"So the show is Asian enough. I don't know what you feel when you think about the name but I feel like a lot of Asian Americans have trouble kind of feeling like they're enough whether you visit the home country and they make fun of the way you speak the language. Yeah totally someone has their own ideas about being Asian is and you just like you don't live up to it. We're kind of like about the idea that everyone's aged enough and there's also a culinary Asian enough as well. There's a lot of double standards when it comes to non Asians cooking Asian versus Asians cooking. Asian so yeah I I yeah. You're never enough. You Never American enough. You're never Asian enough. I'm Diane Chinese two cultures. I'm not enough. So I was like the intro to our podcast. There you go there you go and steal my sound bite so we have a bit. I guess one of our first questions is jet. Who are you yeah? I'm a native Angelino. First Generation American kid from my family I was lucky enough to come from the first Thai food family in America Right. I think I think if you go back in time. Most people knew me for being the kid that dropped their groceries. Offer bagged their groceries from Bangkok market. If you were if you worked in a restaurant in Los Angeles from the seventies to the two thousands you knew of my family's grocery store but more recently you might know me from being the floor reporter from Iron Chef America or you know judge on cutthroat kitchen be bobby flay guy's grocery games about six different shows on food network but at the end of the day. I Cook and I'm a storyteller. And that's it. And and and some sometimes a cultural anthropologist. I think those are the easiest ways to describe who I am kid from. La who likes to eat food and is constantly trying to figure out who I am. Where did I come from? What am I doing here is still trying to figure that totally in my mid forties. I still trying to figure out what my places here you know. I'm not around trying to raise two kids and be a good husband and father. That was great. That was such evocative answer to that question relatable. We're all trying to figure it out still so One of the reasons we wanted to have you on was just that story of food and and in your family that you told a little bit in your intro and was it hard to decide to go into food. Why why did you go into food mostly? Because I really don't know much else. In life to be brutally honest. My grandparents escaped. Communism left China to go to Thailand. My parents were born in Thailand. Lament here in the sixties. So you know I. I come from three generations of restaurant tours period and it was the craft that that gave my family an opportunity in this country right. We were poor And so I was raised in the grocery store and then I was raised in the restaurants and then I was raised in the farms in the fields of the produce company. So I tried to rebel up until I was twenty then I finally succumbed and I said this kind of is the only thing. I'm good at in life. So it's it was by no choice so you didn't grow up wanting to go into food then I well I had. I was in food right and I was trying to run away from food. I got was a security guard for minute. I sold cell phones for a minute. I installed alarm systems. I mean those are all the good things that I could talk about. I mean do you know what I mean. I dropped out of high school. Yeah you know so pretty typical kid. That wasn't a super high achiever for until I was like twenty years old Pretty typical chef's chef's jeans. You know I think black sheep rebel but not really because I wanted to be. I just didn't know I can't stay in a straight line. I can't live in a box. Is that the characteristic of chef and the older I get the more I come back to. It is a product of trauma. Were all basically either trying to relive a trauma or run away from a trauma and I think the traumas that I had were having nonexistent parents right wanting attention so acting out to get attention. They're always in the restaurant at the grocery store. One hundred percent and we were stuck their days off zero ride. They were never home. So when I was at the markets I was hanging out with my parents or the restaurants. I'd no choice so I think it was a constant cry for attention on my part but that is a common thread. I think in a lot of colon areas but for me it was very very kind of linear is very like pay attention to me right and I'm just GonNa do dumb stuff until you do. And then eventually you adopted the language of food. Yeah Yeah Look. I think I was born with it more than anything. You know what I mean. If it takes ten thousand hours to become an expert at something I was a grocery expert. By the time I was fifteen I was a culinary expert. By the time I was twenty. You know what I mean so I knew every skewing our grocery store so I had concurrent apprentice ships at a restaurant apprenticeship at a grocery store apprenticeship and then. I had a produce farming

"Crazy we didn't really know what to expect but we had a great time and working with Michael Simon and Bobby Flay and those guys in the iron chef so that was a dream come true for me as a chef myself working with these guys and seeing these guys cook up front there were a lot of fun so it was exciting and it was it was it was really cool I mean anytime I can get from the camera and showcase my brand of have a good time sure cook sure I'm gonna I'm gonna take advantage of it so I got a question for you I know when I've done some of that the the staff not just the local and regional stuff I do but for national when you are not actually filming when you're not actually you know let's cut off time but you're kind of piddling around doing stuff is Bobby Flay ever come up in like say you know are you cook what you doing today how are you doing there Sir show me what you're doing or is she engage with you or Simon either you know yes so that so that divided into teams I was on team Simon so I didn't really interact with Bobby Flay one on one that much I mean I did a little bit but he sort of hung out with his team and then Michael hung out with all right as far as them coming up in sort of this kind of intermingling with me it really only happened during the show it didn't help or during the during the break when they were filming it they really didn't spend time with us afterwards or before hand they kind of kept those guys roped