International Salvation Army: Social Justice Strategy
"The issues. Be a voice and make a difference in ending human trafficking. Sandy you and i talk a lot about partnership on this podcast and we. It's been a central part of our work for many years. And one of the most important partners we have worked with over the years as the salvation army. And we're so glad to welcome a friend back to the show someone who's been a leader in the space were glad to have priscilla santos with us. Priscilla is the salvation army social justice commissions international coordinator for modern slavery and human trafficking response and priscilla is an adjunct professor at vanguard universities global center for women and justice where she courses on justice and holistic survivor care. She obtained a master's in intercultural studies specializing in international development and children at risk from fuller theological seminary priscilla. So glad to have you back on the show and you so much for having me. It's a joy to be here today. I was looking back to see when the last time you were a guest. It was in may two thousand fifteen and we recorded a podcast about mothers day and human trafficking and it was one of those podcasts. That just really grips your heart. So i recommend that those who have never met priscilla. Go back and listen to that. That's podcast number one. Oh one soper still. You're in a new role and your title is so long. I'm so glad. I already know you can just call you. Priscilla tell us what the international modern slavery and human trafficking. Response coordinator does us. So my new position is all of our international social justice commission office which is part of our international headquarters and our department is really to be the strategic advocacy voice for all things social justice into really lift voices from those on the margins and so within department now. They've created this role which is the international coordinator for monitoring slavery and human trafficking response and my primary function of my new role is to oversee the implementation of our international strategy to strengthen our response to trafficking all over the world. So let's get a little bit better picture of what you mean by all over the world. How many countries is salvation army in. Yeah so we are in over a hundred and thirty countries around the world. Wow wow what an amazing platform to have influence and voice in a hundred and thirty countries. That's amazing okay. So at salvation. Army has a very long and deep history in fighting slavery. And when i looked at the new strategy it's called fight for freedom. Tell us a little bit about how it was developed. Yeah so kinda like you mentions. Fighting and trying to end human trafficking is something that this ovation army has been a part of before. Even the term human trafficking was coins so for the listeners. That don't know the salvation army started an eighteen sixty five and actually. Our first encounter with advocating against trafficking happened in eighteen. Eighty five so very quickly after we started and it was where we advocated to change the law for the age of consent from sixteen to eighteen. It's one of our historical stories. Call the brinson maiden tribune. But i i think one of the things for us to realize. Is that the salvation army that this is a part of our dna. We have been doing this since the very beginning even before again. The the coin term was there for human trafficking so but more recently we have approved and launched this international strategy because throughout the hundreds of years that we have been working on the front lines. One of the things that could really strengthen is our coordinated approach and our centralized approach because one of the things that we realized was that we were doing so many amazing things all over the world. But perhaps we weren't really talking together. One side of the world didn't know what the other side was doing and so really to create some standards of care to create some promising practices among ourselves. We just launched. This is our international strategy. So it's the first time in our salvation army history that we have a strategy to help us all move forward together so it's very exciting.
ICU Workers Are Quitting Due To Crushing Stress From COVID-19 Surge
"Surge in Corona virus cases has left hospitals across the country in a very bad place. ICUs are filling up fast, which is putting more pressure on critical care teams, especially nurses as Jackie 40 of member station, KPCC reports. Summer quitting because of the stress for 10 months, June, Jaha has treated the sickest covert 19 patients in the ICU. He works at L. A county USC medical center, one of the county's largest public hospitals. Right now, the I feel crazy. He thought he'd seen the worst of the pandemic back in July, when cases spiked if it's so much worse than before. And it's taking a toll on the staff, John says. Every time he goes to work for another 12 hour shift, two or three other ICU nurses have taken time off. All the nurses is already started burning on You can't feel something in north of this depression. Burnout isn't the only reason for the staffing crisis during the first week of December, more than 1700 Healthcare workers across L. A county tested positive for the coronavirus. That was double the number from the week before. Like many healthcare workers who treat covert patients, Jonah has never been tested