Talk a little SCA. Let's go into it. Here we go. My next guest is seen on the competition barbecue Circle, but this past weekend went down to Texas for the Steak Cook-off World Championships. And all he did was walk away with the first place trophy here to recap the wind talk a little steak cooking is the Pitmaster of Kosmos Q competition team Darien cuz Ravi joining me here on the show Darren. How are you, buddy? I'm pretty good. How are you doing? Absolutely fabulous, my friend and I appreciate you joining me tonight. So last to get to when it comes to talking about the steak cooking and all this great job you did down in Texas. But if you could can you talk to me a little bit for the folks that you know might be just tuning into the show for the first time or haven't gone through the extravagant run of archives here on this show, you know thought about yourself kind of how you got in this whole competition barbecue thing. Well, it started ten or eleven years ago. We just you know, I I guess mostly like everybody else see something on T and think you can do it and then we we find a competition here close. So we enter that was lucky enough to get our name called and just get hooked ever since and and you look back be honest with you. Just been just been going out of every year during if you if you hadn't got the first call as it's something that you still would have did not enough fun at the first one call or not where you would have went back anyway. Yeah. Yeah, we had a good I did a lot of work though back then ten years ago. It was a little lot different than it is now now I'm back until 6:30 in the morning. We're back then I never went to bed. So but I still would have went back because you know at the end of the day man, I just love home cooking and cooking aspect absolutely love and not to mention the socializing with all the people wage and you know now over, you know, ten eleven years. It's become a family so, you know, I look forward to to seeing you know, my family members on the weekend and just catching up and down hanging out and Cooks BBQ. Let me ask you a quick question. You know, when you look at it ten years ago 11 years ago just said you're up all night and and there's a lot more I guess quote unquote work or labor and birth. Of then you're doing now was it a different product back then is it was at one that can compare to what you're doing now, or are they completely two different worlds? In my opinion, they're two different worlds with the the evolution of the barbecue, you know products the injections rubs and marinades jokes back then they were around but they weren't near as refined as they are now and and not to mention the equipment has changed a lot better. We've learned a lot so that the whole evolution of barbecue in my opinion has shifted forward not to take anything away from you know guys that were doing back then because if it wasn't for them, we'd never be more at during cuz Ravi joined me here on the Shelf from Cosmos Q. We're going to go ahead and take a look back at the Steak Cook-off this past weekend down at home. All right, so, you know, there was a huge barbecue competition this weekend number of other ones too, but obviously the most well-known one was the Jack Daniels. We were just talking to Bill Gillespie about that this past segment also log Was the sca event that the big Steak Cook-off. So is that something that you had to qualify for previous to getting down there or kind of if you can kind of give me the the run-up to that steak tough situation. Well unbeknownst to me. I thought to be honest with you. I really didn't know much about it. We were actually going to meet the boat rides up at a competition, but we couldn't get in. So we said, you know, we found a state competition and we went to it and we was lucky enough to meet, you know, just a ninja though, the reigning world champions the last two years and just got to talking with them and and the birds from down in Texas and Cali. There's there's a bunch of them Pigs Barbecue, you know, just a bunch of guys and we just got to talking and I I I'll be honest with you. I didn't know that there was this whole federal state competition is realistically it's as much fun as barbecue if not more sometimes and that's Only because of the aspect of you don't have to do nearly it's not nearly as labor intensive as barbecues, but I didn't know so we got to talk with them guys. And you know, there was there there was other barbecue competitions around her clothes and I mean we looking at our schedule and I'm like, well, you know, I don't want to travel 500 miles if I got a state competition that's you know an hour from my house. So we got to do in a couple State competitions and you know just filling the gaps in between barbecue sauce and I still didn't know that I had qualified or I didn't qualify on because there's two ways you could qualify to go to the game World tissue up and that's one you have to be one of the top top ranked teams in the points standing or have to win a competition. And we were just learning it figuring it out. I think we only did like five or six of them and at that point, I think it was just four or five and off somebody at said, hey man, dude, your three points away from being qualified to go to the world champion, and I'm like, well, I didn't know nothing about it and I actually had a friend Jake he brought the spreadsheet over to my house cuz I'd look look where you're at. And I was like, oh, I didn't know so I was like, well hell let's go cook a steak competition. We wasn't doing nothing that weekend. So Thursday, we packed up and headed down to Sweetwater and we got lucky enough. We just needed a nice place call and we got enough we got six and that just that got us into the top points in dog s c a championship. So we got an invite on that right? So if you can when you get down to the national championships this past weekend, you know, how many teams are in and I guess wage For the folks that really don't know much about I mean, you said yourself you didn't really know too much about it. Is it just like a 1-day thing. Do you bring your own meat, you know kind of set that scene for us. If you cook and you pay your toll free and you go down there and when they have the cooks meeting on Saturday, that's when they put all the meat out on the table and then they go to a system and that's how you get a picture of meat on the whole as you're looking at the table of meat. I mean, is it all pretty similar stuff? There isn't one that you know, you would feel a shaft that it's need to go last, right? You would think that right kind of but but actually the guy that got second place off at the championship. He I think he picked 6060 first. So he was almost dead last in picking 6 months. That's why as you get your steak, you know, this isn't obviously like an overnight situation that you're you know used to it at a traditional competition with prep and injection and all this other crap. So on Saturday the day, how do you prep the meat? It was advocating so is the first couple of years that world through championships going and you begin to Regale me with a story that involves a craigslist trapper, but not just any trapper. This was a I would say it was a bit of fabrication, but it was such a good story to tell at the coach meeting. When you ask, a question I've is a bear is a bear legal and everybody looks at us like what in the heck is going on on? That was it was one of those where it's like we made the top ten, so we partied really hard the night before, and it's one of those where you Kinda. Got The cooks meat, and you're like am I hung over and I still a little bit buzzed like what's going on and and I just thought it was great so I just ran with it. So people thinking Oh my God I mean you know because it's not like you guys have a pristine reputation. I, mean you guys are little rambunctious from time to time especially back then before you really started to dial it in and hone in you. Guys have been known to party little bit a little bit brash, and so forth so where people really like man. It's fifty fifty with