in they had their handlers they were you know and then when it wasn't really our time to be on sat they had us quarantined in operating and so we really couldn't see what was going on and of course it anybody that's been on the shows before that's done reality show any show there is constant figure you know fiddling around with sets and lights and sound and right they're moving things around and it's just constant constant constant so they didn't really have this kind of thing you know munching around watching all this stuff they kind of had asked roped into this little building was actually a little church and that which is kind of funny but it so that so yeah so other than when it was we were filming I really don't have a lot of interaction with those guys but when I did it was amazing I mean just a little bit that I got I mean we were like buddy buddy but we have no downtime with that yeah now I'm the reason I ask is because the the stuff that I've done they did the same thing when you're there on sat yeah and the camera guys are coming up and they're you know they're doing their tight shots on your hands basically whatever you're doing that way or if you're putting something on the heater doesn't matter what it is and then the cars if you will of the show are down around in there looking and they're talking to you like that but once they yelled cut and we're gonna take a break or whatever everybody kinda disappears and then that our handlers can I come in you know like a cattle drive long term the movie I've to another building or and the one I did that was about the Texas state fairs we were all in the same building but it was a huge building because it was raining like hell outside so they kind of put us down behind where the food supply is never never done one of these he never seen what type of said is off camera there's a place and I'm assuming it was the same for you there is a refrigerators and laugh so yeah it just tons of whatever you'd want days there yeah they had a first of all the set was just so bad **** it was gorgeous the guys spent money on the set when owners on pitmasters they had the set's built in in their little stages essentially platforms with the grilles on them and then a beautiful table setting this was very similar so they're all the separate little buildings is little like structures yeah where we had a table work table touch me other girls in the back now they supplied everything the only thing that we can bring ourselves were upon our nightfall it's like seven or eight knives okay this maybe some tools that we needed are hands you know I think things like that outside of that we did bring anything seasonings no meets no rods in jails and sauces everything was supply show up just show up and but yeah it is very similar to your experience the pantry anybody that's worked with the network these guys I mean because I've been on shop several times and the pantry is immense and the amount of equipment is immense I mean they leave no stone unturned if you want to do it chop it blended whatever liquefy it freeze it whatever they they've got something I mean it's within reason this way and you know it's it's purpose for the event itself we're doing barbecue that it right you to do you use a lot of kitchen equipment they want stuff on the barbecue on the grill that's where that that right yeah but if you needed to do anything they they have it there and anything you can think of spices vegetables fruits and sauces marinades yeah everything from like that Vietnamese fish sauce there they had you know they had all kinds of things there which is great so as a chef that was really cool and very empowering because when I had to do something I had a very nice pantry of products to pick rate which is great so one of the things I did was I Vietnamese fish sauce chicken wing one of the contest we had was a chicken wing and everybody was going to go the Sir they're kinda spicy kind of direction with the wing I wanted to do something a little different and I did a Vietnamese fish sauce wing which mold loved because he had spent time in Vietnam and Thailand at in the navy sure and the other two and Amy and Chris you know they like them too I don't think they really got the wings that I did but anyway it was great having that access because I could pull some some repertoire and some recipes from my chef background sure showcase that yeah no that's that's really interesting because like I was saying they would at breaks they would kind of heard us back to the stables kind of offset to where the food story and stuff was and you really you can kind of see the set which couldn't you couldn't see that the host of the show this to deep fry masters or whatever was call was very short lived here the I think the only think I saw a deep fry masters I was at the Amazon Food Network and willow started out learning channel okay a it's been around yeah date trees I've never watched a whole episode it was so bad that I just didn't know how to watch it my sister even called me about a month ago and she said what would you I think I just saw you on you know I've got a distinctive voice yeah and they could hear my voice and by the time they look up you know the shots going to somebody else yeah yeah yeah yeah I said yeah that was that was not one of my prouder moments in my media career but yeah that was probably me and anyway we're going to take a break when they and I'll be back in "I could got four or five nights a week and people surprised by that because they think how could he possibly be doing that if he's got over things especially being on television but the bottom line is that i could be shooting forty eight episodes of bobby flay up until five o'clock in the afternoon and then i go to restaurant and i do because i think it's important for me to go it's my customers my staff and it's good and it's important for me to go i know because i know that i know what's happening there i can't just hope that it happens there i mean there's nothing like being hands on so i think that i'm in a place now where my daughter has just graduated school college so she's now officially in adult and my number one hope is that she gets a job i was very sharp i've worked with her she has worked in the nbc family yes yes we're just at the olympics yes exactly and you guys have taught her a lot i mean she's headed mazing experience she worked