for the virus by his employer. He has to go to a free testing site on his days off, kinda using you. That's why we have so many nerves left. All right here. John has been an ICU nurse for more than 10 years, and he's proud of his work. But for the first time ever, he's thinking of quitting. Others already have. Like Chanel Rose crams. There eventually came a point where I told myself I have to find a different job because this stress from this is really making me physically sick. She started working as an overnight ICU nurse in February, right before the pandemic hit running between rooms, monitoring complicated medications and breathing equipment left her dripping in sweat. And afraid that she would contract the virus. Before each shift. She would sit outside the hospital in her parked car filled with dread. I would pray till I cried begging God, please not let me lose a patient tonight. I can't take it. I just need my patients to stay alive tonight. Calling patients families was also difficult, especially when she had to explain that there was nothing else the medical team could do to keep their loved one alive. You've already done the convalescent plasma and they've been getting decade, Ron and they've been getting rendez of here. They've been getting all the stuff and it just felt like ticking time bombs, and I didn't want to have to just sit and wait for all these people to pass away. After more than eight months in the ICU, she quit her job in October. Now. Rosecrans works as a surgical nurse for a plastic surgeon in Beverly Hills. But she still gets contacted by staffing agencies asking her to fill in at local ICUs. I don't see what the point of going right back would be because I feel like they're going to be operating in that crisis mode. Other nurses are quitting those high pressure jobs. Megan Bronson is a nurse in Dallas and a board member of the American Association of Critical Care Nurses. Brinson says Thies nurses sometimes need more support. When you have whole family's coming into a nice you many times, that's morally very distressing. You're taking care of the mom that that and the adult Children all in the same ICU, she recommends that hospitals take a page out of the military's playbook and have debriefs. We're nurses are encouraged to talk about what happened on their shift. It can help with the feelings of isolation and nurses everywhere are hurting. There's not a nurse, no matter what their specialty I see or not, who is not having Cove it in their face every single day for NPR news. I'm Jackie 48 in Los Angeles.

But it's like if that was your guy and why did you let them go interview with the panthers and the brass. If there was any opportunity that he can go anywhere. Checking on stuff and back chat whether it was Lincoln Riley and like back with team like the cowboys there. They did a good job of controlling it right. You heard whispers. Lincoln might have been in the mix but they didn't Lincoln Riley doesn't want he's not parlaying the cowboys you just got a contract right. So he's not like trying to real paid or anything so I think what probably was dated some feelers on certain guys like homerun hires but the cowboys Jerry Jones. You cannot get turned down by like a bit like a Lincoln. Riley agreed if people. We'll find out that you went and interviewed him and he's Oklahoma. Yeah humiliate yeah. It's like you know Jenny. The main cheerleader. Whatever like asking the science on the chess team but like the team vice captain whatever? Yeah Jenny's like Whoa The head the head like the quarterback head cheerleader out. And she's like Nah and the whole school finds out into basing true. Yes yeah rough moment formats arison everything. That's okay But lasted for your will are eagles fans are probably a little bit more aggressive than are cowboys fans so ends a forty niners fan. got a picture. Did grandfather pushes them. That was really unfortunate. Yeah but just who wins the NFC east twenty twenty calories you think so okay. Tex Texanol the Eagles fans sorry I hit you tweeted out like what the NFC south while you're still here Tom Philip rivers. And the buccaneers. Nice he's GonNa look so weird..
"brinson" Discussed on The Bill Barnwell Show
"I'm Bill Barnwell of ESPN and joined CBS's will brinson making his contractual monthly appearance here the show show and let's talk about another AFC north team and I think if you'd figure one one team in the north was going to have their young quarterback breakout with a five five touchdown game in week one you would have figured it was Baker Mayfield and the Cleveland browns and that did not turn out to be the case nor did not bill. I I actually will I'll take a little victory laps. I'm the only person the country I know the force the pick the the pick the titans to win outright and and I actually on Friday afternoon for whatever it published published pick some Friday my my my best bets and the titans plus five was one of them and and I you know I went out and had been working for like forty eight hundred hours with all the attorney around south and I said I'm going to have an IP or two adult beverage or to oh. I got home post. Ip As and catching some heat on twitter and I started kind of fired at people who give me heat like how dare you pick the titans. Your analysis is utterly worthless. Why would you even I never listened to anything you say again. It's like first of all buddy isn't NFL football game with a five point