this guy. He might be pulling our leg, but he might be pulling an eight hundred pound bear to cook running style on a pit from Brad. Yes I I would say there was some people that are like whispered in the background like. Do you think chatterly going to go through with it? And and so like like to the point of view that like man and those guys went and got the groceries we had planned on cooking, and I stayed back, and people are like. What are you doing and I'm like do the trapper should be here any minute like I I can't tell you a chance of showing up and not one of us being here to. Take possession of this thing, so I mean you were playing it right to the hilt. I mean if you're GonNa, tell a story I mean. Make it authentic well. This has spawned one of the things that I like to do is go on the Internet and find things. Joe Rogan obviously has a huge podcast getting paid multi multi hundreds of millions of dollars here recently through spotify, but one of the things he has on youtube are animated parts of his podcast and I said Man I think it would be pretty cool to find somebody that might be able to that so i. I started scouring the Internet I found somebody here locally, believe it or not. Who Does this type of thing? Talk to you and said hey? Do you have any issue with me? animating the best bit ever that has graced the airwaves and Internet ways of the show. And you said Hey, absolutely, so we worked out through our character descriptions here but animated, but it's finished, and it's ready to go, and I wanted to unveil it with you here tonight. That is so funny that only line that I that I remember from that story that I wish we would have been able to work in. There was never trust a bear trapper on craigslist. So we'll talk about some of the nine that are on the list and as you know while get into that here in just a minute so plenty of talk about robert with looking forward to him in about eleven minutes from now then. We will really immerse ourselves and barbecue hall of fame. Talk in the second hour and especially the first segment of the embedded. Hey robert hey greg how's it going. I am fabulous. Appreciate you making time for. The show was always and we have a ton of content to get through here first and foremost. Are you a medical doctor. I am not a medical doctor so please. Don't ask me on the airplane or anything to resuscitate anybody. No mine's english. So it's a does that put you in a weird spot. If nobody was on a plane inside there their doctor on the is their doctor in the house. So you don't say anything. Just sit there. And i hope there's a doctor all right fair enough one of the highlights of our conversation. This evening is going to be a topic which will call sign barbecue restaurants and you did quite a bit of research you Published an article all about it. You've talked about it. And i find it interesting because i think there is what you could call a stereotype or a stigma attached to the terms chain bar or the words chain barbecue restaurant. And in some instances perhaps well-deserved and other instances not so much so. Let's i guess. I look at it from a high level. Do people assume the chains are independently owned and or franchised at each location or not. Well i think different people assume different things because there's really is no formal definition of what a chain restaurant is actually spent a little time trying to dig various regulations. And things and the best. I could find were some very very ambiguous wording. So there's not like there's legal definition or anything of what a chain is or even an industry definition Act the term actually goes all the way back to the nineteen twenties and started off with chain stores like the piggly-wiggly grocery store was the first chain grocery stores but everyone has a very different definition of it in it. Depends you ask. But i think you know there's there is sort of like the neutral description of what a chain is obviously more than one One would be link so you have to have at least two. I guess to make a chain But beyond that there is definitely the connotation of a chain which is people. A lot of people would have a negative reaction to that Which is the chain restaurants in whereas other people. I don't think they even think about it. So i think everybody probably a little bit different definition of what a chain is and whether it is a good thing or a bad thing To to either be going eating at or if you're a restaurant tour if you want to say yes. I own a chain or no. Is there any mockery. When the term franchise is thrown in so you can have at least to my knowledge. One of the most successful franchises out. There is a mcdonald's of people. Mcdonald's blah blah blah but then you have other chains out there that are. Let's call corporately owned or core locations copeland corporate owned retail which is a whole different thing. That means that it isn't something that you or i could buy into. Its setup like starbucks. Think are all corporately. Starbucks is all all corporately owned as are like we believe that probably Mexican restaurants and in the barbecue. I think mission barbecue which is a pretty large chain now but all those stores are corporately owned. I think a lot of people do associate franchising with chains. Because it sort of they sort of go hand in hand if you wanna have twenty thirty forty fifty restaurants across the country it helps if you have franchisees who are actually investing and building and all that but the franchise is not necessarily a chain in. There are some instances where there are restaurants that have like two or three locations. One is owned by Franchise one or two other ones. I don't know if you'd call that a chain. Necessarily i think a chain you know is is definitely larger than that. It's sort kind of the deficit pornography you i don't i can't define it but i know what it is when i see one. Yeah works for me. We're talking with robert moss here on the show robert f moss dot com is his website. Well a little different. If it's the monica or the umbrella if being part of a chain you you're wanting to go into a restaurant typically and you and your franchising then you're going to. You're gonna buy into us assistant. Sorry story developed. There's operating models way of doing a depending upon the company. A lot of them will help you get started designed restaurants design everything Around that Ios certainly from a. There's something about a restaurant i think. Usually it's one thing to have one restaurant and usually when you get the to. You can handle that talk to most respiratory is once you start to get to that third that fourth restaurant if you're an independent operator then It's different you can't be every restaurant every time in you get more and more people so it you have to build a management structure you have to processes and yet to bill all those types of things so i think from your perspective of successful jane what is going to do is going to build in standardization patterns in ways of doing things so that the product in the offering is consistent Add in his scalable whereas if you're just sort of opening one restaurant after another after another each ones different than usual different in each place the maybe the the pitch you cook on a different each place is going to be very hard to keep scaling because now you have to have somebody in each restaurant who really knows the operation and so i think what you find is any restaurant starts to get up. Above couple of units a couple locations is gonna have to start. Standardizing is going to have to start your bringing that guy consistency operation. Bring in your managers. You can try new employees and teach them teaching the craft without just being watching their shoulder alter do you have an opinion on franchise locations being more hit and miss on consistency and quality than a core location. Not necessarily. i don't think. I have a single opinion. Why another on that. I do know that with each company's a little bit different in the way they do it chick-fil-a as one example. Which is here. You're based in georgia's said here