at the today show as when she was a freshman then she went to rio and then she was asked to go to south korea and she has has gone into mazing experience working with you guys honestly and and so good for her like you know but now it's time for her to to sort of leave the flock and do her own thing so i'm really the thing i'm looking forward to is not sort of pushing the envelope to his far as i can push it but kind of just taking in what i have at the moment which is you know some restaurants that i love to cook at growing my burger business a little bit and watching my daughter sort of take flight i'm fifty three so i'm probably not done yet but i'm going to look for the next park and when it hits me i'll know it so the pause is you don't stop cooking use slowdown tv and the other things yeah i think i think the i think the i shoot so much television every year and so i think that i'm going to take a pause from that and see something will drive me but i think the only way to do that is to kind of sit back and watch it as opposed to china trying to find it you know when i was when i was younger i had basically nothing and so many goals to accomplish i had goals to accomplish now i'm trying to figure out what my next goal is going to be and i'm excited about that you know it always revolves around food it just does like for a lot of years i wanted to do what you do you're an amazing journalist you've worked so so so long in this business and i wanted to sort of take the path of doing some food segments on on national programs like like yours and hopefully move into food stories and then hopefully other kinds of stories nobody wants me to do that they don't right i mean they don't want me to do it could i do it i don't know but they don't want me to do it and i get it like i've created this lane for myself and i've been batted down to to stay in my lane and that's okay and i'll try to be the best at that couldn't you create your own lane in that way i mean you've got enough behind you now that if you wanna go see the world with food or how are you could do that but again with food it's gotta have food because you know in some ways i've created pigeon hole myself in some ways it's almost like it's almost like the actor that has been on the same show for fifteen years and the show's over and they want to do something else and we only think of you like that people only think of me is being connected to food and so that's okay i just it just took me a minute to realize that that i'm not just able to do whatever i feel like doing i have to have food connected to me no matter what i do what i talk about i have to have a stake in my back pocket you know that actor though also says i wouldn't trade those fifteen season on that show for anything that's got me where i am like you to see me.

"I don't fight that fight anymore past that thankfully but i think it's i guess i guess i guess chefs have come into these sort of the mainstream in terms of popularity but i never think of myself that way ever and i think that when people feel like they've somehow garnered the monica of celebrity chef they forget how they got there which is cooking and i've seen that way too often and i've seen it not work out in the end and i think that my vice to anybody who ever asks me you know i always say to them stay grounded in what you do stay grounded in the reason why you got here stay grounded in in the thing that you love more than anything else cooking everything else will fall into place don't force it the media part of this is a it's it's a love hate relationship you know it's one of those things where it can be really good for you can be it can be difficult on you and also go away in split second you know all of a sudden somebody is giving a show at the food network i've seen this happen many times somebody's giving a show the food network they've been cooking for fifteen years in their restaurant they get eight episodes they quit their job what this can end and a lot of times it does because he's very few hit shows there's lots of pilots yeah that's right no that's absolutely right do you still find that level of snobbery among some chefs who won't go on tv or don't go on haven't been asked to be on tv who look down on people like you i think that i think that what happens is it's like it's like anything else people want to be in the club so to speak and not just that clip any club and so when you get left out of a club you feel like how come on left and right and so i think that for i think if you have the opportunity to show your skills in wears on television at an beyond television digitally at this point or whatever it is and you should do it i don't think you should shy away from it because you're gonna get left behind at some point that that said i don't i don't think it's necessary to be to be on tv to be successful in our business but it certainly opens up a lot more doors and so if you don't wanna be on tv you shouldn't be on tv there's no question about that but if it's something that you want to do i think that then it's something you should try to do so when you look out over the horizon bobby what you're still young guy relative relative to some people in in our business you're young guy you got a lot head of you still what do you what do you think about more tv's there's something totally different you wanna do honestly willie i don't know i'm i'm at an interesting place in my life because for a long time we talked about big picture before right and so i i only live by big picture goals i don't worry about next week i worry about five years from now and that's that's the way i sort of liked to travel in my life sort of working up towards something and i met a lot of the goals that i myself when i was a young person and then all of a sudden i was like now what i when i was i cooking like it would be really cool if i opened my own restaurant one day okay so that happened and then the tv thing happened and i sort of have met a lot of the goals that i wanted to television i've had a lot of very lucky success in that business have written the books that i wanted to write and so i think that i'm gonna place right now where i need to take a pause and the only way i can pause is to pause now that's that said that's not that doesn't mean i'm going to stop cooking because my most creative moments is when i'm behind the line like it got.