spread any I think there was any outcome is on the table. Okay and second of all. I feel vindicated in that. The two things that concern me the most about the Cleveland browns heading into two thousand nineteen were one the offensive line if they cut through left tackle like a week ago cutting they couldn't do he would come back because Greg Robinson had nowhere else to go and he knew he was GONNA come back to Cleveland and then to and I don't mean this as an indictment of kitchens by any stretch of imagination because I think he's a a Ah I love it like I would. I would want him to be my head coach but I think the fact that he is taking his dealing with the play calling their incorporating a new offense. He's a second year quarterback quarterback with a ton of film on Him and he is also taking on the responsibility of being a first time head coach is a is a it's a lot to bear and to me if here's there's that both of those things caught up the browns at a big way in week one including you know. I mean look this is a little intangible but at some point you know if you're the titans and all you're doing all seasons reading these magazines were the rouser further coats and puffing their chest up and and they're the Super Super Bowl favorites. If you're Tennessee you're totally disrespected and I think they came out and played that way and they got pressure on Baker Mayfield and if he takes hits like he took in week one which is what he was taken when he first stepped in for Hugh Jackson this is GonNa go south on them quickly and I think that it is a they communicate it. They can do stuff positively quicker throws they can do to fix it but I would be very concerned. If I was a browns fan right now yeah I mean this is the exact sort of scripted craft if you're someone who is skeptical of the browns heading into this season thinking they're going to be bad but just if they're going to lose games. This is how they're going to lose games. It was to a T. this sort of gain in to your point. What about Freddie Kitchens. The browns didn't adjust in this game. This is a game where they lost Greg Robinson who was not a great left. Tackle has issues somebody auty ranked kick somebody on the ground mouse. Garrett and might have been perhaps should have been adjusted for punching a a titans player early in the in the first half and Robinson placing with Kendall lamb at left tackle Chris Hubbard's having a nightmare at right tackle camera way you mentioned earlier incredible in this game phenomenal debut in titans uniform but land injured on the safety that Baker Mayfield took they move Chris Hubbard over to the left side Austin corporate the guy who was they took in the the first pick of the second round in the first John Dorsey draft who they traded Kevin Zeitler to presumably open a spot for was a healthy scratch this week so they didn't have any other offensive lineman left and they didn't really seem to adjust lead Titan spent this entire game rushing four guys now they always rushmore joie defensive Lineman they sometimes we would tropic I out they would high with arresting four guys one way or another and dropping seventy coverage usually zones and sort of playing firestone's Arizona's behind those front four and the browns never adjusted to that they never they didn't run. A lot of floods tried it the ball quickly. He didn't make adjustments to try and account account for where the Russians were coming from to the point where you know. The towns are getting pressure on second in nineteen rushing four against the offensive line. Let's scary Gary. You shouldn't be able to do that in the NFL and you know what would they have adjusted quicker if Freddie Kitchens had just been the OC or just the quarterbacks coach and someone else had been taking the commander of the staff duties head coach. I think it's impossible to say we won't know for a while but I think it was absolutely disconcerting and I thought Baker Mayfield played okay this game but it did seem like ask the Game Ron when they didn't have answers it sort of became Baker Mayfield hero bobby who was forcing those into very narrow windows and may maybe trying to receiver she weren't necessarily on the same page and and that turned out disastrously yeah it did and I think it it is worth noting. What are the other things too like. I don't I don't like I didn't like talking about this season because I really like Baker Mayfield. I think when you see him make the big time plays. He makes you can tell he is going to be a very good quarterback. He provided that the coaching and around him and his physical health is fine. You know at least an adequate acquit level. He's going to become a really good quarterback in the League but when you go back and look at the stretch you know even after even after you know. Hugh Jackson was gone on the they got hammered by the Houston Texans who are top ten unit in Devi away they struggled against the Broncos and if Vance Joseph hadn't gagged that away you know they would they would have lost that game he their top ten or top five team and TV away. They lost the Ravens in the final week. Season and Baker is pressured that was a top five or top ten in TV away. When Baker Baker got hot against I'm not I'm not trying to bash Baker Mayfield but he got hot. It gets a lot of teams that there were very good including racking up a ton of a ton of points and a ton of yardage voted against the Cincinnati bengals in those in those