I I I I'd love to see San Diego to all turf and all weather Especially Alter We are are dirt racing in California Just doesn't have a lot of impact anymore. Maybe with the three we roles in the winter. "Today from on fest in downtown Los Angeles. It's the first annual but you, you wouldn't know it. Holy smokes, man. The line was around the block when we walked up. There is a sea of humanity coming to eat tacos here, and we're proud to be a part of it. Bill spars course, puts all this on is the curator anytime he doesn't event anytime. He's got something coming on a book. You know, we're thrilled about it because we, we know it's going to be quality, so Bill, look at your baby. Look at how crazy is that to come and see it on, on the actual day? It's amazing. It's amazing. And I know you have a crew of people that help, but it is the skeleton. I mean it's not like layers and layers of your hands on dude. This is your passion project, you're doing things because you want people to be introduced to this high quality. This is an indie taco festival. I love it. I love and how great the amount of response that I've got from listeners, and people that are coming and enjoy are there. Just floored with the quality of food. The attitude of the vendors there. They're all excited to be here and having a good time music is pumping. Congratulations. Thank you. I mean, that's the most important part of an event that I think people forget is the guest experience and the experience for the vendors. And the chefs that come the cooks, absolutely. They have to come first the guests and the and the people making the food. Yeah. There's. Back in my promotion and marketing days, I, I would talk to my crew about the experience. What's the experience? What's the from the minute at the gate, all the way through what, what are people going to experience and you have to think like them and what they're going to want because if it's not for them, then it's not? I mean it's just. People are going to leave. They're, they're, they're gonna say this stinks. And that's it. Yeah. I mean, you, you and I we go to all we've been to every food of every every single food event, and I would say that, again I love food. So I don't I mean, I'll go to go to any food event, but I think it's hard these days to find an event that has lots of good food. You know. Or maybe you have good restaurants, but they're not bringing their, their no it in on the slider on the on the plate. They've got the name, they know that they put enough protein on their they're going to get a long line, somebody's gonna go. Hey, this is the meat, you know, line. And by putting this, this diverse group of cooks, and traditional cooks chefs, everybody is, like, everyone's bringing their, their best food today, and I, I would say, I can say with confidence. You can go to any one of these stands, and you're gonna find amazing food. I haven't done yet and it's hard to go to event that has that quality. I get the impression. That they're doing it for you. It's so funny. Like like every single person here is you because they're excited like, you know, you're a food journalist and been writing for a long time. It's a point of pride for people to have you, eat their food, and like their food. But everybody that's brought to the I made this for tucking prepare.

So you've got fifty different styles types of tacos regions, people coming from Mexico coming from Europe, coming from all over the place that are going to be a part of this event. Five to fifteen emails or things sent to the station every week about events. And you know, e emails people saying, hey, come to this of that we could try and whittle them down to what we think, are going to be the best ones, the best value best. I'm all those things talking on does going to be one of those talking fest dot com is where you wanna go for tickets. We will be broadcasting live that day, Bill spars the, the founder of the event and also the curator of all of the great food is here with us. So built why don't you deuce our first guest and tell us a little bit more about tacos, nineteen Eighty-six. Okay. So this is joy out of the known. Been there been there. And I grew up eating tacos. And when I when I moved to high school here. A figured out that there was a misconception there. And, and I started observing a little more got into cooking. I wanted to be the best chef in the world like the fair on Audrius Rene. Ray sip heath Ignacio does whatever and. Then I realized you know that the taco needs a lot of help here in the United States of America because I grew up eating something so perfect. So magical court tortilla and made with your choice of protein, which can be other cutting Asada swell, they three but and the outcome, garnish with onions lunch when a salsa and the NFL, obviously, with welcome moldy and. And I just got hungry. Yeah. Just describing it. Let me tell you about the kiss the lead on be. It gets an endless that runs. What what I what I what you about it. Tell us about. On the what makes my stock special just to answer that is not only on the greatest of all time. But it's just