"With, you know, young kids who are picking up guns and they're often 18, 19, they're in that period of time where their prefrontal cortex is not fully developed. But anyway, we don't have to talk about that. That's a whole other show. That's a whole other show. But yeah, so what happens? Let's say now we're considering the fully developed brain. We're sort of like 25, right? So what happens after that? Well, in some ways, it just a long, slow decline. In terms of processing speed. So the amount of how quickly your brain communicates with itself, et cetera can start to decline. But there are a lot of other ways in which your brain changes. And there's a little bit of debate out still in neuroscience about whether you actually grow new neurons. There's two potential places in the brain where that might happen. They're both involved in forming new memories, which I think is really interesting. And I say, I would say the jury's still out, but it looks like we probably do grow maybe some little local neurons. But the majority of the change happens in terms of the wiring. So when you're learning a new skill and you can learn a new skill, even in old age, it's just that you might have to approach it differently because you have a different brain. You actually change the physical structure of the brain in terms of how your neurons are connecting and talking to each other. And so it is changing all the time. And I think that's one of the people say, well, can I just freeze my brain, put it in a vat, and then once we figure out how to save the human body, put that same brain back onto a body and just be me. And the answer is, I don't think so, because your brain is a biological organ that is active. And if it's not active, it's not your brain. It's not like it's not like it can just get restarted. I don't think, because it's just this series of very complicated connections. So it is changing. There are biological limitations to how much your brain can change. So just like there are physical limitations to how much your muscles and joints can learn. Like if you're 60 and you want to run a marathon, that's probably possible with a lot of training, but you're probably not going to be a world class gymnast, because you just don't, you know, the way that you're musculature works, et cetera. So yeah, so I think that your brain is definitely changeable. I think that it's not this static thing, although to me, the important thing is always to tie your behavior to nerd anatomy, because neuron with the brain on its own is not interesting. What's interesting is how it affects human behavior. And as you get older, we tend to get more stuck in our ways, right? We tend to not seek out new types of music. We listen to the same stuff over and over and over again, or the same genres. We tend to do the same things. We tend to have the same rituals. We tend to do the same things over and over and over again. And so that means that your brain is going to also get stuck in these kinds of habits. But that doesn't mean that there isn't a possibility for change. It's just that it gets harder to do it because our behavior doesn't change that much as we get older. It's interesting videos I've seen of people who have advanced Alzheimer's. They can't remember their name, their kids names. They can't remember if they had breakfast. But then they'll put like a guitar in their hands, and they will play and sing an entire library of music perfectly from memory. You've done some work with people who are neurodivergent. I don't know what the word you would use is. Can we talk a little bit about how the brain holds on to some things and yet not others? Yeah, I mean, I think Alzheimer's is a really great example because it tells us about the different kinds of memory that we have in our brains and sort of different systems of memory. So one that you described playing the guitar and having this big repertoire of music that you already know is a type of skill memory that is actually based on parts of the brain that are not as affected by Alzheimer's disease. But keeping track of a conversation, remembering what just happened, those are functions of the part of the brain that is very much among the first to be affected by Alzheimer's disease. And so Alzheimer's gives us this picture of all the different ways in which experiences etched into our brains. Some of it is conscious and in the moment and one trial learning, like what did we just do before we got on to this conversation or what did we talk about half an hour ago, that is one type of remembering this one type of conscious remembering, which is actually very different from the type of memory that you create as you develop a skill like playing the guitar, which takes multiple repetitions, takes years of training, et cetera. So yeah, so there are many different ways in which our experiences are represented in the brain. Some conscious, some unconscious subconscious from what just happened in the last 24 hours, some of what happened 