huge action revenge games that somehow morph into a reality and when you look at the titans new I think we're talking about a team in Tennessee. That is probably going to be pretty good defense. I mean they you know they. They finished the year you know with a I think they were what well there were nineteen thousand TV so they weren't great on defense or delay last year but to me. They're they have a complete roster in terms of they have came away care Landry. wake the added later. We should develop the secretary's very good and so you know I just feel like it is worth noting that Baker has not been fantastic at all times against teams against stronger defenses also worth noting bill. We're talking about people who picked the titans and the browns are times. I'm looking at. NFL PICK QUASH DOT com here Meena would have been thirteen. Ino- picking NFL Games going into Monday night. If you just pick the titans for his twelve hundred one twelve oh and one she didn't pick the time she's pathetic. What are you doing me no one tie in there if he reaches ninety one percent head of the people of the experts tracks on this site and that includes ESPN CBS sporting news espy nation EMAM QB all all all the a number fire all kinds of tons of people ninety. One percent of the people pick the Browns to win that game straight up yeah. I mean this team that were pre consistently the at least favorite team in the south. They were the fourth likeliest team to win the Division in Vegas until the Andrew Luck retirement. This is a team that was even though there are nine seven they were one game away from being a playoff team and they had to start Blaine Gabbert a week seventeen because injuries. I mean we saw this when they're healthy. This is a really talented football team and I think thank you know obviously things kind of fell apart at the end for the browns and you're not gonNA hit Derrick Henry a seventy five yard screen pass for a touchdown every week. I don't think that's exactly Derrick Henry is game but this is a team. That's going to give you know it's going to be inconsistent from week to week. He based on history but they're going to give good teams fits. They have the talent to make this work week week after week if they can just stay healthy on the Brown side of things. I don't want to be too alarmist. You never want to say that that something's a must win and we to I don't. I don't think it's necessary fair to say but their schedule to bill yeah rams at Ravens at nine who that game was a disaster. Don't watch liners bucks if you it's still a Monday night game in San Francisco Kyle Shanahan can't scheme up something and their defensive line is good the line. It's it's kind of a bad match up for the browns frank yeah they host. Seattle an the Bi there at the Patriots. I mean they might have yeah. I mean I mean they may not be favored. Maybe maybe maybe at home against the seahawks. Maybe if the niners really looked bad they'll be favoured slightly against the niners but there's a decent chance there underdogs in Vegas in their next five games. Maybe I mean at least four of their next five games bills. There's a non zero chance that they are coming out of there by in week eight going to New England and they are six visit. I don't think it's likely but it's a non zero chance right or one in five and if you've gone through their schedule for the year and nothing hey which is just pencilling and wins and losses every single browns fan would have penciled in a victory in week one against the titans that was the one you had to grab before their scheduled got tough and maybe you'll get lucky and any pull out a win over the rams at home or are you beat the Ravens in Baltimore or you know you top the seahawks and Cleveland but this could be an early start. I mean the schedule. Let's get easier in the second half of the run but I I will. I will add one was just one thing. This is more of a spidey sense thing than anything else three so three or four next through their next four games on the road. three of those four games are also with the exclusion of the Ravens game are in prime time and I am curious. If Baker Mayfield may or may not have a a little bit of the Russell Wilson flair for flair for the primetime it would not surprise me if Baker Mayfield was was exceptional in prime time over the course of his career. He just has that about it. We'll see next three weeks the next four weeks it'd be interesting yeah and I mean I think to that point. You know we we haven't seen the browns really deal with series adversity which is state but last year you know it was sort of a free role. The browns are playing well and it was you know. Expectations were low heading into the season and so you know finishing seven one was great. I don't think anyone expected much more from that from the browns but now that the expectation Asian is we're GONNA make the playoffs if they off to a one in five or even a two and four star which I think would be great given the upcoming change over the next few weeks. I mean we're going to have to see Baker Mayfield and Odell Beckham deal with adversity and and do struggles knows L. experience with the giants of course but at dinner and always go well and we're going to see Freddy Kitchens is managing expectations now aqua room and sort of get everyone on the same page to kind of keep afloat until they get to the point schedule and you know. That's something that's not really analytics..