the tortilla. The, the avocado and are amazing sauces. We, we carry five different sauces, the kid, that's the somewhat eat though, which is smoked, chilly descend, some much, it's five different Julie's, all the toasted almost burnt with olive oil, garlic and sesame seeds, and we have the sunset though, which is the spiciest one with Iran was the oddball, and strawberries, which is our secret ingredient. That's also on our adobo. There's a there's a whole concept behind that. But I don't know if we have time to go into it. So what, what makes these tacos? Different now. I mean, how do you see them as, as piercing the culture as it is? And adding to it. Well, I think on top of all those wonderful ingredients that they have confidence is in that taco. Seen any of that yet. More before. I've actually had food today. You're feeding me all kinds of stuff. Especially the secret and it's all truth. Well, you know what's really cool about them is that they're definitely one of the true representatives of the Tijuana style, which is blowing up all over Los Angeles. Right now it's a trend. It's like avocado toast. But in the Latino community, you know. And here's the thing, a lot of people. Last me about, oh, was your favorite Mexican restaurant or these types things. I said you can't that's just hard in thirty two regions and half of them. We have half of them here. We don't to experience them to understand the differences is what I think is important. And now we're seeing that more than ever before. It's not just throwing. You know some meat in there and throwing stuff on top. Yeah. Well, I mean, they're bringing that, that true T one, a spirit. They're also bringing some Rosarito with a pet on. It's something that they, you know, people from Tijuana. Everyone knows. I wanna know the Yawkey the those those style tacos. Yeah, they're there and then using the mushrooms, very like, California, you know. Yeah, that was that was that was something, something that we have to kind of mushrooms, you putting in there. We're just regular white mushroom. Very nice recipe behind it, a very, very fine technique. And it's and it's developed amazingly, we've, we've gotten great response from the vegan community from all of the Angelenos. Is just a unique taco and I think it's just going to showcase anywhere in the United States, even Mexico. You know, I think it'll get that moment to middle get that spark and is just slowly getting there. You know, we're, we're doing we're doing it again though. So lake come check it out. And and you being a fifth degree black belt you have trained with and sparred with one of the co owners of what used to be Elvis is martial arts facility. Yeah. Yeah. That was an amazing time in history, actually. And boy did I make a lot of memories there. It was incredible Dame. We're talking about what does it Tennessee karate institute? Yeah. And actually, they just opened probably less year. And that got Bill Wallace came and taught the first class. It was reminiscent down those steps for the first time that Elvis was there and red west, and I mean not last year, but I'm saying back in the day. And there's a lot of fun. And when I say you've trained there. I don't mean, of course has its reopened. But I mean back in the day you were there two and a half years Bill sparring partner. Yeah. Sure. And of course, Bill, you know, with was it to master master, Patrick, Renan Elvis where the three gentlemen that re- that ran that, of course, Elvis big and karate, do you recall Elvis ever taken a a chop or a punch to the face there? No that didn't happen. Don't talk merchandise, man. Totally off limits. And I know that you know, that was that was important to to Elvis in with that would not taken the contact. Well, what's the story behind that? I mean, what's he he was he he was very proficient in his forms. Right. Well in his forms, and he did enjoy it. It was something he really look forward to. And he was a fan of Bill Wallace after he became the champion and then brought him to Memphis Elvis himself running to Memphis to run their school. And he had Bill do all the teaching there. And it was an amazing time and opportunity and. Bill now is a legend. If anyone doesn't know who years if you're in or around martial arts, you know, the name Bill SuperFood Wallace. And he's seventy three years old still kicking people in the head. And TCI has been part of some recent tours for Elvis groups, right? Yeah. Yeah. The actually go back quite frequently people from all over the world and during the grand opening of the school. I don't know what six seven maybe a year ago it was a year ago, but people from Europe Great Britain, France Brazil came for the grand opening. It was amazing amazing time commercial appeal ran huge article about it and gave the. The. Notice and everything, but it was it was a lot of fun. Lot of fun. Well, Warren as long as I've known you. And you're of course, six time, Mr. America, fine. Listen to time, Mr. Tennessee, and and you've made it known that not not everybody's cut out for that. Not everybody wants to wants to do that. But but everybody has