30 years ago. As we draw this to a close you've been very generous with your time, let me bring us back to a practical application where we are talking about a lot on this show about how do we how do we filter the false from the true or at least what is supported by evidence and what is not, how do we overcome our biases. I heard it said, and maybe you can validate or invalidate that common sense isn't necessarily good sense, or it's not necessarily reason. You know, because often we'll say, well, let's just common sense. And yet common sense isn't really a thing, or I mean, what's your tank on it? I mean, look, if common sense is what I've learned before, but I've been told before the part of the model that we talked about, the framework with which I see the world that really I think is what people mean by common sense. I can predict what's going to happen because I've been here before or I just, you know, I have street smarts or common sense. Sure, that's part of the model and sometimes we're wrong. And sometimes it's really based on evidence that wasn't there. I mean, one example we just been talking about Alzheimer's disease for the last 20 years, we've been seeking out treatments that are based on this one molecular model of what's happening in the brains of patients with Alzheimer's disease. Well, it turns out that two seminal papers, 20 years ago, were fraudulent. And that we've built this common sense model of what causes Alzheimer's disease on fake data. And so that's just one example, but you can imagine how that could be true in a lot of ways in the world. Another example, I think, is when you talk about gender, like common sense is there's biology of sex if you have an X, Y chromosome, your one gender, if you have X or the other, and that's just how it is, it's in your DNA. But now we understand that you can actually have people who have a particular chromosomal, they can be X, Y, or they can be XX and have the genitals of the other sex. For reasons that happen in utero or that even happen. So even the common sense of how that works too starts to break down as you start to learn more even about the biology about the facts behind how that model was built. Do you feel like some of its reductive we like it pat and simple. So if you say, well, it's just common sense. It's our way of just sort of saying it's settled law and then we can move on to something else, you know? Yeah, I mean, I think that is a big part of it, right? Because it's comforting to think there's just something I know. It's common sense. I don't have to investigate it. It is exhausting to think that you have to investigate every single one of your beliefs. Oh, yeah. Oh yeah. Now, I feel seen. I feel sane, doctor biscotti. So all right, we are out there with the false and the true. We've got misinformation, pseudoscience, conspiracy theories that look awfully slick and polished and convincing. And we lean into many of them based on our biases. How do we filter through all the noise out there? How do I become a better thinker? You know, my strategy is to look at a variety of evidence. So don't limit yourself to either one stream or one type of media, read a lot of different books, watch a lot of different media, go have a lot of different experiences. The best way to check your model and update it is to go and have new experiences. Travel the world talk to other people. And I think it's when we get stuck doing in our own little bubbles doing the same things listening to the same stuff over and over and over again that our biases become entrenched and then it becomes really difficult to see the truth. But if you go, and this is true in all science, right?

By the way, I was just thinking of something. You know, like, our knees are sort of like the elbows of our legs. The ankles are the knees that our elbows are to our shoulders. Huh? Yes. That was like a Bill Walton or old school reference. Like a Dennis Hopper answer to a question. Yeah, but they'd be smoking pot when they did it. All right. That's illegal. This 5th year, which is the 5th year option that he's playing under his salary cap is now up to like, I think it's like in the $20 million mark. If they got a longer term deal worked out, they could lower his cap hit for this season, just like the Buffalo Bills did with Josh Allen when he first signed his contract and just like the Kansas City Chiefs did with Patrick Mahomes when he first signed his contract. That's one thing we didn't mention about mahomes. His cap hits prior to this year have been less than $10 million every year, even though he signed up what $450 million contract or whatever it was. They still bought like a year or two of cheap cap hit for him up front. That's now gone. So the ravens could absolutely do this and still get Lamar for a couple more years of cheap cap before his cap hit starts to go up, you know, commensurate with his big contract that he's going to sign. What I didn't understand from this article though is they say they want to pay