"My tv chef experience in terms of being viewer was the galloping gourmet and julia child i was a kid i would sit in front of you know in between cartoons i would watch cooking shows i had no idea that i was interested in food but something certainly captured my attention the galloping gourmet was such a cool show because he was this guy cooking this like gourmet french food and at the end of the show he would pick the prettiest girl in the crowd he bring them up and sit down and have dinner with him i don't know if sure but that's how the showing yeah i was like wow that's pretty good and he eats cooking and so there's something that attracted me to julia child and to the galloping gourmet to this day i don't know what it is i do remember cooking at home the very first thing i remember cooking was mighty fine chocolate pudding it was out of a box you skull the milk and you'd put this chocolate powder into the pot and i was standing on on a chair or something with an apron on my mother was standing next to me and i would just stir it and then i couldn't believe stirring it with a wooden spoon it would get thicker thicker and thicker and it was my it was my first moment of like texture changing because of something cooking and i was like wow this is really cool i was an awful student in school i dropped out of high school in tenth grade and if i if i had thought about then of course six years old or something i would i would have known that i really needed to work on my hands at some point i mean i i was in school trying to do what everybody else was doing which was learned through books could do it i wasn't interested i don't know if i couldn't do it i just wasn't interested but i didn't do it that's for sure did you know at that point it was cooking that you thought you might do no way too early still i fell into a completely but i'll tell you an interesting fact you mentioned robin leach show so robin show do you know this story okay i don't think you do so so robin robin leach had a show called talking food yup and it was it originally came on i think either twelve midnight or one o'clock in the morning and robin was a huge knick fan and he had season tickets to the next and basically he'd go to the knick game and he'd come and tape the show after after the after the game and it was mostly live i think it was midnight and he had have celebrities on they were not the top of the food chain let's put it that way and and it was an hour long and he had a co host named kate connelly and at the end at the last fifteen minutes of the show kate connelly would do a cooking demo with a chef and the chef mostly local in new york because if we don't work had zero money it was a startup cable network and so basically if you could get there by subway you could be right and so and literally she would spend fifteen fifteen minute cooking demo i mean come on it's crazy i mean listen i think the today show up there there they give cooking but fifteen minutes is a long time and so i met so i did i did a couple of those shows and and then kate night went on a couple of dates and she's the mother of my daughter sophie i was gonna say that i did not know that and that's how you met her on the show we met on the show and then we went out for a couple of couple of dinners we and we started dating we got we got married ofi so robin leach was the matchmaker yes exactly right that's true so you're talking about your childhood when you develop the love cooking too or false you asked when you were eight or nine years old for christmas for the easy bake of did you did yes and you got it i did get it like how about a baseball mitt like i'll take that too for some reason i listen this is the it's called good advertising right so i'd be sitting watching whatever i was watching cartoons sesame street the electric company you know those all i remember when i remember when when sesame street i came on i was i was.

