Our residents actually came up with these creative names. The names were put out to everyone to submit and we got several we got about 7000 name entries that were all very creative. Cicada says that about 16,000 votes have been received so far. "But the Phoenix became known as The Rock and roll hotel, like all the bands stayed there, just legends of music over the years, which is pretty cool. Like was that an intention going into it? Or did that grow out of I was 26. I was a 26 year old who said, you know, I want to get into the boutique hotel hotel business because it seems as if it's about to take off. So Ian schrager and Bill Kim were the first two U.S. boutique hot. I was the one right after them. And I was like, they're successful. I want to be successful too. And so I said, each time we would create a hotel, let's imagine a magazine that defines the hotel. And because magazines and boutique hotels have something in common, they're niche oriented and lifestyle oriented. So that first hotel the Phoenix was based upon Rolling Stone magazine. And we came up with 5 adjectives that defined Rolling Stone, funky, irreverent adventurous cool and young at heart. And everything we did in creating that first hotel had to come back to those 5 adjectives. And then miraculously what we found was that the people who fell in love with the hotel were people who would use those 5 adjectives to describe themselves on a good day. So it was like you are where you sleep. So that's what a boutique hotel is. It's sort of like an identity refreshment. It's aspirational. And so every hotel, yeah, so the first hotel was all about rock and roll bands because of 26, like, oh yeah, I'd love to have Nirvana and Pearl Jam and Red Hot Chili Peppers staying here all at the same time on their way to becoming famous bands and that happened a lot. Those three bands actually toured a lot together. So that's how it started and then all 52 of the boutique hotels were based upon different magazines. So each one had its own magazine. It did. Or sometimes a mixture of two. There's a hotel Vitale in San Francisco. In the pandemic. So that was dwell, meets real simple. So modern urbane fresh natural and nurturing. And so in some ways, I was like an armchair psychologist. Right. By saying, okay, what are some of the personalities out there who would like to see a hotel that's their perfect habitat? Yeah. Well, creativity is central to this knack for marketing, some foresight about where this industry was headed. It's hard to imagine at this point a world without boutique hotels. No young person is staying at a Hyatt or a Hilton. They're actually staying in Airbnb. Exactly. Yeah, right. Actually, boutique hotels. And even a precursor for Airbnb. Yeah, of course, like a bespoke environment, right? And just having stayed at the proper, like that chain and many others, oh, it's legacy to this kind of light work that you did. Many years ago. Yeah, and if you look at, if you go into almost any full service Hyatt or Hilton today, they are trying to be like a boutique hotel. The bars are central, the music is definitely not the music of 20 years ago. The design is very different than it used to be. So I think what the chains realized and then ultimately they bought many of the boutique hotels, my company is part of Hyatt in this part of the irony of that. Yeah, Marriott hired in schrager. Like, okay, there we go. The bottom line is the big hotel change realized that they needed to get hit because the customer wanted more experience. They didn't just want a boring, predictable experience. Coming back for more, but first, we're brought to you today by go macro. It's pretty insane how many nutrition bar companies there are out there. If you go to the grocery store, there's like an entire aisle dedicated just to bars. So how are you supposed to know what's good and what's junk? Well, all I can tell you is that I'm pretty sure I've tried all of them, at least all the vegan or more healthy ones out there. And I can tell you that most of them are lousy and there are others that I just can't stomach at all, but there is one that I fell in love with long ago or one that is organic, super nutritious, gluten free, plant based, of course. And incredibly tasty, so much so that I reached out to them to work with us. And that bar, no surprise, is go macro. They've got a wide variety of protein bars, snack bars, kids bars, in tons of awesome flavors, my favorite is the salted caramel and chocolate chip, as well as the blueberry and cashew butter one. And beyond that, there's a really great story behind the company. It's mother daughter owned. It was founded when the mom Emilia was diagnosed with breast cancer and the daughter, jola, helped her adopt a plant based macrobiotic diet. Amelia created the first macro bar recipe in her kitchen on their Wisconsin farm. And they just grew the company from there, organically, unintended. This is such an interesting combination, the food court and, of course, time out watching. Arts and food and all of that in the city of Chicago. We were just talking about well, anyways, tell me that the food Court time out. Chicago is opening. Is it next week and we're gonna be opening up June 17th next Thursday. 