him. They say that he needs to just come, but there was the same way they want to pay him. Well, there's a sentence in there that I completely, I mean, some people in my mentions are like, yes, you hit it right. This is what it sounded like to me. And others are like, I think you're misreading this, but the quote was the kid is from biscotti, their owner, but Raven's owner. The kid is so obsessed with winning a Super Bowl that I think deep down. He doesn't think he's worthy. And I think he meant he doesn't think he's worthy of getting this big contract until he wins a Super Bowl. If that's what the owner of the team thinks, I think that's ludicrous. Now, maybe Lamar just said that. He's like, I want to win a Super Bowl, and then I'll get paid. But Lamar is his record on the field, his MVP season. He's definitely worthy right now. He doesn't need to win a Super Bowl to prove that he's worthy. They just gave, as you mentioned, a ridiculous guarantee contract to a guy with 22. I'll tell you this though. I'd be really worried about these super crazy expensive contracts if I was because I've just seen what had happened in the NBA. Some of the guys are worth it, right? You're paying Giannis, you don't have to think about it again, but there's other ones. Like Westbrook's going to make 47 and a half $1 million next year. You know, and he's a disaster and you go on down the line. You look at the highest contracts and they have like, I would say like maybe a 50 to 60% hit rate of succeeding in the NBA. They're still that 40%. There's injuries. There's all these different things that can happen. And you get stuck with that in football. My fix on this would be, I think every team should have one contract that doesn't count and gets the cap. And I think that would be really fun for the agents for the contract negotiations, all this stuff. Where it's like, almost like soccer. You could just make $75 million a year. Wait, before we go, you had the rams in San Francisco, a third and fourth toughest schedule. We don't have to cover that because we know. Both of those teams did really well last year, they're in a hard division. It makes sense. Vegas was the other one. There's some regression teams from last year. That we have a lot of time to go on this, but I think you hit it earlier. I think Vegas is one of them. Over a cheap last year, you think that's some of the groot and draft picks. A lot of them are gone already. Including somebody like rugs, who was the 12 pick in the draft, then they traded more picks to get Devante. And it's one of those teams they have like some blue chip guys, and it just doesn't seem like the rest of the roster is going to be there. New coach, maybe that'll help. McDaniels steps up, but I look at them in that division. They're over under his 8 and a half. That seems really high to me. Because somebody's going to go 8, 9 or worse than that division with how stacked it is. And especially if we're all playing hard or schedules, I didn't like that at all. That line really has moved so far, but 8 and a half for the Raiders that jump out at you. Well, it actually opened what I'm seeing the opener was 8 over was juiced to minus one 25. Now it's 8 and a half even on both sides minus one ten on both sides. The Raiders obviously a team last year. They did play a difficult schedule. In fact, I show them as having played. I want to say the identical difficulty of schedule last year as this year in terms of where they rank in the NFL. But last season, when we talk about, you know, what did this team do? They went three and three versus playoff teams. And so they played 6 of them. They were going to play 18s this season who made the playoffs last year. They had two. What was that? The one score and the OT, they were like, what, 6 and one? They went, yeah, 6 and one, they went 7 and two overall in one score games during the regular season. That's not happening again. When they won the turnover margin, this team was 5 and one. And you know how disruptive that pass rush and they got a lot of interceptions and sack fumbles and whatnot. But when they didn't win the turnover margin, even if they tied it, they were 5 and 6. So they had a losing record when they didn't win the turnover margin. They had a great record when they won it. And that's probably going to regress a little bit as well this year. Yes, getting devonte Adams helps a ton. But I think that this is a team with a difficult schedule, difficult division. They now play the NFC west as well. They were a team that played the east last year, NFC east, who's going to the NFC west this season. It's just going to be a tough task and they get to play last year they played the dolphins. This year they play your patriots. Out of division. So it is going to be a very difficult schedule for him once again. On fando AFC west, chiefs plus one 55 chargers plus two 40 Denver plus two 60 raiders 7 to one. Chargers plus two 40. I only switched from Flacco to Lamar in the middle of a season and have