"I'm Bill Barnwell of ESPN still joined by CBS, we'll Brinson, and will you know, who we need. We need to hire cable house to start doing videos for offense. Did you can I tell you a story about radio row? Also cable since y'all. Please. Go ahead. I interviewed Russell Wilson. And we're doing this. We did this pick six podcasts rundown. They gave me a live video from twelve to one every day. Monday through Friday is very exciting. Hey, what you make it like, cool and Casuals? I'm your guy. And so like Russell sitting down and we were playing doing some goofy stuff and just. Just talking about the I was like all right? What about P? Oh, I'm sorry. Four times. People apologized to Russell's I'm sorry for all the things. I've said about you. I was wrong. You were great. You really develop those your best year. My PD wrestles like thank you very much. And I was like man we have to get a cable Thanos video of all Prisco's old tweets, ripping Russell. And then followed up by the apology. And so we're working on getting that information to cable Thanos. The Russell was like, that's my guy. I think the most underrated story at twenty eighteen in the NFL is that Russell Wilson has somehow imbedded himself deep within Seahawks Twitter. And like he's boys with this guy cable. Santa's who writes for Hong blogger at does wild Nima riffing motivational hype videos before Seahawks games that to me is so delightfully two thousand nineteen. Let me ask you a question will your. You're used to fantas that's I was very similar question. I was gonna ask do you think Russell Wilson is secretly cable those? Oh my God. That would be no, I don't I. I am surprised at how quickly Russell like. It's suspicious. It's very suspicious how quickly oh cable, dude. I mean, I that that doesn't make do we know anyone like who else? Like meet a kinds on is is like a Seahawks Twitter. I assume that Danny Kelly who I saw the the Super Bowl good friend of the program is to new love, Dan, Kelly, the best I assume he's in CIO Twitter is a former hedge together a fuel goals. Do these people had contact with with cable fan hosts has hawk hawk flogger or. Onto right. Like, he writes there. So surely somebody's cinema. Ten ninety nine like habit DM with them or or somebody had a beer with him in Seattle. It can't be a road Russell burner account making hyping. He's the thing though, you notice they can't plenty of access the Seahawks footage. He never they never hit him with a like, a copyright takedown. Never, you know, Russell was very quick to respond. She was always like, oh you like like we need to hang out. There was never video of them. Like, maybe if there is. This is totally dumb. If there is. I thought it was like, you know, any footer than like hanging out or like, you know, being in separate places at the same time. And honestly, like Russell Wilson is in the film room for most of the day you figure, but it'd be fact shocking at night, she was bored that, you know, maybe take a little break from grinding tape from taking care of a child. Maybe he, you know, just happens to learn I don't know what I was gonna say Photoshop, but it's so, you know, adobe premiere I guess, I don't know like that crazy thing there also might. As a pretense for possibly trolling people who don't like the Seahawks. What about another theory that actually dovetails with your theory, but could potentially make even more sense. So our our our friend Charlotte wilder was was was hot on the Tom Tom Brady times writer cores times richer. What is what have cable Thanos is not Russell Wilson? But actually Russell Wilson's version of Tom Brady social media. Russell is decided I'm gonna run my own Twitter account. Like, I do dangerous Wilson just tweet pictures of children hostels, and cri, and and and khakis and p Caroline and stuff like that. And it's dead. Have you guys social media team create this like burder account cable Thanos and you create the hype videos interactive CO skit deepen see on Twitter. And but we won't tell anybody who you are. And I'll reach your. Stuff and get built up. What about that? It's not out of the question..

"But if you look at divisional games of four points or more since two thousand nine the underdog sit at seventy percent if you take out the patriots because they cover every stink game at home. Yeah. And so I like I like taking the underdogs in this round. I would lean towards the colts catching the points with the five. And you know, I think I would go contrarian in this spot. On the under. But you know, I mean with twenty nine twenty eight gets done. I think the chargers have a pretty reasonable formula for that. I would be a little bit worried that it turns into that sort of see hawks game where Andrew luck throwing the ball over the place. Tyreek hill is carbon that cover to. And and you know of a sudden, it's it's thirty even you've lost that under bet. So I would I would probably steer clear of that one man running out of the question. And if people want to check out more of your thoughts on spread on gambling on football itself. Will you are all over the place on CBS working people? Check out more of your work. So if you wanna see a picture that checking my wife on Twitter, are you bringing that to the chargers bandwagon Super Bowl meet up when they made the Super Bowl if if the chargers the Super Bowl, I will bring the Philip rivers doll, and and see if I can't get a picture with Philip rivers NFL river. I'm Bill Maher obvious peon joined again by CBS will Brinson we are recapping the wild card round. And will I I was gonna wait till the very end. But I didn't think it was fair to you. I wanna let you gloat. I wanna let you enjoy it. I wanna let you luxuriate here on the show the loss Angeles chargers have won a playoff game. How did you feel? Are you still in the throes of chargers ecstasy? Describe to me your emotions after seeing the chargers your beloved Los Angeles chargers actually, win a game in January. Well, I will say