9 16 West Fulton market over there with, you know the rest of the great restaurant scene here in Chicago. And we're very excited. We've been closed since like a brief reopening last last fall. So this is the first time since where we initially opened back in 2019 that we're gonna be able to welcome, you know, really kind of large number of folks back into the space and share some of the great food that is available here in Chicago. You know, it's called it a food court, but it's a food hall. That's the right term correct. Yeah, that's what we prefer. Still, I'm still reeling. We're talking in the last segment about the fact that Kamala Harris has not been to Europe. Um, because when I my time out Chicago Food Hall experience was in Portugal in Lisbon. I believe it was Lisbon. Uh, yeah. Yeah, I didn't know there was such a thing and I was just blown away by it. It's such a great concept or great idea if you're coming to a city or country to learn about or to sample local food. I mean, I Can't stop talking about that experience, And I would imagine people coming to Chicago will have a very similar one with the time out Food Hall here. So, yeah, the whole that you mentioned and Lisbon was the first time out market it was opened back in 2014. And the whole idea of the markets is to kind of bring, Um, our publications to life in, you know, in a physical, real world settings. So you know when we got around to calculating our lineup for the market here, and should God, That was when you start to reopen. We're taking a look at new food that it's in the city that we think it's exciting, but we're also taking a look at. You know a lot of institutions that we feel like our worth sharing with. You know, both locals and people were coming to visit the city. Um, so, yeah, For example, If we have candlelight pizza from Rogers Park, they do that great, like thin crust Tavern style pizza, and they've been doing it since 19 fifties. So they are, you know, they're experts in that area, but at the same time we have We have kind of newer folks like so on smoke this barbecue, uh, barbecue team from from Evanston, led by Chef DeAndre Carter. Um they're gonna be doing all kinds of brisket. Ribs pulled pork, all that kind of stuff, and they're they're kind of a A group that it's just started within, like, maybe the past couple of years. Tell me about urban belly to. I've heard of them, but I don't know too much about them. Yes, Urban belly is actually a returning vendor. Let's run by chef Bill Kim. Um, he he's run a variety of restaurants under the urban belly named the current ones located in Wicker Park right off the Daymond Blue line stuff. And, uh, it's really kind of just, uh, melding a bunch of different types of Asian cuisine has these really delicious dumplings that are extremely popular. He does like a cat shoe noodle soup. And one really exciting thing about Bill Kim is that he's actually gonna be running a second stall in our market. When we reopen next Thursday, he's going to launch a physical version of his bill Can ramen shop concept that he started at the delivery Only Concept last year, so we're really excited to have Bill kind of running two shows next week. So if you look, I'll describe my experience in Lisbon and you tell me if that's what matches Chicago, But it was a big open hall tables in the center. I'm not doing it justice but then ringing around the tables are all these different restaurants, So you're sitting community or you can Pick and choose where you want to sit. Have a beer If you want to have a beer, but sample all these different foods. If you've got a family that can't decide not only on what pizza topping, but whether they want sushi or pizza or or southern cuisine or whatever. You can just go to each of these different outlets. It's kind of like Taste of Chicago under a roof. Exactly, Um, yeah, kind of feel like a choose your own adventure taking thing, Uh, in terms of dining, and we are laid out in a very similar fashion. The time out market in Chicago is actually kind of modeled after the original time out Market in Lisbon. So we do have that big, open seating area surrounded by all the kitchens in the restaurants that you can go and order at individually, You know, you can You can mix and match the food link, or you can kind of get your whole meal from one location and then we also have additional feeding. We have some picnic tables are going to be set up outside. We have a second level with some stadium seating in some additional tables, and we also have a bar on the third floor was kind of a rooftop terrace that overlooks Fulton market. I can't wait to check it out those that I just had such a great experience. In Lisbon. I can't imagine it won't be just as nice here, but you kind of touched on. It earlier explained for me the marriage between a publication that looks at entertainment, then opening up a food hall food has always been a part of the coverage that time out as private something you know, we we've reviewed restaurants per year. We've kind of kept track of the best new openings for years. Um, So you know, I personally feel that you know, food is very in grade in culture, and especially in a city like Chicago, where there's such a rich history of, you know, foods that you can only get here. I mean, at least you can only get the good versions here. Um, things like deep dish, Chicago style pizza stuff like that. Um, So, yeah, it's in my mind. Showcasing this food is, uh, a way of of sharing the city's culture. And you know, even beyond that. One of the things that we do A time out market is we have cultural programming. The kind of complements the food offerings. So, for example, opening weekend we're going to have several local DJ really spinning during kind of dinner hours. We're going to have some performers just like tumblers. We're gonna be coming in, um to do performances for folks around the market, and we're also going to have some local artists to be working on some art installations. So it's really about bringing Matt just the food but all the culture of the city into one central place where you can kind of experience everything I want. I love it.