in the south they don't like to have an individual franchisee to have more than one unit. Sometimes they can have to. I think it's for that reason they want to have the the Operator in the stores and in in very much involved other chains or different in so a owner can have four five twenty thirty thirty Restaurants that point now your franchisees having the same problem that the chain itself does which is now. I have thirty restaurants while now d- managers processes under the hr all those things that come with scale. So i think that I think the Having a franchisee be be closely involved. It can be a good thing. anybody's worked as franchised. Restaurants will tell you there's lots of of conflict between the franchisees and the corporate restaurants. Who want to the corporate restaurant wants to usually have standardization and control control menu control the decor and everything else the franchisees they know. Better than those pinheads. The corporate office and they wanna do it their own way and now you get to. The same inconsistency in each place is different. That sort of works against the advantages of having a standardized way. I was going to follow up and say that. A con of being under the franchise confinements were like operators. If let's say an operator says okay well in. I only have one location in this specific one. They keep asking for x. In it's not on. Whatever the franchises allowing so you're either at that point handcuffed that you're seeing money that you just can't have because you're gonna play by the rules or you're going to decide to throw some of the playbook out of the window and bring in some new product and sell it because you're more of a bottom line person which might get you in trouble or or in some type of violation of a franchise agreement. Yeah i think the the the door swings both ways right so the franchisees think that they want to get all the benefits of the of the of the chain standardization but they but they think they know they know their market and they won't be able to do things their own way and you flip it around back to the corporate guys like no we know better we can have the franchisees while getting and i think is probably it gets point. You get back to where you are with independent restaurants. Which is everybody thinks. They know what they're doing when they're in the restaurant they all be doing it right so some of them are making mistakes. Were doing making the right call And then you get the same inconsistency If you have too much deviation within the franchises that you do if you just drive down the road and pick any random joe's barbecue and pulled into it. So let's talk about the general john and jane barbecue consumer. Do you think that they are able to tell if you walked into a restaurant. And you weren't privy to a name or knowing if it's a chain or franchise or not or just independent. Do you think the general. John jane barbecue eater would know if they're at a chain or an independently owned position. I i think there's two factors to think that i think the the market i can tell you what the ratio is but i think it breaks into two camps. I think one camp probably doesn't know and probably doesn't care you know what they're looking for. Is you know this looks nice. And it looks like it's clean while lead or you know there's nice table tents and things like that and this is what i like and then i think there's a whole another segment of barbecue consumer who A if they think it's a chain going to already be negative Predisposed to are they go in and later find a has the chain they actually enjoying it up to the point where where they say always say. This is a chain right. I don't like as much as i used to. Because in their brain the chain has a has a big impact. One of the curious things that's been happening in the barbecue world lately just in the past ten years or so east not matter who was back in the kitchen right. And who is back manning manning the pits In the back the the the the cooks weren't really famous. If you think about the barbecue empires from twenty thirty years ago. It was the restaurant to zoos names or on that but just in the past ten years with the rise of kraft barbecue. There's been this returned to all the intensity and into wanting to you know. Know your pet master and have a face on there so you you've got this interesting dynamic where the story is becoming very important. And i think that's sorta started work yet to change a little bit and what you've seen is a lot a lot of the big chains that were founded by somebody. The founder went away and then came back. They actually brought the founder back in. So i think. I'm thinking sunny. Tillman with with sonny's barbecue and dave anderson famous. Dave of famous dave's both of them left. Businessmen came back because it's good to have that face of the person That that's a frie- the chain because people want that kind of authenticity in that kind of understanding who's behind this name. Who's doing the cooking. Do you have a thought on who you think. The most underrated barbecue chain is out there. Currently and who the best is now. I really don't. I don't have a the big chains the really large ones. I mean that's one of the the the dynamic change restaurant it's going to be you're not gonna really get usually just terrible food poisoning everything like that. It's usually going to be pretty pretty good quality but it's not gonna be great quality certainly if you look at my top. Fifty list differs living. There's not a whole bunch of chains on. They're the ones that are on. There are the ones that are call early stage. Prochains i think of Pat martin of martin's barbecue joint which has about. It's i think he's closing the ten restaurants in a couple of states. Now and that's one of the ones that i would definitely in my definition of chain And actually with southern living we've been going back and forth the editor's trying to codify definition a little bit to try to figure out what what qualifies as a chain martin's barbecue joint would but i still think they do a lot of things right and they have a lot of of of character and so i think that's one. I'm not sure if it's under any. Because i think it's pretty pretty highly rated but certainly of what are considered the chain. That's where bubble store the top of a of of molest dicky's the biggest at this point. It's a can't ever keep track dicky's as either. The biggest is certainly. I think has it's been expanding rapidly overseas so definitely has like the most countries under its belt for a long time Sonny's which is based in. Florida was the biggest thing. Dickey's is now a clips them Famous dave's is is growing and it's been Private equity money or actually. They're publicly traded company so they they've been growing expanding but i don't think they're quite to the scale of dickey's yet as far as i think. Dickie's is the largest but Just by like store count broader moss. Joining us here on the show talking about chain barbecue anything else you want to add to the chain conversation before we move onto books not not too much other than just i think it's. It's a murky subject and kurdish people. Keep try to keep myself and urged people to keep an open mind when it comes to to chains. But i do think. I think it's just the dynamics or interesting of what happens when a restaurant yo is trying to grow beyond two or three units in somewhere between two and three and the twenty. There's an interesting little sweet spot where you can grow where you can't go ahead and hit up robert moss's website if you want more info on chain barbecue but will transition over to book. Springtime early summertime is the wheelhouse for live fire. Cookbooks and you seem come out by droves certainly this year no stranger to a number of new books. Myron remixing his out with a kito book. Rodney scots out. With finally adrienne miller who we both know and has been a guest number of times here on. The show was out with a book that is doing exceptionally well. As you peruse the landscape of barbecue books that are live. Fire books to the sheer. What sticks out