wasn't her eating, you know, feeling the Cheetos and then Burritos is doing one with Matthew McConaughey and heat flat masses that he's kind of going through life as a two dimensional version of the actor. And then finally he gets himself to a vending machine. And it's ah Doritos three D, and then he is three D again. There's a lot of your right a lot of this kind of goofiness. It's just kind of fun, and it's interesting because I think a lot of consumers Every survey I've seen is really thing we just want, 20 adds. We don't want the sort of doom and gloom. We're here for you, black and white. You know photographs that we've just seen so much during the pandemic, and there was a time for that. And now I think people are just they're ready for some humor. As long as brands do it in a way that isn't so You know, they still need to be sensitive to the fact that we're going through it. We're still going through it. But there's a way to kind of touched on that in a light hearted way and like, let people laugh and let loose a little bit. I'm relieved by that. I got to tell you because of a couple months ago was reading that they were all trying to try to strike that tone and maybe have a more somber tone. And I just e like I'm ready to laugh. I think the Super Bowl is the time when we were escaping. It's just It's fun to have fun with these ads, So I'm happy to see a lot of them are coming out to be just that. "So rob. I want to dive in to the future of a and chat in the enterprise and the little bit of your journey there. But before i even do even ryan this company for quite some time when you guys started online chat in the ninety s companies public firm for twenty years. Here when you look to your business something. Like i don't know how many seventy or eighty million conversations you're handling in any given month when you look down at your business tried to find where. Ai could layer value for your clients. How did you think through that process. Because it seems like that's almost an endless There's almost an endless number of answers. They're basically looking at the data center. We do about seventy eighty million conversation month. I kinda you know that data we could take and look at how are use cases around banking and telco and and and retail and healthcare. These are big customer bases. Come from these verticals. How can we automate those conversations and so we basically just dove into the data we aggregated. The data looked at across customer. And we could see that there were patterns that made really good conversations. So that drove is to say okay. Let's build a host of tools and a new platform called conversational cloud in which we could enable large enterprises market customers to scale their conversation. Automate them and with the onset of covid the there was a massive massive impact contact centers the contact center agents help and nope he was there. They couldn't take calls so so they went home now. They're taking calls there and so there's been a massive drive to automation now because having someone work at home and answer calls just not the way to go. How do you automate that through a digital experience. That's really what's happened and obviously with the onset of covid firms like yourself or now in this position to potentially catch the opportunity to major way when you look at serve. What's potentially automated man even there so much to get into. I mean there's for each individual business that you work with you know maybe a work in with a one. Eight hundred flowers may be. You're working with us. The citibank guys work with some of the biggest companies in america here. The use cases are relatively bespoke And i know you. You worked on building a tool. That's at least understandable for nontechnical people. We definitely need subject matter. Experts to layer context and to structure or flow flows for these conversational systems. But you determine what the bounding box would be because even that feels feels endless and you need to kind of focus in somewhere yes we. We're all this under the header of commerce. And i fundamentally believe that conversation. Commerce is going to be the next leg of digital so we had ecommerce and now we're shifting see commerce and e commerce is is a very interesting thing when you think about like show up at a website and basically every website looks the same right. I mean top nab. Yeah data and google set those rules instead of you don't do that. We won't index you and that's why everything looks the same so what you're seeing is digital each brand doesn't have its own personality now with conversational commerce. You develop your own personality and you develop your own way to engage your consumers too like chapultepec. We had obviously during covid. What happened was people didn't want to go in and get a burrito and make They don't want to sit there for five minutes. Make freedom so chapultepec turn to us said we want to build an automation that somebody could come into their mobile device to any messenger front facebook. I message app and we want to configure a burrito and or whatever they want and they built. We built this Automation called pepper. It's called pepper and you can communicate with pepper. And then you show up at the door and the handed to you. And so that's the poultry. One we've got David's bridal which also people didn't want to come and people get married but do you want to go and sit in the store and try and addressing the one of the largest bridal companies in the world. We automated looking at different things for your body type for your style making an appointment. So you're the only one that's in that store. Don't have a crowd in the store. We built all that. This is just examples during kovin but every one of our customers get the ability to create a conversational experience. That's unique to them. And that's what makes commerce Yeah i i could certainly see the argument that linear text back and forth actually has potentially less less opportunity for really robust customization than you know. Really fancy dancy website. But but i get where you're where you're coming from. I think that there is like a. There's a certain flavor of the brand that you get from talking that maybe you wouldn't get from from a website and obviously what you're saying is that we can tailor that of course with a website. There's a lot we can do with color and features and video and whatever but certainly there's personalization on the conversation side. I could kind of see arguments on both sides there with respect to working with these big brands again. You're you're dropping some pretty pretty big names here. Names of almost everybody listening in has heard of what does it look like to set up these unique systems for them because obviously chipotle's use case which by the way feels very accessible. The number of burritos you can build is not unlimited right as opposed you guys work with delta airlines. The number of things i can complain about to my airline is. There's probably two dozen. You could tackle off the cuff. But but there's gotta be another four hundred that are just we're handing this to a human being but cipolla feels. Wow that feels like almost like dominoes. Chat bot was pretty popular. Winning hundred flowers was doing some stuff. Because there's only so many purchase options but when you go into different clients you got big airlines. You got these restaurant chains. What's that process of really working with them. Because there's got to be a bespoke build out part. You got your core platform you guys are able to use. You have a tremendous amount of data and a lot of staff obviously which it looked like to hop into these big brands and build out. Something that really drives value for our platform conversational cloud. We really broken into three areas in and around the three areas of need when you're looking at scale automation. One is the intent. We called intent manager in its technology that ingests all the conversations and then organizes the intense. So we talk about intense anti-business. What is it consumers. They haven't intention to do something with you. They want to buy something. They wanna customer care question answered and that's an intention and we call that technology intent so we organized the intense and it turns out as we all know. We all asking and attentively. So i may ask a bill differently than you do. But the technologists differences aggregate them. And then what you get to see a list of all the intense in your business.