"And forty thousand five on does he's very popular aren't you nacho is very popular a good looking guy very comfortable around cameras to said so let's talk about the show in fourteen next hour start what do you love about the show well john i've been doing it for a long time now and she and i have been good friend for so long and we love hanging out together and basically giving each other hard time we look at it very differently and i think that that's part of the beauty of the show we have somewhere between ten and fourteen finalists that that show up depending on the season and they're trying to get their own show on food network and is a lot of challenges basically that are versed in cooking and looking at the camera at the same time and doing what food stars do which is try to be an authority figure in front of the cameras so that you feel comfortable as if you were to follow them i mean that's that's to me that's the long in the short of it and because cook my the whole sort of soul and bodies is is as a cook i always think that the cooking is more important than being able to look into the camera jonah feels differently jonah feels like if you have what it takes you that star quality that you'll learn how to be better with food and be able to talk about it at the camera my feeling is that you need you need the credit you need you need to confident and you need and you need to have the repertoire of being able to cook of different things and then you'll get comfortable in front of the camera so we look at it from opposite directions and we're not neither one of us is budging on our on our position but i think that that's what makes this show really interesting it's not just one person's opinion it's really too and it's not good enough just to have great food you gotta prove you're going to be a tv personality to you do have to have that spark you have to get people to stop flipping through the channels and stop at you what is that thing that you says i wanna watch this person teach me how to make roasted roasted potatoes or whatever you find people struggle with that because it's not a natural thing because you think i'm chef i mean food yeah that's it period to have to learn how to do that easy thing well i think that you know no in my business things have changed very much i mean when i when the food network i came came around i to be perfectly honest with you i had no confidence in it i was like what are they going to talk about for twenty four hours food this is going to be over in a week and obviously i was not right and the food network has has flourished such amazing way and my contemporaries in the business we're like why do you want to be on tv like you're a cook your chef that's what you should be doing should be chained to your to your stove don't get me wrong i cook a lot my restaurants all the time is the thing that really drives me more than anything else but i knew that awareness is the most important thing letting people know that you that you exist not just in your city not just in the magazines in new york so to speak at the time there was no internet but i wanted to reach the family in minneapolis was coming to new york for the holiday weekend and they were looking for restaurants to go to well maybe if they watch me on tv they might say let's go to bobby flay restaurant one night that's all just putting people in the seats in my restaurants and that's still the key for me today but isn't that something you had to learn to because i was terro new year good food but now you gotta learn how to do tv well there's i was awful on television and frankly some people still think awful that's okay we're going to dig up some tapes lease wait thanks thanks i can't wait to see that i love the internet anyway so yeah i mean there's there's no substitute for experience i'm sure you feel the same way on your profession being comfortable talking to.

"City and you're all your fifteen jobs that you have just shut it all down must be great to be up here it is great and you know in some ways i'm still a fish out of water here because even though it'd be i've been coming here for most of my life one way one way or another either as a guest or a homeowner and i'm a city boy through and through i grew up in new york in manhattan i've lived there my entire life and so you know owning a house can be challenged for me sometimes i'm really bad around the house in terms of getting things fixed or and so thankfully there are other people that had to do that way better than i do but that said when it comes to when it comes to nourishing my guests i'm in charge of that and you never have the moment of what does somebody else do grill today every once in a while that happens but it's usually because i'm taking a nap and they the grill and they just start cooking steaks or something no some people help for sure and i don't do dessert i don't because i'm not good at it so i can but it's not really my forte and i don't really like making them so when when when people come over i do the same thing for thanksgiving as well like thanksgiving or july fourth if people say to me can i bring something i actually say yeah you can you can bring a bottle of wine you can bring a desert but i really make sure that it's sort of scheduled out some not so people aren't bringing the exact same thing so i might say to you willie right bring bring you you know know bring some kind of fruit deserts like maybe go to the farmer's market around here and get like a blueberry pie or something or and i'll tell somebody else to bring a chocolate dessert or something along those lines there's somebody else might bring some ice creams so that we have an abundant of desserts 'cause the bottom line is that even though people are always sort of watching their weight in their bathing suits they still want no matter what no question about it no question about it you design this place just looking around inside and outside clearly it was with an eye toward not just entertaining but cooking for a lot of people yeah well you're crew here has rearranged my kitchen a little bit but most of the time this is like a little cafe that were sitting in so the kitchen obviously i cook behind the coop behind the island there but there's there's three little sort of french tables herewith return shares and another sort of bigger table and my guest at first my people like a little confused like you putting a restaurant in your house and like no i just want i want people to if they want to have their own table if they wanna share a table somebody else read the newspaper watch the today show on sunday morning you know whatever it is though they can do that and people actually they love it it's kind of it's kind of a nice feeling it's like you've sitting like this little french cafe except it's mcgann's it that's amazing thing i've ever heard of that actually like within a kitchen yeah you're on many cafe yeah it's it's listen i'm restaurant owner operator chef through and through i mean that's it's in my blood it's never leaving sometimes it's great sometimes it's frustrating but it's it's part of my blood and and i think of myself very much as a somebody who likes to serve people and make sure that they're comfortable and if i can sort of like a little cafe in my in my kitchen why not you have the same hair as your cats that's not show not show is very obviously very curious yes we have the same coloring nachos bordering on big cat he's a big cat he's a maine coon he's about twenty pounds he wait will you don't follow him on instagram good follow nacho flay he's only got one hundred.