would you like. what don't you like. What's a gimmick. What's not not sure. If i don't like per se because i think there's is a lot of the same one of one of there's some interesting things i think there happening Happening this time around or this year is true. That every seems like every all probably won't bring out the barbecue books in that late. April may timeframe because it's barbecue season in my first thought was well that doesn't make sense. People cook year round. But also more you look at it. You realize that every may Editors in magazines are looking to do barbeque features. So if you have a book coming out right then it's a great way to get press whereas if you bring one out and say november people aren't necessarily going look for it I think it's interesting the way that the the book sort of follow the larger trends of what's going on and you sort of you know it's tough because a book doesn't get published in three three months. It is usually two or three year process from the time that publisher selects the book until the right completes it and they get they get through the publication process but it i think it does reflect some of the trans when one of the things i thought was interesting Coming out this year. There's a patriot. Publishing brought out three books all at one time. And i think it shows just the way that they're I think the rise of sort of branded barbecue equipment is really start to shape. The market so These books are all sort of Well they're based on different things. So one of them. Adam mackenzie book. Did a book called weekend. A weeknights smoking on your traeger. So it's focused particularly on traeger and it has the subtitle other pellet grills but tigers in in big letters and then there's another one bill gillespie sort well-known competition veteran Did a book on. I think so. Hot and fast on your weber spoke mountain cooker So it's really for smokey mountain. They're similar bullet cookers and then There's another one that came out. Same press is really about four fundamentals smoking and it. It looks at the different types of cooker. So it's those are being called out specifically. I think the idea is that you've got a lot of people buying or getting these these these new cookers or grills for the year for either ryan or a gift and then look out in the book to master that that happened last year as well. They're a bunch of books came out that were there. Were focused on that and cures enough. I got hit up a couple of times from folks. Who said hey. Would you like to write a book on on a cooking. On whatever appellant griller various models not passed on them. Because that's just not my thing but publishers are actively out looking for somebody. It's not like some guy. And says i really want right. The ultimate book on the the weber weber kettle. Oftentimes it's weber. Whoever you have the manufacturer is who's actually gone out and looking for someone to a payday smell or no. I guess it depends on on how you look at a you know ones getting rich off off of those books. I mean the best way to make money. You know selling cookbooks. Or selling books to become rich and famous and then write a book The sell out of copies but usually yup sure is going to well. I guess he's so well known but now it's it's. It's not a huge payday for somebody. But you'll pay you'll pay you know. Pay the rent a little bit and it may get you noticing and get lead to other things so it's usually more of a stepping stone. Then a great. I published this one book now. I'm done for five years. Robert got about a minute left. Let me ask you as we transition outta here. Barbecue hall of fame will be announced tomorrow so in no particular order of course Go ahead and give me your nominations. Yes i'm or talk through the diner. Who three picks did you vote. I can't i. Can't i can't reveal that sworn to secrecy. Why not nobody cares one. Vote or anything right. I mean you can tell you. Well if i was just your best nominating committees not not. But i'm happy to talk about. Who who who stands out to you or i mean. There's six of the nine or repeats. Meat heads a third pete in a row. Actually so i mean it's i would say it's certainly admirable for those names to get renominated because they are thrown back into the main holding tank and then basically ry argued for so there's obviously some type of deserve nece there to get put back at absolutely and i think that what my biggest takeaway from the list is strong list down to nine was really tough and we really went back and forth a lot of different things. I think if you look at the new names that are on this list Which i think is all gates at mitchell and joe. Dreger me all three of those. Those guys are legends. and so you know. There's nobody on that list. I don't think anybody would say isn't deserving all famous more just a question of is this the year or do they just hang around in and they'll get it next year So i think at this point it's almost down to Maybe like the full panel who they know better for that. Because i think from a quality standpoint all nine of those the finalists or any pick. You'll you'd have to say that's a pretty good pretty good class of inductees. no doubt about. Let's call the nine finalists. That make it through the big culling of names and this year. I believe there were sixty five unique names. That were tallied. I think it was one hundred. Sixty five one hundred seventy total votes so there was a number of folks that got nominated more than once or twice however you look at it so as you look through that names list. Who's standing out to you or what you think of that list and then ultimately what three would you put it. Well first of all. I'd like to agree with you. Know dr moss had to say earlier and that is that the you know the the three that got nominated issued. The three new ones certainly kind of big names legendary people. that probably should have been recognized. A while back My take on the list. Is you know it's got a lot of great people on there. I'm going to go with. I think it's just rodney scott's year i think he deserves to be there and certainly you know it's a big year for him. Regardless so rodney. Scott i think on solomona throw it to Leeann weapon because i think that you know. I think it's her a she's done a lot. And you know it's good to see that kind of representation and needs to be reinforced and just kind of from my own a working in kinda history barbecue and traveling and stuff I'd like to throw it to all the gates. Oh right so we can obligates. And within and rodney scott is derek. Riches picks so we'll see unless the list. That's good those are you're a. Here's what i say you have the balls to say. Then it's good enough for me. Not only as robert moss sulking away on the fuselage of an airplane with people dying. He won't even give me the names that he voted for. I mean come on. What is he doing there. I am throwing names doing surgery or helping people that's right. I mean he's worked quickly working his way off the show i was. I figured we would maybe talk about some other subjects here. But then look at you posting about this best or most popular barbecue websites. And i'm like. Wow that's not you know i mean there are certainly great website on there but yes it's not necessarily reflection of best. This is most popular most popular analytics. People think that goes hand in hand. How do you differentiate. I don't look at the top ten songs right now. Are the top ten movies. Top ten tv shows and i think you'll find that many of them are not what we would call best tim. What was it kardashians. Earn season twenty. So best show and most best and most popular are not necessarily the same although. I think there's a really great really great sites on this list and you know it was about three months work getting this together. As matter of fact my intention was to release it At the beginning of the month kind of four memphis for him smith for may as arguments brunt sort of thing but I wanted to run a back over with some some analytics people. I know to really make sure. I nailed it down as best is absolutely