I mean, I think I've sort of picked to win the division. So people kinda got on me about that. Like, like, you're not, you know, you sort of bail the chart like I've not bailed the chargers people. Now, we're back in pick before the playoffs are gonna pick the chargers to win the Super Bowl couldn't stay away from them. I gotta tell you Bill that was a hectic three hours in my house. My wife took the dog for a walk during the first half of the game and was out of the house for much of the first half. And missed me. Call me watching the chargers take lead, you know, yada, yada, yada, Los Angeles moving along. Well, the second half she was in the house, and she repeatedly came over to the living room and said, please stop you're scaring. Three king out, especially at the end with with the chargers leaving twenty three to three everyone is lolly gagging around having the time of their lives and slack with CBS co workers who joking about how this game is over. And I'm like, look, I I gotta tell you some of watch. I got I got twenty years Philip rivers of my under my belt. Okay. Not assume that this game is over and sure enough. The ravens get the ball back with a chance to win the game. And suffice to say I was I was panicking a great deal during during that final stretch. But look I thought the Los Angeles played a great game defensively they were outstanding they took. And this is really I'm it's it's always fun when you're right in not only in theory about what's going to happen at a football game. But in actuality, and I thought that the chargers would be able to see what see what the ravens did fifteen days before when they beat up on them in LA to to take some lessons from that to implement a defensive plan that would keep Lamar Jackson Gus Edwards from running wild that Philip rivers would be more efficient than Melvin Gordon will be a little bit healthier and able to help out, and that's how it worked out. And they they put seven defensive backs on the field for fifty eight fifty nine defensive snaps. Fifty. I think I think they they had fifty snaps like that. Season-long according to the Mexican stats the tops in the NFL was like eighteen snaps in the single seven defensive backs and Gus Bradley do out of necessity because their linebacker for so banged up. But the belief was and Jimmy Rinta says a great piece on the QB about this talking to the guys, but the belief is they felt they could run laterally and keep up with Lamar Jackson and getting position defensively better with the with the defensive backs sort of allowed Derwin James to flip back and forth. He's he's the physical type of guy that can do that. And when they locked down Baltimore for that long. They were able to to build enough Bill just enough points to hold off the ravens for making some furious comeback. And that's a heck of a win to go into Baltimore in a in a very violent environment loud as all get out into win like that. And you know, I think it sets the stage for Philip rivers revenge to her back to watch Murphy the first time since after the two thousand seven season when when he almost beat the undefeated Patria. Despite playing without an ACL. Yeah. Yeah. Like mutate need ACL important. If you ball. I won't tangent. The rivers ACL thing. But it really is like the most under reported ACL recovery in NFL history because it's two thousand seven this is pre Adrian Peterson's miraculous comeback rivers tears ACL in the divisional round game against the colts finished his game with LT.

"Monday two thousand in nineteen Lee wildcard round of this NFL season has wrapped up. I don't know that we had any great games determine of the quality of play. But definitely some fun ones. Had three pretty close games a blow out with the colts and Texas look at to Indianapolis and Houston later, but I think we have to start with the eagles and bears game from Sunday afternoon. The final game the weekend. Joining us talk about that. And the rest of these wild card games making his not contractual. But might as well be contractual monthly appearance here on the Bill Barden will show to see Brinson will how are you? How's it going Bill happy to fill my obligations for January? I do like this is a running gag. Although I am sure at some point some legal mucketty muck. Either at ESPN or CBS will catch wind of our joke, and like, whoa, whoa. You can't contract him for for our like you can't be contracted to build bardwell. Joke. That's the problem at twenty maybe twenty nineteen we'll be able to get jokes, right? Right. Nineteen nineteen. We'll be able to move your vinho kickers and get jokes. That's all. I'm looking for in life. Twenty nineteen does not strike me as the people will finally figure jokes on the internet. But as you pointed out, you convince doughnut only kickers with people who are posing as kickers on the internet. Yeah. Pretty incredible. I use been mo- mostly too. So I don't look like an old do focus. At our house. And and they're like can't like there's awkward exchange. There's always between like the dad the babysitter. Like you. Don't you don't they don't tell you. How much it is? You're supposed to know. 'cause your wife told you it's an exorbitant amount. You're surprised by. But you don't want to say that. And you try to write a check. And they give you the side. I write what am I supposed to do this? Man. And so you so you get Bimbo so you can be cool. And so I was looking Cody parking Vimba because apparently eagles fans after he missed the kick technically had to kick blocked. It was changed minutes before we started recording this to a block people sort of VIN mowing him eagles fans did at once. Other people got wind of eagles fans VIN mowing, Cody parkey, they went and created fake, Cody parkey VIN mo- accounts. So that they would accidentally be the recipients or fraudulent fraudulently be the recipients of money from random eagles fan. Trying to pay Cody parkey again, welcome to twenty nineteen. How Does Gelatin Work?