some sort of a wish when it comes to having a having a better year, and it may not necessarily start on January the first that's a great point dam as a matter of fact in every survey that I've ever looked and it's been a lot the number one resolution at January first lose weight get in shape and Boyd system mean it holidays are over. I don't have to worry about all of the, you know, the goodies on the table or hurting grandma's Stevens. If I don't eat her pecan pie. And that's the biggest resolution and by the middle of January. It goes out the windows. It does every year. And I mean, the gyms are four right now, they'll be full until about February that. And then everybody just goes. Okay, fine. I've blown it again. And I'll get back on it and get get shape for summer coming up. And that is a huge huge mistake in the fruits of the tree to prove that. I listen numbers speak for themselves. As far as the success of the New Year's resolution, and Tim you did it right? And it didn't matter. What day it was? I know it was not January first it was sometime in mid ear. And you did it right. You made a decision, and it's not just hey, I wanna lose weight, but you tied it to a bigger fly. And we've talked about this before on on the show, but you had a why of your daughter and you wanted to set an example for hurts. And you had made the decision to do that. And we went through the entire process, but most people don't attach anything in regard to losing weight to other than anything number on a scale. That's never going to work. I mean, I hate to so. What plus on all those New Year's resolutions of you know, the folks that are with us this morning, but it's not gonna work. And it doesn't matter. What day you make that commitment? It could be October the six it just doesn't matter every day. God gives us a new day to start and that's the beauty of being human. We can decide and move in a direction that we choose. And the other thing that most people truly make a huge mistake about is this year. Years a long time to make a life changing commits, right? Yeah. I think that's one of the things that people do is is in as I hear you talk. And and look at fallen victim to it. And I'm sure many of our listeners have to and that is what's the Oakley? How do you even elephant one bite at a time instead of an and I think sometimes we we set these goals that are so high in so lofty, and I'm so gung ho and by gosh, you know, we're a society that you know, we want we want to watch sixty minutes and sixty seconds. We want to be able to you know. We want it now instead of being realistic in talking to someone like yourself or a trainer at our gym. Or are someone that we know that's healthy about achievable ways to do that in setting our expectations to where? Yeah. If you just stick to it. And and you don't you don't have to be all gung ho and become Mr. health night. You can't knock the weight off. And then you hit the key point. Also, Tim typically what happens with the New Year's resolutions. You know that ice cream? After dinner one night looks just so good. Join your way fourteenth you have to have it. And you know, you haven't had a of ice. Of ice cream. You didn't destroy your program as far as moving forward with losing weight and replacing good habits. Bad habits with good just with one bold ice cream. And we don't forgive ourselves. We say forget it. Well, you don't have to forget it. You just have to get up the next day and realize, hey, I can recommit back in reschedule, my workouts. And that's the other key. And it was vital than most people. Don't understand you have to be associated with someone that will encourage you. Now, I'm not saying get a personal trainer doesn't have to be a personal trainer. But it has to be somebody that you really look to as relates to accountability. And that is key because we all are. Social beings as human beings, and we're not an island and make a decision owner on. And I know I'm not gonna convince anybody of that stubborn. But that's just the fat. You actually do blow that diet with the ice cream when you crumble all the Orioles on it on January fourteenth. You probably have a little too far warranty. That's a different story. It's totally different into the Super Bowl and other beer and chips, and that kind of gets the train off track as well chicken wings, and all that good stuff. But it was light beer. Yeah. Yeah. And by the way that cotton candy is better for me because it weighs less than an apple. And I think I heard him I found a Pearl amongst all of us kidding around is if you find somebody that is is already on track or or has an idea. Go just simply today is one day. Your first step can be just go talk to somebody. Because usually those people have had a mentor somebody that's helped and are usually some of the most approachable people, you'd think some of the fittest people may be stuck up most of the time not necessarily so they had to have help and maybe approachable. So maybe one thing to do today is just simply go talk to somebody and get some advice. And that's the key. You know, the a little step a little step at a time.