possible. So you know. So what's the impetus for this. I mean it doesn't appear that if people read it they casually read it. Like i did and just about popular and best than all of a sudden we have a powder keg situation in a few different ways so like why right it. Well there's a couple of reasons one is that i mean i do consulting work with some companies and some of the pr companies marketing companies. And like that. They do this sort of analysis and they have access to these huge analytic systems. Like khan score or what is it. and some of those sort of things and you know. Sometimes i met brought in. I can use that those analytics to kind of do analysis for them on trending issues and things of that nature. So you know a lot of the companies already have this kind of information but it's not out kind of in the general public in it's not out amongst the fellow content creators or you know small businesses or in that range and i thought you know. I think that it's it's kind of important to show you know where the traffic is going to. And who has the sort of popularity in this area and the other real reason for it is because the kind of shift we've seen. I mean there has been this explosion in the last couple of years in to barbecue content and who's consuming it and how much is being consumed. You know it's a little early to say what the numbers are in her. This back and forth with some are suggesting a forty percent increase in barbecue grilling product sales for last year Which would make it. The fastest growing period in in barbecue in possibly american history. So we have this huge flood of new people into the space. We've got a lot of young people coming in a lot of novices coming in and they are creating this huge shift. Big paradigm shift in where. They're getting their information from where what content they're consuming now. You know this is just for barbecue sites and intentionally limited by removing the corporate side. So you know no weber. No traeger avows. I removed the general recipe sites the general cooking information site so kitchen in all recipes. You take them. At so focusing specifically barbecue sites i also removed the form sites because it's kind of a collective effort knowledge base sort of thing. I was looking at the specific content. Creators who are generating a website and the kind of traffic that generates. And you know this comes up with some really interesting because there is this shift. That's going on and it's both engender in a generation. We have four women on this list. Now you know. Suzy ball on your show. Last week is on their Just pilots who are now. She appears on your show. You know she's in there and so we have this kind of women content creators in barbecue becoming a much more dynamic powerful force here and a lot of these content. Creators are people in their late thirties. So we're looking at also kind of a younger age here and so we're getting much more of a millennial representation and this is reflected in the way millennials consume this information. They access information a little bit differently. They're more likely to come in from social media so they're more likely to peruse pinterest looking for something that looks good and follow that route or to come in from you know like a an instagram's or something like that. So i think that this is a really powerful shift in in both the consumer of the data in the creators of the data because people tend to kind of they look for content creators match their age their lifestyle a little bit that they they feel comfortable with that they feel like related. Lex them a little bit better. Yeah is that relate ability factor and so this you know wishing some of these sites exploding at rates six seven hundred percent annual growth rates. And when i go back. And i look at you know search metric information or a really broad traffic information for some of the big corporate sites or for just you know the general categories of search information The entire segment the barbecue and grilling content online media is growing arrate. Nearly three fold year over year and has been for the last couple of years and you know some of this is pandemic. I mean certainly last year we had this huge growth that way but the shift towards the pellet grills that huge explosion in pellagra sales. You know which is brought so many new people into the space and so i find this really encouraging because there was a debate for a while in in kind of barbecue in amongst on the business the pr firms and stuff was is the barbecue community. Just kind of getting older is. It isn't something that young people aren't as likely to take up or get involved with and we're we're certainly saying the opposite of that. We are seeing so many young people coming in and they're really shifting the narrative of barbecue the way they consume information the kind of information they look for and the websites that they're going to so you know this is just kind of you know You know this is. It's an amazingly dynamic and ever evolving landscape. We have to say you know the you know. The rules don't apply after a couple of years. What was cool ten years ago. Fifteen years ago. Twenty years ago. When i was starting out in this just not the same today and So many of these sites that have come up in here that have kind of jumped into the list in the last two years or so. They are very savvy very nimble. They are very you know they're they're really good search engine optimization the really social media marketing they're really good at doing their own data analytics and kind of knowing what their audiences and our audience wants and and you know. Another factor that i found is that there are some of these sites in four to eight years of age their comparatively small that. They're not as huge as you might think that you know some of the really really big sites just have kind of lost that ability to be quickly adaptive in. That's kind of hurt them so these newer kind of smaller sites boy. they just. They adapt very quickly. They changes they need to. And it's just become this huge model for success. So i'm really encouraged by you. Know what i've been seeing in the data. Because i i really see the that there's a lot of growth in and you know it's bringing out so many more people in and a lot of people on this list. That's what they do. They really kind of introduced barbecue to a whole new group of people which just makes a bigger pie for the rest of us. It just grows the table. We just get more and more people coming in so that we all kind of have a potentially better audience space And you know that's just I think it's great and you know just to to say it when running all the data running analytics and kind of confirmed across every single platform. Suzy bollocks hey girl hey is the most popular barbecue site in the world. And it's kind of easy to see why She has really capitalized on on search terms. And all that sort of stuff. But when i mean her facebook group is about her facebook overall. Eating is about the yeah. It's you know in a huge numbers or instagram. Following is gigantic her pinterest. I think if she told me she was quitting they would send someone by to ask why she has so much engagement. And that's and that's really the key here is when you know it's like al qaeda and now you've got a lot of followers on facebook. Gotta follow her on twitter. Youtube is anyone engaging in her engagement. Numbers are just through the roof. People just jump in there. They comment on everything. They like everything. They share everything. And so it's just become self generating traffic engine. That's just it's just. It's so impressive. it's just absolutely amazing to just look at of the popular websites that you list out. Do you touch base with any of them to say. Hey i'm putting this list together. Here's data that i have found through alas alexa. Sem rush blah blah blah. Do you have anything that you can also generate to me. Whether using google the google analytics is the Thing to go to. If i'm not mistaken but are they well giving you some of their own. Raw data in the ways