Even listen and subscribe to Daniel or hey, explain the universe on apple podcasts the iheartradio app or wherever you listen to podcasts. Welcome to brain stuff from how stuff works. He brain stuff unmourned Bogle bomb, and if you've ever eaten in the cafeteria or attended a cookout or family reunion in the United States. Chances are good that you are dessert or salad options included, some form flavored gelatin perhaps from the brand name jello, hundreds of recipes use flavored gelatin to create everything from your simple institutional style squares to ornate designs that incorporate varied flavors fruit and whipped toppings jello and similar mixes consist of five basic ingredients gelatin water sugar or artificial sweetener, flavorings and food coloring. The gelatin is what allows you to mold the stuff into whatever shape you like solid at room temperature but melts in your mouth, but let's breakdown y gelatin behaves that way gelatin is a processed version of a structural protein called collagen that occurs in many animals bodies, including humans collagen makes up almost one third of all the protein in the human body. It's a fibrous protein. Gene that strengthens the body's connective tissue and allows them to be elastic that is to stretch without breaking as you get older. Your body makes less collagen and individual collagen fibers become increasingly cross linked with each other one might experience this as stiff joints due to less, flexible tendons or wrinkles due to the loss of skin elasticity. Gelatin can also be made from the collagen in the bones, hides, and connective. Tissues of cows. Pigs today, the gelatin jello is most likely to come from pig skin. Collagen does not dissolve in water in its natural form. So it must be modified to make gelatin manufacturers grind the animal parts and treat them with either a strong acid or a strong base to dissolve the collagen. Then the pre-treated material is boiled controls every step of the process ensure purity and safety the materials are washed and filtered repeatedly during this process. The large collagen protein ends up being partially broken down the resulting product is gelatin solution that solution is chilled into a jelly. Like material then cut and dried in a special chamber at this point, the dry gelatin about ten percent water is ground. If it's going to make a flavor gelatin product like jello, it'll be ground into a fine powder. When you buy a box of whatever brand of flavor gelatin at the grocery store, you get a small packet of the powder gelatin with a sweetener flavorings and colors added at room temperature. The gelatin protein is in the form of a triple helix. This is a fairly ordered structure not entirely unlike that of DNA with DNA to chains of nucleotides are twisted together in a spiral pattern resembling a ladder. It's a design known as a double helix in the gelatin protein, three separate chains of amino acids called poly peptide chains have lined up and twisted around each other. So to make this dry gelatin able to fill out and take the shape of a mold you first at boiling water to the powder gelatin you then star the mixture for about three minutes until the gelatine dissolves completely. But what happens to gelatin? When you add that boiling. Water the energy of the heated water breaks, the weak bonds that hold the gelatin strands together, they're helix structure unwinds and you're left with free floating protein chains. A next you add hold water and refrigerate the gelatin mixture, which makes the chains begin to slowly reform into their tight triple helix structures as it cools the mass acts like a sponge soaking up the water that you added, but in some places there are gaps in the helix and and others. There's a tangled web of these poly peptide chains the chains form sort of net and the net traps water inside pockets between the chains. This protein net is strong enough that the gelatin will hold the shape into which it's been molded, but because of the water trapped in the pockets, the mold has that characteristic jiggle. But gelatin isn't just for making fun, molded salads, or desserts. Gelatin is a common ingredient in foods because it's so versatile. It can also be used as a thickener to give foods and more pleasing texture into a multiply or stabilize processed foods like yogurt or cake frosting. It's used to clarify juices vinegars and even beer special gelatins are made from only certain animals, or from fish to meet the standards of folks who don't eat products made from the mammals that are usually involved and vegetarian and vegan substitutes made from extracts of gooey stuff. Like seaweed are available to the range of those products that gelatin can be found in is legion everything from dairy and dairy substitute products like sour cream margarine and cream cheese to suites like gummy bears and marshmallows to process meats, like sausage and can't him to soup sauces, gravies jellies and even whipped cream. It's the coating for pills that makes them easier to swallow. It's in some lozenges, and white minutes, and cosmetics may contain a former gelatin that doesn't tell you might see it on the label as.