totally remade the playbook for him. I did it midstream in a season. I love the guy. You tell me. That's what he really wants to. He never seen it before. Steve biscotti. You want to talk about not seeing something? He hasn't spoken in four years to local media four years. He doesn't like to speak, he leaves it. You want to talk about an owner who delegates? This is an owner who delegates. You do this, you do that, you do that. Calling Jackson's decision to wait quote unique as hell because everybody expects you to say, I've got to get mine now. Yeah. Have we seen this before? Ever. I think he wants that to say, now I deserve to be on top. People can speculate any way they want. I don't think he's turned on by money that much and he knows it's coming one way or another. That's right. But it's like Eric meaning the cost of the general manager can't keep calling him and say, hey Lamar, you really need to get in here and get this thing done. That's not a GM's job. Kirk Cousins did it that way. What if Lamar says that? I'll play on the 5th year, I'll play on the franchise I'll plan another franchise and then you can sign me. And that gives me three years to win the Super Bowl so you could make me a $60 million quarterback because that's where it will be four years from now. Then he finished up the owner of the Raven Steve machete saying that might be the case, but I don't talk to Lamar. It's not my role. I don't know the answer. And I'm sure the people will say, how does an owner not speak to the quarterback? I'm telling you, the man delegates, that's your job, that's your job. They might speak to Lamar about how he feeling today. We're going to go win. We're going to go beat the Steelers because guess what? I'm going to be up in my suite. And I'm going to be there. Let's go. Go get him. That's the way he runs his operation. Kind of works. More often than not, by the way, he gave John Harbaugh three year extension. But he does. It keeps people on their position. We all make mistakes. You know, I made a big mistake in November. I thought Ohio State was going to be a Michigan. I thought your team was going to be Jim Harbaugh. Should I over them? We're going to beat him down in the horseshoe fall. We didn't get a chance to a year and a half ago when they bailed out and didn't come down here and basically forfeited, but I'm just staying parked. These guys you have all this was their profession. No, I don't like third person comments because I mean, I mean, he's bringing the third person into the person, you know, open games, doesn't it? Well, if you want to, you know, attack a young lady who's just talking to her dad. Is this for him? Anything else? Okay, well, I'll tell I'll tell the Pope. Okay. So, I mean, what do you think of that? Tell you, you're just not quite as funny with now that Ohio State didn't make the playoffs. Now that Michigan owns you. We had to let Michigan how strong much of a train record your boy hardball do this in this interview, Paul. I would rank this pretty high. And I don't want to come to bury Harbaugh every time. I'd like to praise him once in a while, but this was a major cluster. I mean, don't most high profile guys make sure they got the job offer before they go public. Well, usually you talk to your YouTube and your agent says, you got the job, you're good. We all know Jim, he doesn't listen to anyone, so he was it's one thing if you lose out to Bill Belichick. He lost out to a guy nobody had ever heard of before. He's a famous coach one day, but he's the offensive coordinator of the rams. And in Jim's old enough to be his father, I'm in a sounds like the interview for 9 hours, no wondering you can get the job offer. Could you imagine talking about talking to hardball for 9 hours? "Are we continuing to travel? Let's travel a little bit. Let's go to New Zealand. So, Michael and I were in New Zealand and we drove, I don't know how long we were in the car. We were going to see a Lake. The Lake was gorgeous. But what I remember most was the rewarded the end, which was a flapjack. And I had no idea what a flapjack was. To me, it was a pancake. Yeah, same. It's not a pancake. It's not a pancake. It's a fabulous cookie. And so we were in misses woolley's general store, which was the only thing at the end of the road. We went in to get ice cream near the ice cream counter. There was a cookie. It looked like an energy bar or a granola bar. It had a lot of oats, and it was called a flapjack. I bought it. I ate it. I didn't get ice cream that day. Because the cookie fascinated me so I said, do you think you could give me the recipe for this and out came the baker? And she gave me the recipe. She told me, you know, how she made it. And then as soon as we left, the whole rest of the time that we were in New Zealand, all I saw were flapjacks. And did you try them? Did you sample them all over New Zealand? What do you think? Of course I did. You had to for research. That's right. Of course I did. And then when I got home, I started