that you're searching out their popularity like within those timeframes that you're doing well meyer. My initial data was collected from subscription services. I used free tools to demonstrate how you can get that information yourself how you can kind of go in and look at the tracking a lot of people who run websites. Kind of don't necessarily know what tools they can get for for free. It gives you know some good things to point to I did not go to the people on the list. Because i didn't want to to bias the results and i didn't want i mean yeah. Google analytics is is the tool. The everyone pretty much. Everyone uses to measure their own web traffic and gather all that It has its own margin of error which is relatively small. But if i was in a situation of saying. Hey here's what i think your numbers are. They would either. It's you know. I i can't sit there. And say hey. Give me your analytics password. So i can go on and look myself. And i don't want to be in a situation of someone coming back and going. Well i can cherry pick data or i can. I can fudge it. I can just send some shrink shots and say oh look at this. This is this is in you. Know what my numbers actually so that would have created a problem in. The transmitter is pretty much everybody. That's on this list is already me. I've had a lot of. Hey this is great. You know. I love the. It's it's great to see somebody who can kind of come back. You know understand how as metrics analytics work and a you know this is of course we are to kind of knew this so you know thanks for putting out in the public space because you know most people don't want to sit there and talk about your in lenox it's like you know going into the grocery store and randomly telling people about your salary or your taxes and stuff. It's not the sort of thing that most people really want to kind of share plus that data you know as it refines down can become very revealing about halley police kind of traffic dirk richards joining me here on the shell. You look up and down that list of semi-finalists. That is a very strong list of names. If I could argue one and I probably wouldn't even bother making that argument, but at least eight out of the nine were very very strong. Yeah I felt the same way as I studied the list and I think i. told you this. I told others. I thought I was number four on that list and they since they only induct three that left me out, and that's what happened. I don't know whether I was number four or number five but You know the three who were selected. Clearly very strong. I found I was just an average Joe and I was not going to change the world, and when I got the workforce and I started working and I did a bunch of things. I realized that I was just going to be another guy I and then. Back around the year two, thousand, three, four or five. I forget what it was. I started this barbecue website and it took off and. Something has happened. I have discovered that really are changing world your people writing every day and say. I got laid last night because if you. I? Get emails saying. Come home from work. The kids say mom can dad cooked tonight? We have helped so many people learn to cook I was just exchanging e mail art comments with a few of the people watching. Somebody said that they were going to do the pastrami recipe. Somebody else chimed in and said it's great, maybe the best recipe the website. that recipe is just killer They're just good recipes so much good technique so much. We've taught four million people a month. Under that website and they bit, and that number has been fairly steady for two or three years now ups and downs. It's just millions of people millions of people, but when you look at the hall of fame. The current hall of fame as it stands, there's twenty two living members. Most of them are restaurateurs. Competition Cooks, a few who are authors, the only one who is primarily an author, which is what really I am a writer photographer recipe developed, or is Steven Reich land. So it is not something that leans in my direction, and that's okay. I know what I do is good and I'm happy to continue doing it. Mike is There for his restaurant, but amiens running a barbecue school now teaching restaurateurs Sterling Ball one of your ads sponsors. You know from big POPPA. The Big Papa. Smokers. By the way you were plugging his Maqutu Star I've got a Mac to star and I love it. and I bought it from Sterling. So I mean you know there's all kinds really talented people out there that should be in and I. You know I would include you among them. Let me ask you something though. We get to a point now so. The inherent problem with the Barbecue Hall and I want to get into the weeds here because we got other things to talk about, but the inherent problems doesn't really interest anybody out there, but you and me right, we're. We're satisfying ourselves here. So. Let's just keep keep doing that just for a minute. Keep doing that just for about you know the problem is that. There wasn't in the beginning a huge induction of folks from the past that deserve to be in so you create a big initial base of entrance. So, they're trying to piece it forward air by. Adding categories now we're going to eight categories out now. We're going to add this now. We're GONNA. We're GONNA put this many people in. It always feels like. Yeah, but it always feels like there's always going to be a tremendous amount of ketchup to do before you really get into like a nfl hall of fame or a Major League Baseball Hall of fame until that gap is somehow corrected, and I don't know if it were ever be I think there will always be some kind of a vacillating situation or consternation about the Barbecue Hall of fame until that really. Yeah I. Think they're doing it right I think I'm not saying they're not doing it right I'm just saying that the way that it is existing. There is a gap of however many Hundred Years of folks that are deserving to go in. The Hall of famous people who've really been important. There's probably no more than other Tanner fifteen people out there. The. Orbit Rbq me. You gotTA. Be Kidding me. You know I mean all right. We just lost. Heke here in Chicago. been around for what thirty forty years up in Evanston one of the oldest barbecue joints in Illinois beloved. had a tremendous impact influence charity pillar of the community. But he had one restaurant. And, the barbecue was okay wasn't great. Does he make hall of fame? they have this new one of the things they did this year. That I think was significantly important and improvement was they added the legacy carry category right, so the inducted three living members and two deceased the and so they they inducted. A couple of important people who are gone. I don't know I don't know how I mean. I suppose we could sit down to make a list, but it's not gonna go on forever. I don't know that it is I think I would to see them in duck more than three because I think, there are a lot of deserving people out there, but. I think they're on a good flight tests. Beat had joining us here on the show, so we have father's day coming up and certainly there's nobody better to talk to about cool gadgets in fact. while. It's not a night. It wasn't gone right against your. This is my. Grill flaw, so you can see it right there and they. got a competitor for it I. Have One of those two by the way. I have I haven't growth loss and I like it a lot. It's very easy to reach the the key. Here is if you're cleaning your grill. And your grades, You WanNa clean both the top and bottom. Obviously the top which is in contact with the food. You don't want a lot of Greece there and you don't want a lot of carbon there because the carbon will make the food stick, but Greece gets on the underside and a lot of people. They fire up their grill whether it's gas grill or a smoker, and there's big cloud of smoke and a lot of it is really just the grease burning us smoke is not as good tasting as woods well believe me I'm you don't want that Greece underneath? And so the growth loss and the charge on this is a competitor for the growth loss I like the charge on a little better I have both I use them both. But basically you can see, it's got this little C. Shape, and that allows it discreet both top and bottom. The downside of it is is it's one wire right? Who are? So. You're standing air, scraping and scrape know the wire bristle brush still is so convenient and easy, and I get where people are going when they say. Banned the bristle brush because it's a potential hazard. If you watch what you're doing if you can't if you buy a good one, and if you what you do it in your careful, it's not such a hazard, but that means an awful lot of people who don't watch what they're doing. Don't know what they're doing. Don't know about the hazard can get sick. Do you think that there is a time when that particular accessory will be banned? Banned or enough people and or manufacturers or big companies would say you know what you people should stop making that and we're going to poop on you until that happens, or do you think that most people think it's a good idea? But in the end they'll go by four dollars grill brush and take the risk because it's cheap, and we're lays Nellie banned the day after they ban cigarettes. Great, so they're never going to get banned. Cigarettes are delicious I mean doesn't. Everybody loves cigarettes. There's there's an awful lot of. Consumer, products out there. That are dangerous and risky, and the because your product Safety Commission and the Federal Trade Commission all these guys. On the lookout for. I don't maybe they will ban them. I'm not a lot of people are. Hurt by them, probably a lot more people were hurt by under-cooked chicken. I don't foresee chicken being banned. I know maybe just one of those things we're going to have to educate, but I do I, do like these products and I think that we should do our best to promote them and tell people about the I think there's an education job to be done. We have to warn people about bristle brushes, and and and especially the cheap ones and there, but there are other ones that like the single wire that's spun spun spun, and that's not going to break, maybe doesn't last as long, but it an easy way to make sure that you don't end up with one in your tongue or one in your small intestine or sticking out of your colon or over the altered my. Bent got one of the. All send him to me. I've got beat and frankly the the ones I like the best or the good old fashioned bristle brushes But. They're really well built. There were angered the ones that are into molded plastic. Scraper on top and you know I can just go. And the top of my grades are all cleaned, flip over the undersides, all clean and I'm up and running. The other thing I do and this is. This is a good move. A lot of people don't is I have a roll of paper towels nearby and I'll take a roll of paper towels, folding up and lamb on top of the girl great and put that brush on top and push paper towels across, because no matter much, you scraped with that bristle brush. They're still Greece left behind. Greece doesn't taste good. Get rid of it US I always. Run a paper towel across the surface. You want to talk about gifts for Father's Day and you immediately cut me off at the knees. You said no thermometers well, but we know about that. That's Christmas. We talk about thermometers and Labor Day we. Beautiful and golden and the Interior temp was still fifteen twenty degrees low, and I just wasn't going to bring him in because under-cooked chicken, his hazardous, but I didn't want them down near the fire where they scan in the underside would continue to blackened, so I pulled them up and put them on the overhead rack. But, dammit the overhead rack was really up high, and it was hitting the Rotisserie Bird, so I got those, and it was hot in that grow I got those leather welder shammy gloves and reached in there and grabbed, and this was a thick, heavy daddy, stainless steel great, and picked it up and dropped it into a lower position, never felt the heat at all man. Those things you can pick up briquettes, you can pick up logs. They are just fantastic I have to pair one of which is. Filthy and I use it for filthy things in the other would other pair of which are fairly clean, and you know every now, and then when they get really disgusting I, just walk inside, go to the kitchen, sink pumps, and the dishwasher liquid on it. Our dish liquid on and just wash them like I would wash my hands. Those things are fantastic and They're not terribly expensive in there. They make great gifts. It's not unknown Major. I would wager most. Your audience has heard of the slow in here, but it's a insert for the. WHEREVER CATTLE And what it does is Corrales all your charcoal into a small area, and then a water dam between your charcoal and the rest of the. the cooker space, and it really helps you set up. A two-zone now you can do this with a couple of bricks, but it's not as good and that water dam is one of the secrets. Water of course is really good way to buffer heat, but moisture in the atmosphere. condenses on cold me. And! And, even if you're meat is warming, it's not as hot as the air inside your cooking up to twenty five and up. Your meat is not to twenty-five I guarantee. So, the water will condense on the meat that cools. The meat slows the cooking. ADDS a little bit of moisture, but just as important. Is that smoke particles stick to wet surfaces? So you've got a device that pushes all the charcoal off to one side makes your. Weber kettle into a really good two-zone smoker, and it also raises the charcoal up. So if you want, see or something, you can lay the charcoal right over that I mean lay the meat right over that charcoal, which is just below the meat, and get an unbelievable Sierra on a steak or a burger or chop, so that's why they call it slow and here and they make a bunch of other accessories. They make a rack that sits on top of the great. That's a nice thing. They, make any drip pan. The slow in people have got going. I don't know how many people are willing to pay to watch competition barbecue, but if they show was a little more than what your typical TV show is showing us, it might be worthwhile and hey, listen. You mentioned John, I'm a huge fan of John Marcus I met him when the first pitmasters. Came on TV I was doing a weekly review for the Huffington. Post I reviewed every week. They were great fun. And John is one of the most remarkable people in the barbecue community. He is truly a man for all seasons erudite. Well read. Did you know he's a playwright? Did I, of course I know. He wrote a fabulous tones for crying out loud. Yet I actually purchased a script to the liposomes which you can read and forty five minutes It's a fun fun play. he's written a couple of other places. You know of people who know of in know that he was. He won an emmy for his job as a writer on the bill cosby show. And Just you know. Coal creators. He was co-creator of a different world. You remember that that was a spin off of the cosby show. That was wildly successful. The Lisa Bonet a I think Marisa Tomei. A younger Theresa Marisa Tomei was in that as well. I mean that's a big deal. Just those things are. Huge he's. He's very very knowledgeable, very experienced. and. His expertise goes way beyond barbecue into all matters food literature. Truly. Unlike anybody else I. Know the Barbecue World. So to get back to the fight club, so it was a nine dollars. Ninety nine cents get down for this evening now yesterday to entice you at six PM. Eastern. They had a let's call round table outside and some secret undisclosed location I know exactly where it is by the way but. They had they had the guy from smoking hogs, Massachusetts Bill Gillespie the pitmasters from nine one three Barbecue Darren war is competing. Of course, Tim. Sheer is over there. Luke Darnell from old Virginia Smoke Kelly words from four legs of Barbecue I believe that was rounding out the competition, so they had these six folks going up against each other and what I'm trying to ascertain is. How much was show I? Mean Look I'm no idiot here. I know how a barbecue competition runs, and if you're starting out from the beginning, which