making flapjacks. And the recipe that's in baking with Dory is kind of a compilation of all those flapjacks that I sampled. So the one I had in glenorchy was actually quite plain. But I added dried fruit. I added Ginger. Sometimes I use crystallized Ginger, you know, the slice, sugar, top Ginger. Sometimes stem Ginger. And coconut too. It's a great cookie and it would be great in any cookie box because it's Chewy, but it's still delicious when it gets a little dry. And so it's a really good keeper. The coconut keeps it moist. The dried fruit keeps it moist and it's unexpected. Yes. I want your permission to eat this one for breakfast. Permission granted. Thank you. Okay, so Dory. We've got the world famous world peace two cookies. We've got the caramel crunch chocolate chunklet, the four C's. And we've got the flapjacks. So we've got room in our box for two more. What is next? So I want a cookie that's not traditional in a cookie box. I want to put a biscotti in there. Please convince me on biscotti because that's one that I've had too many old Italian granny to dry versions of. Oh, perhaps were yours flavored with anise? They were very nice, yes. So you might like these. These are made with cornmeal and cocoa. So they have chocolate. They have chopped chocolate or chocolate chips, and they have sliced almonds. So it's like crunch on top of crunch on top of crunch with a lot of flavor. And if you wanted to, you could dip them in chocolate. Yeah, I love the dip to it looks beautiful in the book. I love that they're dark. They're really dark because of the cocoa. And then you see the little lines from the almonds. They're very pretty. Yeah, I see cornmeal in a lot of biscotti recipes. What does the cornmeal add in terms of flavor or texture? Crunch, crunch, crunch, more crunch, extra crunch. And you do give good instructions here on how to know when they're done. And I think that's why maybe I've had a lot of overly dry biscotti because it seems they're meant to be hard, but not completely hard when they're actually done out of the oven. What's the texture you're looking for with these? When I first started making biscotti, I thought, oh, they're just you could leave them in there forever. It doesn't make any difference. But actually, it does. I'd love to be able to give readers baker's cooks. A lot of visual clues or a lot of ways of seeing touching, knowing that something is done other than the time. But with biscotti that's kind of hard. So I tell you to bake them for a second time for 15 minutes. That should be it. Yeah. I'm definitely gonna attempt them because I want my mind to be changed about biscotti. And if anyone can do it, Tori, it's you. Amanda, it would make me so happy to be the one who changes your mind. Let me know. All right, so we have room for we have room for one more. What is it going to be? So we're missing spice. And I want the iced spiced hermit cookies. Oh. I saw these in the book. Tell us about the origins of these. Well, it's a New England cookie. And I've heard the name I've seen the recipes for years and I had never made one. And the inspiration to finally make a hermit was my local supermarket. The bakery is right next to the cheese refrigerator. And one day I looked at them and thought, this is just my kind of cookie. Yeah. And so I went home and made hermits and I've been making them ever since. They're almost like a biscotti but not second baked. So you make the dough and you shape it into a log, bake it and it spreads. And then you cut it and that's it. You get it cool and you cut it. There's no second bake. But my version is really spicy. And I love that. And it's Chewy. And I put a little bit of icing on it. I put dried fruit in it. Any time you have dried fruit, it can be anything. If I say reasons you can cranberries. I mean, you can just play with it. Little snip bits of apricots or figs. And where does the spice come from? Is it the black pepper and the Ginger? It's the Ginger, it's nutmeg, cinnamon. Yes, and black pepper. And the black pepper is really noticeable and surprising. So these are new to me, even though I also grew up in New England. I'm looking out for them now when I go visit my parents in New England to see if I can find them. I think this is an unexpected selection of cookies. There are no sprinkles. There's no piping. Yeah. But each cookie, I think, is beautiful on their own. And together, I think they make happiness. Yeah. That's what I think they do. So I hate to even ask you this, but if you had to pick a favorite of this bunch, could you even do it? You know I was liking you before this. Now the Scorpio's coming out. Oh, come on. Oh, no, I can't. I love these. I love them singly, and I love them together, and I'm not answering your question. That's totally fair. Also, we just have to say, you've had such a great relationship with your fans ever since the online community, Tuesdays with Dory sprung up in 2008, and that was when I first discovered your books and started cooking along.