I doubt they were. I mean what are we looking at at a minimum time commitment of five hours or six hours, so there's no way they showed a barbecue competition starting at six o'clock tonight, and it's already over so that there had to have been some or a bunch of prerecorded offer. Maybe they were cooking during the day today, and they were making packages, and then filtering in some live stuff at six. o'clock I'm not sure exactly how it work. Work, because I can't as much as I like because your guy. Day Neil over there in Chicago was one of the big operating partners in this I think he put the deal together with fight. TV in order to get this off the ground. He's in the motor sports to, and that's part of the show that he has over there on wgn and when he was on last week talking about it, I thought I dug the concept. But what I keep going back to back me up on this. Muda Barbecue people are inherently cheap fast, and for them to squeeze ten dollars out for something that they don't perceive what would be two hundred dollars worth of valid I mean that's a hard sell. And then it's competition barbecue on top of it five years ago six years ago, I could see it being a little bit more general, Public Fascinating, but at twenty twenty. And I get that still a lot of people are trapped then there's yearnings for every kind of entertainment to keep us Keep the idle hands going, but I don't know if I saw you know more than a few people paying some money I. Mean I want to know what the business of being here. Well let me let me. Reflect upon what little I know, yes. There is a there's probably five thousand people in this country who are really into barbecue competition yeah. So. My instincts are as that would be their corner their core market because. Now, I don't compete, and I don't judge anymore because I just don't like sitting in a tent for the whole day. But I go to competition every now and then when I do I, know some of the cooks and I like to visit with them, and they trust me. They know I'm not going to share all their secrets and blow their cover and I get to taste of the food now. You mentioned Darren War Than I. He was nominated this year for the hall. Darren is the single best competition cook. I've encountered. I've tasted all of his meets for KCBS. Competition more than one year and they're just unbelievable. There's nothing there that comes anywhere cloth. Nothing I cook comes anywhere close to what he could. Now if I knew I could watch this show. And get his secrets I'd pay ninety five. But I don't know if he'd be willing to do that because as much as he and I, we get along. He and I his wife, Sherry. I I'm bringing them. Wine I brought her flowers last time I saw are. We sit around. We shared drinks and there are some things that he just hasn't shown me yet. And I haven't asked to be allowed to see them. You Know I. Don't know if that's GONNA. Be It now if I knew that the deep dark secrets are going to be revealed in for nine ninety five. Whether they're doing that or not I don't know I'll say this. It's interesting. I didn't hear about it at all. Until yesterday. I Know Day Neil I've been a guest on his show here in Chicago wd end. I know most of the folks you've mentioned. If. I'm trying to promote a pay per view show for ten bucks yeah. The first thing I would do would ask me head to promote it. We promoted it and soul, six or eight hundred tickets at three hundred bucks, so if they had come to me and said, would you? You know here's? What's all involved I? Don't have to be invited I. Don't have to Cook. I don't have to observe that at least. Say something about it on your site in social media. I probably could have sold a bunch of tickets for him. Yeah, well, I'll be interested to see also what the was on the actual technical side of things, and maybe people are a lot more forgiving, but it. Is Internet based I. Know where they were and I'm not necessarily thinking that there's a tremendous amount of infrastructure out there, but maybe I'm wrong and you know audio video. And how did it work to and? To enhance or detract from a ten dollar buying experience. I guess I'll be revealed. GotTa have. You know I mean you have taken this show and fine tune. The production value talked earlier about the quality of Audio I. Mean you've got production values down? Pat With the exception of your blue fringed air. Hard on that. Yeah it's no tales from the dark side or tales from the crypt. It must not have been very memorable. Because i can't even like come up with one plot and every one of them. It looks like they're on youtube now. Really only place you can find it without paying rhyming. And it's i guess we should say it's like it's an anthology that's like strung together with with I don't know what you call that. Like I thought maybe the hitchhiker was part of the stories. But no he's just kind of the intro. he's wet ties it together. He's but he's not in any of the episodes zachariah. I'm just now getting it up here. Okay started in nineteen eighty three. I thought that i would recognize the hitchhiker no I kind of thought that he was a better known actor. I do not recognize him at all. Nope by fletcher. Yeah and every time. I see his name. Hbo and i think at the time and now granted this was like nine thousand nine hundred eighty three. When it started. I was eleven. My dad was taken me to go see like the entity at the movie theater. I wasn't necessarily allowed to watch the show. Not at home right. It was taboo. And i remember it being kind of taboo. While i watched the first episode. I wanted to watch more but i had to get tied up and other things for this podcast. You're into that auto erotic asphyxiation but this is like zalman. King did creepshow right yet. They're just little montage fees though vignettes but there was a lot of nudity in the first episode that i i watched it with my wife. And she's like Is this a porno girls. Got her tits out am i. The first story just basically is A young vero looking man getting ready to get married to A rich older lady and it's basically he falls in love with with her like niece or her stepdaughter. Or whatever whoever it is okay and so he's trying to get out of his marriage anyway. Lots of sex lot nudity. Little twist couple of deaths kind of interesting okay. I will continue to go down. I'll give you a hitchhiker update. As i continue to watch this. Yeah great i mean. Is it time for another series to come out where you have a drifter and i'm not just talking about highway to heaven drifter yeah drifters really have a negative connotation but when we talked about before we talked about then came bronson. This is kind of the same idea well and also like incredible hall well in the master too for that matter. I mean we knew we were going to bring it up at some point but or like. So there's a later The kid was like messing with the the little statuette and he was trying to separate the man from the woman and for some reason because he thought he had an idea that this was happening and he cut his wrist By cutting the wrist of the statuette so he has this idea that hey he can probably kill off his new wife to be with her frigging stepdaughter and get away with it so he talks to the. I guess there's a live in doctor that lives with him and he's like. Hey doc let's go scuba diving later. He talks the The stepdaughter into putting glass globe over the statuette to cut off the oxygen. It's a voodoo doll. Yes so while. He has his oxygen coming from his tank while they're scuba diving and then has his own alibi so after the wife is dead and the kids getting with the law and they're having sex again. There's a bird that keeps they keep showing this close up on this bird in a cage and it gets out of the cage in it for some reason starts attacking this statuette which then pokes the guys is out scratches him up and he's got blood running down his face and he's just like oh my god and stumbles out the frequent balcony. Classic falls down some stairs and shatters just as the actual statuette shatters bernardi shatters. Yes he shattered. That's different yes I love a good railing.
